Анотація:
The article deals with the research aimed at developing an enzymatic method for removing the subcutaneous fat in the technology of fish snacks production. Currently, fish snacks are popular among consumers. However, due to fierce market competition, the priority is to develop new raw materials, improve the taste characteristics of snacks and increase the shelf life of finished products. The most common commercial fish species of Ukraine caught in sufficient quantities are Black Sea sprat (Sprattus sprattus) and European anchovy (Engraulis encrasicolus). The main problem in the production of quality snack products is the high fat content in these raw materials. Oxidation of the subcutaneous layer of fat leads to an unpleasant odor and taste, and as a result – reduction of the shelf life of the product. One possible way to solve these problems is to remove lipids using biotechnology. Experiments how to solve the problem of removing the subcutaneous fat using a biotechnological method of processing are described in this work. The process of the subcutaneous fat removing has been performed using a complex of plant lipolytic enzymes extracted from wheat bran. The change in the mass fraction of fat in fish raw materials depending on the duration of the fermentation process under the action of wheat bran lipase has been studied. Results of the research showed, that the mass fraction of Black Sea sprat fat under the action of a complex of wheat bran enzymes had decreased from 12 to 4.5 %. The optimal temperature of the complex of lipolytic enzymes of wheat bran has been determined. The hydrolysis of fat is almost nonexistent at the temperature range from 0 up to 5 °C. The greatest activity of enzymes is observed at a temperature of 25… 35 °C and within 30 min of hydrolysis 7… 8 % of fat is being removed. The optimal pH value for enzymatic degreasing has been investigated. It has been found that the fastest breakdown of fat occurs at pH values from 7 to 8 and is 7… 8 % of fat in 30 minutes. Based on the research results, a technological scheme for the production of fish snacks has been developed.

AbstractThis study examines the effect of a meal planner's nutritional awareness, exercise habits, and household socioeconomic characteristics on market participation and frequency of purchase of snack peanuts. Data are from a household survey of 2880 U.S. households collected by Gallup in 1997. Statistical tests showed that a double-hurdle or Cragg model best represented consumers' participation and purchase level decisions in the snack peanut market. The results indicated that meal planner's nutritional considerations while making food purchase decisions had little effect on the participation level decisions, but did affect purchase frequency of snack peanuts. Those household meal planners who were overly concerned about undesirable nutritional factors tended to decrease their purchase of snack peanuts. Promotion of snack peanuts on the basis of nutritional benefits through health professional and media is a useful tool to increase purchase frequency.

Snack from sweet potato has not been a common in the market. This product development has been done to inform the society that the food from sweet potato can be a very delicious and nutritious snack. Sweet potato was chosen because it is easy to find with inexpensive price, easy to process, have good nutrition for body, and have a longer shelf life.

Background. The building materials industry includes the production of cement, bricks and other materials. The state of the cement market is of particular interest. An analysis of recent research and publications has shown that in order to generalize and specify the situation on the Ukrainian cement market, it is necessary to analyse statistics on production, consumption and export-import operations with cement. The aim of the article is to establish trends in the development of production, con­sumption, export and import operations with cement in Ukraine. Materials and methods. The work used general scientific and special methods of analysis, as well as publicly available sources of statistical information. Results. According to the State Statistics Service of Ukraine, over the past five years there has been an increase in production of all types of cement in quantitative equi­valent by almost 13.4 %, refractory cements – by 57.1 %, and alumina cement, clinker-free slag cement and hydraulic cements – 1.8 times. During 2016–2020, there was a tendency to increase wholesale prices for M-400 cement. During this period, the price increased 1.6 times and is mainly due to higher prices for raw materials. The difference in retail prices for cement in the largest retail chains in Ukraine is 25 %, which is a significant fluctuation. The analysis of the dynamics of cement exports from Ukraine during 2015–2020 showed a tendency to increase its volumes by more than 2 times. If we compare the volumes of imports and exports of cement, in 2020 the volumes of cement imports exceeded the volumes of exports by 33.8 % in monetary terms. The largest volumes of cement in 2020 were imported to Ukraine from Turkey – 91 % of all deliveries, from Poland, Bulgaria, Lithuania and Germany – 2 % each, and from other countries only 1 %. During 2015–2020, the largest share in the structure of domestic cement exports abroad belonged to Romania, having increased almost 5 times in 2017–2020. In second place amongimporting countries there are Hungary and the Republic of Moldova. Conclusion. In recent years, the cement market in Ukraine is gradually deve­loping. The analysis of development trends showed that its main producers are several large groups – private joint-stock companies, which produce 99.8 % of the total volume of these products. Studies have shown that during 2014–2020 there was a slight increase in pro­duction and consumption of all types of cement in Ukraine. Monitoring of cement prices showed that during 2016–2020 there was an increase in wholesale prices for M-400 cement: in four years they increased by more than 60 %. There is a significant difference in retail prices of cement in the seven largest retail chains in Ukraine at 25 %. Analysis of the dynamics of cement exports from Ukraine in 2015–2020 showed that they more than doubled, but imports of this product in 2020 exceeded exports by 33.8 % in monetary terms.

The rapid increase in the consumption of salty snack products has led to increased concern about their composition and nutritional value. The aim of this study was to investigate the fat content and fatty acid profile in salty snack products from the Serbian market. A total of 58 different snack products from 3 categories (Baked products, Chips & flips products, Cereal products) were analyzed. The fatty acid composition was determined using gas chromatography. Total fat content ranged from 3.1 % in expanded rice to 35.7 % in potato chips. Palmitic, oleic and linoleic acids constituted > 80 % of all fatty acids (FAs) in categories Baked products and Chips & flips. Linoleic acid was more abundant in the category Cereal products (15.5?49.3 %). The trans-FAs elaidic (C18:1 - 9t) and linolelaidic FAs (18:2 - 9t, 12t) were identified in 66 % of the products. The flips products had the highest average t-FAs content (16.3 %), followed by flips group (9.3 %). Potential t-FAs intake from 100 g of analyzed products was in range 0.1?4.9 g. This study provided a large database on saturated fatty acids and t-FAs content in salty snack products and indicated that by consuming only one package of some products, the t-FAs intake could surpass the recommended maximum of 1 % of daily energy.

Випускна робота містить 114 сторінок, 17 рисунків, 23 таблиці, 62 використаних джерела, 1 додаток. В ході дослідження було отримано такі елементи практичної новизни: запропоновано напрями коригування політики просування батончиків ТМ «EatMe» на ринку снеків України. У теоретичній частині дипломної роботі проаналізовано теоретико- методологічні аспекти політики просування. Аналітична частина базується на маркетинговому дослідженні із застосуванням таких інструментів як кабінетне дослідження та опитування (анкетування). В результаті дослідження первинних та вторинних джерел визначено особливості поняття маркетингової політики просування та на його підставі розроблено та запропоновано стратегічні рішення для коригування політики просування батончиків ТМ «EatMe». На основі отриманих результатів розраховано економічну доцільність наведених рекомендацій. У роботі доведено, що для ефективної політики просування товару потрібно детально вивчити цільову аудиторію, ретельно проаналізувати можливі шляхи просування товару. І найбільші можливості для коригування товарної політики на сьогоднішній день дозволяє зробити як інтернет так і офлайн методи.
The final work contains 114 pages, 17 figures, 23 tables, 62 sources used, 1 appendix. In the course of the research the following elements of practical novelty were obtained: the directions of adjustment of the policy of promotion of bars of TM "EatMe" in the market of snacks of Ukraine are offered. The theoretical part of the thesis analyzes the theoretical and methodological aspects of promotion policy. The analytical part is based on marketing research using tools such as desk research and surveys (questionnaires). As a result of research of primary and secondary sources the peculiarities of the concept of marketing promotion policy are determined and on its basis strategic solutions for adjustment of the policy of promotion of bars of TM "EatMe" are developed and offered. Based on the obtained results, the economic feasibility of the above recommendations is calculated. The paper proves that for an effective product promotion policy it is necessary to study in detail the target audience, carefully analyze the possible ways of product promotion. And the greatest opportunities for adjusting product policy today allows you to make both online and offline methods.

Currency market plays an important role for Ukraine financial market because it connects the national and world financial systems. Now the question of its status is not resolved as the National Bank of Ukraine has not created any legislative acts, so there is the situation of uncertainty.

Recently the statistical characterizations of financial markets based on physics concepts and methods attract considerable attentions. The correlation matrix formalism and concept of multifractality are used to study temporal aspects of the Ukraine Stock Market evolution. Random matrix theory (RMT) is carried out using daily returns of 431 stocks extracted from database time series of prices the First Stock Trade System index (www.kinto.com) for the ten-year period 1997-2006. We find that a majority of the eigenvalues of C fall within the RMT bounds for the eigenvalues of random correlation matrices. We test the eigenvalues of C within the RMT bound for universal properties of random matrices and find good agreement with the results for the Gaussian orthogonal ensemble of random matrices—implying a large degree of randomness in the measured cross-correlation coefficients. Further, we find that the distribution of eigenvector components for the eigenvectors corresponding to the eigenvalues outside the RMT bound display systematic deviations from the RMT prediction. We analyze the components of the deviating eigenvectors and find that the largest eigenvalue corresponds to an influence common to all stocks. Our analysis of the remaining deviating eigenvectors shows distinct groups, whose identities correspond to conventionally identified business sectors. Comparison with the Mantegna minimum spanning trees method gives a satisfactory consent. The found out the pseudoeffects related to the artificial unchanging areas of price series come into question We used two possible procedures of analyzing multifractal properties of a time series. The first one uses the continuous wavelet transform and extracts scaling exponents from the wavelet transform amplitudes over all scales. The second method is the multifractal version of the detrended fluctuation analysis method (MF-DFA). The multifractality of a time series we analysed by means of the difference of values singularity stregth (or Holder exponent) ®max and ®min as a suitable way to characterise multifractality. Singularity spectrum calculated from daily returns using a sliding 250 day time window in discrete steps of 1. . . 10 days. We discovered that changes in the multifractal spectrum display distinctive pattern around significant “drawdowns”. Finally, we discuss applications to the construction of crushes precursors at the financial markets.

The article examines the world and Ukrainian history of corporate periodicals. The main purpose of this study is to reproduce an objective global picture of the emergence and formation of corporate periodicals, taking into account the business and socio-economic context. Accordingly, its tasks are to compare the conditions and features of corporate media genesis in different countries, to determine the main factors of their development, as well as to clarify the transformations of the terminological apparatus. The research is based on mostly foreign secondary scientific works published from 1915 to the present time. The literature was studied using methods such as overview, historical, functional and thematic analysis, description, and generalization. A systematic approach was used to determine the role and place of each element in the system, as well as to comprehensively consider the object in the general historical context and within the current scientific discourse. The method of systematization made it possible to establish internal and external connections, patterns and contradictions in the development of the object of study. The main historical milestones on this path are identified, examples of the first successful corporate publications and their contribution to business development, public relations, and corporate communications are considered. It was found that corporate media emerged in the mid-nineteenth century spontaneously, on the wave of practical business needs in response to industrialization, company increase, staff growth, and consumer market development. Their appearance preceded the formation of the public relations industry and changed the structure of the information space. The scientific significance of this research is that the historical look at the evolution of corporate media provides an understanding of their place, influence, capabilities, and growing communicative role in the digital age.

Economic growth in Latin America and the Caribbean was stronger than expected in 2021 but waned at the start of 2022. High commodity prices due to the war between Russia and Ukraine will provide a boost to exporters, while imposing significant costs on commodity importers and pushing up inflation across countries. The ongoing conflict, together with policy normalization in advanced economies, carries significant risks for the region. Volatility in financial markets could depress investment and bring down growth further. Policymakers need to take urgent measures to boost inclusive growth. As minor fixes are unlikely to result in notable benefits, governments should consider more fundamental resets of policy frameworks. This report analyzes growth prospects, monetary policy, and external and financial sectors. The recommendations stress the need for a new architecture for both fiscal and labor market policies. Policymakers should seize the window of opportunity provided by the COVID-19 crisis and global security concerns to improve the outlook for the region.

The conflict in Ukraine has generated a large inflow of refugees into European countries, with more than five million people having fled to neighboring countries. So far, the public response has been generally positive, with large shares of the European population being in favor of the policies implemented to host and support the Ukrainian refugees. In this note we look at the academic literature with the aim to: a) discuss which socioeconomic characteristics of the refugees are typically associated with positive or negative attitudes towards them; and, b) reflect on which policy measures can promote more inclusive and tolerant preferences. The evidence from the literature suggests that negative attitudes towards refugees can be widespread, but less so for those groups that are perceived to be in need of humanitarian help, are culturally closer to host communities, and more likely to contribute to the economies of the host country. Three policy measures to sustain a welcoming climate towards refugees emerge from the relevant literature: facilitate the interactions between host communities and those forcibly displaced; integrate the refugees into the society, including in the labor market; and provide simple, factual information about the refugees and their socioeconomic background.
