Full textThis work first gives an overview of the measurement of market power and brand competition in a differentiated products market, secondly applies discrete choice models to asses the Italian milk market. I use scanner data to estimate consumer purchasing decisions and competitive relationships between two major industry-level brands and (as a third category) supermarket private labels. I divide all milk sold in Italian market into two distinct classes of products: “UHT” and “Refrigerated” milk. I employ a well-known “discrete choice” nested-logit model to estimate consumer demand. Then, using the estimated coefficients, it is possible to calculate both consumer substitution patterns between products, and the profit-margins of the three major retail-level brands across the different sub-categories of milk under different pricing strategies and market structure.

Full textThe consumers in last years have changed. They are no longer looking for foods exclusively for quality and their utilitarian value but searching for products that reflect their own values and beliefs. One of the most widely used construct to capture these psychological aspects is Food involvement (FI). Despite the undoubted value of FI construct, in literature there is a lack of scientific agreement on the essential dimensions and the measurement scales useful for evaluating it. Consequently, this dissertation aims to understand and explore the subjective and pragmatic investment that people feel toward food in order to understand and explain the phenomenon of FI, figuring out its role in predicting food consumption behaviours and in particular the consumption of cow's milk and non-dairy beverages. To achieve this aim, a mixed-methods study was implemented, combining both qualitative and quantitative approaches. The results highlighted how FI is a psychological process characterized by different facets. Moreover, this study created and validated a new scale of FI. It could be useful both from a research perspective, to better predict modern food choices, and as a tool to assess consumer need and to design more effective and tailored interventions to promote healthy food consumption.

Full textThe thesis examines the perspective of consumer psychology on the topic of food consumption and healthy eating. In particular, the goal of the thesis is to study and understand the emotional and motivational factors underlying consumers' food choices. One construct that has been particularly explored is engagement: towards food (food involvement) and towards health (health engagement). The perspective of this thesis is that the person's level of involvement in their food and health management modulates their relationship with food, the motivations behind their choices, and their behaviors (healthy or not). The thesis includes three studies: a scoping review with the aim of identifying the impact of food restrictions on the quality of life of patients with IBD, and to understand if these are related to frequent non-adherence to a healthy dietary style; a survey-based study, with the aim of profiling consumers through cluster analysis using the k-means method to identify behavioral and motivational patterns in food choices; an eye-tracking study to verify how involvement towards health and food modulates food preferences in a situation where mood was manipulated to be negative.

Full textThis PhD Thesis focuses on understanding a company’s process of collection, analysis and management of external business environment information, in particular the information about competitors. The aim is to demonstrate how the Competitive Intelligence process influences and improves marketing decisions in Grocery Retailers. In particular the research aims at analyzing the implications of the process in “Small and Medium Retailers”. This purpose has required an explorative survey and the adoption of the qualitative research methodology based on the multiple case study method. As sampling method, it has been decided to choose the principle of literal replication (Patton, 2002). According to this principle, the analysis is carried on similar (selected) cases to get the same results. (Literal replication means that the cases selected are similar and the predicted results are similar too. ) Three Grocery Retailer companies were selected: Magazzini Gabrielli S.p.A., Ce.Di Gros Scarl e Italbrix s.r.l. Due to the qualitative research methodology chosen and the limited size of the sample – only three case studies – there have been no statistical generalizations. A larger sample could have provided a more concrete support to the existing theoretical evidences, or could have produced new results. However, the methodology chosen provided plentiful information on the research topic and this was useful to fill the gap of knowledge existing in the field of competitive intelligence process used to support marketing decision in the Grocery Retail sector. The empirical analysis offers interesting theoretical and operational implications. As a matter of fact, until now the literature about competitive intelligence has involved only the industrial sector. The empirical analysis in this study has somehow contributed to the scientific debate about competitive intelligence, applying the topic also to the grocery retail sector, and especially to “Small and Medium Retailers”. From a more operative point of view, the analysis may provide managers and owners with many insights on the best models available to implement the competitive intelligence process. This will be very helpful to integrate the data contained in the marketing information systems, and to give medium and small retailers useful support in the process of decision making.
