This study examines the disruptions in the operations of state trade enterprises and consumer cooperatives in providing food to the population of Bashkortostan during the Great Patriotic War. The article is based on unpublished documents from the National Archives of the Republic of Bashkortostan, as well as materials from periodicals. It is revealed that the weakening of the state’s control functions led to an increase in embezzlement and theft in trade and public catering enterprises. The combination of reduced trade turnover and the rise in abuses within the supply system resulted in severe food shortages. Supply disruptions affected workers, officials, evacuated populations, children, and medical institutions. Various abuses are discussed, including food ration card counterfeiting, different forms of self-supply, and instances of double provisioning. Attention is given to violations in accounting for population groups and inflated supply norms. It is established that combating abuses in the supply system was complicated by the involvement of enterprise leaders, shop workers, accountants, and representatives of auditing bodies in criminal activities. The conclusion is drawn that despite numerous violations, the supply system only minimally provided essential food items to the population of Bashkortostan with interruptions and not in full.

Value-added food supply chains are chains that maintain positive social, environmental, and community values which are integrated into the production process from the primary producer to the final consumer, ensuring economic, social, and environmental sustainability, thus forming a sustainable agricultural and food production system. The evaluation of the value added in each chain is based on indicators, which are a tool to measure changes in the actual situation or to show performance trends in achieving the progress set by the objectives. The presented indicators are based on publicly available statistics and foreign literature that allow measuring value added in specific livestock chains at aggregate level (beef production, pork production and dairy production) and are based on publicly available statistics in the Republic of Slovenia. The need to produce indicators of value added in livestock food supply chains arises from the large differences in structural changes in the sector itself and in the development and economic performance of the various livestock industries.

The purpose of the article is to reveal the current state and trends in domestic trade development in Ukraine and to identify problem areas in the food supply chains. Research methods. The following methods were used such in the research: dialectical methods of processes and phenomena cognition; monographic method for assessing scientific achievements in the domestic trade study; empirical method for a comprehensive assessment of the study object current state; the method of expert assessments for the activity areas analysis that are not sufficiently provided with official statistics; index method for the pace of development analysis and abstract-logical for generalizations and formulation of conclusions. Research results. The current state of domestic trade development in Ukraine and problems in food supply chains are revealed, such as: "gray schemes" of trade, increase in grain resale, lack of full reporting by holding structures and other market participants, etc.; ways to solve the identified problems are outlined. Scientific novelty. Theoretical provisions on the domestic trade development in Ukraine were further developed, the real growth rates (falls) of wholesale and retail trade, taking into account inflationary processes and the constrain factors, were revealed. Practical significance. The arguments presented in the article regarding the objective and subjective domestic trade development factors, official statistics limited data, supply chain problems are the evidence base for a number of measures implementation to improve the situation. The application of global indices of nutrition and food sustainability in public health and the improvement of product profiles has facilitated effective actions that increase food security. In the research reported here we develop index measurements further so that they can be applied to food categories and be used by food processors and manufacturers for specific food supply chains. This research considers how they can be used to assess the sustainability of supply chain operations by stimulating more incisive food loss and waste reduction planning. The research demonstrates how an index driven approach focussed on improving both nutritional delivery and reducing food waste will result in improved food security and sustainability. Nutritional improvements are focussed on protein supply and reduction of food waste on supply chain losses and the methods are tested using the food systems of Kenya and India where the current research is being deployed. Innovative practices will emerge when nutritional improvement and waste reduction actions demonstrate market success, and this will result in the co-development of food manufacturing infrastructure and innovation programmes. The use of established indices of sustainability and security enable comparisons that encourage knowledge transfer and the establishment of cross-functional indices that quantify national food nutrition, security and sustainability. The research presented in this initial study is focussed on applying these indices to specific food supply chains for food processors and manufacturers.

COVID-19 has had a significant impact on food supply chains at both domestic and global levels. At the same time, Indonesia's food security index experienced a significant decline. This study presents an exploratory approach-based research review aiming at identifying problems occurring along food supply chain post COVID-19 pandemic, and at examining possible policies, studies and research needed to improve food security. In addition to relevant previous studies, the authors analysed data from the Indonesian Central Statistics Agency (BPS) and Bank of Indonesia (BI). A number of problems and issues pertinent to Indonesia’s food supply chain that may adversely affect food security are identified and a post COVID-19 “exit strategy” to strengthen food supply chain is explored.

The article discusses the theory and practice of optimizing the supply of perishable food products in the context of the concept of supply chain management, taking into account the harmonization of the economic positions of supply chain companies. The purpose of the study is to develop a method of managing the efficiency of supply chain systems of perishable food products, taking into account the variability of the logistics cycle. Object of study – the processes of managing the supply of perishable foodstuffs in the respective supply chains. The subject of the study are methods and models of managing the supply of perishable food. Research methods – systematic approach, probability theory and mathematical statistics, optimization. As a result of the conducted researches the method of managing the efficiency of supply chains of perishable foodstuffs taking into account the variability of the logistic cycle is proposed, which allows to evaluate the effectiveness of measures for the improvement of logistic, and considered in its structure of transport, servicing of supply chains of perishable foodstuffs in the context of development perishable food supplies. Although food supply statistics are commonly used in ecological studies of diet and disease, little information is available on how they compare with reported intakes of foods. The objective of the present study was to compare fruit and vegetable availability with estimates of national mean intakes derived from national food consumption surveys. Food availability statistics from the FAO were used. For each country, mean national supply, based on at least 3 years of FAO data, was calculated. National estimates of mean fruit and vegetable intakes were derived from population-based surveys from fifteen countries, gathered for the World Health Organization Global Burden of Disease Study revision for 2000. Extrapolations were made when survey data did not cover all age groups. For each country, the FAO:survey estimate ratio was calculated. This ratio ranged from 0·93 to 2·70 (median value=1·39). Although there was a tendency for FAO data to overestimate intakes (fourteen out of fifteen countries), the degree of overestimation varied greatly among the countries included in this study (5–270 %). As food supply statistics are the only source of information on dietary patterns in most countries of the world, further information on how they reflect food intakes is needed. Obtaining detailed and valid estimates of dietary intakes in more countries around the world will be essential for such comparisons.

The present article intends to scrutinize the role of the Class Association of the Bakery Industrialists of Oporto in the course of the Livelihoods Crisis as a consequence of the First World War. It is an enquiry into the activity of a class association that was heavily involved in the daily life of its community and also in the instability caused by that conflict. Previous studies have mostly referred only to the consumer, his role and his difficulties, neglecting the producers’ association, which for obvious reasons has considerable importance in food supply. With the help of a vast bibliography, periodicals and the funds of the Arquivo Distrital do Porto, we will try to understand how the association dealt with the countless difficulties in the supply of raw materials to the bakeries of the city, which obviously strangled the commercial circuits, and above all, how it faced the enormous pressure from ordinary citizens seeking to guarantee the fundamental pillar of their diet.

Supply chain management (SCM) has been well-known to strongly influence the company performance. in food manufacturing industries. In this study quality, time, information, flexibility, and integration have been selected as variables to predict their influence on Kuwait food industries. The methodology of the study was developed where five hypotheses have been proposed on the relationship among the selected factors and the performance. To evaluate the hypotheses, an examination through a questionnaire was conducted, followed by its analysis with Statistics Packaging for Social Science (SPSS) and Minitab applications. The findings were found to be in support of two hypotheses only. Oher three hypotheses were rejected. This study showed the ways in which order the factors should be prioritized to improve the performance of an organization.

The article examines the coverage of the sanitary and epidemiological situation in the city in the late 19th – early 20th centuries in the Kyiv newspapers “Kievlyanin”, “Kievskie Vesti”, “Kievskaya Mysl”, “Yuzhnaya Kopeyka”. The processing of newspaper materials made it possible to identify problematic areas of work of the city authorities in the sanitary and communal spheres, namely inadequate control over observance of health standards in urban markets, failure to solve the problem of natural dumps and homeless people, illegal alcohol sales, lack of timely repair of roads, construction of water supply and sewerage. These factors were the main causes of epidemics of typhus, measles, tuberculosis, smallpox, cholera. Analysis of statistics on the pages of periodicals allows tracing the number of people affected by epidemics, identifying typical diseases for each district of the city, caused by their geographical location, population, location of facilities such as prisons, bazaars, cemeteries, hospitals.

In history, the food sector has remained the most vulnerable and is accountable for many crises and food scandals, so to avoid this in the near future, it is essential to have better control over the flow of products and the usage of blockchain technology can achieve this control in the supply chain, which can add trust, transparency, and traceability in the entire system. This paper investigates the factors affecting blockchain adoption in the food retail supply chain and creates awareness among retail managers for its adoption in their operations. A structured literature review is performed to identify the factors and a TOE framework is adopted for the research. Factors of technology, organization and environment are taken as independent variables; the intention to adopt the technology is taken as a mediating variable and blockchain adoption is considered a dependent variable. The findings contributed that TOE factors contribute to blockchain adoption by keeping the intention to adopt the technology as a mediating variable.

This study examined the effectiveness of agricultural protection policy and other macroeconomic variables on food supply, agricultural export, and farmers welfare in Nigeria, from 1980-2016 with a special interest in their relationship with the political economy. The specific objectives were to (i) estimate the degrees of agricultural protection, domestic agricultural food supply and economic welfare to farmers in Nigeria, (ii) determine the effectiveness of agricultural protection on food self-supply, agricultural export; and farmer-welfare. Data were obtained from secondary sources. Descriptive statistics and generalized method of moment (GMM) were used. Nigeria’s self-food supply was slightly above 50% while the rest of the consumption depended on importation. The welfare measure to farmers was relatively poor and not good enough to motivate them. There was a positive and significant relationship between export and agricultural protection. A significant and positive relationship also exists between farmer-welfare and protection in the sector.

The aim of this study is to identify the benefits of digital supply chain and explore the effects of these benefits of the adoption of digital supply chain. The study was conducted using data collected by a questionnaire from a sample consisting of supply chain informant employees from companies in the food industry. Three benefits were selected for the current study, which are supply chain agility, organizational performance, and supply chain risk management. The results showed that digital supply chains have numerous benefits from which these three benefits have significant positive effects on digital supply chain adoption. Therefore, it was concluded that companies’ adoption of digital supply chains depends on a bundle of benefits not only related to the supply chain itself such as supply chain agility and risk management but also incorporates the company as a whole in terms of its organizational performance. It was recommended that companies should recognize the benefits of digital supply chains and make their decisions based on the desired outcomes of DSCs.

The decrease in food availability as one of the indicators of food security in Europe has been noted since the beginning of the COVID-19 pandemic. The war in Ukraine caused a disruption in the supply chains of fertilizers, energy carriers and other resources needed by European and Ukrainian agricultural producers, which contributed to the increase in food prices. Thus, states as guarantors of food security must solve the task of ensuring the physical and economic availability of food products for the population. The purpose of the article is to highlight the dynamics of food availability in Ukraine and Europe, to identify the extent of the war's impact on the population's food supply, and to develop proposals for strengthening food security. In the research process, data from the Agroportal platform, the State Statistics Service of Ukraine, analytical reviews, research by domestic and foreign scientists, and the legal framework were used. A number of methods were used in the research process: comparison, index, generalization, formalization. A significant decrease in food availability was revealed both in Ukraine and in Europe as a whole. It has been established that the war in Ukraine caused a disruption in logistics, the removal of large tracts of land from agricultural use, an increase in the price of resources, and a complication in the export of food raw materials and its processing products. The main measures of the state policy to support food security are summarized, which differ in different countries, but have the same direction - elimination of social deprivation, protection of the poorest strata of the population, support of farmers' incomes, reduction of obstacles in the way of movement of food products. Proposals have been developed to improve the physical and economic availability of food products. The war became a serious trigger for the transformation of not only food security policy, but also foreign trade, tax, price, protectionist and other policies related to the performance of social functions of the state. The multifaceted nature of the problem of food availability makes it necessary to carry out research in these and other areas.

Purpose: This study was conducted to investigate food supply and consumption trends in South Korea over the past 30 years (1980 to 2010). Methods: We used time series data on Food Balance Sheets of Korea and the National Health and Nutrition Survey from Korea Statistics. Regression analysis was performed for trends of food supply and demand, and t-test for the gender difference in nutrient intake. Results: The annual supply of cereals, rice and starch roots per person has decreased, while that of meat, fish and shellfish, eggs, milk, and fats and oils has increased (p < 0.05), respectively. These changes effect on nutrient intake: rice consumption has declined to one-third of total energy intake, however, the energy intake from lipid sources has increased up to 20% in the 2000s.The nutrient intake levels are mostly sufficient to meet the recommended intake, but calcium intake is below the recommended level and sodium is three times above the recommended level. These problems are found in both genders, and males take in more calories and sodium than females (p < 0.05). Conclusion: These changes in food consumption and supply resulted in lowering both quantities based food self-sufficiency rate and self-sufficiency of nutrition supply. It is therefore suggested that the supply of agricultural products should be stable and quality competitiveness in supply should be improved. Also, measures and strategies in promoting rice consumption are required, such as promoting healthy diet via nutrition education and disseminating healthy traditional Korean food.

The food supply chain (FSC) is made up of producers, traders and processors who bring the product from supply to demand through logistical processes. Food supply chains require specific methodologies for their current diagnosis, evaluation and improvement. Logistics in food supply chain requires to be managed according to its nature. This article identifies the different methodologies through a systematic literature review of publications from 2005 to 2022, using Web of Science, Scopus and Google Scholar search engines, in order to establish the state of the art. As a result of this review, a new taxonomy is proposed and includes the following methodological groups: management, qualitative, quantitative, multi-criteria decision-making (MCDM), statistics, machine learning, mathematical modelling, discrete simulation, system dynamics and others. The methodologies of characterization, evaluation and improvement are classified into two main groups of logistical means and modes. The performance measures most commonly used in the methodologies by the researchers were also identified. From the article, discussions, challenges and trends are generated to identify possible future research and different gaps.

Changes in the market, caused by globalization, have led to the fact that many companies needed to adapt their operations. In response to these changes, the concept of supply chain was developed to help companies from procurement to sales of products. This paper examines the effects of supply chains on competitiveness using the example of agro-food companies from the Republic of Croatia. The research was conducted through a questionnaire which included 188 agribusiness companies. The responses were systematized and statistically processed using descriptive statistics, correlation analysis and multivariate regression analysis. The results showed that the effects of supply chains play a major role in determining the competitiveness of agro-food companies. Therefore, it is necessary to improve the effects of the supply chain in these companies in order to improve competitiveness and achieve better results of these companies on the market.

Purpose: The major aim of this study was to analyze the effect of supply chain integration and performance of food and beverages manufacturing firms in Kenya. Methodology: The study adopted a cross-sectional survey. The target population was senior procurement managers from 246 food and beverage manufacturing firms in Kenya. A sample size of 150 respondents was determined using Krejcie and Morgan (1970). The sample was selected using simple random sampling. Pilot study of 10% of sample size was conducted consisting 15 firms and 13 questionnaires were returned. The researcher used semi-structured and self-administration questionnaires. 135 questionnaires were distributed to respondents but only 119 questionnaires were returned. Data analysis was done through descriptive statistics by use of mean, standard deviation, skewness and kurtosis. Inferential statistics was also done by use of correlation, regression and hypothesis testing. The data obtained was processed using SPSS version 28. Data was presented by use of tables. The reliability results indicates that all the variables meet the threshold of a Cronbach’s alpha value of above 0.7. Validity was also tested using content, construct and criterion. Results: Supply chain integration and performance of food and beverage manufacturing firms in Kenya had a significant and positive relationship (R2=.491, p =.000), according to the data. This meant that supply chain integration enhances performance of Kenyan food and beverage manufacturers. Supply chain integration and performance of food and beverage manufacturing firms in Kenya revealed a positive and statistically significant relationship (R2=.491), according to the study. As a result, supply chain integration accounted for 49.1 percent of the variation in food and beverage manufacturing firm’s performance. Unique Contribution to Theory, Practice and Policy: Process Theory may be used to anchor future studies in the manufacturing sector. The study recommended that managers of companies that manufacture food and beverages develop procedures and policies that link to a superior understanding of the client in order to meet their expectations, even though the existing theory was validated. The study suggests that regulators overseeing the food and beverage industry should develop policies that permit manufacturers to collaborate with third parties, thereby mitigating losses that could affect the productivity of these companies and ultimately the whole economy. According to the report, in order to improve performance, the government should ensure that supply chain integration in Kenyan food and beverage manufacturing companies grows and develops in a more methodical manner. Furthermore, in order to determine how supply chain integration affects the productivity of other manufacturing sectors in the economy, empirical study must be done.

Supply chain flow is a major concern for food security, particularly to ensure that food is not lost between farmers and consumers. Food security has become a highly emotive issue, as chronic hunger, local food shortages, and sudden increases in food prices are strongly influencing public sentiment and reaction. This raises concern for the assessment of supply chain management and sustainable food security in Nigeria, using honesty among supply chain participants, effective storage facilities, and quality of seed as a determinant for sustainable food security. A survey research design was adopted for this study, using a structured questionnaire. Convenient and Purposive sampling techniques were used to select 80 farmers from the North-Western state of Nigeria. Descriptive statistics were used to analyse the data collected, which was presented using charts. The findings of this study show that honesty among supply chain participants, effective storage facilities for farm produce, and the quality of seeds to plant will enhance nutritional foods in society, promotes both affordability and high profits for all participants in the supply chain based on the response of the selected farmers. It was further revealed from the study that Government intervention in terms of subsidy and credit facilities to the farmers are not well harnessed by the real farmers that are actually in the business of farming. Therefore, it was recommended, among others, that there should be an effective feedback mechanism from the government to ensure the subsidy is actually addressing the purpose of its establishment.

The issues of spatial development of the fruit and berry market become especially important due to the increasing asymmetry in the development of administrative-territorial units of the state, strengthening of globalisation processes with simultaneous regionalisation and integration of markets. They lead not only to changes in socio-economic components, but also have a significant impact on the development of space, leading to its transformation.Objectives. To enhance theoretical provisions concerning the spatial development of the fruit and berry market and to determine the trends in the spatial development of this market in Russia. To propose measures to improve the efficiency of fruit and berry market development in terms of the spatial aspect.Methodology. We used the following methods of scientific knowledge to achieve our goals: dialectical; analysis, synthesis, and comparison. In the process of research, various literature sources were studied: periodicals, monographs, and statistical digests.Conclusions. Conclusions were drawn about the spatial development of the fruit and berry market as a combination of changes that improve food supply to the population of certain territories. The research revealed significant spatial differentiation in both production (supply) and consumption (demand) of fruits and berries. Theoretical and analytical research allowed us to conclude that it is necessary to support demand (generate demand) and supply (stimulate producers in different categories) of the domestic fruit and berry market.

Many economists believe that COVID-19 poses a serious existential crisis for Indian rural communities. Analysis of the performance of the agriculture sector in the last few months reveals that agriculture and allied sectors can give new momentum to the Indian economy. A food crisis is not possible in India. We produce 70 million tonnes of food grain, more than the total national requirement. In the coming Kharif season, the input costs are expected to be higher than usual, but the government of India’s response to mitigate high input costs is encouraging. The major problem is in the food supply chain, which needed serious intervention from stakeholders and state and central government support. Disturbances and disruption in food supply chains have created high transaction costs. The spread of COVID-19 may create irregularity in food supply throughout India as 92% of produce is purchased and consumed. Using trade statistics and survey data gathered through online questionnaires and phone interviews with small-holder farmers, agro-industrial companies, agricultural workers, traders, importers, and consumers. Our findings show significant differences in how COVID-19 and containment measures disrupt supply chains between the modern export-oriented supply chain, which is centered on a few large vertically integrated agro-industrial companies, and the more traditional domestic-oriented supply chain, which includes a large number of small-holder farmers and informal traders — with the former being more resilient to the COVID-19.

All through the entire supply chain, the agri-food sector has been negatively affected by significant shortages of resources, food loss, and waste. Managing the supply chain and pursuing sustainable lifestyles can be made easier through the assessment of food loss and waste. This study examines seven staple crops in the Hungarian food supply chain. The following food items were selected for analysis: wheat, maize (corn), rice, sorghum, barley, rye, and oats. Secondary data were compiled from the FAO (Food and Agriculture Organization of the United Nations) between 2009 and 2017. A PAST program was used to analyse the data, generate descriptive statistics, and pairwise comparisons with the Mann-Whitney tests were used to measure all seven crops’ performance. Cluster analysis and multidimensional scaling were used to classify similarities between variables and, through the comparison of the amount of crop loss and waste, data in a two-dimensional space is depicted. This study provides two key findings. First, food loss and waste (FL&W) translate into resource shortages and unsustainable practices. Second, surplus food donation by corporations and conscious consumption at the consumer level is a solution to FL&W reduction. Furthermore, the use of five sustainable consumption guidelines is strongly suggested at the consumer level. To stabilize food security and sustainability, food producers, distributors, stakeholders, and policy planners must work together to improve food systems.

Purpose: Researchers have been actively investigating various issues concerning food safety and halal food in the supply chain. The ultimate goal is to provide guarantees for quality and conformance regarding food standards and demanding expectation from the consumers. We review a set of two-decade food safety and halal food in supply chain (SC) literature from 1990 to 2018 (month of February) in order to pinpoint the problems, models, solution approaches and more importantly, the future directions of this field. Design/methodology/approach: Our method employs the 120 published articles on food safety and halal food in SC research. Various techniques from statistics, bibliometrics, and analytics are systematically deployed to gain insights on how the literature address these two topics.Findings: The predominant contributing articles, authors, affiliations, and keywords have been reviewed, clustered, and thoroughly analyzed. Through systematic graphical and clustering analyses, four major clusters regarding food safety and two clusters in halal food in SC research have been identified as the most promising and potential future for research opportunities.Research limitations/implications: This study focuses on articles that discuss food safety and halal.Practical implications: Our findings provide valuable insights to understand the major clusters of the research endeavour along with the plausible pathways to where they would likely develop in the future. With these insights, researchers and practitioners shall be able to devise initiatives that are of high relevance and significance in the near future.Social implications: This research provides an understanding to the reader about the relationship between food safety and halal.Originality/value: This paper provides the first systematic overview of food safety and halal food for supply chain researchers to see the big picture of the field. Serving as the thread connecting research endeavour in these two research areas, our novel work highlights how the work is connected, which research clusters have been the center-of-attention during the last two decades, and consequently, which areas are still lacking an investigation. We believe that people in both academia and industry who are keen to develop a rigorous solution to ensuring food safety and food halal-ness to satisfy global market requirement will be benefitting the most from our analysis.

The objective of the article is to evaluate the role of laws and regulations on food safety in the implementation of food safety laws in Vietnam. Food safety regulations through business orientation, supply chain dynamic capabilities, and supply chain integration aim to ensure food safety and improve firm performance in Vietnam. Research data analysis is based on 389 food firms and the data are analyzed through Smart PLS 3.3.0 software. The results show the important role of food safety law in the implementation of food safety assurance of food enterprises. At the same time, supply chain dynamics and supply chain integration are also factors that have a statistically significant positive impact on the food safety performance of food enterprises in Vietnam.

Today food inflation is a rising issue. The world food problem is getting more complicated as the world population is increasing more rapidly than food production. Pakistan being a developing country is a victim of higher food prices. The present study is an attempt to identify main determinants affecting food inflation in Pakistan. The study is based upon the time-series data from 1997 through 2017, collected from secondary sources including published issues of Economic Survey of Pakistan, Agricultural Statistics of Pakistan and annual reports of State Bank of Pakistan. Method of OLS (Ordinary Least Square) was applied by developing an equation for food price inflation and five major determinants; food imports, food exports, wheat support price, value-added in agriculture and money supply respectively. These variables were regressed with CPI (Consumer Price Index) food, the measure of food inflation. The results indicated that agricultural value addition is highly significant and negatively affecting the food inflation while Food imports have most significant positive effect on food inflation. Supply of money in the country and wheat support price are effecting food inflation significantly. The study suggested that increase in agricultural output and tight monetary policy are the key factors to decrease food inflation. The government should adopt measures to improve the productivity of agricultural sector, encourage agro-based industry, moderation in government administered price and should control the supply of money in the country.

Purpose The purpose of this paper is to investigate an innovation concerning a short food supply chain (SFSC) created by a newly established producers’ cooperative in Greece that sells fresh milk to consumers via automatic vending machines; the consumers’ response toward this innovation; and the financial performance of the cooperative. Design/methodology/approach The case study focused on consumer’s attitudes toward the cooperative’s fresh milk sold by automatic vending machines and the cooperative’s financial performance. A structured questionnaire was answered by 912 consumers in Thessaloniki during 2015 and analyzed using the IBM SPSS STATISTICS program, version 22. Additionally, the cooperative’s financial data (2012–2015) were used in order to calculate its financial performance. Findings The authors identified five unique consumer categories according to consumer motive, of which social motives are considered in the sample as the most important. The cooperative’s financial indicators are satisfying, especially taking into consideration the severe economic crisis in Greece over the past years. Research limitations/implications It is difficult to evaluate Thesgala as there exists no similar producer cooperative in SFSCs in Greece. The cooperative is recently established and therefore financial indicators represent a short time period. Practical implications Producers, especially small ones in remote or peri-urban areas, can be involved in a SFCS and reach consumers via their cooperatives (or by founding a cooperative). Producer’s cooperatives can include SFSCs in their strategic planning in order to stimulate changes in the food system for the benefit of both producers and consumers. Social implications Policy makers should orient the appropriate policy measures to support SFSCs for the benefit of society as a whole. Originality/value The research investigates an SFSC that was created as a producer’s initiative (not a consumer’s) via their cooperative. It advances knowledge of how to initiate changes in the food system.

Traceability and food quality are significant challenges in realizing a reliable food supply chain. The reliability of data in supply chains is one of the critical factors. Ensuring transparency, integrity, and availability is the primary requirement for establishing a proper supply chain network. Blockchain is a distributed structure of immutable records that are chained together to form blocks. It provides a guarantee of storing the data correctly and reliably. Smart contracts, which are self-executing contracts containing the terms of the agreement between the entities involved, provide utility for automation of reputation calculation with the transactions. Reputation systems allow participants to rate each other, thus building trust through reputation. The present reputation systems have bounded scrutiny and lack granularity; hence they are not ideal for supply chains. In this work, we propose a reliable supply chain framework using blockchain and smart contracts. It uses a consortium blockchain network to trace communication between the participants and to calculate reputation scores dynamically. Rewards and penalties are assigned to the participants of the supply chain network based on the food product quality involved in the trade. The network participants have defined roles and the access permissions govern who can access the ledger. An immutable ledger stores all the transactions occurring in the network. Any change in one block will reflect in the consecutive blocks, which ensures the data is reliable and secure. The proposed system is implemented using Hyperledger Composer. The proposed framework is evaluated in terms of throughput and latency for varying asset size and batch size using the benchmarking tool Caliper. Results show that the security and reliability provided by the proposed framework justify the overheads in contrast to a trading model that does not include a blockchain network.

According to the results of the study, it was noted that the management system of innovative activities of food companies needs to be improved in accordance with modern conditions. The synthesis of levers, methods, legislation and information base should create an effective mechanism for managing the innovation activities of the food industry and help Ukrainian food producers to take a worthy place in the world market. The main materials used in the study were statistical data of the State Statistics Committee of Ukraine and the Odesa Regional Department of Statistics; data of the Ministry of Economy of Ukraine, the Department of Food Industry, laws and regulations on investment management; data of domestic and foreign periodicals. Methods used in statistical data processing – method of analysis and synthesis, media content – methods of comparison and grouping. In this context, the emphasis is on the problems and prospects of food enterprises, in particular on innovation processes (IP), which should ensure cost-effective use of innovations in the form of new technologies, products or services, organizational, technical and socio-economic solutions of production, financial, commercial, administrative or other nature. Thus, the problem of improving the management of innovation processes in domestic enterprises is of fundamental importance, its solution will facilitate the transition to the creation and use of higher technology, and thus accelerate economic growth of the national economy and build a modern innovation and investment model of society. This process involves qualitative transformations of government institutions, structural restructuring of the economy in various areas of management, the introduction of new approaches in the management of the food industry, which continues to be the dominant sector of the country.

Phytoplankton movement patterns and swimming behavior are important and basic topics in aquatic biology. Heavy tail distribution exists in diverse taxa and shows theoretical advantages in environments. The fat tails in the movement patterns and swimming behavior of phytoplankton in response to the food supply were studied. The log-normal distribution was used for fitting the probability density values of the movement data of Oxyrrhis marina. Results showed that obvious fat tails exist in the movement patterns of O. marina without and with positive stimulations of food supply. The algal cells tended to show a more chaotic and disorderly movement, with shorter and neat steps after adding the food source. At the same time, the randomness of turning rate, path curvature and swimming speed increased in O. marina cells with food supply. Generally, the responses of phytoplankton movement were stronger when supplied with direct prey cells rather than the cell-free filtrate. The scale-free random movements are considered to benefit the adaption of the entire phytoplankton population to varied environmental conditions. Inferentially, the movement pattern of O. marina should also have the characteristics of long-range dependence, local self-similarity and a system of fractional order.

The purpose of this paper is to investigate corporate environmental responsibility in the agri-food industry in the Republic of Serbia. Empirical research was conducted on a sample of 112 managers of agri-food organizations operating in the territory of the Republic of Serbia, randomly selected from publicly available databases, using Computer Assisted Web Interview - CAWI technique. Data analysis in this study consisted of descriptive statistics. Univariate analysis was used through individual ranking statistics. Nonparametric Kruskal-Wallis and post hoc Mann Whitney U test were used to test the significance of differences. Research results show above average level of corporate environmental responsibility in agri-food business world in the Republic of Serbia, yet, not sufficiently high comparing to Serbian consumers view, leaving room for improvement. Food processing organizations proved to be the most sensitive to corporate environmental responsibility issue followed by food manufacturing organizations, and agri-food supply and distribution chain organizations the least.

The purpose of this study is to identify the types of halal food supply risks, types of mitigation strategies for the upstream supply chain and to examine the relationship between halal supply risk and mitigation strategy efforts using the lens of the agency theory. Exploratory factor analysis (EFA) is used to validate the variables of the study and regression is performed to analyze the relationship of halal food supply risk and mitigation strategy. It is identified that halal food supply risk (agency uncertainties) consists of quality risk, delivery risk, and price/cost risk. The mitigation strategy efforts consist of behavior-based management, buffer-based management, and traceability-based management. Results indicate that halal food supply risk significantly increase mitigation strategy efforts of firms. However, price & cost risk does not significantly increase behavior-based management. Practical implications include suggesting the firms to invest more in buffer-oriented so as to mitigate the agency uncertainties.

This research aims to empirically assess the impact of supply chain 4.0 and supply chain risk on organizational performance in the food manufacturing industry in the United Arab Emirates (UAE). Based on empirical evidence, only a few empirical research in supply chain 4.0 have been conducted. Additionally, they stress the significance of supply chain risk management assistance in enhancing organizational effectiveness. The research findings revealed a strong link between the significant impact of supply chain4.0 and supply chain risk to improve organizational performance. The use of supply chain 4.0 in manufacturing organizations was the main focus of this study. The model can be modified to reflect other businesses worldwide, for instance, the retail or service sectors. The findings aid businesses in making better-informed decisions about adopting supply chain 4.0. According to the research findings, food manufacturing companies should initiate and advance their transition to supply chain 4.0 for them to be competitive, effective, and productive.

This study aims to evaluate the post-pandemic scenario regarding to auditing practices in the food safety management, considering the international food supply chains by means of remote or hybrid protocols auditing, as well as such practices impact in the supplier’s qualification efficiency. A bibliographical review of the published scientific articles about the experience of several countries which conducted research in order to capture the stakeholders’ perception involved in remote audits, as well as comparing with Multiple Study Cases of remote auditing carried out by the author, with a descriptive and qualitative statistics in the last twenty-four months are presented. As a result, one hundred per center remote auditing protocols may be effective as part of the process used by companies to qualify international suppliers of food supply chains by following the principles already set in the best practices identified in academic research.

The aim of the study was to recognize the supply chains used in the marketing of fruit and their products, as well as the trends of changes in this sector. The object of the research was fruit production in the world and Poland. The study presents a diagram of the supply chain in agribusiness. A method of graphic presentation of the flow of raw materials and fruit products from producers of raw materials and means of production for agriculture to the final consumer was also used. Trends of changes in the production of fruit and their preserves are presented. The research used literature on the subject, available mass statistics data and data prepared by the Institute of Economics, Agriculture and Food Economy – the National Research Institute. Based on the research, it was found that the fruit logistics chain includes thousands of farmers, many agri-food processing units, wholesale and retail food trade. It must be very flexible, constantly adapting to the challenges of a changing, globalizing market. In conditions of dispersed fruit production, success is determined by the efficiency of chain management combined with solidarity and mutual trust of all participants in the flow of goods, information and financial resources.

Purpose: This study aimed to identify the critical success factors (CSFs) of food tourism destinations and analyse their importance for the development of destination tourism. Design/methodology/approach: We conducted a systematic literature review (SLR) to identify prevalent CSFs in food tourism destinations. Out of 210 articles related to food tourism destinations, 41 underwent a rigorous selection process for analysis. The chosen articles were examined comprehensively to provide a replicable overview of the subject. Findings: The five most popular factors were: marketing, food quality, food product, cultural identity and visitor experience. It was also found that more studies were conducted on the supply side, while fewer studies were conducted on the demand and supply side. There was a significant difference between the CSFs of supply and demand side statistics separately. Research Practical & Social implications: This comprehensive review of CSFs in food tourism destinations offers a valuable contribution to the field. It encompasses insights into publication patterns, temporal distribution, research methodologies, and the identification of prevalent success factors. This knowledge helps researchers position their work, identify gaps, and align their research for maximum impact. Ultimately, it fosters efficient and productive future research, facilitating meaningful advancements in food tourism. Originality/value: The study clarifies what are the most popular venues for successful food tourism destinations for publishing research. How research on CSFs in food tourism destinations is distributed over time and what the geographical distribution of research looks like. And what are the most popular CSFs for food tourism destinations.

The increasing human population and income per capita in Indonesia have many impacts to the demand of food, not only staple food but also the secondary food too, including meat and beef demand. Based on data from Central Statistics Bureau of 1995–2016, beef demand in Indonesia has been increasing. This condition must be anticipated by preparing the supply, especially the availability of beef in Daerah Istimewa Yogyakarta province. In Yogyakarta city, one of the regencies of DIY, the demand rate grows by 3.2%/year, higher than the supply growth rate by 2.08 %/year. This gap needs to be thought through the case of scarcity of beef on the market. This study aimed to identify the potential of supply in five parameters i.e.: beef population, the availability of semen for artificial insemination (IB), the availability of livestock feed plants (HMT), the number of cows that enter DIY, and the number of cows that exit from DIY. A model Spatial Geographic Information Systems (SGIS) has been used in this study. The study revealed the most potential area for the development of beef agribusiness, based on the availability side, was Gunung Kidul Regency, and the less potential was Yogyakarta municipality.

Purpose: The purpose of the study was to evaluate the effect of supply chain visibility on the performance of food and beverage manufacturing firms in Kenya and to find out the moderating effect of supply chain technology on the performance of food and beverage manufacturing firms in Kenya. Methodology: The exploratory research design was used in the study which utilized both qualitative and quantitative data. All 270 food and beverage manufacturing firms in Kenya registered by Kenya Association of Manufacturers (2022) were considered using the census approach. Target population for the research was one participant from logistics, supply chain or operations department at each of the registered food and beverage manufacturing firms. Primary and secondary data was used, the primary data was collected using semi structured questionnaire that was administered by the researcher and research assistants. Samples of the questionnaire were pilot tested to test the reliability and validity before full scale data collection. The data was analyzed using the Statistical Package for Social Sciences (SPSS) version 26 software. Quantitative data was analyzed using descriptive statistics while the inferential analysis was further carried out using structural equation modelling, ANOVA and regression coefficients to give effect of the explanatory variable. Findings: The study found out that supply chain visibility significantly influenced the performance of food and beverage manufacturing firms in Kenya at both when there was a moderator and without a moderating variable, supply chain technology. In the first model without moderator, it recorded a standardized estimate of 0.538 (p<0.000), indicating that as supply chain visibility increases, performance of food and beverage manufacturing firms also increases. Fit indices on structural equation modelling revealed a marginal fit with a chi-square test of 211.322 with 86 degrees of freedom (P-value =0.0492). The structural path for structural equation modelling from supply chain visibility to supply chain performance remains positive and significant. Standardized estimate of 1.347 and p-value was 0.001<0.05. Which indicates that the variability of supply chain visibility on the performance of food and beverage manufacturing firms could be explained by 53.8% when no moderator is included and increased to 134.7% when ,moderator, supply chain technology is incorporated thereby indicating a stronger relationship. The other fit indices that gave a satisfactory model fit when the moderator supply chain technology was used are RMR=.9196, GFI=.9263, NFI= .9473, RMSEA=.0184 and CFI=.9369 which implies that the model was fit to determine the relationship between supply chain visibility and performance of food and beverage manufacturing firms in Kenya and therein make conclusions and recommendations. ANOVA, regression coefficient and model summary (R2) were also used and indicated significance for there use with all recording p-value of 0.000<0.05. Unique Contribution to Theory, Practice and Policy: System theory of management was adopted and validated. By incorporating supply chain enabling technologies in the management and planning of production in a manufacturing firm, it has the potential of revolutionizing the business environment hence increasing flow of raw materials and other items into the company’s production plant, warehouses or retail locations in an effort to create visibility and enhanced performance. The theory can assist Kenya and the manufacturing firms in developing policies and strategies to assist manufacturing sector while creating competitive advantages through supply chain visibility. The study found out that some of the important supply chain mapping strategies to enhance performance of food and beverage manufacturing firms is supply chain visibility and supply chain technology.

Desk research refers to secondary data or that which can be collected without fieldwork. Desk research is basically involved in collecting data from existing resources hence it is often considered a low cost technique as compared to field research, as the main cost is involved in executive’s time, telephone charges and directories. Thus, the study relied on already published studies, reports and statistics. This secondary data was easily accessed through the online journals and library. Findings: The results show that food safety is important for the wellbeing and safety of hotel guests. Application of standard food safety systems, compliance to food safety system and implementation of food safety system impact the provision of safe food in hotels. From the study findings, it was concluded that application of standard Food safety systems, compliance to food safety system and implementation of food safety system impact the provision of safe food in hotels. Empirical findings revealed that mid- and low-tier hotels found the increases in commodity prices challenging and thus employed innovative methods to combat rising food costs. High-tier hotels were more concerned about satisfying customers' needs by maintaining high-quality food products and services. Unique Contribution to Theory, Practice and Policy: The theory of change and Maslow hierarchy of hotel expectations theory may be used to anchor future studies in the tourism sector. The study results will also benefit other stakeholders such as the policy makers as well as researchers and scholars from different parts of the world. The top management hospitality in the country will also use the study findings to improve tourism performance in all their activities and programs. The study recommends that the adoption of effective social protection development policies in tourism will help to improve efficiency in their major operations and activities.

This study aims empirically to analyze mitigation strategies for operational supply risk among halal food manufacturers in Malaysia. A survey of 369 halal food manufacturers is used to test a research model that proposes a relationship between operational supply risk and risk consequences as well as the mediating role of risk mitigation strategies. Structural equation modeling reveals that in the absence of a risk mitigation strategy (behavior-based management, buffer-based management, and traceability-based management), operational risk consequences are significantly influenced by operational supply risk. The analysis also showed the mitigation strategies reduce risk events by its interaction between operational supply risk and risk consequences. This study shows significant data about the management of halal food manufacturing. Due to the limitations of this survey, further study is necessary to analyze how other halal's sectors manage their supply chain risk management.

Today, one of the world’s biggest problems is the assurance of food integrity from farm to fork. Economically motivated food adulteration and food authenticity problems are increasing daily with considerable health and economic effects. Early detection and prevention of food integrity-related problems could be provided by the application of effective on-site food analysis technologies. FTIR spectroscopy coupled with chemometrics can be used for the rapid quality control of a wide variety of food products with fast, high-throughput, accurate and nondestructive analysis advantages. In particular, hand-held and portable FTIR instruments have the potential to surveil food quality and food safety in various critical segments of the food supply chain. In this review, we explore the abilities of hand-held and portable FTIR spectrometers combined with multivariate statistics to conduct a quality evaluation of various food products in terms of food adulteration and authenticity issues. An examination of the literature showed that comparable results were obtained based on detection limits, correlation coefficient (R2) values, standard error values and discrimination power by using both portable/hand-held FTIR spectrometers and benchtop FTIR spectrometers. In conclusion, this review highlights the potential usefulness of portable and hand-held FTIR spectrometers combined with chemometrics for maintaining the food quality through the presentation of various applications that may shed light for on-site food control at any point of the food supply chain.

Food industry has vital importance globally in which supply chain sustainability plays a key role. Therefore, the objective of this study is to examine the role of passion, planning, goal setting and target achievement in a sustainable supply chain. This study examined the relationship between passion, planning, goal setting, target achievement and sustainable supply chain among the food industry of Indonesia. Questionnaire survey was preferred, and 500 questionnaires were used for data collection. Findings of the study concluded that passion has a positive role in target achievement and an insignificant effect on sustainable supply chain. Planning has a positive effect on target achievement and sustainable supply chain. Moreover, goal setting has a positive role in target achievement and no role in supply chain. Furthermore, target achievement has a significant mediating role. Finally, the relationship between passion, planning, goal setting, target achievement and sustainable supply chain has valuable contributions to the literature.

In the recent years the alternative food networks gained a significant importance, mainly due to the need of consumers to get closer to the farmers both in terms of physical distance and in number of intermediaries. The concept of building a reliable food system tries to balance the mistrust in the industrialized food production that is dominating in the developed countries. Social enterprises are enterprises pursuing primarily social objectives in business environment. In 2015, in Hungary more than 13.000 social enterprises were registered according to the statistics with many different social missions. However, the number of social enterprises in the catering sector is quite limited. The Hungarian para-gastro movement consists of 7 different organisations, operating in the catering sector and employing handicapped and/or disabled workforce. Against this background, in our paper we would like to investigate the business models of Hungarian social enterprises in the catering sector, somehow connected and related to short food supply chains. To the best of our knowledge, currently only 3 companies fulfil all these criteria: Ízlelő Restaurant from Szekszárd, Hatpöttyös Restaurant from Székesfehérvár and the Batyu-Téka from Miskolc. In order to understand the business models of these three companies, we applied an expert interview based, qualitative approach. We also analysed the publicly available financial statements of them and calculate the most important (financial) ratios. Altogether we tried to analyse the role of direct sourcing, the niche market of local foods and obviously the advantages and the disadvantages of the social entrepreneurship. Results show that currently the social enterprises requires (state) subsidy to survive, the average share of subsidies was 19-49% of the total income among the investigated companies. However, all have their unique way to pursue the survival and the level of commitment to short food supply chains is very different. Altogether we could identify possible synergies where social gastro enterprises can benefit from direct sourcing.

RetractedModern dairy product supply chain management systems help minimize the production and distribution of unsafe or substandard products. The purpose of this article is to assess the capabilities and level of development of planning and quality control systems in the field of supply chain management in the dairy industry using the example of Russia, Kazakhstan and Lithuania. Through a systematic analysis of statistical information, descriptors of the effectiveness of logistics supply chains and development directions of the dairy industry in the field of improving planning and quality control are identified. This study uses secondary statistics from open sources as a basis for comparative analysis. The main indicators selected for analysis are: the efficiency index of logistics, the number of dairy products, milk and dairy products and other indicators of the dairy industry. It is concluded that an effective supply chain plays a very important role for the development of the dairy industry and improving food safety in the supply chain of these products.

This study comes to ascertain the impact of digitalism on supply chain flexibility. A sample consisting of 350 employees was selected from manufacturing companies in the food industry to collect research data. One inclusion criterion was assumed in this research, which is employee knowledge of supply chain processes. Research data was gathered using a questionnaire distributed to the members of the sample. The final number of the questionnaires was 297 with a response rate of 85%. Analyzing data via SmartPLS 3.0, the results indicated that Internet of things (IOT) had a significant effect on supply chain flexibility. Such results confirmed that one dimension of digitalism, which is the Internet of things, has a significant effect on supply chain flexibility.
