Abstract:
The aim of this study was to investigate the cadmium (Cd) exposure level from traditional food in Fort Resolution, Northwest Territories. Cd concentration in the liver and kidney of caribou and moose exceeded the action level (1 $ mu$g/g) established by Agriculture Canada, but the frequencies of consumption of these foods were relatively low. Cd intakes from traditional food ranged from 0.01 to 1713 $ mu$g/day/person. Average Cd intakes from traditional food were estimated to be 10% and 6% of the Provisional Tolerable Weekly Intake (PTWI), 7 $ mu$g/kg body weight/person, for women and men, respectively. The major contributors to the total Cd intake on a population basis were moose liver for women, and flesh of moose and caribou for men. The average Cd inhaled from cigarette smoking was 21.1 $ pm$ 9.1 $ mu$g/day/person. Total Cd intakes from traditional food and smoking were estimated to be 24% and 20% of the PTWI for women and men, respectively. The total Cd intakes of smokers and nonsmokers were significantly different (p $<$ 0.001). The total Cd intake via market and traditional food, and cigarette smoking was 246.4 $ mu$g/week which was lower than the PTWI, 500 $ mu$g/week. Another objective of this study was to investigate an effect of food preparation on Cd speciation in food. (Abstract shortened by UMI.)

Abstract:
This thesis focuses on the idea that food insecurity and access are real issues in the lives of many Americans. Simply stated, food insecurity is when a person does not have enough food to eat or does now know where his/her next meal is coming from. More importantly when looking at food insecurity is the realization that healthy, local food access is even more prevalent an issue – with increasingly more under-resourced individuals and families being food insecure and unhealthy at the same time. This thesis includes a literature review on diet and nutrition in the United States, a chapter on methodology, history of Bowling Green, Kentucky, where this case study is focused, the benefits of shopping at farmers’ markets, perceived barriers to shopping at those farmers’ markets, and suggestions for overcoming these barriers. Local, sustainable food is the hope for a future of planet earth. It is what nourishes and sustains lives. And, it should not be a privilege. Through researching the benefits and barriers to farmers’ markets, examining these barriers, developing suggestions for overcoming these barriers, and implementing as many as these initiatives as possible in Bowling Green, Kentucky, I have not only compiled a detailed thesis, but I have also been a small part of creating change in the food community in Bowling Green. This thesis can serve as a nationwide model and describes the way to overcome food accessbarriers in urban/rural communities.

Abstract:
While Portland, Oregon's sustainable food movement wins accolades for explicitly situating itself in opposition to the industrialized global food system, it often fails to address systems of oppression that are reproduced within the alternative agri-food movement itself. This demonstrated aversion towards the messy, complex, contingent nature of the social world reflects larger processes of "de-politicization" of the overall sustainability agenda, which leads to the favoring of technological and/or spatial solutions that may undermine the social equity and justice dimensions of the "triple bottom line." This thesis focuses on an action research project involving a series of community dialogues that provided participants with a common language and understanding necessary to interrogate issues of race and class in Portland's sustainable food movement while developing visions for possible futures. Dialogue participants may find new ways to communicate, learn, identify common goals and best practices, and potentially network, collaborate and/or co-produce transformative anti-oppression strategies that integrate into the sustainable food movement. By asking those vested in the sustainable food movement to interrogate dimensions of anti-oppression consciousness, the movement becomes fortified with voices better equipped to envision sustainability within a more political and contingent reality that recognizes conflicts of power, and less resembling an idyllic, utopian, and ultimately impossible sustainability. This thesis delivers some preliminary outcomes following the dialogue series by describing and reflecting on the series' implementation and processes, and reflecting on its impact on participants' anti-oppression consciousness in the context of food and sustainability, while discussing possibilities for future scholarship.

Abstract:
Human food consumption has changed from the late 19th century to the turn of the millennium, and so has the need for resources to sustain this consumption. For the city of Linköping, situated in southeastern Sweden, the environmental imprint of an average inhabitant’s food consumption is studied from the year 1870 to the year 2000. The average consumer is the driving factor in this study, since changes in food consumption have a direct influence on the environmental imprint. This thesis analyses the environmental imprint of human food consumption from a historical perspective, by applying two different methods. An analysis of the average Swedish food consumption creates the basis for a material flow analysis of nitrogen and phosphorus, as well as a study of the spatial imprint. Emissions of nitrogen and phosphorus into the hydrosphere have decreased over this period for the system of food consumption and production for an average consumer, while the input via chemical fertilizer has increased significantly. The efficiency of this system could be increased if for instance more phosphorus in human excreta would be reused within the system instead of large deposition and losses into the hydrosphere. The spatial imprint of human food consumption shows, given the changing local preconditions, that less space would be needed for regional production of the consumed food. However, the share of today’s import and thus globally produced food doubles this spatial imprint. The results of this study show not only a strong influence of the consumption of meat and other animal products on the environmental imprint, but also great potential in the regional production of food. In the context of an increasing urban population, and thus additional billions of people who will live at an increasing distance from the agricultural production land, concern for the direct effects of our human food consumption can be of decisive importance for future sustainable food supply.

Abstract:
The demand and consumption of food products created by the livestock- and fishing industries, have a major environmental impact, affecting climate change, biodiversity, and ecosystems. Yet, there seems to be a lack of public awareness of the direct impact one’s choice of food has on the environment, which suggests that more effective efforts are needed in order to introduce the concept to consumers. By the influence of a post-humanist perspective, this thesis investigates how the environmental impact of consuming animal-based food is communicated by Swedish environmental non-governmental organizations, and how the organizations are actively working to change consumers’ dietary habits by selecting more sustainable options. The research has focused on the external communication channels of the organizations, where verbiage and imagery have been analyzed in context, by using an analytical perspective of a constructionist view of communication, of where I acknowledge that communication has changed in our digital society. The findings indicated that the organizations are showing clear efforts and willingness of communicating the environmental impact of consuming animal-based food, although these efforts remain quite limited. The promotion of a plant-based diet as a way to help mitigate climate change was also communicated to a fair extent, but the organizations seemed to be privileging the preferences of consumers for animal-based food products over the actual need for them. Given that scientific evidence has shown that human consumption of animal-based food products has a major environmental impact, the overall produced knowledge by the organizations’ communication of consuming such products is still lacking. This suggests that more effective communication efforts are still needed, given the severity of the issue, which requires a drastic social change in eating habits as currently practiced in developed nations, in order to effectively mitigate climate change.

Abstract:
The aim of this study was to explore consumers’ descriptions of sustainable food consumption. The concept of sustainability can be difficult to grasp, but is often defined in terms of three pillars; environment, society and economy. Prior research of sustainable food consumption have often focused on one of the pillars rather than all of them together in relation to consumers understandings of sustainable food consumption. Notwithstanding, previous research have mentioned that in order to fully comprehend sustainability it is essential to take all of the three pillars into consideration. Therefore, this study acknowledged this gap, as it focused on the three pillars of sustainability as a base, and further connected the three pillars to the four food concepts; organic, Fairtrade, sustainable diets and waste, in order to fully understand consumers descriptions of sustainable food consumption. The study was conducted using a qualitative approach, and the data was collected through semi-structured interviews with a sample of students and employees at Linnaeus University in Sweden. The interviewees gave varied and interesting answers, which later were analyzed in comparison to the theory on the subject. With the answers from the interviews it was concluded that environmental and social sustainability were prioritized to economic sustainability among participants. As the participants’ descriptions of sustainable food consumption was varied, and all of the four concepts in relation to three pillars were analyzed, a framework was developed in order to clarify how the consumers describe sustainable food consumption. Over the decades the concept of green consumption has been discussed with sustainable consumption, green behavior, eco-citizenship and sustainable patterns and lifestyles. Various environmental problems like global warming, pollution, shortage of natural resources and climate change threatened the sustainability of the environment and our survival. There is an increasing demand from scholars and society for the change of human behavior to help reduce the environmental impact. This study aims to investigate how supermarket influences the daily consumption in a sustainable way through the concept of green marketing in terms of green product management, green packaging, green promotion, green pricing, green logistics and green labeling. That means, a supermarket is not only a place to provide green products but also influence the culture of green consumption through the efforts of designing environmentally friendly facilities and strategies. In real life practice, there are constraints and challenges to encourage green consumption in the community. Through literature review, interview and surveys, the study investigates the kinds of products and facilities which have been used in Hong Kong supermarkets and consumers’ perception and knowledge of environmentally friendly products and services. Through exploration of overseas case studies, insights on common sustainable practices were identified and how overseas’ best practices can be adopted or modified in Hong Kong were discussed. The surveys with Wellcome/Three Sixty/MarketPlace by Jasons and the general public illustrate how supermarket can promote sustainable and green consumption in Hong Kong and the progress of achievement. The study ends with suggestions on how joint-efforts from the various stakeholders in the society can facilitate green consumption. These include public participation, green initiatives of supermarkets, price incentive, promotion and government’s support to encourage pro-environmental behavior.

Abstract:
The aims of this thesis were to examine protein metabolism and growth in fish, amphibians and reptiles under a variety of experimental conditions. The effects of low and high rations on food consumption, social interaction and growth were examined in salmon parr using X-radiography. Low ratio fish had a larger inter and intra-fish variation in food consumption, growth rate and mean share of meal than high ration fish. The food conversion ratio was not significantly different between the high and low ratio groups. Protein turnover in halibut was examined using X-radiographic and 15N stable isotope methodologies. Measured protein synthesis rates of 2.02 ± 0.24% d-1 were within the range previously reported in flatfish although the protein synthesis retention efficiency of 77% was higher than most teleosts, suggesting halibut have a low protein turnover high protein growth efficiency, growth strategy. Tissue growth, protein turnover, RNA concentration and translational efficiency (kRNA) were examined in several tissues of juvenile Trachemys scripta elegans. Protein synthesis was measured using a flooding dose injection. Mean protein synthesis rates of 2.40 ± 0.35, 1.26 ± 0.13 and 1.80 ± 0.16% protein d-1 were measured in the intestine, heart and liver, while protein synthesis retention efficiencies ranged between 0.7 and 1.0 suggesting highly efficient protein growth. RNA concentrations and translational efficiencies were similar to those previously reported in fish. The effects of anoxia and recovery from anoxia on protein synthesis, RNA concentration and kRNA were examined in T. scripta elegans. After exposure to anoxia for between 1 and 3h protein synthesis rates decreased below measurable levels, while during recovery there was no significant increase in protein synthesis above normoxic controls. RNA concentrations did not change significantly during anoxia exposure except in the heart, while the kRNA had decreased to zero after between 1 and 3h of anoxia. Downregulation of protein synthesis during anoxia exposure is probably an important energy saving strategy, during anoxia induced metabolic depression.

Abstract:
This study investigates how policy reform can reduce emissions from the consumption of protein goods in Sweden. The data material used is time-series aggregated sales and price indexes on an annual basis of goods: beef, pork, poultry, fish, and egg, together with respective mean kilograms of emissions. To calculate the tax, elasticities have been estimated using the LA/AIDS model to find the theoretical appropriate excise tax of approximately 1.70 SEK per kilograms of emissions. This tax yields a reduction in emissions of ten percent based on the results from the model. The study also provides the insight that public data within the field of the environmental food industry is limited but would, if available, provide useful analysis to decelerate global warming. The estimations in the study lack significance but is in linear with previous studies and with enough data, the results would give a more accurate course of action to follow.

Obesity has increased dramatically in the past 25 years. The consumption of added sugar has increased significantly during the same time period. Previous research indicates a direct correlation between the consumption of added sugar and the prevalence of obesity. Sugar has been identified in multiple studies as having addictive or opiate-like qualities. Unquestionably, added sugar consumption has contributed to the current obesity epidemic. Here, we apply a reference price economic model to attempt to describe sugar consumption. Using consumption and price data from the Economic Research Service of the United States Department of Agriculture, we made a reference price estimation of domestic refined sugar (sucrose) consumption. Using time-series econometric techniques, we tested the effects of internal and external reference prices, in the form of first differenced own price and price of other nutrient classes, respectively, on sugar demand. Results indicate that internal and, particularly, external reference prices do indeed play a role in consumption decisions. However, the model lacks socioeconomic variables that may help to provide a more complete consumption picture.

The relationship of Saturday morning television food commercials viewed and the food consumption of third graders in the Franklin County Community School Corporation in Franklin County, Indiana, was investigated. Such information should help parents, dietitians, and teachers educate children, ultimately producing a healthier population. The results of this study could possibly assist the federal agencies revise guidelines to help protect the children.The independent variable measured was food commercials viewed on Saturday morning; the dependent variable was food consumed. The instrument was designed, pilot-tested, and administered by the researcher with subjects’ identities remaining anonymous.Following data collection, the relationship between the variables was tested using phi coefficient. The phi value of .470 was considered to be significant beyond the .05 level to .00000 level. It was concluded that foods viewed on television are significantly correlated with foods consumed.

Abstract:
The globalized food system poses many systemic challenges that have significant impacts on the environment and human health. In order to tackle these challenges, especially those relating to climate change, it is assumed that consumers need to be accountable for the role they play in these issues, requiring them to alter their harmful consumption habits. In terms of the food system, this means that people need to evolve into ethical consumers and become more invested in what and how much they eat, where it comes from, etc . However, throughout the literature and in policies, there remains a focus on altering what people buy, rather than reducing waste from their overconsumption. Reducing waste and consumption would have a more beneficial impact for the environment, human health, and urban sustainability, yet it remains secondary to the narrative of buying sustainable alternatives. A waste reduction narrative would encourage sustainable behaviours that would also be more accessible to households of various socioeconomic backgrounds, and would provide more tangible results in terms of money saved, reduced greenhouse gases and waste output, and increased sustainability. However, food consumption is the result of many ingrained daily food practices influenced by a multitude of factors that prevent people from consciously considering the consequences of their actions. Food consumption and waste management as a phenomenon can therefore be interpreted using Social Practice Theory (SPT), which states that all humans act autonomously and according to social norms. This means that practices are recursive and routinized, subject to change, yet somewhat unconscious. All practices lead to consumption in some way, and changing such deeply embedded routines to become more sustainable requires a full understanding of these deeply entrenched practices. Practices can be broken down into three main components that drive how practices are formed and maintained:materials, competences, and meanings. This project uses mini-ethnographic studies to highlight SPT in order to understand the factors (contextual, materials, competences, and meanings) influencing households in Edmonton, Canada as they navigate the current sustainability narrative, and how they approach sustainable food consumption and food waste management. The results from this study lend some insight into what materials, competences, meanings, and other factors drive people already somewhat aware of sustainable food consumption issues to practice such types of behaviour. These influential elements have been found in many other recently published works, and give further insight into how broad external factors and specific internal factors can drive consumption practices. Prevention and reduction behaviours were already somewhat prevalent in this group. It is important that education programs targeting sustainable food consumption behaviours understand what drives certain food related practices, and how they can target the barriers that prevent certain groups of people from adopting more sustainable habits.

ENGLISH ABSTRACT: Over the last few years consumers have become more environmentally focused and have transferred this pressure upwards through the supply chain to retailers and manufacturers in turn. One of the areas under scrutiny is food packaging, as this does not form part of the product being consumed or used. Packaging's primary function is to protect the contents from the time of manufacture until it is used and the environmental footprint of packaging is only a small portion of the overall food chains'. In a study conducted by Oki and Sasaki (2000) they concluded that, a shortage of packaging materials in nations with inadequate social infrastructures causes extremely heavy losses of foodstuffs. In developed countries foodstuff waste is close to 1 %, whereas in less developed countries the waste can be as high as 50% to 75%. Functional packaging contributes to minimising this waste. Packaging media are often chosen for their ability to satisfy the product's requirements, but different materials are perceived by the public to be more or Jess environmentally friendly, independent of the functional requirements. The products with the better environmental reputation are generally those that are recycled and where companies have promoted the recycling efforts. However the perception does not necessarily reflect the actual environmental impact of the product type. In many instances, when one considers all of the energy costs and pollution effects associated with a particular product's manufacture and recycling, it can have a harsher impact than a single-use product that is disposed of after use. The long term business success of companies in the packaging industry will be linked to consumer preferences for functionally suitable, environmentally friendly packaging. To determine a product's environmental effect, a Life Cycle Analysis (LCA) is often used. LCA is a quantitative procedure to assess the environmental burdens associated with the life cycle of a product, process or service. The complete life cycle of a product includes the extraction of raw materials (including water), processing, transportation, manufacturing, distribution, the use and reuse of materials, maintenance, recycling and waste disposal. (Brent, A.C.: 2003, 115). In this report LCI's were compiled for three South African product categories, selected on the basis of volume used in the consumer market and suitable comparison products being available. Having completed the LCI based on realistic packaging products and production methods, the results per category can be presented. For a functional unit comparison of two cup types, a volume of 1000 litres was used. The results show that per functional unit, expanded polystyrene cups use 27% less energy, but produce 32% more C02 emissions than paper cups. The paper cups however use 51% more water. Neither product shows a significant overall environmental benefit over the other. For a functional unit comparison of two burger boxes, a functional number of 10 000 boxes was used. The results show that per functional unit the carton board boxes use 89% more energy, produce 268% more CO2 emissions and use 239% more water. Overall, the polystyrene burger box has a lower environmental impact. For a functional unit comparison of two protein packaging trays, a functional number of 10 000 trays was used. The results show that per unit, polypropylene trays use 94% more energy, produce 197% more C02 emissions, but only use 76% of the water compared to a foamed polystyrene tray. The LCI study has produced suitable data to provide a summary where aspects of the environmental impacts of the products can be compared. This information can be used to understand and improve the environmental footprint of the products or to educate the stakeholders who are involved in the packaging decisions. The LCI results differ from similar international studies due to the importation of most raw materials and high air emissions from local electricity production.

This inquiry examines aviation futures, within the broad context of sustainable consumption and ecological sustainability. Increasing mobility and rapid growth of road and air transport have been identified as key consumption issues, especially in relation to calls for deep cuts in greenhouse gas emissions. Economics and globalisation concerns have dominated recent academic studies of air transport. There is a growing critique, however, of growth-based aviation futures on a range of ecological, resource, security and health grounds. This inquiry adds to that critique. Its primary research aim is to identify and articulate visions and policies for aviation futures within an ecological framework. Analysis of relevant literatures, including those on sustainable consumption, transport and tourism, is complemented by an analysis of aviation and tourism growth trends worldwide, with specific reference to Asia-Pacific and Australian data. A case study of the privatisation and expansion of Canberra International Airport in the Australian Capital Territory is used to provide a global-local link and to address the airport aspects of aviation. The range of visions and policy measures are finally considered within broad consciousness and frameworks strategies for the transition to sustainability. An important conclusion is the strong need for independent institutions such as policy bodies and think tanks - working in conjunction with community groups- to develop and promote policy discourses and futures visions that challenge the prevailing hegemony of the business-political nexus.

[Truncated abstract] The role of fish consumption and omega-3 polyunsaturated fatty acids (PUFAs) in the prevention of disease has been the subject of much investigation in recent years. A clue that these factors might be of importance was the observation that populations consuming high levels of marine omega-3 PUFAs had lower rates of morbidity and mortality from cardiovascular disease. From there, research in this area has expanded to include a range of chronic diseases and their prevention. An area of particular interest is the role of fish consumption in the prevention of various cancers. In Australia, one in three men and one in four women are expected to be diagnosed with cancer by the age of 75. Identifying preventive factors that can be translated into constructive health promotional messages is of great importance in addressing this group of diseases that has such a large impact on the health and wellbeing of the population. ... Results and conclusions Analysis of the data from the population-based case-control study suggests a protective effect of preserved fish consumption, possibly due to the high oil content of these fish. The developed questionnaire is a valid and reliable tool for measuring fish and seafood consumption as determined by regression analysis with an independent biomarker and reliability analysis using intra-class correlation. Importantly, reliability can be maintained despite asking a high level of detail from participants. For ranking according to overall fish consumption, detailed questioning is probably not necessary, however inclusion of variables representing multiple categories of fish and seafood consumption in a regression model enables us to better account for variation in blood omega-3 PUFA levels than a single variable representing overall consumption. For the purpose of questionnaire validation, plasma phospholipid and erythrocyte membrane levels of EPA and DHA are equivalent biomarkers of fish and seafood consumption. The choice between them by future investigators will be based on more practical aspects such as convenience and the fasting state of subjects. The tangible product of this thesis is additional evidence to support a protective association between fish consumption and prostate and breast cancers, and a valid and reliable questionnaire v for measuring habitual consumption of fish and seafood in a West Australian population, that could also be applied to other populations after minor adjustment for local fish and seafood consumption patterns.

Traditional food is fundamental for the cultural identity, mental and spiritual well-being, and physical and nutritional health of First Nations in Canada. Rapid environment changes including environmental contamination and degradation, climate change, urbanization and industry growth reduce the availability and diversity of traditional foods. This is concomitant with changing lifestyle and an increased prevalence of malnutrition, obesity, diabetes, and cardiovascular diseases. The goal of this thesis is to investigate the roles of traditional fish consumption for First Nations’ health in the complex interplays between environmental contaminant exposure, climate change, and food and nutrition security. Data collected from the First Nations Food Nutrition and Environment Study were used. The thesis is comprised of seven chapters presented in three sections. Section 1 addressed the importance of traditional fish consumption for food and nutritional security among First Nations in Canada. With increased income-related food insecurity, First Nations rely more on traditional foods including fish and participate more in fishing and other traditional practices. Nevertheless, many factors such as climate change, governmental restrictions, hydro and forestry operations continue to reduce the availability of traditional fish and access to traditional food sources, land and waterways. Section 2 explored the associations between locally-harvested fish consumption, long chain omega-3 fatty acid (n-3 FA) intake and dietary exposure to persistent organic pollutants (POP) with type 2 diabetes in First Nations in Canada. Dietary POP exposure was positively associated with the prevalence of type 2 diabetes whereas fish consumption (n-3 FA) showed protective dose-response associations. Furthermore, we found that relatively high POP exposure from fish may outweigh the protective associations of fish on type 2 diabetes. Therefore, the balance of risks and benefits associated with fish consumption is highly dependent on the regional POP concentrations in fish. Section 3 entailed studies on the nutritional benefits of seafood consumption and modelling potential impacts of the climate-related decline in seafood abundance on the nutritional quality of adult diets and cardiovascular health among coastal First Nations in British Columbia. We estimated that projected climate change may reduce the intakes of essential nutrients by 21%– 31% by 2050 relative to 2000. Moreover, hypothetical substitution of seafood with alternative non-traditional foods would not provide adequate amounts of nutrients. Reduced fish consumption and consequent n-3 FAs intake may increase the risk of cardiovascular diseases in First Nations. Our findings provide important information for communities, fishery governance, local resource managers and public health professionals to promote traditional food systems, nutritional health, food security, and food sovereignty in Canadian First Nations.

Food security exist when every human being is able to obtain adequate food and be free from hunger. This thesis sets out to explore the moral responsibility of individuals to enhance food security in the world by their consumer choices. More specifically, this research will investigate the negative impact of the meat industry on food security in the world and whether this impact entails a moral responsibility upon individuals to reduce their meat consumption in order to enhance food security. With the capabilities approach and utilitarianism as the theoretical tools, based on the evidence and the method of argumentation, this thesis finds that consumers hold a responsibility to reduce meat consumption as it is highly detrimental to global food security, not only on a moral basis but as a matter of social justice in the world. The emphasis of reduced meat consumption should ideally be of industrially produced sources, as they have the largest impact on both food security and environmental degradation.

North American food environments have gone through dramatic shifts over the past six decades. During this period, we have witnessed the consolidation of a globalizing industrial agrifood regime, accompanied by new types of foods available and an excess of marketing. In recent years however, a growing number of scholars, environmentalists, rural organizations and consumers have highlighted the negative environmental and social impacts of this model of large scale, intensive monocultures. Another critique that has been more and more common is the lack of a comprehensive food literacy among youth populations. This thesis starts from the assumption that such knowledge is crucial to equip younger generations with the ability to understand the connections among these issues, to make conscious and informed choices and become engaged citizens, participating in transforming today’s predominantly unsustainable agrifood systems. This is essential as younger generations are the future consumers, heads of households and decision-makers in Canadian society. As such, one of the primary objectives of this research was to (re)situate the concept of food literacy amidst the many literatures while also providing an original comprehensive framework of analysis, reaffirming both its health and well-being and agrifood systems components. Consequently, and based on such assessments, the thesis offers an original and exploratory analysis of high school students’ food literacy levels. Using a mixed methods approach, it draws from qualitative and quantitative primary data resources and secondary literature to survey and compare eight groups of students in grades 9 and 10 in Ontario. Four of these groups took a food-related class and four were control groups, between two different types of food-related curricula. The research shows that a majority of the high school students who participated in the study have a basic level of food literacy. This is especially notable when including socio-environmental considerations in order to assess their level of agrifood systems’ literacy, which is the main focus and contribution that this research sought to evaluate.

In Sweden, the environmental quality goal 13 for A Varied Agricultural Landscape, that combines environment, food production and rurality and aims at keeping the agricultural landscape open, was considered as not achieved in 2016. One of the reasons for this non-achievementis the agricultural intensification and specialisation and in turn the decrease in number of pastures during the 20th century, threating thus habitats, diversity and values resulting from a continuous, traditional use of the land commonly called ‘biological heritage’. This study focuses on the traditional and sustainable animal husbandry using pastures, contributing to both the preservation of biological heritage and the production of high-quality food. It relies upon the assumption that the link between artisan food production and biological heritage is not well understood nor highlighted by the different actors taking part into the process of producing, selling, buying and consuming artisan food products in the rural areas of mid-northern Scandinavia, and therefore the study attempts to contribute with knowledge about how biological heritage is understood, described and communicated within this context. For such purposes the study takes a phenomenographic approach with biological heritage, pastures and artisan food products as the conceptions to be tested, and consists of semi-structured interviews of three agencies and surveys of artisan food producers and consumers. It adopts an environmental communication theoretical framework where a model is suggested for investigating actors’ learning process of biological heritage, from agencies to producers to consumers. The results reveal three phenomenographic categories showing that agencies and producers understand biological heritage in terms of (1) cared habitat and cared species, (2) historical and cultural know-how and (3) animals and their tasteful diet, and it is showed that the necessity of a continuous, traditional human use was less put forward than the cultural dimension of biological heritage. Also producers communicate about biological heritage to consumers through both their products and their actions. Furthermore the results show that consumers’ understandings of biological heritage are similar to the agencies’ and producers’ phenomenographic categories and that they could make a link between artisan food production and biological heritage, but only to some extent. Finally, in order to create an economic value for such products, a sense of place for pastures is argued to be a basis for people’s willingness to take care of and safeguard pastures. This study can be the starting point for further research, especially for investigating how producers actually interact with consumers about biological heritage when selling their products.

There is a challenge to feed an increasing world population. Simultaneously, as more people rely on food production, ensuring a sustainable food production becomes more important. In two of the United Nations’ seventeen sustainable development goals food is mentioned, and one of the more specific targets regards making public procurements more sustainable. There are however challenges with regards to how to reduce a Swedish public procurement’s environmental impacts. This is due to some fundamental principles every Swedish public procurement must follow. This thesis examines the environmental impacts of two public procurements of food, regarding global warming, acidification and eutrophication. It also examines whether calculating food’s environmental impacts per serving or per kg is the more representative approach. Lastly, this thesis examines how the environmental impacts of a public procurements of food can be reduced. Consequently, a methodology of how to minimize the environmental impacts of a procurement is presented. Firstly, the results show that the environmental impacts per servings and per kg differ. One procurement has approximately 50-60% higher environmental impacts compared to the other when measured per serving, but approximately 2-9% lower impacts when measured per kg. The authors argue that representing the environmental impacts per serving is more accurate, since it is more correlated to nutritional values. Secondly, the results show that the environmental impacts for minimizing each environmental impact category differs.

E todo projeto sustentável deve tornar clara a sua sugestão de transformação da sociedade. Mais que modelar formas e funções, designers criam idéias e propostas, que seus consumidores ou usuários finais percebem ou não. Portanto, esse novo valor simbólico conferido pelo design, aqui neste trabalho chamado de valor sustentável, deve ser visto como uma oportunidade para comunicar uma idéia, uma proposta de mudança social e cultural, que precisa ser percebida, do ponto de vista do consumo. Para verificar como produtos de design sustentável se comunicam com seu público, esta dissertação apresenta uma pesquisa bibliográfica e um trabalho de campo realizado junto a um grupo de trinta consumidores de móveis e objetos decorativos, de três lojas de decoração da cidade do Rio de Janeiro. Uma pesquisa qualitativa, composta de uma entrevista em profundidade, e uma pesquisa quantitativa, utilizando a técnica da análise conjunta, foram aplicadas junto aos consumidores, para avaliar a percepção do valor sustentável em peças decorativas e verificar sua eficiência como agente transformador e facilitador de mudanças.
Every design project that promises changes must, after all, establish an efficient communication with their public. And all sustainable projects should make clear their suggestion of transformation of the society. More than modeling forms and functions, designers create ideas and proposals, which their customers or end users perceive or not. Therefore, this new symbolic value given by design, here in this paper called sustainable value, should be seen as an opportunity to communicate an idea, a proposal of cultural and social change, which needs to be perceived, in terms of consumption. To verify how products of sustainable design communicate with their public, this dissertation presents a bibliographical research and a field research carried out among a group of thirty consumers of furniture and decorative objects, from three decoration stores of the city of Rio de Janeiro. A qualitative research, consisting of an in-depth interview, and a quantitative research, using the conjoint analysis technique, were applied to consumers, to assess the perception of the sustainable value in decorative pieces and verify its effectiveness as a transforming agent and changes facilitator.

In this study, a Consequential Life Cycle Assessment (CLCA) was conducted on the introduction of a potato protein for human consumption in Sweden. The assessed environmental impact cathegories in the CLCA were the categories global warming potential, eutrophication and land use. Potato protein is a side-stream that occurs during the production of potato starch and is currently used for animal feed (feed-grade). With the use of the new gene-editing technique CRISPR-Cas9, the stability of proteins in a starch potato can be improved to make the potato protein fit for human consumption (food-grade). The food-grade potato protein can be used as an ingredient in the food products: plant-based meat, quiche, sauces, wine and smoothies. When using the potato protein in one of these food products seven protein sources could potentially be substituted: soybean protein, yellow pea protein, beef protein, pork protein, chicken protein, egg protein and milk protein. The results of the CLCA show that when using the potato protein as an ingredient in a food product instead of other protein sources environmental impact can potentially be reduced. Most environmental impact can be reduced by substituting animal proteins by the potato protein. Therefore, from an environmental point of view, the most interesting food products to use the potato protein in as an ingredient are the food products where currently animal products are used in as the main source of protein.

本研究以计划行为理论、态度情境行为理论、制度理论为基础,从社会心理学出发,对个体基于心理反应过程的低碳消费行为及其情境因素进行了研究。通过实证研究发现,低碳消费态度和低碳消费主观规范对低碳消费行为的影响是通过低碳消费意向实现的。低碳消费意向在低碳消费态度和低碳主观规范与低碳消费行为的关系构建中起到中介效应。结果表明,低碳消费态度和低碳消费主观规范均与低碳行为意向之间显著正相关,低碳行为意向和低碳消费行为之间显著正相关。低碳消费意向是低碳消费态度和低碳消费行为的部分中介,低碳消费意向还是低碳消费主观规范和低碳消费行为的完全中介。同时,本研究也发现便利条件对低碳消费意向和低碳消费行为之间的关系起正向调节作用。Based on the Theory of Planned Behavior, Attitude-Context-Behavior Theory and Institutional Theory, this study explores low-carbon consumption behavior based on Psychological reaction process and its context factors from the perspective of social psychology.Empirical research shows that Low Carbon Consumption Attitudes(LCCA) and Low Carbon Consumption Subjective Norms(LCCSN) influence Low Carbon Consumption Behavior(LCCB) through Low Carbon Consumption Intention(LCCI). The results show that both LCCA and LCCSN have significant positive correlations with LCCI, and LCCI has significant positive correlations with LCCB. LCCI is partial mediation between LCCA and LCCB , LCCI is also complete mediation between LCCSN and LCCB. Meanwhile, this article infer that facilitating conditions have moderating effects which strengthen the positive relationship between LCCSN and LCCI.

Abstract:
The objective of the research was to demonstrate the need, feasibility and relevance of disaggregating by income group the endogenized household sector in the Canadian Input-Output (I-O) model. Personal expenditures and revenue sources were endogenized into Agriculture Canada's I-O open model. Two models were developed, Model 1 and Model 2. Model 1 was a closed model that assumed homogeneity among households. Model 2 relaxed the homogeneity assumption.
The superiority of Model 2 was empirically demonstrated by comparing the economic indicators generated by the models. The indicators of interest were industrial output, GDP at factor cost and the number of paid jobs. A sensitivity analysis investigated the impact of changes in wages and salaries and final demand on the models. Larger differences were found between the models when wages and salaries were stimulated. As hypothesized, Model 1 underestimated the contribution of the lowest wages and salaries group by 19.9 percent and overestimated the impact of the higher wages and salaries group by 19 percent. A $1 million increase in the final demand for agricultural, agri-food and petrochemical products was also simulated. The largest impacts on industrial output occurred when agricultural production was shocked ( $3.8 million). This was followed by agri-food products ($3.2 million) and petrochemical products ( $2.7 million). While differences in the models' estimates were minimal when changes in final demand were simulated, Model 2 generated additional information on the distribution of income.
In conclusion, the results generated by the I-O model with the disaggregated household sector, Model 2, were consistent with budget data and economic theory.

Abstract:
Flooding has been identified as the predominant, environmental generator of food emergencies. Climate change and climate variability have been blamed for these extreme weather events, which are envisioned to affect the future food security and nutritional status of populations across the African continent. It is thus expected that these weather phenomena will continue to increase in frequency and intensity as climate change progresses. Already, climate change has had a dramatic effect on the natural world with increased desertification, warming oceans, rising temperatures and changing weather patterns. In turn, this has affected agriculture and fishing, which subsequently determines the availability of food. On the contrary, weather alone, is not the sole contributing factor to problems that are associated with food security/insecurity. Elements embedded within a political, social, economical, and/or other, context also serve to contribute to how a population or individual experiences food security. It is therefore imperative that these aspects from the social or developmental arena are considered in conjunction with aspects from the natural or environmental sciences. Such a holistic approach to subjects relating to climate change and development will eventually lead to the realisation of sustainable development, which in turn serves to protect human security in the long-term. The research was primarily directed at examining how flooding affects food security and what can be done to avoid, or cope with, a potential food crisis. The above-mentioned social and developmental features shaped the scope of this research, giving rise to an investigation which transcended the confines of flooding as an independent cause and consequence of food insecurity. With East Africa as a focal point, Mozambique and Zambia emerged as the most affected countries with millions of people affected by these devastating waters in 2000 and 2007, respectively. Due to the past nature of the events, it was most appropriate to utilise statistics from sources such as existing databases, reports and articles. Some of the topics that were included in the investigation examined the causes and consequences of the flooding and the management of these disasters. These topics were scrutinised using both qualitative and quantitative dimensions of research, so that an interesting and viable study could be undertaken. ii The research found that frequent and severe flood disasters increase a population‟s vulnerability to food insecurity, as a wide variety of assets, structures and infrastructures are destroyed. However, with careful management, planning and adaptation, many of these unwanted consequences can be avoided or swiftly overcome. Both Mozambique and Zambia were found to be countries that were determined to overcome the barriers associated with climate change and its subsequent extreme weather events. This positively indicated that they were committed to the development process and the wellbeing of their populations. Apart from introducing the topic surrounding the influence of flooding on food security in East Africa, one of the main goals of this research was to gather recommendations and suggestions for avoiding or managing issues that could hamper food security. This ultimately forms an important source of reference for governmental and non-governmental institutions dealing with flooding and food security. Even though Mozambique and Zambia were chosen as the cases for investigation, many of the recommendations can be adapted and applied to countries world-wide.

This paper examines the concept of sustainable development and sustainable consumption in the food industry and how consumers relate with the idea of organic food produce and their alternatives. The research was developed by using the Consumer Decision Making model and the Norm Activation Model to be able to understand what motivates consumers in their buying choices and why. These models break down the steps a consumer goes through before making a purchase and the emotional evaluation that occurs after that decision is made. With a total of 70 responses from a structured survey sent out, the results indicated that consumers are conscious about sustainable products, are aware of the environmental and social impact but 30.6% of consumers have never looked out for sustainable products.

Perfluorinated carboxylates (PFCAs), sulfonates (PFSs) and perfluoroalkylsulfonamides (PFOSAs) have been detected in whole blood and serum of non-occupationally exposed humans, yet sources of exposure have not been fully elucidated. The objectives of this study were to estimate dietary exposure to perfluorooctane sulfonate (PFOS), PFCAs (C7--C 11) and fluorotelomer unsaturated carboxylates (FTUCAs) for the general Canadian and Inuit populations prior to the phase-out of perfluorooctyl-sulfonyl production by 3M and voluntary reductions in PFOA emissions under the PFOA stewardship program. PFCs were measured in 65 archived composite food samples prepared for the 1998 Canadian Total Diet Study (TDS) and 68 archived traditional foods from Nunavut using a newly developed methanol extraction combined with a solid phase extraction clean up. Dietary exposure was estimated using food intake data available from studies carried out between 1997 and 1998 in southern Canada and Nunavut.
PFCs were detected in eight composite food samples from the Canadian TDS and in 61 traditional food samples. Elevated concentrations of PFCs were found in caribou liver (6.2+/-5.5 ng/g), ringed seal liver (7.7, 10.2 ng/g), polar bear meat (7.0 ng/g), beluga meat (7.0, 5.8 ng/g), luncheon meats (5.02 ng/g), cookies (2.7 ng/g), processed cheese (2.1 ng/g) and peppers (1.8 ng/g). Low levels of total PFCs (<1.5 ng/g) were measured in 41 traditional foods including: meat (caribou, ptarmigan, snow goose, bearded seal, walrus, black duck), berries, and fish (lake trout, arctic char). PFCs were not detected in beverages, unprocessed meats, breads, cereals and fruits from the TDS composite samples analyzed.
The ranges of estimated daily exposure to PFCs were between 2 and 59 ng-person-1 and 210 to 610 ng-person-1 for average Canadians and Inuit in Nunavut respectively. There were no statistically significant differences in mean PFC exposure levels for different age and gender groups in the general Canadian population. Inuit men in the 41 to 60 year old age group had statistically significantly higher estimated daily exposure to PFCs (p<0.05) than younger men and women from the same age group. This higher exposure was associated with the consumption of beluga muktuk, caribou liver and bearded seal intestine.
Traditional foods contributed a higher percentage to PFC exposure than market foods in all age and gender groups for the Inuit population. In general, caribou meat, arctic char meat and cookies contributed most to dietary exposure for Inuit, with caribou flesh contributing 43 to 75 percent to daily PFC dietary exposure. Dietary exposure for the general Canadian population was associated with the consumption of cakes and cookies, processed cheese, and regular cheese.
Levels of dietary exposure to PFCs estimated in these studies do not pose any significant health risk to either population based on current toxicological information.

First Nations peoples experience many benefits from eating locally-harvested wild foods, but these benefits must be considered along with the potential risks associated with exposure to environmental contaminants. Unlike store-bought foods, wild foods are an important traditional resource and a significant source of dietary protein, essential minerals and polyunsaturated fatty acids, believed to help in the prevention and treatment of obesity and obesity-related diseases such as type-2 diabetes mellitus. Wild foods continue to be an important and healthy food choice for First Nations peoples; however, they are also a primary source of dietary mercury, polychlorinated biphenyls (PCBs) and other persistent organic pollutants (POPs). To assess the effects of wild food consumption on dietary markers and contaminant accumulation, we grouped individuals from two remote Oji-Cree First Nations communities of north-western Ontario (n=71) according to their level of wild food consumption. In this study, I observed significantly higher organic contaminants in blood and higher mercury concentrations in hair for individuals consuming greater amounts of wild food. Age-adjusted contaminant concentrations were on average 3.5-times higher among high-frequency wild food consumers, with many exceeding federal and international health guidelines for mercury and PCB exposures. Contaminants in these populations approach, and in some cases exceed, threshold levels for adverse effects with potential consequences especially for prenatal development. Here, I also investigated the potential for stable isotope ratios of carbon and nitrogen (δ13C and δ15N) to serve as dietary markers and found strong positive correlations between stable isotopes and frequency of wild food and fish consumption. Frequency of fish consumption and δ15N was also shown to be positively correlated with mercury concentrations in hair and PCB concentrations in plasma. The results of this thesis demonstrate that known differences in dietary behaviour are clearly reflected in stable isotope ratios and contaminant concentrations. The data also show that contaminant exposures to those consuming wild foods in remote Boreal ecosystems is comparable to those associated with serious health effects in industrialized areas, and the problem of contaminants in wild foods is more widespread than the available literature would have led us to believe. These results affect our appreciation of contaminant exposures to First Nations peoples and will have implications for dietary choices, particularly if individuals are encouraged to consume greater amounts of wild foods for their proposed health benefits. We recommend further attention be given to the risks of contaminants in locally-harvested wild foods when promoting the benefits of their consumption to First Nations people as the problem of contaminants in remote communities practicing traditional lifestyles is often underreported and underplayed.

Poor diet precipitates significant social and economic burden, necessitating effective and economical dietary intervention strategies. Current population-level campaigns provide guidelines for living healthily and focus on the impact of lifestyle on chronic disease risk. Behavioural interventions which capitalise on individuals' existing cognitions are likely to be more effective. A programme of work is presented here which evaluates the feasibility and efficacy of an appearance-based dietary intervention approach. This project aims to improve fruit and vegetable consumption by illustrating the associated benefits to skin appearance. The impact of fruit and vegetable consumption on skin colour is assessed (Chapter 6), corroborating previous between-subjects evidence which finds that dermal yellowness (CIE b*) is positively associated with fruit and vegetable intake. This work also discovers that modest within-subject dietary change is sufficient to perceptibly alter skin colour within six weeks (Chapter 7). Perceptual preferences are examined (Chapters 5 to 9), finding that optimally healthy skin colouration is that associated with increased fruit and vegetable consumption. Two behavioural intervention trials are conducted (Chapters 6 and 9) to evaluate whether visualising the impact of fruit and vegetable consumption on skin colour motivates dietary improvement. Relative to control groups, participants receiving an appearance-based intervention (in which the above effects are illustrated and explained) reported improvements in diet, particularly when illustrations were performed upon images of one's own face. It may be valuable to disseminate such an intervention at a population level, though a number of further longitudinal studies are necessary to determine the wider effectiveness of this approach.

ENGLISH ABSTRACT: This thesis explores the importance of an appropriate understanding of ethics in sustainability transitions. Through a conceptual analysis, it finds that the dominant understanding of modernist ethics is unsuitable to the contexts of contingency in sustainability transitions, and that the participatory understanding of ethics as a complex system presents a far more adequate approach to the ethical complexity of socioecological systems. In particular, the strategy of 'practising provisionality' is suggested, which understands the process of ethical decision-making as a process of social learning. This argument is further supported by a critical reflection on the food system context. The present dangers and future uncertainties of sustainability transitions are issues of incredible complexity. Socioecological interactions can have unpredictable impacts on our ability to the needs of both current and future generations, like realising a sustainable food system. Moreover, there are difficult decisions that we also to make in such dilemmas, like the extent of natural resource exploitation, where normativity plays a large role. This means that these complex issues are also ethical issues. The importance of understanding ethics in sustainability transitions is, therefore, of great importance, since we will want to believe we are making the 'right' choices in these changing contexts. However, the understanding of ethics that dominates traditional scientific thinking and academic inquiries represents a paradigm of thought that is insensitive to complexity of socioecological systems, and is therefore, inadequate in addressing the ethical complexity of sustainability transitions. In the context of food systems, this is demonstrated in the linear emphasis on food production that dominates the ethics of realising sustainable food systems. This thesis argues that a more appropriate way of thinking about ethics in times of contingent contexts and socioecological change would have to account for complexity. In an acknowledgement of the complexity of ethics, it is argued that every decision has elements of moral consideration, and that there is also no way to know objectively whether the respective decision was morally 'right' or 'wrong'. Such an understanding of complex ethics would, therefore, emphasise the importance of recursively reasoning through every ethical decision to address any reductionisms of complexity; adopting an attitude of modesty and openness towards dialogue, and adopting a student mentality of social learning that would improve upon one's complex ethical reasoning. Subsequently, the paradigmatic shift of a complex approach to ethics is more adequate in understanding ethics in sustainability transitions.
AFRIKAANSE OPSOMMING: Hierdie tesis ondersoek die belangrikheid van 'n toepaslike begrip van etiek in volhoubaarheidsoorgange. Die bevinding van hierdie konseptuele analise is dat die oorheersende begrip van modernistiese etiek ongeskik is in die volhoubaarheidsoorgang konteks van gebeurlikheid en dat die deelnemende begrip van etiek as 'n komplekse sisteem 'n baie meer toepaslike benadering is tot die etiese kompleksiteit van sosioekologiese sisteme. An estimated 1.3 billion tons of food is lost or wasted every year, adding to the growing problem of CO2 emissions and global warming. Consequently, there is an urgent need to address this issue. However, while a lot of research in Human-Computer-Interaction has been conducted about food waste in private households, there is still a lack of research about people’s food waste at a retail level in restaurants. This paper explores the potential of gamification in the design of apps intended to support more sustainable food consumption behavior. This study is centered on the existing Too Good To Go app and examines current user behavior and perception through quantitative and qualitative methods. Then through employment of design frameworks and iterative prototype cycles the potential to encourage active sustainable food consumption is examined. Findings show that there are many challenges stopping users from actively using the current app more often.  Findings also suggest that gamification has the potential to increase users’ motivation to use the app beyond reasons of only saving food. The implications of this paper could present new opportunities for applying gamification to reduce food waste that could inspire researchers and practitioners to explore the theme further.

Understanding the process of transformational change currently taking place in the media industry is an urgent challenge for people working in the industry as well as for media consumers and other stakeholders. There is a great need to deepen our general knowledge when it comes to what the future media landscape will look like. Which of the major consumption trends that exist today will continue and possibly lead to disruptive change? Which of today’s existing trends could give us a hint of tomorrow’s media landscape? Furthermore, we need to explore the environmental impact of the future media landscape. What parameters are important when it comes to environmental aspects of media consumption, as well as in the production and distribution of media content? These are examples of the questions explored in this thesis. I have used a number of methods, such as qualitative interviews, workshops, scenarios, case studies, process studies and life cycle assessment, in order to explore the research questions. The characteristics of the media consumption trends are presented in four scenarios. I have assumed that the strength of influence from the government in combination with the strength of commercial powers will strongly affect the future of media. The development of media is framed by the economy, the political system, and by culture. The future of media is closely connected with its relationship to the power structures in society. I have also defined eleven parameters, as central when discussing the environmental aspects of media consumption. These parameters are related to electronic devices, travel, transportation, energy use and waste. In the future, we may see the realisation of some of all four scenarios described in this thesis. The environmental aspects of these different future directions depend on each person’s life situation and a number of choices that each consumer makes concerning environmental issues, in combination with the overall societal structure. In relation to the global challenge of climate change/global warming, I conclude that traditional media, public service media in particular, together with social media channels play an important role in the process of increasing knowledge and awareness among consumers, politicians and other stakeholders in society. However, in current media development, media companies are rapidly becoming more commercialized and more focused on entertainment instead of on producing serious journalism concerned with social, political and cultural matters. To conclude, I believe that it is possible to create a sustainable media system, but it will require some conscious effort of people working in the media industry, of consumers, and ultimately at the level of regulatory authorities.

There is often an assumption that there is a right and a wrong way for consumers to behave. For example, with regard to eating, people should make food choices based on maximizing vitamins and minerals and not consuming more calories than one expends in a day. Likewise, it is assumed that buying products to conspicuously signal a message to another is wasteful and maladaptive. The research in this thesis challenges these assumptions and argues that these behaviours can be both adaptive and maladaptive depending on one’s environmental conditions. In this thesis, I describe three experiments that examine how perception of environmental harshness affects appetite for different types of foods. The data shows that food desirability in adulthood varies depending on early childhood socio-economic status, the type of environmental stressor (harsh social, harsh economic and harsh physical safety) and the intensity of the stressors within each of these environments. It was also found that different types of environmental harshness differentially affects food desire based on energy density and food category type. In addition to the experiments on harshness and food desirability, I have examined how environmental harshness affects desire for products that are used to conspicuously signal information to others. For example, under conditions of environmental stress, products may be used to advertise that a male possesses financial or physical power which is desirable to a potential mate. Likewise, a women may buy products to display she possess financial power or she may purchase products that augment her beauty and sexual attractiveness. These studies reveal that product desire is also affected by different types of environmental harshness and the intensity of the stress generated by these environmental conditions. Through the research described in this thesis, we gain a more comprehensive understanding of the proximate variables that influence two subsets of consumer behaviour, namely food desire and product signalling, and how these behaviours may have been selected for due to their adaptive value.
