Анотація:
Synthetic coagulants currently used to treat dye wastewater in the water treatment industry has been found to produce large amounts of waste and is bad for the environment. The research then presents two different methods of preparing Hibiscus Sabdariffa as a natural coagulant which are direct method and freeze-drying method to possibly replace synthetic coagulant in treating dye wastewater. The two different methods of preparing natural coagulant Hibiscus Sabdariffa are compared in terms of protein retention and coagulation performance at removing dye from dye wastewater. This is to determine which method of preparation is better at preparing a Hibiscus Sabdariffa as a natural coagulant to be used in the water treatment industry. Three analysis are done to determine the optimum concentration of Hibiscus Sabdariffa powder and freeze-drying duration is based on (i) surface morphology, (ii) water solubility and (iii) water activity. Optimum concentration of Hibiscus Sabdariffa powder is 20wt% and 24-hour freeze-drying duration. Another analysis is done to compare protein retention of each methods of preparation using (iv) Fourier Transform Infrared (FTIR) spectroscopy testing. Protein in Hibiscus Sabdariffa prepared using freeze drying is completely retained based on Fourier Transform Infrared spectroscopy results. Supporting data of protein retention properties of freeze drying is proven by water activity in Hibiscus Sabdariffa powder is at 0.478 and below the 0.6 threshold value. Water activity of 0.478 means that there is not enough water content in Hibiscus Sabdariffa powder for microorganisms to grow and degrade the protein. Optimum coagulant dosage and pH value that Hibiscus Sabdariffa prepared using the two different methods best works in is determined based on two experiments called (v) effects of coagulant dosage on dye removal percentage and (vi) effect of pH value of preparation methods on colour removal percentage. Coagulation performance of both preparation methods are also determined using experiment (v) and (vi). Hibiscus Sabdariffa prepared using freeze drying has better coagulation performance with higher colour removal percentage at lower required coagulant dosage and higher dye removal percentage at varied pH values compared to direct method. As a result, freeze drying is better in terms of coagulation performance compared to direct method at preparing natural coagulant Hibiscus Sabdariffa. Coagulation performance of natural and chemical coagulant is compared using (vii) jar test comparison between natural and chemical coagulant on colour removal. This is to determine if coagulation performance of natural coagulant is comparable to chemical coagulant. Coagulation performance of natural coagulant is only slightly lower than synthetic coagulant at colour removal percentage of 91.2% compared to 92.3%. This makes the coagulation performance of natural coagulant comparable to synthetic coagulant allowing it to be an alternative to synthetic coagulant based on coagulation performance. Therefore, Life Cycle Analysis (LCA) will then be conducted to compare the better method of preparation of natural coagulant which is freeze-drying of natural coagulant Hibiscus Sabdariffa to chemical coagulant alum. Life Cycle Analysis done is to determine, evaluate and compare natural against chemical coagulant based on 3 sustainability aspects economic, environment and social aspects. This is to determine the feasibility of natural coagulant Hibiscus Sabdariffa in the water treatment industry on whether it is a possible alternative or replacement to the currently used synthetic coagulant alum. Based on Life Cycle Analysis natural coagulant is the better alternative compared to chemical coagulant based on impact towards the environment and health and well-being of society. However, the implementation of natural coagulant in the water treatment industry is still not feasible as production cost of natural coagulant is 126.86 times more expensive compared to chemical coagulant. As a result, currently Hibiscus Sabdariffa as a natural coagulant is not able to replace synthetic coagulant alum in the water treatment industry.

Анотація:
Contributing to the health benefits associated with the consumption of organically fortified Zobo Tea (Hibiscus sabdariffa) powder as beverage, this research have sought to contribute to knowledge via the production process of spiced Zobo Tea (Hibiscus sabdariffa) powder and its proximate content. Data were subjected to analysis of variance (ANOVA). Comparison of means was carried out by Duncan’s multiple range test Statistical analysis was performed using the statistical package for social sciences (SPSS 17.0) and the means ± SD were calculated from triplicate determinations. The result of the sensory revealed that the entire three sample have no significant differences (p<0.05) that is, they are similar in their characteristics in mean score and standard deviation in terms of all the sensory characteristics (taste, appearance, aroma, texture, overall acceptability). Meanwhile, the proximate content (ash, crude fiber, carbohydrate, protein, and moisture) of sample ZT3 (80g ZT+ 20g SP) was significantly different from ZT1 (100g ZT). Also The Microbial count (Bacillus spp, Proteus spp, Klebsiella spp and Ecoli) were conducted and the result obtained indicated that these samples may be good for beverage production. We thus recommend the consumption of organically fortified zobo tea (Hibiscus sabdariffa) powder which is an indigenous beverage product for a wide range of consumer owing to the numerous health benefits as reviewed.

The dried roselle (Hibiscus sabdariffa var. sabdariffa) calyces were studied for the extraction of anthocyanin in aqueous solution. The total anthocyanin content in dried roselle powder was found to be 310.48mg/100g of dry matter. The extraction temperature at 70°C gave the highest yield (66.69-70.61%), while at 90°C the degradation of anthocyanins occurred. The solid-liquid ratio revealed no significant effect (p>0.05), whereas the particle size showed a significant effect (p<0.05) on the extraction of anthocyanin. The yields of anthocyanin extraction for 300 and 600 μm particle powders were significantly higher (p<0.5) than that of 1180μm powder. Reduction in the particle size inversely increased the yield of anthocyanins. In conclusion, the extraction of anthocyanin from dried roselle calyces with an average particle size of 600μm using a solid-liquid ratio of 1:50 in aqueous medium with pH 7.0 at 70°C for 20min showed the maximum yield (69.84%). Анотація:
Roselle flower (Hibiscus sabdariffa L.) is beneficial as an immunostimulant because of its antioxidant property. Antioxidants in roselle flower are hibiscus anthocyanin, quercetin, L-ascorbic acid and protocatechuic acid. Any potential plants for pytopharmacy should be proven beneficial and safe through preclinical and clinical trial. The purpose of this clinical trial was to determine the effect of ethanol extract of roselle (Hibiscus sabdariffa L.) to lymphocyte and CD4 cell count in healthy volunteer for 30 days. This study used pre-post treatment design. A total of 21 healthy volunteer were chosen according to inclusion and exclusion criteria and filled informed consent. Healthy volunteer were given 500 mg roselle ethanol extract powder every day for 30 days. Lymphocyte and CD4 cell count was conducted using hematology analyzer and flowcytometer. Results were analyzed using paired t test, if the distribution is not normal than Wilcoxon test will be used on 95% confidence interval. Results showed that there was no significant effect (p>0,05) of CD4 cell absolute count and there was a significant effect of CD4 percentage (p<0,05). Results on day 45 (14 days after the treatment was interrupted) showed no significant effect (p>0,05) of CD4 cell absolute count and CD4 cell percentage. The effect of CD4 cell percentage on day 31 was in normal range. This study concluded that 500 mg roselle petal ethanol extract powder (Hibiscus sabdariffa L.) given everyday for 30 days showed some effect on d increasing CD4 cell percentage.

Roselle (Hibiscus sabdariffa) was a member of Malvaceae family. Its calyxes had bright red color due to presence of anthocyanin with an excellent antioxidant property. Raw roselle (Hibiscus sabdariffa L.) calyx was highly perishable due to its high moisture content. In order to diversify products from this plant, this research evaluated the possibility of spray drying for roselle extract into dried powder for long-term consumption. We focused on the effect of sugar alcohols (mannitol, sorbitol, isomalt, xylitol, erythritol) at 8%, carrier agents (maltodextrin, gum arabic, glutinous starch, whey protein concentrate, carboxymethyl cellulose) at 12%, operating parameters of spray dryer (inlet/outlet air temperature, feed rate) on physicochemical quality (bulk density, solubility, total phenolic content, total flavonoid content, anthocyanin content) of rosselle powder. Results showed that the optimal spray drying variables for rosselle powder should be 8% isomalt, 12% whey protein concentrate, inlet/ outlet air temperature 140/85oC/oC, feed rate 12 ml/min. Based on these optimal conditions, the highest physicochemical attributes of the dried roselle calyx powder would be obtained.

Abstract Today the entire research community is looking for sustainable materials. In that process, more research is going on to utilize the natural materials as binders, fillers, reinforcement etc., to enhance the mechanical and thermal properties without affecting the nature. Numerous amount of research is carried out various regions of the world on the usage of pine, sisal, hemp, bagasse, jute, bamboo, coir as reinforcement. This study focuses on the utilization of agro waste like Roselle (Hibiscus Sabdariffa) as reinforcement material in epoxy LY 556 matrix along with different volume percentage of natural filler to form a unique bio based composite material. The composite specimens were fabricated by vacuum bag moulding method. The mechanical properties of the fabricated specimen at different compositions is studied. The maximum mechanical properties were observed for the composite with 30:70 volume percentage Hibiscus sabdariffa with epoxy resin added composition. From the results we can conclude the composite developed using Roselle powder and LY 556 epoxy would be very good alternate for various light weight material applications.

Roselle (Hibiscus sabdariffa L.) contains significant amount of anthocyanins and Vitamin C, however, these nutrients are heat sensitive and are easily degraded during heat processing. This study assessed the influence of drying methods on the physicochemical properties of roselle powders. The 80:20(extract:maltodextrin) liquid feed formulation produced the best quality spray-dried powder. Optimum parameters for spray-drying was established at inlet temperature, Ti = 173+ 1°C, outlet temperature, T0 = 73 +1°C, feed rate(R) of 10 rpm and air pressure (P) of 1.5 – 2.0 bars. Presoaking conditions anddrying methods significantly influenced the antioxidant components of the roselle extract powder. At higher water temperatures (50C° and 100°C), higher losses of anthocyanin and Vitamin C were recorded. Likewise, similar changes were observed in the oven – dried (45°C, 24h) roselle powder. Spray – dried powder had lower Aw, moisture, protein, ash and fiber contents than the oven –dried powder. This study suggested that spray –drying protects the essential nutrients anthocyanin and Vitamin C, however, degrades the proximate composition of roselle powder.

The lipid-lowering activity of microencapsulated and nonmicroencapsulated Hibiscus sabdariffa L. powder fractions in rats rendered hyperlipidemic by a hyperlipid diet (HLD) was determined. Dried calyces of H. sabdariffa were finely ground and fractionated on a sieve column to retain particle sizes ϕ < 315 µm, and were microencapsulated with maltodextrin (MD). Rats were randomly divided into four groups: normal control group, hyperlipid diet group (negative control groups), hyperlipid diet group supplemented with atorvastatin, non-microencapsulated (NMEPHS) and microencapsulated (MEPHS) powders from H. sabdariffa calyces groups. Rats received atorvastatin, NMEPHS and MEPHS for three weeks. Atorvastatin (10 mg/kg) and individual powders were dissolved in water and administered to rats at a dose of 250 mg/kg body weight for three weeks. Body weight, total cholesterol (TC), triglycerides (TG), low-density lipoprotein cholesterol (LDL-C), high-density lipoprotein cholesterol (HDL-C), aspartate transferase (AST), alanine transferase (ALT), superoxide dismutase (SOD), catalase (CAT) and malondialdehyde (MDA) were measured. Very low-density lipoprotein cholesterol (VLDL-C), hepatosomatic index (HSI), and adiposomatic index (ASI) were calculated. Lipid profil, and MDA were increased in the negative control rat groups compared with the negative control rat group. NMEPHS and MEPHS significantly reduced body weight gain, ASI, HSI, TC, TG, LDL-C, ALT, AST, and MDA and increased HDL-C level significantly. Moreover, SOD and CAT activities were reduced with HLD and significantly increased with HSCP intake. however, the most significant activities were revealed by MEPHS. These results suggest that MEPHS exerts potent lipid-lowering effects, promotes hepatic fat breakdown, and regulates antioxidant enzymes in a more efficient manner.

The current demand for edible vegetable oil is increasing worldwide, and the development of new sources of high-quality vegetable edible oil is an essential task. There is also a huge demand for biodiesel in domestic and industrial applications, and foliage oils could be a good source for diesel applications. The current study aimed at the identification and quantification of fatty acids from commonly consumed green leafy vegetables (GLVs) viz., Hibiscus cannabinus, Hibiscus sabdariffa, Basella alba, Basella rubra, and Rumex vesicarius and to calculate the biodiesel attributes of the oil. The total oil content was ascertained as the highest in R. vesicarius foliage (3.91 ± 0.27 g/100 g dry leaf powder). GC/MS chromatographic investigation identified 9,12,15-octadecatrienoic acid as a significant compound followed by hexadecanoic acid. In Hibiscus spp. C18:3 (49.3 µmol % and 50.4 µmol %) was recorded to be the most noteworthy followed by C16:0 (23.2 µmol % and 21 µmol %) in H. cannabinus and H. sabdariffa, respectively. The GLVs foliage-fatty acid biodiesel attributes were additionally assessed through an empirical formula. Consequently, the overall examined results will be helpful for the investigation of these oils as vegetable oil for human consumption and biodiesel applications.

Freeze-drying is a process for drying foods without heat application. The physical, chemical and sensory properties of the food remain without significant changes. In this work, maltodextrin (MD), gum arabic (GA), and a blend of MD:GA (60:40) were used as encapsulating agents of Roselle (Hibiscus sabdariffa) calyces extracts. Lyophilized powders were obtained at different concentrations of encapsulating agent (0, 3, 5, and 10%, w/w). Powders were analyzed in yield and physicochemical (average size diameter (d50), moisture content, water activity (aw), bulk and compacted densities, and color), and antioxidants (anthocyanins content, total phenolic compounds, antioxidant capacity) characteristics. The yields of freeze-drying powders from different encapsulating agents ranged 82 to 95%. The average diameter (d50) was higher for powders without gum (139.5&plusmn;25.6 &mu;m) than for powders with encapsulating agents (35 to 89 &mu;m). The moisture content and aw of the powders were in the ranges 5.3-11.2% and 0.20-0.29, respectively. The value of the red (a*) color parameter of all powders was 37.0&plusmn;2.8, decreasing as increasing the gums concentration. Powders with 3% GA and MD showed the highest amount of anthocyanins: 560.93&plusmn;10.13 and 543.46&plusmn;15.68 mg/100 g of powder, respectively. The highest total phenolic compounds content was observed in the powder with the 3% MD:GA blend (4,705.70&plusmn;140.54 mg/100 g of powder). Powder with 3% MD showed the highest antioxidant capacity (1,766.30&plusmn;31.15 mg of Trolox equivalents/100 g powder).

Background: Tomatoes (Solanum lycopersicum L.) are widely consumed vegetables globally, and are well known for their nutrients and economic value. This research aimed to create a tomato powder with improved nutraceutical benefits based on its ingredients. Methods: Fresh tomatoes, ginger, and dried hibiscus calyx were obtained and dehydrated at 45°C for 10 hours, 8 hours, and 1 hour and 30 minutes respectively. Proximate, elemental, phytochemical, high-performance liquid chromatography (HPLC), and gas chromatography-mass spectrum (GCMS) analysis of the tomato powder mix were determined using standard methods.Results: The proximate analysis revealed constituents of carbohydrates, fats, proteins, ash, fiber, and moisture as 65, 5, 10, 1, 7, and 12 % respectively. The GCMS also revealed 36 classes of compounds with different retention times. The most prominent peak is oleic acid with an RT value of 20.9. The fiber content of the tomato powder mix was higher than what is obtainable in fresh tomatoes. Bioactive compounds like stigmasterol (5.25%), oleic acids (49.11%), n-hexadecenoic acid (26.58%), campesterol (2.72%), and octadecanoic acid (6.8%) are notably present with lycopene (135.745 mg/100 grams). Conclusion:The tomato powder mix is nutrient-packed and non-toxic. The bioactive components are known as antioxidant, anti-inflammatory, cardiovascular health enhancers, etc showing the possible use of the powder as a functional food.Keywords: Tomatoes powder, bioactive compounds, functional foods, dehydration

The current study was aimed to investigate the antibacterial and antibiofilm activity of ethanolic extract of Hibiscus sabdariffa L. calyx against locally isolated methicillin-resistant Staphylococcus aureus (MRSA) at different concentrations were started from 0.078 to 40 mg/ml. The extract was prepared by soaked calyces powder of Hibiscus sabdariffa L. with 80% ethanol in the Soxhlet extraction unit, and then it was aseptically filtered. The antibacterial activity was tested by agar diffusion method and broth microdilution method, this method was used to determine the minimum inhibitory concentration of extract, while the antibiofilm activity was determined by using 96-well polystyrene microtiter plates. The results revealed that the ethanolic extract has antibacterial activity in a concentration-dependent manner, the average diameter zone of inhibition observed against MRSA isolates ranged from 14±0.5 mm to 20±0.5 mm Moreover, at sub-inhibitory concentration, this extract developed an isolate-specific antibiofilm effect and presented highly significant (P< 0.05) variability in biofilm formation before and after addition of ethanolic extract, Mr1, and Mr7 isolates were gave the lowest and highest antibiofilm activity, respectively. In conclusion, the ethanolic extract of H. sabdariffa L. calyx is a promising alternative medication that can be used to treat the infection caused by MRS.

Roselle (Hibiscus sabdariffa L.) contains cyanidin-3-rutinoside, delphinidin, delphinidin-3-monoglucoside, cyanidin-3-monoglucoside, cyanidin-3-sambubioside, cyanidin-3,5-diglucoside may inhibit the growth of Extended-Spectrum-Beta-Lactamase (ESBL) Escherichia coli, but there is no research reported the determination of MIC of Roselle (Hibiscus sabdariffa L.) extract powder against ESBL E.coli ATCC 6110 and ATCC 5949 and their potency ratio compared to meropenem. This study aimed to determine the MIC of Roselle flower extract powder on the growth of ESBL E. coli ATCC 6110 and ATCC 5949 and determine the potency ratio compared to meropenem. This study used two methods in determining MIC, namely the agar diffusion method and the dilution method with Nutrient Agar media which was incubated at 37 ±1°C for 24 hours, while the determination of the potency ratio was carried out by diffusion method with the same media which was incubated at 37 ±1°C for 24 hours. The results obtained were diameter of inhibition zone (mm) which were then observed and analyzed to calculate the potency ratio. The results showed that the MIC of Roselle flower extract powder was obtained at a concentration of 12,500 ppm by diffusion method and at a concentration of 3,125 ppm by dilution method with 24 hours incubation at 37 ± 1o C and the potency ratio of Roselle flower extract powder compared to meropenem was 89.7% and 97.97% against ESBL E.coli ATCC 6110 and ESBL E.coli ATCC 5949 respectively.

Roselle (Hibiscus sabdariffa) has many health benefits and all parts of the roselle, including calyx, seeds, leaves, fruits and roots. Over the years, high demand for wholegrain products has been observed worldwide due to their high nutritional values and protective effects against several chronic diseases. Whole wheat bread is one of the most consumed whole-grain products. However, products of whole wheat flour had lower consumer acceptability than refined flour. The objective of this study was to investigate the effects of the addition of roselle powder (1, 2, or 3%) on the characteristics and composition of whole wheat dough and whole wheat bread. Bread quality is determined by sensory evaluation, bulk density, texture profile analysis (TPA), colour and moisture content, ash, protein, fat, crude fibre, and carbohydrates. The sensory analysis showed the 2% roselle powder was the best bread formulation with 6.65±1.00 of panel acceptance compared to the other formulations. By incorporating roselle powder, the height of the dough was similar to any commercial bread (10 cm) and could shorten the fermentation time from 60 to 45 mins. Sensory-wise, the bread colour was lighter and reddish, which was appealing with the values of 53.92±0.02 for ∆E*. The firmness of roselle bread was reduced from 4.60±o.42 to 2.55±0.46 with a decreasing amount of roselle powder from 3% to 1% but increased to 5.19±0.15 during 4 days of storage. Interestingly, roselle bread has the potential to reduce staling of bread during storage with a value of 6.29±0.35 in control bread to 5.19±0.15 in F2 roselle bread after certain days of storage.

Abstract Karkade calyces’ samples (variety Rahad) collected from different local sites were spray dried, and the powder samples were analyzed physically, chemically and microbiologically. The particle size of the various karkade powder samples ranged from 11.8 to 14.1 μm, while the flowability (angle of repose) ranged from 41° to 43° 20′. The reconstitution properties slightly varied when the various karkade samples were compared. The ranges of wettability, sinkability and dispersibility were 320–370 s, 800–850 s and 0.04–0.05 OD, respectively. The bulk density ranged from 0.57 to 0.65 g/ml, and the yield of karkade powder of the various samples ranged between 31.4 and 34.3%. The spray-dried samples from different sites were comparable in most of the chemical components, and they contained relatively good amount of macro- and micronutrients and high nutritive value. Virtually, all the spray-dried karkade powder samples were devoid of coliform, staphylococci and Salmonella cells.

The purpose of this research was to investigate the effect of addition rosella powder to characteristics sausage of catfish (Clarias gariepinus) and knowing the best formulation the acceptance of panelists on the antioxsidant activity. This research was used random block design (RBD). The treatment of addition rosella powders were 1%, 2%, 3%, 4%, and 5%. Parameters of this research were physic analysis such as elasticity, colour and pH. Chemical analysis such as water and ash. Sensoric analysis such as display, texture, colour, flavor and taste. The result showed that addition rosella powder gave significant effect on elasticity, lightness, redness, pH, water content and sensoric analysis such as display, texture, colour, flavor and taste, but they were no effect to ash and yellowness. The elasticity of this sausage interval 54.93-153.6 (gf), lightness was 38.66% - 61.96%, redness was 3.8% -7.6%, yellownes was 4.33 -13.43, pH was 4.21 – 6.75. Water content interval 62.03%. – 73.96%, ash was 2.57- 3.3 and display of analysis sensoric was 4.04-7.46, texture was 3.28 – 7.12, flavor was 3.96 – 8.04, colour was 2 – 7.36, and taste was 5.08 – 7.6. Based on the acceptance panelists the best formulation on treatment A2 with addition concentration rosella powder 1 % and antioxidant activity was 11.6 ppm.

The goal of this research was to evaluate the kinetics of thermal degradation of the hibiscus extracts powder at different temperatures and to characterize physicochemically the freeze-dried aqueous extract of the hibiscus flower (Hibiscus sabdariffa) with different concentrations of maltodextrin (0, 5, 10 and 15%). The analyzed parameters were: water content, total soluble solids, titratable acidity, pH, ash, solubility, hygroscopicity, bulk and tapped density, the flowability (Carr index) and cohesiveness (Hausner ratio), lightness (L*) and intensity of red (a*) and yellow (b*). The degradation kinetics was analyzed by the determination of bioactive compounds of flavonoids, anthocyanins and color appearance parameters (lightness, intensity of red and yellow, chroma and hue angle). The increase in maltodextrin concentration resulted in increases of solubility, soluble solids content, pH and color appearance parameters; as the parameters of bulk and tapped density, hygroscopicity, water content, ash and acidity presented decreases as the proportion of additive increased, showing good flowability and low to medium cohesion. Regarding the degradation kinetics, the maltodextrin was effective in the preservation of anthocyanins and flavonoids of the freeze-dried hibiscus flower up to the temperature of 50 °C. Roselle (Hibiscus sabdariffa L.) is a comestible plant known for its fleshy red calyces that are used in making a wide range of foods such as wine, juice, jam, syrup, pudding, cakes, ice cream, and herbal tea. The anti- bacterial, diuretic, antioxidant, and anti-mutagenic effects of the roselle calyces are also well known. It is high in vitamins, minerals and bioactive substances such as organic acids, phytosterols, and polyphenols, and because of its extensive phar-macological potential, it has long been used as folk medicine to treat common cold. Gas chromatography-mass spectroscopy (GC-MS) is the best technique to identify the compounds present in the sample by mass spectra data obtained from purely available standards injected under the same conditions. In this study, the GC-MS technique was used to validate the pharmacological potential of Hibiscus sabdariffa by identifying the chemicals found in its calyces. The maximum cyanidin-3-glucoside was found to be the highest in PKM (Periyakulam) HS 04 1784.65 mg/100 g in cyanidin-3-glucoside equivalents, total flavonoid content (28.01 mg QE/g), and DPPH (2-diphenyl-1-picrylhydrazyl) activity % (93.17), and in PKM HS 02 total phenolic content (1.29 GA mg/g). The extract was prepared by soaking a dry calyx powder sample in methanol overnight and the ethanolic extract was then analyzed using GC-MS. Flavonoids, tannins, phenols, saponins, alkaloids, glycosides, terpenoids, and steroids were found in the ethanolic extract of Hibiscus sabdariffa calyces. The existence of 26 bioactive chemicals was discovered by GC-MS analysis, including phthalic acid, astaxanthin, lutein, lycoxanthin, 3-Pyridinecarboxylic acid, rhodoxanthin, molybdenum, and hexadecenoic acid. The presence of some of these bioactive chemicals has been used to support scientific evidence for the plant’s anti-aging, anti-oxidant, anti-hypertensive, and anti-inflammatory capabilities, which constitute valuable preliminary information in pharma industries.

Tempeh is a traditional food product made from soybeans through a fermentation process by tempeh mold (Rhizopus sp.). This food product besides having high nutritional value also contains antioxidant compounds which are very good for consumption but with a relatively low IC50 value. This study used rosella flower calyx (Hibiscus sabdariffa L.) which are believed to have a high enough antioxidant content so they are effective in increasing the antioxidant content in tempeh. Furthermore, the addition of rosella calyx powder will give tempeh an attractive taste, aroma, and color. The objective of this research was to determine the effect of rosella calyx powder addition on tempeh making with various concentrations, i.e. 0% (P0), 0.5% (P2), 1% (P3), 1.5% (P4), and 2% (P5). The antioxidant activity using the DPPH method, the organoleptic properties based on the preference level (hedonic) using a questionnaire, and the water content of tempeh based on the principle of gravimetry method were also tested. The result showed that the IC50 value of 2% concentration of rosella calyx powder addition (P5) was 1596.9 ppm. IC50 of the P5 treatment was the highest antioxidant activity power category compared the other treatment, even though it was still relatively low in antioxidant activity. Then on the organoleptic test, the results showed that the addition of rosella flower calyx powder was able to affect the taste, color, and aroma of tempeh and has no effect on the water content of tempeh. Microencapsulation by spray drying is one of the most common methods used to obtain food material powders. In this study, different gums (maltodextrin [MD], gum arabic [GA], and mixtures of MD:GA [60:40] at various concentrations [0–10% w/w]) were used to microencapsulate Hibiscus sabdariffa (Roselle) extracts by spray drying. The yield, physicochemical properties, and antioxidant characteristics (total monomeric anthocyanins [TMAs], total phenolic compounds [TPCs], and antioxidant capacity [AC]) of the microencapsulated Roselle powders (RP) were evaluated. The highest RP yield (73.3 ± 3.3%) was obtained with the 3% MD:GA blend. The red color (a*) average for all powders (39.9 ± 2.0) decreased as the gum concentration increased. The 3% MD:GA RP showed the highest amount of TMAs (539.19 ± 13.27 mg cyaniding-3-glucoside equivalents/100 g) and TPCs (3,801.6 ± 125.9 mg of gallic acid equivalents/100 g of powder). The highest AC was observed with a 5% GA RP (1498.5 ± 44.0 mg of Trolox equivalents/100 g of powder).

The effects of Hibiscus sabdariffa (roselle; Hs) by-product (2–5%) and Pleurotus djamor (pink oyster; Pd) powder (5–7.5%) as meat replacers on the physicochemical and sensorial properties of beef patties were analyzed. The addition of these non-meat ingredients significantly decreased moisture and increased fiber content, and did not affect the protein level of the product. The antioxidant effect of the roselle by-product was limited, while Pleurotus djamor favored the oxidation processes. The samples supplemented with roselle by-product and mushroom powder presented significantly lower microbial counts (total viable counts, enterobacteria, and Pseudomonas) than control, but texture and sensorial parameters were significantly affected. The patties darkened due to the presence of the Hibiscus by-product, while the color of the samples containing 5% Pleurotus djamor was hardly modified. These samples, together with the control samples, were the most sensorially appreciated. The addition of these ingredients provoked a decrease in texture parameters, being less pronounced in the samples with only 2% of roselle by-product. In spite of the good antimicrobial and antioxidant properties of Hibiscus by-products, its inclusion in meat should be moderate (2–2.5%) to avoid consumer rejection when Pleurotus djamor is also included in the formulation.

Hibiscus sabdariffa is a tropical plant with red calyxes whose anthocyanins, phenols, and antioxidant activity make it attractive to consumers both from a nutritional and medicinal standpoint. Its seasonality, perishability, and anthocyanin instability, led to the setup of stabilization methods comprising drying and powdering. However, its properties can often be altered during these stabilization processes. Treatments such as dehumidified-air-drying, infrared drying, and oven-drying, and their combination showed better quality preservation. Moreover, powder production enables superior biomolecule extractability which can be linked to a higher bioaccessibility. However, the required temperatures for powder production increase the bioactive molecules degradation leading to their antioxidant activity loss. To overcome this issue, ambient or cryogenic grinding could be an excellent method to improve the biomolecule bioavailability and accessibility if the processing steps are well mastered. To be sure to benefit from the final nutritional quality of the powder, such as the antioxidant activity of biomolecules, powders have to offer excellent reconstitutability which is linked to powder physicochemical properties and the reconstitution media. Typically, the finest powder granulometry and using an agitated low-temperature reconstitution media allow for improving anthocyanin extractability and stability. In this review, the relevant physicochemical and processing parameters influencing plant powder features from processing transformation to reconstitution will be presented with a focus on bioactive molecules and antioxidant activity preservation.

Foods and drinks are essential for a healthy and active life. Sugar-sweetened carbonated drinks have grown in popularity and cost, though they have been linked with several cardiovascular diseases and dental problems, hence the need for non-sugar-sweetened drinks. This study was carried out to develop a Beetroot-enriched Hibiscus sabdariffa (Zobo) drink and evaluate its nutrient content and consumer′s acceptability. Dry Hibiscus sabdariffa calyces and beetroot were purchased at Bodija Market, Ibadan, Nigeria. The beetroot (fresh) was blended, and the dry calyces were ground into powder. A 100 g of ground calyces was extracted with 1.5 L distilled water, boiled at 100 ⁰C for 15 minutes, cooled and sieved (plain Zobo drink). The remaining ground calyces were mixed with ground beetroot in the ratio 90:10, 80:20, 70:30 and 60:40 w/w Calyx: Beetroot, respectively. Each portion was extracted with 1.5 L of distilled water and boiled at 100 0C for 15 minutes, sieved and allowed to settle. The five drinks were analysed for nutrient and phytochemical contents using standard methods of AOAC. Consumer acceptability of the drinks was done on a 9-point hedonic scale using 30 semi-trained panellists. Data was analysed using ANOVA and Duncan multiple range test at p<0.05. Plain and enriched Zobo drinks contained 1.13-2.73 g protein, 0.21-0.40 g fibre, 6.307-8.52 g carbohydrate, 14.00-65.33 mg sodium, 47.70-91.00 mg calcium, 21.701-159.33 mg potassium, 61.33-97.70 mg magnesium, 110.33-160.00 mg phosphorus, 1.10-1.50 mg iron, 0.10 mg 212.80-25.70 µg β-carotene, and 32.10-40.10 mg vitamin E/100 ml of the drink. The addition of beetroot enhanced the total antioxidants, flavonoids, betaine, and polyphenol contents of the drinks. Hibiscus sabdariffa drink with 20% beetroot inclusion had the highest overall acceptability in most of the sensory parameters, while the plain Zobo drink was preferred in terms of odour. Beetroot-enriched Zobo drink is micronutrient-dense, well accepted, and compared well with plain Zobo drink. Beetroot-enriched Zobo drink contributes to the nutrient content of the drink; hence, its use in local refreshing drinks can improve the micronutrient intake of such drinks, thereby promoting the good health of consumers.

Hibiscus sabdariffa L. has been widely cultivated in tropical areas, usually used in treatment of many disorders. Thus, in our study we aimed to evaluate the effect of dairy desserts supplemented with nanoform of Hibiscus sabdariffa L. extract (NHSE) against Ehrlich solid carcinoma (ESC) in mice. The NHSE was prepared by soaked the fine powder of plant in 90% ethanol by cold extraction. NHSE was evaluated using dynamic light scattering (DLS) and transmission electron microscope (TEM), then the prepared NHSE was added to dairy desserts using different concentrations. Sixty female albino mice were used and divided into six groups. After the end of the experimental period, blood was withdrawn; Serum was separated for determination of malondialdehyde (MDA), super oxidedismutase (SOD), catalase (CAT), tumor necrosis factor- α (TNF-α), matrix metalloproteinases-9 (MMP-9) and B-cell lymphoma-2 (Bcl-2). Serum homocystein (Hcy) level was estimated by high performance liquid chromatography (HPLC). Mice inoculated intramuscularly with Ehrlich cell line showed statistically marked increase in serum levels of MDA, TNF-α, MMP-9 and Hcy accompanied by marked decrease in SOD and CAT activities and Bcl-2 levels compared to the control group. Treatments with NHSE markedly trigger activity of anti-oxidant, attenuated the inflammatory response, reduced levels of Hcy and stimulated the apoptosis of tumor cells. Based on that, dairy desserts containing NHSE showed effective role in prohibiting the releasing of reactive oxygen species, ameliorating the immune response, and preventing tumor progression.

Cookies are a type of pastry that is consumed by many people from all of aged. Cookies can be consumed as a practical and healthy alternative food. This research aims to formulate cookies combined from wheat flour and tempeh flour with addition of roselle. The use of tempeh flour in making cookies can increase protein levels because the protein content of tempeh flour is higher than in wheat flour. In addition, the important ingredients contained in the roselle petals are anthocyanin pigments that form flavonoids that act as antioxidants. The results of this study obtained 37.00% yield of tempeh flour and moisture content of 7.36%, ash content of 2.6%, protein content of 45.59%, fat content of 24.04 % and carbohydrate content of 0.134%. Roselle produced has yield of 80.5% and has a moisture content of 7.44 %, ash content of 6.28%, protein content of 6.29%, fat content of 1% and carbohydrate levels of 78.36%. Based on the result of hedonic test, formulas F1 was selected as the best formula. Products of tempeh flour cookies and roselle powder have a yield of 72 - 85.09%. Herbal tea is a general term used for beverages that are not derived from the tea plant (Camelia sinensis). Processing of red rosella flowers into red rosella flower tea powder is an attempt to utilize the compounds present in red rosella flowers that are able to give character to the resulting tea product and make it easier to serve. Red Rosella flowers have a high antioxidant content, in addition, the benefits of red Rosella flowers include lowering blood sugar levels, lowering cholesterol, lowering uric acid, preventing hypertension, preventing stroke, preventing cancer, tumors and so on. This study aims to determine the effect of drying treatment using an oven on the chemical and organoleptic characteristics of red Rosella tea powder using the oven drying method. This study used a completely randomized design (CRD) with one factor, namely the length of drying time (1 hour, 2 hours, and 3 hours) and compared with the control with 3 replications, in order to obtain 12 experimental units. Observation parameters include chemical properties (moisture content, ash content, antioxidant activity) and organoleptic properties (color, taste and flavor). The color and taste parameters had a significant effect, while the flavor parameter had no significant effect. The best treatment for Rosella flower tea was in the 2-hour drying treatment with a moisture content of 7.38% and an ash content of 5.27% in accordance with SNI 3836:2013 of packaged dry tea, as well as the organoleptic test with the highest value in the color test. Instant rosella anti-obesity drink is a beverage product in powder form, easily soluble in water, has a short rehydration time, practical in serving. This study aims to obtain an instant rosella anti-obesity drink formulation consisting of roselle extract, mangosteen peel extract, lemon extract and EGCG. This research was optimized using the Response Surface Methodology (RSM) method with a central composite design. Analysis of the formulation includes analysis of anthocyanin levels, levels of vitamin C in each formulation treatment. Based on the results of optimization of the anthocyanin and vitamin C content of instant anti-obesity drinks using the RSM method, formula 10 was obtained containing 4.75 g roselle, 0.2 g lemon extract, 0.5 g mangosteen peel extract and 0.0625 EGCG. This formula obtained anthocyanin levels of 895.72 mg/L and vitamin C levels of 53.3 mg/L with a powder drink pH of 2.5

The current practice condition of fish processing will generate some amounts of byproducts such as skin waste. These fish processing by-products can be considered as an alternative raw material for the preparation of high protein ingredients such as gelatin. Gelatin extraction from the skin of yellowfin tuna (Thunnus albacares) was conducted by the acid process. Afterwards, the fish gelatin was mixed with cinnamon (GECP) and roselle powder (GERP) to enhance the physicochemical and functional properties of gelatin. The effects of the addition of cinnamon (GECP) and roselle powder (GERP) on the physicochemical and the functional properties such as tensile strength, hardness, viscosity, water holding capacity, oil holding capacity, total flavonoid, total phenolic, total antioxidant and flavor compounds of enriched gelatin (GECP and GERP) from tuna skin were evaluated and compared with control (without the addition of cinnamon and roselle powder). The gelatin exhibited excellent tensile strength, WHC, OHC, total flavonoid, total phenolic, and antioxidant in the presence of cinnamon and roselle powder rather than control (without addition) (p<0.05). The flavor analysis by using GC-MS showed more cinnamaldehyde as one important flavor compounds in GECP and where cyclohexanones can be identified as one important flavor compound in GERP. Thus, this study confirmed the improvement of physicochemical properties of gelatin enriched with cinnamon and roselle powder.

Fish skin gelatin can be developed as a raw material for developing biodegradable packaging such as edible film. The present study was to investigate the feasibility of the combination of fish gelatin and addition of roselle powder (GFRP), cinnamon powder (GFCP) and cinnamon essential oil (GFCEO) in producing edible film and to determine protective effect to food product e.g. bread on the physicochemical properties of the active packaging edible films. All the films were analyzed for their physicochemical properties and its observation as the active packaging for bread. It was observed that the addition of roselle powder, cinnamon powder and cinnamon essential oil gave a better result in edible film properties than control (without addition). Principal Component Analysis (PCA) revealed the distinction among the physicochemical characteristic of GFRP, GFCP and GFCEO. This study also mapped the several physicochemical characteristics of different edible film as packaging treatment.

<p>The effect of average particle size (APS), type of solvent, and extraction times (ET) on the physicochemical (moisture, pH, total soluble solids (TSS), titratable acidity, color, water activity (<em>a<sub>w</sub></em>), density), and phytochemical (total anthocyanins and phenols content)propertiesin <em>Hibiscus sabdariffa</em> (Roselle) calyces was analyzed. The phytochemical properties evaluation was performed using a factorial design 2×3×3: two APS (median diameters, d<sub>50</sub>, of 0.55 ± 0.016 (fine powder) and 0.97 ± 0.034 (ground powder) mm), three solvents (water, 2% citric acid, and 50% ethanol) and three ET (30, 45, and 60 min). All extractions were performed at 50 °C. The APS was determined by sieve analysis using Tyler sieves of different number of mesh. Regarding physicochemical properties, no significant differences (p &gt; 0.05) were observed in moisture content, pH, and titratable acidity; however, the 0.55 mm fine powder (FP) of <em>Hibiscus</em> calyces had lower <em>a<sub>w</sub></em>(0.37±0.01) and higher TSS (5.53±0.05%) than the 0.97 mm ground powder (GP). The extracts obtained fromGP showed a deeper red color than those of FP. The best combination of independent variables, in order to obtain the highest concentration of anthocyanins (451.4±28.1 mg/100 g d.s.) and total phenols (2016.2 ± 159.8 mg/100 g d.s.) were APS of 0.55 mm, 50% ethanol, and ETof 30 min.</p>

Single-bulb garlic (Allium sativum L.) is a plant with various properties, such as anticancer, antibacterial, antihypertensive, and antioxidant. The processed product of garlic is black garlic which is made by fermenting garlic by heating at a temperature of 60-90°C within a few days. Formulated products in instant powder drinks can increase public consumption interest. This study aimed to formulate an instant powder functional beverage from single-bulb black garlic combined with rosella flower (Hibiscus sabdariffa L.) using the foam mat drying method. Egg white is used as a foaming agent and methylcellulose as a foam stabilizer. The formula consisted of single-bulb black garlic powder, rosella flower powder, powder combination of single-bulb black garlic, and rosella flower (30:70) and (50:50). The color, smell, taste, and water content of the four formulas have met the quality standard of SNI 01-4320-1996. DPPH free radical scavenging test with parameter IC50 showed that the combination powder of single-bulb black garlic and rosella flower (30:70) had higher antioxidant activity than the other combination (50:50). The consumer acceptance test on the combined instant powder formula showed that consumers preferred the combination powder of single-bulb black garlic and rosella flower (30:70).

The interest in natural sources with high antioxidant powder has recently increased in several sectors. Ionic gelation methods could be used to protect bioactive substances to control the kinetics and release of these ingredients to the food matrix. This study dealt with the evaluation of the antioxidant capacity and scavenging activity of extracts of Hibiscus Sabdariffa L. (HSL) (with 50% ethanol) encapsulated in calcium alginate spheres as a new source for preserving food against oxidative damage. Their antioxidant activity was measured in different o/w emulsions in which HSL spheres reduced the formation of hydroperoxides (~80%) and thiobarbituric-acid-reactive substance products (~20%). The scavenging activity of HSL extracts was measured in different food simulants (water, water acidified with 3% acetic acid, ethanol at 50%, and pure ethanol), and corresponded to 0.20–0.43, 0.31–0.62, and 11.13–23.82 mmol Trolox/mL extract for Trolox equivalent antioxidant capacity (TEAC), 2,2-diphenylpicrylhydrazyl (DPPH), and oxygen radical absorbance capacity (ORAC) assays, respectively. In general, the best antiradical activity was observed in the ethanolic and acidified mediums, in which the highest concentration of released polyphenols ranged from 0.068 to 0.079 mg GAE/mL. This work indicates the potential of alginate spheres for encapsulating antioxidant compounds as an innovative strategy for several industrial applications.

The study included 300 unsexed broiler chicks (Hubbard) were used to evaluate (Roselle Flower) as a feed additives on the productive performance of broiler. The chicks were divided into five groups with three replicates (20 birds in each) and fed on five diets. Diet 1 (control group) dried Roselle flower powder were supplemented to the diet 2, 3, 4 and 5 as 0.25, 0.5, 0.75 and 1% respectively. The result revealed that a significant (P<0.05) increase in body weight, body weight gain, feed consumption and improvement in feed conversion ratio. Although the differences between groups for edible parts percent were not significant (Heart, Liver and Gizzard). The hematological values PCV%, RBC, WBC and H/L ratio were increased significantly (P<0.05) and cholesterol values decreased significantly as compared with control group. It can conclude that Roselle as other herbal plants may be considered as a feed additive in broiler diet would improve the productive performance, hematological and biochemical values of broiler. Diet Roselle flower supplementation of (1g/kg) might be acceptable for achieving optimum broilers performance.

This study was aimed to determine the viability rate of rosella seed, to obtain the best result of seed testing for enhancing rosella seed viability, to find the best seed invigoration method for enhancing rosella seed viability, to obtain staining pattern through tetrazolium test of rosella seed, and to determine viability and vigor of rosella seed to be further used as estimation indicator for rosella plant growth in the field. The study was conducted in the Seed Laboratory, Indonesian Sweetener and Fiber Crops Research Institute (ISFCRI), Malang, East Java during July - August 2018. The material used included accessions of rosella seed (Hibiscus sabdariffa L.) ACC. 1148 from the year 2015 and collection of ISFCRI, 100 ml of Tetrazolium solution (40 ml KH2PO4, 60 ml Na2HPO4 and 1 gr of Tetrazolium powder). This research applied Completely Randomized Design (CRD) consisted of seed treatments of control (no immersion/0 hour), immersion for 5 hours, immersion for 10 hours, and scarification, each with 4 replications. Result of this study showed that the use of tetrazolium salt was found to be better in enhancing the viability of rosella seeds. Viable seeds was found to have bright red embryonic axis and bright red cotyledon. Testing using paper media on several seed invigoration treatments resulted in significantly different effect on parameters of vigor index, germination capacity, and dry weight of normal seedling. The best parameter of germination capacity and dry weight of normal seedling was obtained by treatment immersed in water at temperature of 27°C for 10 hours

Iron deficiency anemia has been a public health issue in children under five years of age in Cameroon. Very limited attempts have been carried out to develop an iron-rich food using local ingredients. The study aimed at developing functional porridges from local ingredients for iron-deficient children aged 6–23 months. Leaves of Moringa oleifera, Hibiscus sabdariffa, and Solanum aethiopicum were harvested as sources of iron, dried, ground into powder, and screened for their water and iron contents. Each vegetable powder was mixed with the other ingredients (dry whole milk, brown sugar, yellow maize flour, and refined soybean oil) to obtain three powdered porridges using linear programming (LP). Protein, lipid, carbohydrate, iron, energy, water, ash, crude fiber, and vitamin C contents, expressed in dry weight, were determined on powdered porridges. Powdered porridges were cooked in boiled water (ratio 2 : 7%w/w) for 5 min. Hedonic tests were conducted using cooked porridges with 50 untrained panelists. Leaf powders contained iron varying between 5.39 and 5.98 mg/100 g. LP models of the three porridges satisfied the nutritional requirements of children aged 6–23 months in terms of iron, lipid, protein, carbohydrate, and caloric daily intake. Protein, lipid, carbohydrate, iron, energy, water, ash, crude fiber, and vitamin C contents were, respectively, between 11.37 and 13.83 g/100g, 30.79 and 32.94 g/100g, 45.97 to 46.81 g/100g, 5.14 and 6.15 mg/100g, 509.93 and 517.48 kcal/100g, 6.42 to 7.62 g/100g, 2.20 and 2.88 g/100g, 1.65 and 2.44 g/100g, and 46.49 and 163.38 mg/100g. The cost of powdered porridges varied between 0.40 and 0.49 USD/100g. The sensory analysis showed that the moringa leaf-based porridge (82%) was the most appreciated followed by eggplant leaf-based porridge (80%) and folere leaf-based porridge (70%). Hence, these results showed that moringa, folere, and eggplant leaves can be used in functional foods to alleviate iron deficiency among children aged 6–23 months.

Jamu is well known as traditional herbal medicine that has been used by Indonesian for centuries ago. Local people usually consume jamu for maintaining health and therapy diseases because it is cheaper and has less side effects. Scientific approach needs to be done to study the characteristic of the herbals. This research aims to characterize Indonesian herbal medicine based on microstructure using Scanning Electron Microscope (SEM). The samples for this research are rosela flower (Hibiscus sabdariffa), ginger (Zingiber officinale), lime fruit (Citrus aurantifolia), and celebes pepper (Piper crocatum). The infusion method preparation was carried out. The mixture was processed further by a freeze-drying method to obtain a powder form. SEM was utilized to capture the herbal powder image. Size of distribution and surface roughness were analysed by ImageJ and Origin Pro 8 on SEM images. The size measurement result showed that infused Rosella has the biggest grain (53.5 µm), followed by lime (43.8 µm), ginger (41.2 µm) and celebes pepper (38.4 µm). The surface roughness results showed that the roughest samples of all is ginger (Ra = 64.417), followed by lime (Ra = 58.761), celebes pepper (Ra = 43.589), and rosella (Ra = 30.855). In conclusion, based on its size measurement result, celebes pepper is the most soluble and has the highest bioavailability, followed by ginger, lime, and rosella. According to its surface roughness, celebes pepper also showed the most soluble compared to other samples, followed by lime, ginger and rosella.

The main ingredients of roselle (Hibiscus sabdariffa L.) which have antioxidant and antibacterial effect were anthocyanins, and flavonoids. Flavonoid compounds were unstable at high temperatures. Meanwhile, the processing of roselle extract powder into ready-to drink or food preparations generally requires the thermal processes. The aims of this study were to determine the effect of temperature and heating time of roselle extract powder solution on the inhibition of microbial growth of Staphylococcus aureus ATCC 25923. The method of this study uses a ready-to- process roselle powder extract sample. The roselle extract powder solution in a screw cap tube was heated at a temperature of 40°C, 50°C, 60°C, 70°C, 80°C, and 90°C on a waterbath, with heating times at each temperature were 15 minutes and 30 minutes. Anti bacterial activity of the sample solution was measured based on the ability to inhibit the growth of Staphylococcus aureus ATCC 25923 by the agar-well diffusion method. The inhibition zone of the sample was measured by caliper. The result of this study showed that inhibition zones caused by the sample that had been heated at those temperature for 15 minutes were 9.55±0.70 mm, 9.53 ±0.04 mm, 9.70±0.14 mm, 9.68±0.24 mm, 10.10±0.14 mm, and 10.25±0.21 mm. Meanwhile, after heating for 30 minutes the inhibition zones were 10.08±0.25 mm, 10.20±0.28 mm, 10.43±0.18 mm, 10.08±0.18 mm, 10.78±0.04 mm, 9.70±0.14 mm. Two ways statistical test ANOVA Randomized Control Block Design with 95% confidence level was used to prove that there was a significant difference berween the mean inhibition zones of each sample. The conclution of this research was, the temperature in the range of 40 -90 oC has no effect on the anti-bacterial activity of the sample. However, the heating time of the sample affected the antibacterial activity of the roselle extract powder solution against Staphylococcus aureus ATCC 25923.
