Abstract:
This book offers an overview of the aesthetic and ethical issues raised by the contemporary olfactory arts, which range from gallery and museum sculptures and installations, through the enhancement of theater, film, and music with scents, to the ambient scenting of stores and avant-garde chefs’ use of scents in cuisine. Special attention is given to the aesthetics of perfume and incense and the question of their art status, as well as to the role of scent in the appreciation of nature and gardens. Ethical issues are discussed regarding ambient scenting, perfume wearing, and the use of smells in fast-food marketing. Because of the traditional neglect and denigration of the sense of smell and its aesthetic potential by philosophers from Kant and Hegel to the present, and by Darwin’s and Freud’s view of the human sense of smell as a nearly useless evolutionary vestige, the first parts of the book counter that tradition with both philosophical arguments and evidence from current evolutionary theory, neuroscience, psychology, anthropology, history, linguistics, and literature. Although the focus is on Western olfactory arts, the book draws on non-Western examples throughout. The book is aimed at both philosophers and general readers interested in the arts, and develops positions that should stimulate further discussion.

Abstract:
This chapter focuses exclusively on sacred scents and traces smell's role in the realm of religion, particularly the Christian tradition. It concentrates on the fourth century, when scent began to play an increasingly important role in early Christian practices. Initially, smells were present in ancient Christian texts, often as undercurrents within the text's larger purpose. Ancient Christians found numerous biblical models for experiencing a domain that lay beyond the physical senses but to which the senses provided access. Through sense encounters, people in the ancient world expected and experienced interaction with their gods, even when this implied communication with realms beyond the physically finite world.

Abstract:
This chapter considers the class politics of smell. Though smell has been described as a lower sense and of little use since man began to walk upright, it is also a sense that mysteriously seemed to improve as one moved up the social ladder. Having grown sensitive with their rise in status, only middle-class noses appeared to possess the potential to serve their communities, while those of the ordinary masses remained untrained and indelicate. In an effort to challenge this notion, this chapter discusses some workers who clearly relied on their sense of smell to fulfill key functions in a variety of industries. It aims to recover some of the smells associated with class and labor and to construct smell as a skill wielded not only by perfumers and disease hunters but also by laborers in some unlikely settings.

Abstract:
Focusing on the founding figures of British aestheticism, Algernon Charles Swinburne and Walter Pater, this chapter discusses how they embraced the identity of the aesthetic olfactif, the cultivation of scent sensitivity, and the notion of the perfumed atmosphere produced by individual writers and literary or cultural schools, with this reflected in their influential critical prose. While Swinburne’s notorious Poems and Ballads (1866) apparently revels in heady perfumes, his own taste for light airy florals and dislike of musk clearly emerges in his subsequent poetry and prose, although his associations with his favoured scents are anything but conventional. Pater, another lover of delicate floral fragrance, refines Swinburne’s perception of the ‘scent’ of literature into a subtler critical language. His influential notion of the literary work’s ‘scented essence’ was adopted by admirers like Wilde and Symons, while his own writing was noted for its unmistakable ‘perfume’.
