Qishta is a Lebanese dairy product obtained by heating whole milk for 2 to 3 hours in an open shallow vessel. During the process, milk is added to readjust its level and compensate the amount of evaporated water. The process consists of harvesting the coagulum formed at the milk surface. Our findings showed that these aggregates result from the denaturation of milk proteins and their interactions with the fat globules. This work has demonstrated that Qishta has almost the same amount of proteins and fat estimated at 12% and therefore the product has a composition similar to that of Ricotta cheese made from whole milk. The characterisation of Qishta using mass spectrometry has allowed to determine and quantify the proteins present in Qishta. These analyses have demonstrated also the presence of “Cross links” between proteins which are involved in the Qishta coagulum formation. Lanthionine and lysinoalanine were identified as neoformed amino acids during the heat treatment. These amino acids are involved in the cross links formed during the heat treatment of milk. These amino acids will establish covalent bonds between the proteins of Qishta coagulum. The confocal laser scanning microscopy analyses of Qishta samples previously treated with Fast Green and Nile red dyes have allowed to highlight the protein-fat interactions considered as the source of coagulum formation.Our findings showed the significant effect of the fat amount present in the initial milk on the process and the yield of Qishta. Increasing the amount of milk fat leads to an increase in the Qishta yield. A milk with 3.2% of fat has given the maximum yield. However, the use of skim milk in the production did not nor lead to any coagulum formation.The effect of ageing during Qishta storage for 20 days at 4 ℃ on the fat oxidation and therefore on the Qishta shelf life has been realized. The results of the primary and secondary indicators of oxidation analyses have showed the fat present in Qishta was not oxidized during the study period.In addition, the emission spectra of tryptophan, riboflavin and the excitation spectra of vitamin A were directly recorded using frontal fluorescence on Qishta stored at 4 ° C for 20 days.The analysis of these spectra by multidimensional statistical tools such as principal component analysis and discriminant factor analysis has allowed to significantly differentiate Qishta samples. Indeed, these analyses have allowed to significantly distinguish between the samples and subsequently predict their shelf life of the product

During the Late Bronze Age (LBA), the Central Levant was divided into small states. Most scholars believe that these petite states were organized according to the political and economic model of the city-state, like that of Early Dynastic Mesopotamia (ca. 2900-2350 BCE) or Classical Greece (ca. 499-336 BCE). In the last ten years, however, it has been proposed that the economic system of the area matched better the harbor power model, a variation of the dendritic system model, a model based on the trade connections between harbors, inland sites, and foreign commercial powers. Throw this dissertation, I explore the economic system under the light of new archaeological evidence from the Lower Qishon Outlet, proposing a new standard, based on the dendritic system model, that fits better the economic reality of the Central Levant during the Late Bronze Age.

For many years, Chinese phonetic alphabets pedagogy at pre-school education has been a controversial issue full of vagueness and ambiguity. As a teacher, the author must decide whether or not Chinese phonetic alphabets should be instructed in advance, which is conflictive choice when taking educational policies and enrollment situation into consideration. It is hoped that this research can further the understanding of the status quo of Chinese phonetic alphabets pedagogy and help teachers specify their teaching ideas. At the mean time, through empirical research, this thesis explores the relevant factors that influence the effect of learning Mandarin phonetic symbols. The derived results can be used as references to the subsequent further research as a little contribution to academic research. This research carried out semi-structured interviews among kindergarten teachers in Qishan area and learned their standpoints on the pre-school children’ learning of Mandarin phonetic symbols; moreover, it used the Elementary Mandarin Phonetic Ability diagnostic Test to get the phonetic test grades of those pre-school children taught by these interviewed teachers. This paper also gave parents self-composed questionnaires about the family background and Chinese phonetic symbols learning experience of pre-school children to collect the different background information of those tested children. This study used word-for-word coding, descriptive statistics, one-way ANOVA, independent samples T test and multi regression to analyze relevant information. The research results are listed below: 1. The viewpoints of kindergarten and elementary school teachers on pre-school study of Mandarin phonetic symbols: (1) The interviewed teachers concluded that four factors lead to the common phenomenon of learning phonetic symbols at pre-school phase, namely: following the social trend and the expectation of parents, responding to the enrollment pressure caused by the family plan, unclear specifications of the Education Department and encouraging pre-school students to develop habits and abilities of independent reading through learning phonetic symbols. (2) Elementary teacher once doubted the propose, but later changed to take the neutral or supporting side. 2. Among the personal background variables, the gender and age have no impact on children’s dictation and recognition ability. 3. Among the family background variables, the nationality of mothers, the homework review frequency, family income, the educational background of parents and the profession of fathers have remarkable effects on children’s dictation and recognition abilities in phonetic symbols. 4. Among the family background variables, the family structure, dominant language, learning expectations and the profession of mothers are of little account for children’s the dictation and recognition abilities in phonetic symbols. 5. Among the school background variables, the length of education, the school type and teaching objectives make great difference in students’ dictation and recognition abilities in phonetic symbols. 6. The school site variable among the school background variables does not influence dictation and recognition abilities in phonetic symbols noticeably. 7. The school form and the profession of fathers can predict the phonetic symbol dictation ability of pre-school students in Qishan area. 8. The school form, teaching objectives, the profession and educational background of fathers have predictive function on students’ recognition ability. Lastly, based on the study findings, this thesis provides some recommendations to the future researchers, kindergartens, teachers, parents and administrative agencies of education.

Settlement development requires various conditions, including population, communication, and industry. However, settlements may not necessarily become more developed when these conditions are met. Settlements may only show signs of temporal change with the arrival of these conditions, instead of moving towards further progress. Xizhou is one such example. In the Qing Dynasty, Xizhou was the core region of the Dajiedian community. When the Dajiedian people moved north to the Kouai region, the Han people entered and colonized Xizhou. The Han colonization of the Luohan Weimen region is relatively later. However, the vast and flat river terrace was optimal for the Han people, and Xizhou became one of the largest Han settlements in the Luohan Weimen region and even overtook the Fanshuliao Street in terms of prosperity. During the period of Japanese rule, the imperial government initiated a series of reforms to bring scattered natural villages into fixed administrative districts. The three natural villages in Xizhou were combined to form Xizhou Zhuang. Xizhou later became a ōaza district, but the collective impression of a Xizhou identity have already formed. The imperial government created a new administrative district at Xinfanshe to apply strict control on the Han people in this region and direct the developmental trajectory of the settlement. The administrative district was set along a newly constructed road, and along with the railroad, these communication conduits reconfigured Xizhou again but following the contours of the original three natural villages. The concept that each belonged to different natural villages again became a dominant sense of self-identity among the members of the Xizhou community. After the Second World War, Xizhou was again redistricted into five villages, and the ōaza disappeared with the introduction of the new administrative framework. In terms of industrial production, the banana industry again developed and brought in considerable population inflow. The settlement population grew over 10,000 people, but the settlement's commercial development remained small in scale. This study found a market district formed during the Qing Dynasty, in particular, Aligang, the primary locus of business transactions. The surrounding settlements entered into the commercial system centered around this market, which contributed to Xizhou's development into a settlement. Xizhou was incorporated into the system of production that provided for the market, and the growing infrastructural investment during the period of Japanese rule augmented the corridor feature innate to Xizhou's geographical location. The infrastructure-supported communication network bolstered traffic and eventually introduced the small market district into a more extensive market system. Xizhou has always been the production center of the market system, and Xizhou's corridor feature connecting different business districts gave ample impetus for population inflow, becoming the largest Han population settlement in the Qing Dynasty. However, the combination of modern transportation and communication infrastructure introduced by the Japanese, and the population and financial injection to support the post-war banana industry, are all unable to drive Xizhou to become a more developed settlement.
