Full textThis thesis is aimed at developing a static computable general equilibrium model of the french economy, with an emphasis on the agricultural and food processing sectors. So far research has concentrated on the effects of policy changes on agriculture and/or parts of the food processing industries only ; the general equilibrium approach allows to consider the french food complex in its global economic environment. Three characteristics of the developed model may be underlined : the high level of disaggregation of the various stages of the food complex, the representation of production technologies and consumer preferences, the explicit modelling of the agricultural policy instruments. The model is used to analyse a great variety of agricultural policy scenarios and provides useful results for agricultural policy makers

Full textThe EU directive 1935/2004/CE compels the traceability of contaminants originating from food contact materials. Stakeholders must verify possibly with simulation that desorbed substances from packaging materials do not exceed specific migration limits. No general model exist to predict diffusion coefficients, D, ands their activation energies, Ea, in thermoplastics. This work studies the molecular transport mechanisms of additives-type molecules (MAT) in polyolefins, and the responsability of entropic trapping for the high spread of D and Ea values. The analysis rely on experimental data (D, Ea), which were available before this study, and on data collected during this study (activation volumes, Va), as well as on simulations of molecular mechanics and non-equilibrium dynamics. Scaling laws of type D proportional to the molecular mass with a power α>1,8 and simulations confirm that the geometrical confinement between polymer segments is the factor which limits the diffusion. The translation process of MAT occurs by successive reorientations of a fraction of their length along the direction of minimum section. Ramifications and symmetry decrease the diffusion process. The description of diffusion of MAT as random walks between macro-states was used to propose molecular descriptors to classify and predict D values in polyolefins. With a probabilistic framework, the proposed method based on decision trees generates likely or overestimates of D values. A microscopic method of local measurement of D and Ea values has also been developed to consider the semi-crystalline state of polyolefins at ambient temperature

Full textBurkina Faso, with more than 20% of the population suffering from undernourishment (FAO), is facing severe food insecurity like other sub-Saharan African countries (FAO). This country has implemented, since its independence in 1960, contrasting policies, initially interventionist policies in the aftermath of independence, and then liberal policies since the 90s as part of structural adjustment programs with the International Monetary Fund (IMF) and the World Bank. Different strategies against poverty have been implemented since the 2000s: Poverty Reduction Strategy Plans (PRSP), from 2000 to 2010, preceded a Strategy for Accelerated Growth and Sustainable Development (SAGSD) since 2011. But the results remained much mitigated in terms of poverty and food insecurity reduction. This thesis attempts to analyze the dynamics at work behind the weak progress in social indicators, including poverty and food security, despite macroeconomic performance recorded in recent decades. A Computable General Equilibrium Model (CGE) is used and calibrated on the major trends of Burkina Faso economy. It serves thus, on the one hand, to analyze explanatory mechanisms at work, and on the other hand to test two types of scenarios, the first assuming a decline in agricultural productivity that would result from a degradation of natural resources and climate change as highlighted in the literature. The second tests a large program of public investment in agriculture. The results show that the current dynamics can be analyzed in terms of poverty trap: natural constraints (poor endowment in natural resources) and high population growth, reinforced by weak public goods result in low labor productivity causing low revenue, low savings and then low investments behind the low labor productivity. A degradation of agricultural productivity significantly increases food insecurity of the poor and greatly reduces overall economic growth, while efficient public investment in agriculture can provide significant and rapid progress and solve the dilemma of agricultural policy: they are beneficial to rural and much more to urban poor populations

Full textIn the overseas departments, the prevalence of diabetes is high and has been for several years, a situation considered worrying by the national and regional authorities. In Martinique, the health observatory estimates the number of people affected by diabetes at around 40 000, for a population of 368 783 inhabitants in 2018 according to INSEE. The dietary transition reflects a shift towards a rich country lifestyle. Therapeutic patient education (TPE), which has been legislated in France since 2009 and aims to help people with a chronic disease to live with it on a daily basis, represents an important issue for Martinique. Inscribed in regional cultures and languages, our doctoral research seeks to understand the conditions for the development of therapeutic patient education (TPE) in a Creole context by questioning, in particular, the cultural competence of caregivers and other actors. Inspired by the "learning nests" deployed in Reunion Island and in several African countries, our interventional research questions what happens during learning situations proposed in the homes of diabetics in Martinique. Conducted in their ordinary context, the interviews and TVE workshops focus on the diabetic patients' and their carers' dietary balance. The initial results show the need to adapt food and nutrition education messages to the ordinary and cultural context of these people. They can thus better understand the information, transform it into knowledge and then use it in their daily practice to balance their diabetes. To this end, the cultural competence of the educator or trainer is necessarily called upon and mobilised. The adaptation to the ordinary context of people with diabetes can now be considered as a perspective for the deployment of a "STEP" learning situation - (Ecological, Territorialized, Adapted, Personalized and Efficient) with a view to the development of TVE in this territory

Full textThis dissertation studies the food distribution system in Viet Nam based on an imperfect competition approach.The first chapter analyzes the market behavior of the intermediaries in the traditional food distribution system. We model the intermediary behavior in all cases of market competition to recognize the impact of their market power on the food producers in the upstream, and on the consumers in the downstream of the traditional food distribution system.The competitive relationship between different food distribution channels is studied in the second chapter. We model the competition between the traditional and the modern food distribution system to analyze how the market behaves at equilibrium. We moreover investigate the coexistence condition which allows both channels to be active in each specific case of market competition.The third chapter studies the optimal channel choice of the farmers when agricultural cooperatives support these small producers accessing the modern food distribution system. We introduce two distribution channel vertically linked by demand. We study the quantity flow from small producers to the consumers by mean of a Nash equilibrium and address the question of the distribution of the farmers by a free entry equilibrium.Eventually, the fourth chapter analyzes the policy implication directly toward the food distribution system. We propose the theoretical model of land reform and study its impact on the food distribution system

Full textFood and biological systems are generally multicomponent mixtures (including water, organic solvents, dissolved solids, dissolved gases, ionic species, macromolecules). The prediction of the equilibrium properties of such environments requires the use of a fully predictive thermodynamic model. This model must be able to ensure the consistency between experimental data and to ensure the robustness of the simultaneous representation of physical equilibria (liquid-vapour, solubility, etc.) and chemical equilibria (dissociation, redox, complexation, etc.). The chemical potential is an essential property for modelling such equilibria. Its determination depends on two variables: the Gibbs free energy of formation in a chosen reference state, and the prediction of the activity coefficient which also depends on the chosen reference state. The COSMO-RS model is an excellent model for predicting activity coefficients that is widely used in chemical engineering where the studied molecules are generally neutral. This PhD study enabled to extend the performance of the COSMO-RS model toward the treatment of food and biological systems where there are systematically electrolytes in solution (in addition to neutral molecules). A new tool based on the recent advances of quantum mechanics has been developed in order to predict gas phase formation properties. By combining concepts of thermodynamics, quantum physics, electrostatics and statistical physics, it has been demonstrated that it is possible to use the COSMO-RS model to ensure the transition between the gas phase and the condensed phase. In this context, this work demonstrates that it is possible to treat simultaneously physical and chemical equilibria and thus to predict physico-chemical properties (aW, pH, Eh) in food and biological systems using the COSMO-RS model

Full textCardiovascular events are the major cause of death in France. Among the known risk factors, lipid intake is of growing interest, saturated fatty acids being too much consumed, and n-3 polyunsaturated fatty acids not enough. The aim of this PhD study is to design a spread with a lipid profile that can improve the whole lipid intake, and with cardiovascular events prevention as main goal.Four studies were conducted regarding this issue. Following the design of the optimal fatty acid profile for the product, it appeared necessary to study the solid phase recipe impact on the product texture, to achieve both nutritional and technological restrains.The design of the liquid phase recipe generated a study on the development of deleterious volatile compounds following the addition of a high proportion of fish oil in the formula. This work highlighted two phenomena linked to the emission of these molecules, one related to lipid oxidation, and the other to a contact with water.A technology of microencapsulation, which is original because of its production process and aim, was designed to ensure the protection of the active nutrients in the product matrix.Finally, a bioavailability study in rats showed that this food product is a powerful way of providing these nutrients. Incorporated in such a matrix, these molecules modified the lipid profile of the circulating and cerebral cells membrane, potentially improving the inflammatory and clotting status of the animals
