Abstract:
L’étude des basaltes des îles océaniques (OIB) révèle la complexité du manteau terrestre, dont la composition chimique est hautement variable. Décrypter l’implication des lithologies des roches sources et des processus à l’origine des OIB est complexe car les magmas sont transformés lors de leur ascension jusqu’à la surface. Ceci est particulièrement critique dans le cas des îles Canaries, où la lithosphère est considérée comme particulièrement épaisse (>110 km Fullea et al., 2015). Afin de mieux contraindre la composition chimique des magmas primitifs et les lithologies mantelliques plausiblement impliquées, deux éruptions historiques de l’île de Lanzarote, les éruptions de Timanfaya (1730-1736) et celles de 1824, ont été étudiées. En effet, ces deux éruptions offrent une opportunité unique d’étudier les mécanismes de génération des magmas et leurs compositions dans un contexte où le manteau est hétérogène. L’éruption de historique de Timanfaya (1730-1736) a émis des magmas qui ont évolué de basanites à basaltes alcalins, pour atteindre des compositions tholeitiques à la fin de l’éruption. La dernière éruption de l’île, en 1824, a produit des basanites extrêmement riches en volatils. L’hétérogénéité du manteau est démontrée à l’extrême à Lanzarote où une seule éruption présente une variation de compositions chimiques équivalente à la diversité de celles des OIB dans le monde. L’extrême hétérogénéité est systématique pour les compositions des roches totales et des téphras à l’échelle d’une éruption, mais est encore amplifiée à l’échelle du minéral et des inclusions magmatiques contenus dans un même échantillon de téphra.Les concentrations des éléments traces et leurs rapports dans l’olivine (e.g. Ni, Mn et Ca) sont de précieux marqueurs des lithologies mantelliques à l’origine des magmas. En effet, les rapports Ni x (FeO/MgO), corrigé du fractionnement, et Fe/Mn sont des indicateurs de lithologies avec ou sans olivines. Il est considéré qu’ils peuvent montrer, dans la plupart des cas, l’ajout d’un liquide magmatique dérivé d’une pyroxénite dans les magmas primaires. La mesure des compositions des éléments traces des olivines des éruptions de 1730-1736 et de 1824 montrent les implications variables de plusieurs lithologies mantelliques au cours du temps. Lors de la fusion d’une lithologie ne contenant pas d’olivines, comme la pyroxénite, de hautes teneurs en Ni et de faibles teneurs en Mn et Ca sont attendues. Les basanites de Lanzarote présentent les plus grandes variations géochimiques, couvrant le champ compositionnel des olivines des MORB et des OIB du monde entier, tandis que les produits plus tardifs, c’est-à-dire les basaltes alcalins et les tholéites, ont des teneurs typiques de liquides magmatiques dérivés de pyroxénites. Les teneurs en forstérite (Fo) des olivines diminuent systématiquement avec le temps durant l’éruption de 1730-1736 et la proportion de liquide primaire saturé en silice augmente dans les mélanges de magmas primitifs avec le temps. A la fin de l’éruption, les magmas tholéitiques cristallisent des olivines dont la teneur en Fo est faible, alors que les concentrations en Mn et Ca augmentent simultanément avec le rapport Ca/Al pour des rapports Fe/Mn et Ni x (FeO/MgO) relativement constants. Ces observations sont expliquées par une augmentation de la fusion par décompression à température légèrement plus faible. D’autre part, les basanites de l’éruption de 1824 possèdent les olivines ayant les teneurs en Fo les plus élevées, et des teneurs en éléments traces dépassant la variabilité des basanites de l’éruption de Timanfaya. Le fait que les basanites de Lanzarote contiennent des olivines dont les compositions en éléments traces recouvrant le champ des MORB et des liquides pyroxènitiques est expliqué par la fusion d’une source contenant des lithologies hétérogènes, induite par un flux de CO2, générant ainsi des magmas aux compositions diverses. The study of oceanic island basalts (OIB) reveals the complexity of the mantle, which composition is highly variable. Deciphering the source lithologies and processes involved in the OIB formation is challenging since the magmas are transformed on their way to the surface. This is especially critical at Canary Islands where the lithosphere is thought to be remarkably thick (>110 km Fullea et al., 2015). In order to better constrain the composition of primitive magmas and the plausible mantle lithologies involved, two historical eruptions recorded at Lanzarote island, Timanfaya 1730-1736 and 1824 eruptions have been investigated. Indeed, these two eruptions offer a unique opportunity to investigate the mechanisms of magma generation and composition in the context of mantle heterogeneity. The Timanfaya, 1730-1736 historical eruption emitted magmas that evolved from basanites through alkali basalts, finally reaching tholeiitic compositions at the end of the eruption. In 1824 the last eruption on the island produced extremely volatile-rich basanite. The heterogeneity of the mantle is demonstrated to the extreme in Lanzarote where a single eruption exhibits compositional variations similar to the span of the OIB worldwide. The extreme heterogeneity is systematic from whole rock lava and tephra at eruption scale but amplified at mineral and melt inclusion scale within a single tephra sample of the eruption.The use of trace element concentrations and ratios of olivine (e.g. Ni, Mn, and Ca) are valuable indicators of the mantle source lithology, namely, the fractionation-corrected Ni x (FeO/MgO) and Fe/Mn as probes of olivine absent or present lithologies, often taken as pyroxenite-derived component in mixtures of primary melts. The measured trace element concentrations in olivine from the 1730-1736 and 1824 eruptions reveal variable mantle lithologies involved in the magma generation with time. Higher Ni and lower Mn and Ca contents are expected when melting Ol-free source, such as pyroxenite lithologies. The basanites exhibit the largest variation covering the range of olivine in MORB and OIB worldwide whereas later produced alkali-basalts and tholeites have values typically expected from pyroxenite derived melts. The Fo content decreases systematically with time during the 1730-36 eruption and the proportion of silica-saturated primary melt increased in the parental magma mixture with time. At the end of the eruption, tholeiite magmas crystallized olivine with lower Fo content, whereas those concentrations of Mn and Ca increased together with Ca/Al at relatively uniform Ni x (FeO/MgO) and Fe/Mn, all of which is readily explained by increased decompression melting at slightly lower temperature. The basanite from the eruption that took place in 1824 has olivine with the highest Fo content and trace element variability expanding the range of the Timanfaya basanite. The fact that Lanzarote basanites contain olivine with trace element systematic spanning that of MORB and pyroxenite melt is explained by CO2-flux melting of a lithologically heterogeneous source, generating the diverse compositions. In addition, early reactive porous flow through the depleted oceanic lithosphere and equilibration with harzburgite restite caused Ni depletion of the earliest percolating pyroxenite melt from which olivine crystallized and probably leaving dunite channels. After the channel formation mantle nodules could be brought to the surface. The fact that olivine compositions and basanite magma were reproduced approximately a century later may reflect episodic carbonatic fluxing in the slowly uprising Canarian mantle plume. (...)

Abstract:
La particularité de l’Oldoinyo Lengai à émettre des laves natrocarbonatitiques fait de ce volcan un laboratoire naturel pour l’étude de la genèse de ces magmas. De nouvelles mesures isotopiques en hélium nous ont permis de constater que la signature des fumerolles est constante depuis 1988 malgré le changement morphologique considérable du cratère sommital lors de la dernière éruption subplinienne de 2007-2008. L’alternance des éruptions explosives et effusives n’engendre donc aucune modification majeure dans l’organisation du système hydrothermal qui est par conséquent profondément enraciné. Les xénolites cogénétiques qui ont été émis lors de l’éruption de 2007-2008 permettent d’étudier directement les processus magmatiques qui se déroulent dans la chambre magmatique active. La comparaison des signatures isotopiques des gaz rares (hélium) de la chambre magmatique et des volcans silicatés de la région d’Arusha montre que les deux types de magmatisme ont une source analogue identifiée comme un manteau lithosphérique subcontinental préalablement métasomatisé par des fluides asthénosphériques. De plus, ces signatures isotopiques confirment l’absence de contaminations crustale lors de la remontée du magma entre le manteau source et la surface. Une description pétrographique de détail couplée à une approche thermobarométrique, ainsi qu’à la détermination des modèles de solubilité des volatils dans les liquides phonolitiques, nous a permis d’identifier l’évolution du liquide dans la chambre magmatique et ses paramètres de stockage. Les résultats nous révèlent que le magma injecté en 2007 a une composition phonolitique et des teneurs élevées en volatils (3.2 wt.% de H2O et 1.4 wt.% de CO2) ainsi qu’une température d'environ 1060° C. Ce magma évolue ensuite dans la chambre magmatique crustale se trouvant à 11.5±3.5 km de profondeur jusqu’à atteindre une composition de néphélinite et une température de 880°C. Pendant sa différenciation, le magma silicaté s’enrichit en calcium, sodium, magnésium et fer alors que sa concentration en silice, potassium et aluminium décroit. Ces résultats concordent avec les précédents relatifs à cette éruption, ou aux produits volcaniques plus anciens émis tout au long de la vie du volcan. Cette similarité suggère qu’aucun changement majeur n’ait eu lieu dans l’organisation de la plomberie du volcan Oldoinyo Lengai au cours de son évolution. Les mesures en éléments traces (REE, HFSE et LILE) dans les minéraux cristallisés lors de cette séquence de différenciation, et les inclusions magmatiques associées montrent un enrichissement pouvant atteindre de 100 à 1000 fois la composition du manteau primitif. Une étude expérimentale préliminaire s’appuyant sur la composition du liquide de recharge (phonolite) et les conditions (P, T) identifiées pour la chambre magmatique nous a permis de reproduire l'immiscibilité entre un liquide silicaté et carbonatitique, processus à l’origine de la formation des carbonatites de l’Oldoinyo Lengai. La poursuite de ces travaux expérimentaux permettra de mieux contraindre la genèse des magmas carbonatitiques et ainsi comprendre les processus en jeux dans l’enrichissement en éléments traces des magmas carbonatitiques
The uniqueness of Oldoinyo Lengai to emit natrocarbonatite lavas makes this volcano a natural laboratory to study the genesis of these magmas. New helium isotopic data permit to assert that the signature of the fumaroles has been constant since 1988 despite the radical morphological change of the summit crater after the last sub-Plinian eruption in 2007-2008. The alternation of the effusive and explosive eruptions does not cause major modifications in the hydrothermal system architecture, which is inferred to be deeply rooted. Cognate xenoliths that were emitted during the eruption in 2007-2008 represent a unique opportunity to document the igneous processes occurring within the active magma chamber. The comparison between the noble gas (helium) isotopic compositions of the active magma chamber and those of the other silicate volcanoes of the Arusha region indicates that both types of magmatism have similar sources, identified as being a typical sub-continental lithospheric mantle, which was previously metasomatized by asthenospheric fluids. Moreover, these isotopic signatures confirm that no crustal contamination has occurred during the magma ascent from the mantle to the surface. Detailed petrographic descriptions coupled to a thermo-barometric approach, and to the determination of volatile solubility models for a phonolite composition, allow us to identify the melt evolution at magma chamber conditions and the storage parameters. These results indicate that the magma injected in 2007 has a phonolitic composition and contains a high amount of volatiles (3.2 wt.% H2O and 1.4 wt.% CO2) as well as a temperature around 1060° C. This magma subsequently evolved in the crustal magma chamber located at 11.5 ± 3.5 km depth until reaching a nephelinite composition and a temperature of 880°C. During the differentiation in the magma chamber, the silicate magma is enriched in calcium, sodium, magnesium and iron, whereas the content of silicate, potassium and aluminum decreases. Our results support previous studies related to this eruption, and are similar to the historical products emitted during the whole volcano history, permitting the suggestion that no major modification in the plumbing system has occurred during the Oldoinyo Lengai evolution. The trace elements (REE, LILE and HFSE) measured in the minerals and melt inclusions reveal a concentration reaching 100 to 1000 times the primitive mantle composition. A preliminary experimental study based on the recharge melt composition (phonolite) and identified magma chamber conditions (P, T) permits to reproduce the immiscibility between silicate and carbonatite liquids, key processes at the origin of the Oldoinyo Lengai carbonatites. The continuation of this experimental study will lead to a better comprehension of the carbonatite genesis, thus improving our understanding of the processes that are responsible for the enrichment in trace elements

Abstract:
Malgré l’homogénéité isotopique des laves de La Réunion, une certaine diversité des produits est observée sur les deux principaux volcans de l’île, le Piton des Neiges et le Piton de la Fournaise, d’un point de vue pétrographique et chimique. En effet, si la majorité des laves émises sont des basaltes transitionnels dont l’évolution est principalement contrôlée par la précipitation et/ou l’accumulation d’olivine, certaines laves plus ou moins anciennes montrent des caractéristiques pétrologiques et géochimiques particulières, qui témoignent de conditions magmatiques variées et de systèmes de stockage et transfert relativement complexes. C’est le cas des « Basaltes Porphyriques à Plagioclase », des basaltes des cônes excentriques dits « adventifs » et de ceux du cratère Hudson (éruption de 1998), sur lesquels portent les travaux de cette thèse. L’étude pétro-géochimique des laves est couplée à celle des inclusions magmatiques des minéraux, naturellement vitreuses ou homogénéisées par chauffage expérimental, afin de caractériser l’origine des magmas et les processus responsables de leur évolution, en contexte de point chaud océanique. Les rapports d’éléments en traces incompatibles des inclusions magmatiques piégées dans les olivines précoces (Fo > 85) des cônes adventifs sont utilisés pour identifier la nature de la source du panache mantellique de La Réunion. Les résultats suggèrent que les magmas des cônes adventifs ont une origine chimiquement comparable à celle de l’ensemble des laves réunionnaises, intermédiaire entre un domaine mantellique relativement primitif et un domaine légèrement appauvri, presque non-affecté par les processus de recyclage. De faibles degrés de fusion partielle de cette source génèrent les concentrations enrichies en éléments en traces des inclusions magmatiques. Les Basaltes Porphyriques à Plagioclases, pouvant contenir jusqu’à 35 % de plagioclases millimétriques, ont été émis sur les deux volcans. Les compositions des inclusions magmatiques des macrocristaux de plagioclase (An 84.2-71.7 ) et les observations texturales des cristaux mettent en évidence leur caractère hérité. Les magmas parentaux des cristaux évoluent essentiellement par cristallisation de clinopyroxène et de plagioclase. Les contrastes de densité entre les phases permettent la ségrégation des plagioclases par flottaison, et leur accumulation au toit de la chambre. Les Basaltes Porphyriques à Plagioclase sont formés par la remobilisation de ces zones d’accumulation riches en plagioclase lors de l’arrivée d’un nouveau magma. Les périodes très spécifiques d’éruption de ces basaltes correspondraient à une diminution du flux magmatique dans la croissance des volcans, favorisant la cristallisation de plagioclase. Les textures des laves des cônes adventifs et du cratère Hudson, ainsi que les inclusions magmatiques des olivines de ces laves témoignent d’une histoire complexe des cristaux, et de l’importance des processus de recyclage dans le système d’alimentation magmatique du Piton de la Fournaise. Les olivines sont nettement plus magnésiennes (Fo > 85) que celles des laves historiques. Les compositions chimiques des laves montrent que la majeure partie correspond à des basaltes légèrement alcalins, appelés « Mid-Alkaline Basalts », qui sont appauvris en CaO mais enrichis en éléments compatibles et incompatibles. Les compositions isotopiques et en éléments en traces leurs suggèrent une origine commune avec celle des laves historiques, bien que le taux de fusion partielle à l’origine des « Mid-Alkaline Basalts » soit plus faible. Un fractionnement profond de clinopyroxène et de plagioclase expliquerait leur formation. L’ensemble de ces résultats suggère que du magma d’origine profonde peut remonter directement, sans passer par le système central du volcan
Despite the isotopic homogeneity of the La Réunion lavas, a petrographic and chemical diversity is observed in the products of the two main volcanoes of the island, le Piton des Neiges and le Piton de la Fournaise. Although the majority of the lavas are transitional basalts which are mainly controlled by olivine fractionation and/or accumulation, some relatively old lavas show petrological and geochemical characteristics that reflect various and relatively complex magmatic conditions, as well as storage and plumbing systems. This is for instance the case of the Plagioclase Ultraphyric-Basalts, basalts from the eccentric ‘adventive’ cones and from the Hudson crater (1998 eruption), on which this works deals with. The petro-geochemical study of the lavas is coupled with the investigation of naturally vitreous or experimentally quenched mineral-hosted melt inclusions, in order to characterize the origin of the magmas and their evolution processes in an oceanic hotspot context. The incompatible trace element ratios of the melt inclusions trapped within early-formed olivine crystals (Fo > 85) from the adventive cones are used to identify the nature of the La Réunion mantle plume source. The results suggest that magmas of the adventive cones originate from chemical source comparable to that of all the La Réunion lavas. This source is intermediate between a primitive-like mantle domain and a depleted one, almost unaffected by recycling processes. Small degrees of melting of this source can explain the enriched trace element concentrations of the melt inclusions. Plagioclase-bearing ultraphyric basalts, which can have up to 35 % millimetre-sized plagioclase crystals, were erupted during some stages of building of the two volcanoes. The compositions of the melt inclusions hosted in the plagioclase macrocrystals (An 84.2-71.7 ) and textural observations of the crystals highlight their inherited character. The parental melts of the crystals mainly evolve by clinopyroxene and plagioclase crystallization. Density contrasts between the phases allow plagioclase segregation by flotation and their accumulation at the top of the chamber. The Plagioclase Ultraphyric-Basalts are derived from the remobilization of this plagioclase-rich accumulation zones, upon input of a new batch of magma. The specific eruption periods of these basalts would correspond to decreases in the magma supply, which promoted plagioclase crystallization. Lava textures of the adventive cones and Hudson crater and their olivine-hosted melt inclusions reflect a complex history of the crystals, and the role of recycling processes in the magma feeding system of the Piton de la Fournaise volcano. The olivine crystals are clearly more magnesian (Fo > 85) than those found in the historical lava ones. The chemical compositions of the lavas show that they correspond for the most part to slightly alkaline basalts, called “Mid-Alkaline Basalts”, which are depleted in CaO and enriched in compatible and incompatible elements. Isotopic and trace element compositions suggest that they have a common origin with the historical lavas, but partial melting degrees are lower for the “Mid-Alkaline Basalts”. Clinopyroxene and plagioclase deep fractionation would explain their formation. All the results suggest that the ascent of deep-seated magma clearly could bypass the central volcanic system

Abstract:
Les laves émises en domaine de subduction sont dominées par des compositions calcoalcalines à hypersthène normatif. En revanche, les inclusions magmatiques piégées dans les olivines magnésiennes (Fo ≥ 88) des basaltes d'arc présentent des compositions alcalines, à néphéline normative. Bien que leurs compositions en éléments traces incompatibles ne diffèrent pas de celles de leurs laves hôtes, ces magmas ne peuvent pas s'expliquer par les modèles classiques de formation des laves d'arc. L'étude d'inclusions magmatiques alcalines de plusieurs arcs du monde a permis de mettre en évidence leur variabilité de composition, en particulier en CaO et Sc, deux éléments compatibles dans le clinopyroxène. Le couplage de cette étude avec des modélisations thermodynamiques a aboutit à l'élaboration d'un modèle de source impliquant la contribution de clinopyroxénites à amphibole à environ 1 GPa. Les inclusions magmatiques à néphéline normative d'arc seraient ainsi les témoins de l'hétérogénéité de source à l'origine des magmas d'arc. Les expériences de fusion partielle du mélange homogène clinopyroxénite à amphibole - péridotite hydratée réalisées à 1 GPa permettent d'apporter des informations supplémentaires quant aux mécanismes de genèse des magmas d'arc sous-saturés en silice et de mieux comprendre les comportements de fusion des deux types de lithologies. Pour des proportions inférieures à ~ 50 % de pyroxénite dans la source, les magmas produits présentent des compositions à hypersthène normatif, comparables aux laves d'arc issues de la fusion de lithologies péridotitiques. Pour des proportions de pyroxénites supérieures, les magmas sont à néphéline normative et s'enrichissent en calcium, reproduisant ainsi la gamme de compositions observée pour les inclusions magmatiques. 50 % de mélange correspond à la limite de stabilité de l'orthopyroxène. Tant que cette phase est présente dans le résidu, les magmas engendrés restent à hypersthène normatif. De plus, la présence d'amphibole dans la source permet d'augmenter la sous-saturation des liquides résultants et d'expliquer ainsi les termes les plus riches en néphéline normative de certaines inclusions. Nos expériences de fusion d'une source homogène ont également permis de déterminer la composition des magmas formés par un processus de fusion plus réaliste, impliquant une source hétérogène pyroxénite-péridotite. La productivité de liquides des pyroxénites étant supérieure à celles des péridotites, les magmas générés à partir d'une source hétérogène seront donc principalement pyroxénitiques, c'est-à-dire davantage sous-saturés en silice. Ainsi, dans le cas d'un mélange de magmas issus d'une source hétérogène, la transition entre les compositions à hypersthène et à néphéline normatifs s'effectue aux alentours de 30-40 % de liquides pyroxénititiques, soit pour environ 20-25 % de pyroxénite dans la source. L'origine de ces lithologies dans le manteau sub-arc est attribuée à la délamination de cumulats à clinopyroxène + amphibole présents à la base de la croute des arcs. Les inclusions magmatiques à néphéline normative d'arc auraient enregistré plusieurs étapes de mélange entre des liquides quasi-purs de clinopyroxénites et des liquides péridotitiques. L'homogénéité de compositions des laves à hypersthène normatif traduirait en revanche, un stade de mélange et de différenciation plus avancé, atténuant ainsi la signature pyroxénitique.

Nous avons modifie la charge en fruits et leur contenu en graines pour moduler les relations source-puits de la plante et determiner leur influence sur les criteres de qualite du fruit et sur la genese de la vitrescence, une alteration physiologique de la chair du melon cantaloup charentais. Nous avons caracterise sur 2 annees et avec 2 varietes le developpement et l'activite photosynthetique de l'appareil vegetatif aerien, le developpement et la croissance des fruits, la repartition des assimilats au sein de la plante entiere, et la qualite des fruits et l'incidence de la vitrescence a la recolte. Le fruit constitue un puits fort au sein de la plante entiere a cause du cout energetique eleve des graines. Sur les plantes en nouaison libre, l'essentiel de la nouaison s'est fait sur 5 jours et la photosynthese nette foliaire n'a pas ete stimulee, mais la photosynthese nette du couvert, et donc la production globale d'assimilats, a ete reduite du fait d'une diminution de la vitesse d'apparition des feuilles. Dans cette situation de competition pour les assimilats, la vitesse de croissance des fruits etait diminuee ainsi que leur calibre individuel, la fermete de la chair et sa teneur en sucres a maturite tandis que l'incidence de la vitrescence etait accrue par rapport a des fruits produits en l'absence de competition sur des plantes avec un seul fruit noue. La taille du fruit etait bien correlee a son contenu en graines pleines et un faible contenu en graines s'est traduit par une chair plus ferme et une moindre sensibilite a la vitrescence. Ces resultats, avec ceux d'une etude preliminaire sur l'appareil racinaire, ont ete integres dans un schema d'elaboration des principaux criteres de qualite du melon et d'apparition de la vitrescence.

Le soufre est un composant volatil important des magmas qui présente différents états d'oxydation en fonction des conditions d’oxydoréduction et de la phase dans laquelle il se trouve : dans le liquide silicaté, il est typiquement dissous comme S⁶⁺ et/ou S²⁻ , dans la phase gazeuse il se trouve principalement comme SO₂ (S⁴⁺ ) et H₂S (S²⁻). L’Etna, pour lequel les conditions d’oxydoréduction sont faiblement contraintes, est utilisée comme cas d’étude pour examiner le comportement du soufre dans les magmas basaltiques hydratés pendant la différenciation et le dégazage. Cette recherche combine l'étude des inclusions vitreuses avec une étude expérimentale en conditions magmatiques sur la solubilité du S dans les basaltes alcalins hydratés.Les résultats expérimentaux suggèrent l’important contrôle de la ƒO₂ sur la teneur en S dans les magmas hydratés de l’Etna, et le partage du S entre les phases fluid and liquid. Les inclusions vitreuses ont été piégées à différentes profondeurs à l'intérieur du système magmatique. Elles décrivent une tendance continue de différenciation, marquée par une cristallisation fractionnée, à partir de la composition picritique (FS) vers le basalte plus récent dégazé (2013). Le contenu en S dans le liquide de l'Etna est extrêmement variable et atteint 4150 ppm dans les inclusions vitreuses les plus primitives. Les spectres XANES Fe³⁺/ΣFe des certaines inclusions vitreuses donnent des rapports Fe³⁺/ΣFe généralement décroissants à partir du liquide le plus primitif (FS) jusqu’au plus évolué (2013). Les simulations effectué par le logiciel MELTS confirme que la diminution du rapport Fe³⁺/ΣFe est principalement due au processus de différenciation magmatique, renforcé par le dégazage du S à ƒO₂ < NNO + 1. Cette réduction du magma provoque à son tour la diminution de la solubilité du S dans les basaltes hydratés de l’Etna, et peut constituer un éventuel activateur de l’exsolution du S, à l’origine de l’important dégazage du S observé au cours des dernières décennies à l’Etna
Sulfur is an important volatile component of magmas that presents different oxidation states, depending on the redox conditions and on the phase of occurrence: in silicate melts it is typically dissolved as S⁶⁺ and/or S²⁻ , in the gas phase it occurs principally as SO₂ (S⁴⁺ ) and H₂S (S²⁻). Mount Etna, in which magmatic redox conditions are poorly constrained, is used as a case study to investigate sulfur behavior in hydrous basaltic magmas during magma differentiation and degassing. This research integrates the study of natural olivine-hosted melt inclusions with an experimental study on S solubility in hydrous alkali basalts at magmatic conditions.Experimental results suggest the important control of ƒO₂ on the S abundance in Etnean hydrous magma and its partitioning between fluid and melt phases. Melt inclusions were entrapped at different depths inside the magmatic system (up to ~ 18 km, below crater level). They delineate a continuous differentiation trend, marked by fractional crystallization, from the picritic basalt (FS) toward the most evolved and degassed (2013) basalt. S content in Etnean melt is extremely variable and reaches 4150 ppm in the primitive melt inclusions. XANES Fe³⁺/ΣFe spectra in some glass inclusions, resulted in the generally decreasing of Fe³⁺/ΣFe ratios from the most primitive (FS) to the most evolved (2013) melts. MELTS software confirms that the Fe³⁺/ΣFe decrease is due principally to the melt differentiation process, enhanced to the S degassing at ƒO₂ < NNO+1. Magma reduction, in turn, induces the decrease of the sulfur solubility in the hydrous Etnean basalt, as well as of the sulfide saturation, and may constitute a possible enhancer of S exsolution, triggering the important S degassing observed in the last decades in Mt. Etna

A novel method was developed for studying the genetic relatedness of Pseudomonas aeruginosa isolates from clinical and environmental sources. This bacterium is ubiquitous in the natural environment and is an important pathogen known to infect Cystic Fibrosis (CF) patients. The transmission route of strains has not yet been defined; current theories include acquisition from an environmental source or through patient-to-patient spread. A highly discriminatory, bioinformatics based, DNA typing method was developed to investigate the relatedness of clinical and environmental isolates. This study found a similarity between the environmental and several CF clonal strains and also highlighted occurrence of environmental P. aeruginosa strains in CF infections.

Prema postavljenom cilju istraživanja, ispitivani su kvalitet mesa i mlekapodolskog govečeta u Republici Srbiji.Ispitivanjem je ukupno bilo obuhvaćeno 23 grla, od kojih 12 krava i 11muških junadi na lokaciji u Bačkoj Topoli.Utvrđena prosečna telesna masa muške junadi podolske rase, koja sukorišćena u ovom istraživanju iznosila je 445,91 kg, sa prosečnim randmanomprimarne obrade od 53,64 %.4Masa glave bez rogova u proseku je bila 12,11 kg, a masa kože je iznosila39,27 kg. Prosečna masa unutrašnjih organa iznosila je: bubrezi sa lojem 4,02 kg,jetra 5,00 kg, srce 1,76 kg, pluća 4,88 kg i slezina 0,86 kg. Utvrđena je prosečnamasa leve polutke od 121,68 kg, a desne polutke od 120,71 kg.Vrednosti kvalitativnih osobina koje su utvrđene kod MLD u proseku subile: L*-svetloća 34,61, udeo a*-crvene boje 20,18, b*-udeo žute boje 6,54, kalokuvanja 44,30 % i sposobnost vezivanja vode 5,52 (cm2). U proseku, sadržaj vodeje iznosio 75,43 %, sadržaj suve materije 24,57 %, sadržaj proteina 21,32 %,sadržaj ukupnog pepela 1,09 %, a sadržaj slobodnih masti 1,90 %. Utvrđenavrednost sadržaja vezivnog tkiva u proseku je iznosila 1,43 %, dok je sadržajhidroksi prolina bio 0,05 %.Vrednosti kvalitativnih osobina koje su utvrđene kod MSM u proseku subile: L*-svetloća 35,41, udeo a*-crvene boje 20,84, b*-udeo žute boje 6,64, kalokuvanja 46,46 % i sposobnost vezivanja vode 7,30. U proseku, sadržaj vode jeiznosio 75,68 %, sadržaj suve materije 24,32 %, sadržaj proteina 21,02 %, sadržajukupnog pepela 1,09 %, a sadržaj slobodnih masti 1,82 %. Utvrđena vrednostsadržaja vezivnog tkiva u proseku je iznosila 0,47 %, dok je sadržaj hidroksiprolina bio 0,06 %.Ispitivanjem senzornih osobina kod MLD i MSM utvrđeno je sledeće:Intezitet boje MLD iznosio je 4,1, a MSM 4,0. Prosečna vrednost teksture MLDiznosila je 4,3, a MSM 4,1. Mramoriranost MLD u proseku je iznosila 4,0, a kodMSM 4,3. Utvrđena prosečna vrednost nežnosti MLD iznosila je 4,4, a kod MSM5,3. Sočnost kod MLD u proseku je iznosila 5,1, a kod MSM 4,7.Ispitivanjem osobina mlečnosti ustanovljeno je, da je prosečno trajanjelaktacije iznosilo 152 dana, prinos mleka u proseku je bio 988,00 kg, sadržajmlečne masti 4,24 %, a sadržaj proteina 3,99 %. Poređenjem osobina mlečnostiizmeđu prvotelki i starijih krava utvrđeno je, da je prosečno trajanje laktacije kodprvotelki iznosilo 148 dana, a kod starijih krava 156 dana, količina mleka kodprvotelki u laktaciji iznosila je 907 kg, a kod starijih krava 1.056 kg. Sadržajmlečne masti kod prvotelki iznosio je 4,23 %, a kod starijih krava 4,25 %, dok jesadržaj proteina u mleku kod prvotelki iznosio 3,94 %, a kod starijih krava 4,04 %.Prosečne vrednosti svih ispitivanih osobina mlečnosti između prvotelki istarijih krava nisu se statistički značajno razlikovale (p>0,05).
Towards the objectives of research, we examine the quality of meat and milkof Podolian cattle in the Republic of Serbia.The study included a total of 23 animals, of which 12 cows and 11 steers atthe location in Bačka Topola.Determined by the average body weight of steers the podolian breed, whichwere used in this study was 445,91 kg, with an average dressing percentage ofprimary treatment of 53,64 %.8The mass of the head without the horns, the average was 12,11 kg, a mass ofskin was 39,27 kg. The average valueof the texture MLD was 4,3 and 4,1 of MSM. Marbling MLD averaged 4,0 and 4,3for MSM. The determined average value of tenderness MLD was 4,4 and 5,3 forMSM. Juiciness of MLD averaged a 5,1 in MSM 4,7.The examination of milk traits were found that the average duration oflactation period was 152 days, milk yield on average was 988,00 kg, milk fatcontent 4,24 % and 3,99 % protein content. Comparison of milk production traitsbetween primiparas and older cows showed that the average duration of lactationin primiparas amounted to 148 days, and for older cows 156 days, the amount ofmilk in lactating primiparas was 907 kg, and for older cows 1.056 kg. Milk fatcontent at first calving was 4,23 % and 4,25 % of older cows, while milk proteincontent at first calving was 3,94 % and 4,04 % of older cows.The average values of all the traits of milk production between primiparasand older cows were not significant (p> 0.05).

Abstract:
This study was conducted to assess the effect of including Tenebrio molitor larvae (T. molitor L) as a protein source in different diets on broiler performance, carcass characteristics and meat quality. A total of 144 day-old Cobb-500 chicks were randomly allocated into three treatment groups, each was allocated 16 birds and reared in 9 identical pens. Experimental diets used were as follows: T1 Control (no T. molitor L inclusion); T2 and T3 contained levels of T. molitor L at 5 percent and 10 percent of dry matter (DM) intake, respectively. Body weights (BW), average daily gain (ADG), feed intake (FI), and Feed conversion ratio (FCR) were measured for the 1st experimental chapter. For the second experimental chapter; live weights (LW) of broilers were recorded before slaughter and thereafter carcass weights (CW), meat yield (weights of breast, thigh, drumstick and wing) were recorded. The dressing percentage (DP percent) was also calculated. Breast muscles were sampled for meat pH and colour measurements. The LW of birds from T1 (0 percent T. molitor L) were significantly different (P<0.05) from both T2 (5 percent T. molitor L) and T3 (10 percent T. molitor L) which were similar to each other, with T2 exhibiting the highest live weights (2166g) and the control treatment exhibiting the lowest live weights (2018.3g). In CW, T1 was significantly different (P<0.05) from T2 while it was similar (P>0.05) to T3. The dressing percent of T1 was significantly different (P<0.05) from T2 and T3 which were similar to each other, with T2 having the highest dressing percentage (78, 2 percent) and T1 having the lowest DP percent (66 percent). The breasts in T2 were significantly higher and different (P<0.05) from both T1 and T3 which were similar to each other. The drumsticks in T3 were significantly different (P<0.05) from T1 while they were similar to T2 with values with T2 having highest values. After 45 minutes of slaughter, a significant difference (P<0.05) was observed in L⃰ among all treatments. In redness (a⃰), T3 was significantly different from T1 but was similar to T2 and all treatments in this study exhibited a darker red meat, with T3 muscles exhibiting darker red colour than the other treatments. Similar results were observed in yellowness (b⃰), where the breast muscles from T3 were more yellow than the other treatments. After 24 hours of slaughter, T2 L⃰ values were significantly different (P<0.05) from both T1 and T3 which were similar to each other. It was also found that the broiler chickens given diet with no T. molitor L inclusion (T1) had lower values of BW, FI, ADG and FCR throughout the experiment than those that were in T2 and T3 with 5 percent and 10 percent T. molitor L inclusion levels, respectively. However, it was also found that although broilers with 5 percent T. molitor L inclusion (T2) in their diet had high ABW and ADG than the broilers with 10 percent T. molitor L inclusion (T3), the T3 birds compared favourably to T2 birds as they required low feed intake to reach the same slaughter weight due to high FCR. It was, therefore, concluded that T. molitor L meal can be incorporated into the diets of broilers to produce heavy birds either at 5 or 10 percent. However, although 5 percent T. molitor L inclusion yields heavier carcasses, the 10 percent T. molitor L inclusion compared favourably to 5 percent inclusion since it required low feed intake to reach the same slaughter weights and there were slight differences on meat quality attributes between the two treatments.Thus T. molitor L at 10 percent inclusion levels was the best inclusion level to enhance broiler growth performance, carcass yield, meat yield and meat quality.

Abstract:
This thesis focuses on determining the potential of bio-energy crops to contribute to Europe’s future energy needs and to reduce future greenhouse gas emissions. This requires an end-to-end (seed to exhaust gas) analysis of the crop production and enabling technology in terms of energy use and greenhouse gas emissions. The starting point of this research was to consider which energy crops had the potential to grow in future European climate scenarios and to determine those for which models did not exist to make this prediction. Miscanthus was identified as a relatively new crop with 15 years of European growing experience but with limited previous model development.  MISCANMOD, a simple model of Miscanthus crop growth, was improved and rewritten in FORTRAN so that it could be interfaced to use climate scenario, soil property and land use data bases to predict energy yields for current and future climate scenarios. A greenhouse gas emissions and energy balance model was added to investigate the sustainability of Miscanthus as a bio-energy crop. This model was combined with data from other energy crop predictions to determine the energy yields and GHG mitigation of different crops for the various scenarios of future climate, each considering the soil conditions, land available and climatic conditions. We conclude that Miscanthus is the crop with the highest energy yield and largest carbon mitigation potential of all the available energy crops, and that the maximum amount of primary energy that could be produced by bio-energy crops in Europe would represent only 12% of EU 25’s primary energy needs. The carbon intensity of such energy is estimated to be 24% of that for gas. To achieve this level of energy production we show that it is necessary to develop drought and frost resistant hybrids to increase the range of the Miscanthus crop for current and future climate scenarios. This demonstrates that bio-energy is not a panacea but must be considered as part of the strategy to achieve sustainable energy whilst mitigating greenhouse gas emissions.

ENGLISH ABSTRACT: In many parts of the world, soil is depleted of selenium (Se), leading to selenium-poor plants, animals and, therefore, humans. It was recognised that a study to examine the functionality of new products on the market to address this problem was required. The purpose of this research were threefold: to compare the effects of sodium selenite (NaSe) and organically bound selenium sources on small ruminant performance, to investigate the bioavailability of these Se sources, and analyse their influence on carcass characteristics, meat quality and antioxidant capabilities. Fourty growing Döhne Merino wethers from the Southern Cape region, a selenium-deficient area, were used for the study. The animals were all fed the same basal diet in the adaptation period and were then allocated to one of four treatment groups: Control (CT), inorganic selenium (IS), organically bound Se A (OSA) or B: (OSB). The period of supplementation was 90 days. This first study assessed the effect of the different Se sources on growth and Se bioavailability in the wethers. The wethers and the feed they consumed were regularly weighed to determine their growth and feed conversion rate (FCR) in the trial period. To gauge their Se level, blood samples were collected via jugular venipuncture at monthly intervals. The wool around the jugular was shorn and samples were collected on day 0 and day 90 for comparative Se level analysis. Liver, skeletal muscle and kidney samples were collected at day 90, directly after slaughter, to determine the Se level in these tissues. No effect could be reported in the growth and FCR of the wethers between the supplementation groups. For whole blood Se levels there was an effect in the early part of the study, with a greater increase in Se levels for the organically bound Se groups, but in the end no effect on whole blood levels could be seen between the different Se treatments. Neither could any difference between the inorganic Se and organic bound Se treatments be found in the liver – however, the total Se concentration of the wool, kidney and meat samples was greater in those animals offered organically bound Se when compared with those receiving a comparable dose of inorganic Se. The second study evaluated the antioxidant capabilities of the different Se supplements in the wethers. Blood samples were taken monthly for plasma collection to test for Glutathione peroxidase (GSH-Px) activity and total antioxidative capacity (TAC) with the oxygen radical absorbance capacity (ORAC) assay. Liver, skeletal muscle and kidney samples were collected at day 90, immediately after slaughter and measured for GSH-Px activity. With TAC, there was a significant effect for the treatment period between day 0 and day 90, however the treatments did not show any significant difference. No significant differences could be established between the different Se treatments for the GSH-Px analysis in any of the tissues. For the mean plasma values of the treatments no significant differences can be reported, but a significant difference was observed at day 30 in the contrast between the organically bound Se and the other treatment groups. The third study was to evaluate the quality and lipid oxidation of muscle from those wethers supplemented with different Se sources. Skeletal muscle samples were collected at day 90, directly after slaughter to determine this. No differences in the meat quality of the wethers could be detected between Se sources after the 90-day supplementation period. Lipid oxidation was measured by determining TBA reactive substances (TBARS) and once again no differences could be detected. Based on the results found in this investigation, it may be inferred that organically bound Se (OSA & OSB) supplementation will hold a number of advantages for small ruminants over inorganic Se supplementation. Animals fed the organically bound Se had reached adequate Se levels sooner on the organically bounded treatments than the inorganically bounded treated animals. The greater bioavailability of organically bounded Se over inorganic Se was proven by the increased Se levels in certain tissues and organs. Additionally, only the organically bounded Se could find a pathway to the wool, confirming that it was carried in an organic form (probably selenomethionine) in the body. Organically bound Se will therefore have a positive impact on small ruminant health and production, which will result in an indirect advantage for consumer health.
AFRIKAANSE OPSOMMING: Die grond in groot dele van die wêreld word selenium-arm en dit lei na selenium-arm plante, diere en mense. Dit is waargeneem dat ‘n studie wat kyk na die funksionaliteit van nuwe produkte op die mark om die probleem aan te spreek nodig is. Die doelwit van die studie was om verskillende selenium (Se) bronne te vergelyk en die uitwerking daarvan op klein herkouer prestasie te evalueer. Daar is gekyk na die biobeskikbaarheid, invloed daarvan op die karkas eienskappe en antioksidant vermoëns van die verskillende Se bronne. Veertig groeiende Dohne Merino-hamels van die Suid-Kaap-streek, 'n Se arm gebied is gebruik vir die studie. Die diere is almal dieselfde basale dieet gevoer in die aanpassing periode en dan toegeken aan een van vier behandelings: kontrole (CT), anorganiese Se (IS), organies gebinde Se A (OSA) of B: (OSB). Die tydperk van die aanvulling was 90 dae. In die eerste studie is gekyk na die effek van die verskillende bronne van Se op die groei en die biobeskikbaarheid daarvan aan die hamels. Bloedmonsters is versamel deur middel van die jugulêre venipuncture vir die Se vlak bepaling daarvan. Lewer, skeletspier en nier monsters is versamel op dag 90, direk na die slagting vir die Se vlak bepaling. Die wol rondom die nekslagaar is geskeer en monsters is versamel op dag 0 en 90 vir Se vlak analise. Geen effek kan gerapporteer word vir die groei en VOV van die hamels tydens die aanvullings periode nie. Vir die bloed Se vlakke was daar 'n uitwerking in die vroeë deel van die studie, met 'n vinniger toename in Se vlakke vir die organies gebinde Se groepe, maar aan die einde kon geen effek gesien word tussen die verskillende Se behandelings nie. Geen verskil tussen die NaSe en organiese gebonde Se behandelings kon gevind word in die lewer nie. Die totale Se konsentrasie van die wol-, nier-en vleis

Apstrakt je obrađen tehnologijama za optičko prepoznavanje teksta (OCR)Ispitano je prisustvo plesni u začinskim smešama (za proizvodnju mortadele, mesnog nareska, srpske Ijute kobasice, alpske i tirolske salame, viršle i šunkarice), crnom biberu u zrnu i mlevenoj začinskoj paprici. Intenzitet kontaminacije bio je najveći u začinskim smešama (46,13%), zatim crnom biberu (28,95%) i začinskoj paprici (24,92%).Uočena je dominacija grupe kserofilnih plesni iz rodova Aspergillus, Emericella, Eurotium, Paecilomyces, Penicillium i Xeromyces. Konstatovano je da su u začinskim smešama i crnom biberu najbrojniji bili predstavnici rodova Aspergillus i Penicillium, ali su po zastupljenosti u uzorcima (100%) dominirale plesni roda Eurotium {E. herbariorum). U uzorcima začinske paprike najčešće su detektovane plesni roda Rhizopus (R. stolonifer) (87,5%).Od ukupno 45 vrsta identifikovanih tokom mikoloških ispitivanja začina, 55,5% je bilo potencijalno toksigenih. Prisustvo aflatoksina B1 nije konstatovano ni ujednom od začina, ohratoksin A je pronađen kod dva uzorka crnog bibera (u tragovima; 32,00 μg/kg), a zearalenon kod tri uzorka crnog bibera (192,00 do 288,00 μg/kg).Sposobnost sinteze ohratoksina A utvrđena je kod 4 od 5 testiranih sojeva Aspergillus ochraceus (20,00 do 340,00 μg /1). Većina sojeva A. versicolor i 50% E. herbariorum sintetisali su sterigmatocistin u značajnim količinama (100,00 do 1600,00 μg /1, odnosno l60,00 do 400,00 μg /l).A. versicolor se pokazao prilično tolerantnim na uzlaganje visokim temperaturama, preživevši toplotni tretman na 800C (5 i 10 min), ali je narušena fiziološka aktivnost rezultovala smanjenjem proizvodnje sterigmatocistina.Koncentracijom kalijum sorbata od 0,5% u potpunosti je inhibiran rast A. versicolor na čvrstoj hranljivoj podlozi, ali ne i u tečnoj; proizvodnja sterigmatocistina registrovana je samo pri nižim koncentracijama (0,05 i 0,1%).
Abstract was processed by technology for Optical character recognition (OCR)The presence of moulds in spice mixtures (for production of mortadella, luncheon meat, "serbian" hot sausage, "alpine" and "tirol" salami, Frankfurter and ham sausage) was investigated. The highest intensity of contamination was in spice mixtures (46,13%), then in black pepper (28,95 %) and in ground red pepper (24,92%).The group of xerophyllic moulds of genera Aspergillus, Emericella, Eurotiiim, Paecilomvces, Penicillium and Xeromyces was dominant. It was found out that the representatives of genera Aspergillus and Penicillium were the most numerous, but considering the incidence in samples (100%) the moulds of genus Eurotium (E. herbariourum) were dominant. In samples of ground red pepper the moulds of the genus Rhizopus (R. stolonifer) (87,5%) were the most frequently detected. Among 45 species identified during mycological investigation of spices, 55,5% were possibly toxicogenic. The presence of aflatoxin B1 was not observed in any of spices tested, ochratoxin A was found in two samples of black pepper (from traces to 32,00 μg/kg), and zaeralenone in three samples of black pepper (192,00 to 288,00 μg/kg).The ability for synthesis of ochratoxin A was observed in 4 of 5 tested strains of Aspergillus ochraceus (20,00 to 340,00 μg/1). The majority of A. versicolor strains and 50% of E. herbariorum synthesized sterigmatocystin in significant quantities (100,00 up to 1600,00 μg/1, and l60,00 up to 400,00 μg/l, respectively).A. versicolor showed to be rather tolerant to exposure to high temperatures by surviving the heat treatment at 800C (5 and 10 min), but the disturbed physiological activity resulted in reduced production of sterigmatocystin.By concentration of potassium sorbate of 0,5% the growth of A. versicolor on solid medium was totally inhibited, but not on liquid medium; the production of sterigmatocystin was registered only at lower concentrations (0,05 and 0,1%).

Istraživanje je sprovedeno u cilju utvrđivanja prisustva i raširenosti infekcije sa Salmonella enterica u populaciji divljih svinja u lovnim gazdinstvima u Republici Srbiji, kao i uticaju procesa lova i obrade trupova divljih svinja na njihov mikrobiološki status. U pogledu jednog od najznačajnijih alimentarnih patogena u divljih svinja, Salmonella enterica, ukupno je ispitano 425 jedinki, odstreljenih u 12 lovnih gazdinstava. Ukupna prevalencija Salmonella je iznosila 4,2%. Najviše izolata je dobijeno iz fecesa (13, odnosno 3,1%), dok je iz brisa kože i površine mesa trupova dobijeno 3 (0,7%) odnosno 4 izolata (0,9%) i samo 1 izolat iz mezenterijalnog limfnog čvora (0,2%). Serotipizacijom izolata Salmonella enterica potvrđeni su serotipovi S. Enteritidis (71.4% od ukupnog broja izolata), S. Typhimurium (23,8%) i S. Infantis (samo jedan izolat, 4,8%). Salmonella enterica je statistički značajno češće utvrđena kod životinja iz otvorenog lovišta, kao i kod jedinki ženskog pola starijih od 36 meseci i težih od 75 kg. Molekularnom karakterizacijom izolata Salmonella enterica metodom elektroforeze u pulsirajućem polju (PFGE) utvrđeni su identični profil S. Typhimurium iz fecesa i na površini mesa trupa iste divlje svinje, što ukazuje na prenos ovog patogena sa fecesa na meso trupa tokom evisceracije. Takođe su metodom PFGE utvrđeni identični i/ili visoko srodni profili Salmonella enterica kod divljih svinja poreklom iz različitih lovišta i između divljih svinja, domaćih svinja i živine poreklom sa farmi u okolini lovišta. Ovo ukazuje na postojanje genetske veze, kao i mogućnost postojanja epidemiološke veze između divljih svinja i domaćih životinja u pogledu ovog patogena. Utvrđena je visoka mikrobiološka kontaminacija kože i mesa trupova divljih svinja bakterijama indikatorima opšte i fekalne kontaminacije. Na osnovu uzorkovanih 210 divljih svinja, izlovljenih u 8 lovišta, prosečan ukupan broj bakterija (ACC) utvrđen na koži bio je je 5,2 log10 cfu/cm2, a broj Enterobacteriaceae (EBC) 3,6 log10 cfu/cm2. Prosečan ACC utvrđen na mesu trupova iznosio je 5,4 log10 cfu/cm2, a EBC 3,8 log10 cfu/cm2. Viši nivo mikrobiološke kontaminacije na mesu trupova divljih svinja u odnosu na kožu ukazuje da drugi izvori kontaminacije (prolivanje sadržaja creva kao posledice ustreljivanja u abdomen i druge nehigijenske procedure tokom obrade trupova) igraju važniju ulogu u kontaminaciji mesa trupova nego koža. Na mikrobiološki status trupova su najviše uticale procedure lova i obrade trupova, pa je na nivou pojedinih lovišta utvrđena statistički značajna razlika između trupova ispravno odstreljenih životinja i onih pogođenih u abdomen. Na viši nivo mikrobiološke kontaminacije sa ACC i EBC su takođe uticale procedura evisceracije na terenu na otvorenom u ležećem položaju na zemlji i bez dostupne čiste vode, kao i veoma nehigijenska praksa pranja kože i unutrašnjih površina trupova nakon obavljene evisceracije. Rezultati ovog istraživanja značajno doprinose razumevanju epidemiologije Salmonella enterica u divljih svinja u Srbiji i rizičnih faktora koji utiču na njeno širenje i mogućnost prenosa na ljude alimentarnim putem, kao i uticaja procesa lova i obrade trupova divljih svinja na njihov mikrobiološki status. Oni takođe predstavljaju i naučnu osnovu za dalji razvoj strategija za kontrolu S. enterica u populaciji divljih svinja u Srbiji i sveukupne mikrobiološke kontaminacije mesa trupova.
The presence and distribution of Salmonella enterica infection in wild boar population in hunting estates in Serbia was studied, as well as the impact of hunting and carcass dressing procedures on their microbiological conditions.  With respect to the main foodborne pathogen from wild boars, Salmonella enterica, the total number of 425 wild boars, originating from 12 hunting estates, was examined. The overall Salmonella prevalence was 4.2%. Isolates were recovered from faeces (13, representing 3.1%), while fewer from skin and carcass meat swabs, i.e. 3 (0.7%) and 4 (0.9%) respectively and only one isolate from mesenteric lymph node (0.2%). Serotyping of S. enterica isolates confirmed serotypes S. Enteritidis (71.4% of total numbers of isolates), S. Typhimurium (23.8%) and S. Infantis (only one isolate, 4.8%). Salmonella enterica was more often found in animals originating from open hunting estates, and from females older than 36 months weighing >75 kg. Molecular characterisation of S. enterica isolates using Pulsed Field Gel Electrophoresis (PFGE) revealed identical profile of S. Typhimurium from the faeces and carcass meat surface of the same animal, indicating transmission of this pathogen from the faeces to carcass meat during evisceration. Also, identical and/or highly related profiles of S. enterica were determined from wild boars from different hunting estates and between wild boars and domestic pigs and poultry from nearby farms in close proximity to hunting estates. This indicate the existence of genetic link, and possibility of epidemiological link as well between wild boars and domestic animals in respect to this microbial pathogen. High microbial contamination of wild boar skin and carcass meat with indicators of general and faecal contamination was found. Based on 210 sampled wild boars from eight hunting estates, the mean aerobic colony counts (ACC) on wild boar skin was 5,2 log10 cfu/cm2 and Enterobacteriaceae counts (EBC) 3,6 log10 cfu/cm2. The mean ACC on carcass meat was 5,4 log10 cfu/cm2, and EBC 3,8 log10 cfu/cm2. Higher levels of microbial contamination on wild boar carcass meat comparing to the skin indicate that sources other than skin (such as gut content spilage due to abdominal shot, as well as other unhygienic carcass dressing procedures) play important role in carcass meat contamination. Hunting and dressing procedures mostly influenced carcass meat microbial conditions, hence statistically significant difference was observed between properly shot animals and animals shot in abdominal region, as shown on the individual hunting estate level. Other procedures also had an influence on the higher carcass meat microbial contamination with ACC and EBC, such as evisceration in the field in lying position on the ground and without access to a clean water, as well as very unhygienic practice of washing skin and interior carcass surfaces after completed evisceration. The results from this study significantly contribute to the understanding of Salmonella enterica epidemiology in wild boars in Serbia and risk factors that contribute to its spread and transmission to humans, as well as to the impact of hunting and carcass dressing procedures on their microbial status. These results are also sound scientific basis for further development of control strategies for S. enterica in wild boar population in Serbia and control of overall microbial contamination on wild boar carcass meat.

Knee joint kinematics is the result of a complex roto-translation movementcharacteristic of the tibio-femoral (TF) and patello-femoral (PF) articulations.This movement depends on the shape of the femur, the tibial plateau andthe patella. Moreover, it depends also on the morphological and mechanicalproperties of the soft tissues of the knee joint. In fact, the knee is characterizedby an extrinsic stability due to the active constraints (muscles and tendons)and passive soft tissues (menisci, retinaculum and ligaments) that surround it.As a result, knee kinematics and kinetics are different in each human being, andsometimes, even in the same person, with the right knee behaving differentlycompared to the left one.The ideal total knee arthroplasty TKA, used to correct pathologies that couldaffect the knee joint, should enable the restoration of the patient’s functionalknee kinematics and kinetics, so that the patient does not normally notice theTKA implant.Nowadays, TKA surgery is a well-established procedure and surgeons maychoose from among the broad range of TKA solutions available on the marketto meet the patient’s request. Prostheses may differ because of shape, materials,and mechanical constraints of their components. Consequently, the restorationof the knee joint biomechanics is limited by the degrees of freedom guaranteedby the adopted design solution.Despite the success of TKAs, pain and limited motor skills are reportedto still affect the clinical outcomes and not all patients are shown to be happyafter a TKA.Current complaints regarding post-TKA surgery might be related to the absenceof a proven tool that enables predicting patient-specific outcomes based ondifferent TKA solutions and providing guidelines to surgeons. In fact, surgicalpre-planning is usually based on a patient’s evaluation that the clinician canmake also based on medical images, and clinical experience. Data reported inthe literature can help in guiding the surgeon to a final decision regarding thebest subject-specific solution.Numerical methods, able to simulate knee biomechanics for various configurations,can be fundamental for the development of the appropriate reliableand effective tools to support clinically-tailored responses to a question.In particular, they can be used for subject-specific analyses on the intact kneeand for supporting the surgical pre-planning phase by comparing the effect ofdifferent solutions.When developing a subject-specific knee model, different kinds of datainputsare needed, such as the knee shapes and alignment information, softtissuesbehavior and boundary conditions describing the investigated motortasks. Often, most of this requested data are unlikely to be available (e.g.subject-specific soft-tissues material properties). Consequently, it is a commonoperating procedure to integrate literature data with subject-specific informationin order to develop knee models for collecting personalized outputsthat could be used to address research and clinical questions.However, up to now, the resulting effect of different generalized sources, asa mix of subject-specific and literature data, still needs to be evaluated for itsimpact on personalized outputs concerning knee behaviour.Furthermore, clinical questions are often focused on specific requests thatpartially use features of more complex knee models that could require too muchtime to be efficiently incorporated into daily clinical evaluations.For these reasons, the principal aims of this research have been to assess,first, the impact of differently derived generalized sources on the developmentof an intact subject-specific knee model or after a TKA; second,to provide guidelines to identify efficient clinically-tailored data sourcesused in and for knee modeling.To accomplish these tasks, a numerical knee model of an intact knee wasdeveloped based on both subject-specific and literature data sources. Theinfluence of different approaches to deal with a subject’s information, such asthe reconstruction of the knee geometries from different imaging sources, hasiiibeen evaluated. Moreover, a sensitivity analysis was performed to understandthe potential changes on kinetics and kinematics outcomes due to differentlyderived literature inputs, such as models and the properties that characterizethe joint materials and ligaments description. The outputs collected after finiteelement analyses were analyzed and compared with already published experimentaloutcomes for the same analyzed specimen and replicated boundaryconditions.Additionally, the effects on knee joint contact forces and kinematics afterTKA surgery and due to the mis-alignment of implant components or misidentificationsof ligament insertions were evaluated in another sensitivityanalysis performed with a rigid body analysis for four different TKA designsimplanted in a subject-specific knee model. As for the intact knee model, theanalyzed configurations were compared against already published experimentaloutputs or literature data replicating similar boundary conditions.Moreover, several dedicated knee models were developed to address specificclinical questions, such as the lack of biomechanical explanations for certainbehaviours of TKA designs.Once compared to already published experimental or literature data, the resultsof the developed models agree.The main results from the numerical simulations performed show that, changingthe values of some of the parameters used as inputs, the knee model kinematicsis less influenced than the contact forces and stresses outputs.In particular, in developing an intact knee model, the main effecting parameteris the material properties selection for the knee cartilage layers. Among theconfigurations analyzed using subject-specific knee models with TKAs, theposition of the tibial component and the height of the patellar buttonare the most effecting inputs.Exploring the different chapters of this research thesis, several specific resultsare shown regarding each main step followed in developing a knee numericalmodel. For example, new approaches based on MRIs have been suggested andtested proving that they are suitable for collecting subject-specific informationregarding geometrical shapes and landmark definitions. Moreover, a newgraphical method was proposed resulting more effective and immediate thanconventional representations in reporting huge amount of data. In particular,the method is the favourite to show complex biomechanical analyses especiallyfor the clinical audience that replied to a survey. Furthermore, the differentmodels tailored to address specific clinical questions collected useful biomechanicalresults, to provide clinical advice or industrial guidelines, and can beconsidered as examples of what should be included in a knee model for similarscenarios.The results of this thesis offer several contributions. Generally, these findingscould provide useful guidelines for knee-model developers to achievea more balanced approach to subject-specific intact knee models based upongeneral sources in order to improve the understanding of personalized kneebiomechanics.To address a general comment to the title of this thesis, there is no singleanswer. In fact, the selection of data sources is case-dependent using, forexample, the subject’s or literature available data to describe material’s behavioror the boundary conditions of a specific motor task. Moreover, differentclinical questions can be addressed with different numerical approaches, e.g.finite element analysis is necessary especially in the case that stress outputs arerequested, but can be too time-consuming for addressing complex sensitivityanalyses.Once the knee model developer has identified the necessary data sources andthe approaches to be implemented, the question-tailored knee models can thusbe used for several applications such as predicting subject-specific abnormalknee kinematics and kinetics for different TKA designs, polyethylene wear,patellofemoral dislocation and bone remodeling, choosing the best fitting TKAdesign for a specific patient, and developing a procedure to optimize TKAimplant designs.

Abstract:
Since the building construction area is accounted for high share of energy usage (36 %) in Europe, there is high demand to pay attention to this area accurately. Sweden which is one of the pioneer countries in terms of building energy efficiency plans to reduce this value to 50 % by 2050. To reduce this value there is a need to define a mandatory guideline for builders by the government. So national board of housing, building and planning (Boverket) were given responsibility to define these regulations for builders and house owners. Parallel with that Swedish green building council developed a certification considering the buildin g’s energy demand, indoor air climate and environmental impact of building called Miljöbyggnad. While all the existing and new buildings following Boverket’s regulations meet this certification’s lowest limitations, some ambitious builders tend to fulfil its highest level of limitations called Gold level. This study aimed to design a house in the area of Smedjebacken to meet Miljö byggnad’s gold house’s energy category requirements. To meet the mentioned requirements several parametric studies regarding insulation thickness, windows assembly, heating and ventilation system are done via simulation software called TRNSYS. The result of testing several models show that although windows assembly does not affect this building ’s energy demand very much, other parameters such as insulation ’s thickness and type of heating system have a key role. In addition, a parametric study regarding the impact of thermal mass on the building energy demand is performed. The result shows that the effect of removed massive wood is compensated by replaced additional mineral wool insulation. In conclusion it is concluded that a single family house located in a cold climate like Smedjebacken using district heating cannot meet Miljöbyggnad’s gold level criteria without help of heat recovery ventilation. Furthermore, building with ground source heat pump as its heating system can meet Miljöbyggnad’s principals easier than those having district heating. In this case building with 200 mm insulation thickness even with exhaust air ventilation meets certification principals easily.

Water is a valuable and crucial resource, the protection of which poses environmental, social and economic challenges. Fundamental to the sustainable use of water is effective management. In the Canterbury region of New Zealand, nitrate contamination has become a resource management issue due to changes in land use and intensification, which have placed pressure on the region’s groundwater and surface water systems. The purpose of this study was to assess and track nitrate concentrations on the Central Canterbury Plains with specific emphasis on a local point source of nitrate, the Ashburton Meat Processors plant. To make this assessment review of historical data was followed by the collection of 131 groundwater and 25 surface water samples to analyse the geochemical properties of the water and the stable isotopic composition of nitrate in the water. It was hypothesised that nitrate concentrations at a regional scale have increased since regular records began and that the stable isotopic composition of different nitrate sources are not discernable. Nitrate concentrations across the Canterbury region were found to have increased, prompting concerns about water quality. Concentrations are elevated above natural background levels across much of the Canterbury Plains and extreme concentrations are associated with local point sources of nitrate. Nitrate concentrations down gradient of the Ashburton Meat Processing plant are shown to have declined approximately 5% per year for the past ten years, which is in contrast to the rest of the region, where average concentrations have nearly doubled in 20 years. The reduction of contamination from the point source is most likely the result of the implementation of better wastewater management practices in the early 21st century. The δ18O and δ15N values of nitrate were found to be relatively homogenous over the Canterbury Plains. Therefore, it is suggested by this study that the dual-isotope approach alone, is not a viable tool for nitrate source identification in the region. The uniform nitrate stable isotopic composition in Canterbury could be attributed to a single, principle source of nitrate, such as clover, that overprints other isotopic compositions of nitrate source, or may also be the result of soil processes and the farming techniques used in the region. This research presents important findings for the future of identifying and managing nitrate sources in the Canterbury region. Better management practices are required for the diffuse source(s) of nitrate contributing to the widespread contamination. Critical thinking and the willingness of stakeholders to engage in the identifying, documenting and solving problems is necessary to ensure the effective management and sustainability of this precious resource.

Classical swine fever virus (CSFV) is a highly infectious disease of pigs, which has devastating economic and social consequences. To minimise the potential for future outbreaks, it is important to assess the risk of CSFV introduction to the UK via porcine products. In doing so, the first aim was to determine the oral infectious dose 50% (oral PID50) of a highly virulent strain of CSFV. Previous work carried out at AHVLA has identified the oral PID50 of a moderately virulent CSFY strain, and so the aim of this study was to evaluate whether virulent strains have a lower or similar infectious dose, in order to represent a worst-case .scenario of susceptible pigs consuming pork containing CSFV. Through oral inoculation of pigs, the oral PIDso of Brescia was found to be 105.47 TCID50 with a 95% confidence interval of 105.1 to 105.8 TCID50.

Abstract:
The balance of the supply of renewable energy sources with electricity demand will become increasingly difficult with further penetration of renewable energy sources. Traditionally, large stationary batteries have been used to store renewable energy in excess of electricity demand and dispatch the stored energy to meet future electricity demand. Cool thermal energy storage is a feasible renewable energy balancing solution that has economic and environmental advantages over utility scale stationary lead-acid batteries. Two technologies, ice harvesters and internal-melt ice-on-coil cool thermal energy storage, have the capability to store excess renewable energy and use the energy to displace electricity used for building cooling systems. When implemented by a utility, cool thermal energy storage can replace large utility scale batteries for renewable energy balancing in utility regions with high renewable energy penetration. The California Independent System Operator (CAISO) region and the Electric Reliability Council of Texas (ERCOT) are utility regions with large solar and wind resources, respectively, that can benefit from installation of cool thermal energy storage systems for renewable energy balancing. With proper scheduling of energy dispatched from cool thermal energy storage, these technologies can be effective in displacing peak power capacity for the region, in displacing traditional building cooling equipment, and in recovering renewable energy that would otherwise be curtailed.

Termalne osobine svinjskog mesa (Longissimus dorsi) osmotski dehidratisanog u melasi šećerne repe i svežeg svinjskog mesa praćene su metodama termalne analize: Diferencijalnom skenirajućom kalorimetrijom (DSC), termogravimetrijskom analizom (TGA), modulovanom diferencijalnom skenirajućom kalorimetrijom (MDSC). Dobijeni rezultati pokazuju postojanje novonastale proteinske osnove osmotski dehidratisanog svinjskog mesa koji je posledica smanjenja količine vode i interakcije komponenti melase s proteinima mesa. Nađeno je da osmotskom dehidratacijom dolazi do promene i pregrupisavanja preostale slobodne vode u dva oblika, što ukazuje na mehaničko strukturne promene u interfibrilarnoj mreži i pojednostavljivanje strukture proteinske osnove. Definisani su nastali strukturni nivoi proteinske osnove: strukturni nivo vode vezane na protein tj. postojanje proteinske strukture i posle osmotske dehidratacije -strukturni nivo I; strukturni nivo mreže sa ujednačeno manjim porama tj. nivo energetski jače vezane imobilizirane -strukturni nivo II; strukturni nivo mreže sa ujednačeno većim porama tj. nivo energetski slabije vezane imobilizirane -strukturni nivo III.Ispitivanjem termalnih osobina uzoraka osmotski dehidratisanog mesa sa smanjenom vlagom ( ispod 20%) nađeno je postojanje staklastog prelaza pošto je najveća količina vode vezana za čvrsti matriks. Definisani su optimalni uslovi rehidratacije osmotski dehidratisanog svinjskog mesa, te su određene Pelegove konstante rehidratacije. Nađeno je postojanje nativnih struktura proteina u osmotski dehidtiranom mesu i određeni su kinetički parametri denaturacije (Ea, kb) svežeg i osmotski dehidriranog mesa. Određen je sadržaj makroelemenata osmotski sušenog svinjskog mesa. Radi objašnjenja složenosti interakcija proteina mesa i sastojaka osmotskog rastvora melase koje se odvijaju pri dehidrataciji, kao model sistem poslužila je interakcija proteina albumina goveđeg seruma (BSA) s jonima nekih makroelemenata prisutnih u melasi.
Thermal properties of pork meat (Longissimus dorsi) osmotically dehydrated in sugar beet molasses and fresh pork were followed by the methods of thermal analysis: Differential Scanning Calorimertry (DSC), Thermogravimetric Analysis (TGA), Modulated Differential Scanning Calorimetry (MDSC). The results indicate the existence of newly formed protein matrix as a consequence of osmotic dehydration of pork meat: reducing the amount of water and the interaction of the components of molasses and meat proteins. It has been found that changes were induced by the process of osmotic dehydration, and rearrangeement of the remaining free water in two forms. Also as a consequence of the osmotic dehydration, structural changes in the interfibrilar network and simplifying of the original structure of the meat protein matrix were occurred. A structural levels of protein matrix were defined: as structural level of the water bound to the protein, meaning the existence of protein structure and after osmotic dehydration Structural level I; a structural level with uniformly small pores in the network of formed protein matrix: energy level of more tightly immobilized water –Structural level II; and structural level of network with uniformly larger pores, energy level of lower bound immobilized water - Structural level III. By characterization of the thermal properties of the samples of osmotically dehydrated meat with reduced moisture (below 20%) the glass transition was found, as most of the water bound to a solid matrix.The optimal conditions for rehydration of dehydrated pork meat were defined, and Peleg‘s rehydration constants were obtained. It was found that the existence of the native structure of the protein in the osmotically dehydrated meat, and the kinetic parameters of protein denaturation (Ea, kb) of fresh and dehydrated meat were obtained. The content of macroelements in the osmotically dehydrated, fresh pork meat and in the sugar beet molasses were obtained. In order to explain the complexity of the interaction of meat proteins with the components of the osmotic solution -molasses that occur in the dehydration process, the model-system of the protein bovine serum albumin (BSA) interaction with the ions were implied to present simple interaction of some major elements with a protein matrix followed by DSC and ITC .

Abstract:

It is a well-known fact that there are significant differences in production output and business results of farms operating under rather similar natural and socio-economic conditions. Such differences can be attributed to biological factors, specialization level and production intensity, size of farms, implemented production practice, but also to the differences in capabilities of farmers, that is, their managerial capacities.
The starting point in selection of subjects for the research was significance of managerial capacities and the fact that not enough attention is dedicated to them, as well as the necessity of urgent improvement of competitiveness in production of poultry meat in our country. Therefore, the subject of the research in this doctoral dissertation is managerial capacities of broiler producers in Vojvodina. When analysing managerial capacities of broiler producers, not only were personal aspects taken into account (gender, age, education level, previous experience, etc.), but the subject of consideration includes characteristics of decision making process (planning, implementation and control) as well. The main objective of the study is to point out to the significance of managerial capacities, possibilities and methods implemented in their assessment, and to establish the reason why some of the broiler producers in Vojvodina, operating under rather similar conditions, are more efficient as compared to other farmers. In order to analyse managerial capacities of broiler producers and to judge whether and to what extent do they influence the production output (technical and economic efficiency), 30 broiler farms of different production capacities, all at the territory of AP Vojvodina, were comprised in the analysis.
One of the starting hypotheses in this study considers significant differences in technical and economic efficiency between the selected broiler farms. Technical and economy efficiency indexes, obtained by implemented DEA method, indicate that such hypothesis was justified. The obtained TE indexes point out that broiler producers in Vojvodina are relatively technically efficient (six out of thirty producers achieved maximum level of TE). However, the number of farms that achieved maximum level of EE is much lower (only one out of thirty farms achieves maximum level of EE), which indicates the market difficulties that producers are coping with, but also proves that it is possible to operate better under the existing conditions which are assumed to be the same for all. The number of economically inefficient farms could be reduced through decrease of production costs (primarily reduction of feed costs, increase of operation productivity, reduction of energy costs, etc.), which certainly requires, as one of preconditions, the adequate managerial capacities of producers.
The assumption that certain aspects of managerial capacities, such as personal aspects and decision making process, influence TE and EE has been confirmed with the results of Tobit regression. Statistically significant influence of achieved TE and EE is confirmed in 9 out of 82 variables included in the models. This certainly does not mean

that other aspects of managerial capacities are not significant, but that under current conditions, relatively small number of variables determines the number of farms that will manage to achieve or at least to nearly achieve “the best possible practice”.
Statistically significant influence was also proven in certain personal aspects of producers, as well as in some aspects of decision making process. Therefore, it is necessary to explain to producers and advisors the significance of the aforesaid aspects and to work on their improvement. The only aspect proven as significant both for TE and EE is the experience of farmers, which only explains the poor working environment that our producers operate in. The conclusion which can be derived from the aforesaid is that the most significant and irreplaceable managerial capacity of broiler producers is their experience. Such experience mainly refers to business relations and acquaintances obtained from long-lasting engagement in broiler production, but also to their ability to find their way and achieve success in conditions of the black economy.
The fact that there is no statistical significance in terms of influence of certain aspects of managerial capacities on TE and EE, actually points out to underdevelopment of the required managerial capacities of broiler producers. Therefore, the improvement of managerial abilities must be set as the permanent task, so competitiveness of poultry meat sector could be increased. To this effect, it is necessary to provide constant education through trainings and seminars, as well as regular cooperation with advisory service (particularly in terms of significance of keeping records, planning and control of the achieved results), but also through exchange of experience and cooperation with other producers.

Istraživanje je sprovedeno u cilju utvrđivanja uticaja ukrštanja mangulice sa durokom  na proizvodne i zdravstvene parametre, kao i na kvalitet mesa, a sve to uporedo sa jednom modernom plemenitom rasom svinja – veliki jorkšir. U tu svrhu formirane su tri grupe – genotipa svinja, čista rasa bela mangulica (BM), melezi duroka i bele mangulice (DBM), i čista rasa veliki jorkšir (VJ), koji su smešteni u iste uslove ishrane, nege i držanja. Svinje iz grupa DBM i VJ su znatno brže prirasle do ciljane telesne mase od 150 kg u odnosu na svinje BM. Tako je melezima duroka i bele mangulice trebalo u proseku 168 dana manje, a svinjama iz grupe VJ 288 dana manje kako bi dostigli ciljanu telesnu masu u odnosu na svinje bele mangulice u čistoj rasi. Po pitanju zdravstvenog stanja i nalaza na trupovima zaklanih svinja post mortem nisu utvrđene značajne razlike. Značajne razlike su utvrđene u hematološkim i biohemijskim parametrima i to između sve tri ispitivane grupe, ali i između različitih starosnih kategorija u okviru iste ispitivane grupe, što nam ukazuje na značaj tačnijeg utvrđivanja referentnih parametara normalnih fizioloških vrednosti hematoloških i biohemijskih parametara ne samo posebno za pojedine vrste životinja, već dakako i za različite starosne kategorije u okviru iste vrste. Meso poreklom od svinja iz grupe BM imalo je najveći sadržaj intramuskularne masnoće, i tamniju i crveniju boju, dok za njima odmah slede melezi sa značajnim razlikama između sva tri ispitivana genotipa. Nadalje, meso svinja rase bela mangulica je imalo značajno veću krajnju vrednost pH, bolju sposobnost vezivanja vode, veći sadržaj kalcijuma, cinka, gvožđa, bakra i mangana, u poređenju sa druga dva genotipa. Ukrštanje bele mangulice i duroka je imalo značajan uticaj na pojedinačni sastav masnih kiselina u mesu. Međutim, zbir zasićenih, mononezasićenih i polinezasićenih masnih kiselina je ostao nepromenjen. Meso svinja rase bela mangulica i meleza dobijenih ukrštanjem svinja rasa bela mangulica i durok značajno je nežnije – mekše. Mononezasićene masne kiseline su najzastupljenije u mesu poreklom od svih životinja, dok za njima slede zasićene i na kraju polinezasićene masne kiseline. Meso poreklom od BM i DBM je imalo značajno veći sadržaj mononezasićenih masnih kiselina, i značajno manji sadržaj zasićenih masnih kiselina u odnosu na VJ. Generalno, na osnovu svih ispitanih parametara kvaliteta polutki i mesa može se konstatovati da svinje rase bela mangulica karakteriše manja mesnatost polutki, ali i meso koje ima odličan senzorski, tehnološki i nutritivni kvalitet, dok meleze svinja dobijenih ukrštanjem svinja rasa bela mangulica i durok karakteriše veća mesnatost polutki i nešto slabiji, ali još uvek veoma dobar, kvalitet mesa, te su neophodna dodatna istraživanja kako bi smo dobili i podatake o kvalitetu suvomesnatih proizvoda. Takođe, potrebna su dodatnaistraživanja, preciznijeg karaktera u pogledu kvaliteta i ekonomičnosti proizvodnje kod autohtonih rasa, kao i preispitivanje kriterijuma selekcije koji se primenjuju kod mangulice, te parametara genetskog progresa, tj. efekta selekcije, kako bi iako autohtona uhvatila korak za opstanak ili prestiž u odnosu na moderne rase svinja.
The research was carried out in order to determine the effect of the cross-breeding of mangulets with durok on production and health parameters, as well as on the quality of meat, all along with a modern, noble breed of pigs - a large Yorkshire. For this purpose, three groups - pig genotypes, pure breeds of white mangulica (BM), meliaceae and white manguns (DBM), and pure breed, Yorkshire (VJ), were placed in the same conditions of nutrition, care and keeping. Pigs from the DBM and VJ groups increased significantly to a target bodyweight of 150 kg compared to BM pigs. Thus, mulberry and white mangulets were average 168 days less, and 288 days lower for pigs from the VJ group in order to reach their target body mass compared to white mangun pigs in a clean race. There are no significant differences in terms of health status and findings on carcases of slaughtered pigs post-mortem. Significant differences were established in the hematological and biochemical parameters, among all three groups studied, but also between different age categories within the same investigated group, which points to the importance of more precise determination of the reference parameters of normal physiological values of hematologic and biochemical parameters not only for individual species of animals, but also for different age categories within the same species. Meat originating from pigs from the BM group had the highest content of intramuscular fat, and the darker and redder color, followed by moles with significant differences between all three investigated genotypes. Furthermore, the pig meat of the white mangulce had a significantly higher end value of pH, better water binding capacity, higher content of calcium, zinc, iron, copper and manganese, compared to the other two genotypes. The crossing of white mangulce and durok had a significant effect on the individual composition of fatty acids in the meat. However, the sum of saturated, monounsaturated and polyunsaturated fatty acids remained unchanged. Meat of pig breeds white mangulica and molasses obtained by crossing the pig race white mangulica and durok is significantly more gentler - softer. Monounsaturated fatty acids are the most common in meat originating from all animals, followed by saturated and at the end of polyunsaturated fatty acids. Meat originating from BM and DBM had a significantly higher content of monounsaturated fatty acids, and significantly lower saturated fatty acid content than VJ. In general, on the basis of all the tested parameters of the quality of the halves and flesh, it can be concluded that the pig breeds of white mangulets are characterized by lower meatiness of the hemispheres, but also meat that has excellent sensory, technological and nutritive quality, while the piglets of pigs obtained by crossing the pig rasa white mangulica and durok are characterized by larger lean meat and slightly weaker but still very good quality of meat, and further research is needed in order to obtain data on the quality of the cream products. Also, additional ones are neededresearch, a more precise character in terms of quality and cost-effectiveness in autochthonous breeds, as well as the reconsideration of selection criteria applied to mangulas and parameters of genetic progress, i.e. the effect of the selection, in order to take an autochthonous step in survival or prestige in relation to modern pig breeds.

Abstract:
Cilj ovog rada bio je da se ustanovi da li dolazi do elektrohemijskog taloženja  niobijuma i aluminijuma iz hloroaluminatnih rastopa obogaćenih niobijumom na podlogama od staklastog  ugljenika, platine i zlata. Nadalje, ako dolazi do rečenog  taloženja, da li pri tome dolazi i do formiranja legura niobijuma sa izabranim podlogama kao i da li dolazi do formiranja legura niobijuma sa zajednički taloženim aluminijumom. I na kraju,  cilj je  bio da se navedeni fenomeni ostvare na što nižim temperaturama.Nb  i  Al  su elektrohemijski taloženi na staklastom ugljeniku, platini i zlatu pri 200  °C, pod atmosferom argona, iz rastopa napravljenog od ekvimolarne smeše AlCl3 + NaCl kome  je dodat niobijum.U istraživanjima su korišćene: linearna  i  ciklička voltametrija, metoda potenciodinamičke polarizacione krive, metoda „otvorenog kola“,  hronoamperometrija,  SEM,  EDS, AFM  i XRD analiza.Elektrohemijsko taloženje Nb i Al iz primenjenih rastopa pri potpotencijalima uočeno je na podlozi od zlata. Taloženje niobijuma pri potpotencijalima na zlatu je novost, a taloženje Al na zlatu pri  potpotencijalima poznato je od ranije. Elektrotaloženje  Al  i  Nb  iz primenjenih rastopa pri potpotencijalu na zlatu prethodi procesima elektrotaloženja niobijuma i aluminijuma pri natpotencijalima.  Rezultat ovih procesa su Nb/Au i Al/Au legure nastale zajedničkim taloženjem i interdifuzijom istaloženog Nb, odnosno  Al i podloge  -  zlata (AlAu,  AlAu2 , AlAu4, AlNb2 , AlNb3 , Au2Nb, Au2Nb3 , AuNb3 , AlNb3).Elektrohemijsko taloženje Nb iz primenjenih rastopa pri potpotencijalima uočeno je na platini i prethodi procesima elektrotaloženja  Nb  i  Al. Rezultat su formirane Nb/Pt legure nastale interdifuzijom  istaloženog Nb i podloge  -  platine (Nb3Pt). Pri natpotencijalima aluminijuma na  platini dolazi do taloženja metalnog niobijuma, metalnog aluminijuma i zajedničkog taloženja Nb i Al. Kao posledica  ovih procesa dolazi i do formiranja legura (AlNb3, Al3Pt5 ,  Nb3Pt).Elektrohemijsko taloženje niobijuma iz primenjenih rastopa na izabranim podlogama odigrava se na potencijalima koji su pozitivniji od potencijala  elektrotaloženja aluminijuma.Sve dobijene legure formirane su pri temperaturi od 200 °C što je nekoliko stotina stepeni niže od odgovarajućih temperatura potrebnih da se formiraju termičkim putem. 
The aim of this study was to establish electrodeposition of niobium and aluminium from chloroaluminate melt (AlCl3 + NaCl) enriched with niobium onto gold, platinum and glassy carbon substrates. Furthermore, if such deposition is shown to occur,  to  assess if it can lead to formation ofniobium alloys with chosen substrates or  formation of Nb/Al alloys as a result of codeposition. And finally, if the deposition is indeed confirmed,  to  establish the lowest operational temperature at which it is possible.Niobium and aluminium were electrodeposited onto glassy carbon, gold and platinum at  200 °C, under an argon atmophere  from the melt made of  equimolar mixture AlCl3 + NaCl with niobium being added.Research methods used were:  cyclic voltammetry, potentiodynamic polarization curves, "open circuit”, chronoamperometry,  SEM,  EDS, AFM and  XRD  analysis. Underpotential deposition of  Nb  and Al  from the melt onto gold substrate was observed. Of the two, niobium deposition is a novelty, while alumininum deposition has been previously studied.  Underpotential deposition of  NB and Al onto gold from given melt precedes the overpotential deposition of aluminium and niobium onto gold. The result of these processes are Nb/Au and Al/Au alloys formed by codeposition of the two metals  and  interdiffusion between the Nb and Al deposits and the substrate -gold (AlAu, AlAu2, AlAu4, AlNb2, AlNb3,  Au2Nb, Au2Nb3, AuNb3, AlNb3). Underpotential deposition of niobium onto platinum from used melts was recorded and it precedes the  processes of overpotential deposition of niobium and aluminium. The result is formation of Nb/Pt alloys as a consequence of  interdiffusion between the substrate and the deposited Nb (Nb3Pt). The potentials more negative than the aluminium deposition potential in the used system lead to deposition of niobium and aluminium  individually and jointly. Thus, a number of alloys are formed (AlNb3, Al3Pt5, Nb3Pt).  Niobium electrodeposition onto chosen substrates from the melt applied takes place at potentials which are more positive than the potential of electrodeposition of aluminium. Formation of  the  obtained alloys occurred at a temperature of 200 °C which is several hundred degrees lower than the temperatures needed for their formation by thermal methods.

Abstract:
Задатак ове докторске дисертације је био да се испита могућност и ефекти примене мешавине етарских уља тимијана (Thymus vulgaris), оригана (Origanum vulgare) и рузмарина (Rosmarinus officinalis), као природног промотера раста, у узгоју бројлерских пилића на производне карактеристике, биохемијске параметре крви, хисто-морфолошке параметре јетре и цревних ресица, сварљивост хранљивих материја, квалитет трупа и меса пилића, као и на економичност саме производње.У циљу реализације постављених задатака изведен је биолошки оглед у којем су коришћени бројлерски пилићи линијског хибрида Ross 308. Биолошки оглед је изведен на укупно 840 једнодневних бројлерских пилића, подељених у три огледна третмана, два експериментална и један контролни. Као природни промотер раста коришћена је мешавина етарских уља тимијана, оригана и рузмарина у концентрацијама од 0,05 и 0,10%.Током огледног периода континуирано су праћене производне карактеристике бројлерских пилића, а на основу анализе добијених резултата закључено је да испитивана мешавина етарских уља тимијана, оригана и рузмарина може веома успешно да се користити у исхрани бројлерских пилића као природни промотер раста. Позитиван утицај овог додатка је најпре исказан кроз пораст прираста бројлерских пилића (4,29-4,61%), као и на конверзију хране код јединки (7,69-8,28%). Посматрано по периодима исхране, најекономичнија производња бројлерских пилића у стартер периоду исхране постигнута применом 0,05% мешавине етарских уља тимијана, оригана и рузмарина у исхрани бројлерских пилића, док се у гровер периоду исхране ефикаснијом показала доза од 0,10%. Најекономичнија производња бројлерских пилића током целокупног периода това остварена је применом 0,05% мешавине етарских уља тимијана, оригана и рузмарина у исхрани, будући да је у овом третману постигнута најмања вредност цене прираста пилића (71,41 din/kg) највећа вредност индекса економске ефикасности, као и најмања вредност индекса цена производње. Анализом резултата добијених испитивањем активности панкреасних ензима у крвеном серуму и панкреасу бројлерских пилића, установљено је да додата мешавина етарских уља утиче позитивно на активност поменутих ензима у панкреасу, при чему је установљена и значајна позитивна корелација између активности протеазе у панкреасу и крвном серуму бројлерских пилића (r =+0,858; p<0,05). Када је реч о специфичном титру антитела у крвном серуму бројлерских пилића утврђено је да је примена мешавине етарских уља тимијана, оригана и рузмарина у исхрани бројлерских пилића у концентрацији од 0,10% допринела благом порасту концентрације IgА антитела у крви што потенцијално представља индикатор јачања имунолошког система, док је статистички значајан (p<0,05) утицај уочен и на секрецију IgG антитела у крвном серуму бројлерских пилића у оба експериментална третмана. Додата мешавина етарских уља није испољила ефекте на одабране показатеље липидног статуса крви бројлерских пилића, међутим утицала је на значајно побољшање сварљивости сирових протеина, сирове масти, сировог пепела, калцијума и фосфора код бројлерских пилића, чиме је повећана искористљивост основних хранљивих материја, а самим тим су побољшане и производне карактеристике. Утврђене појединачне вредности свих испитаних фактора квалитета трупа закланих пилића указују на позитивне ефекте које су фитобиотици испољили у организму бројлерских пилића. Такође, применом наведене мешавине етарских уља у исхрани бројлерских пилића добијено је пилеће месо побољшаних нутритивних, технолошких и сензорских својстава. С обзиром на значај масних киселина у исхрани људи, од велике важности је позитиван учинак који је додата мешавина етарских уља тимијана, оригана и рузмарина испољила на маснокиселински састав меса бројлерских пилића. Смањен је садржај засићених масних киселина, уз истовремено повећање садржаја полинезасићених масних киселина, чиме је постигнут препоручен однос n-6 / n-3 масних киселина у месу пилића.На основу добијених резултата може се закључити да се избалансираном храном за бројлерске пилиће, са оптималним саставом и садржајем природних промотера раста могу добити пилићи побољшаних производних карактеристика, који се одликују ефикасном сварљивошћу хранљивих материја, те имају добре рандмане и више меса на трупу. Додатно, добијено месо je побошљаног нутритивног, технолошког и сензорског квалитета, обогаћено n-3 масним киселинама и одликује се оптималним односом n-6/n-3 масних киселина. Када се на све то додају и позитивни економски параметри производње онда се са сигурношћу може тврдити да је употреба мешавине етарских уља тимијана, оригана и рузмарина у исхрани бројлерских пилића потпуно оправдана.
Zadatak ove doktorske disertacije je bio da se ispita mogućnost i efekti primene mešavine etarskih ulja timijana (Thymus vulgaris), origana (Origanum vulgare) i ruzmarina (Rosmarinus officinalis), kao prirodnog promotera rasta, u uzgoju brojlerskih pilića na proizvodne karakteristike, biohemijske parametre krvi, histo-morfološke parametre jetre i crevnih resica, svarljivost hranljivih materija, kvalitet trupa i mesa pilića, kao i na ekonomičnost same proizvodnje.U cilju realizacije postavljenih zadataka izveden je biološki ogled u kojem su korišćeni brojlerski pilići linijskog hibrida Ross 308. Biološki ogled je izveden na ukupno 840 jednodnevnih brojlerskih pilića, podeljenih u tri ogledna tretmana, dva eksperimentalna i jedan kontrolni. Kao prirodni promoter rasta korišćena je mešavina etarskih ulja timijana, origana i ruzmarina u koncentracijama od 0,05 i 0,10%.Tokom oglednog perioda kontinuirano su praćene proizvodne karakteristike brojlerskih pilića, a na osnovu analize dobijenih rezultata zaključeno je da ispitivana mešavina etarskih ulja timijana, origana i ruzmarina može veoma uspešno da se koristiti u ishrani brojlerskih pilića kao prirodni promoter rasta. Pozitivan uticaj ovog dodatka je najpre iskazan kroz porast prirasta brojlerskih pilića (4,29-4,61%), kao i na konverziju hrane kod jedinki (7,69-8,28%). Posmatrano po periodima ishrane, najekonomičnija proizvodnja brojlerskih pilića u starter periodu ishrane postignuta primenom 0,05% mešavine etarskih ulja timijana, origana i ruzmarina u ishrani brojlerskih pilića, dok se u grover periodu ishrane efikasnijom pokazala doza od 0,10%. Najekonomičnija proizvodnja brojlerskih pilića tokom celokupnog perioda tova ostvarena je primenom 0,05% mešavine etarskih ulja timijana, origana i ruzmarina u ishrani, budući da je u ovom tretmanu postignuta najmanja vrednost cene prirasta pilića (71,41 din/kg) najveća vrednost indeksa ekonomske efikasnosti, kao i najmanja vrednost indeksa cena proizvodnje. Analizom rezultata dobijenih ispitivanjem aktivnosti pankreasnih enzima u krvenom serumu i pankreasu brojlerskih pilića, ustanovljeno je da dodata mešavina etarskih ulja utiče pozitivno na aktivnost pomenutih enzima u pankreasu, pri čemu je ustanovljena i značajna pozitivna korelacija između aktivnosti proteaze u pankreasu i krvnom serumu brojlerskih pilića (r =+0,858; p<0,05). Kada je reč o specifičnom titru antitela u krvnom serumu brojlerskih pilića utvrđeno je da je primena mešavine etarskih ulja timijana, origana i ruzmarina u ishrani brojlerskih pilića u koncentraciji od 0,10% doprinela blagom porastu koncentracije IgA antitela u krvi što potencijalno predstavlja indikator jačanja imunološkog sistema, dok je statistički značajan (p<0,05) uticaj uočen i na sekreciju IgG antitela u krvnom serumu brojlerskih pilića u oba eksperimentalna tretmana. Dodata mešavina etarskih ulja nije ispoljila efekte na odabrane pokazatelje lipidnog statusa krvi brojlerskih pilića, međutim uticala je na značajno poboljšanje svarljivosti sirovih proteina, sirove masti, sirovog pepela, kalcijuma i fosfora kod brojlerskih pilića, čime je povećana iskoristljivost osnovnih hranljivih materija, a samim tim su poboljšane i proizvodne karakteristike. Utvrđene pojedinačne vrednosti svih ispitanih faktora kvaliteta trupa zaklanih pilića ukazuju na pozitivne efekte koje su fitobiotici ispoljili u organizmu brojlerskih pilića. Takođe, primenom navedene mešavine etarskih ulja u ishrani brojlerskih pilića dobijeno je pileće meso poboljšanih nutritivnih, tehnoloških i senzorskih svojstava. S obzirom na značaj masnih kiselina u ishrani ljudi, od velike važnosti je pozitivan učinak koji je dodata mešavina etarskih ulja timijana, origana i ruzmarina ispoljila na masnokiselinski sastav mesa brojlerskih pilića. Smanjen je sadržaj zasićenih masnih kiselina, uz istovremeno povećanje sadržaja polinezasićenih masnih kiselina, čime je postignut preporučen odnos n-6 / n-3 masnih kiselina u mesu pilića.Na osnovu dobijenih rezultata može se zaključiti da se izbalansiranom hranom za brojlerske piliće, sa optimalnim sastavom i sadržajem prirodnih promotera rasta mogu dobiti pilići poboljšanih proizvodnih karakteristika, koji se odlikuju efikasnom svarljivošću hranljivih materija, te imaju dobre randmane i više mesa na trupu. Dodatno, dobijeno meso je pobošljanog nutritivnog, tehnološkog i senzorskog kvaliteta, obogaćeno n-3 masnim kiselinama i odlikuje se optimalnim odnosom n-6/n-3 masnih kiselina. Kada se na sve to dodaju i pozitivni ekonomski parametri proizvodnje onda se sa sigurnošću može tvrditi da je upotreba mešavine etarskih ulja timijana, origana i ruzmarina u ishrani brojlerskih pilića potpuno opravdana.
The main objective of this research was to investigate the possibility and effects of dietary essential oils mixtures of thyme (Thymus vulgaris), oregano (Origanum vulgare) and rosemary (Rosmarinus officinalis), as a natural growth promoter, in broiler chicken nutrition on productive performances, blood biochemical parameters, morphological parameters of liver and villus, ileal nutrient digestibility, carcass characteristics and broiler meat quality, as well on the economic efficiency coasts of broiler chicken production. In order to realize the tasks set, biological trial was carried out on which Ross 308 strain broiler chickens. A totall of 840 one-day-old broiler chickens were equally distributed into three dietary treatments, two experimental and one control. As a natural growth promoter dietary thyme, oregano and rosemary essential oils mixture in concentrations 0.05 i 0.10% was used.During the experimental period, the production characteristics of broiler chickens were continuously monitored. Based on the analysis of the obtained results, it was concluded that the dietary thyme, oregano and rosemary essential oils mixture can be used very successfully in the nutrition of broiler chickens as a natural growth promoter. The positive effect of this supplement was first expressed through the increase in broiler chickens body weight gain (4.29-4.61%), as well through the feed conversion ratio (7.69-8.28%). Observed by the nutrition periods, the most economical production of broiler chickens in the starter period was achieved using 0.05% of the dietary thyme, oregano and rosemary essential oils mixture, while in a grover period a 0.10% dose proved to be more effective. The most economical production of broiler chickens during the entire fattening period was achieved using 0.05% of the dietary thyme, oregano and rosemary essential oils mixture in nutrition, since in this treatment the lowest value of body weight gain price (71.41 din/kg) was achieved, as well as the highest value of the economic efficiency index, and the smallest value of the price index. Regarding the activity of pancreatic enzymes in blood serum and pancreas of broiler chickens, it was found that the added mixture of essential oils had positive influence on the enzymes activity in pancreas, with a significant positive correlation between the protease activity in the pancreas and the blood serum of broiler chickens (r=+0.858; p<0.05). When it comes to the specific antibody titer in the blood serum of broiler chickens, it has been found that the use of a dietary thyme, oregano and rosemary essential oils mixture in broiler chickens nutrition at a concentration of 0.10% contributed to a mild increase in the IgA antibody concentration in the blood, which potentially represents an indicator of the strengthening of the broiler chickens immune system, while statistically significant (p<0.05) influence was observed on the IgG antibodies secretion in blood serum of broiler chickens in both experimental treatments. The added mixture of essential oils did not influence lipid profile status of broiler chickens blood, however, had positive effect on the digestibility of raw proteins, raw fats, raw ash, calcium and phosphorus in broiler chickens, which increased the utilization of basic nutrients, and therefore production characteristics of broiler chickens were improved. Improved carcass characteristics in experimental treatments indicate positive effects that phytobiotic exhibited in broiler chickens. Moreover, using the mixture of essential oils, nutritional, technological and sensory properties of chicken meat has been improved. Considering the importance of fatty acids in human nutrition, the positive effect of dietary thyme, oregano and rosemary essential oils mixture on the fatty acid composition of broiler chicken meat has a great significance. The saturated fatty acids content was reduced, while the polyunsaturated fatty acids content was increased, thus achieving the recommended ratio of n-6/n-3 fatty acids in chicken meat.Based on the obtained results, it can be concluded that with well-balanced feed, which contains optimal composition and content of natural growth promoters, can produce broiler chickens with improved production characteristics, which are characterized by an effective nutrients digestibility, and have good carcass yield and more meat. In addition, the obtained meat will have improved nutritive, technological and sensory quality, enriched with n-3 fatty acids and with optimal ratio of n-6/n-3 fatty acids. When all of this is added to the positive economic parameters of production then it can be safely claimed that the use of a dietary thyme, oregano and rosemary essential oils mixture in broiler chickens nutirition is completely justified.

En la presente Tesis Doctoral se utilizaron cebada y remolacha como fuentes alternativas de carbohidratos en dietas para trucha arcoíris con el objetivo de evaluar su efecto sobre parámetros productivos, histología hepática e intestinal, estrés y calidad de la carne. Los marcadores estudiados fueron los mismo tanto para los experimentos de cebada como de remolacha. En las pruebas de la cebada se utilizaron concentraciones crecientes de este ingrediente (0-32%) en la dieta, se inició con un peso medio de 127.72 ± 5.65 g y se finalizó cuando alcanzaron el peso comercial al cabo de 84 días. En las pruebas de remolacha se utilizaron dos niveles de remolacha (14% y 28%) y dos de betaína (0.9% y 1.63%), se inició con un peso medio de 69 ± 2.2 g y se finalizó cuando los peces alcanzaron el peso comercial al cabo de 105 días. La inclusión de cebada en dietas de trucha arcoíris no mostró diferencias significativas en los parámetros de crecimiento ni biométricos. La inclusión de 14% remolacha y 0.9% betaína no afectó al crecimiento, parámetros nutritivos, biométricos y retenciones de nutrientes en comparación con el control, concentraciones mayores de remolacha y betaína tuvieron un efecto negativo. Cuando se estudiaron los parámetros histológicos y morfométricos en hígado e intestino, los resultados mostraron que los peces alimentados con concentraciones crecientes de cebada mostraron hepatocitos más pequeños, mientras que los peces alimentados con remolacha y betaína presentaban hepatocitos más grandes, en ambos casos el hígado mostró un menor nivel de vacuolización. La concentración de cebada de un 8% produjo un efecto negativo a nivel morfológico del intestino, sin embargo, la inclusión de remolacha no produjo ningún efecto. Los peces fueron sometidos a estrés por ausencia de oxígeno y aumento de densidad durante 10 minutos. Cuando el estrés fue analizado a nivel bioquímico los resultados mostraron que a niveles basales, la inclusión de cebada y remolacha no causó ningún cambio en los niveles de cortisol, glucosa y MDA, aunque los valores basales de lactato fueron significativamente más bajos en los peces alimentados con remolacha y betaína. Treinta minutos después del estrés la concentración de cortisol, glucosa y lactato aumentó significativamente en los peces de todos los grupos y la concentración de MDA disminuyó. La inclusión de cebada mostró valores más bajos de cortisol, glucosa y lactato que la dieta control. Cuando los peces alcanzaron el peso comercial se analizó la calidad de los filetes y las propiedades antioxidantes. En ambas pruebas los peces alimentados con los ingredientes objeto de estudio mostraron valores de actividad de agua más bajos y una mejora en la textura y el color de los filetes comparado con los peces alimentados con la dieta control. La inclusión de remolacha y betaína no tuvo ningún efecto sobre los parámetros oxidativos del filete, mientras que la inclusión de cebada inhibió su oxidación lipídica. Concentraciones de cebada por encima del 8% mejoraron la actividad antioxidante de los filetes y aumentaron el contenido en alpha-tocoferol, sin embargo, los peces alimentados con remolacha y betaína mostraron un mayor contenido en flavonoides y fenólico pero no se observó ningún efecto sobre las propiedades antioxidantes del filete. Por último, cuando se llevó a cabo el análisis sensorial se observó que los peces alimentados con dietas con más de un 8% de cebada mostraron unas agallas más rojas y mejor textura, además de un color rojo del filete más intenso, parámetros que se correlacionan con una mejora de la frescura del pescado. Sin embargo, la inclusión de cebada o remolacha en dietas de trucha arco iris no tuvo ningún efecto sobre la aceptabilidad de los filetes.
The current Doctoral Thesis used barley and red beet as alternative carbohydrate sources in rainbow trout diets. The aim was to evaluate their effect on productive, histological and morphometric parameters, their effect on biochemical indexes after an acute stress and their effect on the quality of rainbow trout (Oncorhynchus mykiss). The different markers studied were the same in the barley and red beet experiments. In the barley experiment, increasing concentrations of barley (0-32%) were used in the diet, starting with an average weight of 127.72 ± 5.65 g and ending when they reached commercial weight after 84 days. In the red beet experiment, two red beet levels (14% and 28%) and two betaine levels (0.9% and 1.63%) were used, starting with an average weight of 69 ± 2.2 g and finishing when they reached commercial weight at the end of 105 days. The inclusion of barley in rainbow trout diets did not show significant differences in growth and biometric parameters. While the inclusion of 14% of red beet and 0.9% betaine did not affect growth, nutritive or biometric parameters and nutrient retentions compared to control, higher red beet and betaine concentrations showed a negative effect. When the histological and morphometric parameters were studied in liver and intestine, the results showed that fish fed at high barley concentrations showed smaller hepatocytes than control, while hepatocytes were larger in fish fed with red beet and betaine than control, however, in both cases, the liver had a lower level of vacuolization. Barley inclusion at 8% produced a negative effect at intestine morphological level; however, no effects were observed with the inclusion of red beet. Fish were submitted to stress, a lack of oxygen and increased of fish density, during 10 minutes. The results showed that at basal levels, the inclusion of barley and red beet did not cause any change in cortisol, glucose and MDA levels, although basal lactate values were significantly lower in the fish fed with red beet and betaine. Thirty minutes after stress the concentration of cortisol, glucose and lactate increased significantly in the fish of all groups and the concentration of MDA decreased. The inclusion of barley showed lower cortisol, glucose and lactate values than control. When fish reached commercial weight, the quality of the fillets and antioxidant properties were analysed. In both trials, fish fed with the experimental ingredients showed lower water activity values and textural and colour properties were enhanced. Red beet and betaine inclusion did not show any effect on the oxidative parameters of the fillets, while the inclusion of barley showed an inhibitory effect on fillets lipid oxidation. Concentrations of barley above 8% improved the antioxidant activity of the fillets and increased the content of alpha-tocopherol, however, fish fed with red beet and betaine showed a higher content of flavonoids and phenolics but no effect on the antioxidant properties of the fillet. Finally, when the sensory analysis was carried out, it was observed that fish fed diets with more than 8% barley showed redder gills and better texture than control, in addition to a more intense red colour of the fillet, these characteristics are correlated with an improvement of fish freshness. However, the inclusion of barley or red beet in rainbow trout diets had no effect on the acceptability of fillets.
En la present tesi doctoral es van utilitzar ordi i remolatxa com a fonts alternatives de carbohidrats en dietes per a truita amb l'objectiu d'avaluar el seu efecte sobre paràmetres productius, histologia hepàtica i intestinal, estrès i qualitat de la carn. Els marcadors estudiants fòren els mateixos en els experiments d`ordi I remolatxa. En les proves de l'ordi es van utilitzar concentracions creixents d'aquest ingredient (0-32%), es va iniciar amb un pes mitjà de 127.72 ± 5.65 g i es va finalitzar quan van arribar al pes comercial al cap de 84 dies. En les proves de remolatxa es van utilitzar dos nivells de remolatxa (14% i 28%) i dos de betaïna (0.9% i 1.63%), es va iniciar amb un pes mitjà de 69 ± 2.2 g i es va finalitzar quan els peixos van aconseguir el pes comercial al cap de 105 dies. La inclusió d'ordi en dietes de truita no va mostrar diferències significatives en els paràmetres de creixement i biomètrics. La inclusió de 14% remolatxa i 0,9% betaïna no va afectar el creixement, paràmetres nutritius, biomètrics i retencions de nutrients en comparació amb el control, concentracions majors de remolatxa i betaïna van tenir un efecte negatiu. Quan es van estudiar els paràmetres histològics i morfomètrics en fetge i intestí, els resultats van mostrar que els peixos alimentats amb concentracions creixents d'ordi tenien hepatòcits més petits, mentres que els peixos alimentats amb remolatxa i betaïna presentaven hepatòcits més grans, i en ambdós casos el fetge va mostrar un menor nivell de vacuolització. La concentracion d'ordi d'un 8% va produir un efecte negatiu a nivell morfològic de l'intestí, mentres que la inclusió de remolatxa no va produir cap efecte a nivell d'intestí. Els peixos van ser sotmesos a estrès per absència d'oxigen i augment de densitat durant 10 minuts. Quan l'estrès va ser analitzat a nivell bioquímic els resultats van mostrar que a nivells basals, la inclusió d'ordi i remolatxa no va causar cap canvi en els nivells de cortisol, glucosa i MDA, encara que els valors basals de lactat van ser significativament més baixos en els peixos alimentats amb remolatxa i betaïna. 30 minuts després de l'estrès la concentració de cortisol, glucosa i lactat va augmentar significativament en els peixos de tots els grups i la concentració de MDA va disminuir. La inclusió d`ordi va mostrar valors més baixos de cortisol, glucosa i lactat que la dieta control. Quan els peixos van aconseguir el pes comercial es va analitzar la qualitat dels filets i propietats antioxidants. En ambdues proves els peixos alimentats amb els ingredients objecte d'estudi van mostrar valors d'activitat d'aigua més baixos i una millora en la textura i el color dels filets comparat amb els peixos alimentats amb la dieta control. La inclusió de remolatxa i betaïna no va tenir cap efecte sobre els paràmetres oxidatius del filet, mentre que la inclusió d'ordi va inhibir l'oxidació lipídica dels filets. Concentracions d'ordi per sobre del 8% van millorar l'activitat antioxidant dels filets i van augmentar el contingut en alpha-tocoferol, però, els peixos alimentats amb remolatxa i betaïna van mostrar un major contingut en flavonoides i fenòlic però no es va observar cap efecte sobre les propietats antioxidants del filet. Finalment, quan es va dur a terme l'anàlisi sensorial es va observar que els peixos alimentats amb dietes amb més d'un 8% d'ordi van mostrar unes ganyes més vermelles i millor textura, a més d'un color vermell del filet més intens, paràmetres que es correlacionen amb una millora de la frescor del peix. No obstant això, la inclusió d'ordi o remolatxa en dietes de truita no va tenir cap efecte sobre l'acceptabilitat dels filets.

Abstract:
Ispitivan je uticaj vrednosti procesnih parametara: na tehnološku efikasnost procesa osmotske dehidratacije pilećeg mesa u vodenom rastvoru NaCl i saharoze i melasi; na nivo redukcije odabranih mikroorganizama (Escherichia coli, Salmonella spp., Listeria monocytogenes) u osmotskim rastvorima; na mikroorganizme prisutne na dehidrirajućem pilećem mesu; istraživana je podobnost osmotski dehidriranog pilećeg mesa za rast i razmnožavanje odabranih mikroorganizama tokom perioda skladištenja, uz definisanje zdravstveno bezbednog roka skladištenja na osnovu mikrobioloških i hemijskih analiza.Rezultati ispitivanja pokazuju da povećanje vrednosti procesnih parametara temperature, vremena trajanja procesa i koncentracije osmotskih rastvora dovodi do intenziviranja prenosa mase između dehidrirajućeg materijala i rastvora i povećanja efikasnosti procesa. Izlaganjem odabranih mikroorganizma osmotskim rastvorima postignuti su visoki nivoi njihove redukcije. U melasi postignuti su viši nivou redukcije mikroorganizama u poređenju sa vodenim rastvorom. Ostvareni nivoi redukcije odabranih mikroorganizama na pilećem mesu tokom procesa niži su u poređenju sa rezultatima redukcionih odnosa istih mikroorganizama direkno inokulisanih u istim osmotskim rastvorima. Sa protokom vremena skladištenja veštački kontaminiranog i osmotski dehidriranog pilećeg mesa, u oba osmotska rastvora, došlo je do smanjenja broja svih ispitivanih mikroorganizama. Proteolitički mikroorganizami nisu bili prisutni u dehidranom pilećem mesu, dok sadržaj histamina je pokazao da, tokom vremena skladištenja, nije dolazilo do degradacije proteina u mesu. Nakon 10 dana skladištenja meso nije bilo užeglo, a vrednosti malondialdehida su ukazale na pojavu užegnuća nakon 14 dana skladištenja.Na osnovu dobijenih rezultata razvijeni su modeli zavisnosti odziva procesa osmotske dehidratacije, nivoa redukcije ispitivanih mikroorganizama u osmotskim rastvorima, nivoa redukcije ispitivanih mikroorganizama na dehidriranom pilećem mesu i mikrobioloških i hemijskih odziva dehidriranog pilećeg mesa tokom skladištenja u zavisnosti od variranih vrednosti parametara procesa.Na osnovu dobijenih rezultata, kao optimalni parametri, mogu da se definišu: trajanje procesa od 5 časova, temperatura od 32°C u melasi, kao osmotskom rastvoru, maksimalne koncentracije. Svi postignuti nivoi redukcije mikroorganizama ukazuju na dobru osnovu za proizvodnju zdravstveno bezbednih proizvoda od pilećeg mesa. Analiza održivosti je pokazala da je osmotski dehidriranom pileće meso mikrobiološki i hemijski stabilno tokom skladištenja na temperaturi od 22 °C u trajanju od najmanje 10 dana.
The effect of process parameters values on: technological efficiency of chicken meat osmotic dehydration process in water solution of NaCl and succrose and molasses; selected microorganisms (Escherichia coli, Salmonella spp., Listeria monocytogenes) in osmotic solutions reduction levels; selected microorganisms on dehydrating chicken meat reduction levels, is investigated. The osmodehydrated chicken meat suitability for selected microorganisms’ growth and multiplication during storage period is also investigated, together with defining health safe storage period, on the basis of microbiological and chemical analysis.Results shows that increase of process parameters of temperature, duration and osmotic solutions’ concentrations leads to mass transfer increase between dehydrating material and osmotic solutions and process efficiency increase. Exposure of selected microorganisms to osmotic solution has led to high levels of reductions of their numbers. Processes in molasses had higher levels of microorganisms’ reductions in comparison to the water solution. Achieved levels of the selected microorganisms’ on chicken meat reductions were lower in comparison to the results of reduction of the same microorganisms directly inoculated in the same osmotic solutions. With the increase of the inocualted, osmotically dehydrated chicken meat storage time in both osmotic solutions, decrease of all tested microorganisms occured. Proteolytic microorganisms were not detected in dehydrated chiken meat, while histamin content showed that, during storage, there was no meat protein degradation. After 10 days of storage, meat was not rancid, while malondialdehid values showed that lipid oxidation occured after 14 days of storage. On the basis of obtained results, mathematical models of dependance of: osmotic dehydration process responces; selected micororganisms in osmotic solutions reduction levels; selected microorganisms on osmodehydrated chicken meat reduction levels; and osmodehydrated chicken meat during storage microbiological and chemical responces; from varied process parameters, were developed.Based on obtained results, as optimal process parameters it can be defined: 5-hour process, at 32 °C, in molasses of maximal concentration, as osmotic solution. All achived microorganisms’ reduction levels can indicate on good basis of health safe chicken meat production. Analysis of storage duration has shown that osmotdehydrated chicken meat is microbilogicaly and chemicaly stabile during sotrage at 22 °C in period of at least 10 days.

The dissertation covers the introduction of the study; the reviews of the case, Free and Open Source Software; the discussion of methodology of software project management in terms of software engineering; the analysis of assessment methods; the techniques of using PHP, MySQL, Apache and CVS; and the implementation of a test module. The research represents the consideration of the problem, namely that there are few free assessment manager programmes that can be used for the quick and efficient deployment of academic assessments. An experimental research method was used to with the aim of solving the above problem. In other words, a test management system module had to be designed and implemented to function within the architectural constraints of a developing Open Source Software (OSS) Learning Management System (LMS), which is called Knowledge Environment for Web-based Learning Next Generation (KEWL.NextGen). The test management system is a module developed on Object-Oriented Programming (OOP) in PHP and MySQL application. The scripts of this test module are written under the KEWL.NextGen' application framework, which is based on a close approximation of model, view and controller (MVC) design III pattem. Now the entire source coding of the test module has been uploaded to Web site http://kngforge.uwc.ac.za. This test module can be used for the creation and management of an online test. It provides facilities to create a new test, and to preview, edit, delete and mark an existing test. Three question types have been achieved, namely multiple-choice, true/false and short answer.

Les systèmes barrières thermiques (BT), utilisés dans les turbines aéronautiques, sont des systèmes multicouches composés d'un substrat en superalliage monocristallin, d'une sous-couche d'alliage alumino-formeur sur laquelle se forme une couche d'alumine, initiée pendant le procédé de fabrication. Le tout est revêtu d'une couche en zircone, la barrière thermique, qui permet de diminuer la température de travail du substrat. Cette couche, perméable à l'oxygène, conduit au développement de l'oxyde tout au long de la vie du système. Les systèmes BT sont soumis à des contraintes thermomécaniques qui créent des endommagements, en particulier aux interfaces, pouvant mener à l'écaillage de la BT. Ces endommagements dépendent de la composition et de la microstructure des différents constituants du système. L'objectif de cette thèse est de corréler les évolutions microstructurales dans la sous-couche et dans l'oxyde à l'adhérence des systèmes BT. Pour ce faire, le vieillissement de systèmes de superalliages AM1 et MCNG revêtus d'une sous-couche NiAlPt, avec et sans barrière thermique, a été suivi sous sollicitations isothermes et cycliques à 1100°C. L'effet d'une étape de pré-oxydation sur la durée de vie à long terme après oxydation isotherme de ces systèmes a été étudié pour différents états de surface initiaux. Ce travail a permis de confirmer l'effet du type de sollicitation et de la présence de la BT sur les mécanismes d'endommagement et de mettre en évidence la meilleure résistance à l'écaillage des systèmes MCNG comparés aux systèmes AM1. Il a également montré que la formation d'alumine de transition au cours des premiers stades d'oxydation ne semblait pas néfaste pour l'adhérence du système. Enfin, la détection et la localisation par SIMS d'impuretés telles que le soufre et le carbone et d'éléments réactifs tels que le hafnium ont révélé le rôle prépondérant joué par ces éléments sur la durée de vie des systèmes BT.

Cilj istraţivanja bio je da se ispita uticaj svetlosnog programa (konstantnog – KS i opadajuĆe- rastuĆeg - ORS), gustine obroka i gustine naseljenosti i njihove interakcije na proizvodne i klaniČne osobine brojlerskih piliĆa, kvalitet mesa i ošteĆenje tabanskih jastuČiĆa.Istraţivanja su sprovedena na farmi piliĆa Donji Crnci nadomak Podgorice u tri ogleda: u prvom su ispitivani efekti svetlosnog programa i gustine obroka, u drugom programi svetla i gustina naseljenosti piliĆa, a u treĆem program svetla i gustina obroka (smeše sa standardnim i poveĆanim sadrţajem energije i proteina, pri Čemu je odnos energija : protein bio konstantan). U svakom ogledu bilo je 320 piliĆa linijskog hibrida Cobb 500, mešanih po polu, a ogledi su trajali 42 dana. U sva tri ogleda formirane su po Četiri grupe sa Četiri ponavljanja i u svakoj grupi bilo je 80 jednodnevnih piliĆa.Proizvodni parametri (telesna masa, utrošak hrane i uginuĆa) praĆeni su u svim ogledima, a izraČunati su konverzija hrane i proizvodni indeks. Telesne mase su merene u uzrastu od 1; 7; 14; 21; 28; 35 i 42 dana. Utrošak hrane utvrčivan je na kraju perioda primene pojedinih smeša, i to: 14. dana koliČina konzumirane starter smeše, 35. dana grovera i 42. dana finišer smeše. Mortalitet je odrečivan beleţenjem broja uginulih piliĆa u toku trajanja ogleda. Na osnovu telesnih masa, konverzije hrane i mortaliteta izraČunati su proizvodni indeksi.Na kraju svakog ogleda, sa 6 nedelja starosti, piliĆi su izmereni pojedinaČno, izraČunati su proseci tretmana, a zatim je od svakog tretmana izdvojeno 20 piliĆa (10 muških i 10 ţenskih) radi ispitivanja klaniČnih karakteristika. Pre klanja piliĆi su gladovali 12 sati. Nakon klanja i ČišĆenja trupovi su ohlačeni na 40C u toku 24 sata, a potom obračeni kao: „klasiČna obrada” „spremno za peČenje” i „spremno za roštilj”.Pri konfekcioniranju trupova izdvojena je abdominalna mast, izmerene mase obračenih trupova i dobijeni randmani. Radi utvrčivanja prinosa i udela osnovnih i sporednih delova trupa izvršeno je rasecanje ohlačenih trupova. Ocena konformacije trupova izvršena je na osnovu utvrčenih apsolutnih mera: duţine piska, duţina kobilice, dubina grudi i obim bataka. KorišĆen je indeks koji predstavlja odnos ţive mase pre klanja i posmatrane mere (g/mm).U ogledu II izvršeno je i fiziČko ispitivanje kostiju, na femuru nakon izdvajanja od skeleta brojlera, a u ogledu III odrečeni su sadrţaj vlage, sadrţaj ukupne masti, ukupnog pepela i ukupnih proteina belog i crvenog mesa, na uzorcima mišiĆnog tkiva grudi i karabataka od 5 muških i 5 ţenskih trupova u svakom tretmanu (ukupno 20).  Rezultati ukazuju da svetlosni program nije statistiČki znaČajno uticao na završne telesne mase u ogledima I i II, dok su u ogledu III veĆe mase utvrčene kod piliĆa tovljenih pri KS. Primena ORS uticala je na usporavanje stope rasta u prvom periodu tova, a kao rezultat kompenzacionog porasta bez uticaja na završne mase, sem u treĆem ogledu. Bolju konverziju hrane u periodu ishrane finišerom postigli su piliĆi u ogledu I pri ORS nego pri KS, kao i u ishrani starterom u ogledu III. Svetlosni programi u ogledu II nisu uticali na konverziju hrane i mortalitet piliĆa.Gustina obroka nije uticala na završne mase, konverziju hrane, mortalitet i proizvodni indeks. Kod piliĆa hranjenih obrocima sa višim sadrţajem proteina i energije utvrčene su veĆe telesne mase na kraju tova (P<0.01). Gustina obroka u ogledima I i III nije imala uticaj na konverziju hrane, mortalitet i proizvodni indeks. Znatno je veĆa završna masa piliĆa tovljenih pri gustini naseljenosti od 12 grla/m2 (2667,08 g) nego pri 17 grla/m2 (2435,76 g) i razlike su bile statistiČki visoko znaČajne. Nije utvrčen uticaj gustine naseljenosti na konverziju hrane, mortalitet i proizvodni indeks.Ispitivani faktori (svetlo, gustina obroka i gustina naseljenosti) nisu uticali na randmane, ali jesu interakcije nekih od njih. U svim ogledima utvrčen je manji udeo abdominalne masti pri ORS nego pri KS, ali bez statistiČke znaČajnosti. Gustina obroka i gustina naseljenosti nisu uticali na sadrţaj abdominalne masti. VeĆi je sadrţaj abdominalne masti u svim ogledima bio kod ţenskih nego muških piliĆa. Udeo grudi veĆi je pri KS nego pri ORS, ali su razlike statistiČki znaČajne samo u treĆem ogledu. Gustina obroka i gustina naseljenosti nisu uticale na udeo grudi. Udeo bataka bio je veĆi kod piliĆa tovljenih pri ORS nego pri KS, ali su razlike statistiČki znaČajne samo u prvom ogledu. Udeo karabataka u prvom i drugom ogledu nije se znaČajno razlikovao izmeču svetlosnih programa, dok je u treĆem bio veĆi pri ORS nego pri KS (P<0.01). Nije utvrčen uticaj gustine naseljenosti i gustine obroka na udeo bataka i karabataka. Kod muških piliĆa utvrčen je veĆi udeo bataka, a kod ţenskih karabataka.Relativne vrednosti mera konformacije nisu bile pod uticajem svetlosnih programa i gustine obroka, osim što je pri manjoj gustini naseljenosti relativna vrednost dubine grudi bila veĆa (P<0.05). Na ošteĆenje tabanskih jastuČiĆa nije utvrčen uticaj svetla i gustine obroka, ali su piliĆi pri veĆim gustinama naseljenosti, poČev od 28. dana, imali znatno veĆa ošteĆenja tabanskih jastuČiĆa nego pri manjoj gustini.Svetlosni program i gustina naseljenosti nisu uticali na fiziČke osobine femura: površinu preseka, silu loma i specifiČnu silu loma. Muški piliĆi imali su veĆi površinu preseka i silu loma femura, razlike za površinu preseka su statistiČki znaČajne, ali ne i za silu loma.Procenat masti u tamnom mesu bio je veĆi, a proteina niţi pri ORS nego pri KS. Ostali parametri hemijske analize tamnog i belog mesa nisu bili pod uticajem svetlosnih programa. Gustina obroka nije imala uticaj na hemijski sastav mesa grudi i karabataka.Na osnovu svega iznesenog moţe se zakljuČiti da su sva tri faktora (svetlosni program, gustina obroka i gustina naseljenosti), kao i njihove interakcije, uticali na brojne proizvodne parametre i kvalitet mesa brojlera, pa i na njihovu dobrobit u razliČitim fazama tova. ImajuĆi u vidu ogromne razlike u efektima koji se mogu postiĆi pri razliČitim kombinacijama ovih Činilaca, rezultati ovih i sliČnih istraţivanja treba da olakšaju izbor tehnologije koja Će davati najbolje ekonomske efekte u tovu piliĆa. Takoče, tamo gde su rezultati nejasni ili kontradiktorni, treba nastaviti istraţivanja na veĆem broju jedinki i fokusirati se na ekonomski vaţnije proizvodne i klaniČne osobine piliĆa.
The purpose of the research was to investigate the effect of the lighting program (constant – KS and intermittent – ORS), feed density and stocking density and their interaction with production and slaughterhouse characteristics of broiler chicken, meat quality and feet pad damage.The research was conducted on a chicken farm Donji Crnci in the vicinity of Podgorica, in three trials: the first trial focused on effects of the lighting program and feed density, the second on the lighting program and stocking density and the third on the lighting program and the feed density (mixes with standard and increased content of energy and protein, with a constant energy:protein ratio). Each of the trials included 320 chicken of the Cobb 500 hybrid line, mixed sexes; trials lasted for 42 days. In all three trials, four groups were formed with four repetitions and each group included 80 one-day chickens.Production parameters (weight, feed consumption and deaths) were monitored in all trials and feed conversion ratio and production index were calculated. Weight was measured when broilers were 1; 7; 14; 21; 28; 35 and 42 days old. Feed consumption was determined at the end of the use of specific mixes, as follows: 14th day the quantity of starter mix consumed, 35th day the quantity of grower mix consumed and 42nd day quantity of the finisher mix. Mortality rate was determined by recording the number of chicken that died during the trial. Production indices were calculated based on weight, food conversion ratio and mortality.At the end of all trials, at 6 weeks of age, the chickens were measured individually, group averages were calculated and then by random sampling, 20 chicken were taken from each group (10 males and 10 females) in order to analyse slaughter characteristics. Pre-slaughter fasting lasted for 12 hours. After slaughter and cleaning, the carcasses were cooled to 40C over 24 hours and then processed as: “classical processing”, “ready to grill” and “barbecue ready”.In carcass processing, abdominal fat was taken out, weight of processed carcases measured and carcass yield values were obtained. In order to determine the yield and share of the main and secondary parts of the carcass, cooled carcasses were cut out. Evaluation of carcass conformation was done on the basis of absolute measures of the following: metatarsus length, keel length, breast depth and drumsticks circumference. Index representing the ratio of live weight before slaughter and measure observed was used (g/mm).In Trial II, physical examination of bones was done, on femur, upon separation from the broiler skeleton, and in Trial III moisture content, total fat content, total ash content and total protein of white and red meat was determined on samples of muscle tissue of breasts and thighs of 5 male and 5 female carcasses in each of the treatments (20 in total).The results show that lighting program had no statistically significant effect on final body weight in Trials I and II, while in Trial III, higher weights were recorded in chicken fattened under KS. ORS resulted in slowing down of the growth rate in the first fattening period, and as a result of compensatory growth it had no effect on final weights, except in the third trial. Better food conversion ratio in the period of finisher mix diet was achieved by chicken in Trial I under ORS than those under KS, as well as in starter mix diet in Trial III. Lighting program in Trial II had no effect on food conversion ratio and mortality of chicken. Feed density did not have an effect on final weights, feed conversion, mortality and production index. In chicken fed with meals with higher protein and energy content, higher weight was recorded at the end of the fattening period (P<0.01). Feed density in Trials I and III did not have an effect on feed conversion ratio, mortality and production index. Significantly higher weight was recorded in chicken fattened at the stocking density of 12 animals/m2 (2667.08 g) than at the density of 17 animals/m2 (2435.768g) and differences had statistically high significance. No effect of stocking density was identified in terms of feed conversion, mortality and production index.Factors analysed (light, feed density and stocking population) did not have an effect on carcass yield, but interactions of some of them did. In all the trials, a smaller share of abdominal fat was established under ORS than under KS, but it was not statistically significant. Feed density and stocking density had no effect on abdominal fat content. Higher abdominal fat content in all trials was found in female than in male chicken. The share of breasts is larger under KS than under ORS, but differences are statistically significant only in the Trial III. Feed density and stocking density had no effect on the share of breasts in the carcass. The share of drumsticks was higher in chicken fattened under ORS than those under KS, but differences were statistically significant only in the Trial I. The share of thighs in Trials I and II did not differ significantly between lighting programs, while in the Trial III it was higher under ORS than under KS (P<0.01). Effect of stocking density and feed density on the share of drumsticks and thighs was not determined. Higher share of drumsticks was determined in male chicken while in female, the share of thighs was higher.Relative values of conformation measures were not influenced by the light programs and feed density, except that in lower stocking density the relative value of the breast depth was higher (P<0.05). Effect of light and feed density on feet pads damage was not determined, but chicken in higher stocking density, as of 28th day, had significantly higher feet pad damage than those in lower stocking density.Light program and stocking density did not have an effect on physical properties of femur: cross-sectional area, breaking force and specific breaking force. Male chicken had larger cross-sectional area and femur breaking force, differences in cross-sectional area were statistically significant, but this was not the case with the breaking force.Percentage of fat in dark meat was higher and that of proteins lower under ORS than under KS. Other parameters of the chemical analysis of dark and white meat were not under the influence of the light programs. Feed density had no effect on chemical composition of breasts and thighs meat.Based on all stated above, it can be concluded that all three factors (light program, feed density and stocking density) as well as their interactions had effect on numerous production parameters and quality of broiler meat, including on their welfare in different fattening phases. Taking into account enormous differences in effects that may be achieved in different combinations of these factors, the results of these and similar researches should make easier the selection of the technology that would yield the best economic effects in chicken fattening. Furthermore, where results are unclear or contradictory, further research should be conducted on a larger number of animals and focus on economically more significant production and slaughterhouse characteristics of chicken.

Two experiments were used to evaluate the potential interaction of fat source and vitamin E (VE) in heavy slaughter weight pigs. In Experiment 1, a total of 64 individually-fed pigs (28.41 ± 0.83 kg) were randomly assigned to 8 dietary treatments in a 4×2 factorial arrangement. Fat treatments included cornstarch (CS), tallow (TW), corn-oil (CO), and coconut-oil (CN). VE treatments were dietary α-tocopheryl acetate (ATA) at 11 and 200 ppm. In Experiment 2, a total of 72 individually fed pigs (28.55 ± 1.16 kg) were randomly assigned to 12 dietary treatments in a 2 × 6 factorial arrangement. Fat treatments were TW and CO. VE treatments included four levels of ATA (11, 40, 100, and 200 ppm) and two levels of mixed tocopherols (primarily γ-tocopherol; 40 and 100 ppm). VE deposition, growth performance, and meat quality were measured in both experiments. In both experiments, interaction between fat sources and VE were detected (P < 0.01) on plasma VE concentration, which increased (P < 0.01) with time and with increasing dietary VE, but increased faster (P < 0.05) in pigs fed with CN and TW compared to pigs fed CS and CO. Compared to CO, more saturated dietary fat sources (CN and TW) led to firmer belly (P < 0.01), which had more (P < 0.01) SFA and MUFA while less (P < 0.05) Feed/Gain in Phase 4 and Phase 5. In Experiment 2, increasing dietary ATA increased overall ADG (linear, P = 0.02), with an interaction (P < 0.05) with fat sources on cumulative ADG during Phase 1-4, wherein pigs fed CO, but not TW, had increased ADG with increasing dietary ATA. Increasing dietary ATA increased (quadratic, P < 0.05) liver SOD activity, and decreased (quadratic, P < 0.05) liver MDA content. The oxidative stability of loin was improved (P < 0.01) when dietary ATA increased over 40 ppm. In summary, both dietary fat source and VE supplementation affected the response measures.

As global meat consumption is rising, the negative impact the animal husbandry sector has on the environment will increase. Greenhouse gas emissions have increased by 40 % during the last 200 years, and the animal husbandry sector is today responsible for 18 % of the total greenhouse gas emissions from food production. More environmentally friendly protein sources, such as soy and pea, must therefore be developed. Pisum sativum can (unlike the most popular meat alternative – soy) be grown all over Europe and might thus be a good alternative that allows for locally sourced alternatives to meat protein. Identifying genes with important agricultural properties might aid the development of pea cultivars with a more reliable protein content. One such gene was hypothesised to be the OMT gene, which is strongly expressed during the embryonic development of P. sativum and seems involved in functions such as seed storage and protein synthesis. Thirty-one accessions of P. sativum were tested to see if different improvement types differed from each other regarding protein content and seed weight, but no such differences were found. DNA was extracted from all accessions, sequenced, and successful sequences were tested to determine if variation in the gene correlated with protein content. Two haplotypes were identified, but there was no correlation between them and protein content found. Based on the results of this study, there is little evidence that the OMT gene correlates with protein content in the studied accessions.

Месо шарана, најзаступљеније врсте рибе на рибњацима уРепублици Србији, али и других ципринидних врста, представљазначајан нутритивни извор n-3 високо незасићених масних киселина,које имају важну улогу на здравље људи. У раду су испитанифактори који делују на хемијски и маснокиселински састав месашарана и других ципринидних врста које се гаје на подручју Србије.Установљено је да је садржај масти и маснокисeлински састав рибасу под утицајем врсте рибе, чак и када припадају истој фамилији,различитих фактора животне средине, начина гајења, а посебноначина исхране. Утврђен је значај добре технологије производње нарибњаку за одговарајућу структуру планктонских и бентоснихорганизама, што игра велику улогу у добијању меса шарана, али идругих ципринидних врста, које се могу гајити у поликултури сањим, доброг хемијског и маснокиселинског састава. Указано је назначај који формулисане смеше имају у исхрани риба на њиховоздравствено стање, производне параметре и квалитет меса. Извршеноје испитивање замене компоненти анималног порекла саалтернативним компонентама биљног порекла и добијени сузадовољавајући резултати у погледу производних перформанси иумерених промена квалитета меса, када је у питању маснокиселинскиДВМ Драгана ЉубојевићКоришћење репичиног уља у исхрани шарана и лињака као фактора променa квалитета месаiiiсастав. Анализом седимента, воде у рибњацима, као и меса риба изрибњака и отворених вода установљен је степен загађености животнесредине. Представљен је нови производ од меса шарана и другихципринидних риба. По први пут је успостављена ћелијска културамасног ткива шарана, која омогућава анализирање молекуларних ибиохемијских механизама који се не могу изучавати на живимрибама, који настају као последица промена у исхрани.
Meso šarana, najzastupljenije vrste ribe na ribnjacima uRepublici Srbiji, ali i drugih ciprinidnih vrsta, predstavljaznačajan nutritivni izvor n-3 visoko nezasićenih masnih kiselina,koje imaju važnu ulogu na zdravlje ljudi. U radu su ispitanifaktori koji deluju na hemijski i masnokiselinski sastav mesašarana i drugih ciprinidnih vrsta koje se gaje na području Srbije.Ustanovljeno je da je sadržaj masti i masnokiselinski sastav ribasu pod uticajem vrste ribe, čak i kada pripadaju istoj familiji,različitih faktora životne sredine, načina gajenja, a posebnonačina ishrane. Utvrđen je značaj dobre tehnologije proizvodnje naribnjaku za odgovarajuću strukturu planktonskih i bentosnihorganizama, što igra veliku ulogu u dobijanju mesa šarana, ali idrugih ciprinidnih vrsta, koje se mogu gajiti u polikulturi sanjim, dobrog hemijskog i masnokiselinskog sastava. Ukazano je naznačaj koji formulisane smeše imaju u ishrani riba na njihovozdravstveno stanje, proizvodne parametre i kvalitet mesa. Meat of common carp, the most common fish species which is farmed inthe Republic of Serbia and meat of other cyprinid species, represent animportant nutritional source of n-3 highly unsaturated fatty acids, whichplay an important role in human health. This paper examined the factorsthat affect the chemical and fatty acid composition of carp and othercyprinid species that are grown in Serbia. It was found that the fat contentand fatty acid composition of fish are influenced by fish species, evenwhen they belong to the same family, and also by different environmentalfactors of cultivation, especially by diet. It was established the importanceof proper rearing technology in the pond for the appropriate structure ofplanktonic and benthic organisms, which play a significant role in gettingcarp meat, and meat of other cyprinid species that can be grown inpolyculture with carp of desirable chemical and fatty acid composition. Itwas pointed out on the significance of formulated feed mixtures in fishnutrition on fish health, production parameters and meat quality. Aninvestigation was done on replacing components of animal origin withalternative components of plant origin and satisfactory results wereobtained in terms of production performance and moderate changes in thequality of meat, regarding to fatty acid composition. The degree ofenvironmental pollution was established by analysis of sediment andwater in the ponds, and the flesh of fish from ponds and open water. Thenew food product made from fish meat was presented. As viroses causam perdas significativas na cultura do melão. Dentre essas, o vírus do mosaico amarelo da abobrinha-de-moita (Zucchini yellow mosaic virus- ZYMV) possui grande importância para a cultura e é encontrado em todos os locais de plantio de cucurbitáceas. O controle desse vírus através da resistência genética é a forma mais eficiente de manejo. O acesso PI414723 é a única fonte de resistência de meloeiro ao ZYMV. Essa resistência é oligogênica e supostamente condicionada por três genes dominantes: Zym-1, Zym-2 e Zym-3. A localização cromossômica do gene Zym-1 já foi confirmada no grupo de ligação 2, próximo ao marcador CMAG36. Entretanto, a localização de Zym-2 ainda carece de confirmação experimental, muito embora existam evidências de sua localização no grupo de ligação 10 (LGX). Sendo assim, um dos objetivos do presente trabalho foi confirmar a localização do gene Zym-2 através de análises de ligação com marcadores microssatélites (SSRs). Para tanto, foi utilizada uma população F2 derivada do cruzamento PI414723 x \'Védrantais\'. As plantas foram inoculadas mecanicamente com o isolado RN6-F, patótipo 0, duas vezes em um intervalo de 24 h. A confirmação da infecção e a quantificação dos títulos virais nas plantas F2 foram realizadas através do teste PTA-ELISA. O DNA genômico das plantas foi extraído da primeira folha verdadeira e utilizado nas reações de PCR com primers específicos para SSRs selecionados pertencentes ao LGX. Observou-se uma distribuição assimétrica de classes de absorbância e maior frequência de indivíduos F2 na classe com menor valor (0,1 a 0,2), sugerindo a existência de um gene de efeito maior. O teste chi-quadrado mostrou que todos os marcadores segregaram na frequência esperada (1:2:1), exceto o marcador CMCT134b. A ligação do Zym-2 aos marcadores foi confirmada por meio de regressão linear simples. Dos marcadores analisados, a regressão linear foi significativa para MU6549 e CMBR55, com p-valores de 0,011 e 0,0054, respectivamente. As análises de ligação mostraram que as ordens e as distâncias entre os marcadores condizem com os mapas presentes na literatura. Um segundo objetivo do estudo foi o de avaliar a reação ao ZYMV de 42 acessos de meloeiro oriundos da região Nordeste do Brasil, com o intuito de explorar novas fontes de resistência. Foram realizados dois experimentos utilizando a mesma metodologia citada anteriormente. O título viral médio entre os acessos variou de 0,123 a 0,621 no experimento 1 e de 0,019 a 0,368 no experimento 2. Alguns acessos apresentaram consistentemente baixos títulos virais, próximos aos do acesso resistente PI414723 e dos controles negativos (plantas não inoculadas da cultivar \'Védrantais\'). Portanto, estes acessos mostram-se como potenciais fontes de resistência ao vírus para o emprego em programas de melhoramento.
Viruses cause significant losses in the melon crop. Among these, Zucchini yellow mosaic virus (ZYMV) is of great importance and is ubiquitous in cucurbit crops. The control of this virus through genetic resistance is the most efficient management strategy. PI414723 is the only source of resistance to ZYMV in melon. This resistance is oligogenic and is supposed to be conditioned by three dominant genes: Zym-1, Zym-2 and Zym-3. While the chromosomal location of Zym-1 gene has been determined to be close to the CMAG36 marker in linkage group 2, the location of Zym-2 still lacks experimental confirmation, although there is some preliminary evidence that it is located in the linkage group 10 (LGX). Thus, one objective of this study was to confirm the chromosomal location of Zym-2 through linkage analysis with microsatellite markers (SSRs). To this, F2 plants population derived from the cross PI414723 x \'Védrantais\' were used as a segregating population. The plants were mechanically inoculated twice with isolate RN6-F, pathotype 0, at an interval of 24h. Confirmation of the infection and the quantification of viral titers in F2 plants were conducted using the PTA-ELISA technique. Plant genomic DNA was extracted from the first true leaf and used in PCR reactions using specific primers for selected SSRs belonging to LGX. An asymmetric distribution of absorbance classes was observed as well as a higher frequency of F2 individuals in the classes with lower values (0.1 to 0.2), confirming the presence of the major gene Zym-1. The chi-square test showed that all markers segregated according to the expected frequency (1: 2: 1), except for the CMCT134b marker. Linkage analysis among markers showed that the orders and distances between markers were consistent with published linkage maps. Linkage of Zym-2 to the markers was investigated by simple linear regression. Of the analyzed markers, the linear regression was significant for MU6549 and CMBR55, with p-values of 0.011 and 0.0054, respectively. Thus, the location of Zym-2 was determined in LGX. A second objective of the study was to evaluate the reaction to ZYMV of 42 melon accessions from the Northeastern Brazil, in order to discover new sources of resistance. For this, two experiments were conducted using the same inoculation and evaluation procedures previously described. The mean viral titer between accessions ranged from 0.123 to 0.621 in experiment 1 and between 0.019 to 0.368 in the experiment 2. Some accessions consistently showed low viral titers, similar to the resistant access PI414723 and the negative controls (non-inoculated plants of the cultivar \'Védrantais\'). Therefore, these accessions are potential sources of resistance to be employed in breeding programs.

Staphylococcus xylosus est couramment utilisé comme ferment dans les produits carnés pour son rôle dans le développement de la flaveur et de la couleur. Beaucoup de propriétés technologiques ont été caractérisées in vitro. Cependant, les mécanismes moléculaires mis en place par cette bactérie pour s’adapter à une matrice carnée et aux composés nitrosés, fréquemment ajoutés dans ces produits, étaient méconnus. Pour identifier ces mécanismes, des approches de transcriptomique globale ont été mises en œuvre. S. xylosus survit dans un modèle viande en modulant l’expression de 55 % de ses gènes. Il surexprime des gènes codant des protéines impliqués dans le catabolisme du glucose et du gluconate et des gènes codant des peptidases. En parallèle, il sous exprime de nombreux gènes impliqués dans la synthèse des acides aminés probablement en raison de leur disponibilité dans le modèle viande. Le modèle viande est un milieu riche en divers substrats et la bactérie pourrait adapter sa physiologie via les régulateurs transcriptionnels CcpA et CodY. S. xylosus répond au sel ajouté au modèle viande en surexprimant des gènes impliqués dans des mécanismes d’osmoprotection, d’extrusion de Na + et de protons. S. xylosus répond aux composés nitrosés dans le modèle viande en modulant 24 % de son génome. Ces composés nitrosés génèrent un stress nitrosant et S. xylosus répond à ce stress par la surexpression de gènes impliqués dans l’homéostasie du fer via la dérépression du régulateur Fur. S. xylosus surexprime aussi des gènes codant des enzymes antioxydants via la dérépression du régulateur PerR. De plus, il surexprime des gènes impliqués dans la réparation de l’ADN et des protéines. La viande est un aliment riche en fer hémique et non hémique. Ainsi, S. xylosus est capable d’acquérir du fer à partir de ferritine, de transferrine et potentiellement des hémoprotéines. La ferritine est une source préférentielle de fer pour S. xylosus. Un opéron codant potentiellement un complexe membranaire impliqué dans des réactions d’oxydo-réduction a été identifié. Un mutant de délétion/insertion dans le premier gène de l’opéron confirme que ce système pourrait jouer un rôle dans l’acquisition du fer de la ferritine chez S. xylosus. Cette étude révèle un changement global dans l’expression des gènes de S. xylosus dans un modèle viande, elle souligne la capacité de S. xylosus à s’adapter à un stress osmotique ou nitrosant et elle caractérise pour la première fois la capacité d’un staphylocoque à utiliser du fer de la ferritine
Staphylococcus xylosus is used as starter culture in meat product for its role in the development of flavor and color. S. xylosus is characterized for its technological properties in vitro. However, the molecular mechanisms for its adaptation in meat with or without nitrate and nitrite, frequently added in meat product, remained unknown. Global transcriptomic approaches were carried out to determine the molecular mechanisms. S. xylosus modulated the expression of 55 % of the genes to survive in a meat model. Many genes encoding proteins involved in glucose and gluconate catabolisms and peptidases were up expressed. In parallel, a lot of genes involved in amino acids synthesis were down regulated, probably due to their availability in the meat model. The meat model is a rich medium composed of various substrates and S. xylosus adapted its physiology through the transcriptional regulators CcpA and CodY. Finally, it responded to salt added in the meat model in overexpressing genes involved in mechanisms of osmoprotection, Na + and H + extrusion. S. xylosus modulated the expression of 24 % of the genes in presence of nitroso compounds in the meat model. These compounds generated a nitrosative stress. S. xylosus responded to this stress by over expressing genes involved in iron homeostasis through the derepression of the regulator Fur. It over expressed also genes encoding antioxidant enzymes through the derepression of the regulator PerR. Moreover, it over expressed genes involved in DNA and proteins repairs. Meat is rich in hemic and non-hemic iron. S. xylosus is able to grow in presence of ferritin, transferrin and potentially hemoproteins. Ferritin is one of preferential iron sources. An operon encoding potentially a membranous complex involved in oxydo-reduction reactions has been identified. A strain defective in the first gene of the operon confirmed that this complex could contribute to the iron acquisition from ferritin. This study revealed a global change in the gene expression of S. xylosus in the meat model; it highlighted ability of S. xylosus to mitigate nitrosative or osmotic stress, it characterised for the first time the capacity of a Staphylococcus to acquire ferritin-iron

Esse experimento objetivou avaliar o desempenho, rendimento de carcaça e características qualitativas da carne do peito de frangos de corte alimentados com dietas suplementadas com diferentes concentrações (0,3 e 0,5 mg/kg de ração) e fontes (orgânica e inorgânica) de Selênio, sendo o Sel-Plex TM e o selenito de sódio as fontes utilizadas. Utilizou-se 1050 aves (machos), que receberam rações isoproteicas e isoenergéticas em todas as fases de criação (1 a 21, 22 a 35 e 36 a 42 dias). Foi utilizado o esquema fatorial 2X2 + 1 (2 concentrações X 2 fontes de Se + controle) em delineamento inteiramente casualizado, com 5 tratamentos e 7 repetições, com 30 aves por parcela. A viabilidade foi melhorada com a suplementação da ração com Selênio, independente da fonte utilizada. No período de 1 a 21 dias, a suplementação melhorou o desempenho das aves, através de menor conversão alimentar.Porém, nos períodos de 1 a 35 e 1 a 42 dias o consumo de ração e o ganho de peso pioraram com a suplementação. Das fontes utilizadas, a orgânica promoveu melhora significativa no desempenho das aves em todos os períodos, sendo que os melhores resultados foram obtidos com a concentração de 0,5 mg de Se/kg de ração. Nenhum dos fatores influenciou o rendimento de carcaça e cortes. A utilização da fonte orgânica ao invés da inorgânica diminuiu a taxa de oxidação da carne do peito das aves armazenada por 7 e 15 dias a 4ºC, além de ocasionar menor luminosidade e maior pH. Houve influência das fontes e das concentrações sobre a deposição de selênio na carne, sendo a fonte orgânica superior à inorgânica e o nível de 0,5 superior ao de 0,3 mg de Se/kg de ração. A concentração de 0,5 mg de Se/kg de ração na dieta proporcionou aumento da porcentagem de cinzas na carne.
This study was conducted to evaluate the effect of different concentrations (0,3 and 0,5 mg/kg) and sources (organic and inorganic) of selenium on performance, carcass and parts yield and breast meat quality of broilers (Cobb 500). 1050 one-day-old male chicks were distributed in a completely randomized design in a 2x2+1 factorial arrangement (2 concentrations, 2 sources and 1 control diet), with 7 repetitions per treatment and 30 birds per replicate. The experiment lasted 42 days and the diet for each phase (1-21, 1-35 and 1-42 days) were corn-soybean meal based. The results showed better viability when the supplemented diets were used, independent of the source. In the first period (1 to 21 days), the supplementation provided an improvement on performance, with better feed conversion. However, the results were different in the others breeding phases (1 - 35 and 1 - 42 days), with decrease (P<0,05) on feed intake and weight gain when the supplementation was used. The organic source (Sel-Plex®) provided better results when offered in the second concentration (0,5 mg/kg). None of the factors influenced the carcass and parts yields. The organic source provided a significant decrease in the meat oxidation when it was stored for 7 and 15 days (4ºC). The lightness tended to decrease and the pH tended to increase when the Se-enriched-yeast (Sel-Plex®) was used. There were source and concentration effects on the meat selenium deposition, being the organic source better than the inorganic source (sodium selenite) and the second concentration (0,5 mg/kg) better than the first (0,3 mg/kg).The concentration of 0,5 mg/kg provided increase of the percentage of ashes in the meat.

Resumo: Esse experimento objetivou avaliar o desempenho, rendimento de carcaça e características qualitativas da carne do peito de frangos de corte alimentados com dietas suplementadas com diferentes concentrações (0,3 e 0,5 mg/kg de ração) e fontes (orgânica e inorgânica) de Selênio, sendo o Sel-Plex TM e o selenito de sódio as fontes utilizadas. Utilizou-se 1050 aves (machos), que receberam rações isoproteicas e isoenergéticas em todas as fases de criação (1 a 21, 22 a 35 e 36 a 42 dias). Foi utilizado o esquema fatorial 2X2 + 1 (2 concentrações X 2 fontes de Se + controle) em delineamento inteiramente casualizado, com 5 tratamentos e 7 repetições, com 30 aves por parcela. A viabilidade foi melhorada com a suplementação da ração com Selênio, independente da fonte utilizada. No período de 1 a 21 dias, a suplementação melhorou o desempenho das aves, através de menor conversão alimentar.Porém, nos períodos de 1 a 35 e 1 a 42 dias o consumo de ração e o ganho de peso pioraram com a suplementação. Das fontes utilizadas, a orgânica promoveu melhora significativa no desempenho das aves em todos os períodos, sendo que os melhores resultados foram obtidos com a concentração de 0,5 mg de Se/kg de ração. Nenhum dos fatores influenciou o rendimento de carcaça e cortes. A utilização da fonte orgânica ao invés da inorgânica diminuiu a taxa de oxidação da carne do peito das aves armazenada por 7 e 15 dias a 4ºC, além de ocasionar menor luminosidade e maior pH. Houve influência das fontes e das concentrações sobre a deposição de selênio na carne, sendo a fonte orgânica superior à inorgânica e o nível de 0,5 superior ao de 0,3 mg de Se/kg de ração. A concentração de 0,5 mg de Se/kg de ração na dieta proporcionou aumento da porcentagem de cinzas na carne.
Abstract: This study was conducted to evaluate the effect of different concentrations (0,3 and 0,5 mg/kg) and sources (organic and inorganic) of selenium on performance, carcass and parts yield and breast meat quality of broilers (Cobb 500). 1050 one-day-old male chicks were distributed in a completely randomized design in a 2x2+1 factorial arrangement (2 concentrations, 2 sources and 1 control diet), with 7 repetitions per treatment and 30 birds per replicate. The experiment lasted 42 days and the diet for each phase (1-21, 1-35 and 1-42 days) were corn-soybean meal based. The results showed better viability when the supplemented diets were used, independent of the source. In the first period (1 to 21 days), the supplementation provided an improvement on performance, with better feed conversion. However, the results were different in the others breeding phases (1 - 35 and 1 - 42 days), with decrease (P<0,05) on feed intake and weight gain when the supplementation was used. The organic source (Sel-Plex®) provided better results when offered in the second concentration (0,5 mg/kg). None of the factors influenced the carcass and parts yields. The organic source provided a significant decrease in the meat oxidation when it was stored for 7 and 15 days (4ºC). The lightness tended to decrease and the pH tended to increase when the Se-enriched-yeast (Sel-Plex®) was used. There were source and concentration effects on the meat selenium deposition, being the organic source better than the inorganic source (sodium selenite) and the second concentration (0,5 mg/kg) better than the first (0,3 mg/kg).The concentration of 0,5 mg/kg provided increase of the percentage of ashes in the meat.

Abstract:
U radu je ispitan sledeći problem: Pod kojim uslovima se može rekonstruisati  (sintetisati) intervalno-vrednosni rasplinuti skup iz  poznate familije nivo skupova.U tu svrhu su proučena svojstva mreža intervala za svaki od četiri izabrana mrežna uređenja: poredak po komponentama, neprecizni poredak (skupovna inkluzija), strogi  i leksikografski poredak. Definisane su i-između i ili-između ravne mreže   i ispitana njihova svojstva potrebna za rešavanje postavljenog problema sinteze za intervalno-vrednosne rasplinute skupove. Za i-između ravne mreže je dokazano da su, u svom konačnom slučaju, slim mreže i dualno, da su ili-između ravne mreže dualno-slim mreže.Data je karakterizacija kompletnih konačno prostornih i dualno konačno prostornih mreža. Određena je klasa mreža koje se mogu injektivno preslikati u direktan proizvod n kompletnih lanaca tako da su očuvani supremumi i dualno, određena je klasa mreža koje se mogu injektivno preslikati u direktan proizvod n lanaca tako da su očuvani infimumi. U rešavanju problema sinteze posmatrana su dva tipa nivo skupova - gornji i donji nivo skupovi. Potreban i dovoljan uslov za sintezu intervalno-vrednosnog rasplinutog skupa iz poznate familije nivo skupova određen je za mrežu intervala koja je uređena poretkom po komponentama, za oba tipa posmatranih nivo skupova.Za mrežu intervala uređenu nepreciznim poretkom, problem je rešen za donje nivo skupove, dok su za gornje nivo skupove određeni dovoljni uslovi.Za mrežu intervala koja je uređena leksikografskim poretkom, takođe su dati dovoljniuslovi i to za oba tipa nivo skupova. Za mrežu intervala uređenu strogim poretkom problem nije rešavan, jer izlazi izvan okvira ovog rada.Dobijeni rezultati su primenjeni za rešavanje sličnog problema sinteze za intervalno-vrednosne intuicionističke rasplinute skupove  za mrežu intervala uređenu poretkom po komponentama. Rezultati ovog istraživanja su od teorijskog značaja u teoriji mreža i teoriji rasplinutih skupova, ali postoji mogućnost za primenu u matematičkoj morfologiji i obradi slika.
In this thesis  the following problem was investigated: Under which conditions an interval-valued fuzzy set can be reconstructed from the given family of cut sets.We consider interval-valued fuzzy sets as  a special type of lattice-valued fuzzy sets and  we studied properties of lattices of intervals using four different lattice  order: componentwise ordering, imprecision ordering (inclusion of sets), strong and lexicographical ordering.We proposed new definitions  of meet-between planar and join - between planar lattices, we investigated their properties and used them for solving problem of synthesis  in  interval-valued fuzzy sets.It has been proven that finite meet- between planar lattices and slim lattices are equivalent, and dually:    finite join-  between planar lattices and dually slim lattices are equivalent.Complete finitely  spatial lattices and complete dually finitely spatial lattices are fully characterized  in this setting. Next, we characterized  lattices which can be orderembedded into a Cartesian product of  n  complete chains such that all suprema are preserved under the embedding.And dually, we characterized lattices which can be order embedded into a Cartesian product of n complete chains such that all infima are preserved under the embedding.We considered two types of cut sets – upper cuts and lower cuts.Solution of the  problem of synthesis of interval-valued fuzzy sets are given for lattices of intervals under componentwise ordering for both types of cut sets. Solution of problem of synthesis of  interval-valued fuzzy sets  are  given for lower cuts for lattices of intervals under imprecision ordering.  Sufficient conditions are given for lattices of intervals under imprecision ordering and family of upper cuts.Sufficient conditions are also given for lattices of intervals under lexicographical ordering.The problem of synthesis of interval-valued fuzzy sets for lattices of  intervals under strong ordering is beyond the scope of this thesis.A similar problem of synthesis of  interval-valued intuitionistic fuzzy sets is solved for lattices of intervals under componentwise ordering.These results are  mostly of theoretical importance in lattice theory and fuzzy sets theory, but also they could  be applied in mathematical morphology and in  image processing.

The aim of this study was to evaluate the effect of oat grain in relation to soybean hulls and mixtures thereof, as an energy source, the components are not part and carcass characteristics and meat quality of feedlot steers. We used 36 castrated male cattle, originated from the crossing between Charolais x Nellore, age and average final weight of 356.4 kg and 24 months, respectively. The animals were distributed in treatments, as the energy source in the concentrate fraction of the diet with oat grain, soybean hulls or mixture of oat grain and soybean hulls (1:1). The experimental design was a randomized block design with three treatments and 12 experimental units per treatment, each animal an experimental unit. With respect to fat accumulation renal, inguinal, and ruminal set of total fat, there was a significant effect (P <0.05), and the amount of fat and total renal treatments mixture of animal and soybean hulls top the oat. For the other components are not part of the carcass showed no difference between the different energy sources (P> 0.05). As for the effects of energy sources on the quantitative characteristics of the carcass, only differ with regard to the conformation (P <0.05). Since the housing steers the treatments of soybean hulls and oat were carcasses regular conformation and secondly mixing carcasses showed good conformation. The amount of fat was higher in carcasses of animals fed soybean hulls and mixing with respect to oat (P <0.05), there was an inverse relationship to muscle/fat. Regarding the cooling time of housing in the region Longissimus dorsi muscle during periods of 0, 12 and 24 hours there was no significant difference between the pH and temperature (P> 0.05). The pH of the muscle Recto femoralis, animals fed with a mixture of soybean hulls and oat (1:1) showed a lower pH at the time that the carcasses were placed (0 hour) and withdrawals (24 hours) camera cold (P <0.05). No significant values were checked for color, texture, marbling, thawing loss and cooking, organoleptic characteristics and shear force of beef from steers fed different energy sources (P> 0.05). The soybean hulls as the oat mixture between these and do not alter the main characteristics of the carcass and meat, so with different energy sources can be used in the diet of cattle, which benefit producer and refrigerator.
O objetivo do presente estudo foi avaliar o efeito do grão de aveia branca em relação à casca do grão de soja e suas misturas, como fonte energética, sobre os componentes não integrantes e as características da carcaça e qualidade da carne de novilhos terminados em confinamento. Utilizaram-se 36 bovinos machos castrados, oriundos do cruzamento entre as raças Charolês x Nelore, com idade e peso vivo médios finais de 24 meses e 356,4 kg, respectivamente. Os animais foram distribuídos nos tratamentos, conforme a fonte energética na fração concentrada da dieta, com grão de aveia branca, casca do grão de soja ou mistura do grão de aveia branca e da casca do grão de soja (na proporção 1:1). O delineamento experimental foi o de blocos ao acaso, com três tratamentos e 12 unidades experimentais por tratamento, sendo cada animal uma unidade experimental. Com relação ao acúmulo de gordura renal, inguinal, ruminal e conjunto das gorduras totais, observou-se efeito significativo (P<0,05), sendo a quantidade de gordura renal e total dos animais dos tratamentos mistura e casca do grão de soja superior à aveia branca. Para os demais componentes não integrantes da carcaça não observou-se diferença entre as diferentes fontes energéticas (P>0,05). Quanto aos efeitos das fontes energéticas sobre as características quantitativas da carcaça, apenas apresentaram diferença com relação à conformação (P<0,05). Sendo que a carcaça dos novilhos dos tratamentos casca do grão de soja e aveia branca tiveram carcaças de conformação regular e por outro lado a mistura apresentou carcaças de conformação boa. A quantidade de gordura foi maior nas carcaças dos animais dos tratamentos casca do grão de soja e mistura com relação à aveia branca (P<0,05), observou-se comportamento inverso para relação músculo/gordura. Com relação ao tempo de resfriamento da carcaça na região do músculo Longissimus dorsi, nos períodos de 0, 12 e 24 horas não ocorreu diferenças significativas entre o pH e temperatura (P>0,05). Quanto ao pH do músculo Recto femoralis, os animais alimentados com mistura de casca do grão de soja e aveia branca (1:1) apresentaram menor pH no momento que as carcaças foram colocadas (0 hora) e retiradas (24 horas) da câmera fria (P<0,05). Não foram verificados valores significativos para cor, textura, marmoreio, perdas ao descongelamento e a cocção, características organolépticas e força de cisalhamento da carne de novilhos alimentados com diferentes fontes energéticas (P>0,05). A casca do grão de soja como a aveia branca e a mistura entre essas não alteram as principais características da carcaça e da carne, portanto as fontes energéticas estudadas podem ser utilizadas na dieta de bovinos, as quais beneficiam produtor e frigorífico.

Abstract:
Une collection de 22 mutants derives de la souche 3937 d'erwinia chrysanthemi affectes dans l'assimilation du fer sont aussi affectes dans leur capacite a generer un symptome de maceration systemique chez leur hote le saintpaulia. Ces mutants ont ete isoles par insertion d'une seule copie du genome d'un derive du phase mu incapable de se transposer. Ils ont permis de caracteriser un systeme d'assimilation du fer a haute affinite impliquant un siderophore de type catechol: la chrysobactine ainsi que la proteine d'un pm apparent de 82 kd, son recepteur. La co-inoculation de deux mutants, dont l'un est incapable de stimuler la croissance de l'autre en milieu gelose carence en fer, a restaure une maceration systemique de la plante. Excepte pour deux mutations, les alleles sauvages de tous les autres genes ont ete clones sur un fragment de 55 kb d'adn chromosomique, grace a un vecteur de clonage in vivo, le rp4: mini-mu. Cette region, ainsi que les deux autres genes qui n'en font pas partie, ont ete localises sur la carte genetique du chromosome. E. Chrysanthemi est aussi capable d'utiliser deux siderophores qu'elle ne produit pas: l'enterobactine et le ferrichrome. Des reactions croisees antigene-anticorps entre les proteines de membrane externes induites en carence en fer d'e. Chrysanthemi et d'escherichia coli montrent que la proteine d'un pm apparent de 88 kd est le recepteur du complexe ferrique de l'enterobactine, celle de 78 kd serait le recepteur du ferrichrome
