Texto completoFood authenticity has raised public’s awareness for many years. Eating locally in a context of climate change to contribute to terroirs protection as well as many food fraud scandals is a major concern. Scandals such as melamine in milk (2008), the Horsegate scandal (2013), or many wines imported from Spain (or elsewhere) that were wrongly sold as French ones in 2014, 2016 and 2021.The purpose of this thesis is to develop new diagnostic methods to guarantee authenticity of three products: wine, olive oil and honey. The developed methodology is about comparing the three types of matrixes from the same geographic area and define if area-specific biomarkers exist.At the crossroad of chemistry, analysis and data science, this thesis is divided into three main parts. The first one was to develop an extraction protocol in such a way that three matrixes analysis is comparable. The second is about proving the concept of terroir markers and validating the analytical techniques. Finally, a fully integrated workflow to deal with food authenticity question is proposed. Starting from the sampling of the database to the ability of modelling and classifying unknown samples

Firstly, it shows that this strategy bases on a sectional system of regulation for the vintage wines. Secondly, it analyses how the integrated viticulture is indispensable to maintain a specific image of quality for the champagne. Lastly, it focuses on the necessity to guarantee the cooperation of the join-trade organization in order to accelerate the process of the lntegrated viticulture and to reach the initial aim of it. These steps allow us to understand the importance of an environmental program to rely on the quality signal "AOC to maintain the differentiation strategy of champagne in a hard economical and political context for the AOP

Texto completoToday, Provence vineyard is the first worldwide rosé wine producer. Its notoriety is recent with the appellations d’origine contrôlée at the end of the twentieth century. Yet, the story of that area – vine cradle in France - isn’t known for fines wines even though some quality wines were famous before phylloxera. After that crisis, the vine has recovered her omnipresence in the agricultural landscape. During the first half of the twentieth century, Provence vineyard has mainly produced ordinary wines. But it has known a total transformation in a few decades. The aim of our work is to understand how its production has changed from ordinary wines to quality wines.Appellation constructions with their differences and their originalities are our principal problematic, especially those of « Côtes de Provence », « Coteaux d’Aix-en-Provence » and « Coteaux Varois-en-Provence », because they are the largest, they have never been studied before and their comparison shows specificities. While there are similar terroirs and characteristics, those are three singular histories in socioeconomic and socio-political different contexts. These histories were preceded by the pioneer appellations d’origine controlée, with also specific environments (« Cassis », « Bandol », « Bellet », « Palette ») and they have carried on with the latest ones, « Les Baux-en-Provence », then « Coteaux de Pierrevert », which is the most unexpected one

Many previous work on the subject have studied the success of Champagne through its AOC or through its interprofession, but few have considered the complementarity of the two institutions, which work very well together. This disposal exists in the other French AOC wine regions, which have less succes on the market. We aim at explaining why the economic success of the Champagne region is more important than in the other regions, showing that the institutions in Champagne are more performant. Texto completoBetween cahors and soturac, the vineyard of cahors - a guaranteed vintage- is situated in the mid-lot valley, which has silicious terraced rows on its hillsides, and on its bordering plateaux, composed of limestone of the secondary or tertiary geological eras. In order to study and do a cartography of the + terroirs ; in the 45 rural districts which include the area concerned (a project commissioned by the local and national authorithies), we defined a scale comprising twelves criteries for differenciating the +terroirs ;; this enabled us to describe and do a cartography of them on a scale of 1/25 000. This epistemological and applied approach led us to extend our research by following three main lines: - an extensive study of the +terroirs ; by taking soil samples, which was consequently furthered by soil analyses and they showed the differenciation between the various +terroirs; according to their soil; - a study of the area's topoclimates, by examining the daily temperatures according to each + terroir ;, and by elaborating a numerical model of ground which enabled us to examine the shadows cast according to the slopes or the exposure; - a study of the links between each + terroirs ; and the qualities of the wine over five years, either by tasting them or making chemical analyses of the microvinifications, which showed that there is a hierarchy between the + terroirs ;. Those extensions of our study confirmed both the cartography we had made, and the individual character of each + terroir ;, which we called the + fait terroir ;. Finally, one of the outcomes of our research consisted in studying the possibility to award an appellation + first-class cahors vintage ; on the scale of the patch, which would boost the cahors appellation. This section of our research enabled us to compile a database which could lead to the creation of a geographical information system

Texto completoThe study of the genesis of French law surrounding the wine trade under the Third French Republic is essential to understand the ins and outs of French present wine law. Actually, almost the whole present wine law appears between the eighties of the nineteenth century and the thirties of the twentieth century. The analysis of the French legislator’s approach displays the determination to set up a large-scale policy in order to protect a production enduring, during this period, a structural slump crisis. The fraud on the composition of the wine and on its origin, during the last years of the nineteenth century, characterizes the market of the wine. This one is led astray by unfair competition and the loss of consumer’s landmark. Endemic overproduction of French viticulture during the first part of the twentieth century, competition of foreign wines, and restriction of French and international outlets, push legislator into protecting national viticulture by several measures for redefining behavior of the trade and the production. French legislator tries, at the same time, to push for quality and controlling market. Protectionist and agrarian policy triumph in the French Parliament and government to protect this flagship of the French agricultural production in the Third French Republic

Texto completoFood authenticity and traceability have received an increasing interest during the last decade since the knowledge of food provenance is regarded as an additional warranty of its quality. The world's globalization brought to the consumers is more and more concerned with the origin of the food they eat because various products are subjected to adulteration or false denomination. The augmentative interest in anti-fraud and consumer protection has led to the extension of scientific research and development of effective tools of food authenticity control. Among the analytical technics applied to food authenticity and traceability, one of the most rapidly developing and promising method is based on fingerprinting of heavy elements detected by atomic spectroscopy. The multicollection inductively coupled plasma mass spectrometry (MC-ICP-MS) is recognized as a method of choice for the high precision measurement of numerous elements of the periodic table as well as ratios of their stable isotopes. This study present a new analytical strategy based on combined non-traditional stable isotopes and trace elements determination by ICP-MS. The benefits of combining information from two isotopic systems, one tracing the soil (Sr), and the other tracing environmental ambient pollution (Pb), allowed to obtain an exceptional new information about traceability and authenticity of selected food matrixes: prestigious Bordeaux wines, dry-cured hams and tea. Using complementary analytical techniques such as traditional elemental fingerprinting, the regional specification, as well as tracing of the food preparation process are possible. When combined with chemometrics, these analytical advances constitute an efficient and promising tool to detect food frauds, including adulteration of high value products with cheaper substitutes, forgery and falsification
