Анотація:
The influence of the high pressure treatment of 300 MPa/200 s, possibly combined with antimicrobial additives, on the quality of liquid whole egg (LWE) in terms of rheology, foaming and emulsification properties, colour changes, and microbial quality was studied and compared to the characteristics of commercially available pasteurised liquid whole egg (65°C, 3 min). It can be concluded that the above-mentioned regime of LWE pressurisation did not deteriorate its functional properties and can be used, after the addition of some antimicrobial agents, as a preservation technique keeping its organoleptic and nutritive qualities.

Анотація:
Effect of extrusion cooking on hydration properties (water absorption index (WAI), water solubility index (WSI)), and viscosity (peak viscosity (PV), final viscosity (FV)) of corn flour was studied. The preconditioned corn flour was processed using different extrusion cooking conditions at the variable moisture content (MC), temperature (T), and screw speed (SS). Statistical analysis showed that irrespective of variable processing parameters the hydration properties were improved after extrusion cooking. WAI and WSI were increased by 70% to 268% and 5 to 198%, respectively over unextruded flour. The viscosity of extruded corn flour showed a significant (p < 0.05) decrease, indicating high paste stability of corn flour after extrusion cooking. Overall, there was 72 to 86% decrease in PV and 89 to 95% decrease in FV. The mild processing conditions (high MC, low SS, and low T) imparted better hydration properties, whereas severe processing conditions (low MC, high SS, and high T) imparted better paste stability to corn flour. Extruded corn flour with modified functional properties has the potential to be exploited in the development of various gluten-free ready-to-eat products, composite flours, bakery products, etc.

In this paper, the influence of liquid alkali-free accelerator and advanced composite cementitious materials on the mechanical properties, durability and workability of shotcrete was studied. The important role of the two materials in the performance improvement of shotcrete was clarified. The technical measures proposed were verified by field test. The results show that: In terms of workability, the composite use of alkali-free accelerator and functional admixture can achieve fast setting and high early strength of shotcrete, thus effectively reducing the rebound rate; In terms of mechanical properties, functional admixture can effectively improve the early mechanical properties of shotcrete, while alkali-free accelerator can ensure the long-term development of mechanical properties; In terms of durability, the use of functional admixtures can effectively improve the compactness of shotcrete, and the test results of 56d electric flux are lower than 1000C.

Functional products belong to the category of products that provide the human body with not only energy but also plastic substances and perform primarily the health function. The development of preventive and medical products in this area is based on the concept that envisages introduction of additives into their formulation, which meet requirements such as safety for the organism and effective binding of heavy metals (formation of strong insoluble complexes resistant to the action of enzymes in a wide range of pH). To some extent, these requirements are met by food polysaccharides contained in prebiotic functional powders. The results of in vitro studies on the binding of heavy metal ions by functional prebiotic plant powders to determine their radioprotective properties are presented in the paper. The results of research conducted using the developed drying technologies show the high complexing properties of prebiotic powders and their efficiency, greater than the efficiency of pure apple and citrus pection. Appropriate balanced nutrition using prebiotic powders in fast food products will help to reduce the risk of various diseases and remove radionuclides grom the body.

We explored the superconducting transition temperature for bulk Pd and predicted possible superconductivity at ambient and high pressures. It is found that of Pd is 0.0356 K at ambient pressure and it decreases with pressure.

Sugar profile, antioxidant properties, DNA damages, and in vitro predicted glycaemic index (pGI) of palm sugars (syrup and powder) were investigated in comparison with refined cane sugar. It was found that palm sugars exhibited better nutritional qualities than refined cane sugars. Palm sugars in both syrup and powder forms showed similar results, except in some properties. They contained a high content of fructose and glucose. They also exhibited better antioxidant properties, as evidenced by the high content of phenolic compounds and flavonoids. This contributed to their great antioxidant activities when assessed by DPPH radical scavenging activity and FRAP assay. The addition of palm sugar extracts to the reaction mixture effectively protected against DNA damage. For pGI, the mixture of corn starch and palm sugars showed slow digestion rate and, consequently, lower pGI values than those of refined cane sugars. Nutritional and functional properties of palm sugars were thought to be influenced by their retained phytonutrients, as they were processed under mild conditions.

Aims: The main objective of the present research work was to evaluate the (phytochemical, biochemical, and antimicrobial) properties of Muscat of Alexandria leaf powder and develop new functional dairy product using the mixture lactic bacteria and vine leaf powder as prebiotic for health applications (gastric and cardiac problems, etc.). Material and Methods: Various nutritional parameters of the vine leaf powder namely: pH, acidity, water content, ashes, salts, fatty acids) were determined. Also, their bioactive substances (TPC, total flavonoids content, tannin content, soluble-water polysaccharides) were extracted and quantified using referenced methods. The evaluation of antimicrobial activity of these substances was carried out by disc method. Vine leaf powder and aqueous extract were used to improve acidification kinetic. Also, functional yogurt using the mixture (lactic bacteria and vine leaf powder as prebiotic) was prepared. Results: The main results demonstrate that, the vine leaf powder contains high-value components such as salts with a high k/Na ratio, fatty acids (palmitic, linolenic and oleic) and bioactives (polyphenols, tannins and polysaccharides). The antimicrobial activity of these bioactive metabolites varies depending on the resistance of the strains tested. On the other hand, vine leaf TPC and polysaccharides act as an antifungal against (C. albicans and A. niger) and increase the acidification rate and consequently the growth and activity of the lactic bacteria in the yogurt, which suggests a probable prebiotic effect. Conclusions: Through this study, we have demonstrated the high content of vine leaves in several bioactive compounds such as polyphenols, flavonoids, tannins and polysaccharides. These compounds display an interesting antimicrobial activity and an extensive effect on the activity of lactic bacteria, which suggests a prebiotic effect. The article concerns the systematic approach to modeling food emulsions with high bioavailability of lipophilic functional components used as a basis for the functional food production. The researchers considered polyunsaturated fatty acids as functional food ingredients (FFI). They developed heuristic model that specified the initial and resulting parameters for designing a functional fat base formulation; described options for enriching emulsions with functional food ingredients, which involve the functional fat base use and the introduction of high-value omega – 3 fatty eicosapentaenoic (EPA) and docosohexaenoic (DHA) acids into the fat phase. A man presented models of functional food emulsions and revealed double emulsions advantages to regulate the functional food ingredients bioavailability based on the properties comparing results of the simulated emulsions (thermodynamic stability and physicochemical properties).

Refractive index-sensitive resonant waveguide grating biosensors are used to assay the label-free enzymatic degradation of biomolecules. These assays provide a robust means of screening for functional lytic modulators. The biomolecular substrates in this study were covalently immobilized through amine groups. Using the Corning® Epic™ System, the digestion signatures for multiple protein substrates on the biosensors are measured. Label-free digestion profiles for these proteins were substrate specific. Similarly, the authors find that the label-free digestion is protease specific. Enzyme-substrate pairs were used to evaluate high- throughput biosensors as tools for screening functional modulators. The lytic inhibitor properties for several proteases and dextranase are determined. The authors find that the IC50 values for the protease inhibitors agree with the reported values for several known inhibitors. The Ź values, using biosensor-based functional lytic screens, were routinely greater than 0.5, making this label-free application feasible for high-throughput screening.

Pervious concrete is characterized by its open-void structure, which gives it a number of specific properties and allows specific applications, including pervious pavements, residential roads, alleys, sidewalks, parking lots, patios, and so on. Permeable areas are extremely important for the creation of sustainable cities in terms of the water cycle. Due to its high void content and low cement/mortar content, pervious concrete generally may have significantly reduced strength when compared with conventional concrete. That is why a wide range of research activities is devoted to the balance between acceptable void content, strength, as well as other significant properties. Knowledge of the relationships between the individual properties is very important for understanding this specific material. In this paper, a wide range of 38 different composition variants has been tested to determine the dependencies between the essential properties of pervious concrete. The variables related to the type of aggregate, maximum grain size, the grain-size composition, the amount of binder, and the kind (composition) of binder. The dependencies reported in the article are defined with high reliability R2 ranging from 0.75 to 0.95. On the basis of the dependencies thus determined, it can be predicted that a density of min. 1740 kg/m3 must be reached to meet the requirement of min. 10 MPa for nonpavement applications, while a density of min. 1960 kg/m3 must be achieved to meet min. 20 MPa for pavement applications. The criteria of the void ratio for pavement applications can be set at 20 ± 3%, while the criteria for nonpavement applications can be set at 28 ± 6%.

Summary We consider estimating a functional graphical model from multivariate functional observations. In functional data analysis, the classical assumption is that each function has been measured over a densely sampled grid. However, in practice the functions have often been observed, with measurement error, at a relatively small number of points. We propose a class of doubly functional graphical models to capture the evolving conditional dependence relationship among a large number of sparsely or densely sampled functions. Our approach first implements a nonparametric smoother to perform functional principal components analysis for each curve, then estimates a functional covariance matrix and finally computes sparse precision matrices, which in turn provide the doubly functional graphical model. We derive some novel concentration bounds, uniform convergence rates and model selection properties of our estimator for both sparsely and densely sampled functional data in the high-dimensional large-$p$, small-$n$ regime. We demonstrate via simulations that the proposed method significantly outperforms possible competitors. Our proposed method is applied to a brain imaging dataset.

For slowly varying fields the vacuum functional of a quantum field theory may be expanded in terms of local functionals. This expansion satisfies its own form of the Schrödinger equation from which the expansion coefficients can be found. For scalar field theory in 1+1 dimensions we show that this approach correctly reproduces the short-distance properties as contained in the counterterms. We also describe an approximate simplification that occurs for the sine–Gordon and sinh–Gordon vacuum functionals.

The thermodynamic properties of tetragonal CaSiO3 perovskite are predicted at high pressures and temperatures using the Debye model for the first time. This model combines the ab initio calculations within local density approximation using pseudopotentials and a plane wave basis in the framework of density functional theory, and it takes into account the phononic effects within the quasi-harmonic approximation. It is found that the calculated equation of state is in excellent agreement with the observed values at ambient condition. Based on the first-principles study and the Debye model, the thermal properties including the Debye temperature, the heat capacity, the thermal expansion and the entropy are obtained in the whole pressure range from 0 to 150 GPa and temperature range from 0 to 2000 K.

Abstract The development of high entropy alloy (HEA) is considered a new bloom area as the ideas open up the exploration of a various multi-disciplinary elements in many applications. It is a novel class of complex materials identified in the phase diagram’s core, and they have been proven to outperform typical alloys. This HEA involves mixing unique combinations of mechanical and functional qualities across an infinite space of alloy composition. It is also possessing a great understanding of the thermodynamic behaviour of the materials which influence greatly their physical and mechanical properties. This review paper aims to open up the possibilities of developing HEA on different types of approaches based on the core effects which is very useful in functional materials applications especially in semiconductor, refractory and many more. However, to obtain this material, the most crucial thing is to understand and develop their synthesising routes of HEA production, which has become the main priority. Therefore, this paper focuses on discussing different metal elements that are commonly used in HEA and few fabrication routes on HEA. Some of recent functional materials based HEA is introduced by their enhance properties compare to conventional alloys.

The review on effect of a high strain rate on the properties of TiNi-shape memory alloys is presented. The study of thermo-mechanical and functional properties of SMA after high strain rate loading was carried out. The object of study was an equiatomic TiNi shape memory alloy. The samples were tensioned at a strain rate of about 103s-1at various temperatures in martensitic, austenitic, and two-phase state, using the Split Hopkinson Pressure Bar technique. Two-way shape memory effects were investigated. Two-way shape memory after high strain rate loading was less than after the quasi-static one for all cases, except for straining in martensitic state.
