Texte intégralEl otro factor fundamental para una explotación piscícola, puesto que resulta determinante del estado fisiológico de los animales, tanto de manera directa por su influencia sobre el estado energético, como de manera indirecta por su influencia sobre la resistencia al estrés, es la dieta y el estado nutricional. Tradicionalmente, los peces marinos se han alimentado con dietas altas en lípidos con ingredientes de origen marino, que contienen los ácidos grasos son esenciales para estas especies. Los peces marinos no son capaces de sintetizar las largas cadenas de ácidos grasos poliinsaturados (PUFAs), que deben ser proporcionados en la dieta. Por otra parte, el suministro de aceite de pescado y la harina de pescado en los piensos para la acuicultura han mostrado, una reducción debido al estancamiento de las capturas y al incremento de la producción intensiva además de los fenómenos naturales que afectan a la producción del mar. Existe una fuerte necesidad de la diversificación de los ingredientes de los piensos utilizados en acuicultura considerables esfuerzos en la investigación se han dirigido hacia la evaluación de otros ingredientes no marinos como posibles sustitutos de la dieta en los peces. El uso de aceites vegetales en la alimentación de peces ha sido ampliamente estudiado, y los trabajos más recientes han centrado la atención en la sustitución de aceite de pescado por otras fuentes de ácidos grasos y sus efectos sobre el sistema inmunológico. Sin embargo, poco se sabe sobre el efecto de estos aceites en los parámetros inmunes. Además, la mayoría de los estudios sugieren un nivel relativamente alto de proteínas, de conformidad con la naturaleza los carnívora / piscívora de muchos peces; así como vitaminas y minerales esenciales, pueden afectar tanto la incidencia y como la gravedad de determinadas enfermedades infecciosas de los peces. Existen diferentes tipos de sustancias conocidas por actuar como inmunoestimulantes, pero sólo unos pocos son aptos para su utilización en la acuicultura, estos extractos biológicos y sustancias químicas sintéticas que estimulan la respuesta inmune mediante la promoción de la función de células fagocíticas, el aumento de su actividad bactericida y / o no específicos de células citotóxicas y la producción de anticuerpos. Los efectos inmunomoduladores como los glucanos son diferentes dependiendo de las especies de peces, la vía de administración, la dosis y la asociación con otros inmunoestimulantes.

The industrial production of fishing resources (fish farms) anywhere in the world shows greater economic importance due to the growth of their demand and to the increasing quality of the commercial product. The Knowledge of the state of the cultured population is crucial, because often when a problem is detected too late to save the population. Proper alignment of the animal to the culture conditions is essential in fish farming. The better the alignment, the better the maintenance in captivity, growth and reproduction of the species. In fact, two of the main factors to be controlled in relation to a good adaptation conditions of stress and nutrition. Stress can be defined as any situation that puts the organism under the conditions outside the stable or normal physiological range (extreme diseases, changes in the environmental conditions, etc.). The stress situations in fish and the mammals keep great similarities, although there exist differences in terms of the organs involved and the response time, being this, an important factor for the recovery of the homeostasis. The parameters used to identify a stressed fish are the ones related to the different response phases after stress: primary response, secondary; in addition, immune parameters like phagoctytosis indicators, lytic enzymes of the alternative system of the complement, etc.
The other key factor in a fish farm, since it is a determinant of physiological status of animals, either directly by its influence on the energy state, and indirectly by their influence on resistance to stress, diet and is nutritional status. Traditionally, marine fish have been fed high lipid diets with ingredients of marine origin, containing those fatty acids that are essential for these species. Marine fish are not able to synthesise the long-chain polyunsaturated fatty acids, PUFAs and thus, they must be provided in the diet. On the other hand, the supply of fish oil (FO) and fish meal for aquaculture feeds has been reduced due to stagnation in capture fisheries as a consequence of over fishing and natural events afecting the oceans. The use of vegetable oils in fish nutrition has been extensively studied; and recent work has focused attention on replacing fish oil with alternative fatty acid sources and their effect on the immune system. However, little is known about the effect of these oils on immune parameters. Futhermore, protein and amino acids constitute the key group of essential nutrients required by all animals for synthesis of protein and subsequent growth. Most of these studies suggest a relatively high protein requirement, consistent with the carnivorous/piscivorous nature of the fish. Microbial diseases cause high losses in intensive aquaculture and they need to be controlled to improve animal welfare and economical profit. Different kinds of substances are known to act as immunostimulants but only a few are suitable for use in aquaculture, are biological extracts and synthetic chemicals which stimulate the immune response by promoting phagocytic cell function, increasing their bactericidal activity and/or non-specific cytotoxic cells and antibody production. Yeast β-glucans enhance immune responses in several fish species by promoting the production of antimicrobial lytic proteins, such as lysozyme and complement and stimulating the phagocytic activity of macrophages. The immunomodulatory effects of glucans are not unequivocal and have been shown to be different in relation to the fish species, route of administration, doses and the association with other immunostimulants.

Texte intégralBreast cancer is the most common malignancy among women all over the World. Besides the genetic, epigenetic and hormonal factors, there are epidemiologic and experimental evidences that nutritional and environmental factors have a role in the etiology and the development of this cancer. The dietary lipids are directly related with cancer, mainly breast cancer. The research group has contributed to the best understanding of the effects and the mechanisms of action of the high corn oil, rich in polyunsaturated fatty acid (PUFA) n-6, and the high extra virgin olive oil diets, rich in monounsaturated fatty acids (MUFA) n-9 and several bioactive compounds, in the experimental breast cancer, resulting in a stimulating and a potentially protective effect, respectively. These diets mostly acted on the carcinogenesis promotion stage. The aim of this work has been to research on the intervention of these lipids, furthermore, over the initiation through the modulation of the bioactivation and/or detoxification of the carcinogenic initiator agents, both in hepatic level and the mammary gland itself. Results proceed from two different experimental series, developed in the experimental breast cancer model induced in the rat with the polycyclic aromatic hydrocarbon 7,12-dimethylbenz(a)anthracene (DMBA). In both series the xenobiotic metabolizing enzymes (XMEs) were studied, CYP1A1, CYP1A2 and CYP1B1 from the phase I, and GSTP1 and NQO1 from the phase II. The first series analyzed the effect of the dietary lipids on the XMEs expression in the liver and the mammary gland in critical development ages (prepubertal, pubertal and postpubertal/adult). The second series studied specifically the hours immediately after the carcinogen administration and analyzed the effect of the dietary lipids on its hepatic metabolism, the generation of reactive compounds and the genomic damage in the mammary gland. Results showed that dietary lipids may modulate the XMEs expression in different stages of the postnatal development. Additionally, the diet rich in PUFA n-6 increased the expression of phase I enzymes, in ages previous to DMBA administration, and raised CYP1s activity in the hours immediately after induction (12 and 24 hours), while reducing the enzyme activity of phase II, mainly NQO1. The number of reactive metabolites generated in the liver and the genomic damage in the mammary gland of the animals fed the high corn oil diet was higher than in the other groups. On the other hand, the high extra virgin olive oil diet and the normolipidic control diet exhibit a better coordinated phase I and phase II activity, showing a lower production of reactive metabolites and smaller DNA damage in the mammary gland. Concordance between these results and the carcinogenesis parameters in both series showed the effect of lipids on the initiation of the experimental mammary carcinogenesis, besides the already described modulation during promotion/progression stages. Results of this work, along with previous others on the effects of lipids during sexual maturity and mammary gland differentiation suggest that these nutrients, depending on the amount and type, can differently modify the mammary gland susceptibility or resistance to cancer development, and therefore, modulate the windows of susceptibility over the exposure to environmental carcinogens.

La finalidad de esta investigación fue evaluar el estado nutricional de los pacientes con EA en las diferentes etapas de la enfermedad y explorar cómo este estado se correlaciona con las variables cognitivas, funcionales, conductuales y el nivel de sobrecarga de los cuidadores. Se realizó un estudio observacional descriptivo prospectivo. La muestra estudiada en la valoración inicial fue de 101 pacientes y de 73 en la revaloración. Se evidenció que existe un riesgo de malnutrición elevado en los pacientes con EA y este peor estado nutricional se correlacionó con la situación cognitiva, conductual, funcional y el grado de sobrecarga del cuidador. La escasa adhesión a la dieta mediterránea obliga a incrementar la educación dietética en este grupo de pacientes para mejorar, en la medida de lo posible, su pronóstico.
There is a high risk of malnutrition in the elderly population and this risk is higher in patients with Alzheimer's disease (AD). The purpose of this investigation was to evaluate the nutritional status of patients with AD in the different stages of the disease and to explore how this state correlates with the cognitive, functional, and behavioral variables and the level of overload of the caregivers. A prospective descriptive observational study was carried out. The sample studied in the initial assessment was 101 patients and 73 in the reassessment. It was evidenced that there is a high risk of malnutrition in patients with AD and this worse nutritional status was correlated with the cognitive, behavioral, functional situation and the degree of overload of the caregiver. The lack of adherence to the Mediterranean diet requires increasing dietary education in this group of patients to improve, as far as possible, their prognosis.
