Abstract:
The modern food industry offers the consumer bread baked with sourdough using various biologically active components of plant origin. In the production of yeast-free bread, it is advisable to use a sourdough from biologically active strains of Streptococcus thermophilus selected by the Gorsk State Agricultural University. The authors have compiled a starter culture from local strains of lactic acid microorganisms selected by the Research Institute of Biotechnology of the Gorsky State Agrarian University. Research was carried out at the Department of Biological and Chemical Technology of the Gorsky State Agrarian University. We also used cones of wild-growing hops from the botanical garden of the Gorsky State Agrarian University in order that the bitter acids present in the hops suppress the putrefactive microflora, do not have a detrimental effect on local strains of lactic acid microorganisms and allow increasing the productivity of the hop starter culture. Yeast-free bread is easily absorbed by the body, does not harm the intestinal microflora, retains useful properties during storage. The flour used in the experiment met the requirements of GOST 26574–85. When using wild-growing hops in the production of bread, useful substances included in its composition were determined that could increase the quality and safety of bread. The content of alpha acids was 6.0%, and that of essential oils was 0.7%, which corresponds to GOST 32912–2014. We used two strains of a lactic acid microorganism of local selection – Streptococcus thermophilus. Hops were extracted for 30 min at a temperature of 96 °C. Laboratory baking of bread was carried out in accordance with GOST 27669–88. Studies have shown that bread prepared using a local strain of Streptococcus thermophilus selected by the Gorsky State Agricultural University and wild-growing hops is of high quality.

Abstract:
The hydrogen content gradients that occur during hydrogen permeation through palladium-silver membranes produce complementary strain gradients of lattice expansion, which induce opposing Gorsky Effect components of Diffusion Flux. A body of observations of related “uphill effects” and allied diffusion phenomena have recently been studied, using sheet and tube membranes; these phenomena have been correlated with hydrogen pressure-hydrogen content relationships of the Pd77Ag23Hn system.

Abstract:
In self-polarized lead zirconate titanate thin films formed on platinized silicon substrates, a significant increase in the internal electric field was observed as a result of long-term aging. To explain this phenomenon, a mechanism is proposed for the formation of the internal field associated with the diffusion of charged oxygen vacancies, which, in turn, is due to the action of a mechanical stress gradient. The diffusion coefficient of charged oxygen vacancies was estimated to be ~ 3·10-16 cm2/s. Keywords: thin films, lead zirconate titanate, internal field, Gorsky effect.

Abstract:
Hydrogen and iron diffusion coefficients in molten zirconium have been calculated using a molecular dynamics (МD) model. The molecular dynamics method using micro-canonical (NVT) ensemble was used to analyze iron and zirconium diffusion coefficient dependence on electric field intensity and the presence of hydrogen in the zirconium melt. Results obtained are compared to the literature data on impurity removal in plasma-arc zirconium melting in the presence of hydrogen as well as in electron-beam and vacuum-arc melting. The limiting stage of iron removal from the melt is established. The contribution of the electric field to iron removal is estimated. We carried out systematization of the DHMedata for Zr, Nb, and Ta. An Arrhenius equation analysis for DHMeand its extrapolation to the premelting zone taking into account the Gorsky effect was carried out too. The analysis enabled the estimation of DHMefor the temperature interval where experiment encounters difficulties.

Abstract:
Most often in industrial poultry farming formaldehyde vapors are used for preincubation processing of eggs, which has a toxic effect both on staff and on the development of embryos during incubation. In this regard, still more attention is paid to the search for environmentally friendly methods of processing eggs and stimulating embryos. Objective: to establish the effect of pre-incubation treatment of eggs with ozone on embryo development rates. The research was carried out at “OOO MIP EcoDom”, which operated at the Gorsky State Agrarian University from 2016 to 2019. Quail eggs of the Estonian breed were taken for the study; they were divided into 4 groups: the control one was processed in the traditional way (formaldehyde vapor per 1 m3 of the volume of a special chamber 35 ml of 37% formalin solution plus 20 ml of water plus 20 g of potassium permanganate); for the first experimental group the duration of ozonation was 10 minutes; the second it was 20 minutes and for the third – 30 minutes. The ozone concentration was 10 mg/m3 . In the course of incubation on the 5th, 10th and 15th day, in accordance with the established standards, biological control was performed. The studies of the morphology of the experimental bird showed that during the period of hatching the chickens of all experimental groups were well developed. They had well-defined blood vessels, the entire body was covered with down. The limbs were pressed to the eggshell, and the head was near the air chamber. Deviations from the norms and pathologies were not found. Basing on the above, it can be concluded that the ozonation of hatching eggs does not cause side effects and positively affects the further development of chicks. It was found that the mass of quail embryos, incubated eggs, subjected to pre-incubation treatment with ozone lasting 20 minutes and a concentration of 10 mg/m3 was significantly higher than the corresponding parameter in the control at 6-, 10- and 15-day olds by 12.20%; 21.46% and 12.75%, respectively. The same pattern was observed in terms of embryo lengths.

Abstract:
Purpose of study. The purpose of this study is to analyze the effect of sacral-lumbar orthoses on the occurrence of pain in patients with low back pain (LBP) and the effects of these orthoses on the muscles that stabilize the trunk based on the available literature. Methods. For the purpose of this study, the following databases were searched: Pubmed, Scopus, ScienceDirect, Medline, and others using the Google Scholar search engine using the following keywords: low back pain, lbp exercise, low back pain epidemiology, low back pain orthosis, low back pain therapy, LBP treatment, lumbar sacral orthosis. Results. 26 of the 92 articles searched by the above method were analyzed in relation to the subject of the use of sacral-lumbar orthoses in patients with spinal pain syndrome. The analysis did not show that wearing a corset negatively affects muscle strength. Most current studies recommend using a corset in combination with exercise and/or pharmacotherapy for LBP. Conclusion. There are not enough studies to conclusively determine the effect of lumbar sacral orthoses on the sensation of pain in the lumbar spine. Among the main limitations of the analyzed studies are difficulty in measuring pain, as pain is a subjective sensation, and the significant number of possible causes of LBP, which are sometimes difficult to specify.

Abstract:
This publication explores the history of personal contacts and correspondence between the distinguished biochemist V. I. Nilov and the writer Maxim Gorky in 1933–1936. Through out his life, M. Gorky tried to use his influence to help talented scientists as well as scientific and cultural institutions. In 1933, V. I. Nilov, a researcher from the Nikita Botanical Gardens, wrote to Gorky about the experiments he performed in his biochemistry lab on the synthesis of vitamin C, plant breeding for chemical composition, and isolation of opiates from poppy. The writer appealed to the USSR top officials, intending to improve the situation with scientific institutions in Crimea. As a result of Gorky’s mediation efforts, Nilov’s documents were presented to I. V. Stalin. The leaders of the USSR were interested in such research, because it complied with the country’s strategic objectives. This, in its turn, led to changes in vitamin research and production in the USSR and had an effect on the status of the Nikita Botanical Gardens. V. I. Nilov’s scientific biography was closely interlinked with the history of the Institute of Plant Industry and its director N. I. Vavilov. By this publication, earlier unknown materials from the Archive of A.M. Gorky (Institute of World Literature, Moscow) and the Russian State Archive of Socio-Political History (Moscow) are for the first time introduced into public scientific discourse.

Abstract:
The indicator diffusion method was used for studies of the blood-brain barrier in rats and [131I]iodoantipyrine (IAP) was used as a highly diffusable model test substance. Interlaminar (Taylor) diffusion and effects of red cell carriage were studied with 57Co-diethylene-triaminepentaacetic acid (DTPA), 125I-human serum albumin, and 46Sc-microspheres (15 microns diameter). Vascular shunting from the pterygopalatine artery (PPA) into the torcula sinus was observed in some animals, and ligation of the PPA was required to obtain reliable data. Dilution curve of the reference compound was corrected to compensate for any difference in interlaminar diffusion and red cell plus protein carriage of the test substance. Apparent extraction ratio of IAP was calculated for each torcula sinus sample and found to increase during the initial phase of the dilution curve, reach a peak of approximately 0.85, and fall during the latter portion of the curve. These results suggest a heterogeneity of intravascular transit times in the cerebral circulation and a rapid efflux of IAP from brain into venous blood. Because of the topography of cerebral capillaries, we developed a modification of the distributed model for intravascular transit and capillary exchange proposed by Goresky et al. (J. Clin. Invest. 52: 991-1009, 1973) and Rose and Goresky (Circ. Res. 34:541-554, 1976); this modification included a well-mixed tissue compartment, as suggested by Johnson and Wilson (Am. J. Physiol. 210: 1299-1303, 1966) and is named the tissue homogeneity model. The experimental data was analyzed by both the tissue homogeneity and Goresky models. The estimated mean extraction E (0.95 and 0.94) and the estimated permeability-surface area product of influx (PS)1 (3.1 and 2.8 ml.min-1.g-1) for IAP in a whole blood injectate were similar using the two different models. The efflux rate constant (k2) for IAP was consistently smaller when the tissue homogeneity model was used (0.13 +/- 0.02 s-1) vs. that obtained with the Goresky model (0.18 +/- 0.02 s-1). Model simulations also indicated that the efflux parameter k2 was most sensitive to the choice of kinetic models, but we could not discriminate between the two model analyses on the basis of the "quality of fit." Nevertheless, from anatomical considerations, we suggest that the tissue homogeneity model may be more appropriate fro brain.

Abstract:
Russian urban planning practice is experiencing an era of global changes. The appearance of architectural and landscape objects with different types of organization of public spaces in Moscow makes it possible to talk about the transition from standard city planning to objects that have no boundaries between nature, architecture and human environment. Functionally renewed Gorky Park with Crimean Quay and Zaryadye Park represent a new type of public space where nature and technology, education and entertainment, history and modernity are combined and complement each other. New objects have a positive effect on environmental changes using the latest construction technologies, offer citizens a variety of activities and have a powerful scientific resource in working on city aesthetics and ecology. Scientists describe such town-planning objects, as “hybrid spaces”. Hybridization of urban areas encompasses different urban planning levels: from integration of architectural landscape object with border elimination by nature in the historic city center (Zaryadye Park) to formation of the newest linear park with different types of public in the contour of the water area (Gorky Park and Crimean Quay). Due to the high interest of professionals in the new city objects, hybrid spaces deserve to be thoroughly studied, as they influence not only quality of urban environment in the use of landscape architecture tools and technologies, but also issues of managing urbanization and climate change in the near future.

Regularities of steel structure degradation of the “Novopskov-Aksay-Mozdok” gas main pipelines (Nevinnomysskaya CS) as well as the “Gorky-Center” pipelines (Gavrilovskaya CS) were studied. The revealed peculiarities of their degradation after long-term operation are suggested to be treated as a particular case of the damage accumulation classification (scheme) proposed by prof. H.M. Nykyforchyn. It is shown that the fracture surface consists of sections of ductile separation and localized zones of micro-spalling. The presence of the latter testifies to the hydrogen-induced embrittlement effect. However, the steels under investigation possess sufficiently high levels of the mechanical properties required for their further safe exploitation, both in terms of durability and cracking resistance.

Abstract:
The regulation of river flow in the Volga basin has caused irreversible changes to aquatic ecosystems. The transformation of the Volga into a cascade of hydraulic structures with a non-flow regime has resulted in a decrease in depth and flow, and an increase in the temperature and concentration of chemical elements, which has induced the process of eutrophication. The change in the species diversity of aquatic organisms under conditions of intense eutrophication was studied on models of water bodies from the Volga basin; the Kostroma section of the Gorky reservoir (Kostroma spill and the middle river section), and lakes Galichskoe and Chukhlomskoe were studied. Rheophilic biocenosis was replaced by a limnophilic one, the migration paths of fish were disrupted, and population characteristics were changed. In accordance with environmental conditions, the level of primary production and the calculated Carlson trophic index (TSI) and Broth-proposed index (ITS) (1987), the water bodies of the northern part of the upper Volga region are classified as follows: the middle river section of the Gorky reservoir is mesotrophic-eutrophic (TSI = 55.2, ITS = 16.2); the Kostroma spill is eutrophic with a tendency to hypertrophy (TSI = 67.4, ITS = 6.8); Lake Galichskoe is eutrophic with a tendency to dystrophy (TSI = 63.2, ITS = 8.4), and Lake Chukhlomskoe is hypertrophic with a tendency to dystrophy (TSI = 77.4, ITS = 8.0). In addition, frequent fluctuations in water level, reaching 1 m, have had an adverse effect on inhabitants of the littoral zone including the spawning fish, which may lead to disappearance of some of the region’s most sensitive species.

Mollusks were caught in four water areas of the Gorky Reservoir, which differ in the concentrations of Ca2+, Mg2+, Na+, and K+ cations. A correlation relationship has been established between the quantitative parameters of cations in water and the intensity of peroxide processes, on the one hand, and the level of general antioxidant activity in mollusk tissues, on the other. Statistically significant interspecific differences in the studied parameters have been recorded in mollusks from areas with an increased concentration of cations.

Abstract:
The study was conducted in the river section of the Gorky reservoir in the zone affected by the heated water discharge from the Kostroma hydroelectric power plant during the growing season (May–November) 2021. The reduced species richness was observed in the sites of the maximum water heating, which, however, quickly returned to the initial values in the downstream section of the river. The lethal effect of warm waters on zooplankton is mainly manifested in the summer, when the natural warming of the river waters is influenced by the heated water discharge from the Kostroma hydroelectric power plant. In autumn, the warming effect of heated waters, on the contrary, promotes better survival of organisms. Fish reach a high abundance in the study area by the end of summer, when the grown juvenile sleave shallow waters. In the autumn period, the fish redistribution and a significant increase in the abundance occur in the area of heated waters compared to the back ground sites. The results obtained indicate the absence of an environmentally significant lethal effect. Local plankton losses are quickly compensated due to high reproduction rates and short-cycle development of invertebrates. The lethal effect of exposure to high temperatures on fish was not found.

Abstract Fässler, S. M. M., and Gorska, N. 2009. On the target strength of Baltic clupeids. – ICES Journal of Marine Science, 66: 1184–1190. The acoustic backscattering of Baltic clupeids, herring and sprat, is explored to improve biomass estimation of these ecologically and commercially important species. Modelling approaches that account for the complexity of fish morphology are used to compute the mean backscattering cross section. The input data for modelling are based on X-ray radiographs of Baltic herring and sprat. The backscatter sensitivity to fish morphology and to other biological (fat content), acoustic (frequency), behavioural (orientation pattern), and environmental (depth and salinity) parameters is also analysed. The effect of various parameters on the TS–L relationship of Baltic clupeids is studied, and the possibility of using the same TS–L relationships for Baltic herring and sprat is discussed. The results improve the understanding of the spatial and temporal variability of the measured target strength of clupeids in the Baltic Sea.

Abstract:
Abstract Inaccuracy in herring target strength can be an important source of bias in the acoustic assessment of several important herring stocks. New acoustic data on herring target strength (Ona et al., 2001, submitted for publication; Ona, 2003) confirm previous suggestions and evidence on a possible reduction of the size of the herring swimbladder as a result of its compression with increasing water depth. Theoretical work for a better understanding of the acoustic scattering from herring over its entire depth distribution may therefore be essential for improving abundance estimation. This study supplements the analysis, conducted by Gorska and Ona (2003) for herring averaged-backscattering cross-section. The modal-based, deformed-cylinder model (MB-DCM) solutions, presented in that paper, are used. The sensitivity of the herring backscattering cross-section in case of normal or near-normal dorsal incidences is studied with respect to frequency, contraction factors of the swimbladder dimensions and some fish morphological parameters. The study is important for a better understanding of not only the backscattering by individual fish for the dorsal incidence, but also the depth- and frequency-dependencies of the mean-backscattering cross-section. The theoretical results have been applied in the interpretation of the actual measured target-strength data on adult herring.

Abstract:
The legislation of the Russian Federation establishes the need to take into account hazardous natural processes and their parameters in territorial planning, as well as presentation of them in the relevant documentation in the form of maps. In a number of countries, there is a long-standing practice of mapping the avalanche zones basing on the definition of different levels of danger, which are used to limit or ban the construction in avalanche zones, as well as to project the anti-avalanche activities. Russia has experience in assessing risk and mapping the avalanche danger, but the practice of making such plans in our country is still not developed. The purpose of this work is to determine and plot on map avalanche zones on the example of one of the actively developed mountain regions of Russia. The all-season mountain resort «Gorky Gorod», located on Krasnaya Polyana in the Krasnodar region, was chosen as the object of study. Two approaches to the accounting and mapping of avalanche hazard in territorial planning were tested. In the first case, occurrence and pressure of avalanches were the determining factors. In the second case, critical avalanche pressure values were used to determine their destructive impact effect. To determine indexes (indicators) of the avalanche hazard, the simulation of snow avalanches in the RAMMS program was performed. According to the results of modeling for area of the «Gorky Gorod» resort schemes of the avalanche zones were constructed on the basis of two different approaches, having no account for the anti-avalanche measures used there. A more detailed plan based on a combination of these two approaches had also been drawn up and analyzed. The required criteria for determining the boundaries of zones with different levels of the danger are the subject for discussion. However, the proposed division of avalanchedangerous territory into zones with different levels of the hazard at the stage of territorial planning meets the requirements of the legislation and contributes to improving human security, reducing the avalanche risk, and mitigating the consequences of emergencies caused by avalanches.

Abstract:
The article deals with the morphological features of spreading films of surfactants on the surface of the reservoir on the basis of experiments on the Gorky reservoir under various meteorological conditions. The test substances were: oleic acid, vegetable oil, diesel. The registration of film contamination was carried out using X-band digital coherent radar MRS-1000, located on the roof of the lighthouse at the end of the outside harbor. The processing of the obtained radar panoramas made it possible to establish that the physical properties of the pollutant are reflected in the morphological characteristics of the film slicks. In particular, the substance properties are manifested in relation of the slick axes along and across the wind direction, as well as in the effects of growth and saturation of the slick area, all other things being equal. Without claiming to be a method for identifying a substance based on the data obtained, we can conclude that these effects are present and that they can be observed using radar methods.

Abstract:

Abstract:
Today, the number of indicators that control the mineral nutrition of poultry has increased significantly. However, the physiological need of different species of poultry for some mineral elements that perform important biochemical functions in the body has not yet been definitively established. This also applies to such abiotic elements as selenium. The inclusion of selenium in feed for young poultry changes the direction of physiological and biochemical processes in the body and improves metabolism and, consequently, improves their live weight, viability, feed conversion, slaughter, and meat qualities, improve organoleptic characteristics, amino acid composition, nutritional and biological value. In order to deepen and expand modern ideas about the biological role of selenium, its impact on the productive qualities, and the interior performance of young geese in the post-embryonic period of ontogenesis, we have conducted comprehensive research. One of the tasks was to study the causal relationship between the level of consumption of young selenium geese with food and the studied indicators. Experimental studies were performed on Gorky goslings. Feeding of goslings from one day to 75 days of age was carried out with complete rations, balanced on the main nutrients and biologically active substances, in accordance with existing standards. Goslings of the first control group did not receive the addition of selenium in the feed. The birds of the experimental groups (2–4) additionally added different amounts of Selenium to the compound feeds, 0.2 mg/kg, 0.3, and 0.4 mg/kg, respectively. Correlation analysis of the obtained experimental data revealed that there are different levels and directions of the interrelationship between the economically useful and interior features included in the analysis, which may vary depending on the content of selenium in compound feed for young geese. A scheme for modeling the effects of selenium on the body of young geese raised for meat has been proposed.

Abstract:
The problem with gouramy cultivation was slow growth due to the short intestines of gouramy so that the absorption of feed takes longer and less. Several previous studies used temulawak in the form of flour, extract, oil which was applied to carp, tilapia, milkfish, catfish. The addition of extract, temulawak flour to the feed gave an increase in growth both in length and weight in the test fish. The purpose of this study was to determine whether or not the effect of temulawak extract on the growth of gouramy fish. This research was conducted for 45 days. This research was conducted by experimental method using a completely randomized design (CRD) with 5 treatments (P) 3 times replication (U), in order to obtain 15 experimental units. Treatment 0 Control (without temulawak extract), Treatment 1 Provision of temulawak extract with a concentration of 14%/kg feed, Treatment P2 Administration of temulawak extract with a concentration of 16%/kg feed, treatment P3 Administration of temulawak extract with a concentration of 18%/kg feed, and treatment P4 administration of temulawak extract with a concentration of 20%/kg feed. The results showed that in the P0 treatment the absolute weight gain was 0.78 grams, in the P1 treatment the absolute weight was 0.58 grams, the P2 treatment was 0.33 grams, the P3 treatment was 0.37 grams, and in the P4 treatment it was obtained The result of absolute weight gain was 0.39 grams. The results showed the absolute length increase ranged from 0.35-0.57 cm. It can be concluded that the addition of temulawak extract to the commercial feed of carp has no significant effect on absolute weight, absolute length, survival rate and feed efficiency level.

Abstract:
Gourami is one of the main freshwater fish commodities which has a high economic value. One of the efforts that can be made to increase the productivity of gourami is the provision of macromineral in the form of calcium carbonate (CaCo3). This study aimed to determine the effect of calcium on productivity that would be seen through the growth rate and feed conversion ratio of gourami seed. The study consisted of five doses of calcium carbonate, each of which was repeated three times. As for treating the doses of calcium carbonate, including 1 (0 mg / L CaCO3), 2 (150 mg / L CaCO3), 3 (200 mg / L CaCO3), 4 (250 mg / L) CaCO3) and 5 (300 mg / L CaCO3). The maintenance medium is added with a salinity of 3 ppt in order to save metabolic energy through an osmoregulation mechanism so that the available energy is expected to be used to increase growth. The result or absolute weight growth was not significantly different based on the analysis of variance and linier regression analysis. The analysis of variance showed that no significant different for survival rate of all treatments. The value of feed conversion ratio was not significantly different based on analysis of variance and linier regression analysis. Addition of calcium carbonate did not give significant difference in the absolute weight growth, survival rate, and feed conversion ratio of gourami seed.

Taurine in diet affected increasing in body weight and length as well as survival rate of juveniles or adults of many marine fishes. It is explained that taurine presumably increased in their ability to tolerate the hypertonicity of seawater as well as to improve their metabolism which leaded to induce maturation. In order to elucidate the effect of taurine physiological universally in the fishes, early study was conducted on freshwater fishes namely gourami (Osprhonemus goramy) and tilapia (Oreochromis niloticus). The growth was determined by their body weight and morphological changes included the length and width of their body. The reproductive status was determined by measuring fish gonadosomatic indexes (GSI) (only for tilapias). Eight experimental groups were chosen consisted of two groups with commercial fish food with and without taurine and two groups with natural fish food (consisted of 50% Xanthosoma sagittifolium) with and without taurine. Amount of taurine given was 0.4 mg/fish/day. Complete randomized design with factorial 2x2 was applied to this study with 40 gourami juveniles (@ 7 grams in weight) and 40 tilapias (@ 50 grams in weight) were used for the experimental units. The study was conducted in 2 months. Analysis variances and LSD and/or t-test at 5% were used to determine the differences among experimental groups. The results indicated that taurine groups increased their body weight for 25-66% compared to the control (no taurine) as well as their body length and width (p< 0.05). Yet, the GSI of tilapias was not shown any significantly different. In this early study we indicated that taurine affected the growth in juvenile gourami and tilapia. However, further experiments related with physiological changes and reproductive status was still needed to complete the study.

Keywords: Taurine, gourami, tilapia, growth rate
