Full textFood aid associations provide food supplies to financially disadvantaged populations. However, despite the presence of such programs in developed countries like France, people in a precarious social position have a poorer health status compared to the rest of the population. They also suffer more often from non-communicable chronic diseases related to their lifestyle, in particular their dietary habits. This situation shows that besides food accessibility, other obstacles prevent underprivileged populations from having a better nutritional status. The purpose of this thesis is to identify the food choice determinants of people benefitting from food aid programs. The data on which this work is based was collected through a covert participant observation survey. The survey was carried out while volunteering as a food aid distributor in a charity that allowed assisted people to choose the food supplies they would like to carry out. This thesis will thus provide further explanations on the reasons behind the high prevalence of diet-related chronic diseases among underprivileged populations. The results showed that an assisted person's food choices are often based on their culture or country of origin, their food standards and taboos, their housing conditions and means of transportation, their path as an “assisted person”, their family duties and level of neediness. Some obstacles preventing people in a precarious social position from accessing a healthier and more nutritious diet, as well as various manners allowing to overcome these barriers and improve their health and nutritional status have also been identified in this thesis

Full textThis research introduces a theoretical and experimental approach of the food resilience in the French Overseas Departments and Regions (DROM): Guadeloupe, Guyana, Martinique, Mayotte and Reunion. The current social, economic, geopolitical crises and the global deregulation of the climate change strengthens food and nutritional insecurity particularly in the DROM. An analysis of the overseas territories characteristics has been conducted by applying an original method, the Economy-Wide Material Flow Analysis (EW-MFA) to identify the material flows and exchanges between the economic and environmental dimensions. Among these flows, the food one accounts for a major challenge to limit the vulnerabilities of these overseas economies. Secondly, we have considered the territorial and demographic particularities of overseas environments to design an adapted food resilience approach in order to satisfy the objectives of food and nutrition security. Here, food resilience is defined as the dynamic capacity to achieve food and nutritional security for all populations facing disruptions, notably through the production and insecurity challenges. Then, by identifying the contrasts and similarities between the overseas territories, we conducted a study to define a specific food resilience scorecard based on indicators relating the dimensions of the food system and the challenges of sustainable food. Our results show that the priority challenges for food resilience in the French overseas territories are social, nutritional, and economic. Based on these results, we proposed a specific reflection for each DROM to reduce inequalities. Finally, thanks to this research action, it is possible to establish a circular economy and solidarity-based model to promote food resilience in Reunion. For the first time it is possible to identify the benefits of the food waste valorization and the realities of people in food insecurity. Our thesis argues that the promotion of food resilience necessarily involves the development of people's capability

Full textThis thesis intends to analyse the peculiar hiatus between the Estate normative constraints exerted on and the everyday practices of the Romania’s inhabitants during the eighties. With this aim in view, we have formulated the principal hypothesis of this research, as follows: the food practices of the actors resemble a genuine resistance culture facing the nutritional policies of the Romanian last communist decade. Based on the theoretical approach of the political space of health (in this case, of food), proposed by Didier Fassin, this study will be built upon three axis, which form the abovementioned space: the bodies’ government by food (“Gouverner et nourrir”, “Rule and feed”), the medical power and its limitation confronted with the communist Estate’s authority ( “Médicalisation de la nourriture”, “Physicians and food” ), the social disparities toward the food (“ Stratégies de ravitaillement et pratiques alimentaires “, “ Supplies strategies and food practices”) respectively. This research has been conducted on the basis of an approach that brings together the macro-anthropologist analysis (dissection of legislative acts, of medical treaties of that period, concerning the nutrition, of official daily, periodical or specialty papers), and the microanthropologist analysis ( observation of everyday food practices, interviews, scientifically accredited collection of people stories) as well
