<p class="A04-abstrak2"><span>Coconut commodity has a strategic role in the country's foreign exchange earnings, providing employment and increasing farmers' income. In 2020 the value of Indonesia's coconut exports reached US$890 million, with a total export volume of 1.8 million tons. The most significant export value is processed coconut oil, namely crude coconut oil and semi-finished coconut oil, by 50% of other processed coconut products. The export value of processed crude coconut oil was 29% or US$254.9 million, and semi-finished coconut oil was 21% or US$188.1 million. This paper reviews the performance and problems of coconut Indonesia's industry and identifies opportunities for its development. The coconut industry performance faces problems from upstream to downstream. The upstream problems are low productivity, old plants, limited capital resources, damaged plants, and decreasing land area. The downstream issues are the lack of innovation in coconut products, fresh coconuts dominating coconut exports, and the decline in export performance for processed products of crude oil and semi-finished oil. Innovation and technology are necessary to enhance the coconut industry's performance. Produce ready-to-use products that are increasingly in demand in global and domestic markets. Productivity improvements, production costs, and quality are determinants of the competitiveness and yield of coconut exports.</span></p>

It is based on the fact that small-scale coconut oil processing in micro-scale businesses is facing serious threats and competition with palm oil produced by large and medium-sized entrepreneurs, resulting in a downturn in business as well as weakening the motivation of coconut farmers to process coconut production into coconut oil. As a result, coconut farmers in their daily lives actually buy palm oil processed by large and medium entrepreneurs, while their businesses are getting worse. In line with this, through this research, an analysis of the obstacles and opportunities for the development of the people's coconut oil processing industry was carried out. The purpose of this study was to analyze the barriers to developing the people's coconut oil processing industry on a micro-scale business and to analyze the opportunities for developing the people's coconut oil processing industry on a micro-scale business. The research method is through a Focus Group Discussion (FGD) to identify obstacles and opportunities for developing the coconut oil processing industry, followed by Analysis Hierarchy Process (AHP) to determine priority problems and priority opportunities that should be carried out by multi-stakeholders for the development of the coconut oil processing industry. The results showed that the priority obstacles to the development of the coconut oil processing industry in micro-scale businesses in Konawe Islands Regency were product marketing problems, financial capital, and business funding problems, production equipment problems, skilled labor issues, raw material problems, micro-business protection policy issues, business organization, and management problems, as well as problems in the use of information technology and innovation. The priority of opportunities for the development of the micro-scale coconut oil processing industry in Konawe Kepualauan Regency is the presence of economic value by-products of coconut oil processing, namely shell charcoal, nata de coco, and coconut coir, there is a tendency for people to consume more coconut oil than consume coconut oil. Background: Coconut oil, or copra oil is obtained from the nut/kernel of matured coconuts garnered from the Cocosnucifera. Coconut oil is an edible oil derived from the kernels of harvested mature coconuts harvested from the coconut palm. In recent decades, this oil has risen to the status of a health food superstar in the health food industry. Celebrities are welcoming its use, nutritionists are promoting it, and patients are praising it for its many benefits. Purpose: This oil has been linked to a range of health advantages. These include improvements in skin care, hair care, stress management, losing weight & cholesterol level management, immune modulatory effects, cardiovascular applications, and, most recently, Alzheimer’s disease. However, for several years, coconut oil was demonised, and consumers were led to believe that it was harmful to their health because it would clog arteries and cause heart disease. The tide has shifted, and in recent years, increased awareness of the favourable health advantages of coconut oil has emerged. Conclusion: The usage of coconut oil, particularly crude coconut oil, is increasingly popular; however some individuals are still doubtful. This present review makes an attempt to provide a scientific assessment of the medicinal qualities of this oil.

Coconut is one of the most commercially important crops in Sri Lanka. The country requires around 3,600 million nuts per year to meet the current demand. However, the current annual production ranges between 2,500 and 3,100 million nuts, indicating a shortage in nut production. This study aims to investigate the impact of declining coconut production in Sri Lanka on kernel-based export products and coconut oil (excluding export). The study involved collecting primary data through a cross-sectional survey. This included interviews with 120 kernel-based exporters, palm oil importers, and dehydrated chip-importing millers. The participants were selected using stratified purposive sampling, and three semi-structured questionnaires were administered. In addition, secondary data was gathered from the Coconut Development Authority. The ARIMA (2, 1, 1) model was utilized to forecast potential fluctuations in coconut production in Sri Lanka over the next 5 years, aiming to determine whether production would range between 2500-3000 million nuts. The model projects nut production to be 2,626, 2,833, 2,978, 2,850, and 2,761 million nuts for the respective years. The Friedman test confirmed a significant difference (P<0.05) among the statements related to the sustainability of raw material supply and the sustainability of final product supply of kernel-based products for the export market. According to the statistical analysis, the production of kernelbased export companies would be affected by a decrease in annual nut production. However, they would continue to export even if the annual nut production decreases due to their strong supplier base. The study found a significant difference (P<0.05) in the impact of imported dehydrated chips. The research revealed that due to most existing coconuts being used in the milk industry, millers were unable to meet the demand for coconut oil because of a shortage of raw materials. The findings of this study propose to develop and implement strategic plans to address the projected decline in nut production in Sri Lanka and to create comprehensive strategies for the equitable distribution of coconut resources to support both domestic and international coconut-based industries.

ABSTRAK<br />Penelitian dengan kajian penawaran kelapa untuk memenuhi<br />permintaan industri minyak kelapa dan industri makanan dan minuman<br />telah dilakukan di Desa Sei Ara, Kabupaten Indragiri Hilir, Riau sejak<br />Februari 2005 sampai dengan Juli 2006. Pengumpulan data dilaksanakan<br />terhadap 90 orang petani kelapa.Tujuan penelitian adalah untuk melihat<br />keterkaitan dan elastisitas penawaran kelapa dalam memenuhi permintaan<br />industri minyak kelapa, industri makanan-minuman, industri kosmetik dan<br />rumah tangga. Model ekonometrika yang dibangun dalam studi empiris ini<br />telah mampu menjelaskan perilaku penawaran kelapa dan permintaan kelapa<br />untuk industri minyak kelapa, industri makanan-minuman, industri kosmetik dan<br />permintaan rumah tangga. Perilaku perkembangan areal kelapa pada ke-tiga<br />perkebunan (Rakyat, BUMN dan Swasta Besar) menunjukkan respon yang<br />elastis terhadap harga kompetitornya. Respon produktivitas kelapa menunjuk-<br />kan sangat tidak elastis terhadap harga komoditasnya, termasuk kompetitor-<br />nya, serta harga pasar ekspor. Namun demikian peubah-peubah harga cukup<br />signifikan untuk melihat pengaruhnya terhadap respon produktivitas kelapa.<br />Permintaan kelapa untuk industri minyak kelapa, industri makanan, industri<br />kosmetik dan rumah tangga sangat respon terhadap perubahan harga komoditas<br />kelapa dan harga substitusi minyak sawit.<br />Kata kunci : Kelapa, Cocos nucifera L., ekonometrika, minyak kelapa,<br />penawaran, harga, Riau<br />ABSTRACT<br />Study of coconut supply for some industries including coconut<br />oil, food and beverage industry<br />The study of coconut supply for some industries including coconut<br />oil, food and beverages industry was conducted from February 2005 to<br />July 2005 in Sei Ara Village, Indragiri Hilir District, Riau Province. The<br />primary data were collected through the interviews of 90 coconut<br />farmers.The objective of the research was to find out the linkage and<br />coconut supply elasticity in demand for some industry coconut oil, food<br />and beverage industry, cosmetic and household. The result research<br />through economic analysis of 10 structural equations and 7 identity<br />equations were shown. Econometrics model that was established in the<br />empiric study enable to give explanation on coconut supply and demand<br />pattern for some industries such as coconut oil, food and-beverage<br />industry, cosmetics and household demand. Development pattern for<br />coconut area on the three plantations (public, BUMN and private) shows<br />elastic responds on their competitor's price. Coconut productivity response<br />shows very inelastic on the price, including the competitor and export<br />market price. Nevertheless, variables of price sufficient enough to use as<br />indicator of the effect on coconut productivity respond. Coconut commodities that have been processed into copra or oil are less strategic to develop because they compete with palm oil and other vegetable oils such as soybean oil, sunflower nuts. As a result, the price of coconut oil, although the upward trend, but fluctuates greatly. To minimize the effects of price fluctuations, it is necessary to diversify utilization and processing. In addition to being edible oil, coconut oil can be further processed into oleochemical products. Important oleochemical products are fatty acids, fatty acid methyl esters, fatty acid alcohols, and glycerin. A possible problem is competition with Asia Pacific countries that are also developing the oleochemical industry. This paper aims to present technological introductions of some high economic value oleochemical products such as fatty acids, fatty acid methyl esters, fatty acid alcohols, and glycerin. Systematic writing approach in the form of a review based on literacy as a secondary data source. The oleochemical industry entering the industry 4.0 era is quite prospective to be developed in Indonesia to achieve the optimal economic value of coconuts in terms of availability of raw materials and technological innovation, technical excellence, employment, and domestic and foreign market opportunities.

As a tropical country, Indonesia has enormous potential for the development of an industry with raw materials from coconut. One of the products that can be developed from coconut is coconut oil. The purpose of this research is to create a strategy and green business model in the medium coconut oil industry (klentik) by utilizing the waste it produces into a variety of prospective products with added value. Various prospective and value added products can be developed from coir, shell, coconut water, dregs, and blondo which are byproducts or waste from the coconut oil production process. The implementation of green business strategies and models has an impact on the sustainability of the medium-sized coconut oil industry, both in terms of profitability, social and environmental aspects.

Dalam pengolahan buah kelapa menjadi produk minyak kelapa di sebuah agroindustri akan memberikan nilai tambah bagi buah kelapa tersebut. Sementara profitabilitas agroindustri minyak kelapa akan menunjukkan kemampuan agroindustri tersebut dalam menghasilkan laba. Penelitian ini bertujuan untuk mengetahui besarnya profitabilitas dan nilai tambah agroindustri minyak kelapa di Desa Saguling Kecamatan Baregbeg Kabupaten Ciamis. Jenis penelitian yang digunakan adalah deskriptif kualititatif, penarikan sampel adalah nonprobability sampling dengan metode sampling jenuh (sensus) terhadap agroindustri minyak kelapa di Desa Saguling. Hasil penelitian ini menunjukkan jumlah biaya yang diperoleh sebesar Rp 2.595.197,72 penerimaan sebesar Rp 3.125.000,00 pendapatan sebesar Rp 529.802,28. Profitabilitas yang ditunjukan oleh gross profit margin pada produk minyak kelapa adalah sebesar 83%. Net profit margin untuk produk minyak kelapa adalah sebesar 17%. Besarnya jumlah nilai tambah pada produk minyak kelapa adalah Rp. 3.485,00 pada agroindustri minyak kelapa di Desa Saguling Kecamatan Baregbeg Kabupaten Ciamis. Meanwhile, the profitability of the coconut oil agroindustry will show the ability of the agroindustry to generate profits. This study aims to determine the profitability and added value of coconut oil agroindustry in Saguling Village, Baregbeg District, Ciamis Regency. The type of research used is descriptive qualitative, sampling is non-probability sampling with saturated sampling method (census) on coconut oil agroindustry in Saguling Village. The results of this study indicate that the total cost obtained is Rp. 2,595,197.72, revenue is Rp. 3,125,000.00 and income is Rp. 529,802.28. Profitability shown by the gross profit margin on coconut oil products is 83%. The net profit margin for coconut oil products is 17%. The amount of added value in coconut oil products is Rp. 3,485.00 in coconut oil agroindustry in Saguling Village, Baregbeg District, Ciamis Regency. Virgin coconut oil (VCO) is derived from fresh coconut fruit and offers numerous health benefits, such as preventing heart diseases, improving digestion, reducing fat accumulation, and more. VCO contains medium-chain fatty acids that are easily digested and metabolized by the body, preventing fat buildup. Additionally, it is rich in antioxidants like tocopherols and beta-carotene, which help prevent premature aging and maintain vitality. The phenolic content in VCO can be influenced by the processing method and the age of the coconuts used. Therefore, this research examined the impact of processing methods on the quality of phenolic content as a product of the pharmaceutical industry. The largest group of phenolic compounds includes tocopherols, sterols, and flavonoids. Phenolic compounds in coconuts are primarily located in the coconut fruit’s epidermis. VCO produced from coconuts with the epidermis or coconut fruit’s outermost layer contains a higher concentration of phenolic compounds compared to VCO produced from coconuts without the epidermis. The research involved defining and refining the problem, formulating hypotheses or tentative answers, drawing conclusions, and conducting meticulous testing of all conclusions to determine their alignment with the hypotheses. In this study, the researchers compared the quality and phenolic compound content of virgin coconut oil (VCO) by sampling from several small and medium enterprises in various regions, specifically in the Island of Sulawesi. ABSTRAK Pengolahan minyak kelapa di industri rumah tangga masih banyak menghasilkan limbah atau produk sampingan terutama yang berasal dari air kelapa. Pemanfaatan air kelapa tidak banyak, oleh karena itu perlu dilakukan pelatihan pengolahan air kelapa menjadi nata de coco dan minuman antioksidan. Tujuan dari pengabdian ini adalah untuk meningkatkan pengetahuan dan keterampilan pengolahan minyak kelapa tentang cara mengolah air kelapa menjadi nata de coco dan minuman antioksidan. Mitra yang mengikuti kegiatan ini adalah kelompok pengolah minyak kelapa dan VCO di Dusun Bilatepung, Desa Beleke, Kecamatan Gerung. Langkah-langkah pelaksanaan kegiatan meliputi: (1) Mensosialisasikan jenis-jenis limbah dari industri minyak kelapa; (2) Pelatihan pembuatan aneka produk olahan limbah (3) Monitoring dan evaluasi. Hasil kegiatan menunjukkan bahwa kegiatan pengabdian masyarakat ini dapat meningkatkan pengetahuan dan keterampilan mitra sebesar 80%. Kegiatan ini diharapkan dapat dilaksanakan sebagai peluang usaha, sehingga dapat meningkatkan pendapatan usaha pengolahan minyak kelapa. There is not much use of coconut water, therefore it is necessary to carry out training on processing coconut water into nata de coco and antioxidant drinks. The purpose of this service is to increase the knowledge and skills of coconut oil processing on how to process coconut water into nata de coco and antioxidant drinks. The partners who took part in this activity were a group of coconut oil and VCO processing in Bilatepung Hamlet, Beleke Village, Gerung District. The steps for implementing the activities include: (1) Socializing the types of waste from the coconut oil industry; (2) Training on making various processed waste products (3) Monitoring and evaluation. The results of the activity show that this community service activity can increase partners' knowledge and skills by 80%. The Philippines has the largest planted area of coconuts in the world and this crop provides a significant amount of income and employment for smallholders and landless laborers. Nearly all of the coconut harvested is converted into copra for subsequent processing. The bulk of production is exported as crude coconut oil for industrial uses and copra cake for animal feed. Most of the rest goes into refined, edible oil for the domestic market. The industry is subject to major oscillations in supply and demand from year to year. Production is dominated by large‑scale firms currently operating at a low capacity use rate. Real prices may trend downward in the long run due to expanded production from an expansion in the planted area and greater reliance on high‑yield varieties, substitution of other oils, and trade policies of importing countries.

Coconut oil is a significant dietary component in Sri Lanka and serves as the primary source of fat for Sri Lankans, primarily used for culinary purposes. This review focuses on the quality and safety concerns within the coconut oil processing industry of Sri Lanka. The study collected data through interviews with industry personnel, conducted field visits to both small-scale and large-scale operations, and analyzed existing research. Several factors impact the quality and safety of coconut oil products. Key issues include the increase in free fatty acid content, the production of aflatoxin in copra, phthalate contamination from packaging, and the contamination of coconut oil with polyaromatic hydrocarbons (PAH). These quality and safety concerns result from cross-contamination with metals and other chemicals during equipment use, a shortage of trained personnel, insufficient laboratory testing of oil quality parameters before market distribution, and inadequate surveillance of small and medium-sized oil mills by regulatory bodies. Additionally, the local market faces high levels of adulteration, where coconut oil is mixed with lower-quality oils, stored improperly, or is of overall poor quality. Issues related to coconut cultivation include a decline in yields due to inefficient land usage, reduced productivity, climate change impacts, pest infestations, diseases, and increased production costs. The adulteration problem arises from the supply-demand gap for coconut oil in Sri Lanka and the high cost of producing one litre of good-quality coconut oil. The Sri Lankan government and the Sri Lanka Standards Institution have introduced a product standard for coconut oil production, outlining key parameters for the final product. Nevertheless, the absence of a comprehensive process standard affects quality control throughout production. Small and medium-scale producers lack awareness of SLSI standards, leading to non-compliance, along with an absence of regular quality and safety checks. Consequently, stringent enforcement is necessary to address these challenges. While improvements have been made, unresolved issues remain; therefore, a quality assurance system for the coconut oil processing industry is an urgent requirement, especially for small and medium-scale oil production facilities, which are key suppliers to the local market.

Abstract: Oil has become an essential commodity in various fields, including cooking. In India, coconuts are produced abundantly, making it the third-largest coconut-producing nation worldwide. Despite the massive demand for coconut oil, there is a shortage of its production, & the majority of the entities producing the oil are large-scale industries, with only a few operating in local shops. The solution to this problem lies in the "Compact & Cost-Effective Coconut Oil Expeller," which has the potential to increase oil production & address the current gaps. The machine can operate with low quantities of copra, allowing customers to produce oil based on their requirements. Furthermore, it is a zero-waste process that enables the sale of the leftover parts after oil extraction. By facilitating chemical-free oil extraction & reducing space & initial purchase costs, the expeller machine offers an opportunity for small-scale industries to set up a profitable business, similar to flour mills in the area. This project addresses the issues with the currently used oil extractors, leading to the design & fabrication of an automatic portable oil extractor that could enhance the life & functionality of the unit for small-scale industries. The project also incorporates a solar panel for multipurpose use, making it functional even in the absence of electricity. Ultimately, this work contributes to reducing the running cost of an industry & prevents sudden breakdowns on the shop floor, making it a valuable addition to the oil extraction industry

The coconut industry is under pressure from low world oil‑seed prices and the increased availability of palm kernels. This paper reviews market conditions in the lauric sub‑sector, describes the marketing channels for copra and coconut oil, and sets out details of significant issues for the future. It concludes that the industry must take urgent steps to (a) improve the flow of market information, (b) develop cost saving means of production which lead to a range of items, and (c) investigate new markets for non­-traditional products.

Matakali sub-district is one of the largest coconut producers with a coconut land area of 1,429.19 hectares and an annual production of 1,093.77 tons. This is a great opportunity for the coconut palm sugar home industry in Matakali sub-district, especially in Pasiang village. Based on the results of preliminary observations in Matakali sub-district, the coconut palm sugar home industry is only found in Pasiang village, and there are a total of 30 coconut palm sugar home industries in three hamlets namely Buttulamba, Tabone, and Seppong. This has brought changes to the utilization of coconut trees, which in the past were only used for their fruit to produce oil and copra, but now coconut trees are also used for their sap to make brown sugar. This is done because the community considers the market opportunity for coconut palm sugar to be better than the coconut oil or copra market. In addition, coconut fruit processing also has a harvest period, but coconut sap can be produced every day. The coconut palm sugar home industry in Pasiang village is currently in the development stage along with increasing market demand from outside the region. The purpose of this study was to determine the income level of the coconut brown sugar home industry in Pasiang Village, Matakali District, Polewali Mandar Regency. The analysis method used is quantitative analysis. The sampling technique used is saturated sampling technique, which is a method that uses the entire population as a sample. The data analysis technique used is income analysis. Based on the survey results, the average income of the red coconut sugar home industry is Rp 4,368,964 by month.

We present a multispectral image processing system designed specifically for the detection of reheated coconut oil, leveraging advancements in machine learning. Machine learning algorithms, fused with image classification techniques, provide a robust framework for accurately identifying reheated coconut oil. It is proposed to develop a spectral clustering-based classifier to determine the effect of reheating and reuse of coconut oil. Post-processing methods refine classification results, while validation ensures the system's adaptability to diverse datasets.

Abstract The objective of this study was to analyse the life cycle of the coconut oil industry and process improvement alternatives. The life cycle analysis (LCA) method are based on the scope of the gate to gate. This study shows that the input for coconut oil production consists of copra as the main raw material and several supporting materials and energy. The outputs are coconut oil, coconut pulp pellets, and waste (liquid, solid, and gas). The total potential GHG emissions, acidification, and eutrophication per-kg-coconut-oil-products are 2.9271 kg-CO2 eq, 0.0178 kg-SO2-eq, and 0.0145 kg-PO4-3-eq. The highest GHG emissions produced from the Crude Coconut Oil Plant sub-system was 1.2045 kg-CO2eq per-kg-coconut-oil. The acidification potential produced from the Boiler Plant and Transportation sub-system with the potential value was 0.0094 kg-SO2-eq and 0.0084 kg-SO2-eq per-kg-coconut-oil, respectively. The eutrophication potential produced from the Boiler Plant and Transportation sub-system with a potential value was 0.0026 kg-PO4-3-eq and 0.0119 kg PO4-3-eq pe- kg-coconut-oil, respectively. Optimization of energy usage can be done by optimizing fuel, water, and electricity in each sub-system of coconut oil production. The NEV and NER values result in 40,998,456 MJ and 1.0971, respectively.

The main source of farmer households in West Halmahera is coconut plantations. Coconut fruit is produced, some are sold in the form of whole fruit, some are processed into copra. For this agro-industry development effort to work effectively, it is necessary to determine the type of coconut agroindustry that will be developed by considering the factors that increase, the efforts of the businesses involved and the objectives of each of the agro-industries. The purpose of this study was to determine the priorities of coconut agro-industry that had to be developed in West Halmahera Region. The data were analyzed using the Process Hierarchy Analysis (AHP) approach and internal-external factor. The results showed that the virgin coconut oil (VCO) agro-industry had the highest priority in the development of coconut agro-industry in West Halmahera. By the development of this agro-industry, business actors will gain added value, affect the increase in income, and will open new jobs in the rural area. The important factors that have influenced the development of agro-industry were human resources (HR) and asset. Furthermore, each actor involved has a firm role and linkage to each of the determinants of agro-industry business development. Farmers have the main role (37%) on the availability of raw materials, farmer groups have strong correlation (42%) to human resources, the government plays an important role (42%) in infrastructure development, and academics have an enormous contribution (34%) in providing technology for the development of agro-industry. Overall, the most important actors in the development of coconut agro-industry in West Halmahera are farmer groups. The Strategy applied to agro-industry virgin coconut oil (VCO) at West Halmahera Region is intensive: market penetration, market development and product development.

Abstract Coconut milk residue and virgin coconut oil cake are important co-products of virgin coconut oil that are used in the animal feed industry. Flour from these products has a number of potential human health benefits and can be used in different food formulations. The objective of this study was to find out the flow-specific physical properties of coconut flours at three moisture levels. Coconut milk residue flour with 4.53 to 8.18% moisture content (w.b.) had bulk density and tapped density of 317.37 to 312.65 and 371.44 to 377.23 kg m-3, respectively; the corresponding values for virgin coconut oil cake flour with 3.85 to 7.98% moisture content (wet basis) were 611.22 to 608.68 and 663.55 to 672.93 kg m-3, respectively. The compressibility index and Hausner ratio increased with moisture. The angle of repose increased with moisture and ranged from 34.12 to 36.20 and 21.07 to 23.82° for coconut milk residue flour and virgin coconut oil cake flour, respectively. The coefficient of static and rolling friction increased with moisture for all test surfaces, with the plywood offering more resistance to flow than other test surfaces. The results of this study will be helpful in designing handling, flow, and processing systems for coconut milk residue and virgin coconut oil cake flours.

Untuk memastikan bahwa produk kelapa diserap oleh petani, usaha pengolahan kelapa, seperti UMKM yang menjual kelapa atau produk kelapa, adalah sektor yang krusial. Hasil samping pembuatan Virgin Coconut Oil, yaitu blondo, belum dimanfaatkan dan menimbulkan bau menyengat ketika dibuang langsung ke lingkungan. Padahal, blondo ini diketahui memiliki kandungan protein tinggi, yang dapat digunakan untuk pencegahan stunting. Tujuan dari kegiatan pengabdian masyarakat ini berfokus pada pelatihan dan pembuatan produk berbahan hasil samping olahan VCO pada CV. Buah Asa Tani (BAT). Pelatihan dilakukan dengan metode sosialisasi, diskusi dan tanya jawab serta praktik pembuatan cookies blondo untuk karyawan CV. BAT. Sebelum dan setelah pelatihan, terhadap peserta pelatihan dilakukan evaluasi secara terstruktur menggunakan kuesioner. Pelatihan manfaat kesehatan kelapa dan stunting, cara pembuatan cookies blondo untuk karyawan CV. Buah Asa Tani telah diselenggarakan dengan seluruh peserta (100%) menunjukkan peningkatan pengetahuan dan keterampilan. Hal ini menunjukkan potensi positif dalam mengatasi masalah limbah industri kelapa sambil meningkatkan keterampilan masyarakat setempat. Coconut processing companies, such as UMKM that sell coconuts or coconut goods, are an essential industry to guarantee that farmers receive their share of the product. The by-product of making Virgin Coconut Oil, namely blondo, has not been utilized and causes a strong odor when thrown directly into the environment. Blondo is known to have a high protein content, which can be used for stunting prevention. The purpose of this community service activity focuses on training and making products made from by-products of VCO processing in CV. Buah Asa Tani (BAT). The training was delivered to CV BAT employees through socialization, discussion, and question-and-answer sessions, along with the practical application of baking blondo cookies. Before and after the training, the training participants were evaluated in a structured manner using a questionnaire. The community service activities carried out through training and making blondo cookies products have increased the trainees' knowledge and ability to process blondo. The coconut industry is one of the leading industries in North Lombok, in the form of raw materials, copra, as well as coconut oil and Virgin Coconut Oil (VCO). In producing VCO, the resulting waste is still economically valuable, but partners only sell it as animal feed. Even though with a touch of innovation, VCO waste can be a very high added value, namely as desiccated coconut or dry shredded coconut. The development of VCO by-product is implemented by partners using proper food processing according to SNI 7381-2008 - coconut oil and SNI 01-3715-1995 - the quality of dry grated coconut and plays a role in zero waste so that it can be marketed in quality. The method applied is to provide education on good food processing methods and conduct training on the application of appropriate technology in VCO processing and by-product processing, training on the application of packaging technology, labeling, and storage techniques, and training in business management and marketing strategies. The results felt by partners through this activity were the partners' understanding and skills regarding processing coconut dregs from VCO to desiccated coconut increased through the technology package offered. In the situation of the Covid-19 pandemic by implementing health protocols, this program can run smoothly thanks to excellent cooperation and contributions by partners.

Pacific Green is a green furniture company producing up-market furniture made from senile coconut trees. This paper explores the unique characteristics of this company and its success in world markets. Originally operating only in Fiji, the company now sources finished wood from Fiji and carries out its manufacturing assembly operations in China. It has showrooms across the world. The paper also highlights issues which need to be further explored, including concerns from the fast growing coconut oil skin care industry in Fiji about continued availability of high quality coconut oil, since senile trees still produce at a reduced but reasonable rate and no formal replanting program is in place. Coconut oil is also being considered as a viable source of biofuel, placing further pressure on future coconut availability.

In the colonial period many Europeans considered coconuts a lazy man's crop. For the Indonesian population, however, they were a profitable form of cultivation, especially from the 1880s when the European oil and fats industry increasingly started to use copra, the dried kernel of the coconut, as a raw material for the production of soap and later also for margarine. Around one-third of world copra exports originated in the Netherlands Indies (Table 1), and copra was especially important for the economy of East Indonesia, where in 1939 it constituted 80 per cent of the total volume and 60 per cent of the total value of exports. In some parts of Indonesia copra even received the nickname of “green gold”. European involvement in coconut cultivation and the coconut trade nonetheless was limited. In the first half of this century, coconut growing was dominated by the indigenous population, which accounted for 94 per cent of Indonesian production, while Chinese merchants dominated the intermediate trade in copra.

Gelatine is commonly used as packaging in the food industry because it has the proper physical properties. The present work observed that there were no differences in moisture content and solubility of the packaging film after adding 4% of gelatine film with 0.5% of rice bran, sesame, and coconut oil. Meanwhile, water vapour permeability, tensile strength, and elongation of the gelatine films increased when added with the oil. The colour value depended on the colour of the oil added to the gelatine films. The colour value of the gelatine films added with sesame and coconut oil did not differ from the gelatine film without the addition of any oil. The addition of coconut oil to the gelatine film resulted in increased antioxidant activity. Wrapping chicken, pork, and beef with the gelatine films added with all three types of oil showed no differences in pH values for all three types of meat products throughout refrigeration storage for 12 days. Meat wrapped in gelatine film added with coconut oil showed an increase in TBARS, while TBARS were lower in the gelatine film without the addition of any oil or added with rice bran and sesame oil. This indicated that after coconut oil was added to the gelatine film, it decreased oxidation in the meat products during storage.

In several, areas, in Sri Lanka the use of pits for making coconut shell charcoal is restricted or not permitted due to environmental damage or the proximity of human habitation. In addition approxima­tely 50% of the gross heat content of the shells is lost to the surroundings during the process. In view of the above, the Natural Resources Institute developed a coconut shell carbonization unit with waste heat recovery, which virtually eliminates the smoke problem and simultaneously enables the heat generated during the process‑heat normally lost to the surroundings to be used as process heat in the coconut industry. This technology has been commercialized in Sri Lanka and details of the standard capacity (1.5 tonnes shell) unit and its performance are provided. The findings of preliminary trials carried out on the application of the waste heat recovery technology in the production of coconut oil from freshly decorticated macerated coconut meat ‑ by­passing copra production‑are also discussed. The technical and financial aspects of the application of the technology for coconut oil manufacture using the "new oil process" in Sri Lanka are briefly covered and consideration for its adoption in other coconut growing countries is recommended.

The RLs were characterized by emulsification index (E24), thermal stability and oil spreading test. Further RLs quantification was carried out by the orcinol assay with L-rhamnose as the standard. The result showed that the highest production of RLs occurred in the presence of both coconut oil and glucose at 96 h (2.51 g/L). A stable emulsification index (E24) was observed using diesel with a maximum value of 57% at room temperature. Good stability to high temperature (120 oC) was observed when exposed at 55%. Oil displacement activity showed the presence of RLs with the highest value was at the highest RLs production. This study shows P. aeruginosa is able to produce RLs using coconut oil as the substrate and may potentially become a good source of biosurfactant for industry in the future.

Supplying more and more energy is an essential task of today's energy industry. In the last few decades, in addition to traditional methods of energy production, alternative energy sources have been developing at a fast rate. One of the devices that can use these sources is the fuel cell (FC). FCs can be a power source of the future mainly due to their high efficiency, their low impact on the environment and the possibility of powering with different fuels. Most often, FCs are powered by hydrogen. However, issues with its cheap production and storage are the reasons for seeking new fuels for FCs. Yet it must be a fuel that will provide a zero or low emission level. One of these fuels can be vegetable oil. The paper presents the measurements for the electrooxidation of coconut oil emulsion on a platinum electrode (with smooth surfaces). The electrooxidation was performed in an aqueous solution of H2SO4. Electrochemical measurements were performed in a glass cell with three electrodes. The obtained maximum current density was equal to 21 mA/cm2. Therefore, there is a fundamental possibility of direct electricity production from coconut oil with acid electrolyte.

The aim of this research was to enable easier access to the food value of coconut for humanity. There was a span of time from the 1950s-1990s where much media coverage discouraged the consumption of coconut, even though it was used in the West since the 16th century. This started due to the supply cut off during WW2, thereby Western researchers had to enable humans to consume corn and soybean oil which had become an established industry by the end of WW2. Therefore, propaganda was used to defame coconut oil. The main argument was that coconut oil has a high percentage of saturated fats, neglecting the fact that a huge sample of humans in Asia have been consuming it for millenniums. Later Western researchers realized that the balance between LDL and HDL is more important and coconut has a good balance. This caused a resurgence in consumption. The biggest problem with coconut is accessing the coconut meat through the hard husk and shell. Therefore, two setups were designed and developed in this work. The first setup enables cutting the coconut fast with utmost safety and environmental benefit and the second setup enables grinding out the coconut meat.

They have already sold in the form of coconut oil and copra round with a relatively low price and is unable to provide a decent life. It is increasing because of the low level of productivity of coconut plantations and commercial systems that are less profitable for farmers. While in other areas of the coconut is a commodity that can be processed into a wide range of high-value products with simple technologies that can be done by small and medium industries. So, we need development strategies IKM-scale oil processing industry which is able to increase the income of coconut farmers in the district of Inhil. Based on the results of research conducted by the method of SWOT analysis produced 23 alternative strategies of the development of the SME scale oil processing industry in Kabupaten Inhil ie three strategies from SO, nine strategies from WO, seven strategies from ST, four strategies from WT. Based on the results of the weighting using Analytical Network Process (ANP) on any alternative strategy, Strategy SO-2 namely "Guaranteeing the purchase of products manufactured by the community or the SME by the government and the government must provide the processing industry continued to improve the quality standards that prompted the market to products produced by the community/SME "is a priority under the development strategy of IKM-scale oil processing industry in the District Inhil.

This research was conducted to study the performance of CaO/SiO2 prepared from local limestone and rice husk silica as catalyst for transesterification of coconut oil. A series of catalysts with CaO loads of 5, 10, 15, 20, and 25% relative to silica was prepared using solgel method, followed by calcination at 700 °C for six hours. The catalysts were then used to evaluate the effect of CaO loads on percent of conversion of coconut oil. Several kinetic factors associated with transesterification was also investigated. The products of transesterification were analyzed using GC-MS technique, revealing that they are composed methyl esters of fatty acid composing coconut oil. Quite significant effect of CaO loads observed, in which the higher the load, the higher the percent of conversion. However, it should be noted that the use of 25% CaO led to formation of soap due to leaching of some CaO from the catalyst. Taking this leaching into account, it was then concluded that percent of conversion of 98.3%, is the best result, which was obtained with the use of catalyst with CaO load of 20%, reaction time of 60 minutes, methanol to oil ratio of 8:1, and the catalyst amount of 5% relative to mass of the oil.

This study aims to analyze how much profit out of the business of agro-industry Virgin Coconut Oil and analyzing the feasibility of agroindustrial Virgin Coconut Oil of Grace Farmers Group in Tandurusa Village Aertembaga Sub=District, District of Bitung. This research method is a method of Agro-industry survey on business Tandurusa Grace Farmer Group. Data were collected through interviews using a questionnaire technique. Methods of sample collection is done use purposive sampling) are members of farmer groups Grace. Analyzed using profits to the equation TC = TFC + TVC, TR = Q. P, Π = TR - TC. Then proceed to calculate the value of R / C which is the ratio between the total revenue with total costs incurred during the production process, wherein if R / C> 1 = worthy, R / C = 1 = breakeven, R / C <1 = not feasible. To find out if this Virgin Coconut Oil Agroindustri no profit or loss by the use of analysis Break Even Point (BEP). Result analysis and discussion shows that the total variable cost is Rp. 81.96 million, / year and total fixed costs are Rp.8.295.000, - / year, while total revenue was Rp. 249 600 000, - and BEP production was 61.75 liters and the BEP price is Rp.12.343.750 / year and Rp. 1,028.645, - / month and Rp. 85.720, - / 2day. Total profit / year is Rp. 159 345 000, - / year. With the value of R / C ratio is 3, so that it can be concluded that the Virgin Coconut Oil Agroindustri Poktan Grace Village Tandurusa experiencing gains and financially feasible to be developed because it exceeds the BEP and also R / C Ratio of her that is> 1. Fluctuations in the price and availability of raw materials greatly influence Virgin Coconut Oil production. Venture capital also influences the production of Virgin Coconut Oil. Agribusiness Virgin Coconut Oil provides an opportunity to increase income of farmers' income and employment opportunities and improve the State Foreign Exchange.

Along with customer demand, the manufacturing industry must improve the quality of its products. In addition to product quality, environmental, safety, and health and welfare considerations also have a significant impact on the manufacturing business. One of the products of the manufacturing industry is a shaft which in its manufacture refers to the level of surface roughness. To minimize the surface roughness of the workpiece as a result of CNC lathe machining, coolant can be used. One of them is using coolant from vegetable oil. Vegetable oil is known as an ecologically acceptable and safe cooling medium for use in manufacturing operations. So a study was conducted to determine the surface roughness value of the workpiece (AISI 1045 steel) using 2 types of vegetable oil as a cooling medium (coconut oil and palm oil). Taguchi experimental design was used in this study. Based on the measurement results, the surface roughness value of AISI 1045 steel with palm oil coolant is 1.614 m, and coconut oil is 1.554 m. The coconut oil coolant type can optimize the minimum AISI 1045 steel surface roughness value with a value of 1,554 m at a cutting speed of 1273 rpm, a depth of cut of 0.50 mm, and a cutting motion of 0.16 mm/put.

Abstract— The supply chain management of the coconut industry in the Sula Islands district is still felt to be ineffective and inefficient. The advantage of effective supply chain management is to get maximum speed when goods and services move through the supply chain channel, lower costs, and increase added value for customers and product competitiveness in the market. The purpose of this study is to identify and analyze the management of the coconut industry supply chain. The method used is descriptive qualitative analysis. Those who play a role in the coconut supply chain in the Sula Islands district are farmers, collectors I, collectors II, owners of home industries, transport vehicle owners and marine vessels as modes of transportation. With this supply chain channel, there are only a few benefits for farmers and business operators. The added value of coconut and copra is very small, meaning that the economic value obtained is very small. To provide greater economic value for residents of the Sula Islands district, especially for coconut farmers and coconut entrepreneurs, so coconut fruit must be processed not only until copra, but made in industrial scale coconut oil.Keywords— Supply Chain; Coconut; Industry; Coconut oil; Sula Islands Regency. Dengan jalur Rantai Pasokan seperti ini hanya sedikit keuntungan yang didapat oleh petani maupun pelaku usaha. Nilai Tambah dari Kelapa dan Kopra sangat kecil, berarti Nilai ekonomi yang didapatpun sangat kecil. The diversification of the coconut processing industry into Virgin Coconut Oil (VCO) as a more prospective coconut derivative is currently still growing rapidly. VCO is a virgin coconut oil product that is beneficial for health, and can be used as a raw material for natural cosmetics which has high economic value. Preliminary research has successfully designed the construction of a coconut husk peeler and a coconut shell breaker machine as an early stage in the VCO production process technology. The discussion of this paper covers the design of a coconut meat washing machine utilizing coconut water which consists of a rotating tube with an adjustable tube rotation speed with an inverter and an electric motor as the driving force equipped with a high pressure nozzle with ± 75 psi pressure. Inside the tube there is a retaining divider that regulates the flow of the washed coconut meat. The washing process uses coconut water to wash coconut meat in a washing tube that rotates at a certain speed as needed with a capacity of 8 kg timer for ± 3-5 minutes. Coconut water is drained and coconut meat is ready for the next process.

Agroindustry is an industry that processes agricultural products from raw materials. Agroindustry increase the added value of agricultural commodities. Virgin coconut oil (VCO) product have high economic value because it has many benefits for health and beauty care as well. One of the industries processing coconut into a VCO product in Jember on an SME (Small Medium Enterprises) scale is located in Sukorejo, Jember Regency. The economic feasibility showed that its VCO industry business had a positive NPV. The BC Ratio value less than 1, which means that cash in flow was bigger than cash out flow, in the present value called Break Even Point (BEP), that is, total cost equals total revenue. IRR value that is generated is greater > 6% loan interest, and the last payback period (PBP), which is produced shows the value (less than) <10 years. In accordance with the specified time period of 5 years and 4 months. From the results of the analysis, it can be said that the VCO industry in Sukorejo, Sumbersari District was feasible to do. Abstract In this study experimental investigation for utilization of coconut-based vegetable oil as an environmentally sustainable cutting fluid in the milling of EN 25 steel. The study focuses on evaluating the influence of coconut oil as cutting fluid during milling operation. A series of milling experiments were conducted, varying cutting parameters and employing carbide cutting tools, to systematically assess the performance of the coconut-based oil. The results demonstrate that coconut-based vegetable oil exhibits significant potential as a viable alternative to conventional cutting fluids. It not only effectively lubricates the machining process but also substantially reduces surface roughness and tool wear during milling of EN 25 steel workpiece. Advancing eco-friendly machining practices; this research not only contributes to reducing the environmental footprint of machining operations but also offers a promising solution to enhance machining efficiency. The findings presented in this study offer valuable insights for the practical implementation of this sustainable cutting fluid in industrial machining processes, setting the stage for further exploration and adoption of eco-friendly alternatives in the manufacturing industry.

Tandusan Oil or Balinese Oil is mostly produced by Home Industries in Bali in general and in particular in Banjar Dinas Apit Yeh Kaja, Manggis Village, Karangasem Regency. The PKK women's group is a forum for improving welfare through the production of barren oil by labeling and marketing the products of the home industry of this wasteful oil to a wider market share. With this Community Service Program, PKK Apit Yeh Village women can increase productivity in producing barren oil with attractive packaging and develop marketing by attracting potential consumers through Digital Marketing.

We take a vegetable sales community as a partner in this activity, because they have a lot of problems about coconut after sales. Coconut that not salable sold will be moldy and decaying in fast. There should be a way to overcome this problem by making a coconut likeness of the derivative products. The solution offered to overcome the problems is right to the application of technology to process the oil into products were chosen in terms of coconut by virgin coconut oil (vco) using the tools for the coconut cutting process easier and more efficient. In such a manner as there will be increasing the levels of value added of coconut into a product with higher derivatives of the having the benefit of and higher selling values. By this activity involved in marketing devotion is also arranging training on any process affecting the production the virgin coconut oil (vco) on the home industry scale. The selection of products VCO is because the easy to process and small capital, so will not burdensome to the public to go into business. With the assistance of the coconut cutting machine raising revenue among traders because the device is versatile and it could also be used to help the VCO production process. A method of the activities that would be used in their business over the devotion this is the method involving a partner or members of the population, especially a vegetable sales in their activities to get as a whole. Coconut shell waste pollutes the environment and affects public health. Converting coconut shell waste to pyrolytic oil (liquid smoke) with antimicrobial properties using microwave-assisted pyrolysis and activated charcoal as an absorbent is a promising solution. The purpose of this study is to investigate the process factors involved in the manufacture of coconut shell pyrolytic oil (liquid smoke) using microwave-assisted pyrolysis, to identify the chemical components in coconut shell pyrolytic oil, and to optimize the process factors using a face-centered central composite design (FCCD). This study further used coconut shells of various sizes (1–3 mm) and employed microwave-assisted pyrolysis with different power levels (300–600 W) and pyrolysis times (5–30 min). The results revealed that the pyrolytic oil (liquid smoke) yield increased as the time and microwave power increased but decreased as the size of the materials decreased. The optimum yield obtained was 34.6% at the following conditions: power of 593.6 W, material size of 2.9 mm, and heating time of 28.5 min. The analysis of the components of the volatile compounds in the pyrolytic oil (liquid smoke) product obtained from gas chromatography-mass spectrometry (GC–MS) analysis identified a total of 14 chemical components in coconut shell pyrolytic oil (liquid smoke) at 300 W, 15 compounds at 450 W, and only 5 components at 600 W. Among these compounds, phenol, dimethoxy phenol, guaiacol, hydroxyanisole, and methoxyphenol were found to have the highest concentrations. The outcomes of this study offer valuable contributions to the development of pyrolytic oil (liquid smoke) products with enhanced quality, flavor, and potential applications in the food industry

Whereas that the fishing industry produces a significant amount of by-products, the fish’s oil use for the biodiesel production has proven to be a viable alternative for the energy matrix diversification, helping to repair the environmentally inappropriate disposal of waste generated with fish processing. The coconut oil it’s an inedible oil, it has lowest cost and presents a relatively high oxidative stability, which indicates that its mixture is interesting with fish oil before the transesterification. Oxidative stability is the main impediment of using oil from fishing industry waste for biodiesel production, can be justified mainly by the presence of unsaturation in its carbon chain. Thus, this study aimed to evaluate the coconut oil effect, to fish oil from fishing activity residues of a fishmonger located in the city of Rio Grande/RS, in oxidative stability and also perform statistical tests to check the best configuration, temperature, blend, catalyst, in the biodiesel production. The results verified what addition of coconut oil, to fish oil was positive, considering it was acted as an antioxidant additive and the physical-chemical analyzes carried out showed that the biodiesel produced has good quality, since all samples analyzed fit established quality parameters, with exception of the iodine index of some samples.

The making of instant coffee with foam drying methods is one of the product inovation effort which it can produce commercially by small industry and also home industry. In this research, added coconut oil, dextrin, and tween 80 are added to the coffee for optimalized that drying process. Coconut oil are perhaps as heat conductor so that can increasing drying rate. Tween (Polyoxyethylene 20 Sorbitane Monooleate) and dextrin interacted each other tween 80 act as emulsifier and foam marker, dextrin act as foam stabilizer during drying process. Coffee extract have been added with cooconut oil, tween 80 and dextrin, they are mixed together toproduced foam and then will be dried in cabinet drier. The research method used is the making an instant coffee in three differents coconut oil concentration (0.01-1 %w/w), three differents tween 80 concentration (5-15%w/w), and three differents dextrin concentration (0-20%w/w). The research results showed that added of coconut oil will be increased rate of drying. Tween 80 can increase rate of drying, but dextrin can make case hardening that decrease rate of drying. Product of instant coffee have water content and caffein content in the range of SNI, which are 2.281-3.962% of water and 2.825-3.275% of caffein. Pada penelitian ini ditambahkan minyak kelapa, dekstrin dan tween 80 pada kopi untuk mengoptimalkan proses perngeringan tersebut. Minyak kelapa diharapkan dapat berperan sebagai penghantar panas sehingga dapat mempercepat pengeringan. Tween (Polyoxyethylene 20 Sorbitane Monooleate) dan dekestrin saling berinteraksi, dimana tween 80 berfungsi sebagai emulsifier dan pembentuk busa sedangkan dekstrin berperan sebagai penstabil busa selama proses pengeringan. Ekstrak kopi ditambahkan pada minyak kelapa, tween 80 dan de/estrin, dan diaduk hingga terbentuk busa untuk kemudian dioleskan pada tray-trayyang akhirnya akan mengalami proses pengeringan di dalam tray drier. Konsentrasi minyak kelapa divariasikan pada 0,01-1%b/b, tween 80 pada 5-15% b/b, dan dekstrin pada 10-20% b/b. Hasil penelitian menunjukkan bahwapenambahan minyak kelapa akan meningkatkan laju pengeringan. Penambahan dekstrin meningkatkan laju pengeringan sedangkan penambahan tween 80 akan menyebabkan case hardening dan menurunkan laju pengeringan. Kopi instan yang dihasilkan telah memenuhi standar SNI dengan kadar air 2,281- 3,962% dan kadar kafein 2,825-3,275% serta memiliki aroma, rasa dan tekstur yang tidak berbeda jauh dari kopi instan dipasaran.Kata Kunci: Kopi Instan, Pengering Busa, Tween 80, Dekstrin, Minyak Kelapa

One of the processed products derived from coconut that has great demand in the world of health and beauty industry is virgin coconut oil or known as VCO. Most VCO is processed manually using conventional methods with unhygienic plastic containers and placement in open spaces by the home industries. This research is to develop a VCO-fermented tank that was able to maintain hygiene and low temperature during the fermentation process by using SS403 and teak wood insulation as the main materials. This research carries on by comparing the fermentation process and results between the conventional method and the new VCO tank. 41% VCO is produced from raw coconut milk using a new VCO tank which is 5% higher than the conventional method. The VCO fermented tank produced more VCO and was able to maintain lower temperatures compared to the conventional method and also can be operated with less procedure order. Penelitian ini adalah mempelajari pembuatan deterjen cair dari minyak kelapa virgin coconut oil (VCO). Minyak kelapa adalah minyak yang dibuat dari bahan baku kelapa, diproses tanpa bahan kimia. Deterjen merupakan salah satu produk pembersih yang banyak di manfaatkan pada kegiatan pembersihan untuk laundry, alat-alat rumah tangga, trasportasi, kegiatan komersial dan industry metal. Pembuatan deterjen cair dari minyak kelapa virgin coconut oil (VCO) ini bertujuan untuk menganalisa pengaruh hubungan minyak dan KoH yang dipakai. penelitian ini sudah pernah dilakukan sebelumnya tetapi dengan menggunakan minyak goreng mentah dan ekstrak biji mahoni, sedangkan pada penelitian ini menggunakan minyak kelapa virgin coconut oil (VCO)dengan variasi waktu pemansan dan volume KOH.Variable penelitian ini adalah hubungan waktu pemanasan,minyak dan KOH pada proses pembuatan deterjen cair dengan minyak kelapa, sehingga menghasilkan deterjen cair yang memenuhi standar SNI. Nilai pH yang diperoleh sekitar 11-12, sedangkan spesifikasi SNI yaitu 10-12. Sedangkan nilai densitas yang diperoleh sekitar 0,8-1,4, sedangkan SNI yaitu 1,2-1,5. Coconut pulp contains up to 18.2% protein which is one of the wastes from coconut oil processing. Protein from coconut pulp can be used in the manufacture of protein concentrates which are widely used in the food industry. The purpose of this research is to determine the concentration of NaOH that can produce the yield and protein content of coconut pulp protein concentrate. Coconut pulp protein was extracted with NaOH at various concentrations of 0.5, 1, 1.5, 2, and 2.5 M, then continued with salting out using salt (NH4)2SO4 with a saturation of 65%. The crude protein content of coconut pulp protein concentrate was determined by the Kjeldahl method. The results showed that the use of 0.5 M NaOH resulted in the highest protein content of coconut pulp protein concentrate, which was 71.30% with a yield of 14.42%.

“Sfogliatella riccia napoletana” is a typical pastry from Naples (Italy), traditionally produced using lard. In the bakery industry, palm oil is widely used to replace lard in order to obtain products without cholesterol, but it is currently under discussion, which is mostly related to the sustainability of its cultivation. Therefore, in this work, lard was replaced with palm oil-free vegetable blends composed of sunflower oil, shea butter, and coconut oil in different percentages. Traditional pastries produced with lard and pastries produced with palm oil were used as controls. Moisture, aw, free acidity, peroxide value, fatty acids, total polar compounds, and global acceptability were determined in the obtained pastries. The results indicated that the use of a vegetable oil blend composed of 40% sunflower oil, 40% shea butter, and 20% coconut oil minimized the formation of oxidized compounds (peroxides and total polar compounds) during cooking and produced a product with a moisture content very similar to that of the traditional pastry that was appreciated by consumers.
