This movement began following the tragic murder of Mahsa Amini by the Morality Police's patrol unit in Tehran, turning into a focal point for collective power and revealing fundamental changes in the mindset of Iranian society, particularly highlighting the central role of women. The world's first encounter with the tragic murder of the 22-year-old Mahsa Amini by Iran's “morality police” was through her image. As millions around the world browsed through news and social media, they were shocked by the image of the unconscious Amini hooked up to ventilators—her punishment for showing some hair through a loosely worn scarf (Fig. 1). The photograph was so influential that a week after its release, its brave photographer, journalist Niloofar Hamedi, was imprisoned. Despite government pressure, artists began reproducing this horrific image. In stylized reiterations, the portrait of Amini was at times coupled with mourning songs or counterrevolutionary music, as in the colorful animation by Belgium-based Iranian artist Niknaz Khalouzadeh that went viral overnight.

Abstract:
The death of Mahsa Amini in Iran garnered international attention through protests, rallies, and online movements that spread across various regions in Iran and social media platforms. Throughout the demonstration, numerous visual representations in the form of posters were created to elicit sympathy on an international scale. This article aims to uncover the representational meanings conveyed by these posters, employing a multimodal discourse perspective as introduced by Kress and Leeuwen (2021). The posters were sourced from different Instagram accounts and recommended websites like theguradian.com and dezeen.com. The findings reveal that the analyzed posters effectively communicate representational meanings through their constituent elements, including the process, participants, and circumstances. The researcher concludes that the semiotic system employed in the posters successfully establishes a connection with the issue or event being discussed. The posters depict Iranian women as individuals who courageously resist tyranny and advocate for the freedom to express themselves. The presence of distinct actions like trimming hair, clenching fists, and joining hands among women authentically portrays the protest's reality. Hence, in this instance, the creators of the posters have conscientiously considered the crucial components, reflecting the existing reality to convey the message to the viewers accurately. Communicating meaning or delivering a message to the audience holds significant implications for the success of garnering international community support and raising awareness about the ongoing issue.Keywords: Mahsa Amini, Multimodal Analysis, Representational Meanings

This is neither a “feminist revolution” per se, nor simply the revolt of the new generation, nor merely about mandatory hijab. This is a movement to reclaim life, a struggle to liberate free and dignified existence from an internal colonization. As the primary objects of this colonization, women have become the protagonists of a movement that may set the Islamic Republic on a revolutionary course.

Abstract:
This study tries to examine the ideology of White Supremacy in the West and its impact on geopolitical stability in several Eastern countries. White Supremacy is an ideology that views the white group as superior to the colored group. This ideology is full of nuances of racism with violent discourse that discredits other groups. Collecting data in this study using literature study. This study aims to examine the process of domination of the West over the East which is full of racism, and the double standard attitude of the West in responding to conflicts in a country. The results of this study show that White Supremacy causes the values of moderation – which are the biological children of democracy – to experience a crisis and do not appear in many Western political policies towards the East. The Israeli-Palestinian conflict, for example, is a concrete example where the West does not sanction Israel, unlike the West did to Russia in the war in Ukraine. This is because Israel and Ukraine are countries that are close to the West, where the right-extreme-radical view is not only widely embraced by the public but also by politicians and government elites.

Elevated levels of nitrogen oxides (NOX) from flue gases have recently become a major issue in industrial environment. This causes that the laws are becoming each time more demanding. The most employed reduction processes are: absorption by an aqueous acidic solution and catalytic gas-solid reduction. The nitrogen oxides absorbed into water leads to the formation of nitrous and nitric acid. The nitrous acid is unstable and hydrolyses into nitric acid and nitrogen monoxide which is more pollutant then than nitrogen oxides (NOX). But it may be absorbed by a sulfamic acid solution in a mechanically stirred closed reactor, where the products of this reaction are sulfuric acid and N2 which can then be directly released into the atmosphere. The present study performed the reduction of nitrous acid (0.00143 to 0.00333 kmolm-3) by an amimo sulfamic acid solution (0.00143 to 0.00500 kmolm-3). First the favorable operational conditions were analyzed (stoiquiometric ratio, agitator speed and temperature). From the results the apparent kinetic constant was obtained ( K = 0.00385 kmol.m-3.s-1) e the gasliquid mass transfer coefficients (kLa = 0.00508 s-1; 0.00738 s-1; 0.01272 s-1; 0.03093 s-1; 0.04706 s-1; 0.05272 s-1) varied with the respective agitation speed (200rpm; 300rpm; 400rpm; 600rpm; 700rpm), where the operational conditions were T = 301 K, M = 2.5 and pH = 2.0

Objetivou-se com esta pesquisa determinar as respostas de codornas japonesas e a elaboração de modelos matemáticos para determinar o nível ótimo dessas aves à ingestão de lisina, metionina+cistina, treonina e triptofano com base no modelo fatorial. Foram realizados quatro ensaios experimentais, utilizando 392 codornas japonesas no pico de postura em cada ensaio. Os ensaios foram delineados inteiramente ao acaso, com sete tratamentos e sete repetições compostas por sete aves. Os tratamentos consistiram de níveis crescentes de cada aminoácido teste. Os níveis propostos de lisina variaram de 0,402 a 1,409%, met+cis de 0,347a 1,155%, treonina de 0,254 a 0,845% e triptofano de 0,089 a 0,296% dos aminoácidos teste. Esses níveis foram estabelecidos para compreender todas as exigências (mantença, resposta e estabilidade ou platô de resposta). Para cada aminoácido foi estudado um nível controle com objetivo de confirmar a limitação do respectivo aminoácido teste. O período experimental foi de sete semanas, sendo três de adaptação e as outras quatro para elaboração do modelo fatorial. Nesse período foram acompanhados o consumo de ração, a produção de ovos, o peso de ovos e o peso corporal. As variáveis estudadas foram, consumo de ração (g), consumo do aminoácido teste (g/ave/dia), peso médio do ovo (g), massa de ovos (g) e peso das aves (g). As respostas de produção foram ajustadas pelo modelo broken line e modelo fatorial para fracionar as exigências em mantença e produção de ovos, bem como calcular o nível para otimizar a massa de ovos da população. Além disso foi estimado as exigências dos aminoácidos pelo Reading Model. O modelo broken line estimou a máxima resposta para massa de ovos de 9,67; 9,31; 9,49 e 10,37 g / d para Lis, Thr, Met + Cys e Trp, respectivamente. Os valores de m determinados pela função monomolecular foram de 156, 64, 176 e 47 mg / BWkg0,75 por dia e os valores de a determinados pela linha tracejada com duas inclinações foram de 21, 17, 15 e 4 mg / g para Lis, Thr, Met + Cys e Trp. A ingestão de aminoácidos, a produção de massa de ovos (EO) e peso corporal (PC) foram utilizadas para ajustar os parâmetros do Reading Model. Com base nos parâmetros foi aplicado o método da equação exata e de simulação considerando, 10.000 aves. A recomendação de ótimo econômico baseada na equação exata foi 308, 231, 189 e 65 mg de Lys, MetCys, Thr e Trp por ave.dia, respectivamente. Aplicando a simulação a recomendação para Lys, MetCys, Thr e Trp foi de 287, 219, 181 e 63 mg por ave.dia, respectivamente.
The objective of this research was to determine the responses to Japanese quails and the elaboration of mathematical models for the determination of the levels of lysine, threonine, tryptophan and methionine + cystine water intake. Four experimental trials were carried out using 392 Japanese quails Posture peak in each test. The trials were designed entirely at random, with seven treatments and seven replicates composed of seven birds. Treatments consisted of increasing levels of each amino acid test. Proposed lysine levels ranged from 0.402 to 1.409%, met + cis from 0.347 to 1.155%, threonine from 0.254 to 0.845% and tryptophan from 0.089 to 0.296% of the test amino acids. These levels were established to understand all requirements (maintenance, response and stability or response plateau). For each amino acid a control level was studied in order to confirm the limitation of the respective amino acid test. The experimental period was seven weeks, three of them being adapted and the other four for elaboration of the factorial model. In this period, the consumption of feed, egg production, egg weight and body weight were monitored. The variables studied were feed intake (g), test amino acid consumption (g / bird / day), mean egg weight (g), egg mass (g) and bird weight (g). The production responses were adjusted by the broken line model and factorial model to fractionate the maintenance and egg production requirements, as well as to calculate the level to optimize the egg mass of the population. In addition, the amino acid requirements of the Reading Model were estimated. The broken line model estimated the maximum response for egg mass of 9.67; 9.31; 9.49 and 10.37 g / d for Lys, Thr, Met + Cys and Trp, respectively. The values of m determined by the monomolecular function were 156, 64, 176 and 47 mg / Bwkg0.75 per day and the values of a determined by the dashed line with two slopes were 21, 17, 15 and 4 mg / g for Lys , Thr, Met + Cys and Trp. Amino acid intake, egg mass (EO) and body weight (BW) were used to adjust the Reading Model parameters. Based on the parameters, the exact and simulation equation method was applied considering 10,000 birds. The optimum economic recommendation based on the exact equation was 308, 231, 189 and 65 mg Lys, MetCys, Thr and Trp per day, respectively. Applying the simulation the recommendation for Lys, MetCys, Thr and Trp was 287, 219, 181 and 63 mg per day, respectively.

Além disso foi estimado a exigência ótima econômica de valina pelo Reading Model. O modelo broken line estimou a máxima resposta para massa de ovos de 9,49; 9,34 and 9,54 g/d para Val, Ile e Leu, respectivamente. A eficiência de utilização estimado foram 75, 65 e 55% e os valores de a determinados foram 11, 10 e 221 mg/g de para Val, Ile e Leu, respectivamente. Os valores de b determinados pela função monomolecular foram de 86, 70 e 147 mg/BWkg0,67 por dia para Val, Ile e Leu, respectivamente. A ingestão ótima econômica de valina estimada pelo Reading model foi 167 mg/ave/dia, que atenderá ao 92% da população, gerando uma margem bruta de produção de 0.0153 ave/dia.
The objective of this research was to determine the responses of Japanese quails and the elaboration of mathematical models based a factorial approach to predict the optimum intake using different levels of valine, isoleucine and leucine. Three experimental trials were carried out using 280 Japanese quails during the laying phase. The experimental design was completely randomized, with eight treatments and seven replicates composed of five birds. Treatments consisted of increasing levels of each amino acid test. Valine levels ranged from 0.196 to 0.941%, isoleucine from 0.170 to 0.815% and leucine from 0.392 to 1.881%. these levels were determined in order to analyze the utilization of these amino acids to meet the Japanese quails requirements (maintenance, response and stability or response plateau). For each amino acid trial, a control level was included in order to confirm the limitation of the respective amino acid test. The experimental period was seven weeks, being 3-week adaptation period and the other four data collection to elaborate the factorial model. The variables studied were feed intake (g), test amino acid intake (g/bird/day), egg weight (g), egg mass (g) and bird weight (g). The performance data were adjusted in the broken line and monomolecular models to determine the necessary parameters for the elaboration of the factorial model, as well as to calculate the amino acid level to optimize the egg mass of the population. The broken line model estimated the maximum response for egg output of 9.49; 9.34 and 9.54 g/day for Val, Ile and Leu, respectively. The efficiencies of utilization estimated were 75, 65 and 55% and the values of a determined were 11, 10 and 221 mg/g for Val, Ile and Leu, respectively. A busca pelo aumento da força muscular, em paralelo à diminuição da gordura corporal e melhora do rendimento esportivo, tem levado muitas pessoas ao uso de suplementos de proteínas e/ou aminoácidos, associados com a prática de exercícios físicos. Dentre os inúmeros suplementos de proteínas ou aminoácidos disponíveis no mercado, têm merecido destaque nas últimas décadas os aminoácidos essenciais de cadeia ramificada, também chamados de branched chain amino acids (BCAA\'s). O suplemento chamado de BCAA é uma combinação de três aminoácidos essenciais - L-Leucina, L-Valina e L-Isoleucina. As alegações feitas a esses aminoácidos giram em torno de seus efeitos sobre a síntese proteica no músculo esquelético, diminuição dos danos musculares, redução da gordura corporal e melhora do desempenho físico. O presente estudo teve como objetivo realizar uma revisão sistemática de estudos clínicos na utilização desses aminoácidos no intuito de aumentar a massa muscular, reduzir a gordura corporal e aumentar o rendimento esportivo, avaliando os resultados obtidos e que comprovem seu uso e segurança. A busca dos artigos nas bases de dados resultou em 7502 artigos. Seguindo todos os critérios de inclusão e exclusão, 11 artigos foram selecionados para esta revisão sistemática. A performance foi avaliada em 6 artigos. A massa muscular foi avaliada em 5. Não foram encontrados artigos visando a redução de gordura corporal. A dose de BCAA utilizada foi de 1,2 g até 10g e os estudos ministraram os suplementos na forma de pó, cápsulas e infusão. A melhor relação entre leucina, valina e isoleucina foi de 2:1:1, respectivamente. Considerando que o número de estudos com resultados benéficos praticamente se iguala ao de resultados negativos, mais estudos são necessários para que se comprove os reais benefícios do uso de BCAA como suplemento estratégico para aumentar a massa muscular, reduzir a gordura corporal e aumentar o rendimento esportivo.
The search for increased muscle strength, in parallel to decreased in body fat and improved sports performance has led many people to use protein and/or amino acid supplements associated with the practice of physical exercises. Among the numerous supplements of proteins or amino acids available in the market, the branched chain amino acids (BCAA\'s) have deserved prominence in the last decades. The supplement called BCAA is a combination of three essential amino acids - L-Leucine, L-Valine and L-Isoleucine. The claims made to these amino acids revolve around their effects on protein synthesis in skeletal muscle, decreased muscle damage, reduced body fat and improved physical performance. The present study aimed to perform a systematic review of clinical studies in the use of these amino acids in order to increase muscle mass, reduce body fat and increase sports performance, evaluating the results obtained and proving its use and safety. Search for articles in databases resulted in 7502 articles. Following all the exclusion criteria, 11 articles were selected for the present systematic review. The performance was evaluated in 7 articles. The muscle mass was evaluated in 4. The used dose of BCAA ranged from 1.2 g to 10 g and studies have given supplements in the form of powder, capsules and infusion. The best ratio of leucine, valine and isoleucine was 2:1:1, respectively. Considering that the number of studies with beneficial results almost equals that of negative results, more studies are needed to prove the real benefits of using BCAAs as a strategic supplement to increase muscle mass, reduce body fat and increase sports performance.

Abstract:
Devido às modificações na anatomia e fisiologia do trato gastrointestinal decorrente do procedimento cirúrgico, o pós-operatório da cirurgia bariátrica é acompanhado de significativa perda de peso e melhoras das comorbidades associadas à obesidade, entretanto, também é observado presença de deficiências vitamínico-minerais e de intolerâncias alimentares, principalmente a alimentos fontes de proteína. Por outro lado, os exames bioquímicos de proteína total e albumina não mostram alterações, e é baixa a presença de hipoalbuminemia relatada pela literatura. Assim, o presente trabalho teve como objetivo avaliar o perfil proteico de pacientes submetidos à cirurgia bariátrica pela dosagem dos aminoácidos livres no plasma. Foi realizada avaliação nutricional incluindo antropometria (peso, estatura, circunferência abdominal, cálculo do índice de massa corporal) e composição corporal (bioimpedância elétrica), avaliação da ingestão alimentar (recordatório de 24 horas), dosagens das concentrações séricas de proteína total e albumina e das concentrações plasmáticas de aminoácidos (pelo método de cromatografia líquida de alta eficiência) em 30 mulheres obesas antes e após 3, 6 e 12 meses da cirurgia bariátrica pela técnica de derivação gástrica em Y de Roux. Observou-se redução do peso durante todo o estudo, a maior perda ocorreu no primeiro trimestre no qual também se observou perda de massa magra. Houve redução da ingestão proteica no período pós-operatório, a qual se manteve abaixo dos valores recomendados (<0,8 g/kg/dia). Houve redução das concentrações de proteína total e albumina após 12 meses, entretanto os valores continuaram dentro da normalidade. O perfil aminoacídico mostrou aumento nas concentrações da maioria dos aminoácidos após 3 meses da cirurgia. Após 6 meses da cirurgia, houve redução das concentrações que se manteve até os 12 meses. No final do estudo foi observado que a maior parte dos pacientes apresentou deficiência para a maioria dos aminoácidos, principalmente para os essenciais. A dieta hipocalórica e hipoproteica do pós-operatório, acompanhada da rápida perda de peso inicial, pode promover o catabolismo da musculatura esquelética, aumentando os níveis de aminoácidos circulantes, objetivando suprir a síntese proteica hepática e a gliconeogênese. Assim, observa-se que dosagens de proteína total e albumina são questionáveis na avaliação do perfil proteico de pacientes pós cirurgia bariátrica, visto que, apesar dos valores de normalidade, há uma modificação do perfil de aminoácidos livres no plasma, caracterizado por deficiência para a maioria destes após 12 meses de cirurgia
Due to changes in the anatomy and physiology of the gastrointestinal tract resulting from the surgical procedure, the postoperative period of bariatric surgery is accompanied by a significant weight loss and by improvement of the comorbidities associated with obesity. However, vitamin-mineral deficiencies and food intolerance are also observed, especially regarding foods that are protein sources. On the other hand, biochemical tests for total protein and albumin do not show any changes, and the presence of hypoalbuminemia reported in the literature is low. Thus, the objective of the present study was to assess the patients protein profile submitted to bariatric surgery by measuring free amino acids in plasma. 30 obese women before and 3, 6 and 12 months after bariatric surgery by Roux-en-Y gastric bypass were submitted to nutritional evaluation including anthropometry (weight, height, abdominal circumference, and body mass index calculation) and body composition (bioelectrical impedance), food intake evaluation (24-hour food recall), total protein and albumin serum concentrations and plasma amino acid concentrations by HPLC. Weight reduction was observed throughout the study, with the greatest loss occurring during the first trimester, when a loss of lean mass was also observed. There was a protein reduction intake during the postoperative period, which remained below recommended values (<0.8 g/kg/day). After 12 months, total protein and albumin concentrations were reduced, although their values were still within normal limits. The amino acid profile showed an increase in the concentrations of most amino acids by 3 months after surgery, whereas by 6 months there was a reduction of their concentrations which persisted up to 12 months. At the end of the study, most patients presented deficiencies of most amino acids, especially the essential ones. The low-calorie and low-protein postoperative diet, accompanied by the rapid early weight loss, may promote catabolism of skeletal muscles, increasing the levels of circulating amino acids in order to provide hepatic protein synthesis and neoglucogenesis. Thus, it can be seen that total protein and albumin measurements are questionable for the evaluation of the protein profile of patients after bariatric surgery because, despite normal values, there is a modification of the free amino acid profile in plasma, characterized by deficiency of most of them 12 months after surgery

Abstract:
Barley (Hordeum vulgare L.) is the fourth largest produced cereal worldwide. About two thirds of barley production is used to animal feed. When used to feed monogastric animals, the main shortcoming of barley grains is the deficiency of essential amino acids, especially lysine, threonine and methionine. The unbalanced amino acid composition is due to the main storage protein, the hordeins, which account for about 50% of total grain protein content. The nitrogen fertilization promotes C-hordein expression and accumulation, the hordein subgroup with the lowest content of essential amino acids, and the highest content of non-essential amino acids. Due to the importance of grain protein content and composition in the end use grain quality the key objective of the present study was to obtain a detailed insight into synthesis and accumulation of barley grain proteins and their relation to improved nutritional quality. An integrated proteomic and transcriptomic analysis have been undertaken in a set of transgenic antisense barley lines with the grain protein profile altered in comparison to the non-transgenic line cv. Golden Promise. The results were presented in three manuscripts in the thesis (chapters 2, 3 and 4). The first manuscript (chapter 2) reported a new grain protein extraction method combined with multi-method protein evaluation, including biochemical quantification, amino acid composition, sodium dodecyl-polyacrylamide gel electrophoresis (SDS-PAGE) couple with mass spectrometry (MS) identification and a gel free shotgun MS identification and relative quantification. The results showed the changeability of proteins between protein groups and the importance of choosing an adequate proteomic-based method for protein identification according to the complexity of protein mixtures. In the second manuscript (chapter 3) a differential protein profile of non-transgenic barley cv. Golden Promise and the transgenic antisense C-hordein barley lines was achieved by two-dimensional gel electrophoresis (2-DE) for salt soluble proteins and the differentially expressed proteins were identified by MS. The key results showed that the suppression of C-hordeins, the poor nutritional hordein subgroup, does not exclusively affects hordein synthesis and accumulation, and that the more balanced amino acid composition of these lines may be a consequence of distinct protein sources among different transgenic events, though a stable lysine-rich proteins upregulation occurs in all lines. In the third manuscript (chapter 4) the effects of nitrogen fertilization on hordein family at transcriptional and proteome level were assessed. The main results showed differential responses to N nutrition between non-transgenic and transgenic lines. In relation to C-hordein, specific C-hordein downregulation effect and in particular different responses to N were verified among subgroups of C-hordein multigene family in the transgenic line at transcriptional and proteomic level. In summary, the multi-method strategy used in the present work was successfully applied to obtain comprehensive information about barley grain proteins synthesis and accumulation and explain, at least in part, their relation to improved nutritional quality. These results can be useful in barley breeding programs aiming selective alterations of specific alleles/homologues to change amino acid composition by changing the relative proportions of the grain proteins in order to improve the barley grains nutritional quality.
A cevada (Hordeum vulgare L.) é o quarto cereal mais produzido no mundo. Cerca de dois terços desta produção é utilizada na alimentação animal. A principal desvantagem dos grãos de cevada na alimentação de animais monogástricos é a deficiência de aminoácidos essenciais, principalmente lisina, treonina e metionina. Esta composição desfavorável ocorre devido à principal proteína de reserva dos grãos, as hordeínas, que representam cerca de 50% do teor total de proteína no grão. O nitrogênio promove a expressão e o acúmulo de C-hordeínas, o subgrupo com o menor teor de aminoácidos essenciais e o maior teor de aminoácidos não essenciais. Devido à importância do teor e composição de proteínas nos grãos na determinação de sua qualidade no uso final, o principal objetivo do presente trabalho foi obter uma visão detalhada sobre a síntese e acúmulo de proteínas de grãos de cevada e sua relação com a melhoria da qualidade nutricional. Análises proteômicas e transcriptômicas integradas foram realizadas em um conjunto de linhagens transgênicas de cevada com o perfil de proteínas de reserva alterados em comparação à linhagem não transgênica cv. Golden Promise. Os resultados foram apresentados na forma de três manuscritos (capítulos 2, 3 e 4). O primeiro (capítulo 2) descreveu um novo método de extração de proteínas dos grãos em combinação com métodos de estudo de proteínas diversos, incluindo a quantificação bioquímica, composição de aminoácidos, eletroforese em gel de poliacrilamida-dodecil sulfato de sódio (SDS-PAGE) seguido de identificação por espectrometria de massas (MS) e estratégia shotgun para identificação e quantificação relativa das proteínas. Os resultados mostram a mutabilidade das proteínas entre os diferentes grupos e a importância da escolha de um método adequado para a sua identificação de acordo com a complexidade das misturas proteicas. No segundo manuscrito (capítulo 3) o perfil proteico diferencial da linhagem não transgênica e transgênica foi obtido por eletroforese bidimensional (2-DE) para proteínas solúveis, e aquelas expressas diferencialmente foram identificadas por MS. Os resultados demonstram que a supressão das C-hordeínas não afeta exclusivamente a síntese e o acúmulo de hordeínas, e que a composição de aminoácidos mais equilibrada destas linhagens pode ser uma consequência de fontes de proteína distintas entre os diferentes eventos de transgenia, embora a regulação positiva de proteínas ricas em lisina foi estável. No terceiro manuscrito (capítulo 4) foram avaliados os efeitos da adubação nitrogenada sobre a família das hordeínas. Os resultados mostraram que as respostas foram diferentes entre as linhagens não transgênica e transgênica. Um efeito específico de supressão e respostas particulares foi verificado entre os subgrupos da família multigênica das C-hordeínas na linhagem transgênica. Em resumo, a estratégia de pesquisa multimétodo foi aplicada com sucesso na obtenção de informações abrangentes sobre a síntese e o acúmulo de proteínas nos grãos de cevada, e pelo menos em parte, explicou sua relação com a melhoria da qualidade nutricional. Esses resultados podem ser úteis em programas de melhoramento de cevada que visam alterações seletivas de alelos/homólogos específicos para alterar a composição de aminoácidos, através de mudanças nas proporções relativas das proteínas dos grãos.

O melhor entendimento sobre os aspectos metabólicos, nutricionais e produtivos das gramíneas forrageiras quanto ao uso do nitrogênio é necessário para aumentar a eficiência de uso do nutriente e para a sustentabilidade da produção pecuária. Com isso, objetivou-se analisar alguns cultivares de gramíneas forrageiras utilizados em pastagens no Brasil, quanto a: I) modificações morfológicas e produtivas da parte aérea e das raízes; II) formas de partição do nitrogênio absorvido para melhorar a eficiência de uso do nitrogênio e III) forma de assimilação do nitrogênio absorvido, sendo avaliados pelas variáveis: produção de massa seca, números de folhas e perfilhos, área foliar, concentração e conteúdos de nitrogênio total, nitrato e amônio, eficiência de uso do nitrogênio, atividades das enzimas nitrato redutase e glutamina sintetase e concentração de aminoácidos livres totais na parte aérea e nas raízes dessas gramíneas, quando submetidas a alta e baixa dose de nitrogênio. Na baixa dose de nitrogênio os cultivares Marandu, Xaraés, Piatã, Basilisk e Mombaça mantiveram o número de perfilhos constante e diminuíram o número de folhas e a área foliar, enquanto o cultivar Tanzânia manteve o número de perfilhos e área foliar constantes e reduziu o número de folhas e os cultivares Aruana e Massai aumentaram o número de perfilhos e de folhas e reduziram a área foliar. A baixa dose de nitrogênio resultou em proporções da massa seca da parte aérea e das raízes distintas entre os cultivares quando comparada à alta dose de nitrogênio, favorecendo o crescimento das raízes. Os cultivares estudados modificaram a partição de nitrogênio, nitrato e amônio da parte aérea e raízes, quando em alto e baixo suprimento de nitrogênio. Essas diferenças refletiram na mais alta eficiência de uso do nitrogênio pelos cultivares Mombaça e Tanzânia. A assimilação do nitrato ocorreu principalmente na parte aérea desses capins. Os cultivares Mombaça e Aruana apresentaram elevadas atividades da enzima nitrato redutase nas folhas diagnósticas. A atividade da enzima glutamina sintetase nas folhas diagnósticas foi mais elevada nos cultivares de Panicum. A concentração de amônio nas raízes foi mais alta nos cultivares Piatã e Xaraés, na baixa dose de nitrogênio, e nos capins Aruana e Mombaça, na dose alta de nitrogênio. A concentração de aminoácidos totais nas folhas diagnósticas foi mais elevada nos cultivares de Panicum, quando submetidos à alta dose de nitrogênio, enquanto nas raízes foi maior nos cultivares de Brachiaria, nas duas doses de nitrogênio.
A better understanding of the metabolic, nutritional and production aspects of nitrogen use by grasses are needed to increase nutrient use efficiency and livestock production sustainability. Thus, this study aimed to analyze some forage grasses cultivars used in Brazilian pastures, for: i) morphological and production changes in shoots and roots; II) absorbed nitrogen partition to improve nitrogen use efficiency and III) nitrogen assimilation, evaluated by the variables: dry matter production, number of leaves and tillers, leaf area, concentration and content of total nitrogen, nitrate and ammonium, nitrogen use efficiency, nitrate reductase and glutamine synthetase activities and free amino acids concentration in shoots and roots of these grasses, when supplied with high and low nitrogen rates. At low nitrogen rate, Marandu, Xaraés, Piatã, Basilisk and Mombaça cultivars kept the number of tillers constant and decreased the number of leaves and leaf area, while Tanzânia cultivar kept the number of tillers and leaf area constant and reduced the number of leaves, and Aruana and Massai cultivars increased the number of tillers and leaves and reduced leaf area. The low nitrogen rate resulted in different shoots to roots proportions among cultivars when compared to the higher nitrogen rate, which favored roots growth. The cultivars changed the partition of nitrogen, nitrate and ammonium between roots and shoots, in both nitrogen rates. These differences reflect the higher nitrogen use efficiency by Mombaça and Tanzânia cultivars. The nitrate assimilation occurred mainly in the shoots of these grasses. Mombaça and Aruana cultivars showed high nitrate reductase activity in diagnostic leaves. The glutamine synthetase activity in diagnostic leaves was higher in Panicum cultivars. Ammonium concentration in the roots was high in Piatã and Xaraés, at low nitrogen rate, and Aruana and Mombaça grasses, at high nitrogen rate. The total amino acids concentration in diagnostic leaves was higher in Panicum cultivars than in Brachiaria cultivars, when high nitrogen rate was supplied, whereas Brachiaria cultivars had this concentration high in the roots, at the two nitrogen rates.

Os polissacarídeos são os componentes maioritários dos grãos de café verde e torrado e da bebida de café. Os mais abundantes são as galactomananas, seguindo-se as arabinogalactanas. Durante o processo de torra, as galactomananas e arabinogalactanas sofrem modificações estruturais, as quais estão longe de estar completamente elucidadas devido à sua diversidade e à complexidade estrutural dos compostos formados. Durante o processo de torra, as galactomananas e arabinogalactanas reagem com proteínas, ácidos clorogénicos e sacarose, originando compostos castanhos de alto peso molecular contendo nitrogénio, designados de melanoidinas. As melanoidinas do café apresentam diversas atividades biológicas e efeitos benéficos para a saúde. No entanto, a sua estrutura exata e os mecanismos envolvidos na sua formação permanecem desconhecidos, bem como a relação estrutura-atividade biológica. A utilização de sistemas modelo e a análise por espectrometria de massa permitem obter uma visão global e, simultaneamente, detalhada das modificações estruturais nos polissacarídeos do café promovidas pela torra, contribuindo para a elucidação das estruturas e mecanismos de formação das melanoidinas. Com base nesta tese, oligossacarídeos estruturalmente relacionados com a cadeia principal das galactomananas, (β1→4)-Dmanotriose (Man3), e as cadeias laterais das arabinogalactanas, (α1→5)-Larabinotriose (Ara3), isoladamente ou em misturas com ácido 5-Ocafeoilquínico (5-CQA), o ácido clorogénico mais abundante nos grãos de café verde, e péptidos compostos por tirosina e leucina, usados como modelos das proteínas, foram sujeitos a tratamento térmico a seco, mimetizando o processo de torra. A oxidação induzida por radicais hidroxilo (HO•) foi também estudada, uma vez que estes radicais parecem estar envolvidos na modificação dos polissacarídeos durante a torra. A identificação das modificações estruturais induzidas por tratamento térmico e oxidativo dos compostos modelo foi feita por estratégias analíticas baseadas principalmente em espectrometria de massa, mas também em cromatografia líquida. A cromatografia de gás foi usada na análise de açúcares neutros e ligações glicosídicas. Para validar as conclusões obtidas com os compostos modelo, foram também analisadas amostras de polissacarídeos do café obtidas a partir de resíduo de café e café instantâneo. Os resultados obtidos a partir dos oligossacarídeos modelo quando submetidos a tratamento térmico (seco), assim como à oxidação induzida por HO• (em solução), indicam a ocorrência de despolimerização, o que está de acordo com estudos anteriores que reportam a despolimerização das galactomananas e arabinogalactanas do café durante a torra. Foram ainda identificados outros compostos resultantes da quebra do anel de açúcares formados durante o tratamento térmico e oxidativo da Ara3. Por outro lado, o tratamento térmico a seco dos oligossacarídeos modelo (individualmente ou quando misturados) promoveu a formação de oligossacarídeos com um maior grau de polimerização, e também polissacarídeos com novos tipos de ligações glicosídicas, evidenciando a ocorrência de polimerização através reações de transglicosilação não enzimática induzidas por tratamento térmico a seco. As reações de transglicosilação induzidas por tratamento térmico a seco podem ocorrer entre resíduos de açúcares provenientes da mesma origem, mas também de origens diferentes com formação de estruturas híbridas, contendo arabinose e manose como observado nos casos dos compostos modelo usados. Os resultados obtidos a partir de amostras do resíduo de café e de café instantâneo sugerem a presença de polissacarídeos híbridos nestas amostras de café processado, corroborando a ocorrência de transglicosilação durante o processo de torra. Além disso, o estudo de misturas contendo diferentes proporções de cada oligossacarídeo modelo, mimetizando regiões do grão de café com composição distinta em polissacarídeos, sujeitos a diferentes períodos de tratamento térmico, permitiu inferir que diferentes estruturas híbridas e não híbridas podem ser formadas a partir das arabinogalactanas e galactomananas, dependendo da sua distribuição nas paredes celulares do grão e das condições de torra. Estes resultados podem explicar a heterogeneidade de estruturas de melanoidinas formadas durante a torra do café. Os resultados obtidos a partir de misturas modelo contendo um oligossacarídeo (Ara3 ou Man3) e 5-CQA sujeitas a tratamento térmico a seco, assim como de amostras provenientes do resíduo de café, mostraram a formação de compostos híbridos compostos por moléculas de CQA ligadas covalentemente a um número variável de resíduos de açúcar. Além disso, os resultados obtidos a partir da mistura contendo Man3 e 5-CQA mostraram que o CQA atua como catalisador das reações de transglicosilação. Por outro lado, nas misturas modelo contendo um péptido, mesmo contendo também 5-CQA e sujeitas ao mesmo tratamento, observou-se uma diminuição na extensão das reações transglicosilação. Este resultado pode explicar a baixa extensão das reações de transglicosilação não enzimáticas durante a torra nas regiões do grão de café mais ricas em proteínas, apesar dos polissacarídeos serem os componentes maioritários dos grãos de café. A diminuição das reações de transglicosilação na presença de péptidos/proteínas pode dever-se ao facto de os resíduos de açúcares redutores reagirem preferencialmente com os grupos amina de péptidos/proteínas por reação de Maillard, diminuindo o número de resíduos de açúcares redutores disponíveis para as reações de transglicosilação. Além dos compostos já descritos, uma diversidade de outros compostos foram formados a partir dos sistemas modelo, nomeadamente derivados de desidratação formados durante o tratamento térmico a seco. Em conclusão, a tipificação das modificações estruturais promovidas pela torra nos polissacarídeos do café abre o caminho para a compreensão dos mecanismos de formação das melanoidinas e da relação estrutura-atividade destes compostos.
Polysaccharides are the major components of green and roasted coffee beans, and coffee brew. The most abundant ones are galactomannans, followed by arabinogalactans. During the roasting process, galactomannans and arabinogalactans undergo structural modifications that are far to be completely elucidated due to their diversity and complexity of the compounds formed. During the roasting process, galactomannans and arabinogalactans react with proteins, chlorogenic acids, and sucrose, originating high molecular weight brown compounds containing nitrogen, known as melanoidins. Several biological activities and beneficial health effects have been attributed to coffee melanoidins. However, their exact structures and the mechanisms involved in their formation remain unknown, as well as the structure-biological activity relationship. The use of model systems and mass spectrometry analysis allow to obtain an overall view and, simultaneously, detailed, of the structural modifications in coffee polysaccharides promoted by roasting, contributing to the elucidation of the structures and formation mechanisms of melanoidins. Based on this thesis, oligosaccharides structurally related to the backbone of galactomannans, (β1→4)-D-mannotriose, and the side chains of arabinogalactans, (α1→5)-Larabinotriose, alone or in mixtures with 5-O-caffeoylquinic acid, the most abundant chlorogenic acid in green coffee beans, and dipeptides composed by tyrosine and leucine, used as models of proteins, were submitted to dry thermal treatments, mimicking the coffee roasting process. The oxidation induced by hydroxyl radicals (HO•) was also studied, since these radicals seem to be involved in the modification of the polysaccharides during roasting. The identification of the structural modifications induced by thermal and oxidative treatment of the model compounds was performed mostly by mass spectrometry-based analytical strategies, but also using liquid chromatography. Gas chromatography was used in the analysis of neutral sugars and glycosidic linkages. To validate the conclusions achieved with the model compounds, coffee polysaccharide samples obtained from spent coffee grounds and instant coffee were also analysed. The results obtained from the model oligosaccharides when submitted to thermal treatment (dry) or oxidation induced by HO• (in solution) indicate the occurrence of depolymerization, which is in line with previous studies reporting the depolymerization of coffee galactomannans and arabinogalactans during roasting. Compounds resulting from sugar ring cleavage were also formed during thermal treatment and oxidative treatment of Ara3. On the other hand, the dry thermal treatment of the model oligosaccharides (alone or when mixed) promoted the formation of oligosaccharides with a higher degree of polymerization, and also polysaccharides with new type of glycosidic linkages, evidencing the occurrence of polymerization via non-enzymatic transglycosylation reactions induced by dry thermal treatment. The transglycosylation reactions induced by dry thermal treatment can occur between sugar residues from the same origin, but also of different origins, with formation of hybrid structures, containing arabinose and mannose in the case of the model compounds used. The results obtained from spent coffee grounds and instant coffee samples suggest the presence of hybrid polysaccharides in these processed coffee samples, corroborating the occurrence of transglycosylation during the roasting process. Furthermore, the study of mixtures containing different proportions of each model oligosaccharide, mimicking coffee bean regions with distinct polysaccharide composition, subjected to different periods of thermal treatment, allowed to infer that different hybrid and non-hybrid structures may be formed from arabinogalactans and galactomannans, depending on their distribution in the bean cell walls and on roasting conditions. These results may explain the heterogeneity of melanoidins structures formed during coffee roasting. The results obtained from model mixtures containing an oligosaccharide (Ara3 or Man3) and 5-CQA and subjected to dry thermal treatment, as well as samples derived from spent coffee grounds, showed the formation of hybrid compounds composed by CQA molecules covalently linked to a variable number of sugar residues. Moreover, the results obtained from the mixture containing Man3 and 5-CQA showed that CQA acts as catalyst of transglycosylation reactions. On the other hand, in the model mixtures containing a peptide, even if containing 5-CQA and subjected to the same treatment, it was observed a decrease in the extent of transglycosylation reactions. This outcome can explain the low extent of non-enzymatic transglycosylation reactions during roasting in coffee bean regions enriched in proteins, although polysaccharides are the major components of the coffee beans. The decrease of transglycosylation reactions in the presence of peptides/proteins can be related with the preferential reactivity of reducing residues with the amino groups of peptides/proteins by Maillard reaction, decreasing the number of reducing residues available to be directly involved in the transglycosylation reactions. In addition to the compounds already described, a diversity of other compounds were formed from model systems, namely dehydrated derivatives formed during dry thermal treatment. In conclusion, the identification of the structural modifications in coffee polysaccharides promoted by roasting pave the way to the understanding of the mechanisms of formation of melanoidins and structure-activity relationship of these compounds.

Abstract:
The aim of this thesis was to determine the content of biogenic amines and polyamines, specifically putrescine (PUT), spermidine (SPD) and spermine (SPM) in mutton meat during storage and heat treatment. The meat of slaughter animals is rich in these amines but, unfortunately, data on the content of mutton meat whether in slaughter bodies as well as during storage or heat treatments in the literature are still missing. The samples were provided by small farmers and the animals were hybrids of several breeds. The samples were taken from the thigh and back. The samples of lamb meat were frozen and the ones were watched from 0-6 months. The samples of leg were cooled and packed into three different types of packaging. It was the type of packaging in a polyethylene bag (PE), vacuum packed (VP) and controlled atmosphere packaging (MAP). All the samples were analyzed in the days and also on the initial concentration at day 0. For frozen and cooled (chilled) samples which were stored in PE and VP was observed the decrease in all monitored amines. Only the packaging in MAP occurred in the SPD to a slight increase over the initial content. From heat treatments were performed usual preparations of the meals which are made in central Europe and the meals were cooked on particular days. The highest decrease was measured in roasted meat, then stewed and cooked meat in this order. Reported data are comparable to published data for pork and beef meat stored under the same or similar conditions. I think that these data can help to extend the data in the literature.

Abstract:
In September 2022, worldwide media were fulfilled of news about the terrifying death of a young woman called Mahsa Amini. She died in a hospital after being arrested and beaten by the Morality Police and it caused thousands of protests not only in Iran, but all around the world. The revolution that started on Iranian women fighting for their rights was an historical event that brought all Iranian women and men, who were against the regimen, together to protest. These events were shown in different social media sites such as TikTok, Instagram, Twitter, etc. So, everyone could know what was happening. Late in 2023, The European Parliament awarded Sakharov Prize posthumously to Mahsa Amini and the 'Women, Life, and Freedom' movement so the authors have created a proposal to show at schools the importance of this historical event and how to inform themselves by using social networks.

Abstract:
In this paper, we present a computational analysis of the Persian language Twitter discourse with the aim to estimate the shift in stance toward gender equality following the death of Mahsa Amini in police custody. We present an ensemble active learning pipeline to train a stance classifier. Our novelty lies in the involvement of Iranian women in an active role as annotators in building this AI system. Our annotators not only provide labels, but they also suggest valuable keywords for more meaningful corpus creation as well as provide short example documents for a guided sampling step. Our analyses indicate that Mahsa Amini's death triggered polarized Persian language discourse where both fractions of negative and positive tweets toward gender equality increased. The increase in positive tweets was slightly greater than the increase in negative tweets. We also observe that with respect to account creation time, between the state-aligned Twitter accounts and pro-protest Twitter accounts, pro-protest accounts are more similar to baseline Persian Twitter activity.
