Abstract:
The purpose of this research was to observe the effects of threadfin breams surimi (Nemiptarus nematophorus) and mussel (Pilsbryoconcha exilis) to physical, chemical and sensory characteristics of nugget. This research used randomized block design (RBD) consisted of one factor treatment and three replications. Factor treatment consisted of combination ratio threadfin breams surimi and mussel 100% : 0%, 75% : 25%, 50% : 50%, 25% : 75%, 0% : 100%. The variables observed were physical characteristics (elasticity), chemical characteristics (moisture content, ash, protein, fat, carbohydrate, and iron) and sensory analysis on appereance, flavour, taste and texture of the final products. Different combinations of threadfin breams surimi and mussel had significant effect on elasticity (222.53 gf, 278.33 gf, 300.66 gf, 312.13 gf, 452.86 gf), ash content (3.26%, 2.51%, 2.23%, 1.63%, 1.45%), protein content (8.27%, 12.11%, 14.8%, 17.14%, 20.73%), carbohydrate content (17.32%, 14.34%, 11.11%, 8.42%, 3.5%), and iron (23.61%, 18.56%, 12.77%, 7.24%, 1.54%). Based on the results, the greater addition of surimi concentration caused the increasing value of elasticity, protein, and water content. While the greater addition of mussel concentration resulted on the increased value of ash, fat and iron. This research showed that the combination of 75% threadfin breams surimi and 25% mussel produced on nugget with the best characteristics.

The purpose of this research was to physical characteristics, chemical characteristics and sensory analysis burger blood clam. The Research was conducted in January until March 2017. Result of this research showed difference combinations blood clam and threadfin breams surimi had significantly effect on moisture content (68.15%, 69.85%, 70.84%, 71.14%), ash content (2.75%, 2.47%, 2.1%, 1.9%), protein content (14.72%, 15.43%, 18.18%, 19.44%) and fat content (5.38%, 3.78%, 2.51%, 1.6%) and elasticity (30.66 gf, 35.73 gf, 40.06 gf, 41.73 gf), The result of sensory analysis had significantly effect on appearance, texture, colour and flavor. The best treatment from the physical and sensory analysis was treatment A3 with combination blood clam and threadfin breams surimi 30% : 60%.

Abstract:
The third stage larvae (L3) of <i>Anisakis typica</i> were detected in 2 species of threadfin bream, <i>Nemipterus hexodon</i> and <i>N. japonicus</i>, from the Gulf of Thailand, and were morphologically and molecularly characterized. Total 100 threadfin breams, 50 <i>Nemipterus hexodon</i> and 50 <i>N. japonicus</i>, were examined with naked eyes after the opening of abdominal cavity with scissors. Almost all infected larvae remained alive and active even the fish were transported for 1-2 days. Anisakid larvae were exclusively distributed in the body cavity and rarely in the liver. The prevalence of <i>A. typica</i> L3 were 68.0% and 60.0% in <i>N. hexodon</i> and <i>N. japonicus</i> and their infection intensities were 3.5 and 4.2 per fish infected each. Morphological and morphometric analysis were performed by viewing specimens under both a light microscope and a scanning electron microscope. Interestingly, the protruded mucron of <i>Anisakis typica</i> under SEM showed a distinct cylindrical shape that differed from the cone shape of <i>A. simplex</i>. The protruded mucron could be used to identify <i>A. typica</i> L3 larvae in the future. A comparison of the ITS1-5.8S-ITS2 rDNA nucleotide sequences of these species revealed high blast scores with <i>A. typica</i>. Conclusively, it was confirmed that <i>A. typica</i> L3 are prevalent in threadfin breams from the Gulf of Thailand, and their morphological and molecular characters are something different from those of other anisakid larvae, including A. simplex and <i>A. pegreffii</i>.

Abstract:
Cytochrome c oxidase-1 gene sequences of mitochondrial genome were analyzed for species identification and phylogenetic relationship among the commercially important Nemipterus species. Sequence analysis of COI gene clearly indicated that all the nine fish species fell into distinct clads, which are genetically distant from each other and exhibited identical phylogenetic reservation. All the COI gene sequences provide sufficient phylogenetic information and evolutionary relationship to distinguish the nine Nemipterus species unambiguously. As per the neighbour-joining (NJ) and maximum likelihood (ML) trees, all the nine species are genetically distant from each other and exhibited identical phylogenetic reservation. Based on the NJ and ML phylogenetic trees N. mesoprion, N. zysron, N. hexodon, N. nematophorus, N. virgatus and N. bipunctatus were closely related with high bootstrap value (97). The overall mean Kimura two parameter (K2P) distances between the nine species was 0.109. The intra species K2P distance was high in N. japonicus (0.069) followed by N. peronii (0.050) and N. mesoprion (0.002). This study proves the use of mtDNA COI gene sequence based approach is an alternative tool for identifying fish species at a faster pace.

Abstract Belitung Regency is an administrative area in the Bangka Belitung Islands Province. Handline is one of the most popular fishing gear in Belitung Island. However, the production value of handline fishing gear has decreased recently. This decrease was caused by the lack of fishing technology in handline fishing which potentially threatened the sustainability of small-scale fishing industry in the region. The use of portable Fish Aggregating Devices (FADs) technology was expected to increase the productivity of handline fishing gear. This study aims to compare the composition of handline catch, productivity, and fishers total income using portable FADs and without FADs. Sixteen experimental fishing trips were conducted to collect data. The results showed that the dominant catch of handline using portable FADs was threadfin breams (Nemipterus hexodon) (50.7%), greater lizardfish (Saurida tumbil) (27.4%), yellow stripe threadfin bream (Pentapodus aureofasciatus) (10.7%), grouper (Epinephelus bleeker) (4.6%), monocle bream (Scolopsis sp.) (4.2%), yellow jack (Caranx bartholomei) (2.1%), and mackerel (Acanthocybium solandri) (0.2%). The number of catches using portable FADs was 521 of fish (37%), while the one without FADs was 888 of fish (63%). However, based on its weight, the operation using portable FADs resulted in 84.4 kg (58%) and those without FADs was 61.6 kg (41%). The productivity of handline fishing with portable FADs was higher, 1.32 kg / trip, compared to its counterpart which was 0.91 kg / trip. Based on the Kruskal-Wallis test, it showed that the use of portable FADs has a significant effect on handline fishing. Additionally, the total income of fishermen with portable FADs was higher than those without portable FADs.

The family Nemipteridae (threadfin breams and relatives) contains five genera including Nemipterus, Pentapodus, Scolopsis, Parascolopsis and Scaevius with 69 currently recognized species that are all confined to the tropical and subtropical Indo-West Pacific. The congeneric species of the family are similar to each other in morphology, especially in the genus Nemipterus. While the precise identification with these species relies notably on coloration of fresh specimens, the results of identification based on the preserved specimens may be problematic. Recently developed molecule-based approaches exploiting DNA sequence variation among species are useful to improve the accuracy of species identification in such the circumstance and to study the evolutionary relationships of taxa. By taking this approach, in this study, multiple-gene analyses for the Nemipteridae were conducted to (1) reconstruct a comprehensive phylogeny of the Nemipteridae; (2) examine the validity of species and explore the cryptic diversity of the family; (3) to test the previous phylogenetic hypotheses, especially those ones infering to intra-generic relationships based on morphology. Two datasets were herein built, for the above objectives: the combined dataset with two nuclear genes (RAG1 and RH) and one mitochondrial gene (COI) that was used for the analyses to infer the higher-level phylogeny; and the dataset with only COI gene sequences (329 newly obtained and 328 from Genebank/BOLD databases) that was primarily used to test species validity by using the species delimitation programs, ABGD and GMYC. The results show that all the genera were monophyletic. The genus Scaevius is the sister-group of Pentapodus and they are sister to Nemipterus. The former three genera together appear to be the sister-group of the clade comprising Parascolopsis and Scolopsis. The validity of most of the examined species is confirmed except some cases. Parascolopsis inermis, Scolopsis affinis, Scolopsis vosmeri and Scolopsis torquata, Nemipterus balinensoides, Nemipterus balinensis, Nemipterus mesoprion and Nemipterus randalli, are non-monophyletic. In addition, several species are found to contain cryptic Evolutionarily Significant Units (or delaminated species); some cannot be unambiguously assigned to any known nemipterid species based on morphology should be considered as new species for further description. Finally, problematic sequences deposited in public databases (Genbank and BOLD) (probably due to misidentification) are also revised in this study.

The purpose of this research was to survey quality stability of imported frozen threadfin bream surimi, and studies on optimization of setting treatment conditions and mechanism of salt-soluble protein changes in the fish-gel preparation as well as the additives, moisture and potato starch, affection on surimi gel properties. On stable qualities difference is great were found in surveying on the most SA grade surimi. The low grade surimi was evidence most possibility to be the partial denature due to the improper processing on store. Monitor the major salt-soluble protein, AM changes during setting by DSC and TSRM, it was evidence the AM in free A and M forms was converted to an AM complex and a TGase promote cross link type AM complex to benefit the final fish gel strength during setting. It was found the performing of a 5 oC/20 h setting treatment could improve the gel strength from 644 ±15 g-cm to 791 ±8 g-cm ; 25 oC/6 h setting could result an even phenomenal improve on the product gel strength up to 2200 ±32 g-cm, respectively. To evaluate the changes of gel product qualities as effected by additives, with comparable to commercial fish ball and kamaboko, for gels prepared without setting treatment additives, kamaboko type product were resulted at a lower moisture content 78 %, resemble kamaboko type product were resulted at 80 % wc, fish ball type product were resulted at a higher moisture content 84 %. For gels prepared with a 25 oC/6 h setting treatment prior to cooking, gel properties tougher then high grade kamaboko was resulted for gels contenting any moisture content between 76-83 %, gels possessing exactly similar properties to high grade kamaboko could only be result at high moisture content between 80-84 %. Addition of potato starch could only increase the breaking force and could not significantly affected the deformation at break, higher then 7.5 % level of starch addition would result gel with unfavorable sandy texture.

The purpose of this study was to investigate the effects of dietary fiber addition on the qualities of surimi-based product of threadfin bream (Nemipterus virgatus). The setting treatment at 40℃ significantly (p<0.05) increased breaking force, breaking point, gel strength, rigidity, lightness and whiteness of surimi-based product as compared to those without setting. The setting period of 30 minutes showed the most effective. The breaking force, breaking point, gel strength and rigidity of surimi-based product of threadfin bream decreased with increasing addition (2-10%) of non-water soluble oat fiber (HF-200). However, folding tests of all products were AA grade. No significant difference in water holding capacity was found, but yellowness (b value) and lightness increased. The product added with fiber HF-200 less than 2% showed no significant difference in sensory score from that without addition. No significant difference in breaking force, breaking point, rigidity, gel strength, water-holding capacity and color was found among the products added with 2% of wheat, oat and α-cellulose. The products enriched with smaller fiber particles possessed higher gel strength and lower rigidity. Results showed the product added with water-soluble fiber (FB06) had higher gel strength and lower rigidity than that with non-soluble fiber (HF200). However, no significant differences in color and water-holding capacity were found between two products. The FB06 product also had better sensory quality. The suitable amount of FB06 that should be added to surimi-based product was less than 4%. The textural characteristics, water-holding capacity and color of surimi-based products added oat fiber or dextrin fiber showed no significant changes during frozen storage for 30 days. The textural characteristics of the products decreased with increasing time during re-heating at 70℃ for 6 hours. However, whiteness and water-holding capacity remained unchanged.
