Abstract:
We present some constructions of groupoids such as: direct product, semidirect product and give necessary and sufficient conditions for a groupoid to be embedded into a direct product of groupoids. Also, we establish necessary and sufficient conditions to determine when a semidirect product is direct. Finally the notion of solvable groupoid is introduced and studied, in particular it is shown that a finite groupoid G is solvable if and only if its isotropy groups are.

Abstract:
Recently, the number of people suffering from allergy to caw’s milk has increased. Lupine, a plant rich in protein, can be a good alternative product for non-dairy products production. We aimed to obtain a yogurt-like product based on lupine milk and evaluate its properties. Lupine milk was obtained from lupine seeds, egg white protein powder, disaccharides, and starter cultures were added to the milk to obtain yogurt-like products: samples with maltose, samples with lactose, and samples without sugars. Physico-chemical and microbiological characteristics of the products were determined by the standard techniques. Sensory attributes were evaluated by trained panelists. In the study, the effects of egg white protein powder and disaccharides on the activities of starter cultures and the properties of the yogurt-like products obtained were investigated. The relationship between the addition of sugar and the growth of starter cultures was found to be significant (P < 0.05). In terms of physico-chemical, rheological, and microbiological properties, the yogurt-like products obtained from lupine milk with disaccharides demonstrated good results, especially the sample with maltose. Sensory analysis revealed high sensory properties of the yogurt-like products. Yogurt-like products from lupine milk can be used as an alternative to cow’s milk fermented products, but more detailed studies should be conducted on their formulations.

Abstract:
This study was carried out in order to reveal the attitudes of consumers toward organic products in the provinces of Istanbul, where Turkey's first and largest organic product market is located, and Izmir, where organic production first started. For this purpose, face-to-face surveys were conducted with 271 consumers who went to the organic product market using the proportional sample volume formula. Frequency tables were used in the analysis of demographic data obtained from the questionnaires. The Factor Analysis method was used to measure consumers' behavior toward organic products. It was determined that the majority of organic product consumers who participated in the survey were women (60.1%), married (66.8%), university graduates (57.6%), and individuals with high income (89.6%). After removing the missing, outlier, and extreme values, 251 questionnaires and 13 statements were used in the Factor Analysis. Within the scope of the results obtained, it was determined that reliability, experience (comparison), research (cognitive) and health factors directly affect the consumption of organic products in the attitudes of consumers in Istanbul and Izmir provinces towards organic products. It has been determined that it is important to increase the number of organic product markets throughout the country and to develop public service announcements highlighting these characteristics of organic products to increase organic product consumption.
