Abstract:
I composti polifenolici presenti nell'uva e nel vino sono stati ampiamente caratterizzati ed è noto che possiedono un alto potenziale antiossidante. Pochi studi sono stati, invece, eseguiti sul potere antiossidante dei vini pugliesi. In questo studio abbiamo esaminato il poter antiossidante di ventisette vini pugliesi, prodotti nel rispetto dei locali disciplinari per la denominazione di origine, DOP e IGP, rappresentativi di uno dei territori più importanti dell'enologia nazionale italiana. I vini ottenuti dalle uve del territorio pugliese, in particolare quelli rossi, sono ottime fonti di sostanze antiossidanti. La ricerca conferma l'elevata correlazione tra il contenuto in PFT e l'attività antiossidante misurata con il metodo ORAC (r = 0.963). Minore correlazione è stata evidenziata tra i PFT e il metodo DPPH (r = 0.538).

Abstract:
Canestrato Pugliese is an Italian uncooked hard cheese made by the Protected Designation of Origin (PDO) status. In the past, it was manufactured with milk from local sheep breeds (Altamurana and Leccese) while in recent years it has almost entirely been made with milk from non-native sheep breeds (Sarda and Comisana). The aim of the study was to investigate the breed effect on the quality of Canestrato Pugliese cheese by comparing two native (Altamurana and Leccese) and two non-native (Sarda and Comisana) sheep breeds. The experiment was carried out at the experimental farm of CREA-ZOE (Apulia region, Southern Italy) using a flock set-up of four sheep breeds: Altamurana, Leccese, Sarda, and Comisana. All sheep fed pasture supplemented with 200 g/sheep/day concentrate at each milking. For each breed, three cheese-makings of Canestrato Pugliese were carried out for three consecutive days following the PDO technology. At two and four months of ripening, cheese was analysed for gross composition, fatty acid profile, nutritional indexes, and volatile organic compounds. Significant differences were found between breeds in the fatty acid profile and nutritional indexes (P ≤ 0.05). Canestrato Pugliese from Comisana, Leccese, and Sarda had a higher dry matter and fat content than that from Altamurana breed (P ≤ 0.05). Cheeses from Altamurana and Comisana showed a higher content of unsaturated and omega-3 fatty acids and a better omega-6/omega-3 ratio than the others (P ≤ 0.05). The best Health Promoting Index was detected in Altamurana, Comisana, and Leccese cheeses (P ≤ 0.05). Additionally, sheep breed affected the content of volatile organic compounds (P ≤ 0.05). The highest value of volatile organic compounds was observed in cheeses from Leccese breed (P ≤ 0.05). The discriminant analysis performed on cheese data shows a separation between native and non-native sheep breeds. The present study reveals that the breed has an evident effect on the fatty acid and volatile organic compound profile of Canestrato Pugliese.

One day in the late 1940s, this Communist militant of Polish origins asked Juan, a vendor in her barrio, if he would contribute potatoes and gather foods from other tradesmen in solidarity with Pugliese, a renowned tango composer, orchestra director, and Communist who was incarcerated in the infamous Villa Devoto jail. Attraverso i suoi scritti odeporici la scrittrice pugliese Fulvia Miani Perotti (1844 - 1931) ri-afferma l’identità regionale e con essa le tradizioni del genius loci secondo l’azione di propaganda di quelli che sono gli assi portanti della ricerca demologica in Italia negli anni post-unitari, ovvero il rapporto tra identità regionale e identità nazionale. Il saggio prende in analisi, in particolare, il suo volume di racconti, Profili e paesaggi, che contiene tre lunghi racconti di viaggio (Su pe’ Colli, Riva Adriatica, Nella Magna Grecia), in cui la scrittrice descrive la società rurale pugliese. L’analisi dei testi dimostra che Miani Perotti privilegia gli aspetti storiografici ed etnografici a scapito di una trama che diventa un mero pretesto per narrare usi e costumi, passato e presente, di un territorio familiare e, pertanto, non straniante.

Abstract:
El análisis musical anotado de las orquestas típicas de tango expone los modos particulares en que -mediante la variación y la instrumentación- se elaboran los rasgos de los patrones rítmico-melódico-expresivos y de su despliegue tonal. En este trabajo se seleccionaron fragmentos instrumentales interpretados por las orquestas de Aníbal Troilo y Osvaldo Pugliese. Se procedió a: (1) escuchar y anotar pasajes de orquesta que presentaban patrones rítmico-melódico-articulatorios; (2) analizar la superficie musical y elaborar gráficos de reducción notacional; (3) aplicar técnicas microanalíticas para describir el componente expresivo témporo-dinámico. Del análisis se desprende que la variación estilística en el tango no es aleatoria, sino que contiene, intrínsecamente, características invariantes. Es decir que hay una manera de variar que es más identitaria de un estilo compositivo que de otro. Se observó en Pugliese y Troilo el predominio de un tratamiento discursivo a nivel global y de uno a nivel local, respectivamente.

Il modello di performance governance, che si fonda sull'impiego delle informazioni di performance per migliorare la governance sanitaria, è particolarmente complesso, considerando le relazioni interistituzionali e il coinvolgimento della collettività che lo stesso prevede. Al fine di contribuire al dibattito scientifico sul tema, il presente lavoro si prefigge l'obiettivo di evidenziare come tre variabili di performance governance (strumenti operativi di misurazione della performance, integrazione di governance e coinvolgimento dei cittadini) si sono sviluppate nella sanità pugliese impiegando la metodologia dei multiple case studies.L'analisi effettuata porta a concludere che la sanità pugliese, se, da un lato, è da ritenersi ancora distante da unmodello di performance governance, dall'altro, evidenzia alcuni fattori propedeutici allo stesso. Inoltre, a partire dalle evidenze emerse dall'analisi dei casi di studio, scaturiscono alcune considerazioni, con specifico riferimento a punti di forza e criticità delle tre variabili indagate, che consentono di contribuire al dibattito scientifico sul modello di performance governance.In ultimo, si mettono in luce alcuni potenziali rischi del modello indagato che consentono di individuare corrispondenti ulteriori linee di ricerca.

ABSTRACTPyrosequencing of the 16S rRNA gene, community-level physiological profiles determined by the use of Biolog EcoPlates, and proteolysis analyses were used to characterize Canestrato Pugliese Protected Designation of Origin (PDO) cheese. The number of presumptive mesophilic lactococci in raw ewes' milk was higher than that of presumptive mesophilic lactobacilli. The numbers of these microbial groups increased during ripening, showing temporal and numerical differences. Urea-PAGE showed limited primary proteolysis, whereas the analysis of the pH 4.6-soluble fraction of the cheese revealed that secondary proteolysis increased mainly from 45 to 75 days of ripening. This agreed with the concentration of free amino acids. Raw ewes' milk was contaminated by several bacterial phyla:Proteobacteria(68%; mainlyPseudomonas),Firmicutes(30%; mainlyCarnobacteriumandLactococcus),Bacteroidetes(0.05%), andActinobacteria(0.02%). Almost the same microbial composition persisted in the curd after molding. From day 1 of ripening onwards, the phylumFirmicutesdominated.Lactococcusdominated throughout ripening, and most of theLactobacillusspecies appeared only at 7 or 15 days. At 90 days,Lactococcus(87.2%),Lactobacillus(4.8%; mainlyLactobacillus plantarumandLactobacillus sakei), andLeuconostoc(3.9%) dominated. The relative utilization of carbon sources by the bacterial community reflected the succession. This study identified strategic phases that characterized the manufacture and ripening of Canestrato Pugliese cheese and established a causal relationship between mesophilic lactobacilli and proteolysis.

The influence of three different ventilation regimens on air pollution in sheep houses and on the quality of ewe milk and of Canestrato Pugliese cheese was investigated during the summer season. The experimental treatments were low ventilation regimen (VR=35 m3/h per ewe) split in 30-min ventilation cycles (LOV-30); moderate ventilation regimen (VR=70 m3/h per ewe) split in 30-min ventilation cycles (MOV-30); moderate ventilation regimen (VR=70 m3/h per ewe) split in 60-min ventilation cycles (MOV-60). The LOV-30 milk had higher microbial load and bulk milk somatic cell count (BMSCC) and resulted in a weaker casein matrix in the curd compared with the MOV-30 and MOV-60 treatments. At 45 d of ripening, the LOV-30 cheeses had a lower casein content and higher non-casein nitrogen (NCN) and water-soluble nitrogen (WSN) contents than the MOV-30 and MOV-60 cheeses. Urea-polyacrylamide gel electrophoresis (urea-PAGE) of the pH 4·6-soluble N extract showed that the MOV-60 cheeses had fewer bands derived from casein (CN) hydrolysis than the LOV-30 or MOV-30 cheeses, despite its having exhibited the highest plasmin (PL) activity levels. Our results suggest that the ventilation regimen is critical in dairy sheep housing for optimizing the hygienic quality of ewe milk and the proteolytic processes occurring in Canestrato Pugliese cheese during ripening.

Questo articolo esamina gli effetti di determinate misure di policy per anticipare e prevenire un aumento di inquinamento attraverso l'introduzione di una tassa, armonizzata a livello Comunitario, sull'NOx ed SO2. Con l'uso di un modello CGE, questo studio esamina gli effetti che vari livelli di tassazione ambientale comportano sulle industrie dei paesi studiati. I nostri risultati suggeriscono implicazioni di welfare diverse tra politiche ambientali e commerciali. Il caso di studio considera inoltre i possibili effetti a livello regionale (Puglia) delle medesime politiche. Una diminuzione della produzione e dell'occupazione nel contesto nazionale aggraverebbero ulteriormente l'industria pugliese.

AbstractThis work presents an up-to-date model for the simulation of non-stationary ground motions, including several novelties compared to the original study of Sabetta and Pugliese (Bull Seism Soc Am 86:337–352, 1996). The selection of the input motion in the framework of earthquake engineering has become progressively more important with the growing use of nonlinear dynamic analyses. Regardless of the increasing availability of large strong motion databases, ground motion records are not always available for a given earthquake scenario and site condition, requiring the adoption of simulated time series. Among the different techniques for the generation of ground motion records, we focused on the methods based on stochastic simulations, considering the time- frequency decomposition of the seismic ground motion. We updated the non-stationary stochastic model initially developed in Sabetta and Pugliese (Bull Seism Soc Am 86:337–352, 1996) and later modified by Pousse et al. (Bull Seism Soc Am 96:2103–2117, 2006) and Laurendeau et al. (Nonstationary stochastic simulation of strong ground-motion time histories: application to the Japanese database. 15 WCEE Lisbon, 2012). The model is based on the S-transform that implicitly considers both the amplitude and frequency modulation. The four model parameters required for the simulation are: Arias intensity, significant duration, central frequency, and frequency bandwidth. They were obtained from an empirical ground motion model calibrated using the accelerometric records included in the updated Italian strong-motion database ITACA. The simulated accelerograms show a good match with the ground motion model prediction of several amplitude and frequency measures, such as Arias intensity, peak acceleration, peak velocity, Fourier spectra, and response spectra.

In his magisterial work Persephone, Zuntz drew a basic distinction between two sets of Orphic gold leaves—those known from the elaborate tumuli at Thurii, which he called Group A, and a more widely scattered series, Group B, then represented by two longer texts from Petelia in southern Italy and Pharsalus in Thessaly, and, in a shortened form, by a series of six (now seven) short texts from the environs of Eleutherna in Crete (his Group C). Three further finds have reinforced Zuntz's distinctions: first, a tablet from Hipponium, the colony of Epizephyrian Locri in southern Italy, published by Foti and Pugliese Carratelli, then a lamella said to be from Thessaly but now in Malibu and published by Breslin, and finally a tablet said to be from Entella in Sicily and recently in Geneva, which was published in a bad transcription by Frel and much clarified by Riedweg. The first and third belong to Zuntz's Group B, while the second is close to his Group C. Pugliese Carratelli has published an exceptionally fine set of photographs of all the texts except those from Petelia and Entella. My restudy of the leaf from Petelia has led to some improved readings. Not even a drawing exists of the Entellan leaf, which no scholar except its first editor has ever seen. This fact prompted a reviewer of this article to wonder about its authenticity. In the absence of the object itself, such doubts can only be allayed if its text consistently contributes to improving our understanding of the archetype from which it is derived. One of the aims of this article is to show that it does indeed do so.

Abstract:
Effects of ventilation regimen on the quality of ewes' milk and on proteolysis in Canestrato Pugliese cheese during ripening were studied. Cheeses were manufactured from the bulk milk of Comisana ewes subjected to three different ventilation regimens, which were designated low (LOV, 23 m3/h per ewe), moderate (MOV, 47 m3/h per ewe) and programmed ventilation regimen (PROV, 73 m3/h per ewe; fan set to maintain 70% relative humidity). Bulk milk was analysed for chemical and microbial composition, renneting parameters and plasmin-plasminogen activities. At 1, 15, 30 and 45 d of ripening, the cheeses were analysed for gross chemical composition, nitrogen fractions, and plasmin and plasminogen activities. The pH 4·6-insoluble nitrogen fractions were analysed by urea-PAGE. Free amino acid content was determined at the end of ripening. Lower concentrations of bulk milk somatic cell count (BMSCC) and of mesophilic bacteria were found in the MOV group than in the LOV and the PROV groups. A lower plasminogen (PG) to plasmin (PL) ratio (PG/PL) was observed in the MOV and PROV than in the LOV cheeses. Irrespective of treatment, PL activity in cheeses was higher at 15 d of ripening, while a sudden decrease of PL and PG activities was observed at 30 d, which was associated with a marked increase in non-protein nitrogen. The peptide profile characterized in the urea-PAGE showed a greater intensity of α- and β-CN hydrolysis in the MOV than in the PROV and LOV cheeses. The results provide evidence that a proper ventilation regimen is critical for optimizing the hygienic quality of milk and the proteolysis of Canestrato Pugliese cheese during ripening.

Abstract:
The text is a 10-minute rant delivered by narrator William Hellermann, composer/performer and co-director/founder of the DownTown Ensemble, which seems to be about him (Hellermann), although approximately every other biographical fact seems questionable and is in fact false. That still leaves much that is true. So while Bill seems in some sense to be “Bill,” as things go on, the rant turns sour, then melancholy, totally political and outrageous. Finally, one should, based on observation, begin to suspect that the text is by the composer, who is sitting in the ensemble playing clarinet. The performance begins when a faux-emcee Bill, under appropriately harsh emcee lighting, comes onstage from the wings to (pretend to) introduce the Ensemble. He takes the mike while the ensemble is still tuning up (as specified in the score). The ensemble plays on while the text referentially points out what is happening: the Ensemble is “at this moment” strategizing political action to itself while playing. Further observation leads to another conclusion: The Ensemble and the Speaker seem to have nothing to do with each other—that is, until one focuses on the drummer (Jim Pugliese) who, entrained by the spoken voice, is responding to and improvising off the vocal rhythms of Hellermann with a softish and insistent wash of brushes and kick-drum. So although seated with the Ensemble, he is really part of Bill's “ensemble.” The text is part of the score of Interpreting, composed for the Down Town Ensemble: clarinet (Daniel Goode), trombone (Peter Zummo), cello (Matt Goeke), piano (Joseph Kubera), percussion (Jim Pugliese) and soprano voice (Mary Jane Leach).The piece premiered at the Sounds Like Now festival at La Mama ETC, 16 October 2004.

A valle dell'esperienza condotta con gli strumenti multisettoriali complessi (Pirp), nel 2008 la Regione Puglia si e` dotata di una legge regionale sulla rigenerazione urbana. A partire da questo strumento normativo e utilizzando risorse europee (PO Fesr 2007- 2013, Por Fesr- Fse 2014-2020), rispettivamente nel 2011 e nel 2017 e` stato dato il via alla prima e alla seconda stagione della rigenerazione urbana, orientata in entrambi i casi sia alla scala urbana che terri-toriale. Dopo circa 15 anni di esperienza acquisita sul tema, nell'attesa che si concludano le operazioni riferite ai finanziamenti stanziati nel 2017 e siano noti i dati ufficiali, delineando gli aspetti più significativi e rilevanti di queste due stagioni della rigenerazione pugliese, il lavoro tenta di avanzare alcune riflessioni, problematizzando le questioni irrisolte e delineando prospettive per l'azione. Si vuole cosi` provare a verificare se le politiche urbane innovative pre-pandemiche che hanno cercato di lavorare nel solco della sostenibilità urbana siano state in grado di anticipare le risposte rispondendo alle sfide poste dai rischi globali, valorizzando i temi del radicamento territoriale, della accessibilità, della inclusione delle comunità.

Effects of ventilation rate and of dietary protein level in an intensive dairy sheep system on the features of Canestrato Pugliese cheese were studied. Cheeses were manufactured from the bulk milk obtained from ewes subjected to four different experimental treatments: (1) low dietary crude protein (CP) of 13% in dry matter (DM) at a low ventilation rate (23·5 m3/h per ewe) (LPLV); (2) low dietary CP at a moderate ventilation rate (47 m3/h per ewe) (LPMV), (3) moderate dietary CP of 16% DM at a low ventilation rate (MPLV); and (4) moderate dietary CP dietary at a moderate ventilation rate (MPMV). Bulk milk and cheeses (at 1, 15, 45 and 90 d of ripening) were analysed for chemical composition, N fractions and plasmin-plasminogen activities. The pH 4·6-soluble and insoluble N fractions were analysed by urea-PAGE. Bulk milk from ewes receiving the low CP diet displayed higher casein and lower urea contents. Ewes subjected to the low ventilation rate displayed a higher plasminogen activity in milk, whereas no differences emerged among treatments in the conversion of zymogen to plasmin. During ripening the plasmin-plasminogen system in cheese did not display significant changes across treatments. At 90 d of ripening, the cheese produced with milk from ewes receiving the low CP diet and exposed to the low ventilation rate displayed more markedly stained bands in the area of γ-caseins in pH 4·6-insoluble N fraction. As from 15 d of ripening, the pH 4·6-soluble fraction showed a greater number of bands in the LPMV and MPMV than in the LPLV and MPLV cheeses. The results showed that Canestrato Pugliese cheese manufactured with milk from ewes fed the low CP diet and exposed to the moderate ventilation rate was characterized by higher protein and casein content in the fresh cheese and by a greater proteolysis after 90 d of ripening.
