Texto completoLa crescente domanda di prodotti alimentari ottenuti da agricoltura biologica in questi ultimi anni è verosimilmente l’espressione di una aumentata consapevolezza del consumatore che sempre più spesso ricerca alimenti di qualità. La qualità del prodotto alimentare derivante da produzioni biologiche non si basa soltanto sul concetto tradizionale di salubrità e di valore nutrizionale del prodotto stesso, ma anche sul concetto globale di sostenibilità e salvaguardia ambientale. L'agricoltura biologica infatti è un metodo di produzione che rispetta il benessere umano e animale e difende la biodiversità ambientale e culturale dei territori proponendo un modello di sviluppo sostenibile volto a salvaguardare ambiente e territorio e valorizzare la qualità delle risorse delle comunità locali. Questo studio di campo si prefigge di confrontare le performances di crescita e il benessere in branzini (Dicentrarchus labrax) alimentati con dieta convenzionale rispetto a branzini alimentati con dieta certificata biologica attraverso un approccio immunoistochimico e biomolecolare valutando i fattori di crescita (IGF-I e IGF-II), parametri dello stress ossidativo e di contaminazione ambientale. Le performances di crescita e i parametri biometrici hanno dimostrato un trend di crescita positivo in entrambi i sistemi di allevamento, come confermato anche dalla quantificazione dei fattori di crescita. I fattori di crescita hanno evidenziato livelli similari in entrambi i gruppi e durante tutto il periodo sperimentale confermando il loro ruolo determinante nella crescita corporea. Il gruppo alimentato con la dieta convenzionale ha mostrato una produttività più elevata rispetto al gruppo biologico. La più elevata produttività registrata a carico del gruppo convenzionale è verosimilmente determinata dalle differenze nella composizione della dieta, considerato che tali differenze venivano mitigate durante i periodi di digiuno. L’analisi del filetto ha evidenziato un più alto contenuto in acidi grassi monoinsaturi e un più basso contenuto in acidi grassi polinsaturi (n- 6) a carico dei filetti biologici Questo dato sta ad indicare che la dieta biologica caratterizzata da un contenuto in acidi grassi più vicino a quello del pesce pescato probabilmente influisce sul profilo degli acidi grassi delle carni di pesce. Per contro, i markers di stress ossidativo e contaminazione ambientali considerati in questo studio di campo non hanno dimostrato alcuna differenza significativa tra i due gruppi.

The aim this work is to investigate in what sense is it possible to conceive of the pleasure in view of eudaimonia in the search for the Good in the Philebus Plato's dialogue. The platonic’s thought about pleasure takes different positions in different dialogues, ranging from a suspicious look, to finally have his deeply discussed and recognized place in the good life. Therefore, we must first turn to the tradition that precedes Plato, since the theme of pleasure recurs in Greek thought, and in turn filled with questions that also permeate platonic philosophy. In this sense, firstly Classical Greece will be visited, since the traditional culture conceived its foundations in the corners and epic poems, lyrical and tragic, and these in turn, the pleasure is a theme often, where there is a constant concern in living a pleasant life. Yet in order to understand the pleasures to the Platonic thought, it will be a brief investigation in Empedocles and Democritus physical. Then the different postures for the pleasure in Plato will be raised, to finally reach the Philebus, with the necessary luggage for better understanding of this topic often discussed. Thus, Plato extends its investigation into the pleasures through dialectics, in order to identify the place of pleasure in eudaimonica life.
O intuito desta dissertação é investigar em que sentido é possível conceber o prazer em vista da eudaimonia na busca pelo Bem no diálogo Filebo de Platão. O pensamento platônico sobre o prazer assume distintas posturas em diferentes diálogos, que oscilam desde um olhar suspeito, até finalmente ter seu lugar profundamente discutido e reconhecido na vida boa. Para tanto, é preciso inicialmente recorrer à tradição que precede Platão, uma vez que, o tema do prazer é recorrente no pensamento grego e, por sua vez, repleto de questões que também permeiam a filosofia platônica. Neste sentido, primeiramente a Grécia Clássica será visitada, uma vez que, a cultura tradicional concebia seus alicerces nos cantos e poemas épicos, líricos e trágicos. Nestes, por sua vez, o prazer é tematizado amiúde, pois há uma preocupação constante em viver uma vida prazerosa. Ainda com o intuito compreender os prazeres até o pensamento platônico, será feita uma breve investigação acerca dos físicos Empédocles e Demócrito. Em seguida, serão levantadas as distintas posturas referentes ao prazer em Platão, para finalmente chegar ao Filebo, com a bagagem necessária para melhor apreensão deste tema tantas vezes discutido. Assim, Platão amplia sua investigação acerca dos prazeres por meio da dialética, com o intuito de identificar o lugar do prazer na vida eudaimonica.

Texto completoInhuman diet, seafood is an important source of proteins, essential fatty acids and minerals. Nowadays, in France, fresh fish is mainly consumed as skinless fillets. Due to the decrease of the fishing and the increase and evolution of fish consumption, the importation of fish becomes more significant in our country. Since several years, the importers suspect fraudulent pratices consisting in selling thawed fish fillets labeled as fresh ones. These products are directly in competition with the national fish market. The main aim of this thesis consisted in developing and improving methods to differentiate fresh versus frozen/thawed fish fillets. A comparative two-dimensional electrophoresis and tandem mass spectrometry proteins identification strategy, performed on fish fillet exudates of European sea bass (Dicentrarchus labrax) allowed us to identify parvalbumin as a protein marker for differentiation. Further analysis of exudates composition could be a good way to find other indicators. The lysosomal alpha-glucosodase activity is already used to differentiate fresh versus frozen/thawed fillets. Two new indicators were studied : concentration of the nucleotides and their derivatives and free calcium concentration. The total protein and the parvalbumin concentrations were also measured. An Ascendant Hierarchical Clustering (AHC) was done to aggregate the variables into three dissimular clusters : the cellular lysis indicators, the proteins damages indicators and the nucleotides alteration

Texto completoIn order to clean or cool a solid surface, one generally flows liquid (mostly water) on the surface; the liquid does not generally flow as a homogeneous sheet, but instead forms liquid rivulets. It is important to understand the dynamics and the behavior of these liquid rivulets on inclined solid surfaces. For this reason, we studied rivulets on two different substrates. First, we used superhydrophobic substrates, where rivulets have a very low contact surface. We are interested in the friction on these substrates and in the rivulet stability: the cylindrical shape is unstable (Rayleigh-Plateau instability) and the rivulet breaks up into droplets. In a second part, we used partially wetting substrates with a strong contact angle hysteresis and large friction between the liquid and the substrate. On these surfaces, a sinuous instability called meandering instability develops. We studied the instability mechanisms in detail and demonstrate the role of the initial conditions on the critical flow rate at which meandering appears. We also investigated the effect of external forces on the shapes of the rivulets

Texto completoWork of this thesis consists of studying the stiffness of the components of the assemblies according to all the parameters defining the design. This study is based on a Finite Elements model validated by an experiment. It leads to models of calculation allowing a precise and fast determination of these stiffnesses. The first part deals with the interest to calculate with precision the equivalent stiffness of the parts and of the bolts for the dimensioning of the assembly, for a best tightening angle control or for a best application of the preload by hydraulic tension tool. The knowledge of the stiffness is also necessary to create a simplified model F E for the bolt. A critical study and an analysis of the principal methods of calculation of the equivalent stiffness proposed up to now show us significant differences between the formulations suggested. Consequently, it's pertinent to make these studies again with the modern means of simulation. In the second time, we are interested in the justification of the methods of determination which make it possible to avoid the measurement of displacements, principal source of error noted in preceding work. So, we give all the results of the bolt's and the cylindrical part's stiffnesses according to the various parameters. Tests of tightening angle make it possible to validate the results of very many simulations carried out. The whole of this very significant work of simulations is summarized in the form of a practical method of calculation which allows a precise determination of the bolt's and the cylindrical part's stiffnesses in all the situations. In a third part, to complete the study, we are interested in the case of the prismatic parts with offset holes and of stacking assembled parts. So, we propose an original solutions based on the knowledge of the revolution cylindrical part's stiffness and an advanced analytical study giving satisfactory results in the case of the prismatic parts. The fourth part proposes an analytical model of the bolted nut making it possible to determine the distribution of the efforts on the thread bolted and the inflection stiffness of the nut and the bolted engaged part. Texto completoWelding deformation on metallic parts joined by electric arc welding are inherent consequences of the process due to the high heat flux required for melting the base and filler metals (when used). Although unavoidable, these deformations can be reduced or eliminated through prior knowledge of joint behavior in accordance with applied heat input (welding energy), geometric characteristics, material properties, among other factors, thus reducing costs with possible rework through design changes or actions that prevent them during welding. This work uses a methodology proposed by Experimental Design theories to evaluate the effect of heat input, flange thickness and web thickness on angular distortion in fillet joints welded by the GMAW process with short-circuit transfer mode. Was applied Analysis of Variance for the angular distortions of the test specimens and there are significant the linear effect of heat input, the quadratic effect of flange thickness and the interaction of heat input and flange thickness on the angular distortion of fillet joints, observing minimum distortion for the combination of higher heat input and lower flange thickness, and also angular distortions for the combination of lower heat input and higher flange thickness, regardless of the thickness of the web are minimal. Through the macrographs of the samples, it was identified that the ratio of a region of the weld metal to the flange thickness that generates the greatest angular distortion is approximately 5, with smaller angular distortions for lower values and higher than that. Through a numerical model, it has been shown that the temperature gradient in the flange does not determine the maximum angular distortion, but the maximum temperature reached in the lower surface of the flange, with maximum angular distortion obtained for the sample that reached approximately 425ºC in point on the surface bottom of the flange and parallel to the edge of the weld bead. Finally, for angular distortions as a function of the ratio between the heat input conducted by the flange and the squared flange thickness, it was observed that the angular distortion is increasing until reaching 15,00 J/mm³, and smaller angular distortions for higher relations to this value.

Texto completoThis thesis deals with the behaviour of threaded assemblies and the implementation of an accurate analytic equation to dimensioning those assemblies. We are interested particularly in bolted and tapped parts assemblies. We analyse the thread stripping behaviour of a static loaded assembly by modelling non linear finite elements and a failure criterion by damage. This model enables us to study the different parameters likely to influence the behaviour of this bolted connection. We have concentrated on the influence of pairs of materials constituting the connection and the geometrical characteristics of the bolt and the tapped part. An experiments design method has been established to discover the most significant parameters and to propose a simple expression for the calculation of thread resistance regardless of the metal materials of the bolt and the tapped part. We have carried out stripping tests in order to validate our model. The estimated results are very close to those obtained by the tests. Finally, we studied the threaded assembly under dynamic loading. We propose two methods to optimise the engagement length. The first one, uses the finite elements method coupled to a rupture criterion by fatigue damage. The second one, uses stress concentrations factors specific to thread stripping obtained by finite elements. These methods were verified to some particulars cases and they could arrive to be the simples laws of threads dimension optimisation under fatigue load

Texto completoThe present study is motivated by the interest for the famous and complex section of the Philebus which alludes to the so-called gift of the gods, consisting in the revelation that "the things that are said to always are " (Phil. 16c9), namely the ideas, derive from the one and the many (ἐξ ἑνὸς καὶ πολλῶν, Phil. 16c9), and for this reason have connatured (σύμφυτον, Phil. 16c10) in themselves a finite element and another unlimited (πέρας καὶ ἀπειρίαν, Phil. 16c10). To act on the background of such a doctrine there is the reason for the interweaving between the ideas. In fact, the notion of multiplicity to which Plato alludes cannot in any way be of a fisicistica nature, since this would entail the fragmentation of ideas by their own instances, and the consequent loss of their unity. A similar multiplicity takes place rather as a result of the complex system of intra-eidetiche relations in which each idea is to be inserted. In the course of the analysis, the most interesting thing to prove will be that the unity of each idea is not compromised by the internal articulation, and therefore by the multiplicity that it presents. For Plato, ideas constitute Enadi or monads, that is, absolute and indivisible ontological units. However, the ideas are also manifold, since each of them has a complex structure, which constitutes the οὐσία and that is the task of dialectics to unravel and reproduce in the speech. ... Texto completoEl color de la carne de salmónidos es uno de los parámetros de calidad más importante, pero su medición es compleja. En el presente estudio se evaluaron los sistemas de medición visual (cartilla Roche™ y regla Salmofan) e instrumental (fotocolorímetro triestímulo Minolta Chroma Meter) del color de la carne en salmónidos. Se estudió la precisión (repetibilidad y reproducibilidad) de ambos métodos, la relación entre estos y la relación entre la medición de color con el contenido de pigmento y lípidos. Además, se comparó la variabilidad entre dos fotocolorímetros con distinta área de medición. La precisión de ambos métodos se evaluó en tres plantas de proceso ubicadas en Chiloé, midiendo filetes de trucha arcoíris (Oncorhynchus mykiss) y salmón del Atlántico (Salmo salar) en forma repetida y aleatoria. Las mediciones se hicieron con la luz normal de la planta y luz D65 en cabina de iluminación controlada. El efecto del área de medición de los fotocolorímetros se evaluó sobre filetes de salmón del Atlántico en el centro Colaco de la empresa EWOS S.A. La relación entre contenido de pigmento, de grasa y color se midió en filetes de salmón Coho (Oncorhynchus kisutch) con ambos sistemas en el laboratorio de la empresa CETECSAL S.A. Además se analizó un set de datos de un proyecto FONDEF previo, en el cual se midió color, astaxantina y lípidos en “steaks” de salmón Coho. La repetibilidad del instrumento fue significativamente mayor a la cartilla Roche™ en la medición de trucha arcoíris y salmón del Atlántico. Las mediciones de salmón del Atlántico con regla SalmoFan no presentaron diferencias significativas con el instrumento. La reproducibilidad de la medición visual no presentó diferencias significativas al cambiar operarios ni al variar el tipo de luz. Las correlaciones entre ambos sistemas de medición de color, y de estos con el contenido de astaxantina y lípidos fueron de baja a mediana magnitud fluctuando entre 0 a 0,62, 0,07 a 0,57 y 0,01 a 0,63 respectivamente. Se concluye que la medición de color es un mal predictor del contenido de astaxantina, independiente del método utilizado. El fotocolorímetro de 50 mm de área de medición, para a*, b* y C* presentó una variabilidad (C.V. a* = 6%, b* = 7% y C* = 6%) significativamente menor al de 8 mm (C.V. a* = 20%, b* = 16% y C* = 16%). Para comparar resultados de medición de color, debe tomarse en cuenta el área de medición del fotocolorímetro utilizado, pues estos no son equivalentes.
Visual color with Roche™ card and Roche Salmofan™ ruler was compared with instrumental color (Minolta Chroma Meter™) measured in salmonid fillets. Precision (as repeatability and reproducibility) of methods, relationship between visual and instrumental measurements, and relationship between color, astaxanthin and lipid content were studied. In addition, variability between two colorimeters with different measurement area was compared. Repeatability of instrumental method was significantly higher to Roche ™ card in rainbow trout and Atlantic salmon samples. Measurements of Atlantic salmon fillet using Salmofan™ ruler did not show significant differences with the instrumental color measurements. There was not significant differences in reproducibility of visual measurement in rainbow trout and Atlantic salmon when changing personnel neither when varying illumination source. The relationship between both color systems, and between color systems, astaxanthin and fat content in Coho salmon ranged from low to medium magnitude (0-0.62, 0.07- 0.57 and 0.01-0.63 respectively). It was concluded that fillet color is a bad predictor of astaxanthin content, irrespective of the method used. Colorimeter with 50mm of measurement area, for a*, b* and C* showed a significant smaller variability compared with the 8mm area (C.V. a*=6, b*= and C*=7 v/s C.V. a*=16, b*=16 and C*=20). Measurement colorimeter area must be taken into account in order to compare results of color measurement .

Texto completoA finite element shell model capable of representing a welded structure without any significantly error on its stiffness could be widely applied to dynamic problems in which the structural stress method (hot-spot approach) is employed for fatigue analysis. The scope of the present work is to formulate a modeling technique capable of doing so. In order to accomplish it, a parametric optimization for simulating welded structures using shell elements is made, the design variables in the proposed formulation are defined as the weld leg length and thickness of the shell element representing the weld fillet. The main goal of the optimization was to find a range of thickness/leg length which would not change significantly the first natural frequencies, and still deliver results similar to the ones obtained by a solid model. Sequential linear programming optimizations are performed in a T-shaped structure under different loading scenarios, with constant section and different plate thicknesses and depths. Once the optimal parameters are found, two different modeling techniques are presented and compared with three well established methodologies presented in standards and the literature. The differences in the results are compared for first natural frequencies, total mass, hot spot stress and fatigue life.

Texto completoSoft rockfall barriers are complex structures that generally consist of a metallic net supported by steel posts and cables with brake elements. Several experimental and numerical studies have been carried out to evaluate their behaviour and a technical agreement in EU was recently established to certify these barriers based on experimental tests. Actually, manufacturers develop rockfall kits with their own technical specificities. The objective of the present work is to determine the intrinsic properties of most common nets technologies and to investigate their influence on the overall mechanical behaviour of the structure. To this end, a comprehensive comparison between the local behaviours of the different nets is first presented using equivalent homogeneous membranes. Results derived for square nets under static concentrated loading illustrate the influence of the manufacturing technology on the deflection and stresses distribution. Then, a numerical and analytical model for the so-called “curtain effect” is developed and validated. Texto completoHaving demonstrated their effectiveness in many contexts, exclusion nets are increasingly used to control crop pests. However, pollination management under nets must be better studied if they are to be widely used. For this research, the pollination effectiveness of commercial bumblebee hives of Bombus impatiens (Hymenoptera: Apidae) was studied for apple production under exclusion nets in a research orchard located in Quebec over a period of two years. Yield and fruit quality (weight, size, number of seeds) data were analyzed at the end of the season to compare 1) the pollination of commercial bumblebees with that of bees in the orchard environment, and 2) two positionings of commercial hives under exclusion nets. Results show that under exclusion nets, bumblebees provided adequate pollination and fruit quality was equivalent to apple fruits conventionally pollinated by honeybees and wild bees. Moreover, we found that positioning the commercial bumblebee hives in the middle of the tree row provided a better fruit load homogeneity compared to the positioning at one end of the row.

Texto completoThis research paper identifies the interest of the Peruvian consumer in cuy meat. It was found in market studies, interviews, landing page and fan page, that consumers consider the high nutritional value and exquisite flavor of Cuy. There is a potential market demand for the cuy meat, but a little real demand since the current supply has an inadequate presentation, which exposes the head, nails and legs of this animal. This is how MICKUY was born, with an offer of Cuy Fillet breaded in Andean cereals and vacuum packed, which will be sold online, through deliverys, in its first stage, and then in direct and indirect distribution channels. The raw material of this project is accessible and at a competitive cost, obtaining it is guaranteed throughout the year. According to estimates, the unit cost of the finished product is S / .12.25 and the suggested retail price was set at S /. 30.00, which gives us an attractive margin. For the start-up of the project in its first stage, S /. 75,106 the founding partners will contribute 40% and the remaining 60% will be covered by external investors and a bank loan. This project is viable because the TIR is 25% and VPN of S /. 542,274. The business is profitable, feasible and attractive to potential external investors.

Texto completoThe Water Framework Directive sets the goal of ensuring the good ecological status of European water bodies by 2015. The status of hydrosystems is established by using biological quality elements including fish fauna. The deviation from the high quality status is defined by using metrics, which are for fish : species composition, relative abundance and age structure. In 1990, the Scandinavian have developed and standardised a sampling method. This method provides a list of species, quantitative relative species abundances, and size structures. In addition, hydroacoustics are an effective method of sampling pelagic fish. I) does the CEN standard provide an accurate picture of the fish communities in more meridional lakes? ii) may the qualitative consideration of the pelagic fish bias the characterization of the fish communities and thus the definition of the lake quality? iii) how could hydroacoustics provide complementary information on fish communities? The results show that the CEN standard provides greater accuracy in French lakes than in the Scandinavian lakes and is not affected by the origin of the lake but by the trophic status. The only-qualitative consideration of pelagic fish can skew the assessment of the fish communities, especially in lakes with salmonids. Hydroacoustics, fast and inexpensive techniques, need standardized procedures and reliable metrics before being used in lake monitoring. Our works about data capture procedures and analyse tools, are a first step towards the development of a standardized protocol of hydroacoustics

Texto completoThis research aims at developing numerical tools to help the design of flexible fences against rockfall.Models based on the Discrete Element Method (DEM) are developed for two flexible fences, using modeling approaches taken from the literature. The main difference between the two flexible fences investigated is their interception structure: ring net or ELITE net. For the ring net flexible fence, the DEM model proved to be a sufficient compromise between relevance, accuracy, and efficiency. On the other side, for the flexible fence with a ELITE net, new numerical developments are necessary to reach such compromise.In order to get an efficient DEM model for the ELITE flexible fence, the sliding between the cables of the net has to be taken into account. Two approaches are proposed to integrate this sliding. In the first approach, the sliding is considered without friction between the cables, while in the second approach the friction is considered. However, the calculation duration obtained with the second approach was too important to integrate it into a complete fence model.The developed models have been integrated into a design assistance tool for flexible fences, based on surrogate modeling. Parametric and sensitivity analysis are carried out with this tool, and the optimal configurations of the fence are identified

Texto completoO presente trabalho teve como objetivo o desenvolvimento de revestimentos comestíveis com incorporação de extratos provenientes de macroalgas para aplicação em filetes de cavala, com a finalidade de criar uma barreira que minimizasse a troca de compostos lipídicos e/ou água entre o peixe e o óleo durante a fritura e também diminuísse a degradação térmica dos ácidos gordos polinsaturados abundantes na cavala. Prepararam-se extratos aquosos de cinco macroalgas e fez-se a sua caracterização em termos de teor de hidratos de carbono, fenóis totais e atividade antioxidante. Dado que os extratos não formaram películas por si só, com base no conteúdo fenólico e na atividade antioxidante, selecionaramse os extratos de Codium tomentosum (E1) e Fucus spirulis (E6) para incorporar em formulações com alginato e gelatina de peixe, para formar películas/revestimentos bioativos. Prepararam-se soluções filmogénicas à base alginato com e sem incorporação dos extratos (AlgE1; AlgE6 e Alg) e de gelatina de peixe (GelE1; GelE6 e Gel). As películas obtidas foram caracterizadas em termos de espessura, cor e atividade antioxidante. A seguir, submergiram-se filetes de cavala em cada uma das soluções filmogénicas e levaram-se a fritar. Finalmente comparou-se o teor lipídico, humidade e índice de TBA dos filetes fritos. Os filetes revestidos com as películas à base gelatina de peixe foram os que apresentaram menores teores de lípidos (<10%) e menor humidade (<40%). Estes resultados sugerem que as películas Gel funcionaram como uma barreira à migração de lípidos do óleo para o peixe, mas promoveram a saída de água do peixe para o óleo. A adição dos extratos de macroalgas nas soluções filmogénicas não se traduziu no aumento da atividade antioxidante das películas nem na diminuição da oxidação lipídica do peixe revestido

Texto completoThis thesis introduces a generic model of rockfall barriers under impact loading. The structures are described as an abstract assembly of their main components. The developed model thereby enables the consideration of most of the existing technologies. A C++ code based on the Discrete Element Method is developed in order to perform the numerical simulations of impacts. The generic description of the barriers is implemented at the code level using a corresponding data structure and object-oriented programming. The generic model is completed by the mechanical models of two components. First, a mechanical model of 4-contact interlaced ring nets is developed. An experimental campaign is carried out to calibrate and validate the model against steel wire rings used in rockfall restraining nets. Second, a general sliding cable model is developed to account for the curtain effect. This model demonstrates great capabilities in describing sliding phenomena and a low computational cost. Finally, full-scale impact tests performed on two barriers of different technologies are used to validate the generic model. Numerical simulations of the full-scale tests highlight the relevance of the developed model. Numerical results agree finely with experiments and the model exhibits compelling predictive capacities for engineering applications. Deformations, loading time and forces magnitude are all predicted within 10 % relative error. Complex and unprecedented simulations of repeated impacts are carried out and the model is able to reproduce the barrier behavior both during the impact phase and after springback

Rules, social distribution and emotional reactions of players during games appear to be very different from one sport to another which makes things very interesting from a human science perspective. Then, using psychology and etiology methods, each sport is studied in details. Relationships between players and space, time, others or objects are then compared. Spatial and gestural transformations are also examined. A detailed analysis of games shows a large diversity of behaviour related to the different situations. Finally, a prospective analysis is performed studying the evolution of these different sports with a particular emphasis in tennis which is perceived as the lead sport. In conclusion, sport is a communication media full of emotion. The modifications of these different sports are due to the expectations of players and spectators. Sports do not evolve independently but with the changes in society

Texto completoThe evaluation of the mesh resistance to opening in fishing nets is an important issue to assess the selectivity of trawls, and more broadly of fishing gear. The objectives of this thesis are to develop and to assess a methodology for the evaluation of the mesh resistance to opening in netting structures. Several methods are already proposed (Sala et al., 2007, Priour and Cognard, 2011, Balash, 2012, De la Prada and Gonzales, 2013). This thesis aims at proposing a simple experimental test that does not require expensive devices to be easily spread in laboratories and in the fishing industry, a simple test combined with a numerical model able to represent the non-linear mechanical behaviour of a tested netting panel. The netting structure, constituted of braided or stranded twines, made of Polyethylene or Polyamide, is complex. Moreover, the fishing nets can be subjected to large deformation. In order to study the mechanical response of netting samples to different types of solicitations and to obtain experimental data, numerous experimental tests were performed on a large range of netting samples. Several numerical methods for the evaluation of the mesh resistance to opening using experimental data were developed. This work offers scientific advance for the evaluation of the mesh resistance to opening: despite the visco-elasto-plastic mechanical behaviour of netting samples, one more accurate and simpler methodology than the existing ones, based on a simple experimental set up and on a free of rights finite element model, is presented

Texto completoLa degradación química de los alimentos es un proceso espontáneo e inducido por efecto de la luz, el calor y la presencia de trazas de algunos iones metálicos de transición, factores que inducen la formación de especies reactivas del oxígeno (ROS). Con el objetivo de preservar los alimentos de la degradación química, la industria alimentaria a utilizado durante años principalmente BHT y BHA; sin embargo, recientes estudios de toxicidad han provocado restricciones de su uso a nivel internacional, lo que ha motivado la búsqueda de sustitutos, cuya inocuidad no pueda ser cuestionada. Una posible alternativa a los antioxidantes sintéticos son los extractos naturales de reconocida actividad antioxidante, la cual estaría dada principalmente por su capacidad de secuestrar radicales libres del oxígeno atribuible principalmente a su alta concentración de polifenoles. Estos antecedentes permiten postular que extractos naturales enriquecidos en polifenoles podrían proteger los alimentos de la degradación química, preservando así sus características nutritivas y organolépticas. El objetivo de este trabajo fue comparar la capacidad de BHT y los extractos de Bluddleja globosa (matico) y Rosmarinus officinalis (romero) de proteger los lípidos y el contenido tiólico de filetes de Oncorhynchus mykiss (trucha arcoiris). El BHT y los preparados de matico y romero inhibieron la lipoperoxidación y protegieron la disminución del contenido de tioles de homogeneizados de filetes de trucha arcoiris, ambos fenómenos inducidos por el sistema Fe3+/ascorbato. Los polifenoles de los antioxidantes serían los principales responsables de la protección del contenido tiólico, mientras que los compuestos o-difenoles-diterpénicos serían los responsables principales de la actividad antilipoperoxidante. Cabe señalar que estos principios activos naturales poseen efectos benéficos para la salud humana y animal. Por lo tanto, preparados enriquecidos en polifenoles y o-difenoles-diterpénicos no sólo actuarían como antioxidantes de alimentos, sino además, podrían contribuir a mejorar la calidad de vida de los consumidores
Chemical degradation is a spontaneous and induced process by light, heat and the presence of metallic ions traces, factors which induce the formation of oxygen reactive species (ROS). To preserve foods from chemical degradation, food industries have used for a long time principally BHT and BHA; however, toxicity studies recently have been published and the international use of these antioxidants are under study. A possible alternative to replace BHT and BHA could be the use of natural extracts as preserving agents. Natural extracts have antioxidant properties due to the high poliphenols concentration and their capacity to scavenger oxygen radicals. These data permit postulate that natural extracts enriched in poliphenols compounds may prevent chemical degradation of foods, so preserving their nutritive and organoleptic properties. The aim of this work was to compared the capacity of BHT, an hydroalacoholic extract of Buddleja globosa (matico) and a dry extract of Rosmarinus officinalis (romero) to prevent the oxidation of lipids and thiol groups present in Oncorhynchus mykiss (rainbow trout) stakes. BHT and the extracts of matico and romero inhibited the lipoperoxidation and prevented the thiol oxidation of Oncorhynchus mykiss stakes, both phenomenon induced by Fe3+/ ascorbate. Protection of thiol oxidation seems to be mediated by the poliphenols present in the natural extract, and the antilipoperoxidant action would be mediated by the o-diphenol-diterpene. It is necessary to note that natural active principles induce benefic effects on human and animal health. Thus, natural preparations enriched in poliphenols and o-diphenol-diterpene would act as food antioxidants and besides improving the health of consumers

Texto completoCommercial construction has witnessed a new enthusiasm in the use of timber as primary structural material. Engineered wood products such as glued-laminated timber and cross-laminated timber (CLT) play an important part in this development. These products allow wood construction to reach new heights. However, certain gaps in knowledge need to be filled to attain the full potential of wood construction, especially with regards to connections. First, current equations for dowel embedment strength and withdrawal resistance of fasteners in sawn timber and glued-laminated timber are deficient. Secondly, no design methods are provided for dowel embedment strength or withdrawal resistance of fasteners in cross-laminated timber in the 2009 edition of Canadian standard for engineering design in wood CSA O86-09 (2009). For these reasons, the goals of the research project are established in three main objectives: -Develop a design equation for withdrawal resistance for threaded fasteners in sawn timber and glued-laminated timber; -Evaluate the performance of dowel embedment equations for sawn timber and glued-laminated timber from different international standards, and determine the influence of variables on their accuracy; -Develop equations for dowel embedment strength and withdrawal resistance of fasteners in cross-laminated timber. After the compilation of results and analysis of withdrawal and embedment tests with threaded fasteners on sawn timber, glued-laminated and cross-laminated timber, the most accurate design models for each product were proposed. Each proposal includes an impact study showing the influence of the proposed design models, in case of adoption in the next edition of the CSA O86 standard.

Neste trabalho analisam-se experimentalmente as deformações induzidas por soldagem de uma junta “T” realizada com chapas de aço ASTM36 e soldada com processo MAG manual. Três corpos de provas foram preparados para medir durante a soldagem as temperaturas, entretanto as distorções residuais foram levantadas após o resfriamento. Visando determinar as deformações e tensões residuais, foi realizada uma análise termomecânica numérica criando uma rotina na linguagem proprietária do ANSYS 14. Assumindo que a energia térmica não é afetada pelo trabalho mecânico produzido durante a soldagem, sendo este desprezível, devido à baixa magnitude das deformações geométricas, foi realizada uma análise desacoplada. Embora o ANSYS ofereça a opção de realizar análises acopladas, o método desacoplado possibilita um controle maior sobre o andamento da análise. A expansão térmica e as propriedades do material foram consideradas em função da temperatura. A fonte de calor foi simulada usando o elipsoide duplo de Goldak. Para o aço foi considerado o modelo constitutivo elástico-plástico com encruamento isotrópico. A análise é constituída por duas rotinas, a primeira resolve o problema térmico e calcula em cada instante o campo de temperatura, a segunda usa o campo de temperatura como carga inicial para resolver o problema mecânico. Na região dos filetes, é usada uma malha bastante densa, e uma mais grosseira nas zonas mais afastadas. Os valores numéricos das temperaturas e das distorções foram comparados com os obtidos experimentalmente. No entanto para tensões residuais é feita uma comparação com os resultados numéricos e experimentais retirados da bibliografia para junta “T” similar de filete. A partir destas comparações as temperaturas foram qualitativamente coerentes, houve uma boa concordância quantitativa entre os valores das distorções e as tensões residuais mostram-se ser coerentes com os dados bibliográficos.

Texto completoFreshness is a key parameter of fish quality. Current routine techniques to determine fish freshness are not applicable to all species and reflect a late stage of alteration. Thus, research on early indicators of fish freshness still represents a major and topical challenge in fishing industry. This PhD research project aimed to demonstrate that mitochondrial functions and integrity constitute early indicators of fish fillet freshness. Mitochondria are the powerhouse of the cell and play a central role in cell death mecanisms such as apoptosis and necrosis. Mitochondrial function and integrity in fish filet muscle cells were studied at different times of storage post mortem at 4°C. The species studied as a model was the gilthead seabream (Sparus aurata) (gilthead seabream fibroblast cell line (SAF-1) and fish fillets). Firstly, the structure of fish mitochondria was studied by transmission electron microscopy. Numerous mitochondrial structural alterations have been observed in fish fillet from 72 hours (D3) of storage at 4°C. These alterations were more pronounced at D4 and D6. Then, mitochondrial functionality was assessed with two approaches: mitochondrial respiration (oxygraphy) and mitochondrial membrane potential (ΔΨₘ) estimated with the fluorescent probe Rh123. From 96 hours of storage at 4°C (D4), these two parameters were significantly disrupted demonstrating the alteration of mitochondrial function and integrity. The results are in correlation with the mitochondrial structural alterations described by microscopy. In parallel, a method of mitochondrial membrane potential evaluation has been developed with a micro-volume fluorimeter, first using bacteria and then isolated mitochondria. This work demonstrated that the mitochondrial functionality study constitutes a reliable and early fish filet freshness indicator. Additional knowledge on cell mechanisms in post mortem condition has been brought. These results constitute the starting point for the development of a fish freshness assay kit and pave the way to research on others freshness and freeze-thawing indicators based on mitochondrial integrity and functionality
