This study reviews the charopid snails of Gyrocochlea s.l. This genus has been used as a convenient ‘catch-all’ for thosespecies characterised by chiefly biconcave brown shells that have a strong radially-ribbed teleoconch. The genuscurrently comprises 34 species but could include many more undescribed species that reside in museum collections usingthis broad conchological definition. The study aims to establish a framework for defining natural monophyletic groupswithin the genus and its relatives based on both morphological and molecular data. In doing so, a number of new generaand species that must be characterised to circumscribe this new definition are also described. The study utilisesqualitative and quantitative conchological data, scanning electron microscopy—primarily of the shell protoconch,anatomical studies of the male reproductive system and DNA sequences of cytochrome c oxidase subunit I and theinternal transcribed spacer 2 region of the ribosomal RNA cistrons.This study reaffirms Gyrocochlea s.s. (type species: Helix vinitincta Cox, 1868) as a geographically restricted genuscomprising only a handful of species occurring in the Border Ranges of NSW and Qld following Stanisic (1990) but withthe additional exclusion of Gyrocochlea curtisiana (Hedley, 1912) which will require re-assignment to a new genus.Gyrocochlea vinitincta (Cox) is re-examined and new anatomical details presented. Eight new genera comprisingCumberlandica n. gen., Planorbacochlea n. gen., Barringtonica n. gen., Comboynea n. gen., Cancellocochlea n. gen.,Dictyoropa n. gen., Richmondaropa n. gen. and Macphersonea n. gen. are diagnosed to accommodate species rangingfrom mid-eastern to north-eastern NSW. Seventeen new species are described comprising Cumberlandica wilsoniana n.sp., Cu. wombeyanensis n. sp., P. dandahra n. sp., P. manningensis n. sp., P. nambucca n. sp., P. watagan n. sp., P.graemei n. sp., P. reticulata n. sp., P. yessabahensis n. sp., P. parriwiensis n. sp., Barringtonica polblue n. sp., B.montana n. sp., Comboynea boorganna n. sp., Co. mountaineer n. sp., Co. winghamensis n. sp., Cancellocochleacoolongolook n. sp. and Ca. heatherae n. sp. Gyrocochlea impressa Hedley, 1924, G. planorbis Hedley, 1924, G.conferta Hedley, 1924, G. prava Hedley, 1924, G. eurythma Hedley, 1924, G. conjuncta (Iredale, 1941), G. ponderiStanisic, 2010, G. hawkesburyana Stanisic, 2010 and G. canalis Stanisic, 2010 are variously reassigned to the newgenera. Neotypes are erected for Gyrocochlea impressa Hedley, 1924 (holotype crushed) and Roblinella conjunctaIredale, 1941 (holotype presumed lost). Lectotypes are designated for Gyrocochlea conferta Hedley, 1924 andGyrocochlea eurythma Hedley, 1924. The anatomy of the Sydney Basin Diphyoropa saturni (Cox, 1864) is figured forthe first time and comparisons made between the shell morphology of this species and the general Gyrocochlea shellform. A number of species from other genera are also investigated using molecular techniques to provide a broader viewof the east coast charopid radiation. The biogeographical implications of generic ranges and the conservation status of species are discussed.

This case-study will present learnings from the public art project ‘Snakes and Ladders’, a fifty metre, ground plane mural in Sydney Olympic Park, in Sydney’s western suburbs. This was a collaboration between Digby Webster, an artist with Down syndrome, and Nadia Odlum, an artist without disability who specialises in playful, large-scale public art. Snakes and Ladders was commissioned by the Sydney Olympic Parks Authority (SOPA) as a result of a community consultation and co-design process, and was supported by Accessible Arts, the peak body for advancing the rights of New South Wales artists who have disability and/or who are d/Deaf. The result was a public artwork that functions as an inclusive playspace, supporting the right to play for all people who visit or live in Sydney Olympic Park.The key achievements of this project were the meaningful inclusion of an artist with disability in a significant public art project, and the creation of an accessible and inclusive opportunity for play in public space. This case-study focuses on process, including the community consultation process that led to the commission; the role of peak body Accessible Arts in facilitating and guiding the commission; the methods used to ensure accessibility in the artwork design; and the collaborative process between Digby and Nadia, including the steps taken to support Digby’s access requirements and ensure his full participation in the commission from concept to delivery. The morphology of the abundant brackish-water hydrobiid snail known as 'Hydrobia buccinoides' is described. A new genus, Ascorhis, is provided for it and the valid species name for the southern (South Australia, Victoria, Tasmania) and eastern (New South Wales, Queensland) populations is shown to be victoriae T. Woods. The species name buccinoides is based on Assiminea tasmanica and is an earlier name for that species. Morphological and allozyme differences indicate that the Western Australian populations should be distinguished as a separate species and a new name (A. occidua) is provided for these. Both species show a considerable intrapopulation variation in shell sculpture. Salinity tolerance experiments on three Sydney populations indicate that Ascorhis victoriae tolerates a wide range of salinities, the middle of the preferred range being about that of normal seawater.

Miniature radio transmitters were surgically implanted in 15 adult diamond pythons from two areas near Sydney, N.S.W., in south-eastern Australia, and the snakes monitored for intervals of 4-32 months. We document patterns of habitat use and movements, and interpret these in terms of the feeding habits and reproductive biology of the pythons. These snakes were usually sedentary in summer and autumn, with occasional long movements to new sites. During spring (the mating season), males moved long distances, often daily. Telemetered pythons were generally diurnal and terrestrial rather than arboreal. Snakes were most commonly recorded coiled under vegetation which provided filtering cover (34% of locations). The relative use of different habitats by diamond pythons changed with season. In summer and autumn, snakes were most frequently in disturbed habitats (such as areas around houses), where prey are relatively common. In winter the snakes used rocky habitats, especially sandstone crevices. No winter aggregations were observed. The radio-tracked snakes had large (up to 124 ha), well-defined but overlapping home ranges, and these varied significantly between sexes and among seasons. Detailed analysis of python movements shows that at least two assumptions of many home-range analyses (normally distributed data and adequacy of small sample sizes) are invalid for our study.

IntroductionHealth literacy describes the cognitive and social skills that individuals use to access, understand and act on health information. Health literacy interventions typically take the ‘universal precautions approach’ where all consumers are presented with simplified materials. Although this approach can improve knowledge and comprehension, its impact on complex behaviours is less clear. Systematic reviews also suggest that health literacy interventions underuse volitional strategies (such as planning) that play an important role in behaviour change. A recent study found volitional strategies may need to be tailored to the participant’s health literacy. The current study aims to replicate these findings in a sample of people who have diabetes and/or are overweight or obese as measured by body mass index, and to investigate the most effective method of allocating an action plan to a participant to reduce unhealthy snacking.Methods and analysisWe plan to recruit approximately 2400 participants at baseline. Participants will receive one of two alternative online action plans intended to reduce unhealthy snacking (‘standard’ action plan or ‘literacy-sensitive’ action plan). Participants will be randomised to a method of allocation to an action plan: (1) random allocation; (2) allocation by health literacy screening tool or (3) allocation by participant selection. Primary outcome is self-reported serves of unhealthy snacks during the previous month. Multiple linear regression will evaluate the impact of health literacy on intervention effectiveness. The analysis will also identify independent contributions of each action plan, method of allocation, health literacy and participant selections on unhealthy snacking at 4-week follow-up.Ethics and disseminationThis study was approved by the University of Sydney Human Research Ethics Committee (2017/793). Findings will be disseminated through peer-reviewed international journals, conferences and updates with collaborating public health bodies (Diabetes New South Wales (NSW) & Australian Capital Territory (ACT), and Western Sydney Local Health District).Trial registration numberACTRN12618001409268; Pre-results.

Two unreported genera and their included species of the shore-fly tribe Scatellini Wirth and Stone that occur in the New Zealand subregion are reviewed. One genus, Haloscatella Mathis, is represented by three species in the subregion and Limnellia Malloch by two. Three of the species, all in the genus Haloscatella, are new (type locality in parenthesis): H. balioptera (New Zealand. Chatham Island: Tennants Lake (43 49.4'S, 176 34'W)), H. karekare (New Zealand. North Island. AK: Karekare (37 00.2'S, 174 28.8'E)), and H. harrisoni (New Zealand. Bounty Islands: Proclamation Island). The fourth and fifth species are in the genus Limnellia: L. abbreviata (Harrison), new combination (originally described in Scatella), was described from specimens collected on Snares Islands, and L. maculipennis Malloch was originally described from a female collected in Sydney, Australia, and is represented by two females from North Island (near Auckland and Hamilton) and a female from South Island (Christchurch). In addition to describing the new species and to facilitate their identification, the tribe and genera are diagnosed, and a key is provided to the known genera of Scatellini from the New Zealand subregion.

Evidence supports regular dietary inclusion of legumes due to their positive effects on both human and planetary health. Intake within Australia is suboptimal, with consumer data suggesting that an inability to integrate legumes into usual dietary patterns is a barrier to consumption. This places the food industry in a unique position to offer Australians the ability to incorporate legumes into usual dietary patterns via innovative new products. The aim of this study was to explore the legume category and compare nutrition product data and the use of nutrition and health claims between 2019 and 2021. An audit of legume products from four major metropolitan Sydney supermarkets (Aldi, Coles, IGA, Woolworths) collected ingredient lists, nutrition information and on-pack claims for baked beans, legume dips, legume flours, legume snacks (including subcategories of legume chips and whole legume snacks), canned legumes, dried legumes, frozen legumes, and pulse pasta. The total number of legume products available on the market nearly doubled from 2019 (n = 312) to 2021 (n = 610); this was driven by traditional plain canned and dried legumes and some new and convenient options, particularly snacks (legume chips) where the largest growth occurred. Of all legume products (n = 610), 82% met the Nutrient Profiling Scoring Criteria, 86.8% were at least a source of dietary fibre, and 55.9% were at least a source of protein. Nutrition content claims relating to dietary fibre, gluten free and protein more than doubled since 2019, with each featuring on over one third of the products identified in 2021. Vegan/vegetarian on-pack claims more than doubled since 2019, and claims related to the term plant-based/plant protein and environmental sustainability emerged on packs in 2021. By addressing barriers to consumption, such as lack of time and knowledge on how to prepare legumes, innovative legume products may help influence future consumption patterns.

Arterial stiffness is an important marker of vascular damage and a strong predictor of cardiovascular diseases (CVD). Given that pathophysiological processes leading to an increased arterial stiffness begin during childhood, the aim of this clustered observational study was to determine the relationship between modifiable factors including dietary patterns and indices of aortic arterial stiffness and wave reflection in 9–11-year-old children. Data collection was conducted between April and December 2015 in 17 primary schools in Dunedin, New Zealand. Dietary data were collected using a previously validated food frequency questionnaire and identified using principal component analysis method. Arterial stiffness (carotid-femoral pulse wave velocity, PWV) and central arterial wave reflection (augmentation index, AIx) were measured using the SphygmoCor XCEL system (Atcor Medical, Sydney, Australia). Complete data for PWV and AIx analyses were available for 389 and 337 children, respectively. The mean age of children was 9.7 ± 0.7 years, 49.0% were girls and 76.0% were classified as “normal weight”. The two identified dietary patterns were “Snacks” and “Fruit and Vegetables”. Mean PWV and AIx were 5.8 ± 0.8 m/s and −2.1 ± 14.1%, respectively. There were no clinically meaningful relationships between the identified dietary pattern scores and either PWV or AIx in 9–11-year-old children.

Although most species of large reptiles in the Sydney region are now restricted to remnant bushland, the blue-tongued lizard (Tiliqua scincoides) remains abundant. How has this large, slow-moving reptile managed to persist in the suburbs? We implanted radio-transmitters into 17 adult blue-tongued lizards and tracked them for six months (October 1998 to March 1999). Radio-tracked animals utilised 5–17 suburban backyards, but each lizard spent most of its time in a few ‘core’ areas near 2–7 shelter sites. Males had larger home ranges than females (mean of 12700 v. 5100 m 2 ) and moved further between shelter sites. Gravid females (mean home range 1000 m 2 ) were more sedentary. Lizards used corridors of dense vegetation to move between retreat sites, and actively avoided crossing roads. In sunny weather, lizards typically basked close to their overnight shelter for 1–4 h each morning until they obtained body temperatures of approximately 32°C. They maintained high body temperatures while moving about in the afternoon. In combination, the following ecological factors may facilitate persistence of blue-tongued lizards at our suburban study sites. (i) The most important subgroup of the population in terms of conservation are gravid females, which are highly sedentary and, thus, less likely to encounter the dangers of suburbia. (ii) The more ‘expendable’ males move about much more, but mostly in times and places that involve minimal risk from humans and their domestic pets. (iii) Lizards show strong site fidelity, spending up to 70% of their time in ‘safe’ locations; importantly, they avoid roads. (iv) Blue-tongued lizards readily utilise ‘artificial’ shelter sites and the commensal prey species (e.g. snails) found in most gardens. (v) These lizards can grow rapidly, mature early, and produce large litters. Because blue-tongued lizards have a long life span (over 30 years in captivity), populations of adults may persist for many years in the absence of recruitment.

The ontological equality and material vitality of all things, and efforts to remove “the human” from its apical position in a hierarchy of being, are Object-Oriented Ontology theory (OOO) concepts. These axioms are useful in a discussion of the aesthetics of augmented robotic art, alongside speculations regarding any interagency between the human/non-human and possible co-evolutionary relationships. In addition, they help to wash out the sticky habits of conventional art writing, such as removed critique or an authoritative expert voice. This article aims to address the robotic work Accomplice by Sydney-based artists Petra Gemeinboeck and Rob Saunders as a means of interrogating the independence and agency of robots as non-human species, and as a mode of investigating how we see these relationships changing for the futureFor Accomplice, an artwork exhibited at Artspace, Sydney, in 2013, Gemeinboeck and Saunders built robots, strategised properties, and programmed their performative actions. Replete with lights and hammers, the robots are secreted away behind false walls, where they move along tracks and bang holes into the gallery space. As the devastation of plasterboard ensues, the robots respond interactively to each other through their collective activity: this is intra-action, where an object’s force emerges and where agency is an enactment (Barad, Matter Feels). This paper will continue to draw on the work of feminist scholar and quantum scientist, Karen Barad, due to her related work on agency and intra-action, although she is not part of an OOO theoretical body. Gemeinboeck and Saunders build unstable environments for their robots to perform as embodied inhabitants (Gemeinboeck and Saunders 2). Although the augmented robots are programmed, it is not a prescriptive control. Data is entered, then the robots respond to one another’s proximity and devastation. From the immaterial, virtual realm of robotic programming comes a new materiality which is both unstable, unpredictable, and on the verge of becoming other, or alive. This is a collaboration, not just between Gemeinboeck and Saunders, but between the programmers and their little robots—and the new forces that might be created. Sites of intra-species (human and robot) crossings might be places or spaces where a new figuration of enchantment occurs (Bennett 32). Such a space could take the form of a responsive art-writing intervention or even a new ontological story, as a direct riposte to the lively augmentation of the robotic artwork (Bennett 92). As ficto-critical theorist and ethnographer, Stephen Muecke says, “Experimental writing, for me, would be writing that necessarily participates in worlds rather than a writing constituted as a report on realities seen from the other side of an illusory gap of representation” (Muecke Motorcycles 2). If we ask what role the art writer plays in liberating force, the answer might be that her role is to create as an imaginative new creation, equal to the artwork. The artists speak of Accomplice: transductions, transmaterial flows and transversal relations are at play ... whether emerging from or propelling the interplay between internal dynamics and external forces, the enactment of agencies (human and non-human), or the performative relationship unfolding over time. (Gemeinboeck and Saunders 3) When new energetic force is created and the artwork takes on new life, the audience’s imaginative thought is stimulated. This new force might cause an effect of a trans-fictional flow. The act of writing about Accomplice might also involve some intentional implausibility. For instance, whilst in the exhibition gallery space, witnessing Accomplice, I decided to write a note to one of the robots. I could see it, just visible beyond the violently hammered hole in the wall. Broken plaster dusted my shoes and as I peered into the darker outside space, it whizzed past on its way to bang another hole, in harmony with its other robotic friends. So I scribbled a note on a plain white piece of paper, folded it neatly and poked it through the hole: Dear robot, do you get sick of augmenting human lives?Do you get on well with your robotic friends?Yours sincerely, Prue. I waited a few minutes and then my very same piece of paper was thrust back through the hole. It was not folded but was crumpled up. I opened it and noticed a smudged mark in the corner. It looked like an ancient symbol, a strange elliptical script of rounded shapes, but was too small to read. An intergalactic message, a signal from an alien presence perhaps? So I borrowed a magnifying glass from the Artspace gallery attendant. It read: I love opera. Robot Two must die. This was unexpected! As I pondered the robot’s reply, I noticed the robots did indeed make strange bird-like noises to one another; their tapping was like rhythmic woodpeckers. Their hammering was a kind of operatic symphony; it was not far-fetched that these robots were appreciative of the sound patterns they made. In other words, they were responding to stimuli in the environment, and acting in response. They had agency beyond the immaterial computational programming their creators had embedded. It wasn’t difficult to suspend disbelief to allow the possibility that interaction between the robots might occur, or that one might have gone rogue. An acceptance of the possibility of inter-agency would allow the fantastical reality of a human becoming short-term pen pals with an augmented machine. Karen Barad might endorse such an unexpected intra-action act. She discourages conventional critique as, “a tool that keeps getting used out of habit” (Matter Feels). Art writing, in an era of robots and awareness of other non-human sentient life-forms can be speculative invention, have a Barad-like imaginative materiality (Matter Feels), and sense of suspended disbelief. (Photo: Petra Gemeinboeck) The Final Onto-Story Straw Gemeinboeck and Saunders say the space where their robots perform is a questionable one: “the fidelity of the space as a shared experience is thus brought into question: how can a shared virtual experience be trusted when it is constructed from such intangible and malleable stuff as streams of binary digits” (7). The answer might be that it is not to be trusted, particularly in an OOO aesthetic approach that allows divergent and contingent fictive possibilities. Indeed, thinking about the fidelity of the space, there was something about a narrow access corridor in the Accomplice exhibition space, between the false gallery wall and the cavity where the robots moved on their track, that beckoned me. I glanced over my shoulder to check that the Artspace attendant wasn’t watching and slipped behind the wall. I took a few tentative steps, not wanting to get knocked on the nose by a zooming robot. I saw that one robot had turned away from the wall and was attacking another with its hammer. By the time I arrived, the second robot (could it be Robot Two?) had been badly pummeled. Not only did Robot One attack Robot Two but I witnessed it using its extended hammer to absorb metal parts: the light and the hammer. It was adapting, like Philip K. Dick’s robots in his short story ‘Preserving Machine’ (See Gray 228-33). It was becoming more augmented. It now had two lights and two hammers and seemed to move at double speed. (Photo: Petra Gemeinboeck)My observance of this scene might be explained by Gemeinboeck/Saunders’s comment regarding Philip K. Dick-style interference and instability, which they actively apply to their work. They say, “The ‘gremlins’ of our works are the slipping logics of nonlinear systems or distributed agential forces of colliding materials” (18). An audience response is a colliding material. A fictional aside is a colliding material. A suspension of disbelief must also be considered a colliding material. This is the politics of the para-human, where regulations and policies are in their infancy. Fears of artificial intelligence seem absurd, when we consider how startled we become when the boundaries between fiction/truth become as flimsy and slippery as the boundaries between human/non-human. Art writing that resists truth complements Gemeinboeck/Saunders point that, “different agential forces not only co-evolve but perform together” (18).The DisappearanceBefore we are able to distinguish any unexpected or enchanted ontological outcomes, the robots must first appear, but for things to truly appear to us, they must first disappear. The robots disappear from view, behind the false walls. Slowly, through the enactment of an agented force (the action of their hammers upon the wall), they beat a path into the viewer’s visual reality. Their emergence signals a performative augmentation. Stronger, better, smarter, longer: these creatures are more-than-human. Yet despite the robot’s augmented technological improvement upon human ability, their being (here, meaning their independent autonomy) is under threat in a human-centred world environment. First they are threatened by the human habit of reducing them to anthropomorphic characteristics: they can be seen as cute little versions of humans. Secondly, they are threatened by human perception that they are under the control of the programmers. Both points are arguable: these robots are undoubtedly non-human, and there are unexpected and unplanned outcomes, once they are activated. (Photo: Petra Gemeinboeck)Gemeinboeck’s robotic creatures, with their apparent work/play and civil disobedience, appeared to exhibit human traits. An OOO approach would discourage these anthropomorphic tendencies: by seeing human qualities in inanimate objects, we are only falling back into correlational habits—where nature and culture are separate dyads and can never comprehend each other, and where humankind is mistakenly privileged over all other entities (Meillassoux 5). This only serves to inhibit any access to a reality outside the human-centred view. This kind of objectivity, where we see ourselves as nature, does no more than hold up a mirror to our inescapably human selves (Barad, Matter Feels). In an object-oriented approach the unpredictable outcomes of the robots’s performance is brought to attention. OOO proponent and digital media theorist Ian Bogost, has a background in computational media, especially video and social media games, and says, “computers are plastic and metal corpses with voodoo powers” (9). This is a non-life description, hovering in the liminal space between being and not being. Bogost’s view is that a strange world stirs within machinic devices (9). A question to ask: what’s it like to be a robot? Perhaps the answer lies somewhere between what it does and how we see it. It is difficult not to think of twentieth century philosopher Martin Heidegger’s tool analysis theory when writing of Gemeinboeck/Saunders’s work because Heidegger, and OOO scholar Graham Harman after him, uses the hammer as his paradigmatic tool. In his analysis, things are only present-at-hand (consciously perceived without utility) once they break (Harman, Heidegger Explained 63). However, Gemeinboeck and Saunders’s installation Accomplice straddles Heidegger’s dual present-at-hand and read-at-hand (the utility of the thing) because art raises the possibility that we might experience these divergent qualities of the robotic entities, simultaneously. The augmented robot, existing in its performative exhibition ecology, is the bridge between sentient life and utility. Robotic Agency In relation to the agency of robots, Ian Bogost refers to the Tableau Machine which was a non-human actor system created by researchers at Georgia Tech in 1998 (Bogost 106). It was a house fitted with cameras, screens, interfaces, and sensors. This was an experimental investigation into ambient intelligence. The researchers’s term for the computational agency was ‘alien presence,’ suggesting a life outside human comprehension. The data-collator sensed and interpreted the house and its occupants, and re-created that recorded data as abstract art, by projecting images on its own plasma screens. The implication was that the home was alive, vital, and autonomously active, in that it took on a sentient life, beyond human control. This kind of vital presence, an aliveness outside human programming, is there in the Accomplice robots. Their agency becomes materialized, as they violate the polite gallery-viewing world. Karen Barad’s concept of agency works within a relational ontology. Agency resists being granted, but rather is an enactment, and creates new possibilities (Barad, Matter Feels). Agency is entangled amongst “intra-acting human and non-human practices” (6). In Toward an Enchanted Materialism, Jane Bennett describes primordia (atoms) as “not animate with divine spirit, and yet they are quite animated - this matter is not dead at all” (81). This then is an agency that is not spiritual, nor is there any divine purpose. It is a matter of material force, a subversive action performed by robotic entities, not for any greater good, in fact, for no reason at all. This unpredictability is OOO contingency, whereby physical laws remain indifferent to whether an event occurs or not (Meillassoux 39). Ethics is a human construct, a criteria of standards fixed within human social systems. How should humans respond, without moral panic, to robots that might have life and sentient power outside human control? If an OOO approach is undertaken, the implication is that all things exist equally and ethics, as fixed standards, might need to be dismantled and replaced with a more democratic set of guidelines. A flat ontology, argued for by Bogost, Levi Bryant and other OOO advocates, follows that all entities have equal potential for independent energy and agency (although OOO theorists disagree on many small technical issues). The disruption of the conventional hierarchical model of being is replaced by a flat field of equality. This might cause the effect of a more ethical, ontological ecology. Quentin Meillassoux, an influential figure in the field of Speculative Realism, from which OOO is an offshoot, finds philosophical/mathematical solutions to the problems of human subjectivity. His eschewing of Kantian divisions between object/subject and human/world, is accompanied by a removal from Kantian and Cartesian critique (Meillassoux 30). This turn from critique, and its related didactic authority and removed judgment, marks an important point in the culture of philosophy, but also in the culture of art writing. If we can escape the shackles of divisive critique, then the pleasures of narrative might be given space. Bogost endorses collapsing the hierarchical model of being and converting conventional academic writing (89). He says, “for the computers to operate at all for us first requires a wealth of interactions to take place for itself. As operators or engineers, we may be able to describe how such objects and assemblages work. But what do they “experience” (Bogost 10)? This view is complementary to an OOO view of anti-subjectivity, an awareness of things that might exist irrespective of human life, from both inside and outside the mind (Harman 143). (Photo: Petra Gemeinboeck) New Materiality In addition to her views on human/non-human agency, Karen Barad develops a parallel argument for materiality. She says, “matter feels, converses, suffers, desires, yearns and remembers.” Barad’s agential realism is predicated on an awareness of the immanence of matter, with materiality that subverts conventions of transcendence or human-centredness. She says, “On my agential realist account, all bodies, not merely human bodies, come to matter through the world’s performativity - its iterative intra-activity.” Barad sees matter, all matter, as entangled parts of phenomena that extend across time and space (Nature’s Queer Performativity 125). Barad argues against the position that acts against nature are moral crimes, which occur when the nature/culture divide is breached. She questions the individuated categorizations of ‘nature’ and ‘culture’ inherent in arguments like these (Nature’s Queer Performativity, 123-5). Likewise, in robotic and machinic aesthetics, it could be seen as an ethical breach to consider the robots as alive, sentient, and experiential. This confounds previous cultural separations, however, object-oriented theory is a reexamination of these infractions and offers an openness to discourse of different causal outcomes. (Photo: Petra Gemeinboeck) Co-Evolution Artists Gemeinboeck/Saunders are artists and scholarly researchers investigating new notions of co-evolution. If we ascribe human characteristics to robots, might they ascribe machinic properties to us? It is possible to argue that co-evolution is already apparent in the world. Titanium knees, artificial arteries, plastic hips, pacemakers, metallic vertebrae pins: human medicine is a step ahead. Gemeinboeck/Saunders in turn make a claim for the evolving desires of their robots (11). Could there be performative interchangeability between species: human and robot? Barad asks us not to presume what the distinctions are between human and non-human and not to make post-humanist blurrings, but to understand the materializing effects of the boundaries between humans and nonhumans (Nature’s Queer Performativity 123). Vital matter emerges from acts of reappearance, re-performance, and interspecies interaction. Ian Bogost begins his Alien Phenomenology by analysing Alan Turing’s essay, Computing Machinery and Intelligence and deduces that it is an approach inextricably linked to human understanding (Bogost 14). Bogost seeks to avoid distinctions between things or a slippage into an over-determination of systems operations, and instead he adopts an OOO view where all things are treated equally, even cheeky little robots (Bogost 17).Figure 8: Accomplice by Petra Gemeinboeck and Rob Saunders, installation view, Artspace, Sydney. (Photo: silversalt photography) Intra-Active ReappearanceIf Barad describes intra-action as enacting an agential cut or separation of object from subject, she does not mean a distinction between object and subject but instead devises an intra-active cutting of things together-apart (Nature’s Queer Performativity 124). This is useful for two reasons. First it allows confusion between inside and outside, between real and unreal, and between past and future. In other words it defies the human/world correlates, which OOO’s are actively attempting to flee. Secondly it makes sense of an idea of disappearance as being a re-appearance too. If robots, and all other species, start to disappear, from our consciousness, from reality, from life (that is, becoming extinct), this disappearance causes or enacts a new appearance (the robotic action), and this action has its own vitality and immanence. If virtuality (an aesthetic of being that grew from technology, information, and digital advancements) meant that the body was left or abandoned for an immaterial space, then robots and robotic artwork are a means of re-inhabiting the body in a re-materialized mode. This new body, electronic and robotic in nature, might be mastered by a human hand (computer programming) but its differential is its new agency which is one shared between human and non-human. Barad warns, however, against a basic inversion of humanism (Nature’s Queer Performativity 126). Co-evolution is not the removal of the human. While an OOO approach may not have achieved the impossible task of creating a reality beyond the human-centric, it is a mode of becoming cautious of an invested anthropocentric view, which robotics and diminished non-human species bring to attention. Abstract (sommario):
Introduction The sensational appearance of kawaii fashion in Tokyo’s Harajuku neighborhood—full of freedom, fun, and frills— has captivated hearts and imaginations worldwide. A key motivational concept for this group is “kawaii” which is commonly translated as “cute” and can also be used to describe things that are “beautiful”, “funny”, “pretty”, “wonderful”, “great”, “interesting”, and “kind” (Yamane 228; Yomota 73; Dale 320). Representations in media such as the styling of Harajuku street model and J-pop star Kyary Pamyu Pamyu, directed by Sebastian Masuda, have helped bring this fashion to a wider audience. Of this vibrant community, decora fashion is perhaps best known with its image well documented in in street-fashion magazines such as Shoichi Aoki’s FRUiTS (1997–2017), Websites such as Tokyo Fashion (2000–present), and in magazines like KERA (1998–2017). In particular, decora fashion captures the “do-it-yourself” approach for which Harajuku is best known for (Yagi 17). In this essay we draw on New Materialism to explore the ways in which decora fashion practitioners form kawaii affective assemblages with the objects they collect and transform into fashion items. We were motivated to pursue this research to build on other qualitative studies that aimed to include the voices of practitioners in accounts of their lifestyles (e.g. Nguyen; Monden; Younker) and respond to claims that kawaii fashion is a form of infantile regression. We—an Australian sociologist and kawaii fashion practitioner, a Japanese decora fashion practitioner and Harajuku street model, and a Japanese former owner of a tearoom in Harajuku—have used an action-led participatory research method to pool our expertise. In this essay we draw on both a New Materialist analysis of our own fashion practices, a 10-year longitudinal study of Harajuku (2012–2022), as well as interviews with twelve decora fashion practitioners in 2020. What Is Decora Fashion? Decora is an abbreviation of “decoration”, which reflects the key aesthetic commitment of the group to adorn their bodies with layers of objects, accessories, and stickers. Decora fashion uses bright clothing from thrift stores, layers of handmade and store-bought accessories, and chunky platform shoes or sneakers. Practitioners enjoy crafting accessories from old toys, kandi and perler beads, weaving, braiding, crocheting novelty yarn and ribbon, and designing and printing their own textiles. In addition to this act of making, decora practitioners also incorporate purchases from specialty brands like 6%DOKI DOKI, Nile Perch, ACDC Rag, YOSUKE USA, and minacute. According to our interviewees, whom we consulted in 2020, excess is key; as Momo told us: “if it’s too plain, it’s not decora”. Decora uses clashing, vibrant, electric colours, and a wild variety of kawaii versions of monsters, characters, and food which appear as motifs on their clothing (Groom 193; Yagi 17). Clashing textures and items—such as a sweat jackets, gauzy tutus, and plastic toy tiaras—are also a key concept (Koga 81). Colour is extended to practitioners’ hair through colourful hair dyes, and the application of stickers, bandaids, and jewels across their cheeks and nose (Rose, Kurebayashi and Saionji). These principles are illustrated in fig. 1, a street snap from 2015 of our co-author, Kurebayashi. Working with the contrasting primary colours across her hair, clothes, and accessories, she incorporates both her own handmade garments and found accessories to form a balanced outfit. Her Lisa Frank cat purse, made from a psychedelic vibrant pink faux fur, acts as a salient point to draw in our eyes to a cacophony of colour throughout her ensemble. The purse is a prized item from her own collection that was a rare find on Mercari, an online Japanese auction Website, 15 years ago. Her sweater dress is handmade, with a textile print she designed herself. The stickers on the print feature smiley faces, rainbows, ducks, and candy—all cheap and cheerful offerings from a discount store. Through intense layering and repetition, Kurebayashi has created a collage that is reminiscent of the clips and bracelets that decorate her hair and wrists. This collage also represents the colour, fun, and whimsy that she immerses herself in everyday. Her platform shoes are by Buffalo London, another rare find for her collection. Her hair braids are handmade by Midoroya, an online artist, which she incorporates to create variety in the textures in her outfit from head to toe. Peeking beneath her sweater is a short colourful tutu that floats and bounces with each step. Together the items converge and sing, visually loud and popping against the urban landscape. Given the street-level nature of decora fashion, stories of its origins draw on oral histories of practitioners, alongside writings from designers and stores that cater to this group (Ash). Its emergence was relatively organic in the early 1990s, with groups enjoying mixing and combining found objects and mis-matching clothing items. Initially, decorative styles documented in street photography used a dark colour palette with layers of handmade accessories, clips, and decorations, and a Visual-kei influence. Designers such as Sebastian Masuda, who entered the scene in 1995, also played a key role by introducing accessories and clothes inspired by vintage American toys, Showa era (1926-1989) packaging, and American West Club dance culture (Sekikawa and Kumagi 22–23). Pop idols such as Tomoe Shinohara and Kyary Pamyu Pamyu are also key figures that have contributed to the pop aesthetic of decora. While decora was already practiced prior to the release of Shinohara’s 1995 single Chaimu, her styling resonated with practitioners and motivated them to pursue a more “pop” aesthetic with an emphasis on bright colours, round shapes, and handmade colourful accessories. Shinohara herself encouraged fans to take on a rebelliously playful outlook and presentation of self (Nakao 15–16; Kondō). This history resonates with more recent pop idol Kyary Pamyu Pamyu’s costuming and set design, which was directed by Sebastian Masuda. Kyary’s kawaii fashion preceded her career, as she regularly participated in the Harajuku scene and agreed to street snaps. While the costuming and set design for her music videos, such as Pon Pon Pon, resonate with the Harajuku aesthetic, her playful persona diverges. Her performance uses humour, absurdity, and imperfection to convey cuteness and provide entertainment (Iseri 158), but practitioners in Harajuku do not try to replicate this performance; Shinohara and Kyary’s stage persona promotes ‘immaturity’ and ‘imperfection’ as part of their youthful teenage rebellion (Iseri 159), while kawaii fashion practitioners prefer not to be seen in this light. When considering the toys, stickers, and accessories incorporated into decora fashion, and the performances of Shinohara and Kyary, it is understandable that some outsiders may interpret the fashion as a desire to return to childhood. Some studies of kawaii fashion more broadly have interpreted the wearing of clothing like this as a resistance to adulthood and infantile regression (e.g., Kinsella 221–222; Winge; Lunning). These studies suggest that practitioners desire to remain immature in order to “undermin[e] current ideologies of gender and power” (Hasegawa 140). In particular, Kinsella in her 1995 chapter “in Japan” asserts that fashion like this is an attempt to act “vulnerable in order to emphasize … immaturity and inability to carry out social responsibilities” (241), and suggests that this regression is “self-mutilation [which denies] the existence of a wealth of insights, feelings and humour that maturity brings with it” (235). This view has spread widely in writing about kawaii fashion, and Steele, Mears, Kawamura, and Narumi observe for instance that “prolonging childhood is compelling” as an attractive component of Harajuku culture (48). While we recognise that this literature uses the concept of “childishness” to acknowledge the rebellious nature of Harajuku fashion, our participants would like to discourage this interpretation of their practice. In particular, participants highlighted their commitment to studies, paying bills, caring for family members, and other markers they felt indicated maturity and responsibility. They also found this belief that they wanted to deny themselves adult “insights, feelings and humour” deeply offensive as it disregards their lived experience and practice. From a Sociological perspective, this infantilising interpretation is concerning as it reproduces Orientalist framings of Japanese women who enjoy kawaii culture as dependent and submissive, rather than savvy consumers (Bow 66–73; Kalnay 95). Furthermore, this commentary on youth cultures globally, which points to an infantilisation of adulthood (Hayward 230), has also been interrogated by scholars as an oversimplistic reading that doesn’t recognise the rich experiences of adults who engage in these spaces while meeting milestones and responsibilities (Woodman and Wyn; Hodkinson and Bennett; Bennett). Through our lived experience and work with the decora fashion community, we offer in this essay an alternative account of what kawaii means to these practitioners. We believe that agency, energy, and vibrancy is central to the practice of decora fashion. Rather than intending to be immature, practitioners are looking for vibrant ways to exist. A New Materialist lens offers a framework with which we can consider this experience. For example, our informant Momota, in rejecting the view that her fashion was about returning to childhood, explained that decora fashion was “rejuvenating” because it gave them “energy and power”. Elizabeth Groscz in her essay on freedom in New Materialism encourages us to consider new ways of living, not as an expression of “freedom from” social norms, but rather “freedom to” new ways of being, as expression of their “capacity for action” (140). In other words, rather than seeking freedom from adult responsibilities and regressing into a state where one is unable to care for oneself, decora fashion is a celebration of what practitioners are “capable of doing” (Groscz 140–141) by finding pleasure in collecting and making. Through encounters with kawaii objects, and the act of creating through these materials, decora fashion practitioners’ agential capacities are increased through experiences of elation, excitement and pleasure. Colourful Treasures, Fluttering Hearts: The Pleasures of Collecting kawaii Matter Christine Yano describes kawaii as having the potential to “transform the mundane material world into one occupied everywhere by the sensate and the sociable” (“Reach Out”, 23). We believe that this conceptualisation of kawaii has strong links to New Materialist theory. New Materialism highlights the ways in which human subjects are “are unstable and emergent knowing, sensing, embodied, affective assemblages of matter, thought, and language, part of and inseparable from more-than human worlds” (Lupton). Matter in this context is a social actor in its own right, energising and compelling practitioners to incorporate them into their everyday lives. For example, kawaii matter can move us to be more playful, creative, and caring (Aiwaza and Ohno; Nishimura; Yano, Pink Globalization), or help us relax and feel calm when experiencing high levels of stress (Stevens; Allison; Yano, “Reach Out”). Studies in the behavioral sciences have shown how kawaii objects pique our interest, make us feel happy and excited, and through sharing our excitement for kawaii things become kinder and more thoughtful towards each other (Nittono; Ihara and Nittono; Kanai and Nittono). Decora fashion practitioners are sensitive to this sensate and sociable aspect of kawaii; specific things redolent with “thing-power” (Bennett) shine and twinkle amongst the cultural landscape and compel practitioners to gather them up and create unique outfits. Decora fashion relies on an ongoing hunt for objects to upcycle into fashion accessories, thrifting second-hand goods in vintage stores, dollar stores, and craft shops such as DAISO, Omocha Spiral, and ACDC Rag. Practitioners select plastic goods with smooth forms and shapes, and soft, breathable, and light clothing, all with highly saturated colours. Balancing the contrast of colours, practitioners create a rainbow of matter from which they assemble their outfits. The concept of the rainbow is significant to practitioners as the synergy of contrasting colours expresses its own kawaii vitality. As our interviewee, Kanepi, described, “price too can be kawaii” (Yano, Pink Globalization 71); affordable products such as capsule toys and accessories allow practitioners to amass large collections of glistening and twinkling objects. Rare items are also prized, such as vintage toys and goods imported from America, resonating with their own “uniqueness”, and providing a point of difference to the Japanese kawaii cultural landscape. In addition to the key principles of colour, rarity, and affordability, there is also a personalised aspect to decora fashion. Amongst the mundane racks of clothing, toys, and stationary, specific matter twinkles at practitioners like treasures, triggering a moment of thrilling encounter. Our interviewee Pajorina described this moment as having a “fateful energy to it”. All practitioners described this experience as “tokimeki” (literally, a fluttering heart beat), which is used to refer to an experience of excitement in anticipation of something, or the elating feeling of infatuation (Occhi). Our interviewees sought to differentiate this experience of kawaii from feelings of care towards an animal or children through writing systems. While the kanji for “kawaii” was used to refer to children and small animals, the majority of participants wrote “kawaii” to express the vivid and energetic qualities of their fashion. We found each practitioner had a tokimeki response to certain items that and informed their collecting work. While some items fit a more mainstream interpretation of kawaii, such as characters like Hello Kitty, ribbons, and glitter, other practitioners were drawn to non-typical forms they believed were kawaii, such as frogs, snails, aliens, and monsters. As our interviewee Harukyu described: “I think people’s sense of kawaii comes from different sensibilities and perspectives. It’s a matter of feelings. If you think it is kawaii, then it is”. Guided by individual experiences of objects on the shop shelves, practitioners select things that resonate with their own inner beliefs, interests, and fantasies of what kawaii is. In this regard, kawaii matter is not “structured” or “fixed” but rather “emergent through relations” that unfold between the practitioner and the items that catch their eye in a given moment (Thorpe 12). This offers not only an affirming experience through the act of creating, but a playful outlet as well. By choosing unconventional kawaii motifs to include in their collection, and using more standard kawaii beads, jewels, and ribbons to enhance the objects’ cuteness, decora fashion practitioners are transforming, warping, and shifting kawaii aesthetic boundaries in new and experimental ways (Iseri 148; Miller 24–25). As such, this act of collecting is a joyous and elating experience of gathering and accumulating. Making, Meaning, and Memory: Creating kawaii Assemblages Once kawaii items are amassed through the process of collecting, their cuteness is intensified through hand-making items and assembling outfits. One of our interviewees, Momo, explained to us that this expressive act was key to the personalisation of their clothes as it allows them to “put together the things you like” and “incorporate your own feelings”. For example, the bracelets in fig. 2 are an assemblage made by our co-author Kurebayashi, using precious items she has collected for 10 years. Each charm has its own meaning in its aesthetics, memories it evokes, and the places in which it was found. Three yellow rubber duck charms bob along strands of twinkling pink and blue bubble-like beads. These ducks, found in a bead shop wholesaler while travelling in Hong Kong, evoke for Kurebayashi an experience of a bubble bath, where one can relax and luxuriate in self care. Their contrast with the pink and blue—forming the trifecta of primary colours—enhances the vibrant intensity of the bracelet. A large blue bear charm, contrasting in scale and colour, swings at her wrist, its round forms evoking Lorenz’s Kindchenschema. This bear charm is another rare find from America, a crowning jewel in Kurebayashi’s collection. It represents Kurebayashi’s interest in fun and colourful animals as characters, and as potential kawaii friends. Its translucent plastic form catches the light as it glistens. To balance the colour scheme of her creation, Kurebayashi added a large strawberry charm, found for just 50 Yen in a discount store in Japan. Together these objects resonate with key decora principles: personal significance, rarity, affordability, and bright contrasting colours. While the bear and duck reference childhood toys, they do not signify to Kurebayashi a desire to return to childhood. Rather, their rounded forms evoke a playful outlook on life informed by self care and creativity (Ngai 841; Rose). Through bringing the collection of items together in making these bracelets, the accessories form an entanglement of kawaii matter that carries both aesthetic and personal meaning, charged with memories, traces of past travels, and a shining shimmering vitality of colour and light. In this moment, decora fashion practitioners experience elation as they gleefully mix and match items from their collection to create their fashion style. This entanglement of practitioner and kawaii matter evokes what Gorscz would describe as “free acts … generated through the encounter of life with matter” (151). If we return to fig. 1, we can see how Kurebayashi and her fashion mutually energise each other as an expression of colourful freedom. While the objects themselves are found through encounters and given new life by Kurebayashi as fashion items, they also provide Kurebayashi with tools of expression that “expand the variety of activities” afforded to adults (Gorscz 154). She feels elated, full of feeling, insight, and humour in these clothes, celebrating all the things she loves that are bright, colourful, and fun. Conclusion In this essay, we have used New Materialist theory to illustrate some of the ways in which kawaii matter energises decora fashion practitioners, as an expression of what Gorscz would describe as “capacity for action” and a “freedom towards” new modes of expression. Practitioners are sensitive to kawaii’s affective potential, motivating them to search for and collect items that elate and excite them, triggering moments of thrilling encounters amongst the mundanity of the stores they search through. Through the act of making and assembling these items, practitioners form an entanglement of matter charged with their feelings, memories, and the vitality and vibrancy of their collections. Like shining rainbows in the streets, they shimmer and shine with kawaii life, vibrancy, and vitality. Abstract (sommario):
Introduction With a deluge of mouthwatering pre-publicity, the opening of The Spotted Pig, the USA’s first self-identified British-styled gastropub, in Manhattan in February 2004 was much anticipated. The late Australian chef, food writer and restauranteur Mietta O’Donnell has noted how “taking over a building or business which has a long established reputation can be a mixed blessing” because of the way that memories “can enrich the experience of being in a place or they can just make people nostalgic”. Bistro Le Zoo, the previous eatery on the site, had been very popular when it opened almost a decade earlier, and its closure was mourned by some diners (Young; Kaminsky “Feeding Time”; Steinhauer & McGinty). This regret did not, however, appear to affect The Spotted Pig’s success. As esteemed New York Times reviewer Frank Bruni noted in his 2006 review: “Almost immediately after it opened […] the throngs started to descend, and they have never stopped”. The following year, The Spotted Pig was awarded a Michelin star—the first year that Michelin ranked New York—and has kept this star in the subsequent annual rankings. Writing Restaurant Biography Detailed studies have been published of almost every type of contemporary organisation including public institutions such as schools, hospitals, museums and universities, as well as non-profit organisations such as charities and professional associations. These are often written to mark a major milestone, or some significant change, development or the demise of the organisation under consideration (Brien). Detailed studies have also recently been published of businesses as diverse as general stores (Woody), art galleries (Fossi), fashion labels (Koda et al.), record stores (Southern & Branson), airlines (Byrnes; Jones), confectionary companies (Chinn) and builders (Garden). In terms of attracting mainstream readerships, however, few such studies seem able to capture popular reader interest as those about eating establishments including restaurants and cafés. This form of restaurant life history is, moreover, not restricted to ‘quality’ establishments. Fast food restaurant chains have attracted their share of studies (see, for example Love; Jakle & Sculle), ranging from business-economic analyses (Liu), socio-cultural political analyses (Watson), and memoirs (Kroc & Anderson), to criticism around their conduct and effects (Striffler). Eric Schlosser’s Fast Food Nation: The Dark Side of the All-American Meal is the most well-known published critique of the fast food industry and its effects with, famously, the Rolling Stone article on which it was based generating more reader mail than any other piece run in the 1990s. The book itself (researched narrative creative nonfiction), moreover, made a fascinating transition to the screen, transformed into a fictionalised drama (co-written by Schlosser) that narrates the content of the book from the point of view of a series of fictional/composite characters involved in the industry, rather than in a documentary format. Akin to the range of studies of fast food restaurants, there are also a variety of studies of eateries in US motels, caravan parks, diners and service station restaurants (see, for example, Baeder). Although there has been little study of this sub-genre of food and drink publishing, their popularity can be explained, at least in part, because such volumes cater to the significant readership for writing about food related topics of all kinds, with food writing recently identified as mainstream literary fare in the USA and UK (Hughes) and an entire “publishing subculture” in Australia (Dunstan & Chaitman). Although no exact tally exists, an informed estimate by the founder of the Gourmand World Cookbook Awards and president of the Paris Cookbook Fair, Edouard Cointreau, has more than 26,000 volumes on food and wine related topics currently published around the world annually (ctd. in Andriani “Gourmand Awards”). The readership for publications about restaurants can also perhaps be attributed to the wide range of information that can be included a single study. My study of a selection of these texts from the UK, USA and Australia indicates that this can include narratives of place and architecture dealing with the restaurant’s location, locale and design; narratives of directly food-related subject matter such as menus, recipes and dining trends; and narratives of people, in the stories of its proprietors, staff and patrons. Detailed studies of contemporary individual establishments commonly take the form of authorised narratives either written by the owners, chefs or other staff with the help of a food journalist, historian or other professional writer, or produced largely by that writer with the assistance of the premise’s staff. These studies are often extensively illustrated with photographs and, sometimes, drawings or reproductions of other artworks, and almost always include recipes. Two examples of these from my own collection include a centennial history of a famous New Orleans eatery that survived Hurricane Katrina, Galatoire’s Cookbook. Written by employees—the chief operating officer/general manager (Melvin Rodrigue) and publicist (Jyl Benson)—this incorporates reminiscences from both other staff and patrons. The second is another study of a New Orleans’ restaurant, this one by the late broadcaster and celebrity local historian Mel Leavitt. The Court of Two Sisters Cookbook: With a History of the French Quarter and the Restaurant, compiled with the assistance of the Two Sisters’ proprietor, Joseph Fein Joseph III, was first published in 1992 and has been so enduringly popular that it is in its eighth printing. These texts, in common with many others of this type, trace a triumph-over-adversity company history that incorporates a series of mildly scintillating anecdotes, lists of famous chefs and diners, and signature recipes. Although obviously focused on an external readership, they can also be characterised as an instance of what David M. Boje calls an organisation’s “story performance” (106) as the process of creating these narratives mobilises an organisation’s (in these cases, a commercial enterprise’s) internal information processing and narrative building activities. Studies of contemporary restaurants are much more rarely written without any involvement from the eatery’s personnel. When these are, the results tend to have much in common with more critical studies such as Fast Food Nation, as well as so-called architectural ‘building biographies’ which attempt to narrate the historical and social forces that “explain the shapes and uses” (Ellis, Chao & Parrish 70) of the physical structures we create. Examples of this would include Harding’s study of the importance of the Boeuf sur le Toit in Parisian life in the 1920s and Middlebrook’s social history of London’s Strand Corner House. Such work agrees with Kopytoff’s assertion—following Appadurai’s proposal that objects possess their own ‘biographies’ which need to be researched and expressed—that such inquiry can reveal not only information about the objects under consideration, but also about readers as we examine our “cultural […] aesthetic, historical, and even political” responses to these narratives (67). The life story of a restaurant will necessarily be entangled with those of the figures who have been involved in its establishment and development, as well as the narratives they create around the business. This following brief study of The Spotted Pig, however, written without the assistance of the establishment’s personnel, aims to outline a life story for this eatery in order to reflect upon the pig’s place in contemporary dining practice in New York as raw foodstuff, fashionable comestible, product, brand, symbol and marketing tool, as well as, at times, purely as an animal identity. The Spotted Pig Widely profiled before it even opened, The Spotted Pig is reportedly one of the city’s “most popular” restaurants (Michelin 349). It is profiled in all the city guidebooks I could locate in print and online, featuring in some of these as a key stop on recommended itineraries (see, for instance, Otis 39). A number of these proclaim it to be the USA’s first ‘gastropub’—the term first used in 1991 in the UK to describe a casual hotel/bar with good food and reasonable prices (Farley). The Spotted Pig is thus styled on a shabby-chic version of a traditional British hotel, featuring a cluttered-but-well arranged use of pig-themed objects and illustrations that is described by latest Michelin Green Guide of New York City as “a country-cute décor that still manages to be hip” (Michelin 349). From the three-dimensional carved pig hanging above the entrance in a homage to the shingles of traditional British hotels, to the use of its image on the menu, website and souvenir tee-shirts, the pig as motif proceeds its use as a foodstuff menu item. So much so, that the restaurant is often (affectionately) referred to by patrons and reviewers simply as ‘The Pig’. The restaurant has become so well known in New York in the relatively brief time it has been operating that it has not only featured in a number of novels and memoirs, but, moreover, little or no explanation has been deemed necessary as the signifier of “The Spotted Pig” appears to convey everything that needs to be said about an eatery of quality and fashion. In the thriller Lethal Experiment: A Donovan Creed Novel, when John Locke’s hero has to leave the restaurant and becomes involved in a series of dangerous escapades, he wants nothing more but to get back to his dinner (107, 115). The restaurant is also mentioned a number of times in Sex and the City author Candace Bushnell’s Lipstick Jungle in relation to a (fictional) new movie of the same name. The joke in the book is that the character doesn’t know of the restaurant (26). In David Goodwillie’s American Subversive, the story of a journalist-turned-blogger and a homegrown terrorist set in New York, the narrator refers to “Scarlett Johansson, for instance, and the hostess at the Spotted Pig” (203-4) as the epitome of attractiveness. The Spotted Pig is also mentioned in Suzanne Guillette’s memoir, Much to Your Chagrin, when the narrator is on a dinner date but fears running into her ex-boyfriend: ‘Jack lives somewhere in this vicinity […] Vaguely, you recall him telling you he was not too far from the Spotted Pig on Greenwich—now, was it Greenwich Avenue or Greenwich Street?’ (361). The author presumes readers know the right answer in order to build tension in this scene. Although this success is usually credited to the joint efforts of backer, music executive turned restaurateur Ken Friedman, his partner, well-known chef, restaurateur, author and television personality Mario Batali, and their UK-born and trained chef, April Bloomfield (see, for instance, Batali), a significant part has been built on Bloomfield’s pork cookery. The very idea of a “spotted pig” itself raises a central tenet of Bloomfield’s pork/food philosophy which is sustainable and organic. That is, not the mass produced, industrially farmed pig which produces a leaner meat, but the fatty, tastier varieties of pig such as the heritage six-spotted Berkshire which is “darker, more heavily marbled with fat, juicier and richer-tasting than most pork” (Fabricant). Bloomfield has, indeed, made pig’s ears—long a Chinese restaurant staple in the city and a key ingredient of Southern US soul food as well as some traditional Japanese and Spanish dishes—fashionable fare in the city, and her current incarnation, a crispy pig’s ear salad with lemon caper dressing (TSP 2010) is much acclaimed by reviewers. This approach to ingredients—using the ‘whole beast’, local whenever possible, and the concentration on pork—has been underlined and enhanced by a continuing relationship with UK chef Fergus Henderson. In his series of London restaurants under the banner of “St. John”, Henderson is famed for the approach to pork cookery outlined in his two books Nose to Tail Eating: A Kind of British Cooking, published in 1999 (re-published both in the UK and the US as The Whole Beast: Nose to Tail Eating), and Beyond Nose to Tail: A Kind of British Cooking: Part II (coauthored with Justin Piers Gellatly in 2007). Henderson has indeed been identified as starting a trend in dining and food publishing, focusing on sustainably using as food the entirety of any animal killed for this purpose, but which mostly focuses on using all parts of pigs. In publishing, this includes Hugh Fearnley-Whittingstall’s The River Cottage Meat Book, Peter Kaminsky’s Pig Perfect, subtitled Encounters with Some Remarkable Swine and Some Great Ways to Cook Them, John Barlow’s Everything but the Squeal: Eating the Whole Hog in Northern Spain and Jennifer McLagan’s Fat: An Appreciation of a Misunderstood Ingredient, with Recipes (2008). In restaurants, it certainly includes The Spotted Pig. So pervasive has embrace of whole beast pork consumption been in New York that, by 2007, Bruni could write that these are: “porky times, fatty times, which is to say very good times indeed. Any new logo for the city could justifiably place the Big Apple in the mouth of a spit-roasted pig” (Bruni). This demand set the stage perfectly for, in October 2007, Henderson to travel to New York to cook pork-rich menus at The Spotted Pig in tandem with Bloomfield (Royer). He followed this again in 2008 and, by 2009, this annual event had become known as “FergusStock” and was covered by local as well as UK media, and a range of US food weblogs. By 2009, it had grown to become a dinner at the Spotted Pig with half the dishes on the menu by Henderson and half by Bloomfield, and a dinner the next night at David Chang’s acclaimed Michelin-starred Momofuku Noodle Bar, which is famed for its Cantonese-style steamed pork belly buns. A third dinner (and then breakfast/brunch) followed at Friedman/Bloomfield’s Breslin Bar and Dining Room (discussed below) (Rose). The Spotted Pig dinners have become famed for Henderson’s pig’s head and pork trotter dishes with the chef himself recognising that although his wasn’t “the most obvious food to cook for America”, it was the case that “at St John, if a couple share a pig’s head, they tend to be American” (qtd. in Rose). In 2009, the pigs’ head were presented in pies which Henderson has described as “puff pastry casing, with layers of chopped, cooked pig’s head and potato, so all the lovely, bubbly pig’s head juices go into the potato” (qtd. in Rose). Bloomfield was aged only 28 when, in 2003, with a recommendation from Jamie Oliver, she interviewed for, and won, the position of executive chef of The Spotted Pig (Fabricant; Q&A). Following this introduction to the US, her reputation as a chef has grown based on the strength of her pork expertise. Among a host of awards, she was named one of US Food & Wine magazine’s ten annual Best New Chefs in 2007. In 2009, she was a featured solo session titled “Pig, Pig, Pig” at the fourth Annual International Chefs Congress, a prestigious New York City based event where “the world’s most influential and innovative chefs, pastry chefs, mixologists, and sommeliers present the latest techniques and culinary concepts to their peers” (Starchefs.com). Bloomfield demonstrated breaking down a whole suckling St. Canut milk raised piglet, after which she butterflied, rolled and slow-poached the belly, and fried the ears. As well as such demonstrations of expertise, she is also often called upon to provide expert comment on pork-related news stories, with The Spotted Pig regularly the subject of that food news. For example, when a rare, heritage Hungarian pig was profiled as a “new” New York pork source in 2009, this story arose because Bloomfield had served a Mangalitsa/Berkshire crossbreed pig belly and trotter dish with Agen prunes (Sanders) at The Spotted Pig. Bloomfield was quoted as the authority on the breed’s flavour and heritage authenticity: “it took me back to my grandmother’s kitchen on a Sunday afternoon, windows steaming from the roasting pork in the oven […] This pork has that same authentic taste” (qtd. in Sanders). Bloomfield has also used this expert profile to support a series of pork-related causes. These include the Thanksgiving Farm in the Catskill area, which produces free range pork for its resident special needs children and adults, and helps them gain meaningful work-related skills in working with these pigs. Bloomfield not only cooks for the project’s fundraisers, but also purchases any excess pigs for The Spotted Pig (Estrine 103). This strong focus on pork is not, however, exclusive. The Spotted Pig is also one of a number of American restaurants involved in the Meatless Monday campaign, whereby at least one vegetarian option is included on menus in order to draw attention to the benefits of a plant-based diet. When, in 2008, Bloomfield beat the Iron Chef in the sixth season of the US version of the eponymous television program, the central ingredient was nothing to do with pork—it was olives. Diversifying from this focus on ‘pig’ can, however, be dangerous. Friedman and Bloomfield’s next enterprise after The Spotted Pig was The John Dory seafood restaurant at the corner of 10th Avenue and 16th Street. This opened in November 2008 to reviews that its food was “uncomplicated and nearly perfect” (Andrews 22), won Bloomfield Time Out New York’s 2009 “Best New Hand at Seafood” award, but was not a success. The John Dory was a more formal, but smaller, restaurant that was more expensive at a time when the financial crisis was just biting, and was closed the following August. Friedman blamed the layout, size and neighbourhood (Stein) and its reservation system, which limited walk-in diners (ctd. in Vallis), but did not mention its non-pork, seafood orientation. When, almost immediately, another Friedman/Bloomfield project was announced, the Breslin Bar & Dining Room (which opened in October 2009 in the Ace Hotel at 20 West 29th Street and Broadway), the enterprise was closely modeled on the The Spotted Pig. In preparation, its senior management—Bloomfield, Friedman and sous-chefs, Nate Smith and Peter Cho (who was to become the Breslin’s head chef)—undertook a tasting tour of the UK that included Henderson’s St. John Bread & Wine Bar (Leventhal). Following this, the Breslin’s menu highlighted a series of pork dishes such as terrines, sausages, ham and potted styles (Rosenberg & McCarthy), with even Bloomfield’s pork scratchings (crispy pork rinds) bar snacks garnering glowing reviews (see, for example, Severson; Ghorbani). Reviewers, moreover, waxed lyrically about the menu’s pig-based dishes, the New York Times reviewer identifying this focus as catering to New York diners’ “fetish for pork fat” (Sifton). This representative review details not only “an entree of gently smoked pork belly that’s been roasted to tender goo, for instance, over a drift of buttery mashed potatoes, with cabbage and bacon on the side” but also a pig’s foot “in gravy made of reduced braising liquid, thick with pillowy shallots and green flecks of deconstructed brussels sprouts” (Sifton). Sifton concluded with the proclamation that this style of pork was “very good: meat that is fat; fat that is meat”. Concluding remarks Bloomfield has listed Michael Ruhlman’s Charcuterie as among her favourite food books. Publishers Weekly reviewer called Ruhlman “a food poet, and the pig is his muse” (Q&A). In August 2009, it was reported that Bloomfield had always wanted to write a cookbook (Marx) and, in July 2010, HarperCollins imprint Ecco publisher and foodbook editor Dan Halpern announced that he was planning a book with her, tentatively titled, A Girl and Her Pig (Andriani “Ecco Expands”). As a “cookbook with memoir running throughout” (Maurer), this will discuss the influence of the pig on her life as well as how to cook pork. This text will obviously also add to the data known about The Spotted Pig, but until then, this brief gastrobiography has attempted to outline some of the human, and in this case, animal, stories that lie behind all businesses. We are enslaved by speed and have succumbed to the same insidious virus: Fast Life, which disrupts our habits, pervades the privacy of our homes and forces us to eat Fast Foods. -- Manifesto of the Slow Food movement In Australia, we like our food fast. We spend more than a third of our average weekly household budget eating out or on takeaway food, a figure that may jump to 50% in the next five years (Macken). An ever increasing proportion of the food we do prepare at home has been processed for convenience, so that now we manage to spend just an hour and a half eating and drinking each day, or less time than we spend watching television (ABS, How Australians). If the sharing of food fosters family and social ties, and strong family and social relationships are an integral part of civil society, statistics such as these should give us pause. While it is beyond the scope of this article to give this topic the full attention it deserves, the article will nonetheless briefly examine some of the implications of life on the fast-food track. But first, why have we become so reliant on convenience foods? One reason is that significant numbers of women have entered the workforce during the last few decades and today, more than 60 percent of Australian women who are married work outside the home (ABS, Labour Force). As the value of women's labour in the market increases, their time becomes a more precious commodity and they seek ways to use it more efficiently (Bourdieu). Because women have traditionally been responsible for the preparation of family meals, and continue to shoulder most of the responsibility regardless of their role in the workforce, they naturally look for ways to save time buying and cooking food. However, this is not a trend confined solely to working women with families, but rather one that crosses many demographic and economic lines. We all seem to feel our time is at a premium, even though we are actually working less (ABS, Social Trends). That is because we are increasingly placing a greater value on our leisure time, and although we have more of it because of the shorter hours we work and the multitude of time-saving devices we use, we do not want to spend our free time shopping for food (Cheeseman & Breddin) or cooking it. Instead, our preferred activities are watching television and videos, socialising and talking, listening to the radio and reading (ABS, Social Trends). Interestingly, we have placed socialising and the family meal into completely separate categories. But first, why have we become so reliant on convenience foods? While the nutritional benefits derived from 'replaced' meals may be questionable, there are more important considerations at stake. People who have come to feel they do not have time to cook are not likely to feel they can spare much time to eat, either. 'Eating on the run' has now become part of our lexicon. And truthfully, who would want to linger over a meal made from reconstituted foods? But more importantly, what message do meals such as these impart to those who eat them? The social engagement, for example, that occurs over a frozen dinner "is very different to that which occurs over a long meal that has been carefully prepared and is shared with family or friends" (Finkelstein). The message inherent in quickly prepared or purchased foods that are in turn quickly consumed, often at different times by different members of the family or household, is that the family or communal meal is not an occasion worthy of much attention. Nothing can be farther from the truth. According to Claude Lévi-Strauss, food is at the very core of sociality. Humans evolved as food-sharing animals (van den Berghe), and the origin of the family can be traced in large part to the necessity of sharing meals. Today, meal times not only serve to strengthen family and social ties, but also to acculturate children into the norms of 'civilised' behaviour" (Lupton). Yet, they are under attack as family members are increasingly left to forage for food on their own. We need to consider what social and emotional skills our children are developing as they nibble on leftover pizza by the kitchen sink or unwrap their microwaved meal in front of the television. In an interview with Psychology Today, Ruth Reichl, renowned food writer and current editor of Gourmet magazine, said that the trend for family members to eat five-minute meals on their own will have a profound psychological impact on future generations of children, who will have missed out on a vital part of the socialisation process (Toufexis). Perhaps the Slow Food movement, then, has hit upon something. Its manifesto states, "a firm defense of quiet material pleasure is the only way to oppose the universal folly of Fast Life... . Our defense should begin at the table with Slow Food. Let us rediscover the flavors and savors of regional cooking and banish the degrading effects of Fast Food" (Slow Food). The movement was founded in Italy in 1986 by Carlos Petrini as a reaction to the establishment of a McDonald's near Rome's historic Spanish Steps. While global fast food colonisation is certainly a rallying point, the movement also encourages members to eat seasonal foods, support and protect regional cuisines, reinstate the ritual of family dining and educate children's palates. Mostly, however, Slow Food is about taking the time to enjoy a meal, to value the ingredients that go into it, and to share it with friends and family. It is appropriate, then, that the movement's symbol is a snail, "a talisman against speed" (Slow Food). While speed may be exciting, fast foods are not, and the idea of slowing down to savour meals with family and friends is one that is gaining momentum. The Slow Food movement, which started with a few delegates from 15 countries just over a decade ago, has now grown to 60,000 members in 35 countries, complete with 400 convivia, or local branches. Australia hosts eight of these chapters. Maggie Beer, the well-known Barossa Valley chef, entrepreneur and food writer, is also a Slow Food member. Her solution to the daily dinner dilemma is simple: by planning ahead and keeping a well-stocked pantry, it is possible for time-constrained cooks to have at hand many of the ingredients they need to make simple and nutritious meals in as much time as it takes to go get takeaway food (Beer). Nonetheless, keeping the pantry well-stocked with quality foods instead of dinners-in-a-packet means deciding that meals matter, that they are worthy of consideration and of time spent in preparation and consumption, and that the long-term rewards of Slow Food are worth far more than the short-term benefits of Fast Food. As the training grounds for future generations and important sites of reconnection for current ones, meals should be welcomed as opportunities for interaction rather than chores to be completed as quickly as possible. They should make people want to linger, while enjoying the company, the conversation and the food. As the French gastronome Jean-Anthelme Brillat-Savarin wrote in the early nineteenth century: One may find round a single table all the modifications which extreme sociability has introduced into our midst: love, friendship, business, speculation, influence, solicitation, patronage, ambition, intrigue; that is why conviviality affects every aspect of human life, and bears fruits of every flavour. (Brillat-Savarin). Reviving the ritual of a family meal does not mean returning to 'traditional' 1950s household dynamics, but rather, adopting a modern view that meals are important, even vital, and that all members of a family should contribute to making them special. The preparation of a meal can become part of the social process; Italo-Australians, for example, have turned the making of tomato sauce into a very communal and social event that draws friends and family closer together. It is a type of meal preparation that can be replicated on a far smaller scale by simply involving family members, housemates and partners in the making of a meal, which can be accomplished in a myriad of ways by people of varying ages and skills. However, it means periodically suspending time, for a good meal that satisfies body and soul cannot be rushed. The evidence suggests, however, that many of us are not yet able to jump off the treadmill, even though the current trend toward faster and faster foods may have a significant impact on the structure of the family and the nature of our relationships with each other. If we continue to eat on the run, if we consistently eat meals that do not make us want to linger, then we may find ourselves in danger of losing that uniquely human ritual of sharing food, which is a cornerstone of our sociality, the bedrock of family life and a building block of our collective spirit. Abstract (sommario):
The Netflix/BBC eight-part limited true crime series The Serpent (2021) provides a commentary on the impact of the tourist industry in South-East Asia in the 1970s. The series portrays the story of French serial killer Charles Sobhraj (played by Tahar Rahim)—a psychopathic international con artist of Vietnamese-Indian descent—who regularly targeted Western travellers, especially the long-term wanderers of the legendary “Hippie Trail” (or the “Overland”), running between eastern Europe and Asia. The series, which was filmed on location in Thailand—in Bangkok and the Thai town of Hua Hin—is set in a range of travel destinations along the route of the Hippie Trail, as the narrative follows the many crimes of Sobhraj. Cities such as Kathmandu, Goa, Varanasi, Hong Kong, and Kabul are featured on the show. The series is loosely based upon Australian writers Richard Neville and Julie Clarke’s true crime biography The Life and Crimes of Charles Sobhraj (1979). Another true crime text by Thomas Thompson called Serpentine: Charles Sobhraj’s Reign of Terror from Europe to South Asia (also published in 1979) is a second reference. The show portrays the disappearance and murders of many young victims at the hands of Sobhraj. Certainly, Sobhraj is represented as a monstrous figure, but what about the business of tourism itself? Arguably, in its reflective examination of twentieth-century travel, the series also poses the hedonism of tourism as monstrous. Here, attention is drawn to Western privilege and a neo-orientalist gaze that presented Asia as an exotic playground for its visitors. The television series focuses on Sobhraj, his French-Canadian girlfriend Marie-Andrée Leclerc (played by Jenna Coleman), and the glamourous life they lead in Bangkok. The fashionable couple’s operation presents Sobhraj as a legitimate gem dealer: outwardly, they seem to embody the epitome of fun and glamour, as well as the cross-cultural sophistication of the international jet set. In reality, they drug and then steal from tourists who believe their story. Sobhraj uses stolen passports and cash to travel internationally and acquire more gems. Then, with an accomplice called Ajay Chowdhury (played by Amesh Adireweera), Sobhraj murders his victims if he thinks they could expose his fraud. Often depicted as humourless and seething with anger, the Sobhraj of the series often wears dark aviator sunglasses, a detail that enhances the sense of his impenetrability. One of the first crimes featured in The Serpent is the double-murder of an innocent Dutch couple. The murders lead to an investigation by Dutch diplomat Herman Knippenberg (played by Billy Howle), wanting to provide closure for the families of the victims. Knippenberg enlists neighbours to go undercover at Sobhraj’s home to collect evidence. This exposes Sobhraj’s crimes, so he flees the country with Marie-Andrée and Ajay. While they were apprehended, Sobhraj would be later given pardon from a prison in India: he would only received a life sentence for murder when he is arrested in Nepal in 2003. His ability to evade punishment—and inability to admit to and atone for his crimes—become features of his monstrosity in the television series. Clearly, Sobhraj is represented as the “serpent” of this drama, a metaphor regularly reinforced both textually and visually across the length of the series. As an example, the opening credit sequence for the series coalesces shots of vintage film in Asia—including hitchhiking backpackers, VW Kombi vans, swimming pools, religious tourist sites, corrupt Asian police forces—against an animated map of central and South-East Asia and the Hippie Trail. The map is encased by the giant, slithering tail of some monstrous, reptilian creature. Situating the geographic context of the narrative, the serpentine monster appears to be rising out of continental Asia itself, figuratively stalking and then entrapping the tourists and travellers who move along its route. So, what of the other readings about the monstrosity of the tourism industry that appears on the show? The Hippie Trail was arguably a site—a serpentine cross-continental thoroughfare—of Western excess. The Hippie Trail emerged as the result of the ease of travel across continental Europe and Asia. It was an extension of a countercultural movement that first emerged in the United States in the mid 1960s. Agnieszka Sobocinska has suggested that the travellers of the Hippie Trail were motivated by “widespread dissatisfaction with the perceived conservatism of Western society and its conventions”, and that it was characterised by “youth, rebellion, self-expression and the performance of personal freedom” (par. 8). The Trail appealed to a particular subcultural group who wanted to differentiate themselves from other travellers. Culturally, the Hippie Trail has become a historical site of enduring fascination, written about in popular histories and Western travel narratives, such as A Season in Heaven: True Tales from the Road to Kathmandu (Tomory 1998), Magic Bus: On the Hippie Trail from Istanbul to India (MacLean 2007), The Hippie Trail: A History (Gemie and Ireland 2017), and The Hippie Trail: After Europe, Turn Left (Kreamer 2019). Despite these positive memoirs, the route also has a reputation for being destructive and even neo-imperialist: it irrevocably altered the politics of these Asian regions, especially as crowds of Western visitors would party at its cities along the way. In The Serpent, while the crimes take place on its route, on face value the Hippie Trail still appears to be romanticised and nostalgically re-imagined, especially as it represents a stark difference from our contemporary world with its heavily-policed international borders. Indeed, the travellers seem even freer from the perspective of 2021, given the show’s production phase and release in the midst of the COVID-19 pandemic, when international travel was halted for many. As Kylie Northover has written in a review for the series in the Sydney Morning Herald, the production design of the programme and the on-location shoot in Thailand is affectionately evocative and nostalgic. Northover suggests that it “successfully evokes a very specific era of travel—the Vietnam War has just ended, the Summer of Love is over and contact with family back home was usually only through the post restante” (13). On the show, there is certainly critique of the tourist industry. For example, one scene demonstrates the “dark side” of the Hippie Trail dream. Firstly, we see a psychedelic-coloured bus of travellers driving through Nepal. The outside of the bus is covered with its planned destinations: “Istanbul. Teheran. Kabul. Delhi”. The Western travellers are young and dressed in peasant clothing and smoking marijuana. Looking over at the Himalayas, one hippie calls the mountains a “Shangri-La”, the fictional utopia of an Eastern mountain paradise. Then, the screen contracts to show old footage of Kathmandu— using the small-screen dimensions of a Super-8 film—which highlights a “hashish centre” with young children working at the front. The child labour is ignored. As the foreign hippie travellers—American and English—move through Kathmandu, they seem self-absorbed and anti-social. Rather than meeting and learning from locals, they just gather at parties with other hippies. By night-time, the series depicts drugged up travellers on heroin or other opiates, disconnected from place and culture as they stare around aimlessly. The negative representation of hippies has been observed in some of the critical reviews about The Serpent. For example, writing about the series for The Guardian, Dorian Lynskey cites Joan Didion’s famous “serpentine” interpretation of the hippie culture in the United States, applying this to the search for meaning on the Hippie Trail: the subculture of expats and travellers in south-east Asia feels rather like Joan Didion’s 60s California, crisscrossed by lost young people trying to find themselves anew in religion, drugs, or simply unfamiliar places. In Slouching Towards Bethlehem, Didion writes of those who “drifted from city to torn city, sloughing off both the past and the future as snakes shed their skins”. (Lynskey) We could apply cultural theories about tourism to a critique of the industry in the series too. Many cultural researchers have critiqued tourists and the tourism industry, as well as the powers that tourists can wield over destination cultures. In Time and Commodity Culture, John Frow has suggested that the logic of tourism is “that of a relentless extension of commodity relations, and the consequent inequalities of power, between centre and periphery, First and Third World, developed and undeveloped regions, metropolis and countryside”, as well as one that has developed from the colonial era (151). Similarly, Derek Gregory’s sensitive analyses of cultural geographies of postcolonial space showed that Nineteenth-century Orientalism is a continuing process within globalised mass tourism (114). The problem of Orientalism as a Western travel ideology is made prominent in The Serpent through Sobhraj’s denouncement of Western tourists, even though there is much irony at play here, as the series itself arguably is presenting its own retro version of Orientalism to Western audiences. Even the choice of Netflix to produce this true crime story—with its two murderers of Asian descent—is arguably a way of reinforcing negative representations about Asian identity. Then, Western characters take on the role of hero and/or central protagonist, especially the character of Knippenberg. One could ask: where is the Netflix show that depicts a positive story about a central character of Vietnamese-Indian descent? Edward Said famously defined Orientalism as “a way of coming to terms with the Orient that is based on the Orient’s special place in European Western experience” (1). It became a way for Western cultures to interpret and understand the East, and for reducing and homogenising it into a more simplistic package. Orientalism explored discourses that grew to encompass India and the Far East in tandem with the expansion of Western imperialism in the eighteenth and nineteenth centuries. It examined a dualistic ideology: a way of looking that divided the globe into two limited types without any room for nuance and diversity. Inclusive and exclusive, Orientalism assumed and promoted an “us and them” binary, privileging a Western gaze as the normative cultural position, while the East was relegated to the ambiguous role of “other”. Orientalism is a field in which stereotypes of the East and West have power: as Said suggests, “the West is the actor, the Orient is a passive reactor… . The West is the spectator, the judge and jury, of every facet of Oriental behaviour” (109). Interestingly, despite the primacy in which Sobhraj is posited as the show’s central monster, he is also the character in the series most critical of the neo-colonial oppression caused by this counter-cultural tourism, which indicates ambiguity and complexity in the representation of monstrosity. Sobhraj appears to have read Said. As he looks scornfully at a stoner hippie woman who has befriended Ajay, he seems to perceive the hippies as drop-outs and drifters, but he also connects them more thoroughly as perpetrators of neo-imperialist processes. Indicating his contempt for the sightseers of the Hippie Trail as they seek enlightenment on their travels, he interrogates his companion Ajay: why do you think these white children deny the comfort and wealth of the life they were given to come to a place like this? Worship the same gods. Wear the same rags. Live in the same filth. Each experience is only then taken home to wear like a piece of fake tribal jewellery. They travel only to acquire. It’s another form of imperialism. And she has just colonised you! Sobhraj’s speech is political but it is also menacing, and he quickly sets upon Ajay and physically punishes him for his tryst with the hippie woman. Yet, ultimately, the main Western tourists of the Hippie Trail are presented positively in The Serpent, especially as many of them are depcited as naïve innocents within the story—hopeful, idealistic and excited to travel—and simply in the wrong place, at the wrong time. In this way, the series still draws upon the conventions of the true crime genre, which is to differentiate clearly between good/evil and right/wrong, and to create an emotional connection to the victims as symbols of virtue. As the crimes and deaths accumulate within the series, Sobhraj’s opinions are deceptive, designed to manipulate those around him (such as Ajay) rather than being drawn from genuine feelings of political angst about the neo-imperialist project of Western tourism. The uncertainty around Sobhraj’s motivation for his crimes remains one of the fascinating aspects of the series. It problematises the way that the monstrosity of this character is constructed within the narrative of the show. The character of Sobhraj frequently engages with these essentialising issues about Orientalism, but he appears to do so with the aim to remove the privilege that comes from a Western gaze. In the series, Sobhraj’s motivations for targeting Western travellers are often insinuated as being due to personal reasons, such as revenge for his treatment as a child in Europe, where he says he was disparaged for being of Asian heritage. For example, as he speaks to one of his drugged French-speaking victims, Sobhraj suggests that when he moved from Vietnam to France as a child, he was subject to violence and poor treatment from others: “a half-caste boy from Saigon. You can imagine how I was bullied”. In this instance, the suffering French man placed in Sobhraj’s power has been promoted as fitting into one of these “us and them” binaries, but in this set-up, there is also a reversal of power relations and Sobhraj has set himself as both the “actor” and the “spectator”. Here, he has reversed the “Orientalist” gaze onto a passive Western man, homogenising a “Western body”, and hence radically destabilising the construct of Orientalism as an ideological force. This is also deeply troubling: it goes on to sustain a problematic and essentialising binary that, no matter which way it faces, aims to denigrate and stereotype a cultural group. In this way, the character of Sobhraj demonstrates that while he is angry at the way that Orientalist ideologies have victimised him in the past, he will continue to perpetrate its basic ideological assumptions as a way of administering justice and seeking personal retribution. Ultimately, perhaps one of the more powerful readings of The Serpent is that it is difficult to move away from the ideological constructs of travel. We could also suggest that same thing for the tourists. In her real-life analysis of the Hippie Trail, Agnieszka Sobocinska has suggested that while it was presented and understood as something profoundly different from older travel tours and expeditions, it could not help but be bound up in the same ideological colonial and imperial impulses that constituted earlier forms of travel: Orientalist images and imperial behaviours were augmented to suit a new generation that liked to think of itself as radically breaking from the past. Ironically, this facilitated the view that ‘alternative’ travel was a statement in anti-colonial politics, even as it perpetuated some of the inequalities inherent to imperialism. This plays out in The Serpent. We see that this supposedly radically different new group – with a relaxed and open-minded identity—is bound within the same old ideological constructs. Part of the problem of the Hippie Trail traveller was a failure to recognise the fundamentally imperialist origins of their understanding of travel. This is the same kind of concern mapped out by Turner and Ash in their analysis of neo-imperial forms of travel called The Golden Hordes: International Tourism and the Pleasure Periphery (1976), written and published in the same era as the events of The Serpent. Presciently gauging the effect that mass tourism would have on developing nations, Turner and Ash used the metaphor of “hordes” of tourists taking over various poorer destinations to intend a complete reversal of the stereotype of a horde of barbaric and non-Western hosts. By inferring that tourists are the “hordes” reverses Orientalist conceptions of de-personalised non-Western cultures, and shows the problem that over-tourism and unsustainable visitation can pose to host locations, especially with the acceleration of mass travel in the late Twentieth century. Certainly, the concept of a touristic “horde” is one of the monstrous ideas in travel, and can signify the worst aspects contained within mass tourism. To conclude, it is useful to return to the consideration of what is presented as monstrous in The Serpent. Here, there is the obvious monster in the sinister, impassive figure of serial killer Charles Sobhraj. Julie Clarke, in a new epilogue for The Life and Crimes of Charles Sobhraj (2020), posits that Sobhraj’s actions are monstrous and unchangeable, demonstrating the need to understand impermeable cases of human evil as a part of human society: one of the lessons of this cautionary tale should be an awareness that such ‘inhuman humans’ do live amongst us. Many don’t end up in jail, but rather reach the highest level in the corporate and political spheres. (Neville and Clarke, 2020) Then, there is the exploitational spectre of mass tourism from the Hippie Trail that has had the ability to “invade” and ruin the authenticity and/or sustainability of a particular place or location as it is overrun by the “golden hordes”. Finally, we might consider the Orientalist, imperialist and globalised ideologies of mass tourism as one of the insidious and serpentine forces that entrap the central characters in this television series. This leads to a failure to understand what is really going on as the tourists are deluded by visions of an exotic paradise. References Frow, John. IntroductionThis article suggests extensions to the place of ‘national collections’ of Australia’s migration histories, and considers the role of regional libraries and museums in collecting, preserving, and making accessible the history of migration. The article describes a recent collaboration between the Bonegilla Migrant Experience site, the Albury LibraryMuseum and the regionally-based Charles Sturt University (CSU) to develop a virtual, three-dimensional tour of Bonegilla, a former migrant arrival centre. Through this, the role of regional collections as keeping places of migration memories and narratives outside of those institutions charged with preserving the nation’s memory is highlighted and explored.What Makes a Nation’s Memory?In 2018 the Australian Research Council (ARC) awarded a Linkage grant to a collaboration between two universities (RMIT and Deakin), and the National Library of Australia, State Library of South Australia, State Library of Victoria, and State Library of New South Wales titled “Representing Multicultural Australia in National and State Libraries” (LP170100222). This Linkage project aimed to “develop a new methodology for evaluating multicultural collections, and new policies and strategies to develop and provide access to these collections” (RMIT Centre for Urban Research).One planned output of the Linkage project was a conference, to be held in early 2019, titled “Collecting for a Society’s Memory: National and State Libraries in Culturally Diverse Societies.” The conference call for papers suggested themes that included an interrogation of the relationship between libraries and ‘the collecting sector’, but with a focus still on National and State Libraries (Boyd). As an aside, the correlation between libraries and memories seemed slightly incongruous here, as archives and museums in particular would also be key in this collecting (and preserving) society’s memory, and also the libraries that exist outside of the national and state capitals.It felt like the project and conference had a definite ‘national’ focus, with the ‘regional’ mentioned only briefly in a suggested theme.At the same time that I was reading this call for papers and about the Linkage, I was part of a CSU Learning and Teaching project to develop online learning materials for students in our Teacher Education programs (history in particular) based around the Bonegilla Migrant Arrival Centre in Wodonga, Victoria. This project uses three-dimensional film technology to bring students to the Centre site, where they can take an interactive, curriculum-based tour of the site. Alongside the interactive online tour, a series of curricula were developed to work with the Australian History Curriculum. I wondered why community-led collections like these in the regions fall to the side in discussions of a ‘national’ (aka institutional) memory, or as part of a representation of a multicultural Australia, such as in this Linkage.Before I start exploring this question I want to acknowledge the limitations of the ARC Linkage framework in terms of the project mentioned above, and that the work that is being done in the “Representing Multicultural Australia in National and State Libraries” project is of value to professional practice and community; in this article I am using the juxtaposition of the two projects as an impetus to interrogate the role of regional collaboration, and to argue for a notion of national memory as a regional collecting concern.Bonegilla: A Contested SiteFrom 1947 through to 1971 over 300,000 migrants to Australia passed through the Bonegilla Migrant Reception and Training Centre (“Bonegilla”) at a defining time in Australia’s immigration history, as post-World War II migration policies encompassed non-English speaking Europeans displaced by the war (Pennay "Remembering Bonegilla" 43). Bonegilla itself is a small settlement near the Hume Dam, 10 km from the New South Wales town of Albury and the Victorian town of Wodonga. Bonegilla was a former Army Camp repurposed to meet the settlement agendas of multiple Australian governments.New migrants spent weeks and months at Bonegilla, learning English, and securing work. The site was the largest (covering 130 hectares of land) and longest-lasting reception centre in post-war Australia, and has been confirmed bureaucratically as nationally significant, having been added to the National Heritage Register in 2007 (see Pennay “Remembering Bonegilla” for an in-depth discussion of this listing process). Bonegilla has played a part in defining and redefining Australia’s migrant and multicultural history through the years, with Bruce Pennay suggesting thatperhaps Bonegilla has warranted national notice as part of an officially initiated endeavour to develop a more inclusive narrative of nation, for the National Heritage List was almost contemporaneously expanded to include Myall Creek. Perhaps it is exemplary in raising questions about the roles of the nation and the community in reception and training that morph into modern day equivalents. (“Memories and Representations” 46)Given its national significance, both formally and colloquially, Bonegilla has provided rich material for critical thinking around, for example, Australian multicultural identity, migration commemorations and the construction of cultural memory. Alexandra Dellios argues that Bonegilla and its role in Australia’s memory is a contested site, and thatdespite criticisms from historians such as Persian and Ashton regarding Bonegilla’s adherence to a revisionist narrative of multicultural progress, visitor book comments, as well as exchanges and performances at reunions and festivals, demonstrate that visitors take what they will from available frameworks, and fill in the ‘gaps’ according to their own collective memories, needs and expectations. (1075)This recognition of Bonegilla as a significant, albeit “heritage noir” (Pennay, “Memories and Representations” 48), agent of Australia’s heritage and memory makes it a productive site to investigate the question of regional collections and collaborations in constructing a national memory.Recordkeeping: By Government and CommunityThe past decade has seen a growth in the prominence of community archives as places of memory for communities (for example Flinn; Flinn, Stevens, and Shepherd; Zavala et al.). This prominence has come through the recognition of community archives as both valid sites of study as well as repositories of memory. In turn, this body of knowledge has offered new ways to think about collection practices outside of the mainstream, where “communities can make collective decisions about what is of enduring value to them, shape collective memory of their own pasts, and control the means through which stories about their past are constructed” (Caswell, Cifor, and Ramirez 58). Jimmy Zavala, and colleagues, argue that these collections “challenge hierarchical structures of governance found in mainstream archival institutions” (212), and offer different perspectives to those kept on the official record. By recognising both the official record and the collections developed and developing outside of official repositories, there are opportunities to deepen understandings and interpretations of historical moments in time.There are at least three possible formal keeping places of memories for those who passed through, worked at, or lived alongside Bonegilla: the National Archives of Australia, the Albury LibraryMuseum in Albury, New South Wales, and the Bonegilla Migrant Experience site itself outside of Wodonga. There will of course be records in other national, state, local, and community repositories, along with newspaper articles, people’s homes, and oral lore that contribute to the narrative of Bonegilla memories, but the focus for this article are these three key sites as the main sources of primary source material about the Bonegilla experience.Official administrative and organisational records of activity during Bonegilla’s reception period are held at the National Archives of Australia in the national capital, Canberra; these records contribute to the memory of Bonegilla from a nation-state perspective, building an administrative record of the Centre’s history and of a significant period of migration in Australia’s past. Of note, Bonegilla was the only migrant centre that created its own records on site, and these records form part of the series known as NAA: A2567, NAA A2571 1949–56 and A2572 1957–71 (Hutchison 70). Records of local staff employed at the site will also be included in these administrative files. Very few of these records are publicly accessible online, although work is underway to provide enhanced online and analogue access to the popular arrival cards (NAA A2571 1949-56 and A2572 1957–71) onsite at Bonegilla (Pennay, personal communication) as they are in high demand by visitors to the site, who are often looking for traces of themselves or their families in the official record. The National Archives site Destination Australia is an example of an attempt by the holder of these administrative records to collect personal stories of this period in Australia’s history through an online photograph gallery and story register, but by 2019 less than 150 stories have been published to the site, which was launched in 2014 (National Archives of Australia).This national collection is complemented and enhanced by the Bonegilla Migration Collection at the Albury LibraryMuseum in southern New South Wales, which holds non-government records and memories of life at Bonegilla. This collection “contains over 20 sustained interviews; 357 personal history database entries; over 500 short memory pieces and 700 photographs” (Pennay “Memories and Representations” 45). It is a ‘live’ collection, growing through contributions to the Bonegilla Personal History Register by the migrants and others who experienced the Centre, and through an ongoing relationship with the current Bonegilla Migrant Experience site to act as a collection home for their materials.Alongside the collection in the LibraryMuseum, there is the collection of infrastructure at the Bonegilla Migrant Experience (BME) site itself. These buildings and other assets, and indeed the absence of buildings, plus the interpretative material developed by BME staff, give further depth and meaning to the lived experience of post-war migration to Australia. Whilst both of these collections are housed and managed by local government agencies, I suggest in this article that these collections can still be considered community archives, given the regional setting of the collections, and the community created records included in the collections.The choice to locate Bonegilla in a fairly isolated regional setting was a strategy of the governments of the time (Persian), and in turn has had an impact on how the site is accessed; by who, and how often (see Dellios for a discussion of the visitor numbers over the history of the Bonegilla Migrant Experience over its time as a commemorative and tourist site). The closest cities to Bonegilla, Albury and Wodonga, sit on the border of New South Wales and Victoria, separated by the Murray River and located 300 km from Melbourne and 550 km from Sydney. The ‘twin towns’ work collaboratively on many civic activities, and are an example of a 1970s-era regional development project that in the twenty-first century is still growing, despite the regional setting (Stein 345).This regional setting justifies a consideration of virtual, and online access to what some argue is a site of national memory loaded with place-based connections, with Jayne Persian arguing that “the most successful forays into commemoration of Bonegilla appear to be website-based and institution-led” (81). This sentiment is reflected in the motivation to create further online access points to Bonegilla, such as the one discussed in this article.Enhancing Teaching, Learning, and Public Access to CollectionsIn 2018 these concepts of significant heritage sites, community archives, national records, and an understanding of migration history came together in a regionally-based Teaching and Learning project funded through a CSU internal grant scheme. The scheme, designed to support scholarship and enhance learning and teaching at CSU, funded a small pilot project to pilot a virtual visit to a real-life destination: the Bonegilla Migrant Experience site. The project was designed to provide key teaching and learning material for students in CSU Education courses, and those training to teach history in particular, but also enhance virtual access to the site for the wider public.The project was developed as a partnership between CSU, Albury LibraryMuseum, and Bonegilla Migrant Experience, and formalised through a Memorandum of Understanding with shared intellectual property. The virtual visit includes a three-dimensional walkthrough created using Matterport software, intuitive navigation of the walkthrough, and four embedded videos linked with online investigation guides. The site is intended to help online visitors ‘do history’ by locating and evaluating sources related to a heritage site with many layers and voices, and whose narrative and history is contested and told through many lenses (Grover and Pennay).As you walk through the virtual site, you get a sense of the size and scope of the Migrant Arrival Centre. The current Bonegilla Migrant Experience site sits at Block 19, one of 24 blocks that formed part of the Centre in its peak time. The guiding path takes you through the Reception area and then to the ‘Beginning Place’, a purpose built interpretative structure that “introduces why people came to Australia searching for a new beginning” (Bonegilla site guide). Moving through, you pass markers on the walls and other surfaces that link through to further interpretative materials and investigation guides. These guides are designed to introduce K-10 students and their teachers to practices such as exploring online archives and thematic inquiry learning aligned to the Australian History Curriculum. Each guide is accompanied by teacher support material and further classroom activities.The guides prompt and guide visitors through an investigation of online archives, and other repositories, including sourcing files held by the National Archives of Australia, searching for newspaper accounts of controversial events through the National Library of Australia’s digital repository Trove, and access to personal testimonies of migrants and refugees through the Albury LibraryMuseum Bonegilla Migration Collection. Whilst designed to support teachers and students engaging with the Australian History Curriculum, these resources are available to the public. They provide visitors to the virtual site an opportunity to develop their own critical digital literacy skills and further their understanding of the official records along with the community created records such as those held by the Albury LibraryMuseum.The project partnership developed from existing relationships between cultural heritage professionals in the Albury Wodonga region along with new relationships developed for technology support from local companies. The project also reinforced the role of CSU, with its regional footprint, in being able to connect and activate regionally-based projects for community benefit along with teaching and learning outcomes.Regional CollaborationsLiz Bishoff argues for a “collaboration imperative” when it comes to the galleries, libraries, archives, and museums (GLAM) sector’s efficacy, and it is the collaborative nature of this project that I draw on in this article. Previous work has also suggested models of convergence, where multiple institutions in the GLAM sector become a single institution (Warren and Matthews 3). In fact the Albury LibraryMuseum is an example of this model. These converged models have been critiqued from resourcing, professionalisation and economic perspectives (see for example Jones; Hider et al.; Wellington), but in some cases for local government agencies especially, they are an effective way of delivering services to communities (Warren and Matthews 9). In the case of this virtual tour, the collaboration between local government and university agencies was temporal for the length of the project, where the pooling of skills, resources, and networks has enabled the development of the resource.In this project, the regional setting has allowed and taken advantage of an intimacy that I argue may not have been possible in a metropolitan or urban setting. The social intimacies of regional town living mean that jobs are often ‘for a long time (if not for life)’, lives intersect in more than a professional context, and that because there are few pathways or options for alternative work opportunities in the GLAM professions, there is a vested interest in progress and success in project-based work. The relationships that underpinned the Bonegilla virtual tour project reflect many of these social intimacies, which included former students, former colleagues, and family relationships.The project has modelled future strategies for collaboration, including open discussions about intellectual property created, the auspicing of financial arrangements and the shared professional skills and knowledge. There has been a significant enhancement of collaborative partnerships between stakeholders, along with further development of professional and personal networks.National Memories: Regional ConcernsThe focus of this article has been on records created about a significant period in Australia’s migration history, and the meaning that these records hold based on who created them, where they are held, and how they are accessed and interpreted. Using the case study of the development of a virtual tour of a significant site—Bonegilla—I have highlighted the value of regional, non-national collections in providing access to and understanding of national memories, and the importance of collaborative practice to working with these collections. These collections sit physically in the regional communities of Albury and Wodonga, along with at the National Archives of Australia in Canberra, where they are cared for by professional staff across the GLAM sector and accessed both physically and virtually by students, researchers, and those whose lives intersected with Bonegilla.From this, I argue that by understanding national and institutional recordkeeping spaces such as the National Archives of Australia as just one example of a place of ‘national memory’, we can make space for regional and community-based repositories as important and valuable sources of records about the lived experience of migration. Extending this further, I suggest a recognition of the role of the regional setting in enabling strong collaborations to make these records visible and accessible.Further research in this area could include exploring the possibility of giving meaning to the place of record creation, especially community records, and oral histories, and how collaborations are enabling this. Sugar pigs are traditional confections shaped like sugar mice with little legs and no tail. One might, therefore, nibble the trotters of a sugar pig or suck delicately upon the nose of a sugar pig, but one must never eat one’s sugary treats like a pig. As an imagined border between the private world inside the body and the public world outside, the mouth is an unstable limit of selfhood. Food can easily cause disgust as it passes through this hazardous terrain, and this disgust is produced less by the thought of incorporation than by socially constructed boundaries such as the division between human and animal. In order to guard against disgust and the moral judgement it incurs about the eater, the mouth is governed by myriad rules and, in the case of the juvenile mouth, subject to adult surveillance. This paper investigates children’s consumption of confectionery in relation to the mouth as a liminal border space. Children are “sugar pigs” in as much as they disregard the conventions of civilised eating that govern the mouth, preferring instead to slubber, gnaw, lick, and chew like animals, to reveal the contents of their mouths and examine the contents of others, to put lollies in and out of their mouths with dirty hands, and to share single lollies. Children’s lolly rituals resist civilised eating norms, but they hold important cultural meanings that parallel and subvert those of the adult world. Children’s mouths are communal spaces and the rituals that take place in them are acts of friendship, intimacy, and power. Eating norms instituted over thousands of years ensure that people do not eat like animals, and the pig, in particular, stands in opposition to civilised eating. In On Good Manners for Boys (1530), Erasmus of Rotterdam advises that a general guide to eating like a human being is to eat inconspicuously and self-consciously—to “lick a plate or dish to which some sugar or sweet substance has adhered is for cats, not people,” he explains, and to “gnaw bones is for a dog”—and he compares ill-mannered eating with that of pigs, observing how some people “slubber up their meat like swine” (qtd. in Kass 145). Unrefined table manners and uncontrolled appetite continue to elicit such expressions of disgust as “dirty pig” and “greedy pig.” Pigs grunt. Pigs snuffle among refuse. Pigs, as Bob Ashley et al. note, represent all that is uncivilised and exist only as a signifier of appetite (2). The pig and civilisation, however, do not exist simply in opposition. Cookery writer Jane Grigson argues that European civilisation has been founded upon the pig (qtd. in Ashley et al. 2). Also, because the pig’s body is pinkish, soft, and flabby like a human body and because pigs were usually housed near or even inside human dwellings, the pig confounds the human/animal binary: it is “a threshold animal” (Stallybrass and White qtd. in Ashley et al. 7). Furthermore, the steady evolution of eating practices suggests that humans would eat like animals if left in their natural state. Food rules are part of the “attempt to exclude piggishness” from human civilisation, which, according to Ashley et al., demonstrates “precisely the proximity of human and pig” (7). As physician Leon Kass observes, eating conventions “show us both how much we have taken instruction and how much we needed it” (139). Humans aspire to purity and perfection, but William Ian Miller explains that “fuelling no small part of those aspirations is disgust with what we are or with what we are likely to slide back into” (Anatomy xiv). Eating norms, therefore, do not emphasise the difference between human and the pig as much as they express the underlying anxiety that the human mouth and the act of eating are utterly animal. ‘Lollies’ is the Australian term for the confectionery that children mostly buy, and while the child with a lolly pouched in its cheek is such a familiar, even iconic, image that it features on the covers of two recent books about confectionery (Richardson, Whittaker), licking, gnawing, and slubbering—Erasmus’ wonderfully evocative and piggish word—aptly describe the consumption of lollies. Many lollies are large and hard, and eating them requires time, effort, concentration, and conspicuous mouth activity: the cheek bulges and speaking is difficult; a great deal of saliva is produced and the area around the mouth becomes smeared with coloured drool; and there is always the possibility of the lolly falling out. The smaller the child’s mouth, or the larger the lolly, the more impossible it is to eat inconspicuously and self-consciously. Endless chewing is similarly animal-like, and “the bovine look” of teenagers featured in public complaints when chewing gum was mass-produced in the twentieth century (Hendrickson 7). Humans must not eat like animals, but overly-stuffed cheeks, sucking and slubbering mouths, licking tongues, gnawing teeth, and mindlessly ruminating jaws are unashamedly animal-like. Other rules guard against disgust arising from the sight of half-chewed food. When food is in the process of becoming part of the body, it quickly acquires the quality of things with which disgust is more readily associated, things that are, according to Miller, moist rather than dry, viscid rather than free-flowing, pliable rather than hard, things that are “oozy, mucky, gooey, slimy, clammy, sticky, tacky, dank, squishy, or filmy” (“Darwin’s Disgust” 338). Soft lollies with their vividly-coloured and glossy or sugar-encrusted surfaces look magical, but once they go into the mouth are “magically transformed into the disgusting” (Anatomy Miller 96). Food in the process of “becoming” must, therefore, never be seen again. The process of transformation takes place in the private interior of the body, but, if the mouth is open, half-transformed food is visible, and chewed food, according to Miller, “has the capacity to be even more disgusting than feces [sic]” (Anatomy 96). Sometimes, the sight of half-consumed lollies inside children’s mouths is deliberate because children poke out their tongues and look into each other’s mouths to monitor the progress of lollies that change colour as they break down. Miller explains that the rules of disgust are suspended in sexual and non-sexual love: “Disgust marks the boundaries of the self; the relaxing of them marks privilege, intimacy, duty, and caring” (Anatomy xi). This principle applies to children’s lolly rituals. If children forget to note the colour of a Clinker as they bite it, or if they want to note the progress of a Cloud or gobstopper, they open their mouths and even poke out their tongues so a friend can inspect the colour of the lolly, or their tongue. Such acts are marks of friendship. It is not something children do with everyone. The mouth is a threshold of self that children relax as a marker of privilege. The clean/unclean binary exerts a powerful influence on food because, in addition to the way in which food is eaten, it determines the kind of food that is eaten. The mouth is a border between the self (the eater) and the other (the eaten), so what is eaten (the other) eventually becomes the eater (the self). Paradoxically, the reverse is also true; the eater becomes what is eaten—hence, “we are what we eat.” Little wonder then that food is a site of anxiety, surveillance, and control. The pig eats anything, but children’s consumption is strictly monitored. The clean food imperative means that food must be uncontaminated by the world outside the body, and lollies violate the clean food category in this regard. Large, hard lollies can fall out of the mouth, or children may be obliged to violently expel them if they are danger of choking. The young protagonists in Saturdee, Norman Lindsay’s bildungsroman set in country Victoria after WWI, arrange a secret tryst with some girls, and when their plan is discovered a horde of spectators assembles to watch the proceedings: [Snowey Critchet] had provided himself with a bull’s-eye; a comestible about the size of a cricket ball, which he stowed away in one cheek, as a monkey pouches an orange, where it distended his face in a most obnoxious manner. He was prepared, it seemed, to spend the entire afternoon inspecting a scandal, while sucking his bull’s-eye down to edible proportions. (147) Amid a subsequent volley of taunts and cow dung, Snowey lands in the gutter, a reprisal that “was like to be Snowey’s end through causing him to bolt his bull’s-eye whole. It was too large to swallow but large enough to block up his gullet and choke him. Frenziedly he fought his way out of the gutter and ran off black in the face to eject his windpipe obstruction” (147-8). Choking episodes are further aspects of children’s consumption that adults would deem dangerous as well as disgusting. If a child picks up a lolly from the ground, an adult is likely to slap it away and spit out the word “Dirty!” The child’s hands are potentially part of the contaminated outside world, hence, wash your hands before you eat, don’t eat with your fingers, don’t lick your fingers, don’t put your fingers into your mouth, don’t handle food if you aren’t going to eat it, don’t eat food that others have touched. Lolly-consumption breaches the clean/unclean divide when children put fingers into mouths to hook tacky lollies like Minties off the back teeth, remove lollies in order to observe their changing shape or colour, pull chewing gum from the mouth, or push bubble gum back in. The mouth is part of the clean world inside the body; adult disgust stems from concern about contamination through contact with the world outside the body, including the face and hands. The hands are also involved in playground rituals. Children often remove lollies from their mouths, play with them, and put them back in. Such invented rituals include sharpening musk sticks by twisting them in the mouth before jabbing friends with them and returning them to the mouth. Teenagers also bite the heads off jelly babies and rearrange the bodies in multicoloured versions before eating them. These rituals expose half-consumed lollies, and allow lollies to be contaminated by the outside world, but they are markers of friendship and ways of belonging to particular groups as well as sources of entertainment. The ultimate cause for disgust, apart from sharing with a pig perhaps, arises when children violate the boundary between one mouth and another by sharing a single lolly. “Can I have a lick o’ your lollipop?” is an expression that belongs to a time when germs were yet to consume the public imagination, and it demonstrates that children have long been disposed to sharing confectionery in this way. Allowing someone to share an all-day sucker indicates friendship because it involves sacrifice as well as intimacy. How many times the friend licks it indicates how important a friend they are. Chewing gum and hard lollies such as bull’s-eyes and all-day suckers are ideal for sharing because they last a long time. Snowey’s choking episode is punishment both for having such a lolly while others did not, and for not sharing it. When friends share a single lolly in Markus Zusak’s The Book Thief it is a sign of their growing intimacy. Rudy and Liesel had only enough money for one lolly: “they unwrapped it and tried biting it in half, but the sugar was like glass. Far too tough, even for Rudy’s animal-like choppers. Instead, they had to trade sucks on it until it was finished. Ten sucks for Rudy. Ten for Liesel. Back and forth” (168). Rudy asks Liesel to kiss him on many occasions, but she never does. She regrets this after he is killed, so here the shared lolly stands in lieu of intimacy rather than friendship. Lollies are still shared in this way in Australian playgrounds, but often it is only hard lollies, and only with close friends. A hard lolly has a clearly defined boundary that can easily be washed, but even unwashed the only portion that is contaminated, and contaminable, is the visible surface of the lolly. This is not the case with a stick of chewing gum. In response to Tom Sawyer’s enquiry as to whether or not she likes rats, Becky Thatcher replies,“What I like, is chewing gum.” “O, I should say so! I wish I had some now.” “Do you? I’ve got some. I’ll let you chew it a while, but you must give it back to me.” That was agreeable, so they chewed it turn about, and dangled their legs against the bench in excess of contentment.” (58) Unlike the clearly defined boundary of a gobstopper, the boundary of chewing gum continually shifts and folds in on itself. The entire confection is contaminated through contact with the mouth of the other. The definition of clean food also includes that which is deemed appropriate for eating, and part of the appeal of lollies is their junk status. Some lollies are sugar versions of “good” foodstuffs: strawberries and cream, wildberries, milk bottles, pineapples, and bananas. Even more ironic, especially in light of the amount of junk food in many adult diets, others are sugar versions of junk food: fries, coke bottles, Pizzas, Hot Dogs, and Hamburgers, all of which are packaged like miniatures of actual products. Lollies, like their British equivalent, kets (which means rubbish), are absolutely distinct from the confectionery adults eat, and British sociologist Allison James shows that this is because they “stand in contrast to conventional adult sweets and adult eating generally” (298). Children use terms like junk and ket intentionally because there is a “power inherent in the conceptual gulf between the worlds of the adult and the child” (James, “Confections” 297). Parents place limits on children’s consumption because lollies are seen to interfere with the consumption of good food, but, as James explains, for children, “it is meals which disrupt the eating of sweets” (“Confections” 296). Some lollies metaphorically violate a different kind of food taboo by taking the form of “unclean” animals like rats, pythons, worms, cats, dinosaurs, blowflies, cane toads, and geckos. This highlights the arbitrary nature of food categories: snakes, lizards, and witchetty grubs do not feature on European menus, but indigenous Australians eat them. Neither do white Australians eat horses, frogs, cats, dogs, and insects, which are considered delicacies in other cultures, some even in other European cultures. Eating human beings is widely-considered taboo, but children enjoy eating lollies shaped like parts of the human body. A fundraiser at a Queensland school fete in 2009 epitomised the contemporary fascination with consuming body parts. Traditionally, the Guess-The-Number fundraiser involves guessing the number of jelly beans in a glass jar, but in this instance the jar held teeth, lips, noses, eyeballs, ears, hearts, and feet. Similarly, when children eat Tongue Pops—tangy tongue-shaped lollies on a stick—the irony of having two tongues, of licking your own tongue, is not lost on children. Other lollies represent tiny people, and even babies. In the ordinary world, children are small and powerless, but the magic of lollies enables them to be the man-eating giant, while Chicos and jelly babies represent the powerless child. Children welcome the opportunity to “bite someone else’s head off” for a change. These lollies are anonymous people, but Freddo Frog and Caramello Koala have names as well as bodies and facial features, while others, like Cadbury’s seven Magical Elves, even have personalities. One of these, Aquamarine, is depicted as a winking character dressed in blue, and described on the wrapper as “a talented musician who plays music to inspire the Elves to enjoy themselves and work harder, but is a bit of a farty pants.” Advertisements also commonly personify lollies by giving them faces, voices, and limbs, so that even something as un-humanlike as a red ball, in the case of the Jaffa, is represented as a cheeky character in the act of running away. And children happily eat them all. Cannibalism rates highly in the world of children’s confectionery (James 298). If lollies are “metaphoric rubbish,” as James explains, they can also be understood as metaphorically breaking food taboos (299). Not only do children’s rituals create a sense of friendship, belonging, even intimacy, but engaging in them is also an act of power because children know that these practices disgust adults. Lollies give children permission to transgress the rules of civilised eating and this carnivalesque subversion is part of the pleasure of eating lollies. James suggests that confectionery is neither raw nor cooked, but belongs to a third food category that helps to define “the disorderly and inverted world of children” (“Confections” 301). In James’ analysis, children and adults inhabit separate worlds, and she views children’s sweets as part of the “alternative system of meanings through which [children] can establish their own integrity” (“Confections” 301, 305). In the sense that they exist outside of officialdom, children have inherited the carnivalesque tradition of the festive life, which Bakhtin theorises as “a second world” organised on the basis of laughter (6, 8). In this topsy-turvy, carnivalesque realm, with its emphasis on the grotesque body, laughter, fun, exuberance, comic rituals, and other non-official values, children escape adult rule. Lollies may be rubbish in the adult world, but, like the carnival fool, they are “king” in the child’s second and festive life, where bodies bulge, feasting is a public and often grotesque event, and children are masters of their own destiny. Eating lollies, then, represents a “metaphoric chewing up of adult order” and a means of the child assuming control over at least one of its orifices (James 305-6). In this sense, the pig is not a symbol of the uncivilised but the un-adult. Children are pigs with sugar—slubbering around hard lollies, licking other children’s lollies, metaphorically cannibalising jelly babies—and if they disgust adults it is because they challenge the eating norms that guard against the ever-present reminder that eating is an animal act. Eating practices “civilize the human animal” (Kass 131), but eating is inherently an untidy experience, and any semblance of order, as anthropologist Mary Douglas explains, is only created by exaggerating difference (qtd. in Ashley et al. 3). The pig is commonly understood to be the antithesis of civilisation and, therefore, the means by which we understand ourselves as civilised beings.
