Повний текст джерелаFood allergy is a major public health problem. Its prevalence is estimated at 5% in adults and 8% in children in industrialized countries. The objective of this thesis is to bring a contribution to the diagnostic and therapeutic dietetics in food allergy. Our work focused on yellow pea and sesame food allergies. Yellow pea is an emerging allergen with risk of a severe reaction. Its reactogenic threshold is of 0.13 g of protein while the content of food can reach 20 g / 100g. The study of 35 people allergic to sesame has enabled the identification of the reactogenic threshold that can trigger a reaction in 5% of the allergic population. It is estimated between 1.2 and 4.0 mg of sesame protein. We validated optimal progression dosing scheme for sesame for oral challenge test taking in account the European consensus Europrevall. Lack of international harmonization on mandatory allergens, led us in a second part of this thesis, to study the impact of food allergy on the decision, trip organization and a stay abroad of an allergic person. This study, conducted in collaboration with the regional health observatory and Social Affairs of Lorraine and the French and Belgian associations for allergy prevention shows, on a panel of 102 respondents, that food allergy forced 14% of respondents do not travel abroad and that 30% of people who have traveled had an allergic reaction. The accidents occurred mainly in restaurants. These results highlight the need to develop an information system and training of allergies and food professionals to implement risk prevention strategies

Повний текст джерелаThis PhD thesis applies empirical and theoretical microeconomic approaches to analyse the efficiency of payments for environmental services in the agricultural sector. I assess levers to promote their adoption by farmers at different scales. I show empirically that targeting part of the income support of the Common Agricultural Policy towards increased funding of agri-environmental and climate measures and support for organic farming promotes participation in these schemes. My main contribution is to show that a sponsorship bonus in payments for environmental services is promising to encourage the participation of a critical mass of farmers when ecological threshold effects exist. The results of this thesis also suggest that result-based payments,in the form of a collective bonus or a payment proportional to an environmental indicator, are effective on the condition that the level of payment is sufficiently attractive. With a theoretical approach, I focus on the demand side and propose a tool, the health label, to increase consumers' willingness to pay in the particular case where the joint production technology of environmental services is complementary to the improvement of the intrinsic health quality of the agricultural commodity. I contribute to the literature by showing that consumers' health concerns can efficiently finance environmental services and complement agri-environmental policies

Повний текст джерелаThe thesis describes ecolabeling as a hybrid institutional device, distinguished from other environmental policy tools through its explicit reliance on the market, a mechanism intended to promote collective well-being through the diffusion of information. We aim to characterize and analyze the functions of this device by underlying the necessary conditions to ensure ecolabeling leads to environmental improvement. The first section describes and analyzes ecolabeling as a complement to other environmental policy tools. The second section identifies and investigates several mechanisms which may enhance the efficiency of transactions, between sellers and consumers, of products embedded with environmental attributes. The third section examines one of the foundations of ecolabel efficiency by measuring and characterizing consumers' willingness to pay for agro-food products embedded with environmental attributes

Повний текст джерелаThe purpose of this research is to identify the informational contents that carry the evocation of the terroir in order to consider their effects on the perception of quality and consumer’s intentions for food products. Although regularly mobilized by the professional sector, this concept was neither consensual nor well- defined from the consumer’s point of view. The prerequisites of our research, representing a first contribution, was to specify the area, the dimensions and the product of the terroir in the food field. From then on, we constructed a psychometric scale of perceived terroirity measure. Consisting of 6 dimensions and 23 items, it allows to measure the characteristics associated with the terroir by the consumer. The second contribution of our research is to assess the effects of this global construct and of each of its dimensions on the perceived quality and on the consumer’s intentions for the food product of the terroir. The third contribution is to have been able to identify the variables moderating significant to be tested in future researches. Wine is a specific product within the French food sector but it is also the first product evocated when consumers think of local products. The fourth contribution was to replicate all the investigative work by applying it to the case of wine. In addition to a different structuring of the dimensions of perceived terroirity, the results indicate differences in terms of effects and moderating variables for wine (level of expertise, knowledge and interest in the product). Through a mixed approach with, on the one hand, semi-structured qualitative interviews with respondents belonging to all French regions, and on the other hand, two surveys in opinion of 1015 consumers in France, this research relies both on the use of innovative research tools in marketing (ADT software "Le Trameur", Macro Process of Hayes, 2013), as well as on robust tools and methods known (AFE, AFC, structural equations models). In view of the demonstrations of increased efforts intentions, monetary and behavioral, for product of terroir, the contributions of the research leads to obtain a clarified base for the actors of the food chain to guide their actions as strategic and communicational. At the same time, this almost systematic trust attributed to the terroir’s mention allows to open the debate on the security of the guarantees and the legitimacy of the commercial affirmations. Faced with the profusion of evocations and terminologies referring to infraregional territorial anchorage, it is a question of considering public policies of protection and information of the consumer to avoid the possibility of excessive use of the term "terroir"
