pH was measured early post mortem in longissimus muscle (and occasionally in semimembranosus muscle) in the slaughterline of six Belgian slaughtering plants in three or four sessions. Mean pH values differed according to the mode of expression: pH means calculated after transformation to hydrogen ion concentrations were always lower than means calculated directly from pH values. The differences was linearly dependent on the variance, meaning that transformation of pH values to hydrogen ion concentrations is strongly recommended when comparing mean values of groups with unequal variances. Large differences in pH means were found between slaughterhouses that could not be attributed to differences in time of measuring postmortem and that were probably not related to differences in the slaughtering procedure. On the other hand, negative relationships were apparent between carcass quality data (lean content and instrumental or visual conformation score) and pH values between as well as within all slaughtering plants. Although no exact information was available on the preslaughter treatment of the animals, it is suggested that the genetic antagonism between carcass quality and meat quality is the main source of the fairly high proportion of low initial pH values and inferior meat quality in Belgian slaughter pigs.

Microbial contamination in chicken meat is caused by unsanitary practices during slaughtering in poultry slaughtering house. Poultry slaughtering house need to apply Good Manufacturing Practice (GMP) and Sanitation Standard Operating Procedure (SSOP) system to produce the standard microbial requirements of meat. This study was aimed to evaluate the implementation of GMP and SSOP and categorize 30 slaughtering houses located in Bogor. Observation was carried out in 4 modern slaughtering houses (RPH-U) and 26 traditional slaughtering houses (TPH-U). Parameter evaluation was determined based on the Indonesian national standard SNI 01-6160-1999 and the veterinary control certificates which consisted of eight aspects of GMP and six aspects of SSOP. The categorization was clustered in five levels. The results showed that modern slaughtering houses were categorized into 1st and 2nd level, whilst traditional slaughtering houses were categorized into 2nd and 3rd level. The highest incompliance of GMP in modern slaughtering house was the waste treatment aspect (31%) and in traditional slaughtering house was the cold storage presence aspect (95%). The highest incompliance of SSOP in modern slaughtering house was the sanitation facilities and avoiding cross-contamination aspect (21%) and in traditional slaughtering house was the cleanliness of food contact surface aspect (97%). There are some recommendations for improvement the fulfillment of GMP and SSOP aspects based on the critical parameters. This review investigates about most commonly adopted slaughtering techniques and their comparison with that of the technique, portrayed by Islam. The customary methods of animal slaughtering involve stunning. Ritual kosher which resembles with halal slaughtering method but do not include Tasmiyah, the other one is jhatka slaughtering method which obeys killing of animal by severing the head with single stroke of axe or sword. Whereas, the Islamic slaughtering manner, commonly known as Zabiha, obligates the cut of trachea, food pipe, carotid artery and jugular vein, while reciting the Holy name of Allah. The review framed the documentations of some researches, which clearly reveal that stunning, ritual kosher and jhatka slaughtering cause poor meat quality, highly prone to bacterial attacks, congestion of meat, reduction in shelf life, as well as more the suffering of animal which is clearly against the animal welfare as claimed by some antagonist lobbyists.

Islamic study defined Halal meat as a “thoyyiban” (clean) food source. Halal meat is produced by following slaughtering procedure as determined by the Islamic jurisprudence. Slaughtering methods have gained a worldwide discussion as animal welfare becomes a concern. However, there is lacking of scientific facts to prove which slaughtering methods produce better physiological effects on animals from metabolomics view. Therefore, metabolomics approach by Liquid Chromatography-Time of Flight-Mass Spectrometry (LC-TOF-MS) was used in this study to understand how the metabolites in poultry change when subjected to different slaughtering processes. The broiler chickens were subjected to Halal (Islamic tradition) and non-Halal slaughtering method (neck poking) where pectoral major muscle tissues from the slaughtered meat were selected for UHPLC-TOF-MS analysis. Metabolome data highlighted multiple pathways affected by slaughtering methods including glucose, amino acid, inosine, hypoxanthine and arginine. Higher utilization of energy in non-Halal slaughtering process was observed as indicated by the increase of gluconeogenesis and amino acid breakdown. The result from this study indicated that the method of slaughter affects the metabolites profile of poultry.

In December 2020 the Court of Justice of the EU approved the legality of a decree, adopted by the Flemish Region in Belgium, which introduced an outright ban on slaughtering of animals by means of traditional Jewish and Muslim rites. The Court, which did not adopt the opinion of Advocate General Hogan, effectively nullified an express derogation for ritual slaughtering found in the EU’s regulation on slaughtering. This article will critically examine the Judgment, arguing that it has not only misinterpreted EU regulations, but also compromised the rights of European minorities to religious freedom under the Charter on the basis of questionable and inconsistent arguments of animal welfare. Slaughtering is a method used to obtain food from farmed animals. Chicken slaughter is one of important factors affevting the halal and nutritional quality of meat. Chicken meat slaughtered is done according to islamic sharia and not according to Islamic sharia. Slaughtering is carried out according to islamic or halal sharia according LPPOM-MUI (2008). The storage time for food is a period of time that is safe and suitable for consumption in food and can be used by consumers according to their needs and can maintain the state of the food that is packed. Determine the quality of chicken meat whether or not accepted by consumers affect the physical, chemical and biological quality. The study aims to determine the effect of slaughtering methoda (according to Islamic sharia and not according to Islamic sharia) and duration of storage on the quality of chicken meat. This research uses factorial randomized block design (RBD) consisting of 2 factors. The first factor is the method of slaughtering, namely slaughtering by Islamic sharia and slaughtering not by Islamic sharia (neck slaughter broken). Slaughtering by Islamic sharia is chicken slaughtering in RPA that is halal certified, while slaughtering is not by Islamic sharia is chicken slaughtered in RPA that is certified not halal. The second factor is storage time, which is 0 hours (control), 3 hours, 6 hours and 9 hours. The result of this study showed that slaughter had a very significantly affected (P 0,01) on skin color. The treatmment duration significantly affected (P 0,05) on water content and suppleness. Research shows that the quality of chicken meat slaughtered according to Islamic sharia (P1) is better than meat slaughtered not according to Islamic sharia, especially in terms of; as higher skin color. Abstract Traditional home slaughtering of animals is a widespread social practice in the Western Balkans, bringing together families, neighbours, and friends, and contributing to the rise of social capital. Bosnia and Herzegovina is a multicultural country where traditional home slaughtering of animals is mostly practised as seasonal slaughtering by Christian communities and as religious slaughtering by Muslim communities. In the framework of existing EU legislation, meat that comes from home slaughtering can be used for private consumption only. However, these rules are not fully aligned with the practices existing on the ground. This article argues that the Western Balkans’ integration into the EU can affect the sustainability of these practices, and it is therefore necessary to amend the relevant legislation and policies to ensure the implementation of EU regulations while respecting the traditional way of communal meat sharing.

Eid al-Adha is an annual Muslim celebration throughout the world indicated by sacrificing animals such as cattles, goats or sheep. This study aimed to analyse the distribution of slaughtering points, types and the number of animals being slaughtered as well as antemortem and postmortem abnormalities of the carcasses during Eid al-Adha 1440 H in Malang City. Data were collected from the geocode service location and the secondary data were obtained through questionnaire. This study listed a total of 145 slaughtering points located in Blimbing, Kedung Kandang, Klojen, Lowokwaru, and Sukun District with 3102 animals being sacrificed. The slaughtering points were taken place in the office yards, mosque yards, home yards, school yards or other public fields. As many as 75.86% of slaughtering points provided special shelters for the animals before being slaughtered. The antemortem examination resulted that animals from 21.38% of the slaughtering points suffered from conjunctivitis, lesions on the skin, broken horns, and lameness. Proportions of apparent postmortem abnormalities were measured respectively: cattle 64.83%, goat 41.38%, and sheep 4.14%. Hence, we recommend to further involve the veterinarians to monitor the animal condition during Eid al-Adha and to ensure the slaughtering processes were done properly.

Some broiler chicken owners still ignore the slaughtering process in accordance with Islamic sharia. This research is a field research, namely research conducted at the location that is the object of research, namely Cigasong Traditional Market, Majalengka Regency. In this research the method used is interview.From the research, it was concluded that: slaughtering by Rabani Slaughter House in the Cigasong traditional market, which was slaughtered by Mr. Lalan's employees, the slaughtering process was in accordance with MUI Fatwa number 12 of 2009 concerning Halal Slaughter Certification Certification Standards. Regarding slaughtering of slaughtered chickens, the implementation of slaughtering carried out at Rabani Chicken slaughterhouses in the Cigasong traditional market has all been met with Halal Slaughtering Certification Standards. Then it is suggested: The owner of the slaughterhouse at the Cigasong traditional market must pay attention and ensure the slaughter, For the Majalengka Ulema Council should pay regular visits to the place of broiler sellers in the Cigasong traditional market against Halal Slaughter Certification Standards. Is it already running, implemented and implemented by every owner of the Chicken House.</p>

Effect of breed and sex on analysed quality parameters of beef carcasses The aim of this study was to determine level of the influence of breed and sex, as well as their interaction on slaughtering traits of beef halves. The study was conducted on 80 beef cattle of which 40 were Simmental (20 male and 20 female) and 40 beef cattle (20 male and 20 female) were meat crossbreeds of Charolais, Limousin, Blonde d’Aquitaine cattle. Sex had a significant effect on slaughtering traits (P&lt;0,001). Male of beef cattle had a significantly more favorable parameter values of weight slaughtering halves and netto daily weight gain (P&lt;0,001). The breed had also a significant impact on slaughtering parameters (P&lt;0,001). Significantly better parameter values of weight slaughtering halves, netto daily weight gain and dressing percentage were found in a group of crossbred beef cattle (P&lt;0,001). Therefore, from the obtained results it can be concluded that the crossbreed cattle had a significantly better quality of beef halves (P&lt;0,001).

In the current pandemic situation, it is necessary to pay attention to the procedure of slaughtering animal qurban so that their implementation is in accordance with health protocols. This is to make the slaughter of animal qurban in accordance with Islamic law and minimize the pread of covid 19. The data analysis technique in this study was descriptive quantitative with purposive sampling and the analyzed using research instruments. The result show that the public already understands the health protocol for slaughtering animal qurban during pandemic in New Normal. This can been that 92% of the understanding of the slaughter animals is very good. In conclusion, offices generally know health protocol and are able to apply them to sacritificial animal slaughtering activities.

The subject of halal slaughtering is one of the most widely discussed issues of animal cruelty and animal welfare in the public sphere. The discrepancy in understanding the contemporary and religious laws pertaining to animal slaughtering does not fully publicize to Islamic and Muslim majority countries especially with respect to interpreting the use of stunning in animals. The electrical stunning is the cheapest, easiest, safest, and most suitable method for slaughtering that is widespread and developed. However, stunning on head of poultry before being slaughtered is a controversial aspect among the Islamic sects due to regulations of the European Union and some other countries. The current review highlights the instructions of halal slaughtering, legal legislation, and the effect of this global practice on poultry welfare and the quality of produced meat.

In 1995 and 1996 a nine-month study was carried out in 11 pig abattoirs located in the Molise region (Italy) to evaluate the degree of contamination of- the slaughterhouse environment, work surfaces, equipment, and personnel by Salmonella spp., Listeria spp., and Yersinia spp. A total of 219 samples were taken over three replications including slaughtering floor and wall, hooks, work-tables, chopping blocks, knives, cleavers, dehairing devices, hands of personnel, clothing, hand-wash basins, and cold room handles, floor, wall, and hooks. Overall, six abattoirs (54.5%) had one or more positive sites, while only 14 of the 219 sites (6.4%) tested were positive for any of considered microorganisms. Salmonella spp. were isolated from 1 of 9 cleavers (11.1 %), 1 of 16 worktables (6.25%), and 1 of 18 slaughtering floors (5.6%). Yersinia enterocolitica was found on 3 slaughtering floors (16.7%) and on 2 worktables (12.5%). Yersinia kristensenii was detected on 2 slaughtering floor swabs (11.1 %). Listeria monocytogenes was isolated from 2 of 20 cold room floor swabs (13.3%) and from 1 of 14 hand-wash basins (7.1%). Other species of Listeria were detected on slaughtering wall and floor swabs and on chopping blocks. Our study indicates that slaughtering floors, cold room floors, and worktables are important sites in abattoirs that may possibly harbor pathogens like Salmonella spp., Yersinia enterocolitica, and Listeria monocytogenes, and that cleaning and sanitizing of the slaughterhouse environment and equipment need a greater emphasis.

SUMMARY This study evaluated the characteristics of carcass and commercial cuts of Santa Ines lambs of different biotypes (traditional and modern) slaughtered at 32 kg and 34 kg. The thirty-six Santa Ines sheep used, of which 18 traditional and 18 modern biotypes were on average 180 days old and weighed 16 kg initially. The animals were kept in individual stalls (0.80 × 1.20 m) until they reached the slaughtering weight. The experimental design was completely randomized, factorial 2×2 (two biotypes x two slaughtering weights). The traditional biotype influenced significantly (P<0.05) the carcass yields, conformation, and marbling, compared to the modern biotype. The biotype did not influence (P> 0.05) carcass morphometric measurements and commercial cuts. On the other hand, the 34-kg slaughtering weight affected most of carcass characteristics. The traditional biotype displayed higher yield, better conformation and greater amount of intramuscular fat in the carcass. The higher slaughtering weight influenced carcass characteristics and the amount of fat. Generally, the carcasses presented high muscle proportion and fat amount appropriate to the consumer.

The aim of the article was to compare sheep meat production in Austria and Poland. The level of sheep population in both countries was similar. The sources of the materials were a literature review and data obtained from Statistics Austria and Statistics Poland. The research period concerned the years 1992–2018. Methods of data analysis were used, such as constant dynamics indicators, Gini coefficient and Lorenzo curve, Pearson correlation coefficients. A number of differences were found, e.g. in the direction of changes in the size of the sheep population, the scale of total slaughtering and industrial slaughtering, the share of self-supply in total meat production, traditional consumption of lamb during holidays, the average carcass weight of sheep, prices of lamb meat, interdependence of the sheep population with changes in economic parameters. The similarities concerned the level of concentration of the sheep population and their regional slaughtering, prejudices regarding the consumption of lamb, the share of lambs in slaughtering and meat production, the productivity of meat obtained from the slaughter of sheep.

Cattle slaughtering and postmortem handing practices in Nigerian abattoris and markets were investigated. The study revaled poor pre- and post slaughter handling of cattle and carcass. The abattoirs were inadequately were inadequately equipped and maintained. The abbattors were characterized by lack of running tap water and proper waste disposal facilities. A critical assessment of the slaughtering process in the abattoirs when compared with the standard method showed a total absence of stunning (necessary for humance slaughtering) and aging or ripening (Which enhances tenderness and juiciness of meat) unit operations. The beef marketing chain was also found to be poorly organized and managed with associated poor preservation and storage facilities. Suggestions for improvement were also discussed.

Objectives: Islamic Slaughtering is one of the issues by which the servant becomes close to Allah in accordance with what is stipulated in the legal texts. The reason for the choice of the study is that the Muslim should be aware of what he/she eats or drinks. Therefore, the study came in accordance with the rules of doctrinal and legal provisions. The main objective is to clarify the doctrinal controls and the legal rulings related to slaughtering. Methods: The research applied three approaches, namely inductive, descriptive, and analytical. The material investigated related to the subject of Islamic slaughtering was drawn from the doctrinal and jurisprudential perspectives, by clarifying the legality of the sacrifices of the People of the Book, clarifying the views of the jurisprudential schools on the issue, and defining the term Islamic Slaughtering. Results: The research finds that the sacrifices of the People of the Book are permissible for all legal texts, and that the sacrifice is not valid unless the name of Allah is uttered, even if it is in a language other than the Arabic. Conclusions: The researcher recommends that Muslims should ask about Islamic Slaughtering because it is an act of worshipping Allah the Almighty. The sacrifices of the People of the Book are not problematic because it is a solution for Muslims. Thus, it is crucial that Muslims ensure that meat imported from non-Muslim countries was slaughtered according to Islamic rules

This study was conducted to evaluate foetal/pregnancy losses following slaughtering of food animals at Nsukka Municipal Abattoir Enugu State, Nigeria over a period of three months (April to June). The pregnancy status of each animal was determined tentatively by visual observation and by palpation of the exposed uterus after slaughtering. Attempts were made to recover embryos from dams with structures suggestive of pregnancy by flushing. Foetuses were recovered from slaughtered cattle, goats and pigs. The ages of recovered foetuses were determined and grouped according to the stage of gestation. A total of 2711 animals were slaughtered within the study period which comprised 1303 (48.06%) cattle, 756 (27.89%) pigs and 652 (24.05%) goats. The percentages of female animals slaughtered were 19.41, 49.74 and 91.26 for cattle, pigs and goals, respectively. Of these figures, 7.43%, 8.78% and 40.34% of cows, sows and does were pregnant, respectively. Similarly of the 78 uteri flushed, 4, 10 and 7 embryos were recovered from cattle, pigs and goats. The slaughtering of these pregnant animals resulted in loss of 605 foetuses; 417 goats, 174 pigs and 14 cattle, respectively. This amounts to possible economic losses of N5, 946,000.00 or $37,396.23. Reasons advanced for slaughtering of these pregnant animals included financial needs, scarcity and or high cost of feed and ignorance of the physiological status of the animals. It was concluded from the study that to reduce foetal losses in Nsukka area, educating the farmers, provision of portable pregnancy diagnostic facilities and enforcing the law prohibiting slaughtering of pregnant animals are vital.

Investigations were carried out on three groups of kids of Serbian White breed as follows: group of lighter kids, average body mass at slaughtering 12,65 kg (8,8 - 15,0 kg) and average age of 70 days; group of medium heavy kids, body mass of 17,61 kg (15,1 - 20,0 kg) and average age of 97 days, and group of heavy kids, body mass prior to slaughtering of 22,70 kg (20,1 - 25,7 kg) and average age of 129 days. Objective of this research was to determine the meat yield (dressing percentage) and share of some slaughtering products in the mass prior to slaughtering and share of giblets in the mass of chilled carcass. It was established that heavier kids have lower dressing percentage (55,01%) compared to lighter (57,21%) and medium heavy kids (58, 21%), more favorable conformation evaluation (4,22 points in heavier, 3,77 points in medium heavy and 3,52 points in lighter kids), better covering of carcass with fat tissue (3,71 points in heavier, 3,66 points in medium heavy and 3,32 points in lighter kids) and better evaluation of the meat color (4,78 points in heavier, 4,66 points in medium heavy and 3,79 points in lighter kids). Share of edible giblets/offal (pre-stomach, small intestines, mesentherium) in the mass of carcass prior to slaughtering was higher in lighter kids (6,45%) compared to medium heavy (5,83%) and heavy kids (6,15%). Share of giblets/offal in chilled carcass was the lowest (15,91%) in heavy kids, slightly higher (17,16%) in medium heavy and the highest in lighter kids (18,86%).

Air sampling of Onyearugbulem and FUTA abattoirs was carried out to evaluate their quality. Air sampling was done using the open-settling method on general and selective agar media of the gutter, sleeping bench, slaughtering floor dumpsite, slaughtering table and roof of the abattoirs. Using standard methods, Presumptive identification of the bacterial isolates was carried out. An array of ten (10) conventional antibiotics was used to assay the antibiotic susceptibility characteristics of the bacterial isolates. Multiple antibiotic sensitivity index (MARI) was determined for isolated bacteria. At Onyearugbulem abattoir, the total Escherichia coli count ranged from 3.6×10 cfu/ml from the gutter and slaughtering table to 6.5×10 cfu/ml from the slaughtering floor, while the total bacterial count ranged from 1.34×102 cfu/ml from dumpsite to 2.55×102 cfu/ml from the gutter, the total coliform count ranged from 2.8× 10 cfu/ml from slaughtering floor to 4.1×10 cfu/ml from sleeping bench. Several bacteria were presumptively isolated. These include: Micrococcus sp., Bacillus sp., Staphylococcus aureus, Escherichia coli, Proteus sp., Enterobacter aerogenes and Aeromonas sp. Ciprofloxacin (10 µg) had an inhibitory effect on all the Gram positive bacterial isolates with the highest inhibitory activity on S. aureus at 24.00 mm, and the Gram negative bacteria with the highest inhibitory activity on E. coli at 21.00 mm. Micrococcus sp. had the highest MARI of 0.8. These findings reveal the presence of multiple-antibiotic resistant bacteria in Onyearugbulem and FUTA abattoirs’ atmosphere. There is therefore need for routine environmental sanitation of the slaughterhouses.

The effect of different genotypes, sires and season on age at slaughtering mass of warm carcass sides, fat thickness measured on three points (withers back, rump) and percentage of meat in warm carcass sides of average mass of 74,17kg using Yugoslav standard method was investigated in this paper. Results obtained show that investigated traits had no variation between pigs of different genotype (P>0,05). Sires effected variation of age at slaughtering, fat thickness (withers, back, rump, back + rump) and percentage of meat in warm carcass sides of offspring (P<0,01). Slaughter season effected fat thickness measured on withers (P<0,01) and age at slaughtering (P<0,05). Age, fat thickness and percentage of meat depended on the mass of warm carcass sides. Evaluated heritability coefficients for investigated traits were in interval of medium to high.

Ammonium molybdate modified bentonite was prepared from bentonite using ammonium molybdate as modified agent, which was used to remove several industrial effluents. It is used in the pretreatment of monosodium glutamate wastewater, slaughtering wastewater and beer wastewater which have high concentration of COD. The suitable reaction condition is ensured and the treatment effects for the treated effluents are compared by ammonium Molybdate-modified Bentonite. The result shows that the ammonium molybdate-modified bentonite is better than other flocculants. The COD removal rate of monosodium glutamate wastewater, slaughtering wastewater and beer wastewater could reach 55.40%, 96.32%, 93.23% respectively. The treatment of slaughtering wastewater is the best and all treated effects meet the pretreatment requirement. Ammonium molybdate-modified bentonite is applied to several industrial effluents in different business. It is a new type flocculant with good flocculation effect and wide application.

This study, carried out between October 2016 and June 2018, aimed to assess the impact of slaughtering practices on the prevalence of Salmonella in poultry carcasses slaughtered in Bamako markets. It involved 8 slaughterhouses grouped into two categories (A and B). Slaughterhouses classified in category A (75%) were characterized by unsatisfactory hygienic practices. On the other hand, those classified in category B (25%) respected certain principles and standards of slaughter. The prevalence of Salmonella observed in category A slaughterhouse (15.97%) is high compared to that of category B (7.29%). The results of this study have made it possible to establish that the risk factors at the origin of the contamination of poultry products are, among other things, the non-application of basic hygiene rules in the markets and at the level of poultry slaughterhouses, the non-application of good slaughtering practices and the use of rudimentary instruments for slaughtering.

Traditional knowledge in food security is important for achieving sustainable food production systems. One example of food security is tenderness and meat quality. This article investigates the lack of Sámi reindeer herders' knowledge of meat tenderness and explores its relation to gastronomy and food sovereignty. Sámi family-produced reindeer meat is regarded as tender, while such meat is rarely available for visiting tourists. Therefore, a multidisciplinary approach combines different knowledge of meat tenderness in this article. When slaughtering in cold temperatures, a common slaughtering procedure is performed: dievás njuovvat (slaughtering reindeer outdoors on the ground) and bakkahit (a deliberate action of reindeer herder to leave the rumen inside the reindeer for tenderization). Decrease in intramuscular pH in sirloin, longissimus dorsi, from the baggan reindeer supports Sámi traditional knowledge of highquality meat. In the Sámi language there are a variety of concepts that include knowledge of slaughtering practices and quality of meat. This is the first scientific study of Sámi reindeer herders' traditional knowledge and their specialist language of reindeer meat quality. The Sámi language is a prerequisite for the food sovereignty governed by Sámi reindeer herders' families through generations, regardless of state policies and modernization. Everyday food from Sámi households could offer an important template for future Sámi gastronomy, and lead to stronger food sovereignty and improved food for visiting tourists.

The handling, hygiene and slaughtering techniques of cattle in selected cattle markets of Atokun, Randa and Odo-Eran in Abeokuta and environs, Ogun state, Nigeria were assessed. Questionnaires were administered with personal visits to cattle handlers to assess the handling practices and relevant information relating to cattle welfare and slaughtering. Data obtained from this study on the cattle handlers, showed that the literacy level of the rearers and butchers was low, with majority (48.90%) having primary education. The general sanitary conditions at the cattle markets in addition to hygienic practices by the butchers were generally poor. Handling of cattle from the lairage to slaughter slabs was unethical, with the employment of humane practices in the rearing, handling, transporting and slaughtering of cattle rarely observed across the cattle markets. High range of total bacteria count of 6.50 and 8.40 x 105cfu/g and coliform counts of 4.28 to 4.85 x 105cfu/g were observed in the thirty (30) beef samples collected across cattle markets with major isolated organisms being Staphylococcus aureus and Bacillus spp. across the abattoirs under study. Results of this study suggest that the welfare of animals in the selected cattle markets is inadequate due to poor housing facilities, inadequate feeding, low medical attention and low literacy level of handlers as well as indiscriminate slaughtering resulting to contamination of beef cuts of the carcass from which they are derived.

The Peranakan Ongole (PO) breed slaughtered was 60.36% (125 heads), Brahman Cross 16.42% (34 heads), Simmental 15.94% (33 heads), Brangus 2.42% (5 heads), Limousine 4.35% (9 heads) and PFH 0.48% (1 heads). The percentage of productive beef cattle slaughtering were 86.95% with female beef productive were 64.25% and the PO breed at 2 – 5 years old were the most slaughtered. The female beef cattle slaughtered were 54.58% and the male beef cattle slaughtered were 32.36%. The non productive beef cattle slaughtered were 13.04% including 5.79% male and 7.24% female. The Peranakan Ongole (PO) breed slaughtered was 60.36% (125 heads), Brahman Cross 16.42% (34 heads), Simmental 15.94% (33 heads), Brangus 2.42% (5 heads), Limousine 4.35% (9 heads) and PFH 0.48% (1 heads). The percentage of productive beef cattle slaughtering were 86.95% with female beef productive were 64.25% and the PO breed at 2 – 5 years old were the most slaughtered. It could be concluded that the productive female beef cattle slaughtering at abattoir in DIY was quite high, which may influence the breed resources of beef cattle.</em></p><p><em> </em></p><p><em>Key words : Productive beef cattle, slaughtering, abattoir, Yogyakarta</em></p></div><em><br clear="all" /> </em>

Obtaining a Veterinary Surgeon degree relies on the acquisition of “Day One Competences” (DOCs), among which professional skills related to meat inspection are acquired during visits to abattoirs. In 2020, lockdown measures due to COVID-19 pandemic limited on-site practical training. The present study describes the creation of an e-learning course on bovine and swine slaughtering as an alternative tool for compulsory DOCs achievement within the course “Inspection and control of food of animal origin” during the fourth year of the Veterinary Medicine degree program (Department of Veterinary Sciences of the University of Pisa). Academics and external professionals took part on the planning and development of the learning material. Video pills, consisting of shooting of the slaughtering coupled with trainers’ descriptive explanations, were produced. The perceived effectiveness of course contents, trainers’ communication skills and technical quality were assessed with a questionnaire. The developed e-learning platform consisted of four main sections (Introduction, Swine slaughtering, Bovine slaughtering and Additional topics), integrated by multiple-choice questions for the student’s self-assessment. According to students’ assessment, the platform, of high technical quality, effectively condensed contents on meat inspection. Despite the unique and irreplaceable role of practical training in the achievement of the professional skills included in the veterinary curriculum, the e-learning course may concur in providing DOCs and is in line with the adoption of a modern teaching model where e-learning resources engage students in deeper learning approaches.

The effect of sire breed (Swedish landrace and large White), sires within the breed, genotype, sex and season of birth of offspring on age at slaughtering, back fat thickness measured on three points (withers, center of the back and rump), length of carcass side Os pubis-atlas and Os pubis-first rib, yield and share of meat in warm carcass sides of average mass of 81,39 kg, using Yugoslav standards, was investigated. Results obtained show that investigated traits of offspring varied between sire breeds, genotype and sex (P<0,01). Sires within Swedish Landrace influenced (P<0,01) variation of back fat thickness (center of the back, rump, back+rump), age at slaughtering, length of carcass side Os pubis-atlas and Os pubis-first rib, but no effect was established on yield and share of meat (P>0,05). Sires within Large White breed had no effect on age at slaughtering and length of carcass side (P>0,05), whereas on other traits influence was demonstrated (P<0,01 and P<0,05). Season of birth had influence in the second model (P<0,05) on age at slaughtering and in both models on length of carcass side Os pubis-atlas and Os pubis-first rib (P<0,01 and P<0,05), whereas on other investigated traits no effect was established (P>0,05). Age, back fat thickness, length of carcass side and yield of meat were dependent on the mass of warm carcass sides.
