Abstract The traditional methods of measuring viscosity with rotational viscometers, i.e. cone-plate and concentric cylinder systems, are often not suitable for suspensions. To be able to measure viscosity on suspensions mixer viscometers have been developed. In this study a new design of a helical ribbon impeller has been evaluated and the Metzner-Otto approach has been used to calibrate the impeller. Different kinds of food products were studied. The Metzner-Otto parameter obtained from tomato products was lower than those obtained from starch products. The study showed that the Metzner-Otto parameter varied but seemed rather to be dependent on the composition of the food material than on the flow behaviour index. The impeller could handle high concentration of quite large particles. This type of helical ribbon impeller viscometer is thus recommended for rheological studies of suspensions with high concentration of particles.

Abstract:
In this work, the power draw and shear profile of a novel in-line rotor-stator mixer were studied experimentally and the laminar flow regime was simulated. The power draw of the rotor-stator mixer was investigated experimentally using viscoplastic shear-thinning fluid and the results of the obtained power consumptions were verified through simulations. The power draw constant and Otto-Metzner coefficient were determined from the result of experimental data and through simulations. A new method is suggested for the determination of the Otto-Metzner coefficient for the Herschel–Bulkley model and the term efficiency is introduced. It was shown that the proposed method can be applied successfully for the prediction of the Otto-Metzner coefficient for the mixing of viscoplastic shear-thinning fluids. The effect of geometry and rotor speed on power consumption and shear rate profile in the investigated mixer is discussed from the results of the simulations. It was found that numerical methods are a convenient tool and can predict the power draw of the in-line rotor-stator mixer successfully.

Abstract:
Ce travail concerne l'étude de l'écoulement d'un fluide viscoélastique (fluide à mémoire) incompressible de type White-Metzner. A cause de la dépendance des fonctions de relaxation et de viscosité par rapport au deuxième invariant du tenseur des taux de déformation, ces modèles conduisent à un système avec équations aux dérivées partielles non linéaires (non quasi-linéaire). Ce travail comporte une partie théorique et une partie numérique. Dans la partie théorique nous nous proposons d'établir plusieurs résultats d'existence, unicité, stabilité concernant le système qui caractérise cet écoulement. Dans un premier temps on a montré, en dimension deux, sous les hypothèses convenables sur les fonctions de relaxation et de viscosité, l'existence locale et l'unicité de solutions régulières pour le problème avec données initiales et conditions aux limites. On a établi ensuite l'existence globale de solutions lorsque les données sont petites ainsi que la stabilité des petites solutions. Ceci nous a permis de démontrer l'existence de solutions petites périodiques en temps (respectivement stationnaires) du système obtenu quand la force est petite et périodique en temps (respectivement stationnaire). Dans un second temps on a étudié le problème stationnaire régi par cet écoulement en utilisant un schéma itératif. Enfin on a montré l'existence et la stabilité linéaire d'un écoulement particulier (écoulement de cisaillement). Dans la partie numérique on a étudié l'écoulement de Poiseuille en proposant une méthode numérique pour le calcul de la vitesse et les contraintes
This work is concerned with the study of the flow of an incompressible viscoelastic fluid (fluid with memory) of White-Metzner type. •Because of the dependence of the viscosity and relaxation functions in the second invariant of the rate of deformation tensor, this models leads to a nonlinear (not quasilineair) partial differential equations system. This work consists in a theoretical part and a numerical one. In the theoretical part, we aim to establish several results on existence, uniqueness and stability concerning the aforementioned system. Firstly, under suitable hypothesis on the relaxation and viscosity functions, we prove the local existence and uniqueness of solution of the 2-D initial boundary value problem. Then we prove that these solutions are global provided the data are small. We also show the existence of small, stable periodic (resp. Steady) solutions corresponding to small periodic (resp. Steady) data. Second we study a special class of 1-D flows (shear flow), in particular its linear stability. The numerical part is devoted to the computation of the Poiseuille flow

Abstract:
The results of an experimental investigation aimed to study both the rheological and fluid dynamic behaviour of two kinds of fruit purees at different pulp concentrations are presented in this work. An experimental setup based on the rectilinear pipe viscometer principle was used for a preliminary rheological investigation of the analyzed products. By applying either the classical Rabinowitsch and Mooney or the recent Thikonov method of regularization of integral equations, these products could reliably be considered as purely-viscous time-independent fluids. The laminar motion was described by means of the well known Metzner and Reed method while the corresponding resistance laws for turbulent motion were modeled by using the Dodge and Metzner method. The comparison of the point onset of turbulence against the ones obtained by means of the Mishra and Thripati and Hanks formulas would, however, suggest that in transitional regime the viscoelastic effects could have non-negligible influence on the dynamics.

Abstract Measurements of power consumption in stirred vessel flows powered by a Rushton and an hyperboloid impeller were carried out. The fluids were aqueous solutions of tylose, CMC and xanthan gum at weight concentrations ranging from 0.1% to 0.6% and also included Newtonian fluids. For the Rushton turbine flows the addition of polymer increased the Newton number by about 13–20% at Reynolds numbers in the range 1,000–3,000, whereas with the hyperboloid impeller the Newton number decreased about 13%. This decrease was especially noticeable for the CMC solutions and was absent from the 0.2% tylose solution flow. Concentrated aqueous solutions of CMC (5.2%) and XG (3.6%) were also produced to determine the characteristic impeller parameter k for the hyperboloid, following the procedure of Metzner and Otto (1957) which was found to be 48 ±16.

For the design of mixing and agitation facilities in process engineering it is of central importance to appraise the correct viscosity of fluids. This can be a challenging task when non-Newtonian and/or non-homogeneous fluids need to be processed. Since it is not always possible to analyze them in the classical ways, an propeller viscosimeter approach on the basis of the Rieger-Novak-Method is used. In recent years the Lattice Boltzmann Methods (LBM) are established as an alternative approach to classical computational fluid mechanics methods. The utilization of Cartesian grids avoids the need to discretize with boundary conform meshes. This makes the LBM suitable for complex geometries like a propeller in this case. Numerical simulations were carried out using a 3D in-house Lattice Boltzmann code called SAM-Lattice with our latest extension to non-Newtonian flow. We use a truncated form of the power-law approximation to accommodate the varying flow properties in non-Newtonian simulations, where the effective viscosity is a function of the shear rate. SAM-Lattice comprises the LBM solver and a highly automated grid generator for arbitrarily complex geometries. The code is capable of multi-domain grid refinement as well as multi reference frames and rotational boundaries. The post processing is done using an extension of the open source visualization tool Paraview. We compare results of experiments and LBM simulations for the Newtonian case (Glucose) to validate our Lattice Boltzmann solver. A study of the non-Newtonian, shear thinning case (Xanthan) is conducted to validate the generalized Newtonian model. The propeller viscosimeter is currently under development as a standalone solution for viscosity measurement. For calibration purposes the Metzner-Otto-constant of the propeller device has to be determined. While the constant is valid for the laminar region the numerical results for the agitator characteristics are presented. Different levels of grid refinement are tested to assure independence of the lattice resolutions.
