Abstract:
This chapter explores how people's definitions of hospitality—and consequently their social meals—reflect cultural discourses about sociability. It first describes interviews of people about how they learned to cook, where they developed their ideas about parties, and what these events might have looked like in their families of origin. It asks people how they would define “hospitality”—how their definition was similar or different from that of other people or from the kind of sociable activities that went on in their families of origin. It then turns turn to textual sources from which such ideas develop. Concerns about how people construct their social lives emerge in debates about propriety, etiquette, formality, intimacy, comfort, style, and display. Such debates are never trivial, but rather illustrate how struggles for control over symbol and meaning are the real sites of conflict in contemporary society.

Etiquette and other merely formal normative standards like legality, honor, and rules of games are taken less seriously than they should be. While these standards are not intrinsically reason-providing (or “substantive”) in the way morality is often taken to be, they also play an important role in our practical lives: we collectively treat them as important for assessing the behavior of ourselves and others and as licensing particular forms of sanction for violations. This chapter develops a novel account of the normativity of formal standards where the role they play in our practical lives explains a distinctive kind of reason to obey them. We have this kind of reason to be polite because etiquette is important to us. We also have this kind of reason to be moral because morality is important to us. This parallel suggests that the importance we assign to morality is insufficient to justify it being substantive.

Abstract:
Most urban residents around the world access water through a variety of so-called informal means. While “informal” water access is often equated with private water vendors operating outside of the state, this essay argues that informal practices and logics pervade the entire water system, cutting across perceived boundaries separating the formal and informal, state and private, and utility and nonutility. This essay reconceptualizes urban water informality through a postcolonial theoretical lens, arguing that “informal” water does not lie outside of state control and oversight, nor is it strictly separate from “formal” water. Rather, informal water is a product of historically specific forms of state practice that have shaped differentiated and fractured forms of space and infrastructure over time. Central to an understanding of informal water provision is the relationship between state practice, space, and infrastructure. The essay draws from the case of Bangalore, India, to critically rethink urban water informality.
