Abstract:
Over the last decade there has been a growing interest in sensory science in Italy. This has clearly resulted in an increase in the number of researchers engaged in this sector and the number of companies that exploit sensory evaluations for product innovation and enhancement and in quality control. In Italy, in the sphere of the valorisation of prestige foodstuffs there is an increasing sensitivity towards the adoption of strict methods for describing the sensory properties of the products and ascertaining compliance with defined sensory standards. The Società Italiana di Scienze Sensoriali has played a decisive role in activating and guiding this development. Pursuing this approach, in 2008 the Society organised the 2nd National Convention as an occasion for exchange among professionals working in the field of sensory science.

Abstract:
Are there compelling reasons why we should not have serious gun control at least in the United States? Would any attempt at control fail in the way that Prohibition failed? I explain why the comparison with Prohibition is illicit. I propose how we should proceed incrementally given the absence of wholly convincing rights-based or empirical arguments. We can implement a series of small forms of control: universal registration, an assault weapons ban, retaining gun-free zones, among others. I then explore indirect methods of achieving some aims of control without employing explicit coercion. In particular, I argue that gun owners should be required to carry liability insurance to guarantee that those harmed by guns are appropriately and adequately compensated. This could be augmented by a policy of strict liability.

When mobile devices entered organizational meetings, there was a flurry of responses that sometimes resulted in misunderstandings. Olivia is a manager who’s trying to adapt to her vice president’s strict rule of “no thumbs under the table.” But her direct boss keeps bugging her while she’s in other meetings. Cedric is a mid-level manager in a global advertising firm who is confident his constant BlackBerry use conveys how productive he is; but the president thinks mobile use in his meetings hinders listening. Four key findings emerge: (1) some managers establish meeting ground rules, while others are not so clear; (2) subordinates using their mobiles in meetings are often oblivious as to how they’re being judged; (3) people often multicommunicate in meetings to essentially be two places at once; and (4) concertive control puts a normative pressure on groups that practically forces them to agree to be always reachable.

Even more than most colleges, fundamentalist schools between the 1920s and 1950s tried hard to supervise student behavior. With strict rules against drinking, smoking, and sexual relationships, many institutions found enforcement to be a challenge. This was especially true in the realm of sexuality and dating. Students, families, and the institutions themselves often viewed college as the proper place to meet potential marriage partners. Evangelical institutions of higher education wrestled with challenge of allowing students to search for future spouses without allowing them to take their courtship too far. This chapter looks at the ways administrators hoped to guide and control student behavior, especially in the realm of sex and dating. It also explores the ways students responded to those efforts. Some students appreciated the strict guidelines, while others worked hard to find ways to break the rules.

Between 1979 and 2010 local leaders and rural families across China concealed the existence of millions of girls from government officials and the national census. The single child policy (1979–2015) was introduced in 1979, and the central government’s goal was to reduce population growth through strict birth control. Yet, at the same time, many rural parents had strong incentives not to comply with the birth control policy because under economic reforms in the 1980s and 1990s, larger families meant increased labor and income. However, most journalists and scholars reported that the combination of a strictly enforced central policy and a historical preference for sons had led to a stark gender imbalance, with an abnormally higher number of males being born than females. The result was an estimated 20 million “missing girls” in the population from 1980 to 2010. Most demographers have believed that this dearth of girls has been due to widespread sex-selective abortion and infanticide. Yet quantitative analysis of China census data and qualitative interviews with rural parents and local leaders suggest that at least half of the “missing girls” were hidden in China. This was due to two key factors. First was the discretion to implement central policy that street-level bureaucrats and local leaders have. There was mutual noncompliance between rural families and village leaders, such that rural parents did not immediately register additional children and local leaders underreported illegal births to higher authorities. Second is the increasing value of daughters and equal preference for sons and daughters over the last several decades.

This chapter considers how pregnancy manuals and literature, from the Edo period until present day, advocate strict weight management and a restrictive dietary regime for the mother, warning that maternal and fetal well-being are dependent upon the mother's ability to control her appetite and engage in self-sacrifice. Despite the medicalization of birth practices in the Meiji era (1868–1912), folk wisdom restrictions on pregnancy foods remains unchanged; traditional Japanese foods, such as brown rice, tofu, and fish are considered the proper diet for the pregnant body, while “foreign foods” endanger maternal and fetal health. The chapter also notes the increasing association between the maternal and national body with the advent of modernity.

This chapter contextualizes Hildegard of Bingen’s monumental sequence for her monastic community’s patron St. Rupert, O Ierusalem aurea civitas, both within Hildegard’s own output of sequences, and within the sequence repertory at large. Considering her deep sensitivity to the relationship between text and music, including close attention to grammatical structure, word stress, and word and syllable parsing, the essay proposes that Hildegard uses a varied repetition technique, adapting the standard sequence form. Instead of strict repetition, she varies many elements of the melodic surface through expansion or contraction, preserving an audible sense of repetition while responding directly to new text structures. The essay provides a textual and musical analysis of the entire sequence, demonstrating the composer’s large-scale control of musical structure.

This introductory chapter first sets out the book's purpose, which is to synthesize the narrative of college sports history since 1950 in order to convey a fuller understanding of how and why “game changers” have created today's intercollegiate athletic landscape. These game changers involve money, media, race, gender, and reform. The chapter also traces the development of American college sports, which emerged in the mid-nineteenth century from the efforts by male undergraduates to engage in out-of-the-classroom activity independent from the strict faculty control that governed their college lives. By the early twenty-first century, the reality of commercialism and professionalism within the idealistic realm of amateurism characterized college sports more than ever before. A brief overview of the subsequent chapters is also presented.

Why do some military and rebel groups commit many types of violence, creating an impression of senseless chaos, whereas others carefully control violence against civilians? A classic catch-22 faces the leaders of armed groups. Leaders need large groups of people willing to kill and maim—but to do so only under strict control. How can commanders control violence when fighters who are not under direct supervision experience extraordinary stress, fear, and anger? This book argues that discipline is not enough in wartime. Restraint occurs when fighters know why they are fighting and believe in the cause—that is, when commanders invest in political education. Drawing on evidence about state and non-state groups in El Salvador, and extending the argument to the Mano River wars in Liberia and Sierra Leone, the book shows that investments in political education can improve human rights outcomes even where rational incentives for restraint are weak—and that groups whose fighters lack a sense of purpose may engage in massive violence even where incentives for restraint are strong. It concludes that high levels of violence against civilians should be considered a “default setting,” not an aberration.

This chapter explores how politics and private interest affected the anticorruption apparatus gradually put in place by French, English and Portuguese kings between 1250 and 1500. This apparatus was comprised of judicial prosecution and procedures for appointing and replacing officials, rules defining the duties and duration of office, improved record-keeping and accounting practices and mechanisms for administrative supervision. The chapter also argues that these royal regimes were structurally incapable of punishing and restraining corruption effectively and in a sustained manner, essentially because they could not control political society directly and because political constraints and their dependence on informal service often made a strict approach to corruption injudicious. Late medieval states, therefore, were confronted with the dilemma of having to fight corruption with inadequate means and without unduly disturbing the social and political equilibrium on which their authority depended.

This chapter presents the microbiology of CF and describes the classical bacterial pathogens including Staphylococcus aureus, Haemophilus influenza, Pseudomonas aeruginosa and organisms of the Burkholderia cepacia complex. The dominant of these is P. aeruginosa. Infections with other opportunistic pathogens including non-tuberculous mycobacteria, Stenotrophomonas maltophila, and Achromobacter (Alcaligenes) xylosoxidans are also encountered. This chapter details measures to prevent the onset of chronic infection with these organisms include regular screening of respiratory tract samples for bacterial pathogens and the use of aggressive antibiotic therapy to eradicate initial infection before the pathogen can adapt to the environment of the CF lung. Patient-to-patient spread of transmissible strains of bacterial pathogens has led to the implementation of strict infection control measures at CF centres, including patient segregation. In addition to bacterial pathogens, the contribution of fungal infection in CF lung disease is increasingly recognized.

Phenylketonuria (PKU) is the prototype treatable genetic disorder and most advanced countries have been performing newborn screening for more than 40 years. Institution of a low-protein diet early in life can reduce the concentration of phenylalanine in the blood and the brain, and prevent the severe learning and behavioral difficulties that were historically associated with PKU. Interestingly, as the brain matures it becomes resistant to the toxic effects of phenylalanine. The effects of high phenylalanine levels on the adult brain are a subject of active research, but, unlike the effects on IQ seen in the first decade of life, they appear to be reversible. The most important effect of high phenylalanine levels in adults is teratogenicity, and in many ways the maternal PKU syndrome is a more devastating disease than PKU itself. Fortunately, maternal PKU syndrome is preventable if women with PKU maintain strict control of phenylalanine levels throughout pregnancy.

In this paper, we provide causal evidence of the impact of stringent lockdown policies on labour market outcomes at both the extensive and intensive margins, using Ghana as a case study. We take advantage of a specific policy setting, in which strict stay-at-home orders were issued and enforced in two spatially delimited areas, bringing Ghana’s major metropolitan centres to a standstill, while in the rest of the country less stringent regulations were in place. Using a difference-in-differences design, we find that the three-week lockdown had a large and significant immediate negative impact on employment in the treated districts, particularly among workers in informal self-employment. While the gap in employment between the treated and control districts had narrowed four months after the lockdown was lifted, we detect a persistent nationwide impact on labour market outcomes, jeopardizing particularly the livelihoods of small business owners mainly operating in the informal economy.

In the late 1990s and early 2000s, mobile use started expanding. From Nokia phones to BlackBerrys, these business tools often were considered status symbols—so it’s natural that control issues emerged. This chapter discusses some cultural-differences data, along with the gut-wrenching decisions that Kjell, a Norwegian entrepreneur, and Matt, a Wall Street Journal executive, had to make concerning whose jobs warranted mobile devices. These managers wrestled with issues of productivity, budgeting, fairness, mooching, and status. The chapter shows what happens when there’s a “boss in your pocket,” as well as the temptation to work all weekend when “sent from my iPhone” appears at the bottom of a message at 6 p.m. on Friday evening. Abstract:
This chapter explores Kernis's life in the period 1984–1991—a period of wandering physically, emotionally, and artistically. He lived in Europe, various parts of the United States, and Canada. He experienced periods of intense loneliness but also the pleasure of a significant romantic attachment. And, after freeing himself musically from strict self-imposed controls, he confronted head-on the challenges of history, coming to grips with the forms and modes of expression pioneered by his predecessors while adapting these traditions to his personal language. His success in confronting these personal and professional challenges manifested itself in commissions for his first symphony (the Symphony in Waves, 1989) and his first string quartet (musica celestis, 1990) and in the establishment of important associations that would serve him well far into the future with the St. Paul Chamber Orchestra, the Lark Quartet, and pianist Evelyne Luest, who would become his wife in 1996.
