The concept of thermal processing of foodstuffs has been used extensively since 1920 when the first scientific basis for calculating the minimum safe sterilization process was developed. There are several methods used in thermal processing of dry foods including infrared, microwave, hydrothermal treatments such as annealing and heat-moisture treatment, thermomechanical treatments (extrusion), and indirect (hot air) and indirect (steam) heating. Thermal processing has been the most widely used method for preserving and extending the shelf-life (via microbial reduction and enzyme inactivation, and for improving quality and functionality. In 2009 the Centers for Disease Control and Prevention released a report of an Escherichia coli outbreak resulting from consumers eating raw refrigerated cookie dough which brought attention to heat treatment of flours and powders. Chlorination of wheat flour in the European Union countries has been replaced in recent years by heat-treated flour which is used to produce high ratio cakes. By applying heat treatment, it is possible to modify the physical and rheological properties. The primary effect of heat treatment is denaturation of the proteins, partial reduction or inactivation of alpha-amylase, and partial gelatinization of the starch. Understanding of relationship between heat transfer, thermal properties of food, heating medium, thermodynamics and the functionality of the resulting heat-treated flour is of critical importance. Research reported in this dissertation has five chapters. Chapter 1 provides a general overview on the state-of-knowledge in the area. Chapter 2 focuses on developing a thermomechanical treatment (extrusion) for improving the functionality of low quality (ash > 1.3%) wheat flour. Chapter 3 deals with developing a direct, rapid and continuous thermal processing technique for treating whole wheat flour and whole wheat grain, and investigates physicochemical changes of heat-treated samples at various moisture-time-temperature combinations. Chapter 4 explores the mixing and development of composite flours in the presence of gluten fractions of at varying proportions, mixing speed and temperatures. Chapter 5 highlights general conclusions and identifies areas for future research.

The acceptability of whole grain flours during storage varies widely, as does the estimated shelf life of such flours, in part because acceptability is typically determined using subjective human sensory testing. Research is needed to establish more objective measures of acceptability. This study correlated the quantitative results of a descriptive odor sensory panel with volatile compounds determined by solid-phase microextraction-gas chromatograph-mass spectrometry (SPME-GC-MS). Whole wheat flour and quinoa flour were held at 40°C for up to 24 weeks to accelerate changes occurring during storage. Samples were collected every 4 weeks and placed in frozen storage. Thawed samples were then evaluated using SPME-GC-MS and descriptive sensory odor analysis. Significant correlations were found between 1-hexanol, 2-pentylfuran, phenol, hexanoic acid, and hexanal volatiles of whole wheat flour and the odor descriptor cardboard/stale. This indicates that SPME-GC-MS can be used as a less expensive, less time-consuming, more precise method to determine the acceptability of whole wheat flour during storage. Significant correlations were not present in the quinoa flour data, suggesting that SPME-GC-MS may not be preferable to human sensory odor analysis in determining acceptability of stored quinoa flour.

An ultra-centrifugal mill was evaluated by determining the effect of mill configuration and seed conditioning on particle size distribution and quality of whole-wheat (WW) flour. Ultra-centrifugal mill configured with rotor speed of 12,000 rpm, screen aperture of 250 ?m, and seed conditioning moisture of 9% resulted in a fine WW flour where 82% of particles were <150 ?m, starch damage was 5.9%, and flour temperature was below 35?C. The single-pass and multi-pass milling systems were evaluated by comparing the quality of WW flour and the subsequent WW spaghetti they produced. Two single-pass mill configurations for an ultra-centrifugal mill were used (fine grind: 15,000 rpm with 250 ?m mill screen aperture and coarse grind: 12,000 rpm with 1,000 ?m mill screen aperture) to direct grind durum grain or to regrind millstreams from roller milling to make WW flour and WW spaghetti. Particle size, starch damage, and pasting properties were similar for direct fine grind WW flour and multi-pass reconstituted flour:fine bran blend and for direct coarse grind WW flour and multi-pass reconstituted semolina:coarse bran blend. Semolna:fine bran or semolina:coarse bran blends made spaghetti with high cooked firmness, while spaghetti made from direct coarse grind or from semolina:fine bran or coarse bran blends had low cooking loss. Nineteen durum wheat (Triticum turgidum L. var. durum) cultivars and 17 breeding lines grown at 19 environments in North Dakota were evaluated for physical and cooking qualities of WW and traditional spaghetti. Of the 36 genotypes evaluated, 21 and 3 genotypes produced good and poor qualities of WW and traditional spaghettis, respectively, while other 12 genotypes produced good traditional spaghetti but produced poor quality WW spaghetti. These data indicate the need to select genotypes specifically for their WW pasta quality. Raw material traits (grain, semolina and WW flour characteristics) were evaluated to identify raw material traits capable of predicting WW spaghetti quality. Grain protein content had significant positive correlation with cooking quality of WW spaghetti. Stepwise multiple regressions showed grain protein content and mixogram break-time and wet gluten were the predominant characteristics in predicting cooking quality of WW spaghetti.

The objectives of this thesis is to use regression models and market trends to determine whether the changing product mix of Ardent Mills has an impact on volume, sales dollars, and margin dollars. The results will be used to build a market analysis of Ardent Mills’ product mix strategy. Flour milling is a highly competitive industry. Ardent Mills is constantly looking to increase profits and become more valuable to its customers. Specialty products have created a new opportunity, but the opportunity costs must also be considered. Determining what new products to develop, where to manufacture them, and whether to create new capacity or convert existing capacity are difficult decisions that must be made. The data used in this thesis were collected from Ardent Mills’ sales records from June 1, 2014 through December 31, 2016. Type of product, sales volume, sales dollars, and margin dollars were collected for each month to be analyzed. The study determined that increasing the volume of whole wheat flour sales decreases white flour volume, total flour volume, white flour sales dollars, and total flour sales dollars. Increasing the volume of UltraGrain increases white flour sales dollars and total flour sales dollars. Increasing the volume of wheat-based specialty products increases the volume of white flour and the volume of total flour. As the demand for UltraGrain and wheat-based specialty products increases, the demand for white flour increases as well. Decreasing wheat prices have allowed for additional margin to be captured.

Nutrition from whole grains has become an integral part of a healthy diet. Consumers are focused on adding fiber and whole grains to be healthy and want the benefits of whole grain with the taste and appearance of refined flour. A review of current commercial whole wheat flour in the marketplace indicated many options for food processors to use. However, many of these options required processing changes and added ingredients to provide the consumer with a quality product. A milling and baking study was done to compare commercially and experimentally milled whole wheat flours from both white and red wheat varieties. Both white and red wheat varieties were kept identity preserved. Experimental milling was done with a hammer mill and a roll stand to closely replicate the commercial milling process. Baking was done using a sponge and dough method to closely replicate commercial baking conditions. The results showed both particle size and wheat variety impact bake performance of whole wheat flour. The most significant impact appeared to be dependent on the variety of wheat being milled. The milling process also had an impact. As particle size decreased, bake functionality improved. However, some decreased functionality was seen when particle size became very fine. It was concluded that additional work on a commercial flour mill needed to be done to determine if an optimal particle size for milling whole wheat flour exists. Experimental milling equipment was not adequate enough to replicate particle size distributions of commercial whole wheat mills.

A relatively new method, solvent retention capacity (SRC), is used to determine flour end-product quality. SRC was designed for soft wheat, which is used for baking cookies. The use of SRC to evaluate Hard Red Spring (HRS) wheat quality has not been conducted extensively. Eight HRS wheat cultivars from four different locations and two crop years were milled into refined and whole wheat flours. The samples were analyzed for phenotype, genotype, and environmental effects on flour composition, dough and bread quality. The SRC method was used to determine correlations between refined and whole wheat flours, and flour quality parameters. Flour quality was significantly (P<0.05) affected by cultivars, and the year x location, and year x cultivar interactions. Correlations exist between whole wheat flour and refined flour SRC profiles. Limited correlations exist between whole wheat flour SRC and flour quality. Therefore, SRC is not suitable for whole wheat HRS wheat flour.

Emphasis on using the glycaemic index (GI) in addition to carbohydrate exchange lists has led to a greater variety of foods from which to choose for the diabetic population. Breakfast is regarded as the most important meal of the day and the glycaemic response to lunch can be improved by decreasing the GI of breakfast. However, most conventional breakfast cereals and bread exhibit a high GI. Dried beans have a low GI and various processes such as cooking and canning increase GI values, but still in the low GI range. In recent years, extrusion cooking has become one of the popular new processes developed by the food industry. Extrusion provides a convenient alternative for the ingestion of dry beans in the diet. Muffins are eaten by many South Africans and may be an ideal alternative for breakfast cereals and bread, especially if the GI of the muffins is low. The aim of this study was to determine the GI of a muffin baked with extruded bean flour and compare it to the GI of a muffin baked with whole wheat flour. Subjects and methodology: The study cohort consisted of ten healthy males and ten healthy females. Subjects randomly consumed test meals of glucose (the reference), bean muffins and whole wheat muffins on different days. Each test meal provided 509 available carbohydrate as analysed by the Englyst method. Results: The GI of the muffin baked with extruded bean flour (mean 53.0%, Confidence intervals (CI): 41.7; 64.2) was not significantly different from that of the whole wheat muffin (mean 55.5%, CI: 41.8; 69.2) but still in the low to intermediate GI category. Conclusion: Extrusion of dried beans results in a fine flour with relatively no intact starch which may explain the very low resistant starch content (1.6I100g) of the muffins. The small particle size of the fine flour could further have contributed to the higher than expected GI of the bean muffin because the size of the particle is inversely related to glycaemic response. Muffins baked with extruded dried bean meal are nevertheless regarded as an excellent choice for breakfast and as part of the prudent diet. Beans have additional health benefits and are included in the South African Food Based Dietary Guidelines.

Whole wheat flour has become a popular ingredient in baked goods. Consumers are seeking the added benefits of consuming healthy phytochemicals and bioactive compounds. As the demand for wholemeal flour increases it is important to understand the factors contributing to changes in whole wheat flour breadmaking quality as a function of both wheat and flour age. In wholemeal flour, the lipid composition appears to be a factor causing variable baking quality. Changes that occur in both freshly harvested wheat and milled flour can cause variations in baking quality. Bakers’ attempts to adjust formulations and processes are often unsuccessful. The objective of this study was to determine the effects of aging both new crop wheat and freshly milled flour at 2 different temperatures on baking quality and glycolipid composition. This study aged freshly harvested Overley hard red winter wheat at RT (23˚C) and FZ (-26˚C) for 8, 50, and 91 days before milling. Whole wheat flour baking and lipid extraction studies were performed incrementally over 31 days of flour storage after each milling. Glycolipid structure and amounts were measured using automated electrospray ionization-tandem mass spectrometry. The glycolipids analyzed in this study were DGDG (digalactosyldiglycerol), MGDG (monogalactosylmonoglycerol), MGMG (monogalactosylmonoglycerol), and DGMG (digalactosylmonoglycerol). Both the wheat and flour stored at -26˚C produced larger mean loaf volumes than did the 23˚C treatment for all 3 wheat ages. The FZ and RT DGDG:MGDG ratios were similar over both wheat and flour age so changes to the glycolipid fraction did not appear to be the cause of the significant difference between volumes of bread baked from samples stored at RT and FZ. There was limited change in mean volume over flour age except for an increase at the FZ 91 day point. The DGDG:MGDG ratios were generally unchanged over flour age. Loaf volumes were the same over wheat age except for an unexpected drop during the 50 day wheat study. The corresponding DGDG:MGDG ratios did not show any significant differences over wheat age. The FZ storage temperature might be inhibiting some biochemical change not affecting the glycolipids, leading to higher volumes than the RT storage treatment.

This study aimed to quantify resistant starch (RS) beta-glucans (BG) and fructo-oligosaccharides (FOS) in Indian and Canadian wheat varieties and in chapaties made from these; and to assess the effects of soy flour on the levels of these components and its effects on the sensory and functional properties of the wheat-soy chapaties. Seven wheat varieties (Indian / Canadian) were milled into flour; supplemented with 0 % (control), 10 %, 20 % or 30 % defatted soy flour and made into chapaties. Flours and chapaties (freeze-dried, pulverized) were assayed for BG, FOS, RS and simple sugars (glucose / sucrose). Sensory evaluation was carried out by (9 point) hedonic rating of chapaties by 20 untrained Indian panelists. Flour water-holding capacity and water absorption indices (WAI) were determined. RS content of flours ranged from 7.1 g/100 g to 12.6 g/100g, but decreased when made into chapaties, (< 1 g/100 g), and decreased further with soy flour addition. BG content in flours ranged from 0.8 g/100 g to 1.4 g/100 g, while FOS content ranged from 1.3 g/100 g to 2.3 g/100 g. Minimal changes were observed in BG and FOS content when made into chapaties. Simple sugars were minimal in flours and chapaties. WAI of wheat flour was increased with addition of soy bean flour. Addition of up to 30 % soybean flour elevated the sensory acceptability of chapaties. While there is a decrease in RS with chapati making, the levels of BG and FOS are largely unchanged with processing.

Whole grains are an increasingly popular health food in America. However, shelf life of whole grains is compromised due to the presence of lipoxygenases in the bran and germ, which lead to rancidity and generation of oxidative byproducts. These byproducts reduce sensory quality and may have a degradative effect on vitamins in whole grain products. The purpose of this study was to determine the degree of lipid and vitamin degradation during long-term storage of three whole grains: whole wheat flour, brown rice, and rolled oats. We also examined vitamin loss after cooking to determine if oxidative byproducts had an effect on vitamins during typical household cooking. Whole wheat flour, brown rice, and rolled oats were stored for 12 months and periodically analyzed for conjugated dienes, free fatty acids, tocopherols, thiamin, and riboflavin. Whole wheat bread, steamed brown rice, and oat porridge were made from samples stored for 0 months and 12 months and were analyzed for thiamin and riboflavin. Conjugated dienes increased significantly only in rolled oats, while tocopherols decreased significantly in whole wheat flour and rolled oats and insignificantly in brown rice. Free fatty acids increased significantly in whole wheat flour and brown rice. Thiamin and riboflavin were stable in raw stored grains and cooked products made from stored grains with the exception of brown rice, in which we observed a significant decrease in thiamin after 12-month storage and cooking. These results suggest whole wheat flour, brown rice, and rolled oats experience significant lipid and tocopherol degradation, but it does not appear to affect thiamin and riboflavin in raw stored products. Cooking appears to cause degradation of thiamin after storage of brown rice, but thiamin and riboflavin were otherwise stable in these whole grains.

Resumo: Existe evidência da relação entre o consumo de cereais integrais e a prevenção do desenvolvimento de várias doenças como alguns tipos de câncer, doenças cardiovasculares, diabete e obesidade. O mercado de pães pré-assados congelados está em ascensão, fazendo deste produto um excelente alimento para veiculação do cereal integral. O objetivo deste trabalho foi avaliar a qualidade de pão francês pré-assado congelado elaborado com farinha do trigo integral através do estudo do efeito do tempo de fermentação, do efeito da adição de enzimas, da influência do período de estocagem congelada e das transformações da massa nas etapas de pré-assamento e reassamento. Na primeira parte várias formulações foram avaliadas em dois tempos de fermentação diferentes. Na segunda parte um delineamento composto central rotacional (DCCR) foi realizado com as enzimas glicolipase, hemicelulase e hexose-oxidase como as variáveis independentes. Na terceira parte, os pães pré-assados congelados foram estocados por 0, 1, 7, 15, 30 e 65 dias congelados para avaliação destes períodos. Características como volume específico, textura (firmeza e elasticidade), salto de forno, formato, abertura e pestana foram avaliados nestas três partes. Na terceira parte, a transição térmica do amido, fração de água congelada e avaliação sensorial também foram realizadas. Na quarta parte, características como perfil de temperatura do processo, umidade, cor, comportamento viscoamilográfico, transição térmica do amido, difratometria dos raios-x, microscopia óptica de luz polarizada e microscopia eletrônica de varredura foram avaliadas no final das etapas de pré-assamento e reassamento em três porções dos pães (miolo interno, miolo externo e crosta). Os resultados mostraram que é possível produzir pão francês préassado congelado elaborado com farinha do trigo integral, sendo fonte de fibras pela legislação brasileira (mínimo de 3 g de fibra alimentar / 100 g de produto pronto para consumo), que possua atributos de qualidade aceitáveis ao consumidor que relatou alta intenção de compra do produto. Para alcançar tal objetivo, o tempo de fermentação deve ser otimizado de acordo com a formulação para que não ocorra colapso da estrutura. As enzimas glicolipase, hemicelulase e hexose oxidase devem ser utilizadas nas faixas de 30-75 ppm, 91- 359 ppm e 30-120 ppm (base farinha), respectivamente, conjuntamente com uma formulação base. O pão pode ser mantido por 65 dias sob estocagem congelada sem que o consumidor perceba alterações nos atributos do pão (aparência, volume, formato, cor, avaliação global) e da fatia (cor, aroma, sabor, textura, avaliação global). A umidade e a cor apresentadas pelos pães após as etapas de pré-assamento e reassamento mostraram que eles apresentavam boas características para a sua comercialização
Abstract: There is evidence of the relationship between the consumption of whole grains and the prevention of illnesses such as cancer, cardiovascular disease, diabetes and obesity. The market of frozen part-baked breads is in ascension, making of this product an excellent food for the propagation of whole grains. The aim of this work was to evaluate the quality of frozen part-baked French bread made with whole wheat flour through the study of (01) effect of proofing time; (02) effect of the addition of enzymes; (03) influence of time of frozen storage and (04) changes of dough during the steps of partbaking and rebaking. In the first part, several formulations were evaluated at two different proofing times. In the second part, a central composite rotational design (CCRD) was used, with the percentages of glycolipase, xylanase and hexose oxidase being the independent variables. In the third part, frozen part-baked breads were frozen stored for 0, 1, 7, 15, 30 and 65 days for the evaluation of these periods. Characteristics such as specific volume, crumb texture (firmness and springiness), oven spring, shape, measurement of the opening and cut of surface were evaluated in these three parts. In the third part, the thermal transition of starch, the unfreezable water fraction and sensory tests were also carried out. In the fourth part, characteristics such as temperature profile, moisture, color, pasting properties, thermal transitions of starch, x-ray crystallography, Fourier infra-red spectroscopy, polarized light microscopy and scanning electron microscopy were evaluated at the end of the part-baking and rebaking steps in three portions of the breads (inner crumb, outer crumb and crust). The results showed that it is possible to elaborate frozen part-baked French bread made with whole wheat flour, source of fiber by the Brazilian legislation (at least 3 g dietary fiber / 100 g final product), that has acceptable quality attributes to the consumer who related high purchase intention of the product. To reach such objective, the proofing time should be optimized in accordance with the formulation to avoid the collapse of the structure. The enzymes glycolipase, xylanase and hexose oxidase should be employed within the ranges of 30-75 ppm, 91-359 ppm and 30- 120 ppm (flour basis), respectively, together with a basic formulation. The bread can be kept for 65 days under frozen storage without the consumer noting changes in bread attributes (appearance, volume, shape, color, global evaluation) and slice attributtes (color, flavor, taste, texture, global evaluation). The moisture and the color presented by breads after the stages of part-baking and rebaking showed that they showed good characteristics for its commercialization

Resumo: Apesar de serem poucas as pesquisas sobre a qualidade e tecnologia associada a fabricacao de massas de pizza e existirem poucos indicadores de qualidade disponiveis na legislacao para este tipo de produto, alguns fenomenos podem ser explicados, por analogia, a fabricacao de pao, ja que os ingredientes basicos destes dois produtos sao praticamente os mesmos. O aumento do mercado de pizzas no Brasil, de 5% ao ano em vendas, e a crescente preocupacao da populacao em manter uma alimentacao saudavel, como tambem em buscar e dar preferencia aos alimentos de conveniencia e praticidade sao indicativos de que o desenvolvimento de massas de pizza pre-assadas enriquecidas com fibras podem ter impacto positivo sobre este mercado em expansao e sobre as tendencias para escolha de alimentos industrializados pelos consumidores. O objetivo deste trabalho foi avaliar os efeitos da adicao de farinha de trigo de grao inteiro (FTGI) e fibra branca de trigo (FBT) sobre a qualidade de massas de pizza pre-assadas. Foram identificados seus efeitos sobre o processamento e caracteristicas tecnologicas, sensoriais e de conservacao das massas de pizza pre-assadas. A FTGI e a FBT interferiram nos parametros farinograficos e extensograficos da mistura com a farinha de trigo refinada para pizza (FTR), o que refletiu nas condicoes de processamento das massas de pizza pre-assadas, como foi observado na pratica, como o aumento da quantidade de agua necessaria para o desenvolvimento da massa, os maiores tempos de mistura ate a formacao da rede de gluten e o aumento da elasticidade das massas. Na qualidade das massas de pizza pre-assadas, as fontes de fibras tiveram influencia significativa nas analises de volume especifico e espessura dos discos de pizza, de cor L* e cor a*, de acidez total titulavel, e, dentro das mesmas condicoes de processamento e das faixas de concentracao estudadas para a FTGI e FBT, e possivel afirmar que os modelos obtidos neste trabalho reproduzem os resultados praticos. A avaliacao microbiologica das massas de pizza pre-assadas, durante a estocagem refrigerada, garantiu a seguranca microbiologica por ate 58 dias apos sua fabricacao. Sensorialmente as formulacoes somente com FBT e a com ambas as fibras (ponto central do planejamento) foram tao aceitas pelos consumidores quanto a formulacao controle sem fibras, alem de serem produtos considerados alto teor de fibras (6 g de fibras/100 g de produto). Apesar da menor aceitacao pelos consumidores, e possivel obter um produto com apelo de fonte de fibras e de grao inteiro, pois o produto com 90% de FTGI substituindo a FTR, contem cerca de 5,6% de fibras e mais de 51% de grao inteiro em sua composicao final
Abstract: Although there is little research on the quality and technology associated with the production of pizza and few quality indicators available in the legislation for this type of product, some phenomena can be explained by analogy to the production of bread, since the basic ingredients of these two products are practically the same. The increase of the pizza market in Brazil, of 5% a year in sales, and the growing public concern in maintaining a healthy diet, but also seeking and giving preference to foods of convenience and practicality are indicators that the development of pre-baked pizza doughs enriched with fibers can have a positive impact on this expanding market and trends in the choice of foods by consumers. The objective of this study was to evaluate the effects of the addition of whole grain wheat flour (FTGI) and white wheat fiber (FBT) on the quality of pre-baked pizza doughs. Their effects on the processing and technological, sensory and conservation characteristics of pre-baked pizza doughs were identified. FTGI and FBT interfered in the farinographic and extensographic parameters, which affected the processing conditions of the prebaked pizza doughs, as observed in practice as an increase in the amount of water required for the development of the dough, longer mixing times for the formation of the gluten network and an increase in dough elasticity. Regarding pre-baked pizza dough quality, the sources of dietary fiber had a significant influence on specific volume and thickness of the pizza disks, color L* and a*, total titrable acidity, and it can be said that the models obtained in this work reproduce the practical results if the same processing conditions and ingredient variation ranges are used. The microbiological evaluation of the pre-baked pizza doughs, during refrigerated storage, guaranteed the microbiological safety for up to 58 days. Sensorially, the FBT formulation and the formulation with both fibers (central point of the experimental design) were as accepted by consumers as the control formulation without fibers, as well as being considered ¿high fiber products¿ (6 g fibers/100 g of product). Despite the lower acceptance by consumers, it is possible to obtain a high fiber and whole grain pre-baked pizza dough, since the formulation with 90% of FTGI replacing the refined flour contains about 5.6% of dietary fiber and more than 51% of whole grain in its final composition

Resumo: Existe uma demanda crescente por produtos funcionais contendo fibras, principalmente por produtos de panificação utilizando farinha de trigo integral, devido aos benefícios à saúde, como a diminuição do risco de alguns tipos de câncer, doenças cardiovasculares, diverticulites e problemas relacionados à obesidade. No entanto, a farinha de trigo integral possui vida de prateleira reduzida por apresentar alta atividade enzimática e presença de bolores e leveduras que dificultam seu armazenamento e conservação. Estudos demonstraram que a vida de prateleira da farinha de trigo integral pode ser prolongada através de métodos de estabilização, como a utilização de radiação gama ou radiação infravermelha em condições adequadas. Este trabalho objetivou estudar o efeito de métodos de estabilização da farinha de trigo integral utilizando radiação gama e radiação infravermelha na vida de prateleira e nas características tecnológicas da farinha integral e na elaboração de pão de forma. Foram realizados experimentos para estabelecer as melhores doses de radiação gama (0,5; 1,5; 2,5; 3,5 e 4,5 kGy), aplicada na farinha de trigo integral e nos grãos de trigo. As condições ideais de temperatura e tempo de exposição do farelo à radiação infravermelha, foram determinadas através do Delineamento Composto Central Rotacional (DCCR 22), variando a temperatura de 66 (-1,41) a 94ºC (+1,41), e o tempo de 8 (-1,41) a 22 minutos (+1,41). Os ensaios da radiação infravermelha foram realizados em estufa equipada com resistências infravermelhas de cerâmica, de comprimento de onda de 2,7 µm. Foram realizadas análises após a aplicação das doses de radiação gama (na farinha e no grão) e radiação infravermelha (no farelo), sendo avaliadas as características físico-químicas (composição centesimal e cor) e reológicas (viscosidade da pasta, farinografia, extensografia, teores e índices de glúten e Falling Number) das farinhas irradiadas e controle. As farinhas integrais e os grãos irradiados com radiação gama e a farinha de trigo integral reconstituída com o farelo submetido a radiação infravermelha (20 min a 90ºC) foram armazenados durante quatro meses e a cada mês foram realizadas análises para acompanhamento da estabilidade (acidez do extrato etéreo, microbiologia e presença de insetos), e desempenho em panificação (volume específico, umidade e dureza dos pães de forma integrais). Os resultados demonstraram que: a) a qualidade da farinha de trigo integral e dos pães de forma é influenciada por sua estabilidade e características reológicas; b) os efeitos da radiação gama na farinha integral são dependentes da dose de radiação gama aplicada, sendo que todas elas afetaram de modo negativo as características reológicas e a qualidade dos pães, devido a modificações causadas nas frações amido e proteína; no entanto a utilização de baixas doses melhorou a estabilidade, porém, devido aos efeitos adversos na massa, esta técnica não é recomendada; c) os efeitos da radiação gama nos grãos de trigo também são dependentes da dose utilizada; no entanto, se observou que os efeitos no grão não são tão intensos como aqueles observados na farinha de trigo integral, sendo que a dose 0,5 kGy, foi eficiente na estabilização dos grãos e da farinha resultante, não interferindo significativamente nas características reológicas e na qualidade dos pães, podendo ser uma alternativa para o prolongamento da estabilidade dos mesmos; d) a utilização de radiação infravermelha demonstrou ser eficiente nos propósitos deste trabalho, pois, prolongou a estabilidade da farinha de trigo integral e melhorou a qualidade dos pães de forma integrais. Esta depende das condições de tempo e temperatura utilizadas, sendo verificado que a exposição do farelo a 90ºC por 20 minutos foi eficiente para reduzir a atividade da enzima lipase e a contagem de bolores e leveduras, melhorando a estabilidade da farinha de trigo integral e a qualidade dos pães
Abstract: There is an increasing demand for functional products with fibers, mainly for bakery products using whole wheat flour, due to health benefits, such as reductions of the risk cardiovascular and diverticular diseases, cancer, and problems related to obesity. However, whole wheat flour has a reduced shelf life because it presents high enzymatic activity and the presence of molds and yeasts that make its storage and conservatism difficult. Studies have demonstrated that the shelf life of whole wheat flour can be improved through stabilization methods, such as gamma radiation or infra red radiation used in adequate conditions. The objective of this work was to study the effect of stabilization methods for whole wheat flour using gammaradiation and infra red radiation on the shelf life and technological characteristics of the whole wheat flour and on whole bread elaboration. Experiments were carried out to establish the best doses of gamma radiation (0.5, 1.5, 2.5, 3.5 and 4.5 kGy), applied to whole wheat flour and to wheat grains. The ideal conditions of temperature and exposition time of the bran to infra red radiation, were determined through the Response Surface Methodology (CCRD 22), varying temperature from 66 (-1,41) to 94ºC (+1,41), and time from 8 (-1,41) to 22 minutes (+1,41). The infra red radiation assays were carried out in an oven equipped with infra red ceramic resistances, with a wave length of 2.7 µm. Analyses were carried out after the application of gamma radiation doses (in the flour and in the grain) and infra red radiation (in the bran)evaluating the physical-chemical (proximate chemical composition and color) and rheological (paste viscosity, farinograph, extensograph, gluten content and Falling Number) characteristics of radiated and control flours. The gamma radiated whole wheat flours and grains and the whole wheat flour reconstituted with the bran submitted to infra red radiation (20 min at 90ºC) were stored during four months and at each month analyses to follow stability (fat acidity, microbiology and presence of insects), and to evaluate baking performance (specific volume, moisture and hardness of whole breads) were carried out. The results demonstrated that: a) the quality of whole wheat flour and of the whole breads is influenced by their stability and rheological characteristics; b) the effects of gamma radiation on whole flour are dependent on the gamma radiation dose applied, but all doses negatively affected rheological characteristics and bread quality, due to modifications caused in the starch and protein fractions; however, the use of low doses improved stability, but due to the adverse effects on the dough, this technique is not recommended; c) the effects of gamma radiation on the wheat grains are also dependent on the dose used; however, it was observed that the effects of radiation on the grains are not so intense as those observed on the whole wheat flour, being the dose of 0.5 kGy efficient in the stabilization of the grains and resultant flour, not intervening significantly with rheological characteristics and bread quality, being an alternative for increasing their stability; d) the use of infra red radiation demonstrated to be efficient for the intentions of this work; as, it increased the stability of whole wheat flour and improved bread quality. It depends on the conditions of time and temperature used, being verified that the exposure of the bran to 90ºC for 20 minutes was efficient to reduce lipase activity and yeasts and molds count, improving stability of whole wheat flour and bread quality

Resumo: O interesse dos consumidores por alimentos com características funcionais tem aumentado nos últimos anos. A farinha de trigo de grão inteiro (FTGI) contém constituintes com efeitos benéficos a saúde (fibras, minerais, vitaminas, antioxidantes e aminoácidos). O amido resistente (AR) também tem sua contribuição à saúde, atuando como fibra alimentar. Massas alimentícias, cuja produção brasileira cresce a cada ano, constituem uma excelente forma de aplicação dessas matérias-primas. Contudo, a FTGI e o AR podem trazer prejuízos tecnológicos. A enzima transglutaminase (TG) mostra-se como alternativa a esse problema, pode atuar formando ligações cruzadas com a glutenina e a gliadina. O objetivo geral foi estudar o efeito de diferentes fontes de fibras (FTGI ou AR) e da transglutaminase nas características tecnológicas, estruturais e sensoriais de massas alimentícias tipo espaguete. O estudo foi desenvolvido em quatro artigos: 1°) estudar a influência da adição de FTGI (51 a 100 %) e TG (0 a 0,5 %) nas características reológicas, de cozimento, textura e solubilidade de proteínas dos espaguetes, através de um delineamento composto central rotacional (DCCR); 2°) estudar o efeito da TG (0,5 %) nas características de cozimento e textura, estruturais e sensoriais de espaguetes adicionados de 58 % de FTGI; 3°) estudar o efeito da adição de AR (0 a 20 %) e TG (0,2 a 1,0 %) nas características (citadas no 1°artigo) dos espaguetes, através de um DCCR; 4°) estudar o efeito da TG (1,0 %) nas características (citadas no 2° artigo) de espaguetes adicionados de 14 % de AR. No 1°) observou-se que a adição de FTGI e TG foi estatisticamente significativa (p<0,10) para o tempo de desenvolvimento da massa, índice de tolerância à mistura e cor (L*). Os produtos constituem fontes de fibras, pois contêm mais de 3 % de fibra alimentar no produto pronto para o consumo (Portaria SVS/MS nº 27, 13/01/1998). No 2°) verificou-se que a TG aumentou (p<0,05) a firmeza e a temperatura final de gelatinização; também observou-se seu efeito na estrutura do produto por microscopia eletrônica de varredura (MEV). A avaliação sensorial mostrou que o produto adicionado ou não de TG não diferiu estatisticamente (p<0,05) do controle quanto à textura e sabor, e a aparência foi melhor. Nos testes de aceitação e intenção de compra, a média dos espaguetes foi 7 e 4, que correspondem a "gostei moderadamente" e "provavelmente compraria", respectivamente. Além disso, as massas com adição de 58 % de FTGI são consideradas fonte de fibras e produtos e baixo índice glicêmico (aproximadamente 65 %). No 3°) AR e TG foram estatisticamente significativos (p<0,10) para cor, tempo ótimo de cozimento, aumento de peso, elasticidade e o teor de AR. Alguns dos produtos desenvolvidos foram fontes de fibra. No 4°) TG aumentou significativamente (p<0,05) a firmeza e elasticidade. A solubilidade proteica foi inferior no produto com TG para um tipo de solvente. O efeito da TG também foi observado através de MEV. Na avaliação sensorial, os espaguetes com ou sem TG não apresentaram diferença estatística para os parâmetros analisados através do teste de comparação múltipla, na aceitação e intenção de compra. A adição de 14 % de AR, além de caracterizar os produtos como fonte de fibras e de baixo índice glicêmico, possibilita a obtenção de produtos de qualidade tecnológica semelhante aos existentes no mercado
Abstract: The consumer interest in foods with better nutritional and functional characteristics is increasing in recent years. Whole-grain wheat flour (WGWF) contains many constituents with beneficial health effects (fiber, minerals, vitamins, natural antioxidants and amino acids). The resistant starch (RS) also contributes to human health once it presents similar effect of dietary fiber. Pasta, whose Brazilian production is increasing every year, consists of an excellent way of applying these raw materials. However, WGWF and RS may produce harmful effects during production process, since these components dilute the proteins forming the gluten in the product. The transglutaminase enzyme (TG) can act by forming cross links with the glutenin and gliadin, showing up as an alternative to this problem. The general objective was to develop spaghetti and study the effect of different sources of fiber (WGWF or RS) and transglutaminase on the technological, structural and sensory characteristics of the pasta. The study was conducted in four article: 1) the influence of adding WGWF and TG on texture, cooking characteristics and protein solubility of pasta using a randomized central composite design (RCCD), where the independent variables were WGWF (51 to 100%) and TG (0 to 0.5); 2) the effect of TG (0.5%) in texture, cooking, sensory and structural characteristics of pasta added 58% WGWF; 3) the effect of adding RS and TG on texture, cooking characteristics and protein solubility of pasta using a RCCD, where the independent variables were RS (0 to 20%) and TG (0.2 to 1.0); 4) the effect of TG (1.0%) on texture, cooking, structural and sensory characteristics of pasta containing 14% of RS. 1) The addition of TG and WGWF was statistically significant (p <0.10) in the dough development time, mixing tolerance index and color (L *). All formulations can be considered sources of fiber, since they contain more than 3% total dietary fiber. 2) We found that the addition of TG significantly increased (p <0.05) firmness and final gelatinization temperature and this effect was also observed in scanning electron microscopy (SEM). The sensory evaluationbased on the multiple comparison test showed that either pasta with TG addition orwithout the enzyme was not statistically different (p <0.05) than control sample with respect to texture and flavor. The appearance of these products was considered better than the control sample and did not differ from each other. Regarding the acceptance test and purchase intention, the average scores was 7 and 4, which correspond to "like moderately" and "probably buy" respectively. In addition, astacontaining 58% WGWF is considered source of fiber and low glycemic index food (about 65%). 3) RS and TG influenced the product quality, being statistically significant (p<0.10) for the color (L *, a *, b * and _E) optimum cooking time, increase weight, elasticity and RS content. It is worth mentioning any of the pasta developed in this study is source of dietary fiber. 4) We observed a significant effect (p <0.05) of TG on the characteristics of texture (firmness and resilience), once the product with added TG showed higher values than the product without TG addition. A significant effect was also observed on protein solubility, which was lower in the product containing TG when using a mixture of solvent. The effect of TG was also observed in scanning electron microscopy. In sensory evaluation, pasta with TG added or without the enzyme showed no statistical difference for theparameters studied by multiple comparison test, acceptance test and purchase intention. Besides characterizing the products as a source of fiber and low glycemic index, adding 14% of RS allows for obtaining competitive high-quality products

Resumo: A extrusão é a principal tecnologia utilizada na obtenção de cereal matinal ready-to-eat (RTE), sendo o amido o principal constituinte estrutural. O processo ocorre sob condições de alta temperatura, alta pressão, baixa umidade e cisalhamento. Atentos à crescente demanda de consumidores preocupados com a saúde, estudos têm mostrado que é possível introduzir ingredientes na formulação de extrusados que incrementem o seu valor nutricional e/ou funcional e, no caso de cereal matinal, a farinha de trigo de grão inteiro e os produtos derivados de frutas são exemplos com potencial de associar funcionalidade ao produto. O objetivo deste trabalho foi avaliar o efeito da substituição da farinha de milho (FM) por farinha de trigo de grão inteiro (FTGI), da umidade de alimentação da matéria-prima e da temperatura de extrusão sobre as propriedades tecnológicas, sensoriais e nutricionais de cereal matinal RTE. Os cereais matinais foram elaborados seguindo um delineamento composto central rotacional 23 (18 ensaios), sendo as variáveis independentes: proporção de FTGI, umidade de alimentação da matéria-prima e temperatura das zonas 3 e 4 da extrusora. Os produtos extrusados foram avaliados quanto aos aspectos físicos, químicos, nutricionais e sensoriais. O ponto ótimo foi selecionado de forma empírica, tendo como critérios de definição expansão intermediária, máximo teor de fibra alimentar (considerando os valores estabelecidos pela legislação), mínima dureza e máxima crocância, principalmente após imersão em leite. Com base nisso, quatro formulações de cereal matinal foram processadas nas condições de temperatura e umidade do ponto ótimo (100°C e 16%, respectivamente) e com inclusão de casca de jabuticaba em pó (CJP), sendo: (1) 100% de FM; (2) 20% FM + 80% FTGI; (3) 10% FM + 10% CJP + 80% FTGI e (4) 90% FM + 10% CJP. Os cereais resultantes foram igualmente avaliados quanto a sua qualidade tecnológica (índice de expansão, densidade aparente, textura a seco, textura em leite, índice de solubilidade em água, índice de absorção de água), nutricional (fibra alimentar total, perfil de fenólicos e atividade antioxidante) e sensorial (testes de aceitação e de intenção de compra). O perfil de fenólicos e a atividade antioxidante dos cereais matinais e matérias-primas foram avaliados por cromatografia líquida de alta eficiência (CLAE) e pela capacidade de absorbância do radical oxigênio (ORAC). A combinação de FTGI com FM foi uma boa alternativa para o incremento do teor de fibra alimentar nos produtos extrusados. As propriedades de textura dos extrusados, dureza e crocância, foram principalmente influenciadas pela FTGI e umidade de alimentação; com alterações nas propriedades após imersão em leite. Em relação à cor, os cereais elaborados com alto teor de FTGI à alta temperatura ou alto teor de umidade foram mais escuros. A natureza do amido, tão bem como a presença de fibra governou o processo de gelatinização, a formação do complexo amilose-lipídeo e a retrogradação. Os cereais matinais contendo FTGI e CJP apresentaram aceitáveis características físicas e sensoriais. Abstract: Extrusion is the main technology used to obtain "ready-to-eat" (RTE) breakfast cereals, being starch their main structural component. The process submits the ingredients to conditions of high temperature, high pressure, low moisture, and shear. Aware of the growing demand of consumers concerned with their health, studies have shown that is possible to introduce ingredients that enhance the nutritional and/or functional value of extruded products and, in the case of breakfast cereals, whole-grain wheat flour and fruit products are examples with the potential of associating functionality to the product. The objective of this study was to evaluate the effect of the substitution of corn flour (CF) by whole-grain wheat flour (WGWF), extrusion temperature and raw-material moisture content on the technological, sensory and nutritional properties of RTE breakfast cereals. The breakfast cereals were produced following a 23 central composite rotatable design (18 trials), being the independent variables: WGWF ratio, feed moisture and temperature of 2rd and 3th barrel zones. The extruded products were evaluated in terms of physical, chemical and nutritional aspects. The optimum point (OP) was selected, empirically, considering intermediate sectional expansion, maximum dietary fiber (legislation value), minimum compression force and maximum crispness, mainly after immersion in milk. In a second stage, four breakfast cereal formulations were processed at temperature and feed moisture corresponding to the OP (100°C and 16%, respectively) and with jabuticaba peel powder (JPP) inclusion, being: (1) 100% CF; (2) 20% CF + 80% WGWF (3) 10% CF + 10% JPP + 80% WGWF e (4) 90% CF + 10% JPP. The breakfast cereals were evaluated in terms of technological (expansion index, bulk density, dry texture, texture after soaking in milk, water solubility index and water absorption index), nutritional (total dietary fiber) and sensorial quality (sensorial acceptability and purchase intention). The phenolic profile and antioxidant activity of cereals and raw materials were also evaluated by high performance liquid chromatograph (HPLC) and oxygen radical absorbance capacity (ORAC assay), respectively. The combination of wholemeal wheat flour with corn flour was a good alternative for increasing the fibre content of extruded products. The textural properties of the extrudates, hardness and crispness, were mainly influenced by WGWF and feed moisture; with changing in properties after soaking in whole milk. In relation to color, the extrudates elaborated with high amount of WGWF at high temperature or high feed moisture content was darker. The starch nature as well the fiber presence governed the starch transformations and interactions (gelatinization, amylose-lipid formation and retrogradation). The low sugar breakfast cereals from WGWF and JPP showed acceptable physical and sensory characteristics. The anthocyanins, cyanidin 3-glucoside (cyd-gluc) and delphinidin 3-glucoside (dpd-gluc), and ferulic acid were the predominant phenolic compounds in raw materials (JPP and WGWF, respectively), and were also identified in extrudates, which showed in vitro antioxidant activity

In recent years the demand for healthy and high nutritional value foods has grown greatly, leading to a higher interest in the exploitation of unrefined wheat flours in the bread-making process. Indeed, many scientific evidences reported that the regular consumption of unrefined cereal products has positive effects on human health. However, the use of unrefined wheat flours in the bread-making process poses many technological issues since the germ and the bran negatively affect dough properties and bread quality. The different chemical composition of unrefined wheat flours may require changes in the processing conditions which should be specifically designed to improve the bread-making performance of these raw materials. Bread is the staple food in many diets, hence the possibility of increasing the nutritional value of the product while maintaining an acceptable technological quality could significantly impact human health. At first we performed an in depth analysis of the literature about the main techniques and technologies for the bread-making process with unrefined wheat flours. The most common strategies developed by the scientific literature are based on the addition of improvers in the bread formula, whereas processing strategies have been scarcely investigated. Hence, we performed a survey to bakers that use ancient wheat flours for bread production; the aim was to obtain an empirical state of the art about the main bread-making strategies developed by the experts in the field. Results showed that bakers do not add improvers to the bread formula, but they have developed some processing strategies to improve the bread-making performance of ancient and unrefined wheat flours. However, they emphasised the necessity to find innovative techniques and technologies for the bread-making process with unrefined wheat flours. The literature and empirical state of the art allowed us to direct the experimental research on specific issues related to the use of unrefined wheat flours in the bread-making process. We proposed a different approach for the bread-making with unrefined wheat flours compared to the standardisation approach used with refined flours; an adaptation of bread formula and processing conditions to the specific requirements of unrefined wheat flours is necessary to improve dough properties and bread quality. At first we investigated strategies related to bread formulation, testing the effect of a natural improver, i.e. gelatinised brown flour, on dough properties and bread quality and proposing a two-step optimisation approach to optimise the formula of unrefined wheat bread. Then, the thesis research focused on the optimisation of the bread-making process; for the first time we applied 1H nuclear magnetic resonance (NMR) technique during the kneading step of unrefined wheat dough to reveal the chemical-physical phenomena occurring to the flour constituents. Furthermore, two dough water levels were tested in order to investigate the critical role of the water amount during unrefined dough development. The thesis research performed an organised scientific study on the behaviour of unrefined wheat flours. The study showed that an adaptation of the bread formula and bread-making conditions is crucial to improve the bread-making performance of unrefined wheat flours, which are characterised by poor technological quality and high variability. The optimisation approach was able to significantly improved unrefined dough properties and bread quality. However, this approach can not be applied on an industrial-scale, hence the introduction of new standard tests or innovative methods for process control is required to promote the exploitation of unrefined wheat flours. NMR technique was able to reveal the main physical-chemical phenomena occurring during the kneading of unrefined wheat dough and the crucial role of kneading variables (water and time).
