Texto completoIn recent decades technoscientific innovation has pushed the food boundaries to a new frontier of nanofood. Such a term refers to an array of food products, whose processes of growing, production and packaging involve nanoscale (nanotechnology and nanosciences) knowledges and applications. This research focuses on the analysis of the European (EU) regulatory framework in the field of agrofood nanotechnology. The analysis considers the salient features of emerging applications of nanotechnologies in the agrofood sector and compares the legal framework on nanofood in the EU with the USA’s regulatory approach. It also develops an interpretation of the normative evolution in the EU, by trying to understand what is the role of science in governing technological risks in nanofood safety, and assessing how adequate the regulatory instruments are in achieving the goal of responsible research and innovation as proposed within the process of rethinking European governance.

Texto completoThe research focuses on the study of the importance of food in wedding celebrations of Western Europe from the VIth to the XIth century. It was used a corpus of sources which features texts of different genres: chronicles, annals, hagiographies, legislative texts, to which it was added a deep analysis of the ancient icelandic sagas. After an introduction mainly centred on the publicity of the celebration, the research examines marriage as a "process" from the point of view of food rituality: the toasts and the banquets set up to ratify the betrothal and the repeated banquets for the celebration of the wedding. The research also analyzes some cross matters, such as the study of the case of the "drunk betrothal literature", a literary tradition where the betrothal between the two protagonists is always ratified through a toast; furthermore, a historical-anthropological analysis deals with the "culture of exceeding", typical of medieval food rituals of marriage, compared to the contemporary "culture of saving". Then the thesis examines the reiterate prohibitions that the Church imposed to clergy relating their attendance to wedding feasts and banquets, common trait of the whole Middle Ages. Finally, the conclusive part of the study is centred on the medieval reception of two biblical figures that set as background a wedding banquet: the parable of the wedding banquet and the wedding of Cana. The persistent presence of these two scenes in the words of Bible commentators proves the extraordinary efficacy of the "food language", a linguisitic code based on food (and on backgrounds such as agriculture, fishing, etc.) as an instrument for mass social communication with an essentially universal anthropological value.

Texto completoAfter ten years of existence the CIBC, (assessment of competencies center) through them, the assessment of competence remains a vague device. To this day many social partners and therapists have been questioning the social usefulness of this process which is focused on the individual. Thanks to my status as an assessor since 1993 in a CIBC, i have attempted to achieve an endogenous analysis of this process such as it may be grasped by the three groups of actors involved: - the supervisors of the CIBC - the beneficiaries (the unemployed who come to the CIBC) - the public financiers (professional advisers of the ANPE) the prevailing themes of this research revolve around the following lines - the CIBC - the progress of the assessment - the function of the group leader in charge. - the beneficiaries (profile, expectations, answers) information has been collected from interviews, (and even at times with questionnaires) and observations. The theoretical framework which was selected to demarcate this work favours the ethnographic approach and the microsociological trends. In parallel with the fieldwork, comes in addition a bibliographical analysis in connection with statements related by indirect or direct actors of the CIBC. The aim of this work is to grasp a device from the interior so as to understand some, codes, risks, distributions of authorities and their articulations, and to find keys of the institution in order to make it more legible. Beyond this research what is at stake is the implication of the seeker/therapist, but also the quest of a meaning linked to a larger social function and the questions that derive from it

Thus focusing my attention pricipally on the role of public institutions in selecting what one ought to call tradition, as well as on the emic "know-how" (material culture) treated as "object" of cultural heritage. Actually the politics and the "poetics" of food are aprticularly evident in the time and space of representation, which is influenced by global and "local-peculiar" powers (biological issues, GMOs etc. . . ), for example the Slow Food activists or the strategy -and the resistance- of local and national subjects (farmers, institutional authorities, notable, political actors). As a matter of fact the intersections of all these levels are contemporary issues within the conflictual contruction of the identity in a local community located in a Tuscan area (Valdarno aretino)

Texto completoL’obiettivo di questo lavoro di tesi è studiare l’articolazione delle dinamiche socio-economiche e spaziali nella Matera food city region, e testare la capacità degli strumenti di innovazione, delle politiche del cibo e dei processi creativi nella valorizzazione dei paesaggi rurali. Il lavoro di ricerca muove a partire dalla costruzione di risposte ad un serie di quesiti che scompongono e chiarificano l’intero percorso. Il primo riguarda la riflessione sulle dinamiche e sui flussi che interessano la food city region, considerando spazi, attori e economie implicate, attraverso un approccio che esamina criticamente la città e la campagna. Il secondo quesito muove dalla necessità di definire un modello di rappresentazione consono alla restituzione delle dinamiche osservate sul territorio e capace di restituire degli output a partire dall’interpretazione critica dei fenomeni. Il terzo riflette sulle caratteristiche della Matera food city region per individuarne potenzialità da cui articolare strategie per i territori del cibo. Il commento delle risposte alle prime questioni sarà il presupposto per la formulazione di un ulteriore quesito che riguarda il ruolo che possono avere gli strumenti innovativi in questo processo, di cui si fornirà un modello applicativo condiviso tra più attori nella parte finale dell’elaborato. Questo lavoro di ricerca si compone di tre operazioni differenti e fortemente complementari, ma tuttavia riconoscibili nella struttura della tesi. La prima riguarda lo studio critico della letteratura con una ricostruzione del ruolo assunto dal cibo nel corso dell’ultimo ventennio nella pianificazione delle città e dei territori. A seguire alcune definizioni sul sistema del cibo, sulle spazialità della ricerca e sulle politiche e regolamentazioni internazionali e nazionali. L’introduzione alla tematica della ricerca sarà la base disciplinare su cui saranno presentati i quesiti, gli obiettivi, i materiali e i metodi utilizzati. In chiusura della prima parte sarà introdotto il contesto della ricerca. La seconda parte della tesi è un lavoro più disciplinare e riferisce della ricerca sul campo attraverso la ricostruzione del sistema del cibo mediante l’analisi e l’interpretazione dei modelli organizzativi riconoscibili sul territorio in termini spaziali, ma anche quantitativi e qualitativi. Il riferimento in questa fase è stato lo studio delle performance delle varie fasi in cui è stato diviso a monte il sistema del cibo (produzione e trasformazione, trasporto e distribuzione, consumo). Una tematizzazione delle fasi dell’indagine che ha chiarito le relazioni tra spazialità, attori e dinamiche e le connessioni tra i vari processi nella fase di ricostruzione complessiva del fenomeno, svolta allo scopo di restituire una interpretazione critica del processo. Nella terza parte il commento dei risultati dell’analisi consentirà di ricostruire una lettura della geografia del territorio attraverso la lente del cibo. Saranno specificate le basi su cui è stato articolato il modello applicativo condiviso tra città, università e impresa che prova ad utilizzare uno strumento innovativo per la formulazione di strategie operative capaci di valorizzare i territori in chiave cibo. Matera e la sua food city region possono riarticolarsi in una visione che combina i processi culturali e agro-forestali dei paesaggi autentici lucani con la dimensione sistemica del cibo capace di relazionare tra loro patrimoni filiere e società. L’innovazione in tal senso può fornire gli strumenti per l’implementazione di atlanti patrimoniali interattivi e in grado di proporre governance partecipate e sinergiche.

Recently, nutrition has been linked to a lot of interests: social, economical, industrial, commercial, political, media but also scientific ones. These are significant issues that concern the public opinion and attract the media attention. In a society that revolves strongly around media, it becomes relevant to observe how the public discourse on themes like food and nutrition is being shaped among the public sphere. In addition, the rising of several techno-scientific projects that concern the field of nutrition cannot help but suggest to look at nutrition, and its symbolism, like a privileged object through which one can also observe the existing ties between science, technology and society. This study started by exploring the characteristics of the narrative of the food theme and its presence in the public arena through an analysis of the main Italian daily newspapers. One former longitudinal analysis, in the time-span 1992-2013, found- through an innovative tool of textual analysis ( topic detection)- the presence of some emerging themes. Next, we shifted our attention to the last period (2010-2016), with the aim to focus on the majority of the recent events and to verify whether the media discourse on food and nutrition gained new relevance or forms in the media agenda and in the public discussion. The research work is composed of two other different kind of analysis: on the one hand, it will discuss the emerging results from three focus groups that provided useful indications on the relationship between food, media and the public opinion; on the other hand, we sought to identify a relation between media coverage and the attitudes of the public opinion by adopting a “risk indicator” and the data from certain European surveys.

Texto completoThe thesis aims at contributing to the comprehension of the process by which new products are designed by the firm, taking the biotechnology activities of the Swiss group Ciba-Geigy as a case study. It starts presenting the determinant influence of the historical context and the specificities of the Swiss industrial development on the strategies and organizational structures of the group. The analysis of its financial and economic policy makes possible the identification of the financing sources of innovation. In focusing on the modalities of acquisition of technical knowledge and know-how, as well as on intellectual property rights, this research permits to better understand the ways and means of how the firm acquires new technical and organizational knowledge and how they are used for production purposes. The systemic approach followed highlights the interactions between the process of acquisition of knowledge and competences, and the process of conception of artifacts in the pharmaceutical industry and the production for agriculture. The organizational changes linked to them are also considered. Through this approach, the design of highly complex products requiring a variety of capabilities is also examined. Firms as Ciba-Geigy have already profited from this new tool. However, at the conceptual level the reflection on complexity lays behind the praxis. Finally, the thesis leads to a better understanding of the innovation strategies applied by the biotechnology companies and to a renewal of the theory of the firm, based on its multidimensional and systemic nature

Texto completoGiven the diversity of ways of understanding and treating the body in childhood education, this study examines the relationships between the life story of a teacher, specifically those aspects that refer to body experiences, and her teaching practice. In accordance with the procedures of oral history, it presents the memories of a teacher who, in her practice, enhances the expressive, emotional and cultural dimensions of the body. Based on the academic debate on body education, the speech of one of the actors from the Education scene on its trajectory is analyzed, focusing on the ways by which collective constructions are filtered and implemented in a particular case. In order to establish links between her remembered and narrated experiences and the treatment given to corporeity in her teaching practice, the body was approached as a locus of identity and as a writing surface for the inscription of culture. The experiences written on the body of this woman, mother and educator constituted the ways of being, of seeing herself, reading the world and relating to it. In verifying the connection between life story and pedagogical practice, it was observed that the treatment given to the body in early childhood education stems basically from the experiences collected over a lifetime, without any influence of initial training. Therefore, through this research, the outline of a case extracted from the social fabric returns to it as a contribution to the debate on the role of body in early childhood education and in teacher identity formation.

Texto completoDue to the current situation of economic crisis and environmental alarm together with the growing urbanization process at global level, it is becoming more and more urgent facing with problems that concern food sovereignty and urban sustainability. The result is a concrete necessity to elaborate new paradigms and methodology of research that can enlighten the situation from a theoretical and practical perspective. In the first part, an interdisciplinary approach is used to discuss the role of food and of eating practices in shaping our lives and the places we live, with reference to the literature on food sustainability and on urban food systems. A specific part is dedicated to sociological studies that show the cultural dimension of food and the evolving processes of eating habits. Moreover, it is presented the literature on ‘food choice’ that can help to understand better the rise of alternative food networks (AFN’s) which can orientate to a more sustainable way of living and buying. The last part of the thesis presents the results of an empirical research on the consumption of sustainable food in the city of Milan. The scope of the study is to identify which factors influence food choice, considering both contextual and personal factors. Thus, the focus is on the influence of spatial and economical accessibility to sustainable food but also on the incidence of values, attitudes and knowledge (including the role of information media). Three different research methods are used to investigate more effectively how sustainable food is distributed, perceived and known from milanese citizens: an on-line survey, a spatial analysis (with GIS) and qualitative interviews to residents in low and high density areas of sustainable food consumption. This research can reveal useful indications to manage new concepts and adopt a more complete view on the relationship between food and the city that includes also the sustainability issue. Furthermore, it highlights drivers and barriers on the path to enhance sustainable behaviour patterns that could be useful for researchers and to public actors in order to afford proper and effective strategies of intervention.

Texto completoThe Intermanager Bipartite Commission (IBC) was instituted by the Basic Operational Norm 01/93 and responds for the operational aspects of the Unified Health System (UHS). It is a forum for negotiation and pactuation between municipal and state managers, promoting the integration of the various municipal health systems coordinated by the state government. The norms issued by the IBC in the form of resolutions , have the nature of procedural rights, in other words, establish specific procedures for fulfill the right to health , allowing all potential receivers of these norms to acknowledge, support, criticize or even challenge them in court. The normative power of the ICB results from express legal prevision to regulate the operational aspects of the UHS, and its democratic legitimacy is the result of the control exercised directly by citizens or through the State Council of Health (SCH). The norms that emanate from the ICB should recognize as a part of the legal order and fulfill its operational goal inside the legal health system. Accordingly, the objective of this research was to discuss the normative power of the IBC and the effectiveness of its resolutions, under the paradigm of the discourse theory of law. The methodology was fulfilled through the documentary analysis of the resolutions and discussions of IBC, to understand its deliberative and discursive dynamics to characterize it, or not, as a forum for democratic genesis of rights. We identify and rank the proposals approved as its correspondence with the resolutions of the SCH, as its the content, its approval procedures, and the dynamics of the discussion to approve proposals that resulted in resolutions. We observed that there is a great democratic potential in IBC, a potential that needs to be explored. But there are also weaknesses and contradictions in the dynamics of the discussions within the Intermanager. There is evidence of a potential institutionalization that undermines democratic discourse and closes the IBC to social participation and control. In times of a democracy and a legal system in a crisis of legitimacy, spaces like the IBC must increasingly open to popular participation, encouraging democratic radicalization, building instruments for civil society to participate and openness to the new forms of expression of democracy, which escapes the traditional institutional forms

Texto completoCervical cancer is the third most common neoplasia in women and still is one of the main causes of death in less developed countries. Human papillomavirus (HPV) is necessary but not sufficient cause for this neoplasia as almost all the diagnosed cases (99%) were positive for cervical cancer. Regular screening together with the performance of a Pap test are believed to be effective in lowering cervical cancer incidence and mortality rates, although it can show low sensitivity. HR-HPV tests have a low specificity as most HPV infections are temporary (up to 90% of the infections resolve within the first two years). Our study will deal with how immunocytochemistry involving dual staining for p16 and Ki-67 can show cell cycle deregulation caused by HPV oncoproteins: E7 inactivates pRb, so p16 overexpression increases dramatically, and E6 stimulates the proliferative activity of Ki-67 by interfering with p53. OBJECTIVES: The main objective of this thesis is to: o Check that dual staining of ASC and LSIL cytology with p16INK4a and Ki-67 biomarkers is associated with an underlying CIN2+ lesion, or is progressing to CIN2+ over a specific period of time. And the following secondary objectives: o Comparing positivity, sensitivity and specificity rates for positive, dual stained results for dual staining cytology to determination of HR-HPV, in order to detect CIN2+ lesions. o Observing the connection of positive dual-stained results for p16 and Ki-67 with the different high-risk viral genotypes in histologically confirmed cases of CIN2+. Frequency with which different genotypes appear in these lesions. MATERIALS AND METHODS • MAIN OBJECTIVE: 306 selected patients underwent p16/Ki-67 dual immunostaining testing. The tests were positive or negative. Out of the 306 cytology samples, 50% were followed by bioptic sampling (histological analysis of 153 patients), with three possible diagnoses: negative for dysplasia (16), CIN1 (80) and CIN2+ (57). o The gold standard is the histologic diagnosis of CIN2+. o The Clinical Follow-up of patients took from 1 day up to 30 months in some cases. • OBJECTIVE No.2: 146 patients underwent HPV testing as well: Digene Hybrid Capture (HC 2) test and a PCR-based genotyping assay (Clart® HPV2). • OBJECTIVE No.3: Sections of paraffin-embedded tissues from the 57 patients were sent to the Department of Virology for a PCR-based genotyping assay (Clart® HPV2). RESULTS: MAIN OBJECTIVE: o Three hundred and forty-nine p16/Ki-67 dual-stained cytology tests were performed in 306 patients with ASC and LSIL diagnoses, resulting in a general and important rise in sensitivity for the detection of an underlying CIN2+ lesion, maintaining the same high specificity given only by the Pap test. o Some minor differences in sensitivity and specificity are found in ASC and LSIL. OBJECTIVE No. 2: In ASC and LSIL, both tests (dual staining and determination of HPV) have a similar sensitivity of 90% when detecting any underlying CIN2+ lesion, although a statistically significantly higher specificity of dual stained cytology has been observed. OBJECTIVE No. 3: CIN2+ has been diagnosed in 57 patients out of the 306 patients who participated in this study (18,6%). In more than half of the cases (56%), the infection was due to only one genotype, the most common being genotype 16 (in 14 patients or 50% of the HR-HPV-positive cases), followed by genotype 31 and then genotypes 18, 45, 51 and 58 with the same frequency. In cases of multiple infection, it is also genotype 16 which is most frequently associated with other genotypes (in up to 59% of the cases). HPV-18 is only associated with other genotypes in 18% of the cases. In order, the following absolute frequency was observed: HPV-16, 31 and finally 18.

Indeed, the rapidly growing world population is requiring an increased food production which is one of the greatest causes of environmental degradation throughout the world. The agricultural system is based on complex relations that link agricultural productivity, environmental functions and environmental conditions. Therefore, moving towards less polluting production systems is of the utmost importance to satisfy the current demand for food without compromising the possibility for future generations to have access to a proper amount of food of adequate quality. Life cycle assessment (LCA) methodology is at the core of sustainability assessment. Indeed, considering the entire life cycle of a product or service, it allows to account for potential shifts of environmental impacts between environmental compartments or stages of the food supply chain. The overall aim of the present thesis is to contribute to the ongoing debate on the harmonisation of the approaches to carry out a LCA referred to agro-food products in order to foster its reliability and effectiveness.

Texto completoThe CIB is the cumulative infrared emission from all the galaxies throughout cosmic history. Its distinct frequency-redshift dependence allows to probe a large span of redshifts. In this thesis, we utilise the CIB anisotropies detected by the Planck satellite to:i) Measure the star formation history of the Universe and the effective bias of the dark matter halos hosting the CIB galaxies to a high redshift. Using these measurements, we calculate the typical mass of the host dark matter halos for the CIB galaxies at different times.ii) Using the CIB as a tracer of the large scale structure, the cross-correlation with the CMB provides with an alternative probe of the dark energy. We showed that the CIB, extracted on a large fraction of the sky, may provide the best Integrated Sachs Wolf measurement (in terms of S/N ratio). Using a Fisher matrix formalism, we also predict the improvement on the constraints on the cosmological parameters using the ISW measured with this technique. We cross-correlate the best available maps of the CIB and the CMB and find that the dust residuals in the CIB maps are too high to detect the ISW through this method.iii) Measure the kinetic Sunyaev-Zel'dovich (kSZ) power spectrum hidden in the CMB power spectrum. We improve upon the existing analysis by combining the CIB measurements (from Planck/HFI and Herschel/SPIRE) and multi-frequency observations by Planck, SPT and ACT to extend the range of scales and frequencies to facilitate the kSZ measurement. We develop a power spectrum analysis based on physically motivated but simplistic and consistent models of foreground components (CIB, tSZ, tSZxCIB) to accurately separate the kSZ from the CMB

Texto completoUna grande enfasi accompagna attualmente ogni discorso sulla cucina tradizionale e locale, contraltare ideale alla proliferazione di culture e filosofie alimentari che accompagna la circolazione sempre più ampia e rapida di persone, beni e informazioni. Entro questo panorama vitale ma confuso, le identità gastronomiche locali identificate con la tradizione vera o presunta incarnata nella cucina delle nonne, nella convivialità schietta delle vecchie osterie, si prestano non solo a rappresentare abitudini e certezze alimentari, ma anche a evocare, spesso idealizzandoli, figure sociali e stili relazionali. A partire da queste premesse, il presente lavoro si propone di decostruire le auto-rappresentazioni di donne hanno lavorato come cuoche e cameriere nelle cucine e nelle sale di trattorie e osterie a conduzione familiare tra gli anni Cinquanta e gli anni Settanta. La ricerca è stata condotta nelle sette province della Regione Veneto e si basa sulla raccolta di 39 interviste semi-strutturate effettuate in italiano o in veneto. Le narrazioni, contestualizzate entro un periodo storico di grande evoluzione sociale ed economica, sono sottoposte a un'analisi di carattere sociologico inserita in una prospettiva di genere e, in particolare, nel filone di studi che indaga la relazione tra genere e cibo. Nei locali a gestione familiare raccontati dalle interviste, l'assegnazione di compiti e responsabilità disegna il posizionamento di ciascuno entro lo spazio familiare e sociale. Raccontando la vita nel locale, e in particolare la preparazione e il servizio dei piatti, le narrazioni delineano l'interazione tra donne – diverse per età, status sociale e familiare – familiari e clienti – uomini adulti di diversa estrazione sociale – mettendo in luce le strategie di negoziazione dei confini tra vita familiare e vita lavorativa, produzione e riproduzione, endocucina ed esocucina (Lévi-Strauss 1967) e, con questi, quelli tra cura e accessibilità personale, costrutti fondamentale nella prospettiva di genere e, in particolare, nelle letture che individuano le donne come soggetti di studio (Bimbi 2014). L'analisi mette in luce la trasmissione infra-femminile delle conoscenze culinarie (Giard 1994), le dinamiche della sala, le strategie di conciliazione tra responsabilità familiari e impegni lavorativi, l’organizzazione del lavoro di cucina (DeVault 1991, Fine 1999), l’interazione tra il retroscena della cucina e la ribalta della sala (Goffman 1959), nonché l'esecuzione di alcune ricette tipiche (Greimas 1979). Decostruendo questi aspetti, il lavoro cerca di restituire la complessità delle rappresentazioni messe in scena, che costringono a problematizzare l'alternativa tra il cibo come dono (Caillé 1998; Godbout 1996, 2000; Mauss 1965), simbolo dell'amore ma anche delle costrizioni familiari (Charles, Kerr 1986, 1988; Counihan 2004, 2009; Devault 1991; Lupton 1996, 2000) e il cibo come merce, preparato e servito in base a logiche strettamente correlate all'interesse.
