Tourists bite off more than they can chew at hotel breakfast buffets. Food waste from hotel buffets means unnecessary food cost for hotels as well as an unnecessary burden on the environment. The present study measured food waste at a hotel breakfast buffet and identified the following guest and breakfast characteristics as being significantly associated with higher plate waste: more children in the guest mix, more Russians and less Austrians or Germans, fewer hotel guests in the breakfast buffet area as well as more buffet stations being set up. These insights contribute to knowledge on environmental sustainability in tourism, pointing to interesting market segments for targeting in high demand periods as well as promising target segments for interventions (e.g., families) and indicate that simple measures such as rearrangements of the breakfast room may reduce food waste.

Food waste has become a significant issue in the foodservice industry. However, food waste management in buffet restaurants has rarely been investigated. Considering the popularity of buffet restaurants in Taiwan, this study serves as the first attempt to identify a corporate management approach to food waste reduction in Taiwanese buffet restaurants. The study case comprises two buffet restaurants of a large chain restaurant company in Taiwan. This study uses both individual in-depth interviews and a focus group, comprising 15 managers, chefs, and front-line employees. The results identify various strategies to mitigate food waste in buffet restaurants at different stages of operation: establishing a central kitchen, cooperating with qualified suppliers, accurate forecasting of food demand, aesthetic buffet table design, redesigning the service method, continually monitoring food waste, and proactive communication to customers. The 3R (Reduce–Reuse–Recycle) food waste hierarchy is also developed to encourage buffet restaurant practitioners to design appropriate food waste mitigation programs.

Purpose The transonic buffet is a complex aerodynamics phenomenon that imposes severe constraints on the design of high-speed vehicles, including for aircraft and space launchers. The origin of buffet is still debated in the literature, and the control of this phenomenon remains difficult. This paper aims to propose an original scenario to explain the origin of buffet, which in turn opens promising perspectives for its alleviation and attenuation. Design/methodology/approach This work relies on the use of numerical simulations, with the idea to reproduce the buffet phenomenon in a transonic aileron designed for small space launchers. Two numerical approaches are tested: unsteady Reynolds averaged Navier–Stokes (URANS) and large-eddy simulation (LES). The numerical predictions are first validated against available experimental data, before to be analysed in detail to identify the origin of buffet on the studied configuration. A complementary numerical study is then conducted to assess the possibility to delay the onset of buffet. Findings The buffet control strategy is based on wall cooling. By adequately choosing the wall temperature, this work shows that it is feasible to delay the emergence of buffet. More precisely, this paper highlights the crucial role of the subsonic flow inside the boundary layer, showing the existence of upstream travelling pressure waves that are responsible for the flow coupling between both sides of the airfoil, at the origin of the buffet phenomenon. Originality/value This paper proposes a new scenario to explain the origin of buffet, based on the use of a Fanno and Rayleigh flow analogies. This approach is used to design a control solution based on a modification of the wall temperature, showing very promising results.

Abstract A study of transonic buffet on the NASA Common Research Model at flight Reynolds numbers is presented. The ability of two different hybrid RANS/LES models as well as the URANS approach for resolving three-dimensional buffet motion was evaluated by means of spectral analysis. Automated Zonal DES and URANS simulations show similar results in terms of buffet frequency and spanwise propagation of buffet cells, whereas the Delayed Detached Eddy Simulation results indicate a strong interaction between flow separation and shock motion. The extracted characteristic frequencies which are associated with transonic buffet are located in a range of Sr = 0.2–0.65 for URANS and AZDES and are therefore in accordance with findings from related recent research. Furthermore, the simulation time series were investigated and a structure of spanwise moving buffet cells with varying convection speed and wavelength could be observed.

Berbagai masalah dihadapi oleh Sakabe Buffet seperti menurunnya jumlah pengunjung yang menyebabkan omzet yang didapatkan oleh restoran cenderung menurun selama beberapa bulan terakhir. Penelitian inibertujuan untuk mengidentifikasi dan menganalisis faktor internal dan faktor eksternal yang mempengaruhi restoran, sehingga dapat merumuskan alternatif dan prioritas strategi pemasaran yang dapat diterapkan oleh restoran Sakabe Buffet. Penelitian ini menggunakan metode analisis deskriptif dan analisis perumusan tiga tahap yang terdiri dari tahap masukan, tahap pencocokan, dan tahap pengambilan keputusan. Alat analisis yang digunakan pada penelitian ini adalah matriks IFE, matriks EFE, matriks IE, matriks SWOT dan matriks QSP. Hasil analisis matriks IFE menghasilkan Sakabe Buffet memiliki tujuh kekuatan dan empat kelemahan, dan pada matriks EFE menghasilkan Sakabe Buffet memiliki empat peluang dan tujuh ancaman yang dihadapi. Berdasarkan matriks IE, Sakabe Buffet memiliki kondisi lingkungan internal kuat dan eksternal yang tinggi dan berada pada sel I, yaitu posisi tumbuh dan membangun. Purpose This paper aims to show results of numerical simulations of transonic flow around a supercritical airfoil at chord Reynolds number Rec = 3 × 106, with the aim of elucidating the mechanisms responsible for large-scale shock oscillations, namely, transonic buffet. Design/methodology/approach Unsteady Reynolds-averaged Navier–Stokes simulations and detached-eddy simulations provide a preliminary buffet map, while a high fidelity implicit large-eddy simulation with an upstream laminar boundary layer is used to ascertain the physical feasibility of the various buffet mechanisms. Numerical experiments with unsteady RANS highlight the role of waves travelling on pressure side in the buffet mechanism. Estimates of the propagation velocities of coherent disturbances and of acoustic waves are obtained, to check the validity of popular mechanisms based on acoustic feedback from the trailing edge. Findings Unsteady RANS numerical experiments demonstrate that the pressure side of the airfoil plays a marginal role in the buffet mechanism. Implicit LES data show that the only plausible self-sustaining mechanism involves waves scattered from the trailing edge and penetrating the sonic region from above the suction side shock. An interesting side result of this study is that buffet appears to be more intense in the case that the boundary layer state upstream of the shock is turbulent, rather than laminar. Originality/value The results of the study will be of interest to any researcher involved with transonic buffet.

An experimental investigation of the transonic flow past the laminar OALT25 airfoil has been conducted to analyze the impact of laminar flow upon the shock wave dynamics and the existence of a laminar buffet like phenomenon. Tests have been carried out at freestream Mach numbers varying in the range of 0.7–0.8, angle of attack from 0.5° to 4°, and with two tripping configurations at the upper surface of the wing. The (airfoil) chord based Reynolds number is about three million. Results obtained from pressure taps and sensors measurements, as well as Schlieren visualizations of the flow reveal the presence of a laminar buffet phenomenon in sharp contrast with the turbulent phenomenon, as it features a freestream- and chord-based normalized frequency of about unity while turbulent buffet occurs for a frequency close to 0.07 (Jacquin et al., AIAA J 2009; 47). A low-frequency mode, at a frequency of about 0.05 is also present in the laminar situation, notably lower than the high-frequency component. The latter exhibits strong oscillations of the shock foot and vertical wavelike deformations of the shock wave and the former moves the shock back and forth over a small portion of chord, quite similar to the turbulent phenomenon. The mean flow past the laminar wing is characterized by a laminar separation bubble under the shock foot, which likely contributes much to the novel dynamics revealed by the present experiments. Two control strategies of the unsteady shock wave are implemented, one consisting of three-dimensional bumps and one consisting of steady jets blowing transversely to the freestream. It is found that bumps provide a significant reduction of the buffet intensity in the laminar situation. The jets are able to completely remove the flow unsteadiness in both laminar and turbulent conditions.

Transonic flight has high economic benefits, but the appearance of transonic buffet limits the flight envelope. The shock control bump currently used for transonic buffet suppression tends to degrade the aerodynamic performance of the non-buffeting state. In this study, a smart skin system is used to eliminate the fluctuating load of transonic buffet by measuring the airfoil lift coefficient as the feedback signal and adjusting the local skin height using data-driven, model-free adaptive control. Since the actuator height is dynamically adjusted only after the occurrence of transonic buffet, the smart skin can completely suppress the fluctuating load and does not affect the aerodynamic performance in the non-buffeting state. The suppression effect of the proposed smart skin on transonic buffet is verified by numerical simulation of the flow. The simulation results show that due to the introduction of closed-loop control, the fluctuating load of transonic buffet can be effectively suppressed for different positions and maximum heights of the actuator. Even when the flow state changes, the robust smart skin system can also achieve the control goal. Therefore, smart skins combining flexible materials and control technologies have the potential to effectively improve the aerodynamic performance of aircraft.

Transonic buffet not only influences the structural integrity, handling quality and ride comfort, but also limits the flight envelope of transporters and airliners. To delay buffet onset and alleviate the buffet load, the effects of both steady and periodic tangential slot blowing are investigated. The results show that steady tangential blowing on the airfoil upper surface can postpone the buffet onset margin and evidently increase the lift coefficient at incidence angles near and above the buffet onset case of the clean airfoil. Under buffeting conditions of the clean airfoil, unsteady aerodynamic loads can be greatly suppressed by both steady and periodic blowing. The control effort is depicted as reduced wedge effect and weakened dynamic effect. The buffet mechanism includes (a) the feedback loop between the Kutta wave and the separation bubble under the shock foot, and (b) the interaction between the shear layer shed by the shockwave and Kutta waves. Under blowing conditions, the upstream creeping Kutta waves are prevented, and the intensity of the shear layer shed by the shockwave into separated flows is evidently reduced. At transonic flight conditions, the buffet caused by the interaction between the shock waves and the boundary layers can degrade an aircraft’s aerodynamic performance and even threaten its safety. In this paper, the shock control bumps, originally designed to reduce the wave drag at cruise speeds, are applied to enhance the robustness of the closed-loop buffet control system using the trailing-edge flap. For the OAT15A supercritical airfoil, a closed-loop buffet control system is first designed with a feedback signal of lift coefficient. Then, the shock control bumps designed for drag reduction are integrated into the active buffet control system. The results show that the closed-loop flap control can be greatly enhanced by coupling with the shock control bumps. At the steady state under control, the shock control bumps can slightly increase the airfoil lift–drag ratio. More importantly, the ranges of control parameters that can effectively suppress the buffet are significantly enlarged with the help of the bumps; thus, the robustness of the control system is greatly enhanced.

Buffeting flow on transonic aerofoils serves as a model problem for the more complex three-dimensional flows responsible for aeroplane buffet. The origins of transonic aerofoil buffet are linked to a global instability, which leads to shock oscillations and dramatic lift fluctuations. The problem is analysed using the Reynolds-averaged Navier–Stokes equations, which for the foreseeable future are a necessary approximation to cover the high Reynolds numbers at which transonic buffet occurs. These equations have been shown to reproduce the key physics of transonic aerofoil flows. Results from global-stability analysis are shown to be in good agreement with experiments and numerical simulations. The stability boundary, as a function of the Mach number and angle of attack, consists of an upper and a lower branch – the lower branch shows features consistent with a supercritical bifurcation. The unstable modes provide insight into the basic character of buffeting flow at near-critical conditions and are consistent with fully nonlinear simulations. The results provide further evidence linking the transonic buffet onset to a global instability.

Direct observation(s) of energy intake (EI) via buffet meals served in the laboratory are often carried out within short-term exercise intervention studies. The reproducibility of values obtained has not been assessed either under resting control conditions or post-exercise, in overweight and obese females. A total of fourteen sedentary, pre-menopausal females (BMI 30·0 (sd5·1) kg/m2) completed four trials; two exercise and two control. Each trial lasted 24 h spanning over 2 d; conducted from afternoon on day 1 and morning on day 2. An exercise session to expend 1·65 MJ was completed on day 1 of exercise trials, and three buffet meals were served during each trial. Reproducibility of post-exercise changes in energy and macronutrient intakes was assessed at each individual buffet meal by intraclass correlation coefficient (ri). Only therivalues for post-exercise changes in energy (ri0·44 (95 % CI − 0·03, 0·77),P = 0·03) and fat intake (ri0·51 (95 % CI 0·04, 0·81),P = 0·02) at the lunch buffet meal achieved statistical significance; however, theserivalues were weak and had large associated 95 % CI, which indicates a large degree of variability associated with these measurements. Energy and macronutrient intakes at the breakfast and evening buffet meals were not reproducible. This study concludes that the frequently used laboratory-based buffet meal method of assessing EI does not produce reliable, reproducible post-exercise changes in EI in overweight and obese women.

Transonic flow over a supercritical airfoil leads to the appearances of unsteady shock waves in theflow field. At certain flow conditions, the interaction of unsteady shock waves with boundary layer becomescomplex and generates self-excited shock oscillation, lift fluctuation and thus initiate the buffet. In the presentstudy, Reynolds averaged Navier-Stokes equations with k-? SST turbulence model has been applied to predictthe shock induced buffet onset for the flow over a supercritical airfoil NASA SC(2) 0714. The free streamtransonic Mach number is kept in the range of 0.71 to 0.75 while the angle of attack is varied in a wide range.The onset of buffet is confirmed by the fluctuating aerodynamic properties such as lift-coefficient, pressurecoefficient, static pressure and so on. The numerical method validation using the Reynolds equations and calculations were made for the case of infinite aspect ratio rectangular wing, which is streamed by a transonic unbounded air flow in buffet regime. It is shown, that instead of 2D flow, a periodical flow along the lateral direction is realized. Furthermore, the oscillations in time along the longitudinal direction (buffet) take place. The presence of the side wind tunnel walls deforms this periodical structure and changes the buffet frequency. Calculations of the wing-body combination flow show that the oscillations take place inside the restricted wing area both along longitudinal and lateral directions.

Abstract To develop an advanced way of designing transonic airfoils for industry, a reliable and user-friendly mesh generator and a robust CFD solver are necessary. Especially, the prediction of unsteady shock buffet phenomenon is always a focus for the CFD simulation of transonic airfoils. In this study, BOXERmesh (an automatic mesh generator) and NEWT (a robust CFD solver), which are developed by CFS (Cambridge Flow Solutions) in collaboration with MHI (Mitsubishi Heavy Industries), are used to perform the CFD simulation of NACA SC2-0714 transonic airfoil. CFD simulation is conducted at two different attack angles with Mach number as 0.74 and Reynold number as 1.5×107 (non-buffet: α=2°; shock buffet: α=3°). A hexahedral dominant mesh is generated by BOXERmesh with the cell number as 5.52 million. Both unsteady RANS (URANS) and LES are performed using the CFD solver NEWT. Specifically, the governing equation is discretized by central differencing scheme with 2nd order accuracy in space by applying Swanson and Turkel type artificial viscosity, and the Adams-Bashford time integration with the dual-time stepping method is applied for temporal discretization in the density-based solver. Results show CFD simulation could reproduce the time averaged chordwise distribution of pressure coefficient at the two conditions. Both URANS and LES successfully capture the unsteady shock buffet phenomenon when increasing attack angle from 2° to 3°. However, the calculated peak oscillation location and the shock buffet frequency are different between URANS and LES. Applying the same mesh resolution, URANS performances better than LES, with the deviation of the shock buffet frequency less than 6% (Exp.: 69 Hz; URANS: 73 Hz). The reason is considered as the wall-normal mesh refinement near the airfoil surface (y+∼66) being not enough for LES to accurately resolve the turbulence scale and capture the boundary layer separation behavior. On the other hand, URANS is thought to be enough to reproduce the periodic moving of the onset of boundary separation and to predict the main characteristics of the shock buffet phenomenon.
