Resumo: O presente estudo teve por objetivo avaliar a industrialização de cultivares da persicultura paulista na forma de fruta passa empregando-se processo combinado de pré-secagem osmótica (PSO) e secagem convencional com ar quente (SC). Avaliou-se a aptidão das cultivares Douradão, Régis, Aurora-1 e Diamante na PSO com xarope de sacarose (65 °Brix, 45 °C, 6 h), seguida de SC (65 °C, 1,5 m/s). As cultivares Regis e Aurora-1 apresentaram melhores desempenhos globais (facilidade no preparo, bom rendimento de processo e boa aceitação sensorial). Empregando-se o delineamento central composto rotacional, investigou-se a influência da temperatura (30 / 50 ºC) e da concentração do xarope (45 / 65 °Brix) na PSO da cultivar Aurora-1 (fatias e metades). Pesquisaram-se as variações físicas e químicas das frutas, os parâmetros perda de massa (PM) e perda de água (PA), e o desempenho sensorial dos produtos. Modelaram-se os resultados usando a metodologia de Superfície de Resposta, obtendo-se os seguintes modelos matemáticos significativos (p<0,05) e preditivos: teores de sólidos solúveis, teores de açúcares totais e não redutores, acidez titulável, L* de cor e PA para as fatias; e dos teores de sólidos solúveis, L* de cor, PA e PM para as metades. Os maiores valores de PA e melhores desempenhos sensoriais foram obtidos nas seguintes faixas: 50 a 54,1 °C e 45 a 65 °Brix para as fatias e 50 a 54,1 °C e 55 a 65 °Brix para as metades. Avaliaram-se, em seguida, dois métodos de recondicionamento (RC) do xarope na PSO de fatias de pêssego: (1) por peneiramento, concentração a vácuo e reposição de xarope; (2) idem, acrescentando-se a operação de filtração. Os ensaios consistiram de 15 ciclos de PSO (50 °C, 65 °Brix, relação xarope: fruta de 4:1) com RC e reuso (RU), seguidos de secagem complementar (SC) (65 °C; 5 h). Análises físicas, químicas e microbiológicas foram realizadas nos xaropes, na matéria-prima e na fruta seca. Determinaram-se os parâmetros PA e incorporação de sólidos (IS), e avaliaram-se sensorialmente os produtos. As cargas microbianas permaneceram baixas. Não houve influência do RC/RU nos parâmetros PA e IS, nem no sabor e na textura sensorial. O RC/RU favoreceu a manutenção da cor amarela do produto. Os métodos apresentaram desempenhos semelhantes. Na seqüência, avaliou-se o desempenho sensorial de compotas de pêssego preparadas com os xaropes da etapa anterior, após 15 ciclos de PSO com RC/RU. Foram três formulações de calda preparadas com: (A) xarope do método (1); (B) xarope do método (2); (C) xarope novo. Não houve diferença significativa (p<0,05) entre os tratamentos quanto à turbidez da calda e à cor da fruta. Quanto ao sabor, os tratamentos A e C resultaram significativamente (p<0,05) superiores ao B. Avaliou-se, finalmente, a viabilidade econômica de uma unidade produtora de pêssego e abacaxi passa (1300 kg de fruta / dia) pelo processo combinado PSO/SC empregando-se o RC/RU do xarope (método 1) por 15 ciclos. Determinaram-se investimentos iniciais, capital de giro, custos e receitas totais. A lucratividade foi avaliada, empregando-se análise de fluxo de caixa, desconsiderando-se capitais de terceiros. A taxa interna de retorno (TIR) foi de 34%, e o valor presente líquido (VPL) obtido indica duplicação do capital em 20 anos. Os resultados apontam para a viabilidade econômica do projeto
Abstract: The objective of the present study was to evaluate the industrialization of peach cultivars from the State of São Paulo, Brazil, in the semi-dried form, using a combined process involving osmotic pre-drying (OPD) and conventional hot air drying (CD). The aptness of the cultivars Douradão, Régis, Aurora-1 and Diamante was evaluated, using OPD with sucrose syrup (65 °Brix, 45 °C, 6 h) followed by CD (65 °C, 1.5 m/s). The cultivars Regis and Aurora-1 showed the best overall performances (ease of preparation, good process yield and good sensory acceptance). A central compound rotary design was used to investigate the influence of temperature (30 / 50 °C) and sucrose concentration (45 / 65 ºBrix) in the OPD of the Aurora-1 cultivar (slices and halves). The physical and chemical variation of the fruits, the mass loss (ML) and water loss (WL) parameters, and the sensory performance of the products were investigated. The results were modeled using response surface methodology, obtaining the following significant (p<0.05) and predictive mathematical models: for the slices - soluble solids contents, total and non-reducing sugar contents, titratable acidity, L* of color and WL; and for the halves - soluble solids contents, L* of color, WL and ML. The highest values for WL and the best sensory performances were obtained in the following ranges: for the slices - 50 to 54.1 °C and 45 to 65 °Brix; and for the halves - 50 to 54.1 °C and 55 to 65 °Brix. Two reconditioning (RC) methods for the syrup used in the OPD of the peach slices were also evaluated: (1) by sieving, vacuum concentration and replacement of the syrup; (2) idem plus a filtration operation. The trials consisted of 15 OPD cycles (50 °C, 65 °Brix, syrup: fruit ratio of 4: 1) with RC and reuse (RU), followed by complementary drying (CD) (65 °C; 5 h). Physical, chemical and microbiological analyses were carried out on the syrups, raw material and dried fruit. The parameters WL and solids incorporation (SI) were determined and a sensory evaluation of the products was carried out. The microbial loads remained low and RC/RU had no influence on the parameters of WL and SI, nor on the sensory flavor or texture. RC/RU favored maintenance of the yellow color of the product and the methods showed similar performances. In sequence, the sensory performance of peach preserves prepared with the syrups from the previous step after 15 cycles of OPD with RC/RU was evaluated. Three syrup formulations were used for the preserves: (A) syrup from method (1); (B) syrup from method (2); and (C) freshly prepared syrup. There were no significant (p<0.05) differences between the treatments with respect to cloudiness of the syrup and fruit color, but with respect to flavor, treatments A and C were significantly (p<0.05) superior to B. Finally, the economic feasibility of a dried peach and pineapple producing unit (1300 kg fruit / day) using the combined OPD/CD process with syrup RC/RU (method 1) for 15 cycles, was evaluated. The initial investment, turnover capital, costs and total income were determined. Profitability was evaluated by analyzing the cash flow and ignoring third party capital. The return of investment (ROI) was 34% and the net present value (NPV) obtained indicated duplication of the capital in 20 years. These results indicated the economic feasibility of the project

Повний текст джерелаThe idea of uniting acerola pulp, tropical product, whey by-product of the dairy industry, led to this experiment to develop a new product with different properties, rich in ascorbic acid, proteins and minerals out. Thus, this study aimed to obtain drink made in containing acerola pulp powder and whey through drying spray-dryer. First, we evaluated the influence of process conditions (temperature:. 115-186 Â C and air flow rate from 3.57 to 4.43 m3 / min) on the hygroscopicity, degree of caking, moisture, color (L *, a *, b *) solubility, ascorbic acid and total protein powders using an experimental design type central composite (CCRD). The established from the best drying conditions (. 175 Â C and 3.7 m3 / min), an outline Simplex centroid mixtures for obtaining the best formulation of the powder mix was made containing three components: acerola pulp, whey, maltodextrin. Powders produced were analyzed the following parameters: acidity, pH, soluble solids, humidity, water activity, ascorbic acid, reducing and total sugars, lipids, protein, ash, color parameters (L *, a *, b *) , solubility, hygroscopicity, caking grade and carotenoids. The products produced by the spraying process proved to be of high quality and physical condition and satisfactory physico-chemical, the best formulation was the sample with 50: 25: 25% (m / m) of acerola pulp, whey and maltodextrin, respectively. Next, we assessed the stability of these powders during 75 days of storage laminated packaging and vacuum sealed. It was concluded that the storage kept drinking with good physical and physical-chemical characteristics, as well as ascorbic acid source (1 146.13 mg / 100g) and proteins (0.49% m / m).
A ideia de unir polpa de acerola, produto tropical, com soro lÃcteo subproduto da indÃstria de laticÃnios, conduziu a este experimento a desenvolver um novo produto com propriedades diferenciadas, rico em Ãcido ascÃrbico, proteÃnas e sai minerais. Neste sentido, este trabalho teve como objetivo a obtenÃÃo de bebida composta em pà contendo polpa de acerola e soro lÃcteo por meio da secagem em spray-dryer. Primeiramente, avaliou-se a influÃncia das condiÃÃes de processo (temperaturas: 115 a 186 ÂC e vazÃo de ar de 3,57 a 4,43 m3 / min.) sobre a higroscopicidade, grau de caking, umidade, cor (L*, a*, b*) solubilidade, Ãcido ascÃrbico e proteÃnas totais dos pÃs atravÃs de um planejamento experimental do tipo composto central rotacional (DCCR). A partir das melhores condiÃÃes de secagem estabelecida (175 ÂC e 3,7 m3 / min.), foi feito um delineamento de misturas Simplex Centroide para obtenÃÃo da melhor formulaÃÃo da mistura em pà contendo trÃs componentes: polpa de acerola, soro de leite e maltodextrina. Os pÃs produzidos foram analisados nos seguintes parÃmetros: acidez titulÃvel, pH, sÃlidos solÃveis, umidade, atividade de Ãgua, Ãcido ascÃrbico, aÃÃcares redutores e totais, lipÃdeos, proteÃnas, cinzas, parÃmetros de cor (L*, a*, b*), solubilidade, higroscopicidade, grau de caking e carotenoides. Os produtos produzidos pelo processo de aspersÃo mostraram-se com qualidade e condiÃÃes fÃsicas e fÃsico-quÃmicos satisfatÃrias, a melhor formulaÃÃo foi da amostra com 50:25:25% (m/m) de polpa de acerola, soro lÃcteo e maltodextrina, respectivamente. Em seguida, avaliou-se a estabilidade destes pÃs, durante 75 dias de armazenamento em embalagem laminada e selada a vÃcuo. Concluiu-se que o armazenamento manteve a bebida com boas caracterÃsticas fÃsicas e fÃsico-quÃmicas, alÃm de fonte de Ãcido ascÃrbico (1 146,13 mg / 100g) e proteÃnas (0,49% m/m).

It justified the choice of raw material for candied fruit; studied forms of communication moisture from plant material; scientifically appropriateness of osmotic dehydration process for the kiwi; The choice of an effective osmotic active substances (invert sugar), which allowed the use of select optimal parameters of osmotic dehydration (duration, hydrological, temperature). The results made it possible to use process (osmotic dehydration) to remove moisture from the raw materials in the production technology of candied fruits.

Повний текст джерелаO Brasil é um dos maiores produtores de frutas do mundo, o que implica na geração de uma grande quantidade de resíduos agroindustriais cujo potencial ainda necessita ser melhor estudado. O maracujá-amarelo (Passiflora edulis f. flavicarpa) é um fruto rico em minerais, vitaminas e fibras e sua produção gera uma grande quantidade de subprodutos como cascas e sementes, que podem chegar até 70% do peso do fruto. Dentro dessa realidade, destacam-se as metodologias de desidratação como alternativa para remoção de umidade desse material, impedindo a proliferação de micro-organismos e abrindo oportunidades para seu posterior aproveitamento. Neste trabalho foram verificados os impactos de quatro metodologias de desidratação no resíduo de maracujá: o uso de ar quente, infravermelho, micro-ondas e liofilização. Em todos foi possível obter um material com níveis de umidade final satisfatórios, destacando-se o uso de micro-ondas como o mais eficiente em termos de tempo. A desidratação por ar quente se mostrou impactada positivamente pela velocidade e temperatura de operação, mas os compostos bioativos sofreram maior impacto da temperatura e do tempo (80oC e 7 horas). A temperatura de 95oC se destacou como a mais eficiente tanto em remoção de umidade quanto nos teores de compostos bioativos para a desidratação por infravermelho, mas verificou-se que uma superexposição a essa radiação além dos limites observados deve ser evitada. O uso de micro-ondas indicou que é possível obter um material final de qualidade e rapidamente, desde que sejam utilizadas potências intermediárias (480 W) e evitado o excesso de exposição. A liofilização resultou em um produto final com melhor aspecto visual, porém seus tempos de operação elevados e o nível de compostos bioativos finais encontrados não obtiveram destaque perante os demais métodos, com exceção aos teores de pectina. Quanto aos compostos bioativos, os fenólicos e flavonoides foram impactados positivamente pela desidratação, atingindo valores próximos e superiores ao do resíduo in natura em todas as metodologias. O ácido cítrico apresentou degradação em todas as condições a que foi submetido, indicando a sensibilidade do mesmo tanto a processos térmicos quanto à liofilização. Já o ácido ascórbico se mostrou fortemente influenciado pela exposição ao aquecimento, apresentando aumento em seus teores, com exceção das amostras liofilizadas. Globalmente, o melhor método de desidratação obtido foi o micro-ondas, indicando um potencial uso do mesmo no aproveitamento do resíduo de maracujá.

This study aimed to study and to model the drying process fresh and osmotically pretreated in sucrose solution watermelon (Citrullus lanatus S.). The osmotic dehydration process was studied through an experimental design, with independent variables as osmotic solution temperature (30 - 50oC) and concentration (40 - 60% w / w) and immersion time (90 - 240min), where the objective was to obtain a maximum water loss with a minimum solid gain. The convective drying was performed at various air drying temperatures (40 - 60oC). The best combination of variables obtained for the osmotic dehydration of watermelon pulp was: 300C, 60% w/w and 90 minutes. The highest drying rates were obtained for the pulp pre-treated osmotically when compared with the fresh one. The water effective diffusivities were in the order of 10-10m2/s, agreeing with the diffusivity of liquids. The empirical exponential model of two parameters fitted very well to the experimental data of both process. The Diffusional model fitted satisfactorily to the experimental data watermelon peels drying. The best drying conditions for the final products were 500C for the pulp pretreated osmotically and 600C for the fresh pulp and peels. Such products are considered source of protein and low lipid content foods, highlighting a significant amount of carotenoid (lycopene) to watermelon fresh pulp.
O presente trabalho teve a finalidade de estudar o processo de secagem da polpa de melancia (Citrullus lanatus S.) fresca e pré-tratada osmoticamente em solução de sacarose, bem como da casca in natura. O processo de desidratação osmótica foi estudado através de um delineamento experimental, tendo como variáveis independentes a temperatura (30 - 50oC) e concentração (40 - 60% p/p) da solução osmótica e o tempo de imersão (90 - 240min), onde o objetivo foi obter uma máxima perda de água com uma mínima incorporação de sólidos. A secagem convectiva foi realizada a várias temperaturas (40 - 60oC) do ar de secagem. A melhor combinação de variáveis obtida para a desidratação osmótica da polpa de melancia foi: 300C, 60% p/p e 90 minutos. As maiores taxas de secagem foram obtidas para a polpa pré-tratada osmoticamente quando comparada com a fresca, na maior temperatura de processo. As difusividades efetivas das amostras foram da ordem de 10-10m2/s, concordando com a difusividade de líquidos. O modelo empírico exponencial de dois parâmetros foi o que melhor predisse os dados obtidos a partir das secagens realizadas para a polpa de melancia fresca e pré-tratada osmoticamente, ao serem considerados os valores de difusividade efetiva, coeficiente de determinação e o desvio relativo médio. Enquanto que o modelo fundamental de Fick se ajustou melhor às cinéticas de secagem da casca de melancia. As melhores condições de secagem para os produtos finais foram de 500C para a polpa pré-tratada osmoticamente e 600C para a polpa e casca frescas. Tais produtos são considerados alimentos fonte de proteínas e de baixo teor de lipídeos, destacando um valor expressivo de carotenóides em licopeno para os produtos oriundos da polpa de melancia.

O uso de novas tecnologias de processamento, as quais permitem a manutenção dos atributos de qualidade do produto em níveis mais próximos daqueles observados na matériaprima in natura, tem permitido a obtenção de frutas desidratadas de aspecto sensorial apreciado pelos consumidores e contribuído para que sua disponibilidade se estenda para além dos períodos de safra, permitindo o consumo em qualquer período do ano. Entre os processos de desidratação que resultam em produtos de bons atributos sensoriais e nutritivos destaca-se a liofilização, onde a separação da água é baseada no fenômeno de sublimação. Considerando que as condições de congelamento exercem influência sobre as propriedades físicas e sobre os atributos sensoriais e nutritivos dos produtos liofilizados, neste trabalho foi estudada a liofilização de fatias de abacaxi (Ananas comosus) da variedade Smooth Cayenne, avaliandose os efeitos da temperatura de congelamento das amostras (-14, -24 e -34 oC) e da espessura das fatias (0,5, 1,0, e 1,5 cm) sobre a taxa de congelamento, cinética de secagem e sobre alguns atributos de qualidade (textura, reidratação e retenção da vitamina C) do produto final desidratado. Os resultados mostraram que existe uma forte dependência da cinética de secagem e dos atributos de qualidade do produto liofilizado, fatias de abacaxi, em função das condições utilizadas durante a etapa de congelamento. A taxa de congelamento, a difusividade efetiva da água no período inicial da liofilização, a retenção de vitamina C, o índice de reidratação e a dureza das amostras foram afetados significativamente, a um nível de 95 % de significância, pela temperatura de congelamento e espessura das fatias de abacaxi.
The use of new processing technologies, which permit keeping the quality attributes of the product at similar levels of those observed in the raw material, has permitted to obtain dehydrated fruits with sensorial aspects appreciated by consumers and contributed to extend their availability for periods beyond their harvest season, allowing their consumption during the whole year. Among the dehydration processes that result in products of good sensorial and nutritional attributes, the freeze drying, in which the water separation is based on the sublimation phenomenon, has an outstanding position. Taking into account that the freezing conditions exert influence on the physical properties and on the quality and nutritional attributes of freeze dried products, in this work the freeze drying of pineapple (Ananas comosus) slices of the Smooth Cayenne variety was studied, evaluating the effects of the samples’ freezing temperature (-14, -24 e -34 oC) and of the slices’ thickness (0,5, 1,0, e 1,5 cm) on the freezing rate, drying kinetics and on some quality attributes (texture, rehydration, and vitamin C retention) of the final dehydrated product. The results showed that there is and strong dependence of the drying kinetics and of the quality attributes of freeze dried product, pineapple slices, as functions of the conditions used during the freezing step. The freezing rate, the water effective diffusivity at the initial period of freeze drying, the vitamin C retention, the rehydration index and the hardness of the samples were significantly affected, at a level of 95 % of significance, by the freezing temperature and by the pineapple slices thickness.

Taking into account that the freezing conditions exert influence on the physical properties and on the quality and nutritional attributes of freeze dried products, in this work the freeze drying of pineapple (Ananas comosus) slices of the Smooth Cayenne variety was studied, evaluating the effects of the samples' freezing temperature (-14, -24 e -34 oC) and of the slices' thickness (0,5, 1,0, e 1,5 cm) on the freezing rate, drying kinetics and on some quality attributes (texture, rehydration, and vitamin C retention) of the final dehydrated product. The results showed that there is and strong dependence of the drying kinetics and of the quality attributes of freeze dried product, pineapple slices, as functions of the conditions used during the freezing step. The freezing rate, the water effective diffusivity at the initial period of freeze drying, the vitamin C retention, the rehydration index and the hardness of the samples were significantly affected, at a level of 95 % of significance, by the freezing temperature and by the pineapple slices thickness.

Повний текст джерелаThe use of dryers to dehydrate agricultural products is appropriate to the needs of small farmers, because the dehydrated product has higher added value compared to the fresh ones, requires less storage space and lasts longer. It is necessary, however, offer to the small farmer economically viable equipment and, if possible, using natural and renewable energy sources , combining sustainability and economic growth. Therefore, the objectives were to study the behaviour of temperature and relative humidity inside a mixed-mode solar dryer with natural ventilation due to external weather conditions. And also the periods more or less favorable to the drying process, depending on the combination of meteorological variables. It was concluded that not always higher solar radiation results in higher temperature values inside the dryer. Cloudy and mainly rainy days may disturb the performance of the dryer, more than, for example, thermal losses due to the wind speed surrounding it. The data showed also that It was possible for the dryer to maintain its temperature higher than the outside temperature, predominantly between 06h and 18 h, while in the rest of the day the behaviour of temperature and relative humidity inside and outside of the equipment, resembles. Periods of high sunlight intensity and little rain are the most favorable to drying. However, winter months with little rain may present better performance than months situated near or in the summer but having cloudy and rain constantly.

Повний текст джерелаEsta pesquisa teve como objetivo analisar o potencial nutricional de mangas Tommy Atkins, oriundos do descarte da Central de Abastecimento de Aracaju-SE, a partir da elaboração de barras de cereais. Os resíduos destas frutas, mangas e cascas de mangas, foram desidratados em secador solar e de bandejas nas temperaturas de 60 o e 70 o C, triturados e armazenados até o início das análises. As amostras de farinhas de mangas e de cascas de mangas obtidas em secador de bandejas nas duas temperaturas estudadas encontraram-se próprias para o consumo, enquanto que as obtidas em secador solar foram descartadas para consumo devido à contaminação por Bacillus cereus. As farinhas de mangas e de cascas de mangas obtidas com a menor temperatura de secagem (60 o C) foram as escolhidas para elaboração das barras de cereais devido a melhor conservação da maioria dos nutrientes, além de favorecer um menor consumo de energia, quando comparadas as farinhas de mangas e de cascas de mangas obtidas com a maior temperatura de secagem (70 o C). Todas as formulações de barras de cereais obtidas por meio do planejamento experimental e a barra padrão encontraram-se próprias para o consumo e tiveram uma boa aceitação pelo consumidor. A formulação otimizada para as barras apresentou 20% de farinha de manga e 18% de farinha de casca de manga em substituição a aveia integral. O reaproveitamento de resíduos de mangas utilizados na elaboração das barras de cereais permitiram obter um produto (barra otimizada) fonte de proteínas, rico em fibra alimentar, com baixo teor de gorduras e teor muito baixo de sódio, mantendo sua qualidade sensorial e podendo ser consumido em até 60 dias de armazenamento em condições adequadas de temperatura e embalagem. A substituição parcial da aveia pelas farinhas de resíduos de mangas poderá resultar em um produto mais barato, agregar valor a esses subprodutos e reduzir o desperdício desses alimentos, além de ser mais uma alternativa que evita o descarte destes resíduos no ambiente.

In order to find improvement opportunities in each process, several cost-benefit analyses were carried out to support the investment in the proposals. Therefore, the first step is to reduce losses and maintain the cold chain. To obtain results focused on the achievement of objectives it was necessary to make improvements such as Implementing good practices for handling materials, instructed under "Handling Manuals", with which the team has worked and been trained, Optimal and efficient distribution of cargo in refrigerated trucks according to the capacity of pallets per truck and stacking criteria for each product, Implementation of refrigeration equipment in the warehouse (design of dry and refrigerated), with product coding to define locations, implement improvements in vacuum packaging to extend the shelf life of the product, compliance and monitoring of truck departures to mining sites and finally the creation of a production line from the products "not suitable for quality" to reuse them and turn them into dried fruit for marketing. The result is a quantitative reduction of 15% to 3% in terms of losses and reprocessing.

In this research, the drying kinetics and equilibrium conditions during osmotic dehydration of chayote (Sechium edule, Sw.) were studied using 20, 30 and 40 % (w/v) sucrose solutions. A thermostatic bath was built to allow the experimental evaluation of osmotic dehydration kinetics and equilibrium moisture content determination. The experiments were carried out at three different temperatures (30 ?C, 40 ?C and 50 ?C) in order to evaluate the influence of temperature and sucrose concentration. Chayote fruits were washed and submerged in sodium hypochloride solution for ten minutes, for sanitization. Afterwards, the fruits were dried and cut into slices of about 0.5 cm thickness. Then, the slices were put into hypertonic sucrose solutions during preestablished time intervals. After osmotic dehydration, the solution was discarded and the slices were softly dried with absorbent paper to remove surface moisture. The moisture content was determined gravimetrically. Long time experiments up to 96 h were performed to provide information about the equilibrium moisture content. An specific equilibrium isotherm was selected by statistical methods. The correlation that better described equilibrium moisture content behavior was the Smith sorption isotherm, adapted to osmotic environment. The Overhults model was used to describe osmotic dehydration kinetics and estimate the drying constants k and n. Based on the results obtained in this research, it could be demonstrated that the equilibrium moisture content is strongly influenced by sucrose concentration and that k is a parameter dependent on the temperature and sucrose concentration, whereas n may be considered constant for the given experimental setup.
Neste trabalho foi feito um estudo da desidrata??o osm?tica de fatias de chuchu em um sistema que possibilitou a determina??o da umidade de equil?brio e dos coeficientes do modelo de Overhults para descrever a cin?tica de desidrata??o osm?tica das fatias. O procedimento experimental consistiu em lavar e escovar os frutos, para a remo??o de impurezas da casca, fatiar o chuchu, em fatias de 5 mm de espessura, num fatiador dom?stico de alimentos, submeter o material ? desidrata??o osm?tica em solu??o hipert?nica de sacarose a 20,30 e 40%, por at? 96 horas, tomando amostras em per?odos determinados para levantar a curva de desidrata??o do material e tamb?m determinar a umidade de equil?brio das fatias de chuchu como uma fun??o da concentra??o inicial da solu??o hipert?nica e da temperatura. Com base nos resultados obtidos foi poss?vel determinar os par?metros do modelo de Overhults para as fatias de chuchu, bem como a uma correla??o para a umidade de equil?brio do material e constatar que h? forte influ?ncia da temperatura e da concentra??o sobre a cin?tica de desidrata??o osm?tica do chuchu, que cerca de 50 % da umidade das amostras ? removida nas primeiras duas horas de imers?o, que a umidade de equil?brio ? atingida em cerca de 48 horas de imers?o e que o modelo de Overhults descreve satisfatoriamente as curvas de desidrata??o osm?tica.

Osmotic dehydration (OD) is one of the most important processes to produce intermediate moisture foods (IMF); however, this process is very time-consuming. Vacuum osmotic dehydration (VOD) and pulse vacuum osmotic dehydration (PVOD) are expected to improve the dehydration effect, but there are some operation variables required further studies. In this research, celery and green papaya were used as the materials. Celery in lengths of 1, 1.5 and 2cm were soaked in 55Brix sugar solutions at 25, 40, 55oC, and 10, 20 and 30inch vacuum were applied for 120min. for VOD and PVOD. On the other hand, green papaya in length of 1cm was soaked in 55Brix sugar solution at 40oC, and factors such as pulse length, pulse number and pulse timing in PVOD were investigated to determine the optimal process factors, with the help of sensory evaluation. Physical properties of the product, such as color, hardness, dehydration rate and sugar uptake were determined, and samples from OD were the control. The results showed that at normal pressure (latm), dehydration rate and sugar uptake increased with solution temperature, but decreased with sample size. As VOD was applied, both dehydration rate and sugar uptake increased two times within the first 60min, compared with OD at the normal pressure. However, this increasing effect was not continued to the next 60min, only if high temperature soaking was used in VOD. Samples from VOD showed dark color, and VOD in high vacuum was not very helpful on increases of dehydration rate and sugar uptake. For celery in VOD, the major effect was showed on the increase of dehydration; for green papaya, it was on sugar uptake. For PVOD, both dehydration rate and sugar uptake results were found better than OD and VOD, and the samples from PVOD were with the smallest hardness change. Comparing the results of physical property determination and sensory evaluation, it showed that the optimal process factors of PVOD were: pulse should be applied at the first half of process, pulse length should be controlled within 5 to 10mins, and pulse numbers should be within 2 - 3.

Повний текст джерелаThis report aims to describe all activities performed in the course of the academic internship at Frueat – Produtos Alimentares, Lda., based in Porto, with an industrial unit in Viseu, as part of the MSc in Biotecnologia and Inovação – Ciência Alimentar. Frueat is a company that develops and manufactures dehydrated food products, specifically fruits and vegetables. The company uses products with little to no market acceptance due to physical traits such as unusual size or unappealing visual aspect, thus taking advantage of that food while fighting its waste. The internship took place at the production plant in Viseu, for 6 months long. I worked in several areas of the food industry and nutrition such as: food safety and its control, measurement of water content and activity, implementation of a food safety system based on HACCP rules and assembling a laboratory; food quality control, handling complaints and shelf testing the products; sensory analysis, ensuring the quality control of old and new products; participating in the development of new products, increasing the product line of laminated fruits, while creating a new brand, called Veegs, for vegetables and tubers. During this internship, I followed up closely the construction of the new company premises in Viseu, collaborating with the blueprints’ structure and choice of equipment and utensils. Throughout the internship and the preparation of this report, a comprehensive scientific survey was done on the presented topics. This internship allowed me to reorganize the food safety system, improving daily practices that ultimately ensured a better company market value and positioning, through the development and launch of new products. I acquired a rich and fulfilling experience in a way that it allowed me hands-on contact with the Portuguese food industry reality.

Повний текст джерелаO objetivo geral deste programa de doutoramento foi estudar e otimizar o desenvolvimento, a níveldaeficiênciadoprocesso e da qualidade, de produtos à base de frutos desidratados, de teor intermédio de água por desidratação osmótica, ou de teor reduzido de água por combinação desta técnica com outros métodos subsequentes de secagem.A primeira parte do trabalho incidiu na desidratação osmótica (DO) de cubos de maçã e fisális. A capacidade de ajuste de alguns modelos matemáticos em descrever as cinéticas de transferência de massa nos produtos também foi estudada. Os objetivos consistiram em realizar a DO de cubos de maçã e estudar os efeitos do soluto (sacarose ousorbitol) e da concentração (40 e 60 °Bx) na solução osmótica, da razão mássica amostra: solução (1:4 e 1:10), da temperatura (25, 40 e 60 ºC), e da pressão (1 bar e 150 mbar) na perda de água (PA) e no ganho sólidos (GS). Relativamente à fisális, a DO foi efetuada com uma razão mássica amostra: solução de 1:4, a 60 ºC e a pressão foi de1 bar ou150 mbar. Outro dos objetivos foi avaliar as alterações da microestrutura do tecido da maçã após o tratamento osmótico com sacarose e sorbitol. Assim, nos cubos de maçã, o sorbitol, o aumento da temperatura e o aumento da concentração do soluto na solução osmótica resultaram num aumento da velocidade da DO, mas a razão mássica amostra: solução e a pressão não afetaramo processo. Na fisális, a velocidade inicial de PAaumentou quando o vácuo foi aplicado durante a DO com sacarose e apresentou tendência a aumentar com o uso de sorbitol. No final da DO de cubos de maçã, observou-se, por análise da microestrutura, que este processo afetou os parâmetros de tamanho e forma das células vegetais e as alterações foram mais pronunciadas em amostras osmoticamente desidratadas com sorbitol. O processo de DO provocou o encolhimento das células e consequentemente uma redução de volume, a plasmólise e o dobramento das paredes celulares.Na segunda parte do trabalho,foram estudados métodos de secagem para obter maçã cortada com teor de água reduzido, nomeadamente a secagem a ar quente, a secagem por micro-ondas e a liofilização. Estudou-se também o efeito do pré-tratamento osmótico com soluçõesde sacarose e sorbitol. Para as melhores condições de cada método, foi efetuada a comparação das cinéticas de secagem entre os diferentes métodos e foi avaliada a qualidade —atividade da água(aw), cor, teorfenólico total(TFT), atividade antioxidante(AA)e capacidade de reidratação —dos cubos de maçã secos. A capacidade de ajuste de alguns modelos matemáticos para descrever o teor de água durante a secagem também foi avaliada. Assim, foi avaliado o efeito da temperatura (25, 55, 70 e 80 ºC) na secagem a ar quente de cubos de maçã osmoticamente desidratados (60 ºC, solução de sacarose ousorbitol a 60 ºBx, razão mássica amostra: solução 1:4). Na secagem por micro-ondas,foi também avaliado o efeito do pré-tratamento osmótico e da potência (160, 350, 500, 650, 750 e 850 W) na cinética de PAde cubos de maçã. Finalmente, estudou-se a cinética de PAde cubos de maçã na liofilização. No que diz respeito à maçã cortada seca comteor reduzido de água, a desidratação osmótica como pré-tratamento antes da secagem a ar quente aumentou a velocidade e reduziu o tempo de secagem. O agente osmótico não afetou a velocidade de secagem, mas a utilizaçãode sorbitol reduziu mais o tempo de secagem e a awdo produto final. Na secagem por micro-ondas, o aumento do nível de potência reduziu o tempo de secagem e esta redução foi maior para as amostras osmoticamente desidratadas com sorbitol. A DO antes da liofilização não apresentou uma vantagemrelevante e a awfoi menor em amostras semtratamentoosmótico.O tipo de secagem e o pré-tratamento não afetaram a velocidade de reidratação dos cubos de maçã secos, mas as amostras controlo apresentaram um teor de água de equilíbrio superioràs amostrasosmoticamente desidratadas.A DO e a secagem subsequente, por ar quente, micro-ondas e liofilização, diminuiram significativamente o TFT e a AA. Nas amostras osmoticamente desidratadas, estes parâmetros de qualidadenão foram afetados pela secagem subsequente, mas apenas pela DO. Com o objetivo de comparar o efeito do agente osmótico utilizado na DO na aceitação pelo consumidor, foi efetuada a análise sensorial de cubos de maçã secos a ar quente pré-tratados osmoticamente com sacarose ousorbitol. Não houve diferença nos resultados e o produto final foi bemaceite pelos consumidores.De entre os métodos de secagem estudados, a secagem por micro-ondas sem pré-tratamento produziu cubos de maçã secos deboa qualidade e numtemporeduzido. O sorbitol é uma boa alternativa à sacarose como agente no pré-tratamento osmótico de cubos de maçã e fisális. Para além disso, o sorbitol éum prebiótico com benefíciospara a saúde.
