Full textIn the aosta valley rural houses are adapted to the development of families since the lower middle ages. The organisation of villages is directly related to the farming layout of the soils distributed according to height. The present state of inertia of ancient houses is due to mass emigration and to its land consequences, which are connected to the egalitariam succession system; this has caused an indivisibility of real estates. The hierarchy of the local society explains the process of old and new settlements through cadastral records: for example on one side the land retention practiced by the biggest elderly landowners freezing real estates, and the other hand the action of promoters, taking advantage of the touristic residential pressure, who are purchasing the least profitable land and abandoned houses. The landscape is rapidly changing according to the development sectors chosen by the local societies. Second homes are surrounding the villages of torgnon. Model cowsheds are supplanting the former habitat of the higher valpelline region. Everywhere the estate situation of the past is a clue to the present evolution of rural space

Full textA systematic analysis of word stress, group stress and sentence stress as well as the development of the intonational contour of each word, of each phrase and of each full sentence, in affirmative (declarative) and interrogative (yes/no question) sentences has been carried out to evaluate among other things the influence exerted by the position of the stressed syllable in the word and of the word in the sentence on accents and intonational patterns. The method followed in the acquisition of data - essentially based on the use of a fixed corpus (the results were also proved by means of free tape-recordings and spontaneous language) - has permitted of no limitate the attention on variations of fo, but to extend to the values of duration and intensity, thus dividing into its three principal parameters in correspondence of its vocalic segments. Besides, this method has assured us the possibility to dispose realizations that from a semantic point of view are little connotated and has made it possible to identify intonational patterns in the affirmative and interrogative utterances of the considered varieties. By means of essentially phonetic and instrumental approach, we have thus examined the principal prosodic phenomena which characterize the two francoprovencal varieties of aosta valley as well as the regional italian spoken in the two villages analysed. In this way we have the opportunity to verify the existence of phenomena such as "persistence" and variation in the use of the two different linguistic codes by the same speaker. The choice of these two villages (sarre and cogne) was based upon the aim to verify the presence vs. Absence ofcommun elements in the two varities which, though belonging to the same linguistic area, are perceived as being very different

Full textThe place names for pastures in savoie and the aoste valley that we investigated in this study often have their origin in the oral tradition of mountain communities that are in rapid evolution today. Thus, these place names constitute an ethnolinguistic heritage that is threatened with extinction, especially as the francoprovencal dialects themselves are disappearing, and it is these which make it possible to understand the toponymic designations in the context of natural and man-made aspects of the mountain environment. The dialectal approach of this toponymic study also makes it possible to locate these data in the alpine francoprovencal geographic area, through the presentation and analysis of dialectal and toponymic maps

Full textThe Romanisation of Camonica Valley concerns the impact of Rome on the life of a community in the middle of the Italian Alps north of Brescia and Bergamo, between Iseo Lake and Tonal Pass: the ancient Camunian people (Kamuni or Camunni). This is a systematic study of the context of 193 Latin Inscriptions that cover a period of time from the first Roman Imperial Age to the VII century A. D. , as well as an analysis of historic literary sources, rock carving art and all archaeological remains. After the campaigns of Druses and Tiberius, in fact, Augustus conquered the dominion of Alps and the Camonica Valley was annexed to Rome with other gentes alpinae devictae. The valley became then a buffer state in the Roman Empire, received soon the Roman citizenship and a certain degree of autonomy. The study examines especially the new social organisation of the native people, not only regarding the relationship between Roman and local people but also about the transformation process of Camonica Valley due the effects of Romanisation

Full textThe decentralisation process in France has highlighted cultural heritage issues which interest associations as well as the various strata of political institutions. Until the 1980s, the state remained the primary actor with regards to cultural heritage. At present, local communities invest alongside intermediate structures in the cultural heritage process. This evolution raises the question of political stakes beyond invested social interests or the development of tourism. If we consider cultural heritage as the result of a negociated social construction, our hypothesis proposes that heritage’s political stakes are focalised on the opportunity for local communities to legitimate their political power by asserting their cultural identity. Observations of the Valais canton in Switzerland, the autonomous region of Val d’Aosta in Italy and the Savoie and Haute Savoie departments in France demonstrate that three of them direct their own cultural heritage and influence the actions of other local heritage actors such as villages and associations. The Valais canton was the first to enagage in these policies, before the Val d’Aosta and the Savoie department. This time lapse is related to the political center/periphery relationship as well as distinct institutional stakes. Designating an element as belonging to one’s cultural heritage identifies the element as part of a common good and reinforces the existence of the community and the polity. Examination of heritage choices also reveal limitations - including, in the French and Italian cases, particular conceptions of national identity

Full textA global transition towards sustainability is a pressing challenge in the current context of fast degradation of the biosphere and of rising socio-economic inequalities which generate multiple vulnerabilities. Qualitative and quantitative surveys have shown that sustainable principles and values appears to be emerging on a global scale. Various social movements have laid claim to such a transition. The No TAV movement in the lower part of the Susa valley in Italy is an example. Since the 1990’s, this area has been the scene of a territorial conflict pitting the local inhabitants against the Italian state on a 54km long railway tunnel project under the Alps, linking the Susa Valley to the French Maurienne Valley. By strongly rejecting this project and collective participation in numerous resistance movements, the Low-Valsusans have gradually become a territorialized community who’s members are linked by strong bonds of co-obligation to each other and seem to share a set of sustainable principles and values. In this thesis, we question the impact of this very peculiar context on the local small and medium entrepreneurs’ involvement into the sustainable development of their territory, trying to find out whether it influences their activities. We have conducted our investigation in a pragmatic style, paying attention to the actors’ self-reflexivity.Does the participation to a sustainable territorialized community favor the involvement of the entrepreneurs into a solidarity economy oriented towards a sustainable development? The first part of this thesis questions the relevance and the conditions necessary for the implementation of a sustainable development. We propose the notion of territorialized community, articulating the political principle of the common and the notion of territory. The second part deals with the characterization of the Low-Valsusan territorialized community. We question its spatial anchoring, its principles and values, as well as the trajectory through which it emerged. This community has crystallized through several decades of struggles. It is anchored in the lower part of the valley between the villages of Exilles and Avigliana and its members seem to share sustainable principles and values. Finally, the third part of this thesis characterizes a process of social innovation through which a solidarity involvement of the local entrepreneurs in favor of a sustainable development has emerged and spread in the lower Susa Valley

Full textArchaeological evidence, brought to light between 1980 and 2004 during the excavations in the town of Sant’Arcangelo (Potenza, Basilicata- Italy) are concentrated in the newly built district of San Brancato, located about 280 m above sea level on the lower terrace of the hill that dominates the wide valley of the Agri river. The excavations discovered, in the eastern part of the terrace, traces of the settlement and, toward west, the necropolis areas that counts about 600 burials: 60 are related to the Iron Age and more than 500 dating from the Lucanian period, which is the object of this research. This large number of burials and their rich grave goods shows that this necropolis was to be linked to an important settlement that was formed at the time of "crisis", when the Enotrian centers disappear, such as the nearby site Alianello located on the opposite bank of the Agri river. The aim of this research was to gather all the data obtained from the analysis of the archive documentation carried out during the excavation campaigns of the archaeological contexts of San Brancato dated between the end of the 5th and the 3rd century. B.C. For the necropolis, all the data of the already published grave goods were confronted and integrated with the remaining unpublished tombs. Through the excavation and cartographic documentation, we have also proposed to precisely identify the exact points where all the unpubblished material, now hosted at the National Archaeological Museum of Siritide in Policoro and related to other types of contexts - currently the only testimonies of an settlement that has been quoted several times in the publications- were discovered. Through the topographic study and analysis of funerary rituals, burial practices and material culture, we aimed to understand the community that lived in this settlement, still little explored, and we aimed to provide a detailed framework of the historicalarchaeological situation of San Brancato in relation to the other centers of ancient Lucania

Full textThe research on biodemographical anthropology worked out on the community of Chiomonte(Haute Vallée de Suse), from 1670 to 1929, and of L’Argentière-la-Bessée (Hautes-Alpes), from1690 to 1889, has allowed the analysis of the changes in the periods considered in these twocountries.The analysis of births has worked out an overall view of the two populations both from a biologicdemographicperspective and from and economic-cultural one.The analysis of deaths has highlighted the importance of environmental factors on death, although ithas been possible to define that through better conditions of life, infantile and juvenile mortality ratecould decreased as well as old aged people mortality increased.Culture, society, economy and religion are the main factors which influenced marriage behaviors ;also environment played an important role.Families’ reconstructions in Chiomonte enabled us to understand that economical changes whichoccurred from 1670 and 1830 had different consequences on the structure and the lineage of thefamily. The increase of life time led to an increase of marriages and at the same time the decrease ofinfantile mortality determined the rise of children who reached the reproductive age.On the other hand, the age of partners at their first marriage, the number of children, theprotogenesic and intergenesic intervals remain constant

Full textThe analysis of the local fiscal policies of the autonomous communities of the Val Seriana during the XV and XVI centuries proves the existence of a three-sided, asymmetrical equilibrium between the Republic of Venice, the Commune of Bergamo and local powers. Whilst the Town manages to influence the communities' choices from a marginalised position, the Republic and the latter share a pact that benefits them respectively in fiscal revenues and protection of autonomy. This relationship will strenghten in time, through the transformations of the Venetian fiscal system (late XV century) that will put more emphasis on extraordinary revenues and monetisation of military corvées. These radical changes combined with the financial strain coming from the renewed war engagement in Italy and in the East that will increase Venetian fiscal demand, will locally set a trend for the development around communal finances of a new apparatus, replacing the old system based on customs. Though beneficial for the whole community, this system will be largely managed by local governing families; its roots will be public borrowing from private businessmen (often, relations to the members of the political management) and the commercialisation of a portion of the communal properties

Full textThe thesis comprises a monographic, analytic and transdisciplinary study of the medieval paintings with religious subject matters in the Susa valley (Piedmont). This area is densely populated and travelled, particularly during the long end of the Middle Ages between the XIVth and XVIth centuries, as it is one of the main thoroughfares through the Alps. Split between two major political entities, Savoy and the Dauphiné Viennois, the valley pertains to the diocese of Turin despite the religious turmoil due to the waldensian presence. Thus it offers a broad view of the complex and fascinating mountain valleys of the western Alps. Its corpus of preserved and documented wall paintings is a substantial material for analysis through cultural depictions with an anthropological approach. By studying distinctive iconographic and stylistic features concurrently with the pluricontextual religious, political, and sociological data, the study aims to analyse cultural stakes of alpine mural depictions. The thesis delves on the one hand into the interactions between territories and powers, the relationships of images with devotional customs. On the other hand the analysis looks into artistic receptions and their links to historical and religious vagaries or spatial settlements. The effects of artist migrations and the broader question of cultural and artistic transference they pertain to are also addressed, for instance through the relationship between central and peripheral sites. The objective of the thesis is indeed to sketch a summary of Susa valley paintings in the end of the Middle Ages, while surveying the issues of the subtly plural alpine cultures and their stakes through medieval murals

Full textComparative analysis shows that for two centuries there has been a certain convergence of speeches and public policies about risks: the approach on climatic change succeeded the speech on the deforestation of mountains, and legal hazard mapping replaced the afforestation and forests protection. However, a finer analysis reveals important differences in the repartition of the competences among the different actors of risk management, with the application of preventive information and more importantly hazard mapping. The political organisation, which gives a more or less significant role to local communities in the development of zoning, constitutes one of the explanations of these differences. Equally to be taken into consideration is the political culture as well as risk philosophy, which associates the present and inherited political, social, economic and cultural contexts as well as the dominant representations in the administrations

Full textOur research explores educational practices, in the management of conflict, violence and incivility situations among pupils, in order to understand their impact on the social development of the individual. We assume that these practices arise from pedagogy of non-violence and act by limiting any form of physical interaction between students, whether it is a playful interaction or an intentional assault.This study, carried out in three primary schools in Aosta Valley, combines a quantitative and qualitative methodology : questionnaires (472 families); explicitation (Vermersch, 2006) and collective interviews (49 teachers) ; observations in schools (24 teachers, 194 pupils).First, our results focus on the modeling of these educational practices, confronted to the multi-dimensionality and variety of aggressive manifestations and to the involvement of the teacher subjectivity in their appreciation. Secondly, they show a distinctive educational action according to whether the interaction is verbal - managed mainly by dialogical mediation - or physical - engaging more directive strategies. It is in this way that the regulation of fighting games shows this attention to the safety of pupils and a pacify human relations intent. Our reflection question teachers' training and suggest prospects for future research. In this context, the management of social interactions in schools is a socially vivid question (Legardez and Simonneaux, 2006), because it raises in society, in reference knowledge and in school knowledge

Full textWine and wineyards stand nowadays as a significant wealth for a number of countries. While retaining their properties as production space, vine-growing regions are developing adaptation strategies to market globalisation and to the ever more versatile consumer expectations. Yet, due to the corresponding specific orographic conditions in steep slope and mountain regions, actor's relative leeway is reducing ,. Comparatively to plain wine-growing, a large part of their production costs often remains indeed incompressible. On the other hand, these vine-growing landscape take advantage of such harsh conditions in terms of international recognition, as images of social construct and environmental equilibrium. The work presented here emerged as a response to this steep slope vineyards' sensitivity. This investigation relies on two study areas: the Côte Vermeille vineyards in France, and the val di Cembra in Italy. Our approach focuses on the opportunities granted by agent-based empirical modelling methods, in order to put forward a renewed look at the role of society-environment interactions in the sustainability and development of territories subject to constraints. Using an exploratory and incremental method, three significant issues of steep slope vine-growing regions have been addressed, thanks to a constellation of multi-agent models, derived from questioning actors of this sector. The first considers the market's impacts on the small-scale plant cover dynamics. The second issue focuses on meso-scale plant cover dynamics and questions the definition of simple socio-economic ruleset, within the frame of land property dynamics and applied to the scale of a few municipalities. The last section of this work is dedicated to some descriptive phenomena within a large scale. Thus, the sum of these reflections leads us to exploit co-designed modelling with the stakeholders in order to propose a global prospective vision for mountain and steep slope regions. This prospective approach is conducted in association with some of the players in the sector, thus allowing us to delineate the structural variables linked to steep slope vineyards' systems in agreement with their experience. Based on these delineated variables, four prospective scenarii are put forward for the steep slope vine-growing activity

Full textOne of the elements that characterize the process of economic globalization is the development of freight logistics as a strategic sector to determine the competitive advantages of urban regions. This study analyses the link between market changes, state reorganisation and the development of urban logistics infrastructures. The entry point for this analysis is the study of the policies that have produced and governed over time two European wholesale food markets: the MIN Rungis and the General Markets of Milan. Their comparison explains how structural changes have influenced their evolution and why today two wholesale markets, which were initially very similar from an analytical point of view, have nowadays two very different policy outcomes. Using a theoretical and methodological approach based on the contributions of historical neo-institutionalism and urban political economy, the role of interest groups, political actors, political rules and the market is clarified. These factors are interrelated to explain the policy conversion observed for MIN Rungis and the policy drift in the case of Milan. Finally, the policy processes that led to these results are explained in terms of causal mechanisms. The analysis highlights the central role of local policy rules and political context in determining the ability of local interest groups to influence decision-making processes, and the effect of their mobilization on the development of these urban infrastructures

Full textThis PhD thesis is focused on the evaluation of the effects of single and multigrade classes on pupils' learning and motivation, studying the role of motivation on students' outcomes. We have analysed the Aosta Valley case, an autonomous region of Italy with a strong tradition of multigrade classes due to its mountainous territory and its tradition of village schooling dating back to the 19th century (the so-called hamlet schools). Being Aosta Valley a bilingual region (Italian and French), the survey tool is composed of standardized evaluation tests in French on two core subjects, French and mathematics. The choice of the French language allows us to extend the focus on the results produced by the French education, a real peculiarity of the Aosta Valley school system. The study has a longitudinal structure, it was set to pass standardized tests to the same population of pupils in two different school years (2011/12 and 2012/13), in the passage from the last year of primary school to the first year of middle school-stage 3. In each school year two tests are to be passed, a pretest at the beginning of the year and a post-test at the end of the year. We have chosen the passage from the primary school to middle school-stage 3 so that we can study the short and the long term effects of the attending single or multigrade classes. Multigrade classes are an instrument to protect small communities but what are their effects on students? Through multi-level analyses, we have modelled differences between individuals and between classes. Following a dynamic approach, we have traced the evolutionary trajectory of the motivational dispositions and performance through the longitudinal growth models and we have examined the evolution over the time, which results were in a linear course. The comparison shows that at primary school, multigrade class students get better results in all events. At middle school, the results of the two groups come closer and the typology of primary school class has a negligible effect on the students. As to students' motivation ("Self-Determination Theory" (Deci & Ryan, 1985) according to the organization of the class, the results have brought to light that the regulation identified is the motivational disposition which seems to best correspond to the pupils at primary school as well as at middle school. This result is common to both classes of students. The development of the various motivational dispositions does not depend on the organization of the class. As to the effect of motivation on student outcomes, external regulation negatively influences school performances and the identified regulation has a positive and remarkable effect on French learning. By following the "Achievement goal theory" (Elliot & Dweck, 2005) we examined the effect of pedagogical practices and the motivational environment perceived by students on academic achievement. Contradictory results were found at different levels. Context variables appear to produce positive and negative results at the same time in relation to the subjects; the effect of the variables examined varies depending on the degree of education with differences between primary school and middle school and the level of motivation. Therefore, we can not draw absolute conclusions

Full textIn the narrow area of Valle d'Aosta, in Italy, two different approaches to pilgrimage can be found: one is represented by local pilgrimages, attended by a community of devout constantly in touch with each other, the other one being international pilgrimages, composed by followers who meet for the first time when they board the bus that will take them towards the holy place. Among the latter, one of the most frequented lately is the one that brings the pilgrims towards the Virgin of Medjugorje, in Bosnia-Herzegovina. What are the differences we can find between these two different peregrinations ? Are the members of local pilgrimages the same who decide to meet a “foreign” Virgin Mary, which has not even been yet acknowledged by the Church ? Can this second devotion offer something more than the numerous places of worship located in the region ? Through the instruments of ethnographical analysis, Nora Demarchi tries to answer those questions, illustrating how the study of the religious pilgrimage phenomena can say something more about society in a broader sense

The family of Brassicaceae plays an important role in Brazilian horticulture, having the species of cabbage, broccoli, and cauliflower the higher at consumption by the population. The aim of this study was to evaluate the use of high dilutions preparation for production under organic system of cabbage, broccoli, and cauliflower. Experiments were conducted in the greenhouse and under fields conditions. For greenhouse, the experimental design was completely randomized. For field experiments the experiment design were randomized complete block design. Both designs were with four replications and nine treatments. For greenhouse, trays had of 64 plants from with 20 plant were taken as experiment plot. Each plot consisted of 20 plants for each specie and repetition. Ten plants distributed in double line was the plot in the field experiment. The treatments consisted of homeopathic preparations of Arnica montana, Silicea terra, Carbo vegetabilis, and Sulphur at 6CH and 30CH. For control water was used. The experiments were conducted separately for each species. In greenhouse, the treatments were applied every four days until transplanting (seven applications). Under field conditions, the treatments were applied every fifteen days until harvest (four applications). Shoot fresh mass, root fresh mass, shoot dry mass, root dry mass, plant height, root length, and stem diameter for seedlings were evaluated. For field, shape index, rate of the length of the heart and longitudinal diameter (C / D) for cabbage field crop were evaluated. Plant height and stem diameter for broccoli were evaluated. Fresh mass and dry mass of cabbage heads and broccoli inflorescences were also evaluated. The disease incidence of black-rot and alternaria and the occurrence of cabbage aphid and damage caused by diamondback moth were evaluated. The preparations of Sulphur at 6CH increased the shoot dry mass, root dry mass for seedlings and production of cabbage heads. The preparations of Sulphur at 6CH increased the plant height, root length, and stem diameter for broccoli. Silicea terra at 30CH increased the fresh mass and dry mass of broccoli inflorescences. Sulphur at 6CH reduced the aphid occurrence for cabbage and diamondback moth damage percentage for broccoli. Sulphur at 30CH increased the shoot dry mass, root dry mass, and height for cabbage seedlings. Sulphur at 30CH increased the shoot dry mass, root dry mass, and stem diameter. Aphid occurrence, alternaria; and black rot incidence were decreased when broccoli was treated by Sulphur at 30CH. Silicea terra at 30CH increased the shoot dry mass, root dry mass, height plant, stem diameter, and root length for broccoli seedlings. Silicea terra at 30CH also increased the shoot dry mass, root dry mass, and stem diameter of cauliflower seedlings. The preparations of Silicea terra at 30CH increased the production of cabbage heads and reduced the black rot incidence for broccoli. The high dilution preparations have influence on the yield and management of pests and diseases of cabbage, broccoli, and cauliflower growth under organic production system
A família Brassicaceae ocupa papel destacado na olericultura brasileira, sendo as espécies de repolho, brócolis e couve-flor de maior consumo pela população. O objetivo deste trabalho foi avaliar o uso de preparados em altas diluições na produção em sistemas orgânicos de repolho, brócolis e couve-flor. Os experimentos com repolho, brócolis e couve-flor foram realizados em casa de vegetação e a campo na Epagri e na comunidade de Pedras Brancas, Lages, SC. O delineamento foi inteiramente casualizado em casa de vegetação e de blocos ao acaso, a campo. Ambos os delineamentos foram com quatro repetições e nove tratamentos. Em casa de vegetação, as bandejas foram constituídas por 64 plantas por parcela para cada hortaliça. A parcela útil foi composta por 20 plantas centrais das 64 plantas da parcela. A campo, cada parcela de repolho e brócolis foi constituída por 10 plantas distribuídas em dupla linha. Os tratamentos utilizados, tanto para casa de vegetação como para campo, foram os preparados homeopáticos de Arnica montana, Silicea terra, Carbo vegetabilis e Sulphur na 6CH e 30CH; e água como testemunha. Os experimentos foram delineados em separado para cada uma das hortaliças e conduzidos em duplo cego. Em casa de vegetação, os tratamentos foram aplicados a cada quatro dias, sobre as mudas até seu transplante, totalizando sete aplicações. No campo, após o transplante das mudas, os tratamentos foram aplicados a cada quinze dias, sobre as plantas até sua colheita, totalizando quatro aplicações. Foram avaliadas, em mudas, características de massa fresca e seca da parte aérea e radicular, altura da planta, comprimento de raiz e diâmetro do caule. A campo, no momento da colheita, foram avaliadas as características de índice de formato, a relação do comprimento do coração e do diâmetro longitudinal (C/D) para repolho; para o brócolis, altura da planta e diâmetro do caule. Massa fresca e seca das cabeças em repolho e das inflorescências de brócolis também foram avaliadas. A incidência de alternariose e podridão-negra, bem como, a ocorrência do pulgão e dos danos da traça-das-crucíferas foram avaliadas em repolho e brócolis. O preparado de Sulphur na 6CH aumentou a massa seca da parte aérea e radicular em mudas e a produção de cabeças de repolho, bem como o incremento da massa fresca e seca das inflorescências em brócolis. O preparado de Sulphur na 6CH reduziu também a ocorrência do pulgão em plantas de repolho e brócolis e o percentual de danos da traça-das-crucíferas em brócolis.O preparado de Sulphur na 30CH aumentou a massa seca da parte aérea e radicular e altura da plântula em mudas de repolho, bem como o incremento da massa seca da parte aérea e radicular e diâmetro do caule em mudas de couve-flor. A ocorrência do pulgão, a incidência da alternariose e a podridão-negra foram reduzidas quando tratadas como o preparado de Sulphur na 30CH em plantas de brócolis. O preparado de Silicea terra na 30CH incrementou a massa seca da parte aérea e radicular, altura da plântula, comprimento de raiz e diâmetro do caule, em mudas de brócolis, bem como a massa seca da parte aérea e radicular e diâmetro do caule em mudas de couve-flor. O preparado de Silicea terra na 30CH aumentou a produção de cabeças de repolho e reduziu a incidência da podridão-negra em plantas de brócolis. Conclui- se que preparados em altas diluições influenciam na produção e no manejo de insetos-praga e doenças de plantas de repolho, brócolis e couve-flor, sob sistema orgânico

This iconographical fact stands out in the occidental painting (Italy excepted) around the "Virgin in the church" of Jan van Eyck (Berlin, Gemäldegalerie), dated circa 1430. This study is organized in three parts. The two first are chronological : before 1430, the time of "genesis" during which the roots of the representation of secred space is studied, then after 1430, with the study of the typology of the formal vocabulary of the representation of the sacred space and the question of the models of theses pictures. The last time of the thesis process with what these representations can tell about the spirituality of the late middle ages. It appears that they are some kind of illustrated guide of the spirituality and the institutionnal religion of the time

Resumo: As propriedades químicas, físicas, nutricionais, sensoriais e a vida-de-prateleira de dois cultivares de brócolis (Brassica oleraceae var. itálica ramoso-Piracicaba e baron) foram determinadas e comparadas. Análise Descritiva Quantitativa foí realizada e uma lista de 22 termos descrevendo os atributos de aparência, aroma, sabor e textura dos produtos crus e cozidos foram gerados. Nove provadores treinados utilizaram-se dos atributos descritivos para monitorar as alterações no perfil sensorial dos dois cultivares durante o armazenamento a 5°C A aceitação e atitude de compra dos consumidores tanto dos produtos crus como cozidos foram avaliadas por escalas hedônica e de atitude, tendo sido usadas para definir a vida-de-prateleira a 5 e 25°C. Alterações dos teores de vitamina C, p-caroteno. clorofila a e b, da enzima peroxidase, dos parâmetros de cor í.*, a*, b* e de textura foram também investigadas . Estudos relacionando a perda de vitaminas em função da cocção dos brócolis e também relacionando as medidas sensoriais e medidas instrumentais de cor e textura foram realizados. Os dados foram analisados por análise uni variada e multi-variada. No tempo inicial de estocagem, o cultivar ramoso-Piracicaba mostrou maior intensidade de cor verde, maior tamanho dos botões florais, maior intensidade de aroma característico, aroma de mato úmido, sabor característico, sabor residual, fibrosidade e suculência oral. O cultivar baron caracterizou-se, no tempo inicial, pela maior compactação dos botões florais, maior intensidade do aroma sulfuroso, gosto amargo, gosto adocicado, sabor de passado, maciez oral e firmeza manual. Os dois cultivares foram igualmente bem aceitos pelos consumidores. O cultivar ramoso-Piracicaba, no tempo inicial de armazenamento a 5°C: apresentou valores significativamente (p<0,05) superiores de p-caroteno: clorofilas a e b, da enzima peroxidase e valor inferior de vitamina C em relação ao cultivar baron. Ambos cultivares cozidos (l00g) atendem às necessidades diárias de vitaminas A e C de um individuo adulto normal. Para os parâmetros de cor, não houve diferença significativa (p<0,05) entre os dois cultivares no tempo inicial de armazenamento, sendo que para textura instrumental o cultivar baron apresentou uma diferença significativamente (p<0,05) maior na firmeza em relação ao cultivar ramoso-Piracicaba. A análise multi-variada sugere que a presença de botões florais amarelos, aroma de passado, aroma sulfuroso, gosto amargo e sabor residual caracterizam o fim da vida-de-prateleira para o cultivar ramoso-Piracicaba armazenado a S^C. Para o cultivar baron, os atributos presença de botões florais amarelos, aroma de passado e sabor residual, caracterizam o fim de vida-de-prateleira a 5°C. Os teores de clorofila a e b e de vitamina C apresentaram uma perda significativa (p<0,05) após 21 e 24 dias de armazenamento a 5°C dos brocolis cv. ramoso-Piracicaba e baron, respectivamente. O cultivar ramoso-Piracicaba apresentou um vaior nutricional superior em relação a vitamina A ao término da vida-de-prateleira. A atividade da enzima peroxidase, os parâmetros de cor; L*,a*, b* e de textura sofreram alterações nos doiscultivares de brocolis durante a vida-de-prateleira. Na temperatura de 25°C, a vida-de-prateleira de ambos cultivares de brocolis variou entre 1 e 2 dias. Os resultados sugerem que o brócolicultivar baron terá aceitação junto ao mercado nacional, apresentando um maior tempo de vida-de-prateleira em relação ao cultivar ramoso-Piracicaba, quando armazenado a 5°C
Abstract: The chemical, physical, nutritional and sensory profiles of broccoli (Brassica okraceae van italic ramoso-Piracicaba e baron) were determined and compared. A Quantitative Descriptive Analysis was applied and a sensory ballot including 22 terms describing the attributes of appearance, aroma, flavor and texture of the raw and cooked samples was produced. Nine trained panelists used the descriptive ballot to monitor changes occuring in the sensory profiles of the cultivars during storage at 5CC. Overall acceptability and consumer buying attitude towards the raw and cooked samples were evaluated on hedonic and attitude scales and the results used to define the shelf-life of the vegetable at 5 and 25°C. Changes in the vitamin C. p-carotene, chlorophyll a and b contents, peroxidase activity, instrumental color (L*. a*, b*) and texture measurements were also investigated. Studies of the loss of vitamins as s function of cooVms and the correlations between sensory and instrumental color and texture measurements were carried out. The data were analyzed by Univariate and Multivariate statistical techniques. At zero time, the cultivar ramoso-Piracicaba showed higher intensities of green-grassy aroma, sulfur and residual flavors, fibers and juiciness. The cultivar baron was characterized by a bitter-sweet taste and softness. The cultivars were equally well accept by consumers. The cultivar ramoso- Piracicaba presented significantly higher values (p<0;05) of ^-carotene, chlorophyll a and b contents and peroxidase activity than the cultivar baron at zero time and significantly lower values (p<0.05) of vitamin C. Both cooked samples (100 g) attended the individual requirements for adult men for vitamins A and C. There was no significant difference (p<0,05) in color measurements at zero time. However, the cultivar baron exhibited significantly higher value (p<0:05) for texture than the cultivar ramoso-Piracicaba At a storage temperature of 5°C the shelf-life of the cultivar ramoso-Piracicaba was between 14 and 21 days while that of the cultivar baron was between 21 and 24 days. The Multivariate Analysis suggested that the presence of yellow florets, state and sulfur aromas, bitter taste and residual flavor characterized the end point me shelf-life for the cultivar ramoso-Piracicaba. For the cultivar baron, the Multivariate Analysis suggested that the presence of yellow florets, sulfur aroma and residual flavor characterized the end point for the shelf-life at 5°C. The chlorophyll a and b and vitamin C contents presented significant losses (p<0,05) after 21 and 24 days at the storage temperature of 5°C for broccolis of the cultivars ramoso-Piracicaba and baron, respectively. At the end of the shelf-life, the cultivar ramoso-Piracicaba presented a higher nutritional content with respect to vitamin A, During the shelf-life, changes in the peroxidase activity, color and texture measurements were observed in both cultivars. At a storage temperature of 25CC, the shelf-life of both broccoli culiivars was between 1 and 2 days. The results suggest that the broccoli cultivar baron would be acceptable on the national market, presenting a longer shelf-life than the cultivar ramoso-Piracicaba at a storage temperature of 5°C

Full textEpidemiological studies have shown that a diet rich in Brassica vegetables is associated with a decreasing risk of incidence of some types of cancer. These health promoting effects are most likely due to the breakdown products of glucosinolates formed by the action of myrosinase which catalyzes the hydrolysis of glucosinolates, found in Brassica plants. Industrial processing of food can affect the content, composition, activity and bioavailability of glucosinolates breakdown products, due to cell lysis or glucosinolates and myrosinase degradation. The aim of this thesis is to investigate the combined effect of moisture content (water activity) and temperature on myrosinase stability. The study was conducted in batches of freeze dried broccoli with different moisture contents. These batches of broccoli were then heated at different time/temperature combinations and myrosinase activity was analysed, the obtained results from these measurements were kinetically modeled. Myrosinase was shown to be much less thermo stable in higher moisture content samples than in the driest samples. Thermal stability (30-80 ºC) of myrosinase was described by a first order kinetic model. Besides showing higher myrosinase thermal stability, driest samples show lower activation energies, i.e, lower increase of degradation rate when temperature increases.

RESUMO Este trabalho teve como objetivo avaliar o desempenho operacional e a viabilidade econômica da operação de transplante de mudas de brócolis semimecanizado e manual em duas velocidades de deslocamento V1 e V2 (0,8 e 1,1 km h-1), comparando dois tipos de preparo de solo, preparo convencional e plantio direto. Foi utilizado para a realização do transplante o conjunto mecanizado composto pelo trator New Holland, modelo TL65® e a transplantadora Fedele Mario®. O delineamento experimental constituiu-se em blocos casualizados com fatorial duplo 3x2, no esquema de parcelas subdivididas, constituindo 2 parcelas de preparo de solo, convencional e direto, com três subparcelas, caracterizando os transplantes realizados de forma manual, semimecanizado em V1 e semimecanizado em V2. Foram abordados os seguintes tratamentos: transplante manual em plantio direto, transplante manual em plantio convencional, transplante semimecanizado com velocidade 1 em plantio direto, transplante semimecanizado com velocidade 1 em plantio convencional, transplante semimecanizado com velocidade 2 em plantio direto e transplante semimecanizado com velocidade 2 em plantio convencional. A área de plantio foi previamente semeada com milho (Zea mays) e manejada com triturador de palha para constituir os tratamentos em plantio direto. Para os tratamentos em plantio convencional foi realizada operações com a passagem do rotoencanteirador. As avaliações realizadas foram: desempenho operacional e econômico do transplante nos diferentes sistemas de preparo de solo e ainda a determinação da quantidade mínima de mudas a qual a máquina passa a ser vantajosa, diâmetro e peso de cabeça do brócolis e a produtividade. Os resultados demonstraram que o tipo de plantio, convencional ou direto não interferiu na produtividade do brócolis, assim como o transplante manual ou semimecanizado. Em média o transplante manual apresentou rendimento de 11 bandejas a menos por hora que o transplante semimecanizado na menor velocidade e 24 bandejas a menos na maior velocidade. Houve maior necessidade de repasse de mudas nos tratamentos com plantio direto em relação ao preparo convencional. O tratamento no sistema de plantio direto na maior velocidade de deslocamento apresentou menor custo operacional com R$586,00 por hectare. O número mínimo de mudas para o que o a troca de tecnologia (passar de plantio manual para mecanizado) seja economicamente vantajosa é de 217.080 mudas ao mês.
The operational development and the economic viability of the transplant of broccoli seedling, both semi-mechanized and manual in two dislocation speeds (1stand 2nd gear of the tractor) were evaluated, comparing different kinds of soil preparation, namely conventional and no tillage. The mechanized group composed by both a TL65® New Holland 4x2 tractor with 65 nominal power, and an Italian Fedele Mario MAX® transplanter were used for the transplantation. The experimental design was at random with the 3x2+2 factorial, corresponding to the two dislocation speeds of the transplanter in both soils and also the manual transplant in both soil prepare. The following treatments were examined: manual transplant in no tillage, manual transplant in conventional prepare, semi-mechanized transplant with speed 1 in no tillage, semi-mechanized transplant with speed 1 in conventional prepare, semi-mechanized transplant with speed 2 in no tillage, semi-mechanized transplant with speed 2 in conventional prepare. The planted area was previously sown with corn (Zea mays) and prepared with straw shredder to comprise the treatments in no tillage. Operations with rotoencanteirador were performed for the treatments in conventional prepare. The evaluations were on amount and percentage of straw in the soil, operational and economic development of the transplant in different systems of soil prepares and the determination of the number of seedling from which the machine begins to be advantageous. The agronomic evaluations were on the broccoli head diameter and its productivity. The results showed that conventional or direct tillage did not interfere with broccoli productivity, as did manual or semi-mechanized transplants. On average, the manual transplant presented yield of 11 trays less per hour than the semi-mechanized transplant at the lowest speed and 24 trays at less speed. There was greater need of transfer of seedlings in no-tillage compared to conventional ones. No-tillage at the highest displacement speed had a lower operating cost of R $ 586.00 per hectare. The minimum number of seedlings for which the exchange of technology is economically advantageous is 217,080 seedlings per month.

Full textSince the second half of the nineteenth century, many Italians immigrated into the Var department, geographically very close to the Italian peninsula. Yet the Var area hasn’t attracted the same interest of its neighbors, the departments of Bouches-du-Rhône and Alpes-Maritimes, among historians. This observation led us to study the transalpine immigration into the Var. Mostly developed from first-hand sources that did a lot of researching in the French Local Historical Archives, this thesis characterizes the Italian presence in the Var, both from a demographic, socio economic and memorial point of view. In other words, it reveals the extent of the Italian exodus into the Var department, the profile of immigrants and their geographical distribution in the area. This work also shows the impact that the massive arrival of transalpine immigrants had on the Var economy and defines the sectors in which they were employed. Finally, it treats the cultural aspects with help from the memories of the Italian descendants settled in the Var who were able to tell the story of their ancestors. The study will also look into the emigrational path taken by the transalpine Var immigrants individually without going into all the usual clichés, concerning the uprooting, adaptation, discrimination, or lastly the transmission of Italian origins. This study has used a positive and constructive approach ; it has taken into account a lot of different sources which manages to tell the Italian immigration in the most realistic way

This study aimed to evaluate the effect of mesh termorefletora, diffuser and shading in the development, production and quality of broccoli. An experiment was conducted in experimental station, Federal University of Viçosa, Viçosa, Minas Gerais, during 01/18/2012 to 05/09/2012 (summer / fall). Treatments, five in number, were made up of two meshes termorrefletoras (Aluminet®30% and Aluminet®40%), a mesh diffuser (Diffuser ChomatiNet®30%), a mesh shading (Sombrite®60%) and control (the open). The meshes were installed in closed cages, with dimensions of 2 x 3 x 11 m (height x width x length). We used a randomized complete block design with four replications. During the cycle, at 30, 38, 48, 62 and 72 days after transplantation in four plants per replication were evaluated: diameter and stem length, number of leaves / plant; SPAD and leaf area index. When the harvest, at the six plants / replicate, were evaluated: head diameter; mass of fresh and dry weights of head, stem, petiole, blade and total length and width of leaves intermediate; petiole length and coloring Head (L*, a*, b*, c* and h). It was observed in cultures under meshes, reduction of the maximum temperature, the SPAD leaves, the dry mass of limbo, head and increased rates of green heads, length of stem and petiole and mass of fresh petiole, stem and all. The cultivation under mesh Sombrite®60% resulted in less mass productivity of fresh upside compared to cultivation in the open. Growing broccoli in The thermo Aluminet®30% and Aluminet®40%, the mesh diffuser Diffuser ChomatiNet®30% and mesh Sombrite®60% during the summer-autumn in Viçosa-MG is not feasible, because it changes the morphology of the plants of broccoli, increasing the fresh weight of the non-commercial parts like stems and petioles, without providing increased yield upside.
Objetivou-se avaliar o efeito de malhas termorefletora, difusora e sombrite no desenvolvimento, produtividade e qualidade do brócolis. Foi conduzido um experimento na Horta da Universidade Federal de Viçosa, Viçosa, Minas Gerias, no período 18/01/2012 a 09/05/2012 (verão/outono). Os tratamentos, em número de cinco, foram constituídos de duas malhas termorrefletoras (Aluminet®30% e Aluminet®40%), uma malha difusora (ChomatiNet Difusor®30%), uma malha sombrite (Sombrite®60%) e o controle (a céu aberto). As malhas foram instaladas em telados fechados com dimensões de 2 x 3 x 11 m (altura x largura x comprimento). Utilizou-se o delineamento experimental de blocos casualizados, com quatro repetições. Durante o ciclo, aos 30, 38, 48, 62 e 72 dias após transplante, em quatro plantas por repetição, avaliaram-se: diâmetro e comprimento do caule; número de folhas/planta; índice SPAD e índice de área foliar. Quando no ponto de colheita, em seis plantas/repetição, avaliaram-se: diâmetro de cabeça; massa de matérias fresca e seca de cabeça, caule, pecíolo, limbo e total; comprimento e largura das folhas intermediarias; comprimento de pecíolo e coloração de cabeça (L*, a*, b*, c* e h). Observou-se, nos cultivos sob malhas, redução da temperatura máxima, do índice SPAD das folhas, da massa de matéria seca de limbo e de cabeça e aumento do índice de coloração verde das cabeças, do comprimento de caule e de pecíolo e da massa de matéria fresca de pecíolo, caule e total. O cultivo sob malha Sombrite® 60% proporcionou menor produtividade de massa de matéria fresca de cabeça comparada ao cultivo a céu aberto. O cultivo de brócolis sob as malhas termorrefletoras Aluminet®30% e Aluminet®40%, a malha difusora ChomatiNet Difusor®30% e a malha Sombrite®60% no período de verão-outono na região de Viçosa-MG não é viável, pois modifica a morfologia das plantas de brócolis, aumentando a massa de matéria fresca das partes não comerciais como caule e pecíolo, sem proporcionar aumento de produtividade de cabeça.

Full textDurante la temporada agrícola 2009 – 2010 se realizó un estudio en el Campus Antumapu de la Facultad de Ciencias Agronómicas de la Universidad de Chile, para determinar el efecto de la aplicación de diferentes herbicidas sobre el rendimiento de brócoli (Brassica oleracea var. italica Plenck.). El cultivar utilizado correspondió a Legacy. Los herbicidas utilizados fueron Oxyfluorfen, Pendimethalin, Clopyralid y Picloram en dosis de 0,6 - 1,5 – 0,7 y 0,2 L·ha-1 de ingrediente activo, más un testigo sin aplicación. Se dispusieron los cinco tratamientos en un diseño de bloques completos al azar con cinco repeticiones. Se evaluaron los días grado en las etapas fenológicas de inicio de formación de pella y cosecha de pella central. Se verificó presencia de fitotoxicidad luego de aplicados los herbicidas. Semanalmente, se evaluó altura de plantas y número de hojas mayores a un centímetro. Se realizó además una evaluación de densidad de malezas a los 15, 30 y 75 días y dominancia de malezas solo a los 75 días a través de un cuadrante de 25 cm de lado. A la cosecha se evaluó diámetro, peso y color de la inflorescencia como también el diámetro de la zona de corte del tallo de la planta. No se encontraron brotes laterales en las mediciones. El parámetro días grado solo mostró diferencias significativas entre Picloram y el resto de los tratamientos a la cosecha de pella central. Picloram también provocó fitotoxicidad leve en el follaje del cultivo. Los parámetros altura y número de hojas no presentaron diferencias estadísticas significativas. La densidad de malezas fue controlada en mejor forma por el tratamiento Oxyfluorfen y Pendimethalin, siendo Urtica urens la especie dominante. A la cosecha, los valores más bajos de diámetro, peso y color de la inflorescencia como también el diámetro de la zona de corte del tallo de la planta se observaron en el tratamiento con Picloram y los más altos valores en el tratamiento con Oxyfluorfen. Este último logró el mayor rendimiento total y comercial, sin ser en este caso diferente estadísticamente al resto de los tratamientos pero si de Picloram.
During the 2009-2010 agricultural season, a study was conducted to determine the effect of the application of different herbicides on the yield of broccoli (Brassica oleracea var. italica Plenck, .cv. Legacy) at the Antumapu Experimental Station, Faculty of Agricultural Sciences, University of Chile. The herbicides used were Oxyfluorfen, Pendimethalin, Clopyralid and Picloram in doses of 0.6, 1.5, 0.7 and 0.2 L/ha-1 a.i. and a control without application. Five treatments were arranged in a randomized complete block design with five replications. Degree-days were evaluated at the beginning of the central floret formation and at central floret harvesting. Phytotoxicity presence was verified after applying the herbicides. Plant height and number of leaves greater than one centimeter were evaluated weekly. Weed density at 15, 30, 75 days and weed dominance only at 75 days were also evaluated using a 25 cm2 quadrant. At harvest inflorescence diameter, weight and color as well as the diameter of the cutting area of the plant stem were determined. No side shoots were found in these measurements. The parameter degree-days only showed significant differences between Picloram and the rest of the treatments at harvest in the central floret. Picloram also caused slight phytotoxicity on the crop foliage. The parameters height and number of leaves showed no significant statistical differences. The best control of weed density was performed by the treatments Oxyfluorfen and Pendimethalin, Urtica urens being the dominant species. At harvest, the lowest values of diameter, weight and color of the inflorescences as well as the diameter of the cutting area of the plant stem were observed in the treatment with Picloram and the highest values in the treatment with Oxyfluorfen. The latter also had the greatest total and commercial yield, not being, in this case, statistically different to the other treatments excepting Picloram.
