In the 1890s, Paris's three pre-eminent music halls – the Folies-Bergère, the Olympia, and the Casino de Paris – staged ballets on a nightly basis alongside circus acts and song-and-dance routines. As music-hall ballet librettos and scores show, these productions were closely related to ballets staged by the Paris Opéra, with similar large-scale structures, scene and dance types, and dramatic, choreographic, and musical conventions. What music-hall ballets looked like, however, is less clear: they have left few visual traces, and virtually no prose descriptions of choreography or staging. The one plentiful source of information is press reviews, but relying on reviews poses many problems for the historian. Critics’ various culturally situated viewpoints and interpretations may be used to create a composite picture of what might have been happening on stage, but they can also leave us with a hazy understanding of the genre. This paper examines the multiple and sometimes contradictory critical responses to 1890s music-hall ballets both to highlight what effect such contradictions might have on our perception of music-hall ballet (in particular as art or salacious spectacle) and to call attention to the problems inherent in using the press as a documentary source.

Musik kontemporer di Paris pada tahun 1970an didominasi oleh musik serial, dan spektralisme hadir memberi alternatif. My analysis points out the tendency of exclusivity of the serialists via what I call mechanisms of Othering, as appears in the writings of Schoenberg and Boulez. On the contrary, the view and approach of the spectral composers tend to be more inclusive towards various musical system. Spectral music proposes viewpoints that are groundbreaking on the technical and cultural level. For example, putting the focus on the inharmonic spectra as a compositional basis, which negates the obsession towards the harmonic spectra, as it is often used as a theoretical justification to frame non-Western music as being “natural” and “untouched”. If I had to sum up Martinů's opera Julietta in one word, it would be ‘strange’. Strange and wonderful, strange bordering on the weird, the otherworldly, the dream-like. This last redefinition is apt, since the opera is based on Georges Neveux's play Juliette, ou La clé des songes – the Key to Dreams, a benign nightmare where a Parisian bookseller, Michel, searches for, finds, loses and finally searches again for a girl encountered briefly three years earlier. The action opens with his return and discovery that she lives in a town where no one has much depth of memory beyond the previous ten minutes! And when random shafts of recollection from further back do occur – as in the scene in the Forest with the Wine Waiter and the Old Couple – they only add to the surrealism of the situation and Michel's deepening confusion, with that pointed imprecision so natural in dreams yet so out of place in reality.

This article follows the way the Austrian composer Dieter Kaufmann has gone with his conceptions taken from musical and extra-musical domains, as literature, visual arts, religion and politics, describing some of his theatrical works. For him the function of music is to improve the society and therefore his works are a critic to politics or to religion. Having studied in Paris by Olivier Messiaen, Pierre Schaeffer, François Bayle and René Leibowitz, he contributed to the development of the electronic music in Austria with his creation and his teaching of electroacoustic composition at the University of Music and Performing Arts in Vienna. He went further than the Parisian ‘musique concrète’, which worked with sound objects, and consciously selected and worked with objects of sound ambient in order to manage the sound environment, to musically shape it. The acousmatic art deals with sound objects, which are recorded and projected in another space, the theatre scene being an ideal space of it. A large part of his works are included in the genre of New Music Theater of the 20th and 21st century, where sound (tone and word) and movement come together, each of them having the same weight. This article addresses the transatlantic financing of pre-revolutionary French salons and the amateur music-making that featured within them. It does so by reconstructing the context of a paradigmatic image of enlightened leisure: a portrait by Louis Carrogis (known as Carmontelle) inscribed “Mlle Desgots, from Saint-Domingue, with her Black servant Laurent, 1766.” The likeness is representative of Carmontelle’s style in subject and setting. It features a fashionable noblewoman—the French-Caribbean heiress Charlotte Louise-Desgots—who plays a gilded harpsichord. What is unusual about the scene is the identity of Desgots’s interlocutor; the aristocrat poses with a teenaged valet de chambre, Laurent, whom her family had enslaved. The soundscape evoked in the drawing—the domestic repertoire of the midcentury galant—is often described as a sonorous analogue to conventions of salon politesse. And yet, Laurent’s forcible participation in the artistic exchange destabilizes this “sociable” analytic framework. Tracing Laurent’s experiences in the decades before and after the portrait was made underscores how the dynamics of Caribbean slavery were inflected in the most prestigious of Parisian cultural spaces, and through the most anodyne and “convivial” of eighteenth-century sound worlds. Like Desgots, the musical engagement Laurent demonstrated was the result of an education attained in the metropole. Unlike Desgots, this training was not gifted for the pursuit of leisure but imposed in the formation of labor, as adornment to the artistic habits of his repatriated colonial enslavers.

AbstractWhile Moulin Rouge! (2001) riffs on and even exaggerates conventions from classic Hollywood backstage musicals, it owes a clear debt to an even earlier musico-dramatic genre – the opera. Combining operatic and film musical elements with those of pop videos, contemporary cinema and the rave scene, Baz Luhrmann's film engages with many of the thorny issues that have concerned opera critics of late, such as power, gender, exoticism, authorship, and identity construction and performance. The spotlight on the central love triangle of a consumptive courtesan, a writer and a wealthy patron makes possible a deeper scrutiny of traditional gender roles in the production and reception of Western art. The film's formulaic plot and the backstage musical format render transparent the commercial impetus behind the creative process and demystify the role of the Romantic artist-genius. Finally, the transnational and transhistorical elements of the film – a mostly Australian production team and crew, American and British pop songs, a Parisian backdrop, the Bollywood-inspired show-within-a-show, numerous anachronisms that refuse to stay confined within the specified time setting of the late nineteenth century – disrupt the Classical ideals of artistic unity and integrity and suggest new postmodern geographies and temporalities. This article considers how Luhrmann, by simultaneously paying homage to and critiquing operatic practices in Moulin Rouge!, deconstructs and reinvents opera for the postmodern age.

AbstractThe purpose of this article is to demonstrate that Wassily Kandinsky’s geometrical paintings were inspired by the ballet world, and by the body movements of the ballerina. Moreover, painting and ballet communicate with each other. And geometry has helped that. Then, the idea of this article starts with the necessity in relating Kandinsky’s Spiritual theory on non-materiality exposed in Über das Geistige in der Kunst with Sergei Diaghilev’s Ballets Russes brought on Parisian scene between 1909s and 1929s. Ballets Russes is the term which names all the ballet representations thought and designed by Sergei Diaghilev after his musical-cultural conflict with Nikolai Rimski Korsakov. Starting with 1907s, Kandinsky had initiated Der Blaue Reiter group and he starts with various drawing techniques. Were favourable years in which Kandinsky’s evolution from simple drawings to sophisticated Compositions got up. We are witnessing a cultural increasement. So, the ballet, the music, the theatre and the painting can not be separated any more or, at least, or, at least, cannot be thought of separately as systems of aesthetic theory. The aesthetic evolution from ballet and theatre had influenced the evolution in painting. What we will try to show as novelty in our investigation, is the kinetic and spiritual relation between Kandinsky’s Compositions and some representations from Ballets Russes by Sergei Diaghilev, especially with the «L’Oiseau de feu». In conclusion, we want to show how the lines designed by Wassily Kandinsky are describing ballet’s movements. The methods used in our research have consisted in the inter-artistic comparison between Wassily Kandinsky’s theory of painting and the ballets designed by Sergei Diaghilev. We also brought a philosophical and personal perspective on both worlds.

Propped up in his bed, for all the world the quintessential fin-de-siècle invalid, Marcel Proust listened to the perplexing sound of music far away. He heard it from beyond the walls of his room, through a connecting tube: the famous théâtrophone, a permanent subscription telephone line that could connect Proust's apartment in the boulevard Haussmann to a number of Parisian theatres, opera houses and concert halls. The operatic scenes that succeeded in penetrating those walls were not scenes at all: they were disembodied voices, issuing instructions for the visual imagination. Those moments that progressed further — onto the pages of A la recherche du temps perdu — were of course even less corporeal: both invisible and soundless. In the passage from opera house to author to novel, who can say how much was lost? All that remains are words, hundreds of thousands of them, pouring noiselessly into a space where the music has sunk without trace; the fevered patient added reams more supplementary material (inflations, substitutions, emendations) as fast as the opera came in through the wall, papering — soundproofing — the room with words.

Abstract Among a community of Italian political leaders and artists who settled in Paris after the failed Italian revolutions of 1831 was Count Carlo Pepoli, author of the libretto for Bellini's I puritani. During his years in Paris, Pepoli also wrote the poetry for two song collections: Rossini's Soiréées musicales and Mercadante's Soiréées italiennes. Both collections are conceived as a series of picturesque images of Italian locales interspersed with pastoral scenes; they are also linked by allusions to a character named Elvira, perhaps a projection of the heroine of I puritani. This article explores the connections between the Rossini and Mercadante songs and their possible link to Bellini's opera, in relation to two distinct audiences: the Parisian salons of the 1830s, with their strong Italian expatriate presence, and the market of amateurs who purchased sheet music. In both contexts, the poetic content and musical style of the songs may have fostered favorable attitudes to Italy and to Unification, showing that even music composed for private and domestic uses could be politically influential.

AbstractIn the summer of 1828, the Entreprise générale des Dames Blanches launched a fleet of white omnibuses onto the streets of Paris. These public transportation vehicles were named and fashioned after Boieldieu's opéra comique La dame blanche (1825): their rear doors were decorated with scenes of Scotland, their flanks painted with gesturing opera characters, and their mechanical horns trumpeted fanfares through the streets. The omnibuses offered one of the first mass transportation systems in the world and were an innovation that transformed urban circulation. During their thirty years of circulation, the omnibuses also had a profound effect on the reception history of Boieldieu's opera. When the omnibuses improved the quality of working- and middle-class life, bourgeois Parisians applauded the vehicles’ egalitarian business model, and Boieldieu's opera became unexpectedly entwined in the populist rhetoric surrounding the omnibus. Viewing opera through the lens of the Dames Blanches, Parisians conflated the sounds of opera and street, as demonstrated by Charles Valentin Alkan's piano piece Les omnibus, Op. 2 (1829), which combines operatic idioms and horn calls. Through these examples and others, this study examines the complex ways that material culture affects the dissemination and reception of a musical work.

Ferdinand Hérold's 1827 ballet-pantomime La Somnambule, written for the Paris Opéra, is generally remembered today only as a source for Bellini's 1831 opera La sonnambula. However, Hérold's work – which also inspired a series of popular vaudevilles on the same theme – illustrates the strong, voyeuristic appeal of the trance phenomenon at the end of the Bourbon Restoration. It can be viewed as encapsulating wide-ranging contemporary ideas about the relationship between sleepwalking, mesmerism, madness and the supernatural. The aims of this article are twofold. First, it seeks to introduce important nuances into the received and often generalised claims usually made about the containing nature of trance scenes in nineteenth-century theatre, positing an alternative model to that of the unhinged heroine of Italian opera familiar from recent feminist writing on opera. Second, it illuminates the musical practices specific to late Restoration Paris that were so crucial to the aesthetic – and the success – of these sleepwalking heroines. A web of visual and musical allusions conjured up an entranced figure who, although related to the Italian operatic madwoman, has a personality and social implications all her own.

The ways in which artists, musicians, filmmakers and other creative practitioners perceive, navigate and represent 'place' in their work is complex and multifaceted. Further, place-based conditions also influence the ways in which creative activity occurs in particular locales. This raises questions regarding the role of history, economics, attitudes towards and perceptions of particular forms of arts and culture, shared social and creative contexts, and the geographical location of places, in shaping and fostering creativity. While the relationship between place and creative practice is now widely recognised across the social sciences, it remains poorly conceptualised at the level of specific forms of artistic and creative practices and creative industries. The aim of this issue has been, therefore, to bring together scholarship from across a range of disciplines that is concerned with the relationship between broadly defined concepts of place and creativity.This issue brings together scholars whose work examines a wide range of geographical and digital, real and imagined concepts of place, working from a wide range of locales: America, Australia, Canada, Europe, New Zealand, Singapore and the United Kingdom. Practices related to artisans, music, film, visual arts and broadly, place-specific creative economies form the focus of this issue. Such a broad spectrum of scholars and associated sectors represents the vast ways in which concepts of place all at once influence, and be influenced by, creativity, and creative and cultural practices.The first five articles of this issue examine in various ways the relationship between culture, art and the urban. In the feature article, Samuel Whiting and David Carter focus on Australian live music to consider broader issues around access to places that cultivate artistic practice, communities and audiences. Their analysis suggests three key factors which enable and constraining access to live music: public transport; social status and stage of life; and government regulation. Their findings suggest that traditional conceptions of access have limited utility when applied to live music - an important conclusion in the context of high levels of venue closures and the pressing need to foster and support place-based live music scenes.Staying on the theme of music, Robert C. Kloosterman and Amanda Brandellero consider the role of the Chelsea Hotel in New York and the Indica Bookshop and Gallery in London in the 1960s as meeting places for musicians, artists, managers and hangers-on, and thus as key social institutions in the development of the music scenes of these cities. They suggest that their central location, proximity to night clubs and venues, tolerant atmosphere towards drugs and sex, and the continuous flow of key actors, acted together to foster cultural innovation. Thus innovation can be clearly tied to particular urban places and spaces at particular times. Yet often, ‘place’ is a much more difficult concept to tie down.Saesha Senger examines the music of Paris-based French rapper, MC Solaar. Senger points to the importance of local influences on Solaar’s music, such the way in which Parisian banlieues, nightclubs, and other places figure prominently in particular songs. Yet she also notes the importance of American references, used as part of a conscious connection to rap’s lineage. Thus the mixture of the local and global is highly evident in Solaar’s music, and Senger suggests that while countries, cities, neighbourhoods, and even specific government housing developments inform the music, the identities of these places are not fixed either for the performers or for the audience. His account thus points to some of the complexities of ‘place’ as it relates to culture and cultural production under contemporary globalization.Moving beyond music, Stephen Marotta, Austin Cummings and Charles Heying also consider some of the complexities of the concept of ‘place’, with specific reference to the Artisan Economy of Portland, Oregon. Their account of the resurgence of place specificity and branding, through the notion of ‘Portland Made’, seeks to reveal an important tension immanent in the notion of place: that place is both real and imaginary. ‘Place’, they suggest, conceptually captures various intersections of materiality and mythology, aesthetics and economics, with makers actively producing Portland as both a local and global ‘place’.The paper by Joshua Syenko examines the productive relationships between art, landscape and cities as sites of collective memory. Focusing on Gibellina, a Sicilian town destroyed in 1968 by a series of earthquakes, and the subsequent struggle among its community to articulate a sense of spatial belonging with its remains, Syenko considers how memorial objects in Gibellina have become integral to the reimagining of place. Questioning the relationships forged between the history of Gibellina and its architectural presentation, the paper raises important issues about the complexity of ‘place’ with regards its ritual and memorial functions.The next three papers perform the important task of switching our attention from the urban, on which the majority of literature on place and culture has tended to focus, to consider creativity and creative production in the context of rural and ‘peripheral’ places. Elasaid Munro focuses on recent attempts to develop the creative economy in rural Scotland. Within rural communities, she suggests, there is a sense of being distant from decision makers and being isolated in terms of practice. Her findings suggest that ‘importing’ models from urban contexts is alienating and frustrating for rural creatives, who seek through their work to contribute to the development of the communities within which they are embedded, rather than engaging in creative activities merely for economic gain. Highlighting the piecemeal funding and support landscape, Munro argues that targeted, rural-specific interventions are required if the potential of the rural creative industries is to be maximised.Staying in Scotland, and also focusing on the issue of appropriate frameworks of support for the creative economy, Katherine Champion explores the relationship between place and the screen industries. She argues the need for a closer examination of the role of incentives and infrastructure investment in developing a vibrant and sustainable industry. Recent success for the screen industries in Scotland, Champion suggests, can in part be attributed to interventions including increased decentralisation of broadcasting and high-end television tax incentives. Yet, she also identifies gaps in infrastructure which continue to stymie growth and have led to production drain to other centres. Important questions are raised regarding the difficulties of establishing a rich production ecology that is far removed from the traditional ‘hub’ of the industry in London and the South East England.Moving to rural Australia, Robin Ryan considers the mobilisation of culture as a socioeconomic resource. Specifically, she focuses on the town of Northcliffe, which in 2015 found itself at the centre of the largest wildfire in the recorded history of the southwest region. In her article, Ryan highlights the importance of the local creative scene in providing a cultural and socioeconomic resource for conservation and the healing of community spirit, and draws important links between place-based social, economic and material conditions and creative practices. In particular, she highlights how the ecologically-inspired musical representation of place can act to draw out the richness and significance of place.The issue closes with two papers that consider place not only as it is constituted physically but also virtually through digital technologies. Alfio Leotta argues that the digital revolution has been characterized by the overlapping of different media technologies and platforms which have not only reshaped forms of audiovisual consumption but also conceptions of place and space. Focusing on film locations, tourism, and digital mapping tools, Leotta demonstrates how the smartphone, as a new hybrid media platform online communication and GPS capability, has begun to play to a crucial role in the construction of new notions of place. He argues that, through providing new layers of cultural meaning and alternative modes of affective engagement, apps and maps are contributing to the redefinition of both the notion of tourist destination and the construction of place identity. Such research is crucial in shedding light on the way in which contemporary leisure activities reshape the cultural, social and geographic meaning of place.Finally, Jason Luger considers how the digital realm is necessitating a reconceptualization of urban space. Focusing on the concept of ‘placeless art’ through field-research in Singapore, Luger considers the ways in which social media and other digital platforms have extended the art-scape to a new, global, hyper-connected scale. Interactive and immaterial art-making, he argues, increasingly complements, and in some cases supplants, traditional place-based artistic practice. Yet, he emphasises that despite the emergence of ‘placeless’ art-forms, specific urban sites remain crucial anchoring nodes in a critical art ecosystem. Thus, we are returned squarely to the importance of place.When taken together, this collection of articles pick up on just some of the many complexities inherent in the relationship between place, culture and cultural production, across a variety of creative practices and geographical contexts. While there is much scholarship in this area, it is clear that our understanding of these complexities remains underdeveloped. This set of articles make an important contribution in this regard. Improvisation and Compositional Process in Karl Naëgelen’s Fenêtre Ovale This paper is centred around the analysis of the creative process underlying the genesis of a recent work of music by French composer Karl Naëgelen, Fenêtre Ovale (2011), written in collaboration with two free improvisers active on the Parisian scene, Ève Risser (piano) and Joris Rühl (clarinet). This piece is remarkable in that, contrary to the vast majority of works composed in a so-called “comprovisation” framework, where the interaction between the composed and the improvised elements essentially takes place during the moments of performance, its score never actually requires any act of improvisation from its performers: the relation between improvisation and composition is thus entirely implicit, underlying the creative process itself rather than its product. Using the work’s various sketches, and the numerous improvisations realized by the two musicians over the course of the composition of Fenêtre Ovale, I show that improvisation played three distinct roles in the creative process: 1. A role of stimulation: the improvisation enables the generation of new compositional ideas; 2. An inspirational role: the ideas generated by improvisation are transferred, more or less directly, in the compositional setting; 3. A role of simulation: the improvisation is used to simulate a certain musical organization and/or to validate or invalidate a given compositional choice. But improvisation is also embedded in the compositional project itself at a deeper level: improvisation is indeed used as a model for the composition, which seeks to emulate some of its most notable aesthetic properties. This is mainly done by importing into the score some of the specific instrumental and musical gestures used by the musicians in an improvisational setting. However, this attempt to absorb improvisational gestures into composition is not straightforward: it reveals some of the fundamental differences existing between the compositional gesture and the improviser's gestures. The paper thus concludes by discussing the intrinsic paradoxes and tensions that lie at the heart of such a project. Improvisation et processus compositionnel dans la genèse de Fenêtre Ovale de Karl Naëgelen Cet article s’intéresse au processus de création d’une œuvre récente de Karl Naëgelen, Fenêtre Ovale (2011), qui a été composée en relation étroite avec un duo d’improvisateurs, Ève Risser (piano) et Joris Rühl (clarinette). Cette œuvre est remarquable en ce que, contrairement à la plupart des projets musicaux mêlant composition et improvisation, la confrontation de l’improvisation et de la composition ne se joue pas dans le moment de la restitution de l’œuvre mais bien en amont de la performance, lors de la gestation et de l’élaboration même de l’œuvre. En m’appuyant sur les multiples esquisses de l’œuvre, accompagnées des enregistrements audio des diverses séances de travail entre le compositeur et les improvisateurs, je montre que l’improvisation a pu occuper trois fonctions essentielles tout au long du processus compositionnel: 1. Une fonction de stimulation: l’improvisation permet la génération de nouvelles idées compositionnelles; 2. Mais si l’improvisation est au cœur du processus compositionnel de Fenêtre Ovale, c’est également parce que Karl Naëgelen a cherché à capturer certaines des propriétés les plus caractéristiques de l’improvisation, et à ainsi créer l’illusion d’une musique qui s’invente dans le temps de sa performance. Cela se fait principalement en incorporant dans la partition un certain nombre de gestes instrumentaux et musicaux spécifiquement utilisés par les musiciens dans un contexte d’improvisation. Introduction: Serial Space“It feels …like the edge of the world; far more remote than it actually is, perhaps because it looks at such immensity” (Godden “Black,” 38). This is the priest’s warning to Sister Clodagh in Rumer Godden’s 1939 novel Black Narcissus. The young, inexperienced Clodagh leads a group of British nuns through the Indian Himalayas and onto a remote mountain top above Mopu. Michael Powell and Emeric Pressburger adapted Godden’s novel into the celebrated feature film, Black Narcissus (1947). Following the novel, the film narrates the nuns’ mission to establish a convent, school, and hospital for the local population. Yet, immensity moves in mysterious ways. Sister Clodagh (Deborah Kerr) loses her managerial grip. Sister Philippa (Flora Robson) cultivates wild flowers instead of vegetables. Sister Ruth (Kathleen Byron) sheds nun’s attire for red lipstick and a Parisian dress. The young Indian woman Kanchi (Jean Simmons) becomes a force of libidinous disturbance. At the twilight of the British Empire, white, western nuns experience the psychical effects of colonialism at the precipice. Taking such cues from Pressburger and Powell’s film, Michelle Williams Gamaker, an artist, filmmaker, and scholar, responds to Black Narcissus, both film and novel. She does so through a radical interpretation of her own. Gamaker William’s 24-minute film, The Fruit Is There to Be Eaten (forthcoming, London 2018) is a longer “short,” which breaks the mould of what scholar Linda Hutcheon would term an “adaptation” (2006). For Hutcheon, there is a double “mode of engagement” between an original work and its adapted form (22). On the one hand, there is a “transcoding” (22). This involves “transporting” characters from a precedent work to its adapted form (11). On the other, there is an act of “creative interpretation” (22). The Fruit Is There to Be Eaten transports yet recreates the Indian “beggar girl” Kanchi, played by a “blacked up” white Hollywood actor Jean Simmons (Black Narcissus), into Williams Gamaker’s contemporary Kanchi, played by Krishna Istha. In this 2018 instalment, Kanchi is an Asian and transgender protagonist of political articulacy. Hence, Williams Gamaker’s film engages a double tactic of both transporting yet transforming Kanchi, as well as Sisters Clodagh and Philippa, from the feature film into The Fruit Is There to Be Eaten. To analyse Williams Gamaker’s film, I will make a theoretical jump off the precipice, stepping from Hutcheon’s malleable concept of adaptation into a space of “trans-serial” narrative.In what follows, I shall read The Fruit Is There to Be Eaten as an “episode” in a serial. The prior episodes, Williams Gamaker’s House of Women (London 2017, Berlin 2018) is a short, fictional, and surreal documentary about casting the role of Kanchi. It can be read as the next episode in Kanchi’s many incarnations. The relationship between Sister Clodagh (Kelly Hunter as voiceover) and Kanchi in House of Women develops from one of confrontation to a transgender kiss in the climatic beat of The Fruit Is There to Be Eaten. Williams Gamaker’s film can be read as one of a series which is itself inflected with the elements of a “trans-serial.” Henry Jenkins argues that “transmedia storytelling represents a process where integral elements of a fiction get dispersed systematically across multiple delivery channels” (emphasis in original, “Transmedia”). I use the word “trans” to define the gap between novelistic texts and film. Throughout Williams Gamaker’s series, she uses many textual citations from Godden’s novel, and dialogue from Pressburger and Powell’s film. In other words, verbal elements as well as filmic images are adapted in Hutcheon’s sense and transmediated in Jenkins’s sense. To build the “serial” concept for my analysis requires re-working concepts from television studies. Jason Mittell introduces “narrative complexity” as the “redefinition of episodic forms under serial narration” (“Narrative,” 32). In serial TV, characters and narratives develop over a sequence of episodes and seasons. In serial TV, missing one episode can thwart the viewer’s reception of later ones. Mittell’s examples reveal the plasticity of the narrative complexity concept. He mentions TV series that play games with the audience’s expectations. As Mittell points out, Seinfeld has reflexive qualities (“Narrative,” 35) and Twin Peaks mixes genres (“Narrative,” 33). I would add that Lynch’s creative liberties offered characters who could appear and disappear while leaving their arcs hanging intriguingly unresolved. The creative possibilities of reflexivity via seriality, of characters who appear and disappear or return in different guises, are strategies that underpin William’s Gamaker’s short film serial. The third in her trilogy, The Eternal Return (in post-production 2018) fictionalises the life of Sabu, the actor who played the General’s son in Black Narcissus. Once again, the protagonist, this time male, is played by Krishna Istha, a non-binary transgender actor who, by taking all the lead roles in William’s Gamaker’s trilogy, grows over the serial as a malleable ethnic and transgender subject. Importantly, The Eternal Return carries residues of the characters from The Fruit Is There to Be Eaten by casting the same team of actors again (Charlotte Gallagher and myself Catherine Lord), and switching their genders. Istha played Kanchi in the previous two episodes. The General’s son, played by Sabu, courted Kanchi in Black Narcissus. In The Eternal Return, Istha crosses the character and gender boundary by playing Sabu. Such casting tactics subvert the gender and colonial hegemonies inherent in Pressburger and Powell’s film.The reflexive and experimental approach of Williams Gamaker’s filmmaking deploys serial narrative tactics for its political goals. Yet, the use of “serial” needs to be nuanced. Glen Creeber sets out three terms: “episodic,” “series” and “serial.” For Creeber, a series provides continuous storylines in which the connection between episodes is strong. In the serial format, the connection between the episodes is less foregrounded. While it is not possible to enjoy stand-alone episodes in a serial, at the same time, serials produce inviting gaps between episodes. Final resolutions are discouraged so that there are greater narrative possibilities for later seasons and the audience’s own game of speculative storytelling (11).The emerging “serial” gaps between Williams Gamaker’s episodes offer opportunities for political interpretation. From House of Women and The Fruit Is There to Be Eaten, Kanchi develops an even stronger political voice. Kanchi’s character arc moves from the wordless obedience of Pressburger and Powell’s feature to the transgender voice of post-colonial discourse in House of Women. In the next episode, The Fruit Is There to Be Eaten, Kanchi becomes Clodagh’s guide both politically, spiritually, and erotically.I will read The Fruit Is There to Be Eaten as both my primary case-study and as the third episode in what I shall theorise to be a four-part serial. The first is the feature film Black Narcissus. After this is Williams Gamaker’s House of Women, which is then followed by The Fruit Is There to Be Eaten, my central case study here. There may be immediate objections to my argument that Williams Gamaker’s series can be read by treating Pressburger and Powell’s feature as the first in the series. After all, Godden’s novel could be theorised as the camouflaged pilot. Yet, a series or serial is defined as such when it is in the same medium. Game of Thrones (2011-) is a TV series that adapts George R.R. Martin’s novel cycle, but the novels are not episodes. In this regard, I follow Hutcheon’s emphasis on theorising adapted works as forged between different media, most commonly novels to films. The adaptive “deliveries” scatter through The Fruit Is There to Be Eaten with an ecological precision.Eco SeriesEcological descriptions from Godden’s novel and Pressburger and Powell’s mise-en-scene are performed in The Fruit Is There to Be Eaten through Kelly Hunter’s velvety voiceover as it enjoys a painterly language: butterflies daub the ferns with “spots of ochre, scarlet, and lemon sherbet.” Hutcheon’s term transcoding usefully describes the channelling of particles from the novelist’s text into an intensified, ecological language and cinematic mise-en-scene. The intensification involves an ingestion of Godden’s descriptive prose, which both mimics and adds an adjectival and alliterative density. The opening descriptions of the nuns’ arrival in Mopu is a case in point. In the novel, the grooms joke about the nuns’ habits appearing as “snows, tall and white” (Godden “Black,” 1). One man remarks that they look like “a row of teeth” (Godden “Black,” 2). Williams Gamaker resists shots of nuns as Godden described them, namely on Bhotiya ponies. Rather, projected onto a white screen is an image of white and red flowers slowly coming into focus. Kelly Hunter’s voiceover describes the white habits as a set of “pearly whites” which are “hungry for knowledge” and “eat into the landscape.” White, western nuns in white habits are metaphorically implied to be like a consuming mouth, eating into Indian territories and Indian people.This metaphor of colonial consumption finds its corollary in Godden’s memoirs where she describes the Pressburger, Powell, and Simons representation of Kanchi as “a basket of fruit, piled high and luscious and ready to eat” (“A House,” 24-5; 52). The nun’s quest colonially consumes Mopu’s natural environment. Presumably, nuns who colonially eat consume the colonised Other like fruit. The Kanchi of the feature film Black Narcissus is a supporting character, performed by Simmons as mute, feral and objectified. If Kanchi is to release herself from the “fruity” projections of sexism and racism, it will be through the filmmaker’s aesthetic and feminist tactic of ensuring that planets, trees, fruits and flowers become members of the film cast. If in episode 1 (Black Narcissus), plants and Asian subalterns are colonised, in episode 2, House of Women, these fruits and flowers turn up as smart, young Asian women actors with degrees in law and photography, ready to hold their own in the face of a faceless interviewer. In episode 3, The Fruit Is There to Be Eaten, it is important that Krishna Istha’s Kanchi, turning up like a magical character from another time and space (transformed from episode 1), commands the film set amidst an excess of flowers, plants and fruits. The visual overflow correlates with Kanchi’s assertiveness. Flowers and Kanchi know how to “answer back.”Like Black Narcissus the feature, The Fruit Is There to Be Eaten relies heavily on a mise-en-scene of horticultural and mountain ecology. Just as Michael Powell filmed at Pinewood and Leonardslee Gardens in East Sussex, Williams Gamaker used Rotherhithe’s Brunel Museum roof Gardens and Sands Film Studios. The lusciousness of Leonardslee is film-intertextually echoed in the floral exuberance of the 2018 shots of Rotherhithe. After the crew have set up the classroom, interwoven with Kelly Hunter’s voiceover, there is a hard cut to a full, cinematic shot of the Leonardslee garden (fig. 1).Then cutting back to the classroom, we see Kanchi calmly surveying the set, of which she is the protagonist, with a projection of an encyclopaedic display of the flowers behind her. The soundtrack plays the voices of young women students intoning the names of flowers from delphinium to lupens.These meta-filmic moments are supported by the film’s sharp juxtaposition between classroom and outdoor scenes. In Pressburger and Powell’s school scenes, Sister Ruth attempts to teach the young General how to conjugate the French verb “recevoir.” But the lesson is not successfully received. The young General becomes aphasic, Kanchi is predictably mute and the children remain demure. Will colonialism let the Other speak? One way to answer back in episode 3 is through that transgressive discourse, the language of flowers.In The Fruit Is There to Be Eaten, the young women study under Sister Clodagh and Sister Philippa (myself, Catherine Lord). The nuns teach botanical lists and their ecological contexts through rote learning. The young women learn unenthusiastically. What is highlighted is the ludicrous activity of repetition and abstractions. When knowledge becomes so objectified, so do natural environments, territories and people. Clodagh aligns floral species to British locations. The young women are relatively more engaged in the garden with Sister Philippa. They study their environment through sketching and painting a diverse range of flowers that could grow in non-British territory. Philippa is the now the one who becomes feral and silent, stroking stalks and petals, eschewing for the time being, the game of naming (fig. 2).However, lessons with colonial lexicons will be back. The young women look at screen projections of flowers. Sister Philippa takes the class through an alphabet: “D is for Dogbright … L is for Ladies’ Fingers.” Clodagh whirls through a list of long, Latin names for wild flowers in British Woodlands. Kanchi halts Clodagh’s act of associating the flowers with the British location, which colonizes them. Kanchi asks: “How many of us will actually travel, and which immigration border will test our botanical knowledge?” Kanchi then presents a radically different alphabet, including “Anne is African … Ian is Intersex … Lucy loves Lucy.” These are British names attributed to Africans, Arabs, and Asians, many of their identities revealed to be LGBQT-POC, non-binary, transgender, and on the move. Clodagh’s riposte is “How do you know you are not travelling already?” The flowers cannot be pinned down to one location. They cannot be owned by one nation.Like characters who travel between episodes, the travelling flowers represent a collision of spaces that undermine the hegemonies of race, gender and sexuality. In episode 1, Black Narcissus the feature film, the western nuns face the immensities of mountain atmosphere, ecology and an unfamiliar ethnic group. In episode 2, House of Women, the subalterns have transformed their role, achieving educational and career status. Such political and dramatic stakes are raised in episode 3, The Fruit Is There to Be Eaten. There is a strong focus on the overlapping oppressions of racial, colonial and ecological exploitation. Just as Kanchi has a character arc and serial development, so do plants, fauna, fruits, flowers and trees. ‘Post’-Space and Its AtmosphereThe British Empire colonised India’s ecological space. “Remember you and your God aren't on British Territory anymore” declares the auditioning Krishna Istha in House of Women. Kanchi’s calm, civil disobedience continues its migration into The Fruit is There to be Eaten between two simultaneously existing spaces, Mopu and Rotherhithe, London. According to literature scholar Brian McHale, postmodern worlds raise ontological questions about the dramatic space into which we are drawn. “Which” worlds are we in? Postmodern worlds can overlap between separate spaces and different temporalities (McHale 34-35). As McHale notes, “If entities can migrate across the semipermeable membrane that divides a fictional world from the real, they can also migrate between two different fictional worlds” (35).In The Fruit Is There to Be Eaten, the semipermeable membrane between it and Black Narcissus folds together the temporalities of 1947 and 2018, and the terrains of India and London. Sister Philippa tells a Kanchi seeking Mopu, that “My dear, you are already here.” This would seem odd as Sister Philippa describes the death of a young man close to Saint Mary’s Church, London. The British capital and woodlands and the Himalayas co-exist as intensified, inter-crossing universes that disrupt the membranes between both colonial and ecological space-time, or what I term “post-space.”Williams Gamaker’s post-spaces further develop Pressburger and Powell’s latent critique of post-colonialism. As film scholar Sarah Street has observed, Black Narcissus the film performs a “post-colonial” exploration of the waning British Empire: “Out of the persistence of the colonial past the present is inflected with a haunting resonance, creating gaps and fissures” (31). This occurs in Powell’s film in the initial Calcutta scenes. The designer Alfred Junge made “God shots” of the nuns at dinner, creating from them the iconic shape of a cross. This image produces a sense of over-exactness. Once in the mountains, it is the spirit of exactitude that deteriorates. In contrast, Williams Gamaker prefers to reveal the relative chaos of setting up her world. We watch as the crew dress the school room. Un-ceremoniously, Kanchi arrives in shorts before she picks up a floral dress bearing the label “Kanchi.” There is then a shot in which Kanchi purveys the organised set, as though she is its organiser (fig. 3).Post-spaces are rich in atmosphere. The British agent Dean tells Clodagh in Black Narcissus the film that the mountain “is no place to put a nunnery” due its “atmosphere.” In the climactic scene of The Fruit Is There to Be Eaten, Kanchi and Clodagh face two screens revealing the atmospheric projection of the high mountains, the black cut between them visible, like some shadowy membrane. Such aesthetic strategies continue Powell’s use of technical artifice. Street details the extensive labour of technical and craft work involved in creating the artificial world of Black Narcissus, its mountains, artificial colours, and hence atmosphere, all constructed at Pinewood studios. There was a vast amount of matte painting and painting on glass for special effects (19).William Gamaker’s screens (projection work by Sophie Bramley and Nick Jaffe) reflexively emphasise atmosphere as artifices. The atmosphere intensifies with the soundscape of mountain air and Wayne Urquhart’s original and haunting music. In Powell and Pressburger’s feature, Brian Easdale’s music also invokes a sense of mystery and vastness. Just as TV series and serials maintain musical and mise-scene-scene signatures from one episode to another, so too does Williams Gamaker reframe her precursor’s cinematic aesthetics with that of her own episode. Thus, serial as stylistic consistency is maintained between episodes and their post-spaces.At the edge of such spaces, Kanchi will scare Clodagh by miming a tight-rope walk across the mountain: it is both real and pretend, dramatic, but reflexively so. Kanchi walks a membrane between colliding worlds, between colonialism and its transgression. In this episode of extreme spirituality and eroticism, Kanchi reaches greater heights than in previous episodes, discoursing on the poetics of atmosphere: “… in the midst of such peaks, one can draw near what is truly placeless … the really divine.” Here, the membrane between the political and cultural regions and the mountains that eschew even the human, is about to be breached. Kanchi relates the legend of those who go naked in the snow. These “Abominable Men” are creatures who become phantoms when they merge with the mountain. If the fractures between locations are too spacious, as Kanchi warns, one can go mad. In this episode 3, Kanchi and Clodagh may have completed their journeys. In Powell and Pressburger’s interpretation, Sister Ruth discards nun’s attire for a Parisian, seductive dress and red lipstick. Yet, she does so for a man, Dean. However, the Sister Clodagh of 2018 is filmed in a very long take as she puts on an elegant dress and does her make-up. In a scene of philosophical intimacy with Kanchi, the newly dressed Clodagh confesses her experience of “immensity.” As they break through the erotic membrane separating their identities, both immersed in their full, queer, transgender kiss, all racial hierarchies melt into atmosphere (fig. 4).Conclusion: For a Pitch By making a film as one episode in a series, Williams Gamaker’s accomplishment is to enhance the meeting of narrative and political aims. As an arthouse film serial, The Fruit Is There to Be Eaten has enabled definitions of “serial” to migrate from the field of television studies. Between Hutcheon’s “adaptation” and Mittell and Creeber’s articulations of “narrative complexity,” a malleable concept for arthouse seriality has emerged. It has stretched the theoretical limits of what can be meant by a serial in an arthouse context. By allowing the notion of works “adapted” to occur between different media, Henry Jenkins’ broader term of “transmedia storytelling” (Convergence) can describe how particles of Godden’s work transmigrate through episodes 1, 2, and 3, where the citational richness emerges most in episodes 3, The Fruit Is There to Be Eaten.Because one novel informs all the episodes while each has entirely different narratives and genres, The Fruit Is There to Be Eaten is not a serial adaptation, as is Game of Thrones. It is an experimental serial inflected with trans-serial properties. Kanchi evolves into a postcolonial, transgender, ecological protagonist who can traverse postmodern worlds. Perhaps the witty producer in a pitch meeting might say that in its serial context, The Fruit Is There to Be Eaten is like a cross between two fantasy TV serials, still to be written: Transgender Peaks meets Kanchi Is the New Black. IntroductionCoffee, as a stimulant, and the spaces in which it is has been consumed, have long played a vital role in fostering communication, creativity, and sociality. This article explores the interrelationship of café space, communication, creativity, and materialism. In developing these themes, this article is structured in two parts. The first looks back to the coffee houses of the seventeenth and eighteenth centuries to give a historical context to the contemporary role of the café as a key site of creativity through its facilitation of social interaction, communication and information exchange. The second explores the continuation of the link between cafés, communication and creativity, through an instance from the mid-twentieth century where this process becomes individualised and is tied more intrinsically to the material surroundings of the café itself. From this, we argue that in order to understand the connection between café space and creativity, it is valuable to consider the rich polymorphic material and aesthetic composition of cafés. The Social Life of Coffee: London’s Coffee Houses While the social consumption of coffee has a long history, here we restrict our focus to a discussion of the London coffee houses of the seventeenth and eighteenth centuries. It was during the seventeenth century that the vogue of these coffee houses reached its zenith when they operated as a vibrant site of mercantile activity, as well as cultural and political exchange (Cowan; Lillywhite; Ellis). Many of these coffee houses were situated close to the places where politicians, merchants, and other significant people congregated and did business, near government buildings such as Parliament, as well as courts, ports and other travel route hubs (Lillywhite 17). A great deal of information was shared within these spaces and, as a result, the coffee house became a key venue for communication, especially the reading and distribution of print and scribal publications (Cowan 85). At this time, “no coffee house worth its name” would be without a ready selection of newspapers for its patrons (Cowan 173). By working to twenty-four hour diurnal cycles and heightening the sense of repetition and regularity, coffee houses also played a crucial role in routinising news as a form of daily consumption alongside other forms of habitual consumption (including that of coffee drinking). In Cowan’s words, “restoration coffee houses soon became known as places ‘dasht with diurnals and books of news’” (172). Among these was the short-lived but nonetheless infamous social gossip publication, The Tatler (1709-10), which was strongly associated with the London coffee houses and, despite its short publication life, offers great insight into the social life and scandals of the time. The coffee house became, in short, “the primary social space in which ‘news’ was both produced and consumed” (Cowan 172). The proprietors of coffee houses were quick to exploit this situation by dealing in “news mongering” and developing their own news publications to supplement their incomes (172). They sometimes printed news, commentary and gossip that other publishers were not willing to print. However, as their reputation as news providers grew, so did the pressure on coffee houses to meet the high cost of continually acquiring or producing journals (Cowan 173; Ellis 185-206). In addition to the provision of news, coffee houses were vital sites for other forms of communication. For example, coffee houses were key venues where “one might deposit and receive one’s mail” (Cowan 175), and the Penny Post used coffeehouses as vital pick-up and delivery centres (Lillywhite 17). As Cowan explains, “Many correspondents [including Jonathan Swift] used a coffeehouse as a convenient place to write their letters as well as to send them” (176). This service was apparently provided gratis for regular patrons, but coffee house owners were less happy to provide this for their more infrequent customers (Cowan 176). London’s coffee houses functioned, in short, as notable sites of sociality that bundled together drinking coffee with news provision and postal and other services to attract customers (Cowan; Ellis). Key to the success of the London coffee house of the seventeenth and eighteenth centuries was the figure of the virtuoso habitué (Cowan 105)—an urbane individual of the middle or upper classes who was skilled in social intercourse, skills that were honed through participation in the highly ritualised and refined forms of interpersonal communication, such as visiting the stately homes of that time. In contrast to such private visits, the coffee house provided a less formalised and more spontaneous space of sociality, but where established social skills were distinctly advantageous. A striking example of the figure of the virtuoso habitué is the philosopher, architect and scientist Robert Hooke (1635-1703). Hooke, by all accounts, used the opportunities provided by his regular visits to coffee houses “to draw on the knowledge of a wide variety of individuals, from servants and skilled laborers to aristocrats, as well as to share and display novel scientific instruments” (Cowan 105) in order to explore and develop his virtuoso interests. The coffee house also served Hooke as a place to debate philosophy with cliques of “like-minded virtuosi” and thus formed the “premier locale” through which he could “fulfil his own view of himself as a virtuoso, as a man of business, [and] as a man at the centre of intellectual life in the city” (Cowan 105-06). For Hooke, the coffee house was a space for serious work, and he was known to complain when “little philosophical work” was accomplished (105-06). Sociality operates in this example as a form of creative performance, demonstrating individual skill, and is tied to other forms of creative output. Patronage of a coffee house involved hearing and passing on gossip as news, but also entailed skill in philosophical debate and other intellectual pursuits. It should also be noted that the complex role of the coffee house as a locus of communication, sociality, and creativity was repeated elsewhere. During the 1600s in Egypt (and elsewhere in the Middle East), for example, coffee houses served as sites of intensive literary activity as well as the locations for discussions of art, sciences and literature, not to mention also of gambling and drug use (Hattox 101). While the popularity of coffee houses had declined in London by the 1800s, café culture was flowering elsewhere in mainland Europe. In the late 1870s in Paris, Edgar Degas and Edward Manet documented the rich café life of the city in their drawings and paintings (Ellis 216). Meanwhile, in Vienna, “the kaffeehaus offered another evocative model of urban and artistic modernity” (Ellis 217; see also Bollerey 44-81). Serving wine and dinners as well as coffee and pastries, the kaffeehaus was, like cafés elsewhere in Europe, a mecca for writers, artists and intellectuals. The Café Royal in London survived into the twentieth century, mainly through the patronage of European expatriates and local intellectuals such as Wyndham Lewis, Ezra Pound, T. S. Elliot, and Henri Bergson (Ellis 220). This pattern of patronage within specific and more isolated cafés was repeated in famous gatherings of literary identities elsewhere in Europe throughout the twentieth century. From this historical perspective, a picture emerges of how the social functions of the coffee house and its successors, the espresso bar and modern café, have shifted over the course of their histories (Bollerey 44-81). In the seventeenth and eighteenth centuries, the coffee house was an important location for vibrant social interaction and the consumption and distribution of various forms of communication such as gossip, news, and letters. However, in the years of the late nineteenth and early twentieth centuries, the café was more commonly a site for more restricted social interaction between discrete groups. Studies of cafés and creativity during this era focus on cafés as “factories of literature, inciters to art, and breeding places for new ideas” (Fitch, The Grand 18). Central in these accounts are bohemian artists, their associated social circles, and their preferred cafés de bohème (for detailed discussion, see Wilson; Fitch, Paris Café; Brooker; Grafe and Bollerey 4-41). As much of this literature on café culture details, by the early twentieth century, cafés emerge as places that enable individuals to carve out a space for sociality and creativity which was not possible elsewhere in the modern metropolis. Writing on the modern metropolis, Simmel suggests that the concentration of people and things in cities “stimulate[s] the nervous system of the individual” to such an extent that it prompts a kind of self-preservation that he terms a “blasé attitude” (415). This is a form of “reserve”, he writes, which “grants to the individual a [certain] kind and an amount of personal freedom” that was hitherto unknown (416). Cafés arguably form a key site in feeding this dynamic insofar as they facilitate self-protectionism—Fitch’s “pool of privacy” (The Grand 22)—and, at the same time, produce a sense of individual freedom in Simmel’s sense of the term. That is to say, from the early-to-mid twentieth century, cafés have become complex settings in terms of the relationships they enable or constrain between living in public, privacy, intimacy, and cultural practice. (See Haine for a detailed discussion of how this plays out in relation to working class engagement with Paris cafés, and Wilson as well as White on other cultural contexts, such as Japan.) Threaded throughout this history is a clear celebration of the individual artist as a kind of virtuoso habitué of the contemporary café. Café Jama Michalika The following historical moment, drawn from a powerful point in the mid-twentieth century, illustrates this last stage in the evolution of the relationship between café space, communication, and creativity. This particular historical moment concerns the renowned Polish composer and conductor Krzysztof Penderecki, who is most well-known for his avant-garde piece Threnody to the Victims of Hiroshima (1960), his Polymorphia (1961), and St Luke Passion (1963-66), all of which entailed new compositional and notation techniques. Poland, along with other European countries devastated by the Second World War, underwent significant rebuilding after the war, also investing heavily in the arts, musical education, new concert halls, and conservatoria (Monastra). In the immediate post-war period, Poland and Polish culture was under the strong ideological influence exerted by the Soviet Union. However, as Thomas notes, within a year of Stalin’s death in 1953, “there were flickering signs of moderation in Polish culture” (83). With respect to musical creativity, a key turning point was the Warsaw Autumn Music Festival of 1956. “The driving force” behind the first festival (which was to become an annual event), was Polish “composers’ overwhelming sense of cultural isolation and their wish to break the provincial nature of Polish music” at that time (Thomas 85). Penderecki was one of a younger generation of composers who participated in, and benefited from, these early festivals, making his first appearance in 1959 with his composition Strophes, and successive appearances with Dimensions of Time and Silence in 1960, and Threnody in 1961 (Thomas 90). Penderecki married in the 1950s and had a child in 1955. This, in combination with the fact that his wife was a pianist and needed to practice daily, restricted Penderecki’s ability to work in their small Krakow apartment. Nor could he find space at the music school which was free from the intrusion of the sound of other instruments. Instead, he frequented the café Jama Michalika off the central square of Krakow, where he worked most days between nine in the morning and noon, when he would leave as a pianist began to play. Penderecki states that because of the small space of the café table, he had to “invent [a] special kind of notation which allowed me to write the piece which was for 52 instruments, like Threnody, on one small piece of paper” (Krzysztof Penderecki, 2000). In this, Penderecki created a completely new set of notation symbols, which assisted him in graphically representing tone clustering (Robinson 6) while, in his score for Polymorphia, he implemented “novel graphic notation, comparable with medical temperature charts, or oscillograms” (Schwinger 29) to represent in the most compact way possible the dense layering of sounds and vocal elements that is developed in this particular piece. This historical account is valuable because it contributes to discussions on individual creativity that both depends on, and occurs within, the material space of the café. This relationship is explored in Walter Benjamin’s essay “Polyclinic”, where he develops an extended analogy between the writer and the café and the surgeon and his instruments. As Cohen summarises, “Benjamin constructs the field of writerly operation both in medical terms and as a space dear to Parisian intellectuals, as an operating table that is also the marble-topped table of a café” (179). At this time, the space of the café itself thus becomes a vital site for individual cultural production, putting the artist in touch with the social life of the city, as many accounts of writers and artists in the cafés of Paris, Prague, Vienna, and elsewhere in Europe attest. “The attraction of the café for the writer”, Fitch argues, “is that seeming tension between the intimate circle of privacy in a comfortable room, on the one hand, and the flow of (perhaps usable) information all around on the other” (The Grand 11). Penderecki talks about searching for a sound while composing in café Jama Michalika and, hearing the noise of a passing tram, subsequently incorporated it into his famous composition, Threnody (Krzysztof Penderecki, 2000). There is an indirect connection here with the attractions of the seventeenth century coffee houses in London, where news writers drew much of their gossip and news from the talk within the coffee houses. However, the shift is to a more isolated, individualistic habitué. Nonetheless, the aesthetic composition of the café space remains essential to the creative productivity described by Penderecki. A concept that can be used to describe this method of composition is contained within one of Penderecki’s best-known pieces, Polymorphia (1961). The term “polymorphia” refers not to the form of the music itself (which is actually quite conventionally structured) but rather to the multiple blending of sounds. Schwinger defines polymorphia as “many formedness […] which applies not […] to the form of the piece, but to the broadly deployed scale of sound, [the] exchange and simultaneous penetration of sound and noise, the contrast and interflow of soft and hard sounds” (131). This description also reflects the rich material context of the café space as Penderecki describes its role in shaping (both enabling and constraining) his creative output. Creativity, Technology, Materialism The materiality of the café—including the table itself for Penderecki—is crucial in understanding the relationship between the forms of creative output and the material conditions of the spaces that enable them. In Penderecki’s case, to understand the origins of the score and even his innovative forms of musical notation as artefacts of communication, we need to understand the material conditions under which they were created. As a fixture of twentieth and twenty-first century urban environments, the café mediates the private within the public in a way that offers the contemporary virtuoso habitué a rich, polymorphic sensory experience. In a discussion of the indivisibility of sensation and its resistance to language, writer Anna Gibbs describes these rich experiential qualities: sitting by the window in a café watching the busy streetscape with the warmth of the morning sun on my back, I smell the delicious aroma of coffee and simultaneously feel its warmth in my mouth, taste it, and can tell the choice of bean as I listen idly to the chatter in the café around me and all these things blend into my experience of “being in the café” (201). Gibbs’s point is that the world of the café is highly synaesthetic and infused with sensual interconnections. The din of the café with its white noise of conversation and overlaying sounds of often carefully chosen music illustrates the extension of taste beyond the flavour of the coffee on the palate. In this way, the café space provides the infrastructure for a type of creative output that, in Gibbs’s case, facilitates her explanation of expression and affect. The individualised virtuoso habitué, as characterised by Penderecki’s work within café Jama Michalika, simply describes one (celebrated) form of the material conditions of communication and creativity. An essential factor in creative cultural output is contained in the ways in which material conditions such as these come to be organised. As Elizabeth Grosz expresses it: Art is the regulation and organisation of its materials—paint, canvas, concrete, steel, marble, words, sounds, bodily movements, indeed any materials—according to self-imposed constraints, the creation of forms through which these materials come to generate and intensify sensation and thus directly impact living bodies, organs, nervous systems (4). Materialist and medium-oriented theories of media and communication have emphasised the impact of physical constraints and enablers on the forms produced. McLuhan, for example, famously argued that the typewriter brought writing, speech, and publication into closer association, one effect of which was the tighter regulation of spelling and grammar, a pressure toward precision and uniformity that saw a jump in the sales of dictionaries (279). In the poetry of E. E. Cummings, McLuhan sees the typewriter as enabling a patterned layout of text that functions as “a musical score for choral speech” (278). In the same way, the café in Penderecki’s recollections both constrains his ability to compose freely (a creative activity that normally requires ample flat surface), but also facilitates the invention of a new language for composition, one able to accommodate the small space of the café table. Recent studies that have sought to materialise language and communication point to its physicality and the embodied forms through which communication occurs. As Packer and Crofts Wiley explain, “infrastructure, space, technology, and the body become the focus, a move that situates communication and culture within a physical, corporeal landscape” (3). The confined and often crowded space of the café and its individual tables shape the form of productive output in Penderecki’s case. Targeting these material constraints and enablers in her discussion of art, creativity and territoriality, Grosz describes the “architectural force of framing” as liberating “the qualities of objects or events that come to constitute the substance, the matter, of the art-work” (11). More broadly, the design features of the café, the form and layout of the tables and the space made available for individual habitation, the din of the social encounters, and even the stimulating influences on the body of the coffee served there, can be seen to act as enablers of communication and creativity. Conclusion The historical examples examined above indicate a material link between cafés and communication. They also suggest a relationship between materialism and creativity, as well as the roots of the romantic association—or mythos—of cafés as a key source of cultural life as they offer a “shared place of composition” and an “environment for creative work” (Fitch, The Grand 11). We have detailed one example pertaining to European coffee consumption, cafés and creativity. While we believe Penderecki’s case is valuable in terms of what it can tell us about forms of communication and creativity, clearly other cultural and historical contexts may reveal additional insights—as may be found in the cases of Middle Eastern cafés (Hattox) or the North American diner (Hurley), and in contemporary developments such as the café as a source of free WiFi and the commodification associated with global coffee chains. Penderecki’s example, we suggest, also sheds light on a longer history of creativity and cultural production that intersects with contemporary work practices in city spaces as well as conceptualisations of the individual’s place within complex urban spaces. From an interview with “Mr A”, executive producer and co-creator of the Getaway in Stockholm (GiS) films: Mr A: Yeah, when I tell my girlfriend, ‘You should watch this, it’s good, it’s a classic, it’s an old movie’ and she thinks it’s, like, the worst. And when I actually look at it and it is the worst, it is just a car chase … [Laughs] But you have to look a lot harder, to how it is filmed, you have to learn … Because, you can’t watch car racing for instance, because they are lousy at filming; you get no sensation of speed. If you watch the World Rally Championship it looks like they go two miles an hour. The hardest thing [of the whole thing] is capturing the speed … I want to engage with the notion of “speed” in terms of the necessary affects of automobility, but first I will give some brief background information on the Getaway in Stockholm series of films. Most of the information on the films is derived from the interview with Mr A carried out over dinner in Stockholm, October 2004. Contact was made via e-mail and I organised with the editors of Autosalon Magazine for an edited transcription to be published as an incentive to participate in the interview. Mr A’s “Tarantino-style” name is necessary because the films he makes with Mr X (co-creator) and a small unnamed group of others involve filming highly illegal acts: one or two cars racing through the streets of Stockholm evading police at sustained speeds well over 200 km/h. Due to a quirk in Swedish traffic law, unless they are caught within a certain time frame of committing driving offences or they actually admit to the driving offences, then they cannot be charged. The Swedish police are so keen to capture these renegade film makers that when they appeared on Efterlyst (pron: ef-de-list; the equivalent of “Sweden’s Most Wanted”) instead of the normal toll-free 1-800 number that viewers could phone to give tips, the number on the screen was the direct line to the chief of Stockholm’s traffic unit. The original GiS film (2000) was made as a dare. Mr A and some friends had just watched Claude Lelouch’s 1976 film C’était un Rendez-vous. Rumour has it that Lelouch had a ten-minute film cartridge and had seen how a gyro stabilised camera worked on a recent film. He decided to make use of it with his Ferrari. He mounted the camera to the bonnet and raced through the streets of Paris. In typical Parisian style at the end of the short nine minute film the driver parks and jumps from the Ferrari to embrace a waiting woman for their “rendezvous”. Shortly after watching the film someone said to Mr A, “you don’t do that sort of thing in Stockholm”. Mr A and Mr X set out to prove him wrong. Nearly all the equipment used in the filming of the first GiS film was either borrowed or stolen. The Porsche used in the film (like all the cars in the films) was lent to them. The film equipment consisted of, in Mr A’s words, a “big ass” television broadcast camera and a smaller “lipstick” camera stolen from the set of the world’s first “interactive” reality TV show called The Bar. (The Bar followed a group of people who all lived together in an apartment and also worked together in a bar. The bar was a “real” bar and served actual customers.) The first film was made for fun, but after Mr A and his associates received several requests for copies they decided to ramp up production to commercial levels. Mr A has a “real job” working in advertising; making the GiS films once a year is his main job with his advertising job being on a self-employed, casual basis. As a production team it is a good example of amateurs becoming semi-professionals within the culture industries. The GiS production team distributes one film per year under the guise of being a “documentary” which allows them to escape the wrath of Swedish authorities due to further legal quirks. Although they still sell DVDs from their Website, the main source of income comes from the sale of the worldwide distribution rights to British “powersports” specialist media company Duke Video. Duke also sells a digitally remastered DVD version of Rendezvous on their Website. As well as these legitimate distribution methods, copies of all six GiS films and Rendezvous are available on the internet through various peer-to-peer file-sharing networks. Mr A says there isn’t much he can do about online file sharing besides asking people to support the franchise if they like the films by buying the DVDs. There are a number of groups making films for car enthusiast using similar guerilla film production methods. However, most of the films are one-offs or do not involve cars driven at such radical speeds. An exception was another Swedish film maker who called himself “Ghostrider” and who produced similar films using a motorbike. Police apprehended a man who they alleged is “Ghostrider” in mid-2004 within the requisite timeframe of an offence that had been allegedly committed. The GiS films alongside these others exist within the automotive cultural industry. The automotive cultural industry is a term I am using to describe the overlap between the automotive industry and the cultural industries of popular culture. The films tap in to a niche market of car enthusiasts. There are many different types of car enthusiasts, everything from petite-bourgeois vintage-car restorers to moral panic-inducing street racers. Obviously the GiS films are targeted more towards the street racing end of the spectrum, which is not surprising because Sweden has a very developed underground street racing scene. A good example is the Stockholm-based “Birka Cup”: a quasi-professional multi-round underground street-racing tournament with 60,000 SEK (approx. AUD$11,000) prize money. The rules and rankings for the tournament are found on the tournament Website. To give some indication of what goes on at these events a short teaser video clip for the 2003 Birka Cup DVD is also available for download from the Website. The GiS films have an element of the exotic European-Other about them, not only because of the street-racing pedigree exemplified by the Birka Cup and similar underground social institutions (such as another event for “import” street racers called the “Stockholm Open”), but because they capture an excess within European car culture normally associated with exotic supercars or the extravagant speeds of cars driven on German autobahns or Italian autostradas. For example, the phrase “European Styling” is often used in Australia to sell European designed “inner-city” cars, such as the GM Holden Barina, a.k.a. the Vauxhall Corsa or the Opel Corsa. Cars from other regional manufacturing zones often do not receive such a specific regional identification; for example, cars built in Asian countries are described as “fully imported” rather than “Asian styling”. Tom O’Dell has noted that dominant conception of automobility in Sweden is different to that of the US. That is, “automobility” needs to be qualified with a national or local context and I assume that other national contexts in Europe would equally be just as different. However, in non-European, mainly post-colonial contexts, such as Australia, the term “European” is an affectation signaling something special. On a different axis, “excess” is directly expressed in the way the police are “captured” in the GiS films. Throughout the GiS series there is a strongly antagonist relation to the police. The initial pre-commercial version of the first GiS film had NWA’s “Fuck the Police” playing over the opening credits. Subsequent commercially-released versions of the film had to change the opening title music due to copyright infringement issues. The “bonus footage” material of subsequent DVDs in the series represents the police as impotent and foolish. Mr A describes it as a kind of “prank” played on police. His rationale is that they live out the fantasy that “everyone” wishes they could do to the police when they are pulled over for speeding and the like; as he puts it, “flipping the bird and driving off”. The police are rendered foolish and captured on film, which is an inversion of the normative traffic-cop-versus-traffic-infringer power relation. Mr A specifies the excess of European modernity to something specific to automobility, which is the near-universal condition of urbanity in most developed nations. The antagonism between the GiS drivers and the police is figured as a duel. The speed of the car(s) obviously exceeds what is socially and legally acceptable and therefore places the drivers in direct conflict with police. The speed captured on film is in part a product of this tension and gives speed a qualitative cultural dimension beyond a simple notion from rectilinear physics of speed as a rate of motion. The qualitative dimension of speed as been noted by Peter Wollen: Speed is not simply thrilling in itself, once sufficiently accelerated, but also enables us to enter exposed and unfamiliar situations, far removed from the zones of safety and normality – to travel into space, for instance, beyond the frontiers of the known. (106) Knowledge is subsumed by the dialect of road safety: “safety” versus “speed”. Knowledge takes on many forms and it is here that speed gains its complexity. In the high-school physics of rectilinear motion speed refers to a rate. Mr A discusses speed as a sensation (“thrill” in the language of Wollen) in the quote at the beginning of the essay. If the body develops sensations from affects and percepts (Deleuze and Guattari 179-83), then what are the affects and percepts that are developed by the body into the sensation of speed? The catchphrase for the GiS films is “Reality Beats Fiction By Far!” The “reality” at stake here is not only the actuality of cars traveling at high speeds within urban spaces, which in the vernacular of automotive popular culture is more “real” than Hollywood representations, but the “reality” of automobilised bodies engaging with and “getting away” from the police. Important here is that the police serve as the symbolic representatives of the governmental institutions and authorities that regulate and discipline populations to be automobilised road users. The police are principally symbolic because one’s road-user body is policed, to a large degree, by one’s self; that is, by the perceptual apparatus that enables us to judge traffic’s rates of movement and gestures of negotiation that are indoctrinated into habit. We do this unthinkingly as part of everyday life. What I want to suggest is that the GiS films tap into the part of our respective bodily perceptual and affective configurations that allow us to exist as road users. To explain this I need to go on a brief detour through “traffic” and its relation to “speed”. Speed serves a functional role within automobilised societies. Contrary to the dominant line from the road safety industry, the “speed limit” we encounter everyday on the road is not so much a limit, but a guide for the self-organisation of traffic. To think the “speed limit” as a limit allows authorities to imagine a particular movement-based threshold of perception and action that bestows upon drivers the ability to negotiate the various everyday hazard-events that constitute the road environment. This is a negative way to look at traffic and is typical of the (post)modernist preoccupation with incorporating contingency (“the accident”) into behavioural protocol and technical design (Lyotard 65-8). It is not surprising that the road safety industry is an exemplary institution of what Gilles Deleuze called the “control society”. The business of the road safety industry is the perpetual modulation of road user populations in a paradoxical attempt to both capture (forecast and study) the social mechanics of the accident-event while postponing its actualisation. Another way to look at traffic is to understand it as a self-organising system. Ilya Prigogine and Robert Herman modeled vehicle traffic as two flows – collective and individual – as a function of the concentration and speed of vehicles. At a certain tipping point the concentration of traffic is such that individual mobility is subsumed by the collective. Speed plays an important role both in the abstract sense of a legislated “speed limit” and as the emergent consistency of mobile road users distributed in traffic. That is, automotive traffic does not move at a constant speed, but nominally moves at a consistent speed. The rate and rhythms of traffic have a consistency that we all must become familiar with to successfully negotiate the everyday system of automobility. For example, someone simply walking becomes a “pedestrian” in the duration of automobilised time-space. Pedestrians must embody a similar sense of the rate of traffic as that perceived by drivers in the cars that constitute traffic. The pedestrian uses this sense of speed when negotiating traffic so as to cross the road, while the driver uses it to maintain a safe distance from the car in front and so on. The shared sense of speed demands an affective complicity of road-user bodies to allow them to seamlessly incorporate themselves into the larger body of traffic on a number of different registers. When road users do not comply with this shared sense of speed that underpins traffic they are met with horn blasts, rude figure gestures, abuse, violence and so on. The affects of traffic are accelerated in the body and developed by the body into the sensations and emotions of “road rage”. Road users must performatively incorporate the necessary dispositions for participating with other road users in traffic otherwise they disrupt the affective script (“habits”) for the production of traffic. When I screened the first GiS film in a seminar in Sweden the room was filled with the sound of horrified gasps. Afterwards someone suggested to me that they (the Swedes) were more shocked than I (an Australian) about the film. Why? Is it because I am a “hoon”? We had all watched the same images heard the same sounds, yet, the “speeds” were not equal. They had experienced the streets in the film as a part of traffic. Their bodies knew just how slow the car was meant to be going. The film captured and transmitted the affects of a different automobilised body. Audiences follow the driver “getting away” from those universally entrusted (at least on a symbolic level) with the governance of traffic – the police – while, for a short period, becoming a new body that gets away from the “practiced perception” (Massumi 189) of habits that normatively enable the production of traffic. What is captured in the film – the event of the getaway – has the potential to develop in the body of the spectator as the sensation of “speed” and trigger a getaway of the body. Introduction With a deluge of mouthwatering pre-publicity, the opening of The Spotted Pig, the USA’s first self-identified British-styled gastropub, in Manhattan in February 2004 was much anticipated. The late Australian chef, food writer and restauranteur Mietta O’Donnell has noted how “taking over a building or business which has a long established reputation can be a mixed blessing” because of the way that memories “can enrich the experience of being in a place or they can just make people nostalgic”. Bistro Le Zoo, the previous eatery on the site, had been very popular when it opened almost a decade earlier, and its closure was mourned by some diners (Young; Kaminsky “Feeding Time”; Steinhauer & McGinty). This regret did not, however, appear to affect The Spotted Pig’s success. As esteemed New York Times reviewer Frank Bruni noted in his 2006 review: “Almost immediately after it opened […] the throngs started to descend, and they have never stopped”. The following year, The Spotted Pig was awarded a Michelin star—the first year that Michelin ranked New York—and has kept this star in the subsequent annual rankings. Writing Restaurant Biography Detailed studies have been published of almost every type of contemporary organisation including public institutions such as schools, hospitals, museums and universities, as well as non-profit organisations such as charities and professional associations. These are often written to mark a major milestone, or some significant change, development or the demise of the organisation under consideration (Brien). Detailed studies have also recently been published of businesses as diverse as general stores (Woody), art galleries (Fossi), fashion labels (Koda et al.), record stores (Southern & Branson), airlines (Byrnes; Jones), confectionary companies (Chinn) and builders (Garden). In terms of attracting mainstream readerships, however, few such studies seem able to capture popular reader interest as those about eating establishments including restaurants and cafés. This form of restaurant life history is, moreover, not restricted to ‘quality’ establishments. Fast food restaurant chains have attracted their share of studies (see, for example Love; Jakle & Sculle), ranging from business-economic analyses (Liu), socio-cultural political analyses (Watson), and memoirs (Kroc & Anderson), to criticism around their conduct and effects (Striffler). Eric Schlosser’s Fast Food Nation: The Dark Side of the All-American Meal is the most well-known published critique of the fast food industry and its effects with, famously, the Rolling Stone article on which it was based generating more reader mail than any other piece run in the 1990s. The book itself (researched narrative creative nonfiction), moreover, made a fascinating transition to the screen, transformed into a fictionalised drama (co-written by Schlosser) that narrates the content of the book from the point of view of a series of fictional/composite characters involved in the industry, rather than in a documentary format. Akin to the range of studies of fast food restaurants, there are also a variety of studies of eateries in US motels, caravan parks, diners and service station restaurants (see, for example, Baeder). Although there has been little study of this sub-genre of food and drink publishing, their popularity can be explained, at least in part, because such volumes cater to the significant readership for writing about food related topics of all kinds, with food writing recently identified as mainstream literary fare in the USA and UK (Hughes) and an entire “publishing subculture” in Australia (Dunstan & Chaitman). Although no exact tally exists, an informed estimate by the founder of the Gourmand World Cookbook Awards and president of the Paris Cookbook Fair, Edouard Cointreau, has more than 26,000 volumes on food and wine related topics currently published around the world annually (ctd. in Andriani “Gourmand Awards”). The readership for publications about restaurants can also perhaps be attributed to the wide range of information that can be included a single study. My study of a selection of these texts from the UK, USA and Australia indicates that this can include narratives of place and architecture dealing with the restaurant’s location, locale and design; narratives of directly food-related subject matter such as menus, recipes and dining trends; and narratives of people, in the stories of its proprietors, staff and patrons. Detailed studies of contemporary individual establishments commonly take the form of authorised narratives either written by the owners, chefs or other staff with the help of a food journalist, historian or other professional writer, or produced largely by that writer with the assistance of the premise’s staff. These studies are often extensively illustrated with photographs and, sometimes, drawings or reproductions of other artworks, and almost always include recipes. Two examples of these from my own collection include a centennial history of a famous New Orleans eatery that survived Hurricane Katrina, Galatoire’s Cookbook. Written by employees—the chief operating officer/general manager (Melvin Rodrigue) and publicist (Jyl Benson)—this incorporates reminiscences from both other staff and patrons. The second is another study of a New Orleans’ restaurant, this one by the late broadcaster and celebrity local historian Mel Leavitt. The Court of Two Sisters Cookbook: With a History of the French Quarter and the Restaurant, compiled with the assistance of the Two Sisters’ proprietor, Joseph Fein Joseph III, was first published in 1992 and has been so enduringly popular that it is in its eighth printing. These texts, in common with many others of this type, trace a triumph-over-adversity company history that incorporates a series of mildly scintillating anecdotes, lists of famous chefs and diners, and signature recipes. Although obviously focused on an external readership, they can also be characterised as an instance of what David M. Boje calls an organisation’s “story performance” (106) as the process of creating these narratives mobilises an organisation’s (in these cases, a commercial enterprise’s) internal information processing and narrative building activities. Studies of contemporary restaurants are much more rarely written without any involvement from the eatery’s personnel. When these are, the results tend to have much in common with more critical studies such as Fast Food Nation, as well as so-called architectural ‘building biographies’ which attempt to narrate the historical and social forces that “explain the shapes and uses” (Ellis, Chao & Parrish 70) of the physical structures we create. Examples of this would include Harding’s study of the importance of the Boeuf sur le Toit in Parisian life in the 1920s and Middlebrook’s social history of London’s Strand Corner House. Such work agrees with Kopytoff’s assertion—following Appadurai’s proposal that objects possess their own ‘biographies’ which need to be researched and expressed—that such inquiry can reveal not only information about the objects under consideration, but also about readers as we examine our “cultural […] aesthetic, historical, and even political” responses to these narratives (67). The life story of a restaurant will necessarily be entangled with those of the figures who have been involved in its establishment and development, as well as the narratives they create around the business. This following brief study of The Spotted Pig, however, written without the assistance of the establishment’s personnel, aims to outline a life story for this eatery in order to reflect upon the pig’s place in contemporary dining practice in New York as raw foodstuff, fashionable comestible, product, brand, symbol and marketing tool, as well as, at times, purely as an animal identity. The Spotted Pig Widely profiled before it even opened, The Spotted Pig is reportedly one of the city’s “most popular” restaurants (Michelin 349). It is profiled in all the city guidebooks I could locate in print and online, featuring in some of these as a key stop on recommended itineraries (see, for instance, Otis 39). A number of these proclaim it to be the USA’s first ‘gastropub’—the term first used in 1991 in the UK to describe a casual hotel/bar with good food and reasonable prices (Farley). The Spotted Pig is thus styled on a shabby-chic version of a traditional British hotel, featuring a cluttered-but-well arranged use of pig-themed objects and illustrations that is described by latest Michelin Green Guide of New York City as “a country-cute décor that still manages to be hip” (Michelin 349). From the three-dimensional carved pig hanging above the entrance in a homage to the shingles of traditional British hotels, to the use of its image on the menu, website and souvenir tee-shirts, the pig as motif proceeds its use as a foodstuff menu item. So much so, that the restaurant is often (affectionately) referred to by patrons and reviewers simply as ‘The Pig’. The restaurant has become so well known in New York in the relatively brief time it has been operating that it has not only featured in a number of novels and memoirs, but, moreover, little or no explanation has been deemed necessary as the signifier of “The Spotted Pig” appears to convey everything that needs to be said about an eatery of quality and fashion. In the thriller Lethal Experiment: A Donovan Creed Novel, when John Locke’s hero has to leave the restaurant and becomes involved in a series of dangerous escapades, he wants nothing more but to get back to his dinner (107, 115). The restaurant is also mentioned a number of times in Sex and the City author Candace Bushnell’s Lipstick Jungle in relation to a (fictional) new movie of the same name. The joke in the book is that the character doesn’t know of the restaurant (26). In David Goodwillie’s American Subversive, the story of a journalist-turned-blogger and a homegrown terrorist set in New York, the narrator refers to “Scarlett Johansson, for instance, and the hostess at the Spotted Pig” (203-4) as the epitome of attractiveness. The Spotted Pig is also mentioned in Suzanne Guillette’s memoir, Much to Your Chagrin, when the narrator is on a dinner date but fears running into her ex-boyfriend: ‘Jack lives somewhere in this vicinity […] Vaguely, you recall him telling you he was not too far from the Spotted Pig on Greenwich—now, was it Greenwich Avenue or Greenwich Street?’ (361). The author presumes readers know the right answer in order to build tension in this scene. Although this success is usually credited to the joint efforts of backer, music executive turned restaurateur Ken Friedman, his partner, well-known chef, restaurateur, author and television personality Mario Batali, and their UK-born and trained chef, April Bloomfield (see, for instance, Batali), a significant part has been built on Bloomfield’s pork cookery. The very idea of a “spotted pig” itself raises a central tenet of Bloomfield’s pork/food philosophy which is sustainable and organic. That is, not the mass produced, industrially farmed pig which produces a leaner meat, but the fatty, tastier varieties of pig such as the heritage six-spotted Berkshire which is “darker, more heavily marbled with fat, juicier and richer-tasting than most pork” (Fabricant). Bloomfield has, indeed, made pig’s ears—long a Chinese restaurant staple in the city and a key ingredient of Southern US soul food as well as some traditional Japanese and Spanish dishes—fashionable fare in the city, and her current incarnation, a crispy pig’s ear salad with lemon caper dressing (TSP 2010) is much acclaimed by reviewers. This approach to ingredients—using the ‘whole beast’, local whenever possible, and the concentration on pork—has been underlined and enhanced by a continuing relationship with UK chef Fergus Henderson. In his series of London restaurants under the banner of “St. John”, Henderson is famed for the approach to pork cookery outlined in his two books Nose to Tail Eating: A Kind of British Cooking, published in 1999 (re-published both in the UK and the US as The Whole Beast: Nose to Tail Eating), and Beyond Nose to Tail: A Kind of British Cooking: Part II (coauthored with Justin Piers Gellatly in 2007). Henderson has indeed been identified as starting a trend in dining and food publishing, focusing on sustainably using as food the entirety of any animal killed for this purpose, but which mostly focuses on using all parts of pigs. In publishing, this includes Hugh Fearnley-Whittingstall’s The River Cottage Meat Book, Peter Kaminsky’s Pig Perfect, subtitled Encounters with Some Remarkable Swine and Some Great Ways to Cook Them, John Barlow’s Everything but the Squeal: Eating the Whole Hog in Northern Spain and Jennifer McLagan’s Fat: An Appreciation of a Misunderstood Ingredient, with Recipes (2008). In restaurants, it certainly includes The Spotted Pig. So pervasive has embrace of whole beast pork consumption been in New York that, by 2007, Bruni could write that these are: “porky times, fatty times, which is to say very good times indeed. Any new logo for the city could justifiably place the Big Apple in the mouth of a spit-roasted pig” (Bruni). This demand set the stage perfectly for, in October 2007, Henderson to travel to New York to cook pork-rich menus at The Spotted Pig in tandem with Bloomfield (Royer). He followed this again in 2008 and, by 2009, this annual event had become known as “FergusStock” and was covered by local as well as UK media, and a range of US food weblogs. By 2009, it had grown to become a dinner at the Spotted Pig with half the dishes on the menu by Henderson and half by Bloomfield, and a dinner the next night at David Chang’s acclaimed Michelin-starred Momofuku Noodle Bar, which is famed for its Cantonese-style steamed pork belly buns. A third dinner (and then breakfast/brunch) followed at Friedman/Bloomfield’s Breslin Bar and Dining Room (discussed below) (Rose). The Spotted Pig dinners have become famed for Henderson’s pig’s head and pork trotter dishes with the chef himself recognising that although his wasn’t “the most obvious food to cook for America”, it was the case that “at St John, if a couple share a pig’s head, they tend to be American” (qtd. in Rose). In 2009, the pigs’ head were presented in pies which Henderson has described as “puff pastry casing, with layers of chopped, cooked pig’s head and potato, so all the lovely, bubbly pig’s head juices go into the potato” (qtd. in Rose). Bloomfield was aged only 28 when, in 2003, with a recommendation from Jamie Oliver, she interviewed for, and won, the position of executive chef of The Spotted Pig (Fabricant; Q&A). Following this introduction to the US, her reputation as a chef has grown based on the strength of her pork expertise. Among a host of awards, she was named one of US Food & Wine magazine’s ten annual Best New Chefs in 2007. In 2009, she was a featured solo session titled “Pig, Pig, Pig” at the fourth Annual International Chefs Congress, a prestigious New York City based event where “the world’s most influential and innovative chefs, pastry chefs, mixologists, and sommeliers present the latest techniques and culinary concepts to their peers” (Starchefs.com). Bloomfield demonstrated breaking down a whole suckling St. Canut milk raised piglet, after which she butterflied, rolled and slow-poached the belly, and fried the ears. As well as such demonstrations of expertise, she is also often called upon to provide expert comment on pork-related news stories, with The Spotted Pig regularly the subject of that food news. For example, when a rare, heritage Hungarian pig was profiled as a “new” New York pork source in 2009, this story arose because Bloomfield had served a Mangalitsa/Berkshire crossbreed pig belly and trotter dish with Agen prunes (Sanders) at The Spotted Pig. Bloomfield was quoted as the authority on the breed’s flavour and heritage authenticity: “it took me back to my grandmother’s kitchen on a Sunday afternoon, windows steaming from the roasting pork in the oven […] This pork has that same authentic taste” (qtd. in Sanders). Bloomfield has also used this expert profile to support a series of pork-related causes. These include the Thanksgiving Farm in the Catskill area, which produces free range pork for its resident special needs children and adults, and helps them gain meaningful work-related skills in working with these pigs. Bloomfield not only cooks for the project’s fundraisers, but also purchases any excess pigs for The Spotted Pig (Estrine 103). This strong focus on pork is not, however, exclusive. The Spotted Pig is also one of a number of American restaurants involved in the Meatless Monday campaign, whereby at least one vegetarian option is included on menus in order to draw attention to the benefits of a plant-based diet. When, in 2008, Bloomfield beat the Iron Chef in the sixth season of the US version of the eponymous television program, the central ingredient was nothing to do with pork—it was olives. Diversifying from this focus on ‘pig’ can, however, be dangerous. Friedman and Bloomfield’s next enterprise after The Spotted Pig was The John Dory seafood restaurant at the corner of 10th Avenue and 16th Street. This opened in November 2008 to reviews that its food was “uncomplicated and nearly perfect” (Andrews 22), won Bloomfield Time Out New York’s 2009 “Best New Hand at Seafood” award, but was not a success. The John Dory was a more formal, but smaller, restaurant that was more expensive at a time when the financial crisis was just biting, and was closed the following August. Friedman blamed the layout, size and neighbourhood (Stein) and its reservation system, which limited walk-in diners (ctd. in Vallis), but did not mention its non-pork, seafood orientation. When, almost immediately, another Friedman/Bloomfield project was announced, the Breslin Bar & Dining Room (which opened in October 2009 in the Ace Hotel at 20 West 29th Street and Broadway), the enterprise was closely modeled on the The Spotted Pig. In preparation, its senior management—Bloomfield, Friedman and sous-chefs, Nate Smith and Peter Cho (who was to become the Breslin’s head chef)—undertook a tasting tour of the UK that included Henderson’s St. John Bread & Wine Bar (Leventhal). Following this, the Breslin’s menu highlighted a series of pork dishes such as terrines, sausages, ham and potted styles (Rosenberg & McCarthy), with even Bloomfield’s pork scratchings (crispy pork rinds) bar snacks garnering glowing reviews (see, for example, Severson; Ghorbani). Reviewers, moreover, waxed lyrically about the menu’s pig-based dishes, the New York Times reviewer identifying this focus as catering to New York diners’ “fetish for pork fat” (Sifton). This representative review details not only “an entree of gently smoked pork belly that’s been roasted to tender goo, for instance, over a drift of buttery mashed potatoes, with cabbage and bacon on the side” but also a pig’s foot “in gravy made of reduced braising liquid, thick with pillowy shallots and green flecks of deconstructed brussels sprouts” (Sifton). Sifton concluded with the proclamation that this style of pork was “very good: meat that is fat; fat that is meat”. Concluding remarks Bloomfield has listed Michael Ruhlman’s Charcuterie as among her favourite food books. Publishers Weekly reviewer called Ruhlman “a food poet, and the pig is his muse” (Q&A). In August 2009, it was reported that Bloomfield had always wanted to write a cookbook (Marx) and, in July 2010, HarperCollins imprint Ecco publisher and foodbook editor Dan Halpern announced that he was planning a book with her, tentatively titled, A Girl and Her Pig (Andriani “Ecco Expands”). As a “cookbook with memoir running throughout” (Maurer), this will discuss the influence of the pig on her life as well as how to cook pork. This text will obviously also add to the data known about The Spotted Pig, but until then, this brief gastrobiography has attempted to outline some of the human, and in this case, animal, stories that lie behind all businesses.
