Full textThis thesis is part of a rapidly changing of worldwide demographic context. Indeed, nutritional solutions need to be developed to offset the ageing of the population, one of the consequences of which is the growing number of people with masticatory deficiencies. The texturing of foods, rich in proteins of good nutritional quality, is essential for good mastication and optimal assimilation of nutrients, but also for the act and pleasure of eating.3D food printing is one of the possible research ways for designing new functional foods for frail people. To meet current societal challenges, these foods need to be healthy, personalized and socially acceptable. To meet these ambitious specifications, a four-stage approach was used in this thesis work:1) The development of a 3D printer perfectly suited to the use of meat matrices. By controlling the printing parameters, we can now avoid the use of texturizing agents, enabling us to design foods with simpler and more natural formulations;2) In order to potentiate the structure of printed foods and extend the range of possible textures, the glycation reaction was studied and applied to a gelatin-based model medium. This raw material revealed all its complexity when the reaction was implemented, necessitating a study to elucidate the mechanisms involved. It was shown that the initial water content and Bloom index of the gelatin, by significantly influencing the secondary structure of the gelatin, strongly conditioned the fate of the glycation reaction;3) People with masticatory deficiencies may also suffer from salivary deficiencies. This third part of the thesis therefore involved studying the rheological properties of matrices rich in animal proteins, as well as how to incorporate a natural saliva substitute directly into the food in order to optimize the extrusion properties of the matrices. This functional food, based on flax protein and mucilage, will lubricate the oral cavity, reducing pain and the risk of wrong way during chewing and swallowing in people suffering from xerostomia, hyposialia and dysphagia;4) Coupling the design of a new functional food with a disruptive process such as 3D printing can lead to neophobia, or even rejection, on the part of consumers. The fourth part of this work aims to initiate a sociological approach designed to assess the social acceptability of this new process, drawing on new collaborations between the Life Sciences and the Human and Social Sciences.Future work will focus on determining the post-processing method best suited to respecting the food's properties, characterizing its nutritional properties, and defining and applying the methods needed to guarantee the sanitary and organoleptic qualities of functional foods

Full textSwallowing disorders, also known as dysphagia, are a leading cause of malnutrition and dehydration for older people. In this study, a toolbox of preclinical methods is developed to evaluate food products to manage swallowing disorders and xerostomia, the dry mouth sensation induced by the alteration of salivary flow rate.As a first illustration of the use of these preclinical tools, different natural extracts were produced and compared to human saliva, in terms of both shear and extensional rheological properties. The most promising formulations, obtained from flaxseed extracts, were used to formulate natural salivary substitutes (NSS) and texture adapted semi liquid foods, to promote lubrication and address the needs of people suffering from xerostomia. In addition, the ability of NSSs and modified semi liquid foods to limit post-swallowing oral residues was determined with an in vitro soft-robotic swallowing simulator and con-firmed by sensory analysis on healthy subjects.Three-dimensional printing was used to produce foods with controlled structures, resulting in different yielding behaviors, paving the way to texture adaptation to manage sarcopenia. NSS performance in terms of hydration and lubrication of these 3D-printed structures was also explored, in vitro.This study highlights i) the relevance of this pre-clinical toolbox, including the in vitro experiments simulating food oral processing, to support the development of personalized food products and food for special medical purposes ii) the peculiar rheological properties and lubricity of flaxseed ex-tracts and their strong potential as a NSS or texture modifier, and iii) the interest of controlling food structure via 3D printing to modulate food hydration and the mechanical and yielding behavior

Full textCurrently, several frameworks facilitate quality communication and content towards the consumer. With the exponential growth of e-commerce, it is sought to be able to captivate the consumer effectively and to choose an ideal framework that helps to generate relevant advertising content and fulfill communication objectives. This research aims to explain how the “see-think-do-care” digital framework impacts on Lumingo's brand awareness within its digital communication. A qualitative study made up of men between 18- and 25-years old from zone 7 of Metropolitan Lima identified Lumingo’s brand recall within the e-commerce category. The findings obtained within the chosen population, based on the specific case, indicated the lack of brand awareness according to the digital advertising observed based on their purchase intentions, so there is also no clarity on the phase that contributes to Lumingo’s awareness, strengthening negative perceptions towards the brand after interpreting this content as irrelevant nor unique, in certain occasions invasive, generating greater affinity with other brands within the category.

Full textParticipating in a selection process can be exhausting, as the uncertainty of knowing the results can generate anxiety. In addition, if we focus on young people who are looking for their first job opportunity, the uncertainty increases, since in most cases, they lack the preparation to successfully face the selection processes, so they are not hired. That is why the idea of Palante Postulante was born, whose main objective is to provide a solution to this problem. The Palante Postulante project consists of demonstrating the feasibility of creating a web platform for people between 18 and 25 years of age in Metropolitan Lima, who have been rejected during the job search process and are looking for emotional support and personalized advice to become more employable. Through this research it was possible to identify that applicants do not feel prepared to face a new selection process and wish to better control their emotions and anxiety during this stage. To carry out this project, an analysis of the customer segment, key partners, competitors, cost structure, among others, was carried out. Likewise, a Financial Plan was developed, which allowed us to identify the feasibility of the project. These contain relevant information for the implementation of the project. Finally, after the projection, it is estimated that the investment will be recovered in month 20 and that the project will generate value.

Full textToday, we know that the coronavirus pandemic has affected many economic sectors, bringing losses and negative indicators for the country. However, some businesses, such as micro and small companies, have managed to face this situation by reinventing themselves in new projects due to the new needs that arose. Given the above, through this research work we will explain how a new business idea was born through the search for opportunities that were presented and agile methodologies that validated the execution of the Project. In the initial stage, all the members were brainstormed to find out which would be the most viable to generate profitability. For this reason, the idea of creating clothing with waterproof fabric was selected, since it was sought that this material can prevent people from carrying viruses or bacteria to their homes, protect them and can wash it easily without damaging the design of the clothing. On the other hand, we carry out a 3-year strategic planning that lasts the project using tools such as the EFI and EFE matrix, value chain, PEST analysis, Ansoff matrix, I / E matrix and SWOT. This allowed us to propose competitive strategies to take advantage of new opportunities and face threats. Likewise, different budgets were made for each area of the proposed organization chart. Finally, we prepare a financial plan where the amounts generated by the sales of the business are indicated with their respective financial statements and indicators that validate the profitability for the people who wish to invest.

Full textThe purpose of this research was to study the possible relationships between personality traits and health behaviors in a group of university students from a private university in Lima Metropolitan. The participants were 99 students of both sexes between 16 and 22 years old (M= 18.27; DE= 2.08). A secondary objective of the investigation was to describe whether relationships exist between the study variables and socio-demographic variables. The student´s personality traits were measured using the NEOFFI (Costa y McCrae, 1992) and health behaviors were evaluated using the CEVJU adaptation of Chau y Saravia (2014). In regard to the objectives of this research, the results showed that neuroticism correlates inversely and small with sleep organization (r = -. 27; p <0.01), as well as consciousness directly and small correlates with sleep organization (r = .28; p <0.01). In addition, significant differences were found between neuroticism and agreeableness in relation to sex. As well, that extraversion is inversely related to the student's age (r = -.30, p <0.01). Possible explanations of the results found are discussed, as well as their relevance, limitations of the investigation are reported and recommendations for future studies are given.

Full textThe present study aimed to examine the relationship between addiction to social networks and personality traits in Peruvian university students. 813 young people and adults from Metropolitan Lima participated; whose ages ranged from 18 to 36 years (Mean = 20.69; SD = 3.94); 18.33% are male and 81.67 % are female. The Escurra y Salas (2014) Social Media Addiction Questionnaire and the Personality Inventory “Big Five Inventory-15-P (Dominguez-Lara & Merino-Soto, 2018) were administered. The results reveal that there is a great relationship between SNA and Responsibility, while Neuroticism, Affability and Extraversion correlations are moderate; the lowest relationship is presented by Openess to Experience. Likewise, the comparisons according to sex indicate that the scores in the personality factors are higher in women; while, males have higher scores on the ARS dimensions. However, the magnitude of the difference is small for most. The results and their implications are discussed.

Full text--- This study has aimed to identify differences in personality dimensions according delinquent behavior among young people 16-20 years of age "Youth Center for Diagnostics and Rehabilitation of Lima". To that end Questionnaire Revised Eysenck Personality administered - EPQ-R, in its complete version (Eysenck & Eysenck, 1991) to a sample of 212 subjects held at the Centre. The collected data were statistically analyzed descriptively using frequency, percentage, arithmetic mean, standard deviation, variance and graphics. Inferentially, the normality test Kolmozorov-Smirnov (KS) test of equal variances Levene F test ANOVA one-way and Bonferroni post-hoc test was used. "Statistical package SPSS" version 21 for Windows was used in the data analysis process. Based on the results, analysis and interpretation of data we can conclude that there are no significant differences in the dimensions Personality of Extraversion (E), Neuroticism (N) and psychoticism (P) evaluated with the EPQ-R and delinquent behavior Aggravated Robbery, Aggravated Theft, Murder, Illegal Possession of Weapons-TIA, and Illicit Trafficking-TID, young people of 16-20 years old Youth Center for Diagnostics andRehabilitation of Lima. Extending the analysis allowed us to obtain a personality profile in T scores and percentiles of the population of youth offending behavior in personality dimensions Extraversion (E), Neuroticism (N) and psychoticism (P). These young people have an E slightly below average in N are on average and P are slightly above average. Finally, a Schedule in percentiles and T scores for this group of young people was developed. These results are discussed in terms of the potential importance of psychological assessment of young adolescents in legal contexts and personality profiles in interaction with contextual factors, which may be an important risk factor for increased recidivism and dangerousness in crimes committed. Full textBrinda un tratamiento psicoterapéutico de enfoque Gestalt a un paciente con trastorno de personalidad esquizoide, el cual identificaremos como Paulo, varón de 22 años, estudiante de Ingeniería Mecánica, cuyo motivo de consulta fue el malestar que sentía ante las demandas de su enamorada, la cual le exigía mostrar mayor afectividad hacia ella. Las personas que nos brindaron información para la anamnesis fueron el paciente y su madre. Los resultados de la evaluación corroboraron que se trataba de un caso de trastorno esquizoide, aunque unido a otros síntomas, entre ellos presencia de asuntos inconclusos con familiares y amigos. El tratamiento duró 20 semanas, a lo que siguieron 3 sesiones de seguimiento. Los resultados obtenidos fueron un mayor contacto con sus emociones, la regulación de sus bloqueos psicológicos, la comprensión de los mensajes de sus molestias corporales, y mayor adaptabilidad a su entorno familiar y social; lo cual permitió afrontar de una manera más funcional su problema motivo de consulta. Esto nos permite concluir que el Tratamiento Gestáltico es útil para abordar trastornos de personalidad esquizoide, aunque se sugiere que se realicen investigaciones en grupos más grandes.

Full textThis research evaluated the relationship between personality and leadership styles in Latin American executives. For this study, face-to-face surveys were conducted among Latin American executives in Ecuador, Colombia and Peru, applying the main tools for the evaluation of each of the following variables: for personality, the revised NEO personality inventory (NEO-PIR) was applied; and for leadership styles, the multifactorial leadership questionnaire (MLQ). For the evaluation of the structural equation model, the software SmartPLS 3 was used, in which the model that relates personality, as an independent variable, with laissez faire, transformational, and transactional leadership styles was analyzed; the latter as dependent variables. The results of the research carried out on the relationship between personality and the three leadership styles in Latin American executives, suggest that there is a significant and positive relationship between personality and the laissez faire and transformational leadership styles. In contrast, with respect to transactional leadership, no significant relationship was found with personality.

Full textThe present work is interested in those brands that have used national characters presenting them in scenes related to humor and, thus, far from the solemnity and rigor of the football show. The research will develop two categories that explain the problems to be worked on: humor defined as a playful mode of communication present in the advertising of financial brands and the attitudes of young people regarding the personality of those brands whose heading connotes serious practices and, in some cases, away from humor. Thus, the main objective of this research will be to analyze the influence of humor on attitudes towards brand personality in men between 20 and 25 years of age in Santiago de Surco district. Spot case of the Scotiabank 2019 ‘Free Account’ campaign. The methodology of the investigation will be qualitative, since it will be based on investigating people and settings in which they are considered as a whole. Likewise, the research design to be used in this work will be Grounded Theory, determined because it implies a study of social reality to understand how the world works and understand the features of human activity.

Full textThis study analyzes the possible relationships between personality traits and ways of coping in a sample of adolescent students. This is a correlational, transversal and ex post facto research, applied to 342 students who were coursing the summer semester of preparation for applying to a private university in Lima. The age of the sample range from 16 to 20 years old (17.36 of mean and 0.93 of standard deviation); 161 (47.08%) were women and 181 (52.92%) were men. The instruments used for the research were: a) Socio demographic sheet b) The Personality Inventory NEO Revised: NEO PI-R (Costa and McCrae, 1992) and, c) The Coping Estimation Inventory: COPE (Carver, Scheier and Weintraub, 1989). The results show high levels of extraversion, consciousness and openness and low levels of neuroticism. With regard to coping concept, we found that the problem centered style was used frequently by the participants, followed by emotion centered style, where as other styles was the least used. Positive reinterpretation and growth search of social support for instrumental motives and planning were the most used strategies; while behavior disengages; denial and religion were the least used. Also, according to the controlled variables, we found some significant statistically differences in the participants too. The associations found among personality and coping styles were: a positive relation between neuroticism and other coping styles, between extraversion and emotion centered style, between consciousness and problem centered style and also was found a negative relation among consciousness and other styles. According to the relations among personality features and coping strategies, we found positive relations between neuroticism and behavioral and mental disengage; between extraversion and search of social support for emotional motives and positive reinterpretation and personal growth; among openness and active coping, planning and positive reinterpretation, and among consciousness and active coping, planning, suppression of competent activities, postpone coping and positive reinterpretation and growth. The negative associations were found between neuroticism and active coping and between consciousness and behavior disengage.

Full textThe present investigation analyzed the relationship between the five personality factors of the Costa and McCrae (1992) model (extraversion, agreeableness, responsibility, neuroticism, and openness to experiences) and the abilities of the emotional intelligence model of Mayer, Salovey and Caruso ( 2002) (perceiving emotions, facilitating thought, understanding emotions, strategic emotional intelligence, and the experiential emotional intelligence). The sample consisted of 113 middle and senior management executives from the retail, commercial banking and private university sectors in Colombia, Ecuador and Peru using the structural equations method. The results found indicated that there is a statistically significant moderate degree of correlation between the latent variables personality and emotional intelligence, having as significant moderating effects the age group 55 years and older and the group from Peru. Finally, with respect to the observable variables, statistically significant degrees of correlation were not found.

Full textThe present investigation analyzed the relationship between the five personality factors of the Costa and McCrae (1992) model (extraversion, agreeableness, responsibility, neuroticism, and openness to experiences) and the abilities of the emotional intelligence model of Mayer, Salovey and Caruso ( 2002) (perceiving emotions, facilitating thought, understanding emotions, strategic emotional intelligence, and the experiential emotional intelligence). The sample consisted of 113 middle and senior management executives from the retail, commercial banking and private university sectors in Colombia, Ecuador and Peru using the structural equations method. The results found indicated that there is a statistically significant moderate degree of correlation between the latent variables personality and emotional intelligence, having as significant moderating effects the age group 55 years and older and the group from Peru. Finally, with respect to the observable variables, statistically significant degrees of correlation were not found.

Full textThis article analyzes popular graphics in Lima, as a resource in brand strategy, and its link in the construction of the personality of a gastronomic brand, through a new visual identity based on elements of popular criolla culture. A qualitative methodology was used to analyze how the elements used in the blackboards build Panchita's identity, through the redefinition of its brand personality. Semi-structured interviews were carried out with 14 specialists in the case study, who understand the local context, its manifestations and cultural development, as well as the work team responsible for the brand strategy. The Panchita slates are made based on identity signs such as colorful fonts, phraseologies that start from the universe of criolla gastronomy, a support with a black background, that is, a construction of the popular graphic imaginary and the cultural essence of the diversity of Lima contemporary, that in its relationship with the brand personality strategy strengthen Panchita's brand personality.

Full textThe segment of the elderly has grown in recent years and this trend will continue in the coming years. In Peru, in 2019 there were around 2.9 million older adults, and it is estimated that, by 2050, it will reach 8.7 million. Life expectancy has increased to 79 years in women and 73 in men, thanks to advances in medicine and changes in lifestyle. Despite this reality, the public and private sectors have not developed specialized proposals aimed at solving the problems of loneliness, lack of physical activity, depression, and poor diet, which affect more than 75% of older adults. Faced with this scenario, “+Vida Contigo” seeks to meet these needs, providing personalized services, in the place that the client requires, thorough playful-functional and therapeutic accompaniment, which are designed based on the user´s need and will have additional physical therapy, psychology and nutrition services. This service has three fundamental pillars: flexibility, personalized service, and quality care by professionals with a vocation for service, making this proposal an innovative and exponential business model that as aligned with Sustainable Development Goal (SDG) number three of well-being and health, since it seeks to improve the quality of life and well-being in 95% of the users attended. Finally, it is important to consider the financial viability of the proposal, since it estimates a net present value (NPV) of S/ 842,769 with a Return Rate (IRR) of 64% with a profitability index of 2.62 and a return on investment per year, four months.

Full textThis research aimed to analyze the psychometric properties of the Hardy Personality Scale (HPS) in students belonging to private universities in Lima. The sample is made up of 300 students (52% women and 48% men) with ages between 18 and 28 years. The HPS, to measure hardy personality, and Global Stress Perception Scale (GSPS), that measures the perception of stressful situations, in order perform a convergent and divergent analysis, were the instruments applied. A confirmatory factor analysis was performed as part of the internal structure analysis, which showed that the scale can be explained as a three related factors and as a factor with three dimensions. Regarding reliability, the HPS shows high internal consistency since it has an Omega Coefficient greater than .90. Thus, based on the results, it is concluded that the HPS evidences adequate psychometric properties to be applied to students of private universities in Lima.

Además, para que el proceso de medición sea objetivo o lo más preciso posible, se analiza las propiedades psicométricas correspondientes para garantizar niveles adecuados de confiabilidad y validez de la Escala ECSI-12.

Full text--- The study has like objective establish if relation between the styles of pathological personality and alexithymia in patients with antecedents on suicidal attempt exists; for which a correlational design was used, as well as an intentional nonprobability sampling; the sample was conformed by 49 patients to antecedents on suicidal attempt, ages between the 17 and 25 years. Between the instruments to gather information appear: card of social demographics dates, Clinical Inventory Multiaxial of Millon MCMI II and TAS 20. The statistical analysis was made in three stages, psychometric to evaluate the validity and trustworthiness of TAS 20, descriptive of the variables studied and correlational to contrast the raised hypotheses. In the results has founded statistically significant correlations between the styles of pathological personality and alexithymia, such as schizoid, evitative, histrionic, and schizotypal. The personality styles a greater frequency in the suicide act are those that combine evitative, negativistic, antisocial and dependent characteristics, as well as those with characteristics limits or a combination of limits and esquizotípicos characteristics. The scale of Alexitimia of Toronto presents a suitable trustworthiness and validity in our means. The results obtained confirm the existence of relations between diverse styles of pathological personality and alexithymia in a sample of suicidal patients. Full textThe objective of this research is to analyze the relationship between psychological empowerment at work and proactive personality in a group of engineers of the mining sector from a private company in Lima, Metropolitana. For this purpose, 210 workers between the ages of 25 and 56 years were assessed. The following tests: the Psychological empowerment at work scale of Spreitzer and adapted by Albar, García, López & Garrido (2012), and the Proactive Personality scale developed by Bateman & Crant (1993) were used. It was found that the components of psychological empowerment at work correlate positive and significantly with proactive personality. These results reveal the importance of both psychological variables in the organizational environment.

Full textThe current project reflects the development of a business idea proposed by a group of students from the Peruvian University of Applied Sciences (UPC). Each of the skills acquired by each member during the course of the race were put into practice at work. The first point was to recognize the problem at the current juncture, the population needs to stay longer at home and fight the COVID-19 virus; because the contagion rate is not controlled. The medical community also reported the importance of maintaining a healthy life to maintain an organism fit to reduce the impact of the virus. For this reason, we develop a service so that people have access to benefits that allow them to maintain a healthy life from home without having to expose themselves on the street. The target audience selected was people aged 18 to 50 years of age from the NSE A - B, belonging to Lima Modern. Profit Gym was therefore founded, a web platform that offers comprehensive training plans and nutrition consulting together; accompanied by a virtual store that offers complementary products to achieve the goal of each user. For the achievement of the above, a previous analysis was carried out for the development of strategies that includes the Marketing Plan, Operations Plan, Financial Plan, Human Resources Plan and Social Responsibility Plan for the evaluation of the business and implementation of the project successfully.

Full textIn this work we will analyze the relationship between Brand Personality and Consumer Personality and their influence on Brand Loyalty in the sneakers sector. The importance of this research for the peruvian market will be identified and it will be determined whether there really is a relationship between the first two variables that may impact the third. The focal point of this research focuses on the personality of the consumer, which dimensions are personality, social traits and identification, in how this variable is reflected in the personality of the brand, with dimensions such as sincerity, responsability, activity and emotion and later, in how this relationship influences the brand loyalty developed by the consumer. We will use a correlational analysis and multiple linear regression model as the methodology for the study and the limitations that may come from change in people’s consumption habits due to the current situation will be taken into account.

Full textAunque la personalidad, el liderazgo y el pensamiento crítico se han estudiado ampliamente a lo largo de los años, así como las relaciones entre pares de esas variables, pocos estudios han abordado la relación entre las tres variables. Este estudio tuvo como objetivo determinar el efecto mediador del pensamiento crítico sobre la relación entre personalidad y liderazgo mediante la realización de un estudio correlacional para probar cuatro hipótesis. La primera hipótesis se relacionó con la personalidad y el estilo de liderazgo, la segunda se relacionó con la personalidad y el pensamiento crítico, la tercera se relacionó con el pensamiento crítico y el estilo de liderazgo y la cuarta situó el pensamiento crítico como mediador entre la personalidad y el estilo de liderazgo. Se aplicó el Modelo de Ecuación Estructural de Mínimos Cuadrados Parciales (PLS-SEM), utilizando el software SmartPLS 3, en una muestra de 139 mandos intermedios de Colombia, Ecuador y Perú. Los sujetos completaron evaluaciones estandarizadas para determinar personalidad (prueba NEO-PI), estilo de liderazgo (prueba MLQ) y pensamiento crítico (prueba WGCTA). Solo se aceptaron las hipótesis que relacionaron la personalidad y el liderazgo transformacional, la personalidad y el liderazgo pasivo-evitativo, y la personalidad y el pensamiento crítico. El estudio determinó que no existe un efecto mediador del pensamiento crítico en la relación entre la personalidad y ninguno de los estilos de liderazgo, cuestionando así la idea generalizada de que los líderes deben ser pensadores críticos. Este estudio revela las implicaciones académicas y prácticas relevantes, y proporciona recomendaciones para la práctica y la investigación futura que involucran las relaciones entre personalidad, liderazgo y pensamiento crítico.
