Classical physicochemical and/or sensory methodologies are inadequate to describe the perception of water. Indeed, the taste of water is difficult to describe due to the medium itself which is considered to have no taste or with tastes due to weak concentrations of sapid molecules. The objective of this thesis is to develop an innovative and objective method for measuring perception. In order to achieve this, a protocol adapted to tasting is constructed from physiological measurements that provide access to unconscious reactions from the nervous system in response to gustatory or olfactory stimuli. The objectives of this work were to: (1) review the various methods of physiological measurements; (2) determine the most relevant to the type of stimuli studied; (3) establish a link between the characteristics of interest (intensity, hedonic valence and concentration); (4) predict the perception of tastes and odours of water. In this study, the physiological measures investigated were the EEG, heart rate, electrodermal and skin blood flow responses. In order to evaluate a large spectrum of flavours, the four basic tastes (sweet, salty, acid and bitter) were used at weak concentrations close to the limit of perception, diluted in Evian water (reference water). An application to chlorine tasting has been developed. It showed that it is possible to construct individual sensory spaces of reference based upon the physiological responses, which are stable over time and directly related to the sensory characteristics of the stimuli and to their concentration in water. Finally, the methodology for building sensory spaces adapted to the characterization of the tastes and odours of water enables the construction of a perceptual space typical of a human subject. The prediction potential of this approach has been demonstrated and shows the relevance of the method for sensory evaluation

Plusieurs patients avec traumatisme craniocérébral (TCC) sont incapables de communiquer à l'unité des soins intensifs (USI). Dans ces conditions, l'utilisation de comportements suggestifs de douleur (ex: grimace) est recommandée pour la détection de douleur. Or, les patients TCC pourraient présenter des réactions atypiques en réponse à la douleur. Ainsi, les comportements de douleur recommandés pourraient ne pas s'appliquer à ces derniers. Par ailleurs, la validité des signes vitaux et de d'autres paramètres physiologiques dont l'indice bispectral (BIS) mériterait d'être davantage explorée pour la détection de douleur chez cette clientèle. Ce projet visait à valider l'utilisation d'indicateurs comportementaux et physiologiques de la douleur chez les patients TCC avec différent niveaux de conscience à l'USI. Un devis prospectif à mesures répétées intra-sujets a été utilisé. Les participants TCC ont été observés pendant 1 minute avant (i.e. repos), pendant et 15 minutes après deux procédures: 1) la prise de pression artérielle non-invasive: PPNI (procédure non-nociceptive) et 2) le positionnement au lit (procédure nociceptive). À chaque observation, les comportements étaient documentés à l'aide d'une grille de collecte contenant 50 énoncés inspirés d'outils d'évaluation de la douleur existants. Les signes vitaux (i.e. systolique, diastolique, pression artérielle moyenne (PAM), fréquence cardiaque (FC), fréquence respiratoire (FR), saturation (SpO2), monoxyde de carbone (CO2) et pression intracrânienne (PIC)) ainsi que le BIS bilatéral étaient enregistrés de façon continue à l'aide d'un ordinateur de collecte de données. À chaque observation, les participants étaient enregistrés sur vidéo permettant ainsi l'évaluation de l'accord inter-juges et intra-juge des comportements notés. Chez les participants conscients, l'auto-évaluation de la douleur était recueillie. Au total, 45 patients TCC ont participé à l'étude. Les données relatives au BIS bilatéral ont été recueillies chez 25 de ces patients qui étaient inconscients ou avec conscience altérée. En général, un nombre plus élevé (p<0.001) de comportements suggestifs de douleur a été observé chez les participants lors du positionnement au lit (médiane=4), en comparaison au repos et de la PPNI (médiane=1 pour repos et PPNI). Lors du positionnement au lit, les comportements suggestifs de douleur les plus fréquemment observés étaient souvent atypiques et incluaient le rougissement du visage, l'ouverture subite des yeux, le larmoiement et la flexion des membres supérieurs/inférieur. Ces comportements étaient observés chez 22.2 à 66.7% des participants qui ont rapporté la présence de douleur lors de la procédure nociceptive. Des coefficients kappa modérés à élevés (k entre 0.40-0.96) ont été obtenus pour les accords intra-juge et inter-juges de la plupart des comportements observés. Concernant les signes vitaux, la FR s'est vu augmenter (p<0.001) exclusivement lors du positionnement au lit et ces fluctuations étaient corrélées à l'auto-évaluation de la douleur des participants conscients (rpb=0.736; p<0.05). En regard du BIS bilatéral, les participants avec TCC gauche avaient une augmentation des valeurs du BIS droit plus prononcée (+17.23%, p=0.021) que les participants TCC droit (+3.01%). Les fluctuations du BIS droit des TCC gauche étaient également fortement corrélées (rs=0.986, p<0.001) avec le nombre de comportements suggestifs de douleur exhibé par ceux-ci lors du positionnement au lit. Tel que souligné dans des travaux antérieurs, les patients TCC présenteraient des comportements atypiques lors de procédures nociceptives à l'USI. De plus, dans leur ensemble, les signes vitaux pourraient manquer de spécificité pour la détection de la douleur des patients TCC. Enfin, la validité du BIS bilatéral pour la détection de la douleur devrait être davantage examinée chez les patients TCC avant de pouvoir le considérer comme un indicateur de douleur chez cette clientèle à l'USI.

Children with cerebral palsy experience significant psychological stress during rehabilitation. This is related to many psychological factors such as fear, anxiety and phobias, and physical factors such as the weight of the rehabilitation devices, their friction on the body, and the pain related to motor problems. In the state of art, it has been shown that researchers have followed an approach using physiological parameters as biomarkers of stress. They mainly use biosignals such as skin temperature (ST), electrocardiography (ECG), electrodermal activity (EDA), electromyography (EMG), respiration, pupil diameter, electroencephalography (EEG) for stress assessment. Since thermal and hydric exchanges are a function of temperature evolution, they can also be an indicator of stress, especially since they represent an indicator of thermal discomfort. For this purpose, in this work, a textile heat fluxmeter, which has characteristics of permeability, flexibility and suitability for use on the skin, has been developed, analyzed and characterized. An experimental device was set up in order to establish a calibration system of the fluxmeter. Then the thermo-hydric behavior of the fluxmeters was analyzed under laboratory conditions. The developed textile heat fluxmeter showed similar sensitivities as the gold standard sensor. Moreover, the study of the fluxmeter performance showed a similar behavior to that of the standard sensor. Therefore, stress tests were conducted on 20 healthy adult volunteers of different ages and genders, women and men, and on two children, 7 and 12 years old, also healthy. Three different types of activities were performed to induce stress, namely, mathematical activities, virtual reality games and a sports activity. This was with the objective of stimulating different types of stress, i.e. positive stress (eustress), negative stress and physical stress, respectively. The results of the tests show a similar behavior between the two fluxmeters (textile and standard), and a positive correlation between the behavior of the electrocardiogram and the fluxmeter. A relation was established in the majority of cases between the volunteers' feedback on the stress they felt and their thermo-hydric response measured by the textile heat fluxmeter

The purpose of this thesis is to study the morphological changes of top athletes and identify structural links between performance and anthropometric characteristics. This thesis is comprised of various studies that analyze the highest level of performance by morphological aspect and different levels of proof. At first, we show differentiated changes between high level athletes and individuals in the general population (Studies 1 and 2), presupposing that athletes draw benefits from their anthropometric characteristics. Then we highlight the direct links between anthropometric characteristics and performance in track and field athletes and rugby players (studies 2 and 5): rugby teams with heavier forwards and taller backs are more successful than others. In track and field, calculated allometric coefficients show the impact of mass depending on the distance of the race and sex, suggesting a possible anthropometric progression margin for female athletes. The third level of supporting evidence, highlights the existence of couples [optimal morphologies - optimal performance], biometric attractors beneficial in scoring in basketball (Study 3), and BMI optimum with performance intervals in race distance (studies 4, 5 and 6). Mass, height and BMI are relevant indicators used to specify athletes between different events (morphological gradients in track and field following the spectrum of distances, like energy gradients) but also according to their level (inverse gradient between mass and height according to middle and long distances and sprints). These three indicators also reveal morphological differentiation depending on the specific position. Being compared, changes in mass and height show asynchronous growth indicative of atypicity. Independent from BMI’s primary function of measuring the body size and obesity, it should be refined as a useful indicator of high level performance. Indeed, it reveals trade-off between power, energy capacity and organization of efficient body structure for high level athletes. In athletic performance, the whole body is in action, and mass, height and BMI take into account the entire athlete who moves. Some conclusions from the findings of this thesis arise new thoughts in the performance understanding and will generate the development of experimental protocols. Physiques are the expression of the performance as well as the organization from which it is realized. The results of this thesis, based on the analysis of consistent databases, provide a new vision on morphological optimizations. For the purpose of performance, it is necessary to know the optimizations established in order to situate athletes in their morphological fields, but also enable them to move towards better anthropometric adaptation specific of their activities
