Abstract:
This special issue of Plainsong and Medieval Music honours the memory of Michel Huglo (1921–2012) with four articles that resulted from two sessions of papers held on 11 May 2013 at the 48th International Congress on Medieval Studies at the University of Western Michigan. Titled ‘Chant and Liturgy: Papers in Memory of Michel Huglo’, the sessions were organised by Anna Grau, Cathy Elias and Daniel DiCenso, with papers given by Terence Bailey, Frank Lawrence, Rebecca Maloy (in collaboration with Emma Hornby), William P. Mahrt, Nils Holger Petersen and Michael Norton. Also included is a bibliography of Michel Huglo's articles and unpublished papers to 2012, complementing earlier bibliographies. Obituaries are also cited. Each article in this volume advances research on subjects that occupied Michel Huglo fully at different times in his life.

Abstract:

Abstract:

Isegoría, no. 66 (July 13, 2022): e28. http://dx.doi.org/10.3989/isegoria.2022.66.28.

Full text
Abstract:

Full text
Abstract:
In this interview, Michel Guérard elaborates his ideas on the education and training of chefs for a future when cuisine will be increasingly focused on health and cooks will need to know more about the relationships between food and disease prevention. At the same time, nutritionists will need to develop a better understanding of cooking. Guérard disagrees with commentators, such as Michael Steinberger, who conclude that French cuisine is in decline; in his view, this conclusion is exaggerated and the quality of products such as cheese and wine has actually improved. He expresses optimism for the future of French cuisine, which he believes will be a simple and honest “cuisine naturaliste.”

Abstract:

Abstract:
