Texto completoThe energy issue has recently become crucial in the global debate in relation to four main factors: the non-reproducibility of natural resources, the exponential increase in consumption, the economic interests and the preservation of the environment and climate of our Planet. It is therefore necessary to change the pattern of production and consumption of energy, especially in cities where the highest consumption of energy is concentrated. For these reasons, the use of Renewable Energy Sources (RES) is now beginning to look as essential, appropriate and urgent even in urban planning. To improve the overall energy performance of the city system the government policies should come out of a "building-centric" operative logic covering, in addition to individual estates, the aggregations of buildings and their relationships/interactions in terms of input and output of matter-energy. The widespread replacement of existing estates with new hyper-technology buildings, is unlikely. So how, can we redefine rules and practices to create energetically efficient urban fabric building? This research proposes the integration of the emerging territorial energy planning and the more established zoning in the generation of the urban fabric "energy saving", adding to the energy and environmental performance of individual buildings those of the context, in a global energy balance. This study, describing and comparing the main RES available today, suggests a methodology for preliminary assessment of the mix of technologies and RES best suited for each site, configured as a "district energy". The results of this process provide the basics to prepare the necessary actions related to the integration of the energy efficiency in Town Planning through the application of the principles of equalization in the definition of performance requirements to the scale of settlements, which are essential for a correct transfer in the design of the urban "objects" and “systems".

Texto completoThe theme of the recovery of historical buildings is current, especially in a period in which, for known economic, financial, social and political reasons, interventions of new constructions and investment have declined dramatically and investments, although contained, are diverted to energy rehabilitation and functional recovery and restoration of existing buildings. Our country has a housing stock that, if properly managed and developed, can turn into an asset by potential priceless. Often, however, customers, designers and contractors are not ready for action in addressing the demanding projects on historical buildings, losing opportunities for development and economic growth. Just think, for example, to the considerable funds that the EU allocates periodically to facilitate the recovery of historic buildings and that often our country is not able to find or spend. The most common causes of these inefficiencies are attributable to the reluctance - in the fields of engineering and architecture - to the planning, management of enterprise-resource, teamwork, updated, the industrialization of construction site, quality control and so on. This PhD research is aimed to study, from the theoretical point of view and from the study of the state of the art, the efficiency - in terms of productivity and quality of work - of a new approach for analysis, management and control of the building process, through the use of the methodology of building information modeling using two case studies of reference: the assessment of the applicability of the BIM Surveying to the historical buildings and the possible benefits of the latter compared to the use of traditional survey methods. Building information modeling, already widely used successfully in other countries as part of interventions of new construction, it is a 'way of working' relatively young and little known in many advanced counties, including Italy. It is configured as a holistic and coordinated method to assist architects, engineers, customers, decision makers, maintenance staff and all those involved in the building project. In the current traditional practice, the life cycle of a building - from design, to construction management, from supply management to the maintenance work in the year - remains fragmented and based on a continuous and not-organized exchange of information between the various actors involved in the construction process. Errors, omissions or inaccuracies contained in these documents (paper or digital) are often due to unexpected costs, delays in the design and execution of the work, of legal actions between clients and companies or designers... Texto completoProtein turbidity in white wines and unstable coloring matter in red wines are two of the main phenomena of instability in winemaking. Traditional adjuvants involved have both high economic and environmental impact and wines can be less acceptable by consumers. The aim of this work was to investigate new and sustainable adjuvants to solve these problems. To prevent protein turbidity, winemakers add to wine bentonite that is an effective fining agent, but its application has shown drawbacks that cost $1 billion worldwide per year. A possible alternative can be the use of grape seeds that are a renewable resource and readily available to wineries during vintage. Moreover, the spread of Bovine Spongiform Encephalopathy led to a review of food production practices. Several of the fining agents used in winemaking are of animal origin (porcine gelatin, egg albumin and casein). These issues resulted in an increasing demand for wines obtained without fining agents from animal sources. An alternative can be represented by vegetal proteins extracted from potato and pea. Results shown the clarifying capacities of these agents and led to identify the best ones based on proteins and phenolics removal and sensory evaluation of different treated wines.

Texto completoThe advent of the Industry 4.0 paradigm has upset the Italian and global industrial sector. Thanks to it, increasing attention is being paid to innovation, digitization and sustainability of production processes. The concept of industrial production has radically changed so much until calling this current historical period the "fourth industrial revolution". One of the seven pillars of the Industry 4.0 paradigm is Additive Manufacturing (AM). Within this ecosystem, AM plays a key role in the development and production of prototypes and final components, characterized by extreme customization and complex geometries, which cannot be achieved by means of traditional production techniques. This innovative technology contrasts with the traditional conception of the production processes, which has characterized the last few centuries. The idea of producing components not by subtracting material from a bulk, but by selective addition, inexorably changes all the main principles of industrial production. AM has not only changed the way of producing, but the whole production and distribution chain connected to it, starting from the supply chain for raw materials, up to ad-hoc production and distribution by makers. All of this has been possible thanks to the concomitant development of mechanics, robotics, sensors and software design fields. The most recent innovations in these sectors have been combined in the various technologies that make up the AM world, decreeing its worldwide success and allowing the creation of components, not imaginable up to 50 years ago. These indisputable potentials have attracted the attention of various industrial sectors, including architectural, aerospace, automotive and biomedical design. Currently, Direct Laser Metal Deposition (DLMD) is undoubtedly among the AM processes that are gaining more interest from the scientific and industrial sectors. This technology uses the potentiality and flexibility given by a laser beam to produce, layer by layer, free-form 3D components or functionally recovered worn components. The capability to process a wide selection of materials (metallic, polymeric and ceramic) is leading to the development of components characterized by extreme performances. However, this technology has only a few decades of life behind it, still has several critical issues that characterize it, and that the scientific world is trying to solve. The present doctoral thesis tries to face, with a rigorous scientific method, the challenges that still preclude the diffusion of the DLMD on an industrial level. The first chapters start with a careful analysis of the state of the art in the Additive Manufacturing sector. Then, focusing on an in-depth study of DLMD technology, this work examines the components of the system, analyses the workable materials and the main feasible applications. After this indispensable survey of the state of the art, attention shifted to the focal points of the doctoral activities. Different modelling practices related to the DLMD process were analysed. The main parameters involved in the process were identified and their effects on the mechanical characteristics and quality of the deposition were evaluated. The different deposition models of single traces were catalogued according to the methodology and the pursued objectives. A phenomenological model was developed, which correlate the main process parameters to the quality of the deposition, in an efficient and computationally convenient way. Further process parameters involved in the production of multilayer components were investigated, which incorrect setting may lead to process failure. An innovative method was therefore evaluated to mitigate variations in the working distance, by varying the laser spot dimension. The fourth chapter of the thesis is dedicated to the monitoring of the process. DLMD is a very flexible but also extremely delicate and complex technology. Nowadays, the search for the quality of components inexorably passes through a rigorous process control that may ensure excellent working conditions. The in-process and post-process monitoring methods applied to the technology were then analysed and classified. Thanks to collaborations with external research centres, such as the ENEA centre of Brindisi, it was possible to carry out an in-depth thermal monitoring campaign of single-pass and multi-pass depositions. The influence of process parameters and deposition strategies on the thermal field generated during the processing of nickel-based superalloy, which has a significant influence on the final product quality is highlighting. The DLMD process was also monitored by an optical method, via a coaxial CCD camera mounted on the laser head, capable of visualizing the molten pool and detect the geometric changes during processing. The quality of the laser deposition was also evaluated in a post-process step by ultrasonic techniques, which are useful for mechanically characterizing the specimens and identifying some deposition defects. In the last chapter of the thesis, the sustainability of the DLMD processes is assessed. First of all, an analysis of the literature was carried out to detect works related to the AM domain and methods for assessing economic, social and environmental impacts. Considerable differences with respect to traditional production techniques were discovered, which under certain conditions, make the AM techniques the best choice from various points of view. Several techniques for assessing sustainability were explored, especially for the assessment of the environmental impact. It is highlighted that some of them are now globally recognized, while others are currently under development, albeit showing considerable advantages. Starting from the last point, Exergetic Analysis was finally developed on the prototype DLMD system present in the laboratories of the Department of Mechanics, Mathematics and Management (DMMM) of the Polytechnic University of Bari.
