Texto completoUsing waste from the food industry is a major challenge to reduce food losses, to increase the sustainability of food production and, therefore, increase food security, especially in developing countries. The objective of this thesis is to get vinegar from pineapple waste by means of: enzymatic hydrolysis proceeded by physical pre-treatment; alcoholic fermentation of the saccharified juice with different strains of Saccharomyces cerevisiae and Lactobacillus delbruekii or Lactobacillus plantarum; acetic fermentation with Acetobacter aceti in a pilot plant. Samples obtained from saccharification, alcoholic and acetic fermentation were analyzed for pH, total acidity, total soluble solid (TSS), sugars, acids, ethanol, and volatile compounds. A detailed characterization of vinegar was carried out through UPLC/Q-TOF and GC-MS.

Texto completoStrategic frameworks like shared value or social impact creation have been posited as innovative organizational strategies capable of mending the gap between business and society through inclusive sustainability. If their claims are promising, they still face much criticism concerning their relevance and effectiveness. The dissertation investigates how organizations which have endorsed the idea of shared value creation are efficient, or not, at yielding benefits for themselves and their host communities. It uses the case study methodology to explore four SMEs and two multinational companies in Ghana. The research builds on a multidisciplinary approach to organizational behavior and strategy to dig to ground the pitfalls of strategic action in Ghana, an epitome of the recent Africa Rising narrative. It scrutinizes the way local socioeconomic mores affect strategic choices and organizational performance. The major contribution of the thesis is to introduce a revisited version of Crozier and Friedberg’s concrete system of action for efficiently embedded strategies of shared value and social impact creation. With this, the work reveals that local socioeconomic mores are dynamic resilience mechanisms of control, collusion, bargaining, and/or resistance, which strategists must take account of in designing sustainable strategies, especially in Sub-Saharan Africa.

The purpose of the survey was to start understanding the phenomenon of CSR activities done by MNC to communities in developing countries. Once surveys have been collected, the second part of the research has been based on the selection and analysis of 5 cases with the technique of multiple case study analysis. For those 5 companies the work has been done with the analysis of lots of primary source, integrated with data coming from other sources. AT the end data have been interpreted defining a model by which read strategies realized by companies to communities in developing countries.

Texto completoIn this work I deal with the economics of natural disasters conducting one study at the macroeconomic level and two studies at the microeconomic level. In the first I conduct a meta-analysis of the macro literature on the direct and indirect costs of natural disasters. I investigate the effects of empirical design, estimation technique, resilience factors included and publication bias. I find that direct costs studies have 65% probability to report negative and significant results if they include African countries while indirect costs studies show publication bias. Second, I conduct a microeconometric analysis of the effects of weather variability on households food consumption in Uganda in the period 2005/06-2009/10. I show that on average 1% increase in maximum temperatures would reduce food consumption by 4-5% while precipitation amount and distribution would not affect household food consumption thanks to coping strategies. Finally I consider the effects of droughts and increasing purchasing prices on weight-for-age of children in rural households in Senegal using a multishock approach and a unique dataset (2009-2011). Results of drought(increase in prices) econometric analyis show deterioration in child weight-for-age. However, concomitance of drought and increasing prices would leave child weight-for-age unaffected thanks to positive income effects.

Texto completoTheoretical literature on monetary and fiscal policy have suggested that shadow economy or the informal sector is a powerful buffer which absorbs large proportions of the transmission channels of macroeconomic policies. We develop a theoretical DSGE model with shadow economy and investigate their impact on the transmissions of monetary and fiscal policies in developing and emerging countries. The thesis is organised in three chapters as follows. Chapter one seeks to examine the transmission effects and efficacy of monetary policy and other structural shocks with the interaction of shadow economy. Our model determines whether the presence of shadow economy affects the responses of the official economy and also clarifies the changes in the transmission mechanism within both sectors. The second chapter describes a new Keynesian DSGE model with shadow economy and investigate the role of fiscal policies over the aggregate business cycle. In this chapter, we sought to elucidate whether the presence of shadow economy dampens or amplifies the effect of fiscal policy transmissions. We further tried to understand whether fiscal policies can be used to stabilise the economy in response to shocks. In chapter three, we study the interplay of rule-of-thumb consumers and the presence of shadow economy focusing on fiscal policy disturbances. Our basic motivation is to know whether the incorporation of shadow economy weakens the amplifying effect of rule-of-thumb consumers on fiscal multipliers.

Texto completoFood Insecurity (FI) affects especially poor rural people that rely on Subsistence Agriculture in developing countries. With the purpose to help the community that living in that conditions, in 2012 the Università Cattolica del Sacro Cuore and the Fondazione Romeo ed Enrica Invernizzi have started the “Production of appropriate food: safe sufficient and sustainable” project. The project aims to open Pilot Center in agreement with local Diocese to promote the Agricultural production Intensification agriculture and Diets that are sustainable (ethical, economic and environmental). The project is active in India (Meghalaya State) and the Democratic Republic of Congo (Lomami Province). Helped by the local team, information was collected on production and diets habits. An analysis of the impact that the project had on food security (availability and access) of the families involved was carried out on these data. Number of Chicken (India) and Household Dietary Diversity Score - HDDS (India and DRC) as a proxy for food availability and access, were respectively utilised. Thus, we used different Propensity Score Match approach (Logit + Nearest Neighbour and GenMatch) to evaluate the ATT (average treatment effect on the treated group). Regarding India, the number of chickens bred (as food availability) and the HDDS (food access) were analyzed. While the number of chickens bred is positive but not significant, the HDDS values of smallholder farmers involved in the project did not improved. Moving to DRC, only the HDDS was analyzed. In this case, the project had a positive impact on beneficiary families, but it was not significant. The results point out that diet improving (HDDS) advances the production, both in quality and quantity, but is not a sufficient condition per se. Furthermore, it is also essential to enhance the educational path which focuses on nutritional issues and the access to food from market.

Texto completoThe dissertation investigates the policies and the legal instruments for the international investments' promotion and protection in agriculture of one of the main actors involved in the new land rush: the European Union. The first chapter analyses the EU’s competence over the conclusion of international treaties in order to understand the main innovations of the new generation of EU trade agreements. The second and third chapters focus on possible solutions of the two main agricultural lands investments’ requirements: investment protection and certainty, on the one hand, and protection of local populations, on the other, through a critical analysis of the EU common commercial policy and of the EU development cooperation policy. The thesis aims to provide that the EU free trade agreements and the EU development policy may promote a major legal certainty for developing countries, a key point for any agrarian reform, and consequently guarantee more protection not only for investors but also for local populations.

The second and third chapters focus on possible solutions of the two main agricultural lands investments’ requirements: investment protection and certainty, on the one hand, and protection of local populations, on the other, through a critical analysis of the EU common commercial policy and of the EU development cooperation policy. The thesis aims to provide that the EU free trade agreements and the EU development policy may promote a major legal certainty for developing countries, a key point for any agrarian reform, and consequently guarantee more protection not only for investors but also for local populations.

Texto completoThe present PhD thesis considers the relationships between the organisations of civil society and the international institutions in development cooperation's system through the analysis of the World Bank's and the European Union's policies. In the frame of cooperative and dialectic relationships will be verified the functions of the interlocutors of the civil society in relationship with the two international organisations and levels of partnership. Some problematic knots will be analysed such as the evaluation of projects' performance of the organisations of the social society (OSC) in order to verify the added value; the dichotomy between a top-down and bottom-up approach in the process planning of the local development; the representation and effectiveness of the OSC's contribution to the global governance for development. Two empirical cases of projects realised by an OCE will be showed. These are financed by the two above considered institutions in order to favour, through a “micro” analysis, the comprehension of possible differences regard to the theoretical picture, to the procedures of the project cycle and to the quantitative showed survey. Altogether it appears that the cooperation between the OSC and the international institutions has more benefits than costs and leads to a win-win partnership.

Texto completoThe diet, nutritional status and health are tightly related issues both in industrialized and developing countries. In this doctoral thesis, the main objective was the assessment of nutritional status as a prodromic step to improve it and consenquently health. In industrialized countries, a case study was the nutritional status of a population of central Italy; the intake of some groups of foods, of animal and plant origin, was estimated by food frequency questionnaires and some blood biomarkers. The results demostrated that in dietary controls, aiming to ascertain the long-term effects on health, consumption measurements by questionnaires cannot be exclusive, but some blood and anthropometric indexes could be also useful. In developing countries, two case studies in rural India and D R Congo confirmed that malnutrition is a serious issue; particularly in 3-5 years old children with 26% of severe chronic malnutrition in India and more than 60% in D R Congo. Possible pathways to improve livelihood of rural poor comunities including appropriate food production for a better diet, new income generating activities, infant nutrition improvement, food and waterborn diseases reduction, household food preservation, etc., have been analyzed and the risults of different related trials have been discussed.

Texto completoNumerosi studi hanno dimostrato che l’esposizione di varie specie animali ad anestesia generale durante il periodo di massimo sviluppo del cervello causa la morte per apoptosi di un gran numero di neuroni, che si traduce in deficit di memoria e di apprendimento in questi stessi animali durante la vita adulta. Il subicolo, che fa parte dell’ippocampo e del circuito di Papez, e’ fondamentale per un corretto sviluppo cognitivo ed e’ tra le aree del cervello piu’ vulnerabili al danno indotto da anestesia. Dal momento che la sinaptogenesi e’ una componente fondamentale dello sviluppo del cervello, abbiamo studiato gli effetti di una comune combinazione di anestetici (isofluorano, protossido d’azoto e midazolam) sullo sviluppo ultrastrutturale delle sinapsi del subicolo di ratto. Abbiamo dimostrato che, quando somministrata al picco della sinaptogenesi, questa anestesia causa un danno permanente al neuropilo subicolare. Tale danno e’ caratterizzato da una scarsita’ di profili cellulari, da degenerazione mitocondriale, da una riduzione del numero di bottoni sinaptici multipli e dalla diminuzione delle densita’ sinaptiche volumetriche. Ipotizziamo che tali alterazioni morfologiche contribuiscano almeno in parte a spiegare i deficit di memoria e di apprendimento che si osservano durante la vita adulta in topi esposti ad una anestesia generale al picco della sinaptogenesi

Texto completoTitolo: “L’immigrazione femminile in Italia tra paese di accoglienza e di origine: welfare, co-sviluppo e questioni sociali a cavallo tra due mondi. Le badanti rumene in Italia” Caso : Caratteristiche e strategie delle badanti rumene in Italia in rapporto allo sviluppo nel paese d’ origine e in quello di arrivo. Tema : Migrazione di genere, lavoro di cura, rimesse, co-welfare, transnazionalismo, welfare transnazionale, reti migratorie. Constatazione : Le migranti rumene mirano al benessere ed ad uno standard di vita più elevato per i familiari da loro dipendenti che rimangono in patria attraverso l’ invio di rimesse e sfruttando il differenziale salariale. Per raggiungere tale obiettivo si spostano in uno spazio circolare transnazionale, sfruttando risorse comunitarie e nuovi dispositivi legati alla migrazione, creando sviluppo nel loro paese di origine e sopperendo a gap strutturali (carenza di welfare istituzionale) in quello di arrivo. Domanda di partenza: con quali modalità e in che misura le donne migranti rumene (lavoratrici di cura) sono portatrici, attraverso l’ attivazione di strategie migratorie, di istanze di sviluppo nei paesi di origine e di arrivo? Direzione : Famiglie transnazionali, specializzazione etnica del lavoro di cura, rimesse, transnazionalismo, welfare familistico. Dominio : Sociologia delle relazioni interetniche, Sociologia delle migrazioni, Welfare state policies, EU social policy, Social psychology of intergroup relations. Il tema della ricerca riguarda le donne rumene immigrate in Italia che lavorano nel settore della cura come badanti. La ricerca è stata svolta in Sicilia, in Provincia di Trapani. Tali donne hanno, generalmente, lasciato la famiglia in patria a cui inviano i guadagnati percepiti e vivono in co-residenza con gli anziani che accudiscono. Per tamponare la mancanza della famiglia creano delle reti informali che fungono come motore di ricerca del lavoro e come gruppo di mutuo aiuto. La metodologia impiegata è quella propria della ricerca sociologica e si è articolata in più fasi. La scelta del target e del contesto di installazione non è casuale: quella delle badanti rumene è una realtà in rapidissima espansione a causa della sempre maggior richiesta di lavoratori di cura a basso costo, alla carenza di strutture pubbliche in grado di accogliere il numero crescente di anziani non auto-sufficienti e ai costi proibitivi delle strutture private e dell’ assistenza domiciliare autoctona (quando disponibile). La diffusione delle badanti si lega da un lato alla centralità che ancora ricopre la famiglia in Italia come luogo di tutela e protezione e come canale di mediazione sociale, e dall’ altro ad un welfare che ha delegato alle donne della famiglia la soddisfazione dei bisogni connessi alla riproduzione quotidiana. Il ricorso massiccio a un mercato della cura straniero flessibile, a prezzi contenuti e apparentemente illimitato, sembra la chiave per conservare il tradizionale welfare familista, tipico dei regimi mediterranei. L’impiego di donne immigrate come collaboratrici familiari e aiutanti domiciliari viene visto allora come una risorsa per puntellare le difficoltà sempre più evidenti delle famiglie (e delle donne sposate italiane) nel reggere carichi domestici e assistenziali crescenti. Il modello italiano di welfare risulta insostenibile alla luce delle proiezioni demografiche, e risolvendosi in assunzione di un’assistente familiare al nero legittima il welfare sommerso e parallelo. Alle badanti si richiede spesso un notevole investimento emotivo nel lavoro con l'anziano senza considerare invece la loro difficoltà a gestire a distanza il rapporto con la loro famiglia e i loro figli. Il carico di lavoro troppo pesante dopo anni può condurle ad uno stato depressivo e di disorientamento. I figli, lasciati nel paese di origine, sono affidati a “figure sostitutive” quali nonne, sorelle, vicini, meno spesso sono i padri che se ne prendono cura. Le madri, pur vivendo in paesi diversi da quelli dei figli, cercano di tenere vivi da lontano i contatti e la partecipazione alle vicende e alle scelte familiari e adottano strategie transnazionali. Nella creazione e nel mantenimento di reti, familiari o estese, le donne sono spesso le principali protagoniste attive e giocano un ruolo centrale nella formazione di reti, benché le reti familiari non siano una semplice trasposizione delle reti esistenti: sotto l'effetto della migrazione, l'unità familiare tende a ricomporsi e reinventarsi costantemente. Le strategie migratorie sono inquadrate principalmente nella cornice della minimizzazione dei rischi e della massimizzazione delle aspettative di riuscita nelle economie globalizzate. La migrazione dalla Romania verso l’ Italia, crea vuoti di di cura (care drain). Esiste una forte interdipendenza tra i nostri sistemi di welfare e quelli dei Paesi di origine delle badanti e quindi una conseguente necessità di pensare a politiche transnazionali che tengano conto di questi squilibri. È a questo proposito che gli studiosi del fenomeno parlano di welfare transnazionale: un welfare che tenga conto di politiche varate per soddisfare il paese di arrivo ma anche quello di provenienza, di soluzioni polifoniche e concertate a livello internazionale con ripercussioni sulla dimensione transnazionale della questione, le famiglie.
