Abstract:
Este artículo elabora la ontología social y la metodología de la sociología carnal como un modo distintivo de indagación social, evitando la postura espectadora para captar la acción-en-proceso, a raíz de los debates desencadenados por mi estudio basado en el aprendizaje del boxeo como un arte corporal plebeyo. Primero critico las nociones de agente (dualista), estructura (externalista) y conocimiento (mentalista) que prevalecen en las ciencias sociales contemporáneas y esbozo una concepción alternativa del animal social, no solo como portadora de símbolos, sino como una criatura de carne y sangre, sensible, sufirente, hábil, sedimentada y situada criatura de carne y hueso. Destaco la primacía de los conocimientos prácticos incorporados que surgen y se enredan continuamente en redes de acción y considero qué modos de investigación son adecuados para desplegar y extraer esta concepción encarnada del agente. Sostengo que la etnografía performativa, la marca del trabajo de campo inmersivo basado en “realizar el fenómeno”, es un camino fructífero hacia la captura de los esquemas (habitus) cognitivos, conativos y catécticos que generan las prácticas y subyacen en el cosmos que se está investigando. Pero se necesita talento social y persistencia para obtener los beneficios de la “participación observante” y lograr la competencia social (a diferencia de la saturación empírica). Para concluir, vuelvo al diálogo de Bourdieu con Pascal para considerar la dificultad y la urgencia especiales de capturar el “espíritu de agudeza” que anima dicha competencia pero desaparece de los relatos sociológicas normales.

The article is an attempt to describe the first years of Stefan Żółkiewski’s scientific activity. The author begins by analysing the student duties of a future researcher, looking for his first masters. He also considers the theses contained in Żółkiewski’s thesis and concludes with a description of his activity in the students’ scientific circle known as “Warszawskie Koło Polonistów”. The author of the article tries to point out the genesis of Żółkiewski’s qualities, which characterize his later attitude: a leftist worldview, organizational skills, sociological thinking about literature and concern for the general condition of the humanities.

Abstract:
Existen muy pocos estudios empíricos sobre el proceso de formación y/o transformación de disposiciones desde el marco analítico de Bourdieu o el cercano de Lahire. El artículo contribuye a paliar este problema con un estudio sobre el proceso de corporeización de la organización del trabajo de las nuevas cajeras de un hipermercado. La cuestión se aborda desde la doble dimensión de análisis de Bourdieu del cuidado corporal y la incorporación de disposiciones. Los datos provienen de una etnografía con observación participante que siguió de cerca la propuesta de “sociología carnal” de Wacquant. El artículo muestra que en el proceso de aprendizaje de las cajeras, que exige su esfuerzo, tienen lugar dos procesos. Primero, una adaptación de disposiciones genéricas que se tenían a las nuevas situaciones del hipermercado. Segundo, una incorporación de nuevas disposiciones específicas gestuales y motrices y la memorización de procedimientos, protocolos y códigos de barras.

Il presente elaborato ha lo scopo di analizzare le abitudini di consumo di carne cruda e l’importanza che viene data alla qualità al momento del suo acquisto. Dopo avere presentato l’andamento dei consumi italiani di carne, le importazioni e le esportazioni si è passati alla definizione del concetto di qualità, analizzato sia dal punto di vista del consumatore in termini di benessere alimentare e attenzione alla salute, sia dalla parte del produttore mediante un excursus in materia di sicurezza igienico-sanitaria degli alimenti; viene poi spiegato il concetto di filiera con una presentazione della normativa vigente in ambito di tracciabilità degli alimenti. Nella parte più empirica è stato inizialmente introdotto lo strumento metodologico del questionario, come viene costruito, le varie alternative di contatto e di rilevazione dei dati; successivamente, dopo avere spiegato il questionario somministrato, si è passati all’analisi univariata e bivariata dei dati. Tramite l’ausilio di un software statistico, è stata effettuata la cluster analysis, tecnica statistica che, attraverso i dati raccolti, indica come segmentare i gruppi di consumatori a cui indirizzare specifiche politiche di marketing.

A partir do ano 2000, o Brasil criou uma série de programas de sanidade animal com o objetivo de baixar a incidência de algumas zoonoses, concomitante com um programa de certificação e identificação do rebanho bovino. O serviço de certificação e identificação de toda a cadeia da carne bovina, além de ser uma exigência do mercado europeu, possui a finalidade de demonstrar com transparência o processo de produção de carne brasileira. Nesta tese, analisam-se os seguintes programas: Programa Nacional de Controle de Erradicação da Brucelose e da Tuberculose, Programa Nacional de Controle e Erradicação da Raiva Bovina, Programa de Prevenção e Controle da Encefalopatia Espongiforme Bovina e, o Sistema Brasileiro de Certificação e Identificação de Bovinos e Bubalinos. Todas as doenças aqui estudadas são zoonoses de responsabilidade do Estado (cujas ações devem também envolver a iniciativa privada) e seu controle faz parte das exigências de organizações internacionais que regulam o mercado internacional de carne e subprodutos de origem bovina. A brucelose é uma doença que está disseminada em todo o território brasileiro causando grandes prejuízos econômicos ao país. A tuberculose reapareceu com sintomatologia e sinais clínicos diferenciados, além disso, na década de 1990, acreditava-se que a doença estava controlada e com grande possibilidade de erradicação, o que não aconteceu. A raiva é uma doença cujo controle acarreta grandes despesas econômicas para toda América Latina e necessita do envolvimento de vários setores públicos, da iniciativa privada e também de ações conjuntas entre Estados. A Encefalopatia Espongiforme Bovina necessita de estudos sobre sua epidemiologia; no Brasil aconteceu apenas um caso (2012), denominado de "atípico". Com base nos aspectos institucionais que regulam no âmbito nacional as enfermidades estudadas, nos conceitos de governança global em saúde, interdependência, externalidades, configuração e doenças emergentes e nos discursos dos atores envolvidos na gestão do sistema de rastreamento, este trabalho analisa as dificuldades encontradas pelos profissionais para colocar em prática as exigências institucionais para o controle destas enfermidades. Estuda ainda o mercado internacional de carne bovina, com enfoque na produção brasileira e nas relações com organizações internacionais que regulam esta atividade. A pesquisa apontou que o Brasil terá dificuldades em implantar programas que seguem modelos já existentes em outros países devido a uma série de fatores, entre eles, ao fato das normativas não considerarem as práticas e modo de produção local. Em referência às doenças, foi constatado que são necessários, em caso de zoonoses emergentes, estudos sobre a ocorrência destas enfermidades e o reconhecimento de especificidades locais e regionais na construção de políticas publicas. Constatamos também que essas especificidades locais devem ser levadas em consideração, mesmo sabendo-se que elas poderão representar embates com as organizações internacionais quanto ao controle das zoonoses aqui estudadas.

Abstract : From the year 2000 on, Brazil has created a series of animal health programs with the objective of lowering the incidence of some zoonosis, concomitant with a program of certification and identification of the bovine herd. The service of certification and identification of the complete beef chain, besides being a requirement of the European market, has the purpose of demonstrating with transparency the Brazilian meat production process. In this dissertation, the following programs are analyzed: National Program for Control and Eradication of Brucellosis and Tuberculosis, National Program for Control and Eradication of Bovine Rabies, National Program for Prevention and Control of Bovine Spongiform Encephalopathy, and the Brazilian System of Beef and Buffalo Meat Origin Identification and Certification. All diseases studied here are zoonosis of State responsibility (whose actions must also involve private initiatives) and its control is part of the requirements of international organizations that regulate the international market of meat and byproducts of bovine origin. Brucellosis is a disease that is spread throughout the Brazilian territory, causing huge economic losses to the country. Tuberculosis reappeared with different clinical signs and symptoms. Besides that, in the 1990s, it was believed that the disease was controlled and that it had great possibility of eradication, what did not happen. Rabies is a disease whose control carries large economic costs to all Latin America and requires the involvement of various public sectors, of private sectors, and also of joint actions between States. Bovine spongiform encephalopathy requires studies on its epidemiology. In Brazil only one case occurred (in 2012), described as being an "atypical" one. Based on the institutional aspects that regulate the diseases studied on the national level, and also based on the concepts of global health governance, interdependence, externalities, settings, and emerging diseases, and based on the speeches of the actors involved in the management of the tracking system, this dissertation analyzes the difficulties encountered by professionals to put into practice the institutional requirements for the control of such diseases. The study also covers the beef international market, with a focus on the Brazilian production and on the relations with the international organizations which regulate this activity. The research pointed out that Brazil will have difficulties in deploying programs that follow already existing models in other countries due to a series of factors, among them, the fact that the standards do not consider the local practices and production methods. Regarding the diseases, in case of emerging zoonosis, it has been verified the need of studies on the occurrence of such diseases and the recognition of local and regional specificities in the construction of public policies. We also have noted that the local specificities must be taken into consideration, even though they may represent clashes with international organizations regarding the control of the zoonosis studied here.

Depuis plusieurs décennies, se développent en France de nombreuses théories sociales inspirées par les sciences biologiques. À l'étude du champ éditorial, où cette situation est particulièrement visible, il apparaît toutefois que ce phénomène résulte davantage de l'action d'intermédiaires culturels désireux de diffuser de nouvelles conceptions du savoir et de modifier les hiérarchies intellectuelles, que d'une véritable révolution dans le domaine des sciences sociales. L'essor du biologisme s'appuie sur le prestige accumulé par les sciences biologiques depuis la fin de la Seconde Guerre mondiale, ainsi que sur l'émergence d'un nouveau type d'intellectuel, le « savant ». Il repose également sur l'apport du biologisme à la critique des « philosophies du soupçon », ainsi qu'à l'affirmation du « retour du sujet» dans les années 1980. Il se manifeste par la promotion d'une ingénierie sociale biopsychologique peu soucieuse des facteurs environnementaux (sociaux,géographiques, etc. )
Numerous social theories inspired by biological sciences have been developing in France for decades. If one takes a look at the publishing field, where this development is particularly obvious, it occurs that such a phenomenon is more the result of the action of cultural go-betweens desirous of diffusing new conceptions of knowledge and modifying intellectual hierarchies, than a true revolution among the social sciences. The growth of biologism relies on the prestige accumulated by biology since World War II, as well as on the emergence of a new kind of intellectual, the « scientist ». It also rests on the contribution of biologism to the criticisms levelled at 1960's critical theories, as well as to the discussions concerning the « return of the subject » in the 1980's. It is taking shape with the promotion of a biopsychological social engineering that does not pay much attention to environmental factors (social, geographical, etc. )

Objective: To characterize the sexual violence carried out against women treated at the Center for Legal Medicine and Dentistry - NUMOL in Campina Grande/PB. Methodology: This was a cross-sectional descriptive and analytical study that used secondary data. It analyzed reports of carnal intercourse (suspected cases of rape N =886) that were registered at NUMOL between January 2005 and December 2009. The 295 confirmed cases of rape were allocated according to the age of the victim. The instrument of data collection was a specific form, drawn up from information in the report of carnal knowledge. The dependent variable was the rape (yes or no) and the others were considered independent. The database and statistical analysis were carried out using SPSS (Statistical Package for Social Sciences). The data were presented using descriptive statistics (mean, range, standard deviation, and frequencies). The study used the Chi-square or Fisher's exact test, PR - prevalence ratio and ANOVA. The significance used was 0.05 with a 95% confidence level. Results: The frequence of rape was 33.29%. There was association between the confirmation of the rape and marital status (p = 0.009), relationship with the perpetrator (p = 0.01) and violence during rape (p = 0.000). The victims were mostly adolescents (87.50%), unmarried (87.10%) with incomplete primary education (34.90%), residing in urban areas (50.20 %), born in other municipalities (54.90%) and students (70.50%). The perpetrators varied from adolescents to adults with a mean age of 27.46 years, the majority were acquaintances of the victims (84.06%), but had no blood ties (other acquaintances) (52.82%). There was a predominance of a single perpetrator (82%). Most assaults occurred in public places (13.40%) in the morning (6.10%), with estimated lapse time of more than 20 days between the violence and the report (67.50%). Some form of violence was employed during practice (38%). Presumed violence (34.82%) and physical force (23.23%) were the most prevalent types of violence. The most frequent type of presumed violence was inocencia consilli (60.70%). No lesions were found elsewhere on the body in the majority of cases (94.60%). Conclusions: The frequence of rape is high, and the victims are mostly young, single and with low schooling. The perpetrators are acquaintances of the victims.
Objetivo: caracterizar a violência sexual praticada contra a mulher atendida no Núcleo de Medicina e Odontologia Legal - NUMOL do município de Campina Grande/PB. Metodologia: Tratou-se de um estudo transversal descritivo e analítico com dados secundários. Foram analisados 886 laudos de conjunção carnal (casos suspeitos de estupro) atendidos no NUMOL entre janeiro de 2005 e dezembro de 2009, sendo 295 casos confirmados de estupro que foram alocados segundo a faixa etária. O instrumento de coleta de dados foi formulado de acordo com as informações existentes no laudo de conjunção carnal. Os pesquisadores foram treinados e foi realizado um estudo piloto com laudos de 2004 que foram descartados. Os aspectos éticos da pesquisa com seres humanos foram respeitados: o projeto foi cadastrado no SISNEP, aprovado pelo comitê de ética em pesquisa da UEPB e foi autorizado pela direção da instituição. Resultados: A frequencia da conjunção carnal foi alta (33,29%). Foi observada associação entre a confirmação do estupro e o estado civil, cidade que a vítima reside, escolaridade, relacionamento com o agressor, grau deste relacionamento, idade do agressor, data provável desta agressão, virgindade anterior e violência durante a prática. Em relação aos casos confirmados de estupro, as vítimas são em sua maioria: adolescentes, solteiras, com ensino fundamental incompleto, residentes na zona urbana, naturais de outros municípios e estudantes. Os agressores variam entre adolescentes e adultos, sendo a maioria conhecidos das vítimas, mas que não possuem laços consanguíneos (outros conhecidos) e a maioria agiu sozinho. A maioria das agressões ocorreu em locais públicos, pela manhã, com data provável da violência maior que 20 dias do dia da realização do laudo, foi empregada alguma forma de violência durante a prática, sendo a violência presumida e a força física as mais prevalentes e entre a violência presumida foi a inocência consilli a que apresentou maior frequência. Não foram encontradas lesões em outras regiões do corpo na maioria dos casos. Conclusões: A frequencia do estupro foi alta e as vítimas são principalmente jovens, solteiras e com baixa escolaridade. Os agressores são em maioria conhecidos das vítimas.

Abstract:
This thesis aims to examine how Swedish ‘sommarstuga’ (Summer Cottage) or ‘cabins’ contributes to the production of gender equal values. This ethnographic work is based on the central case study of the members from Uppsala Extremsportförening, (UppX) and their interactions during two cabin trips; one to a surf cabin in Ericeira Portugal and the other a family cabin in Ängskärs, Sweden. The fieldwork conducted was implemented in a multi-sited ethnographic approach allowing for a broader perspective of possible fieldsites and the techniques of ‘Following The People’ and ‘Carnal Sociology’. Consequently, this led to unique experiences where the ‘sense of place’ of Swedish cabin traditions and values could be seen being practiced in Portugal. While, aiming to address the participants of this fieldwork thoughts and views on myths and misconceptions of Sweden’s image as a utopia or role model for egalitarian values. This thesis highlights that cabins and their surrounding spaces facilitate more than just sporting pursuits. They are a microcosm of interactions, a social space for family and friends, for play and gender politics; a world within a world. Concluding that, Swedish cabins are a ‘heterotopia’ or haven that facilitates gender equal interactions, evidencing this through case studies of gender equal participation in various sporting activities while staying in two very different cabins.

[EN] Rabbit meat is one of the most entrenched in the Spanish cuisine. Although rabbit farming on an industrial scale is able to cater domestic demand for this meat, per capita consumption has fallen more than 9% between 2006 and 2013. Meanwhile, the value of the final production of rabbit has decreased by 7.65% between 2013 and 2014 due to the decline in sales prices. The overall objective of this thesis is to analyze the rabbit meat value chain, with a special attention to the last stage, consumers. This last stage has been segmented according to the Food-Related Lifestyle (FRL) instrument. For gather information, we have interviewed value chain experts, we have made observations in retail distribution, an also we have conducted group dynamics with consumers. Besides, a survey for 800 consumers in Spain has been carried out. We have studied the rabbit meat value chain, formed by input suppliers, farmers, slaughterhouses, commercial distribution and consumers. Rabbit production in Spain is mostly carried out in non-integrated intensive farms, with an average size of 281 rabbit female per farm, far from the 700-900 rabbit female per Human Work Unit than experts recommend. Slaughterhouses are the stage in the value chain that has most developed vertical integration processes. They sell the product mainly in the format of whole carcasses. Commercial distribution follows two ways. On the one hand the traditional distribution, with a great weight for rabbit meat, because more than 57% of consumers acquired it in traditional retailers, and on the other hand the great or modern distribution. Regular consumption of rabbit in Spain is far lower than other livestock species -only above that of lamb meat- and occurs mainly by people aged between 55 and 74. Spanish consumer segmentation according to the FRL has created four segments, which we have assigned four representative names. The first, called Despreocupados (Carefree), is the greatest of all (36.9% of the population), mostly middle-aged, with low consumption of rabbit meat and its main consumption restriction is "to be unaccustomed". The second is called Cocineros (Chefs) (18.5% of the population), and they are the bigger rabbit consumers. It consists principally of mature and elderly, and its most important consumer restriction is "I do not like the taste". The third segment, Consumidor extradoméstico y comprador de conveniencia (Extra-domestic consumer and convenience buyer), is the second largest segment (28.6% of the population), with a medium consumption of rabbit meat. They are mainly young people and their main obstacle to consumption is "I do not like the taste." The fourth and smallest segment (16.1% of the population), is called No implicado en la cocina y comprador racional (Not involved in the kitchen and rational buyer). It is represented by mature and elderly people with little liking for cooking. They are distinguished by a very low consumption of rabbit meat, mainly because "I do not like the taste" and "because I prefer other meat". It can be concluded that the rabbit sector in Spain has a wide scope for improvement, surrounded by new commercial opportunities that are not being utilized and that might be critical to its future.
[ES] La carne de conejo es uno de los productos más arraigados en la gastronomía española. Aunque la cría de conejos a escala industrial es capaz de atender la demanda interna de esta carne, su consumo per cápita ha descendido más de un 9% entre los años 2006 y 2013. Paralelamente, el valor de la producción final de conejo se ha reducido un 7,65% entre 2013 y 2014, debido al descenso en los precios de venta. El objetivo genérico de esta Tesis Doctoral es analizar la cadena de valor cunícola y en especial a su último eslabón, el consumidor, al que se segmentará según el instrumento Food-Related Lifestyle (FRL). Para recopilar información se han entrevistado a expertos de la cadena de valor, se han realizado observaciones comerciales en puntos de venta y dinámicas de grupo con consumidores, además de una encuesta a 800 consumidores de España. Se ha estudiado la cadena de valor cunícola, formada por proveedores de insumos, productores, mataderos, distribución comercial y consumidores. La producción cunícola en España se realiza en explotaciones intensivas no integradas, con un tamaño medio de 281 hembras/granja, muy lejos de las 700-900 hembras/Unidad Trabajo Humano que recomiendan los expertos. Los mataderos son el eslabón que más ha desarrollado procesos de integración vertical y venden el producto principalmente en formato de canal entera. La distribución comercial sigue dos vías. Por una parte la distribución tradicional, con un gran peso para la carne de conejo, pues más de un 57% de los consumidores la adquiere en este tipo de establecimientos, y por otra parte la gran distribución. El consumo habitual de conejo en España es muy inferior al de otras especies ganaderas, superando solamente al del cordero, y se da principalmente por personas de entre 55 y 74 años. La segmentación del consumidor español según el FRL ha originado cuatro segmentos. El primero, denominado Despreocupados, es el mayor de todos (36,9% de la población), mayoritariamente de mediana edad, con bajo consumo de carne de conejo y siendo su principal freno "la falta de costumbre". El segundo se denomina Cocineros (18,5% de la población), y es el de consumo más alto de conejo. Constituido principalmente por personas maduras y de la tercera edad, su freno más importante al consumo es "no me gusta el sabor". El tercer segmento, Consumidor extradoméstico y comprador de conveniencia, es el segundo en tamaño (28,6% de la población), con un consumo medio de carne de conejo. Son mayoritariamente personas jóvenes y su principal freno al consumo es "no me gusta el sabor". El cuarto y más pequeño (16,1% de la población), se denomina No implicado en la cocina y comprador racional. Lo representan personas maduras y de la tercera edad, con poco gusto por la cocina. Se distinguen por su muy bajo consumo de carne de conejo, principalmente porque "no me gusta el sabor" y "porque prefiero otro tipo de carne". Se puede concluir que el sector cunícola en España tiene un amplio margen de mejora, existiendo oportunidades comerciales detectadas que no se están explotando y que pueden ser fundamentales para su futuro.

La segmentació del consumidor espanyol segons el FRL ha originat quatre segments. El primer, anomenat Despreocupados (Despreocupats), és el més gran de tots (36,9% de la població), majoritàriament de mitjana edat, amb baix consum de carn de conill i sent el seu principal fre "la falta de costum". El representen persones madures i de la tercera edat, amb poc gust per la cuina. Es distingeixen per un molt baix consum de carn de conill, principalment perquè "no m'agrada el gust" i "perquè prefereixo un altre tipus de carn". Es pot concloure que el sector cunícola a Espanya té un ampli marge de millora, existint oportunitats comercials detectades que no s'estan explotant i que poden ser fonamentals per al seu futur.

Abstract:
This research paper is a study of the alumni of the Department of Social and Cultural Ecology Programme on Faculty of Humanities, Charles University (or "SKE"). The research is grounded in Bourdieu's reflexive sociology. In Bourdieu's terms, it studies the habitus of the SKE alumni in relation to the field of SKE. Inspired by Wacquant's carnal sociology, I do not put myself in the classical ethnographic position of "a researcher amongst bushmen": I am one of those I study. The main method used for studying the field of SKE was the observant participation of Loïc Wacquant. In the second part of the research, a questionnaire in combination with qualitative methods was used to identify the habitus of the alumni. As a result of the research, the field of SKE was described and basic contours of habitus were identified. With regards to reflexive sociology demands, a straight ethnographic confrontation of respondents would have to be conducted in order to identify the precise parameters of habitus. Therefore, I present the actual results as mere portal to a future enquiry. Key words: Alumni, Social and Cultural Ecology, milieu, habitus, reflexive sociology, carnal sociology.

Urban-oriented sensory analysis has a long tradition within the social sciences. However, in communication and cultural studies research, the sensorial orientation is still incipient. This publication is part of an ongoing call by Passeio, the platform for the study of art and urban culture of the Communication and Society Research Centre, for an organicist vision of the city, underlining the need to re-signify the role of the senses in the experience of everyday contemporary urban life. This book includes theoretical and/or empirical contributions from researchers in sociology, communication and cultural studies, who explore three fundamental questions: (a) the effects of the tourist era under the COVID-19 pandemic, (b) the role of music in the production of places and socialities; and (c) the importance of ambiances in the constitution of a carnal relationship with the city.

For a number of historical and sociological reasons, the largely mathematical membership of the Association is aware of the three great schools in the philosophy of mathematics at the turn of the 20th century—Platonism, Formalism, and Intuitionism—but unfamiliar with any school of thought in the philosophy of logic. This address was an effort to introduce the range of philosophical views about logic by rough analogy with the big three about mathematics. Along the way, it sketches the positions of Kant, the 19th-century German scientific materialists, Frege, Mill, early Wittgenstein, Carnap, Ayer, Quine, and Putnam, with gestures toward Descartes, Bolzano, and Russell, and ends with a second-philosophical alternative.
