Abstract:
In the conviction that cultural itineraries must assume a growing importance in a tourism based on the criteria of sustainability, three examples of the valorisation of local culture have been elaborated. This is effectively an important component of sustainable development, one of the fundamental aspects of which is the historic memory of the territory. The growth of the tourist and free time market provides an efficacious stimulus for the development of proposals aimed at prospecting new itineraries and alleviating the more consolidated tourist flows, inserting a vast heritage of landscape and cultural resources within significant territorial fabrics. This is also true from the point of view of growing synergies between economy and culture. The three proposed itineraries unwind through areas of great interest in terms of historical traditions and of specific territorial resources which deserve cultural valorisation, particularly in view of the fact that Tuscany offers an enormous wealth distributed in a capillary manner, but much of which is little known.

Abstract:
In many European regions, rural areas are facing major challenges in economic and social terms, consequence of transformations in the role and meaning of agriculture. The loss of the productive character strongly contributed to the emergence of new roles and functions, particularly related to leisure and tourism. The book aims to discuss questions directly related to the connections between rural tourism and local socioeconomic contexts, presenting diverse theoretical and methodological perspectives and diff erent case studies from various European regions. The book addresses the relationships among rural tourism and the complex interactions, confl icts and innovative processes developing in rural territories as consequence of the implementation of tourism activities. The book responds to some relevant and not yet comprehensively researched aspects within this topic, especially in what extent tourism, in its various forms and processes, might give an important contribution to rural development.

A product of both world history and contemporary mass culture, culinary tourism is a scholarly field of study that is emerging as an important part of the tourism industry. Also known as gastronomic tourism, tasting tourism, and simply food tourism, culinary tourism refers to adventurous eating, eating out of curiosity, exploring other cultures through food, intentionally participating in the foodways of an Other, and the development of food as a tourist destination and attraction. In culinary tourism, the primary motivation for travel is to experience a specific food. Culinary tourism parallels the globalization of food production and consumption and reflects issues inherent in tourism. It has the potential to address some of the controversial issues in tourism in general, such as questions of authenticity, commodification of tradition, identity construction, intellectual property and intangible heritage, as well as the ecological, economic, and cultural sustainability of food cultures in response to tourism.

Abstract:
This book examines the transformation of Machu Picchu from an obscure archaeological site into a global tourist destination and national symbol of Peru. This book illustrates how, from the very start, tourism played a central role in the modern rise of Machu Picchu. The leaders of Cusco, where Machu Picchu is located, employed tourism to argue for the importance of their region at a time when Peru’s national leaders believed that the Andean interior offered little cultural and economic opportunities. Over time, Cusco increasingly looked to tourism as a source of needed development at a time of economic crisis in Peru’s southern Andes. While Cusco was successful in making Machu Picchu into a tourist destination, this created new conflicts over control over the region’s culture and economy. In summary, this book highlights how the transnational links and actors associated with tourism allowed local leaders in Cusco and Peru’s southern Andes to create their region’s touristic narrative and economy. Often locals employed the transnational connections of the tourism economy to bypass or influence the policies of the Peruvian national state. Over time, these efforts shifted the Peruvian state to embrace Machu Picchu and Cusco’s Andean culture as national symbols. The book contributes to larger debates about nationalism in Latin America by pointing to the influence of tourism in the elevation of Machu Picchu as a national symbol of Peru. It argues that in post-colonial nations like Peru, transnational forces like tourism can play influential roles in the creation of national identity.
