The turmeric (Curcuma longa) plant, a perennial herb belonging to the ginger family, is cultivated extensively in south and southeast tropical Asia. The rhizome of this plant is also referred to as the “root” and is the most useful part of the plant for culinary and medicinal purposes. The most active component of turmeric is curcumin, which makes up 2 to 5% of the spice. The characteristic yellow color of turmeric is due to the curcuminoids. Curcumin is an orange–yellow crystalline powder practically insoluble in water. Turmeric is used as a dietary spice, coloring agent in foods and textiles, and a treatment for a wide variety of ailments. It is widely used in traditional Indian medicine to cure biliary disorders, anorexia, cough, diabetic wounds, hepatic disorders, rheumatism, and sinusitis. Turmeric paste in slaked lime is a popular home remedy for the treatment of inflammation and wounds. For centuries, curcumin has been consumed as a dietary spice at doses up to 100 mg/d. Extensive investigation over the last five decades has indicated that curcumin reduces blood cholesterol, prevents LDL oxidation, inhibits platelet aggregation, suppresses thrombosis and myocardial infarction (MI), suppresses symptoms associated with type II diabetes, rheumatoid arthritis, multiple sclerosis (MS), and Alzheimer’s disease, inhibits human immunodeficiency virus (HIV) replication, enhances wound healing, protects from liver injury, increases bile secretion, protects from cataract formation, and protects from pulmonary toxicity and fibrosis, is an anti-leishmaniasis and an antiatherosclerotic. Additionally, there is extensive literature that suggests that curcumin has potential in the prevention and treatment of a variety of other diseases.

Turmeric powder (Curcuma longa) is a yellow powder obtained by grinding dried matured rhizomes. Curcuma longa is utilized in culinary and cosmetic preparations, as well as medicinal formulations. It's available in Kajuru LGA, Kaduna state, Nigeria's Maro ward. The purpose of this study was to carry out a health risk assessment of Na, Mg, K, Ca, and Fe metals in turmeric cultivated within Maro, Chibiya, Karamai, and Angwan Gamu farm lands. Using the Perkin Elmer pin AAcle 900H, four Curcuma longa samples were obtained from diverse fields and subjected to AAS analysis following wet digestion to assess metal contents. The data was examined statistically using analysis of variance (ANOVA). Ca>Mg>Na>K>Fe were found to be the most abundant metals in Curcuma longa. The maximum level advised by the World Health Organization for all elements was not exceeded (WHO). At P>0.05, there were substantial differences in metal content in Tumeric across all farmlands. Consumers of Curcuma longa cultivated in Maro will not be exposed to any potential health problems because the Target Hazard Quotient (THQ) value of all metals was less than one and the Hazard Index (HI) value for Fe metal was less than one. It was suggested that more research be done on the health risks of other metal content in Curcuma longa rhizome.

Over the past two to three decades, renewed interest has been shown in the Curcuma longa plant because of the multiple properties attributed to its spice, properties that are traditionally recognized or empirically observed over hundreds of years of use. Curcuma longa is a herbaceous plant belonging to the Zingiberaceae family, cultivated in India and Southeast Asia and considered a coloring spice. Turmeric, especially its rhizome (the underground part), has been used not only as a food spice, but also as a medicinal plant since time immemorial in China and India. The recognition of its medicinal properties is therefore recent in the West. The history of Curcuma is also being written in the future, as much scientific research is being carried out, particularly on the effects of one of its main components, curcuma, in the prevention and treatment of certain cancers. It is in this context that the aim of this work is to evaluate certain parameters of the physicochemical quality of this plant, such as the level of impurity, ash content, moisture content, soluble and insoluble ashes in water, coloring power and chromatography on thin layers on the basis of the standards dictated by the French official journal (JORF).This study was carried out on the two rhizome and powder forms of Curcuma longa marketed. For this, five spice shops (2 samples / shop) were selected at random in the town of Sétif. Analyses of the samples taken were carried out with the collaboration of two laboratories: one INSFP (National Institute for Specialized Professional Training Hadadi Cherif el Hidhab Setif) and the other ERIAD (Riad Setif). The results obtained vary from one type to another and from one store to another. The analysis of the variance of impurity levels, moisture content, acid insoluble ash and TLC is significant whereas it is not for other parameters such as: total ash, water insoluble ash and colouring power. In this study, remnants concentrations of curcumin in Curcuma longa (organic turmeric powder) were determined after it was exposed to irradiation doses of 1, 2 and 3 kGy. Curcumin analysis was performed using the analyte-sensitive impulse differential polarography technique (LOD: 0.621 ppm and LOQ: 2.130 ppm). The results obtained showed a decreasing concentration of curcumin as a function of the irradiation dose. This reduction is low in terms of affecting the product’s quality with respect to its concentration.

Curcuma root (Curcuma longa L.) is a very important plant in gastronomy and medicine for its unique antiseptic, anti-inflammatory, antimicrobial and antioxidant properties. Conventional methods for the extraction of curcuma oil require long extraction times and high temperatures that can degrade the active substances. Therefore, the objectives of the present study were: (i) first, to optimize the extraction yield of curcuma oil by applying a Box-Behnken experimental design using surface response methodology to the microwave-assisted extraction (MAE) technique (the independent variables studied were reaction time (10–30 min), microwave power (150–200 W) and curcuma powder/ethanol ratio (1:5–1:20; w/v); and, (ii) second, to assess the total phenolic content (TPC) and their antioxidant activity of the oil (at the optimum conditions point) and compare with the conventional Soxhlet technique. The optimum conditions for the MAE were found to be 29.99 min, 160 W and 1:20 w/v to obtain an optimum yield of 10.32%. Interestingly, the oil extracted by microwave-assisted extraction showed higher TPC and better antioxidant properties than the oil extracted with conventional Soxhlet technique. Thus, it was demonstrated that the method applied for extraction influences the final properties of the extracted Curcuma longa L. oil.

The present study was aimed to investigate the dietary effect of different levels of turmeric (Curcuma longa) powder on the performance of broiler during summer (June-July), 2013. Four experimental rations designated as T0, T1, T2 and T3 having 0%, 0.5%, 1.0% and 1.5% Turmeric (Curcuma longa) powder were fed to 120 broiler chicks (Ross 308), randomly distributed into 12 replicates, so as to have 3 replicates per treatment and 10 chicks per replicate. Average weight gain, feed consumption, feed efficiency, dressing yield and survivability were used as criteria of response to feeding turmeric powder. Organs weight including heart, liver and gizzard were also recorded. The mean body weight gain and average feed efficiency (feed gain-1) per broiler significantly increased (P<0.01) by turmeric supplemented feed compared to control feed. The average feed consumption and survivability of broiler chick non- significantly (P>0.05) improved due to by turmeric supplementation in the diets. Inclusion of turmeric powder caused slightly increased the carcass traits of broiler chicks i.e., average weight of liver, heart and gizzard but the differences were non-significant (P>0.05). A significant decrease (P<0.01) in abdominal fat pad and significant increase (P<0.05) in dressing yield was observed in chickens fed the turmeric supplemented diets. The results of the present study suggest that the use of turmeric (Curcuma longa) powder as feed additive at a level of 0.5% enhances the growth performances and carcass yield of broiler chicks.SAARC J. Curcuma longa, C. xanthorrhiza, C. heyneana, and Zingiber cassumunar contain high curcuminoid and have relatively similar yellow color. Therefore, they are potentially adulterated and difficult to differentiate in the form of powder. Hence, it is necessary to characterize the fingerprints compound profile by a simple and rapid method. This research aims to determine fingerprint compound profile of curcuminoid using Thin Layer Chromatography (TLC) and digital image analysis. The result of the research identified that the fingerprint compound profile of curcuminoid on the four rhizomes was obtained by TLC method using silica gel 60 GF254 as the stationary phase, chloroform: dichloromethane: methanol (13:6:1) as the mobile phase, and observation under UV 254 nm light and citroborate reagent. Thereafter, the digital image analysis was carried out using Image J software according to the gray value and % of RGB (red-green-blue) value. Based on gray value and % of RGB, both Curcuma and Zingiber genera were differentiated through curcumin compound (Rf 0.63), demethoxycurcumin (Rf 0.34), bisdemethoxycurcumin (Rf 0.21). The profile of fingerprint compound on Curcuma longa, C. xanthorrhiza, C. heyneana, and Zingiber cassumunar was differentiated through Rf 0.26; Rf 0.17; and Rf 0.10.

Turmeric (Curcuma longa L) is one of the many spices that grow on the Asian continent, especially Southeast and South Asia, which can be utilized to its full potential, especially the antioxidant compounds contained in curcuminoids. This study aims to determine the effect of different forms of turmeric, powder and fresh, on the extraction using the reflux extraction method and antioxidant activity using the DPPH method (2,2-Diphenyl-1-PicrylHydrazyl). The reflux extraction process was carried out using distilled water with three variations of sample forms, turmeric powder, fresh turmeric (grated turmeric and pieces of turmeric) with a solute/solvent ratio (w/v) (1:5). The viscous extract in the form of a paste was obtained after the distillation process and solvent evaporation. The best extracts and essential oils obtained were extracts from powdered turmeric samples with yields of 8.28 (% w/w) and essential oils of 0.44 g, which were clearer than the other two samples. The analysis showed that the sample of turmeric with the highest antioxidant activity was a sample of freshly grated turmeric with an IC50 value of 114.7 ppm with a moderate level of antioxidant activity. The cut turmeric sample has an IC50 value of 158.3 ppm, which is included in the weak antioxidant activity. The powdered turmeric sample has an IC50 value of 134.1 ppm with moderate strength.

Semen quality is critical to avian reproduction and chiefly influenced by feeding. Improving the seminal features of local poultry with dietary technologies is significant to fortifying man’s deficient dietary resource. Hence, this study evaluated the semen quality indices of Nigerian roosters fed grower diets containing different levels of Curcuma longa powder (CLP) in a 70-day feeding trial. The experiment randomly placed test roosters (n = 36) into four distinct groups (T1-T4), having replications of 3 birds per replicate in a completely randomized design. The birds were fed ad libitum on grower feeds containing CLP inclusions according to groups, i.e., T1, T2, T3, and T4 respectively had 0, 20, 35, and 50 g of CLP kg–1 feed. Routine vaccinations and prophylaxis was duly administered during experimentation. Semen collection and sampling for physical seminal features were conducted and analyzed. The results showed significant (p < 0.05) effects of dietary CLP on sperm concentration (SC), live spermatozoa (LS), and dead spermatozoa (DS) of the test roosters. High SC and LS of roosters fed on CLP diets were significantly different (p < 0.05) from control, just as DS of T1 was higher (p < 0.05) than CLP groups. Thus, placing Nigerian roosters on diets scented with up to 50 g of Curcuma longa powder per kilogram of feed improved their seminal characteristics.

Curcumin is a polyphenolic component of Curcuma longa, highlighting in the literature by presenting medicinal properties such as: antioxidant, anti-inflammatory, antibacterial, antiparasitic, antimalarial and anticancer activities. From this, it has been used together with curcumin, chitosan, a biodegradable polymer of natural origin, in order to encapsulate curcumin from a polymer system. Thus, this study aimed to evaluate the morphological behavior of beads and powder chitosan/curcumin, by the Optical Microscopy (OM) technique in the presence of the solvent (methanol). From the pictures, it was noticed that the beads have in their external structure the presence of the drug in a punctual manner, but a more homogeneous internal region. Regarding the powder, it was observed that curcumin was well distributed and involved by chitosan, proving the good interaction between them. In the presence of the solvent, the beads and the powder showed a good distribution of curcumin.

Curcumin has been identified as the most abundant bioactive constituent in turmeric (Curcuma longa) extract (2 - 8% w/w). Curcumin is used as a preservative, flavoring, and yellowish colorant agent in the food industry. Modern scientific studies have confirmed its anti-inflammatory, antioxidant, anti-carcinogenic, and antimicrobial properties. Curcumin is easily oxidized and light-damaged, and it is insoluble in water. This product's shelf life should be increased. Curcumin microencapsulation into powder solves these issues. This process has been used because of its low cost, equipment availability, continuous production, and ease of industry. Curcumin powder in food could be crude turmeric powder (0.58 - 3.14%w/w), curry powder (0.11 - 0.58%w/w), or spray dried turmeric oleoresin curcumin powder (40 - 50%w/w). Spray drying coats the curcumin core material into the matrix powder, improving stability. The wall material (gum arabic, maltodextrin, or chitosan) and emulsifying agent were dispersed in continuous phase with the curcumin core material to prepare the microencapsulated flowing powders. Several formulation modifications in spray drying methods, such as co-dried and binary blend materials, have been investigated to improve the stability of curcumin. Curcumin powder is becoming more popular as a treatment for a variety of ailments, as well as a compound that is generally regarded as safe. As a result, its application as a nutraceutical or functional food has the potential to be expanded further.

Turmeric (Curcuma longa) is a spice that has been used for a long time in traditional medicine for its anti-inflammatory properties and recently used in the food industry for its dyeing and flavoring properties. This work studied the effect of different drying methods (convection oven drying, fluidized bed drying, and traditional solar drying) on the quality of Curcuma longa powder. The effect of UV radiation on turmeric powder using different packaging materials (glass, aluminum foil bag, and low-density polyethylene bag), was also studied. Subsequently, the fluidized bed drying method was used to evaluate the effect of drying temperature. The results show that convection and fluidized bed drying had no significant impact on turmeric quality. However, solar drying degraded curcuminoids by 36.5% and the ORAC value decreased by 14%. Regarding the packaging materials, the aluminum bag prevented the deterioration of 14% of the curcuminoids for the powder exposed to UV radiation. Finally, the effect of temperature on fluidized bed drying was evaluated at 50–80 °C, finding that there were no significant differences in the curcuminoid content and antioxidant capacity of turmeric powder. This implies that the range of temperature used in this study is appropriate for drying this material using fluidized bed drying, producing a turmeric powder with a high content of bioactive compounds, when compared to convection oven and solar drying. Therefore, the turmeric powder obtained in this way can be used as an active ingredient in the formulation of different kinds of foods and supplements.

The lack of use of turmeric powder by farmers to increase the production of native chicken eggs such as increasing egg weight. The purpose of the research was to determine the effect of turmeric powder supplement (Curcuma longa L.) on the weight of native chicken eggs (Gallus gallus domesticus) that had been induced on standard feed before entering the pebertas period. The design of this study is to use a complete randomized design with a total of 3 treatments. Treatment consists of the first; chicken that is not given turmeric powder supplement (P0). Second; native chickens are given turmeric powder supplements at a dose of 216 mg/ chicken /day (P1). Third; is a native chicken given turmeric powder supplement with a dose of 324 mg/ chicken /day. Egg weight data is obtained from the results of measurements made every day when all chickens have laid eggs. One month's measurement data is taken from 28 days of measurement. All measurement data is analyzed with analysis of variance (ANOVA). If the data is influential, it is then tested with a Duncan test with a trust of 95 % (α>0.05). Supplementation of turmeric powder mixed in daily standard feed before entering puberty can have an effect on increasing the weight of free-range chicken eggs (Gallus gallus domesticus). There was a significant difference in free-range chickens that were given turmeric powder supplements at a dose of 324 mg/ chicken /day (483.6 mg) compared to chickens that did not receive turmeric powder supplements (405.4 mg).

Turmeric, or Curcuma longa, is commonly consumed in the South East Asian countries as a medical product and as food due to its therapeutic properties. However, with increasing demand for turmeric powder, adulterated turmeric powders mixed with other cheap starch powders, such as from corn or cassava, are being distributed by food suppliers for economic benefit. Here, we developed molecular markers using quantitative real-time PCR to identify adulteration in commercial turmeric powder products. Chloroplast genes, such as matK, atpF, and ycf2, were used to design species-specific primers for C. longa and Zea mays. Of the six primer pairs designed and tested, the correlation coefficients (R2) were higher than 0.99 and slopes were −3.136 to −3.498. The efficiency of the primers was between 93.14 and 108.4%. The specificity of the primers was confirmed with ten other species, which could be intentionally added to C. longa powders or used as ingredients in complex turmeric foods. In total, 20 blind samples and 10 commercial C. longa food products were tested with the designed primer sets to demonstrate the effectiveness of this approach to detect the addition of Z. mays products in turmeric powders. Taken together, the real-time PCR assay developed here has the potential to contribute to food safety and the protection of consumer’s rights.

Several conditions such as chemotherapy and toxins can interfere with spermatogenesis and reduce sperm quality and production. In the case where natural antioxidant response cannot manage oxidative stress and free radical overload, oxidative damage occurs and this begins the genesis of many diseases of which diabetes is one of them. This has awakened the interest of researchers to the use of an alternative source of medicine and herbal medicine. Medicinal use of Curcuma longa dates back to ancient China and India; its constituents are stated to have anti-hepatotoxic, anti-inflammatory, stimulant, and antioxidant and used since ancient time as medicinal and nutritive origins knowing to possess androgenic activities and have well effect in diseases treatment in more countries world-wide. As an antioxidant Curcuma longa possible has a useful effect on spermatogenesis and sperm parameters. Wistar male rats (n=24) were allocated into six groups, positive control (n=4), diabetic control (n=4) and experimental groups (n=20), that subdivided into groups of 4 that received treatment of Curcuma longa rhizome powder with or without STZ-induced diabetes in the dosages (25 and 100mg/kg/day) for 21 consecutive days. In twenty-second day, the testes were removed and semen was collected from epididymis and prepared for analysis. The percentage of sperm viability and motility in the treatment groups increased mildly with a significance of: (p<0.05) in comparison to control group and with the diabetic group being critically lower than those in control group. This suggested that Curcuma longa may be promising in enhancing sperm health parameters. Keywords: Turmeric, oxidative stress, semen, STZ-induced diabetes, antioxidant

The nutraceutical efficacy of phytochemical curcumin has been utilized in many therapeutic foods and drugs, thanks to their anti-inflammatory, antimicrobial, antioxidant, antitumor and anticancer activities. Therefore, it is necessary to develop green and scalable methods of isolating the natural products from the Curcuma longa plant. This study presents an environmentally friendly method of aqueous extraction to obtain fine curcumin powder with high purity (84.6 % quantified by HPLC). The fine curcumin combines with montmorillonite clay to synthesize an improved drug delivery vehicle. Synthetically, equilibrium adsorption of curcumin on montmorillonite results in a curcumin-loaded montmorillonite structure. The montmorillonite/ curcumin drug delivery vehicle shows good properties of aqueous dispersibility and curcumin stabilization in the environment of neutral water and natural/ ultraviolet lights. The innovative formulation of montmorillonite/curcumin helps to upgrade the bioavailability and stability of bioactive curcumin in nutraceutical delivery applications.

This study investigated some quality attributes of the functional properties of turmeric rhizome flour cultived in Côte d’Ivoire. It consisted in comparing the properties of turmeric powder with film (PWF) and powder without film (PWAF) to identify nutritionally and technologically appropriate uses. In terms of functional properties, the PWAF had the best water absorption rates (1032.156 ± 34.016%), the best stability properties (74.3%), the water solubility index (19.50%) and very good wettability (21.33 S ± 0.58). Furthermore, the dispersibility (21.3% to 41.2%), the hydrated density (1.17 ± 0.14g / ml) and the oil absorption capacity (300% to 975%) fell within the range of PWF. The study of the functional properties revealed that turmeric powders can be recommended in food formulations but the most suitable is the PWAF. Regarding the antioxidant activity, the PWF had the highest value of total vitamin E (1167.07 ± 0.62), α-tocopherol (2.72 ± 0.02) and γ-tocopherol (1134.22 ± 0.55). On the other hand, PWAF had a high value in δ-tocopherol (43.83 ± 0.06) but low in total vitamin E (443.54 ± 0.65) and in α-tocopherol (1.078 ± 0. 03). The contents of total polyphenols and total flavonoids are raised respectively 179, 16 ± 0, 61 mg/100g and 25, 68 ± 0, 32 mg/100g for the PWP flour. As for vitamin C, it gave respectively values of 137.67 ± 0.58 mg/100g for the PWP while the PWAF provided 112.17 ± 0.58 mg/100g. The DPPH and FRAP tests showed that turmeric with film is richer in anti-free radical activity than PWAF. The IC50s of the extracts PWF and PWAF on DPPH are respectively 0.032 mg / ml and 0.049 mg / ml. This research proved that functional properties value plus the oxidizing activity, make turmeric flour a functional food.

Objective: One of the major challenges in developing curcumin as a pharmaceutical agent is its low bioavailability after oral administration. Co-administration of curcumin-piperine combined with employing solid dispersions (SD) approach has been shown to enhance curcumin dissolution and bioavailability. Understanding the influence of the processing temperature during spray drying is crucial in SDs preparations; the purpose of this study is to inquire the effect of inlet temperature spray-dryer on dissolution behavior and the best-fit kinetic model of dissolution itself. Material and Method: The SD powder was prepared using a spray-drying method by varying the inlet temperature (105°C; 115°C; 125°C) and involved polyvinyl alcohol (PVA) as a carrier. The SD were prepared at 30% Curcuma longa and 10% Piper nigrum extracts. Yield (%) of the dried powder resulted from the spray drying process was monitored, and dissolution behavior of curcumin and piperine were analyzed using a dissolution efficiency (DE) value. Furthermore, mathematical model describing the release mechanism of curcumin and piperine from the dissolution were evaluated using a DDSolver software. Result and Discussion: The variation of drying temperature on the spray dryer affects the dissolution behavior and the % yield of the PVA-based SD containing C. longa and P. nigrum extract. The most ideal mathematical model of kinetic release for curcumin and piperine were the Quadratic model, indicating that the mechanism of dissolution is diffusion through a gap between the PVA particle and the surrounding medium.

Bhavana (Levigation) is a pharmaceutical process, which is preferably useful to nullify the unwanted effects of drugs and to potentiate the drug action by transforming the physical and chemical changes. In this process herbal powders are triturated along with herbal juice, decoction, or any organic liquid media till complete absorption of liquid with trituration process. This article is going to throw light on potentiation, synergistic action, increase in shelf life, and dose reduction of Nisha-Amalaki Yoga. In pharmaceutical process of Nisha-Amalaki Yoga,3 Bhavana of Emblica officinalis Gaertn. fruit juice was given to the powder of Curcuma longa L., until complete absorption of juice and dried under sunlight. Due to wet milling techniques, beneficial physicochemcal parameters changed in finished product. Weight of Choorna increased in successive manner indicating accumulation of solid particles of Emblica officinalis Gaertn. juice in Curcuma longa L. powder. Various organoleptic changes such as change of taste, change of color are also noticed. Continuous wet trituration with pressure reduced the particle size (60 to 85 mesh size) and made it compatible. GC-MS (Gas Chromatography-Mass Spectrometry) analysis revealed the presence of the major compounds such as1,1-Difluoro-Tetramethylcyclopropane (1.52%), AR-Tumerone (35.11%), 7- Curlone (55.30%) and Iso-aromadendrene epoxide/Iso-pinocarveol (8.07%). These compounds possess antidiabetic property which will be useful for upcoming clinical trial on prediabetes.

Turmeric (Curcuma longa), java turmeric (Curcuma xanthorrhiza) and cassumunar ginger (Zingiber cassumunar) are widely used in traditional Indonesian medicine. These three herbs have relatively similar rhizomes colour so it is difficult to be differentiated especially if they are in powder form. A rapid and reliable method, thin layer chromatography (TLC) fingerprint, has been developed in order to identify, authenticate and differentiate these three herbs through fingerprint profile of chemical compounds. TLC fingerprints of the three herbs were obtained by visualization of separate zones with visible and UV (254 and 366 nm) light. The TLC fingerprint pattern is different each other and showed a specific marker zones respectively. Therefore, TLC fingerprint can be utilized for identification, authentication and differentiation method in quality control of the three herbs tested.

This study was conducted to evaluate the impact of different processing methods on the functional and phytochemical properties of turmeric rhizomes. The experiment consisted of four treatments: Treatment 1 involved oven-drying the turmeric powder, Treatment 2 involved blanching followed by oven-drying, Treatment 3 involved cooking followed by oven-drying, and Treatment 4 involved sun-drying. Each treatment was replicated four times. The major findings of the study revealed that sun-drying (68.50%) and blanching/oven-drying (66.50%) positively influenced the dispersibility of turmeric powder. Blanching/oven-drying (0.32 g/ml) and cooking/oven-drying (0.30 g/ml) significantly improved the bulk density of turmeric powder (p<0.001), with no significant difference observed between these two treatments. The water absorption capacity of the turmeric powders ranged from 3.35 to 5.35 g/ml, with the sun-dried sample displaying the lowest capacity and the cooked/oven-dried sample demonstrating the highest capacity. Similarly, sun-dried powder exhibited the lowest swelling power and solubility, while heat treatment resulted in a substantial increase in both of these parameters. Additionally, the curcumin content was found to be highest in the cooked/oven-dried (3.11%) and sun-dried (2.99%) turmeric powder. In conclusion, this study suggests that blanching and cooking methods have wide applicability in the food industry to enhance the bulkiness of turmeric powder for appropriate packaging and handling. Moreover, these methods contribute to the characteristic flavor and aroma of turmeric. The findings emphasize the importance of considering different processing techniques for optimizing the functional and phytochemical properties of turmeric, thus enabling its effective utilization in various food applications.

Yellow turmeric (Curcuma longa) is widely used for culinary and medicinal purposes, and as a dietary supplement. Due to the commercial popularity of C. longa, economic adulteration and contamination with botanical additives and chemical substances has increased. This study used FT-IR spectroscopy for identifying and estimating white turmeric (Curcuma zedoaria), and Sudan Red G dye mixed with yellow turmeric powder. Fifty replicates of yellow turmeric—Sudan Red mixed samples (1%, 5%, 10%, 15%, 20%, 25% Sudan Red, w/w) and fifty replicates of yellow turmeric—white turmeric mixed samples (10%, 20%, 30%, 40%, 50% white turmeric, w/w) were prepared. The IR spectra of the pure compounds and mixtures were analyzed. The 748 cm−1 Sudan Red peak and the 1078 cm−1 white turmeric peak were used as spectral fingerprints. A partial least square regression (PLSR) model was developed for each mixture type to estimate adulteration concentrations. The coefficient of determination (R2v) for the Sudan Red mixture model was 0.97 with a root mean square error of prediction (RMSEP) equal to 1.3%. R2v and RMSEP for the white turmeric model were 0.95 and 3.0%, respectively. Our results indicate that the method developed in this study can be used to identify and quantify yellow turmeric powder adulteration.

The drugHaridra(Curcuma longaLinn.) has been extensively used as medicine and strongly relates to the socio-cultural life of people. The rhizome of the plant is rich in phytoconstituents which are responsible for the pharmacological actions of the drug. HPTLC serve as a potent tool for identification, authentication and quality control of herbal medicines in order to get the genuine drug. The present study aimed to compare thechoorna(powder) and bhavitha choorna(processed powder) of the methanol extract of the dried rhizome of Haridra(Curcuma longaLinn.) through high-performance thin layer chromatography. HPTLC plates Silica gel 60 F 254, 4.0 x 9.0 cm aluminum sheet was the stationary phase. Mobile phase comprising Toluene: Ethyl acetate: formic acid (6:3:0.1). The development of the plate was done by using CAMAG 20 x 20 cm automatic developing chamber. After derivatization using anisaldehyde sulphuric acid reagent, it was visualized under UV at 254 nm and 366 nm. The number of peaks in the chromatogram of bhavitha choorna(processed powder) was more when compared to choorna (powder) at 254nm indicating a greater number of phytoconstituents in bhavitha choorna(processed powder). The total area of bhavitha choorna (processed powder). is more than choorna(powder)of the drug at 366nm indicates that the concentration of phytoconstituents has been increased by the process of bhavana which substantiate that bhavanaprocess can increase the potency and efficacy of the drug

Turmeric (Curcuma longa L.), a plant native to Asia, was the subject of the present study whose objective was to evaluate the antioxidant properties of the rhizome powder of this plant cultivated at Bopa, a commune of Benin. The methodology used consists in evaluating the toxicity of the extracts by the shrimp larvae, to make the phytochemical analysis of the Curcuma longa L. powder in order to obtain information on its biochemical and/or chemical value. It also consists in the determination of polyphenols, flavonoids, tannins and beta-carotene of ethanolic and ethyl acetate extracts, and in the evaluation of the antioxidant activity of these extracts by the FRAP and DPPH methods. Phytochemical screening of the powder revealed the presence of alkaloids, flavonoids, anthocyanins, tannins, steroids and terpenes, reducing compounds, mucilages and anthracene derivatives. The yield of ethanolic and ethyl acetate extracts gave 31.94 % and 14.66 % respectively. The larval toxicity test performed on these two extracts revealed that they will not be toxic. The ethyl acetate extract had a high content of polyphenol (1304.596 mg EqAG) while for the flavonoids (1259.938 mg EqQ/g E), tannins (259.859 mg EqP/g E) and beta-carotene (0.139 mg/100 g) assay, the ethanolic extract had the highest contents. Note also that the ethyl acetate extract showed the best antioxidant activity (IC50 = 0.007 mg/mL) compared to the ethanolic extract (IC50 = 0.009 mg/mL) after the control (ascorbic acid 0.0074 µg/mL). Keywords: antioxidant activity, phytochemical analysis, rhizome, larval toxicity

Studies were carried out to evaluate the influence of post harvest processing conditions on yield and quality of ground turmeric. Rhizomes were peeled, cooked (autoclave or immersion) in water or alkaline media, sliced, dehydrated, ground, sieved, packaged in polyethylene bags and stored for 60 days at room temperature. Yields ranged from 9.84 to 14.51 g of powder/100 g of rhizome with moisture varying from 8.84 to 9.86 g/100 g. Peel removal caused 30% mass loss but the powder obtained had higher intensity of yellow and red. Cooking caused a reduction in dehydration time and provided a powder with lower moisture content, higher levels of curcuminoid pigments and higher Hunter CIE L*, a* and b* values. Cooking by immersion provided higher quality powder compared to autoclave. Use of alkaline media resulted in a product with lower curcuminoid content, and higher intensity of yellow. There was no change in pigment and colour characteristics during storage.
