Fournir de l’eau potable à tous et à moindre prix est un défiauquel fait face l’humanité. Les techniques actuelles pour dessaler l’eau de mer reposent sur le principe de la « passoire » pour séparer le sel et les déchets de l’eau, mais cette approche connaît plusieurs limites. Nous nous sommes alors inspirés du rein humain, qui filtre l’urée de l’eau d’une façon radicalement différente : le secret réside dans sa géométrie en U qui sert d’échangeur salin. Après une preuve de concept, nous développons actuellement des systèmes inspirés du rein humain pour filtrer l’eau.

Focus Group é uma técnica sensorial qualitativa baseada no comportamento de um grupo de pessoasquanto aos atributos sensoriais. É conduzida por um moderador que garante a interação paradiscussão diante às percepções. O objetivo deste estudo foi avaliar carne de sol a partir de análisessensoriais, associando-as com resultados obtidos por análises físico-químicas. Para tanto, quatroamostras foram coletadas de comércio varejista na cidade de João Pessoa, PB, sendo caracterizadasquanto à composição centesimal, atividade de água, pH e capacidade de retenção de água (CRA).Os participantes foram recrutados conforme hábitos de consumo e as amostras foram preparadas apartir do dessalgue e cocção em forno elétrico, sendo mantidas em banho-maria até o momento daavaliação sensorial. Com as respostas obtidas, observou-se que além da aparência, o teor de umidadee a CRA são considerados parâmetros que influenciam diretamente nos atributos sensoriais. O estudoqualitativo exploratório - Focus Group, em associação aos parâmetros físico-químicos, representarammétodos confiáveis para a interpretação do perfil de consumo da carne de sol. Conclui-se que pormeio de critérios específicos, os fatores de qualidade foram melhor interpretados, definindo aspreferências de um consumidor cada dia mais exigente quanto às características de seu alimento.

Fuel cells (FCs) have emerged as a promising alternative for efficient electricity production in the future [1]. However, their widespread commercialization is hindered by their prohibitive cost due to the large amount of platinum used in these electrochemical systems [2]. Platinum is used to accelerate the unfavorable kinetics of the cathodic oxygen reduction reaction (ORR) [3]. To achieve large-scale and cost-effective development of FCs, it is essential to find high-performance platinum-free catalysts. Two solutions are mainly reported in the literature: the development of non-precious metal-based carbon catalysts and metal-free carbon catalysts. However, the work reported on these two types of carbon catalysts is sometimes contradictory regarding the actual nature of the active sites and the mechanisms of reduction of oxygen molecules on the catalyst [4]. Pyrolyzed metal-nitrogen-carbon (M-N-C) catalysts for the ORR, especially single-atom catalysts (SACs), have been widely studied because they exhibit excellent electrocatalytic performance, thanks to the high content of metal atoms anchored on a carbon support [5]. Recent research has indicated that the combination of single-atom active sites with metal nanoclusters can further improve the catalytic activity, but the underlying mechanism remains unclear [6]. Therefore, it is necessary to develop model catalysts based on both single-atoms and nanoclusters to better understand their catalytic activity. In this work, we prepared nitrogen-doped and iron-doped carbon catalysts (called Fe-NC below) with precise control of the type of iron in the material. First, the functionalization of an activated carbon was performed by carbonizing it under air in the presence of urea. Then, the sample was placed in an autoclave for hydrothermal treatment in the presence of FeCl3.6H2O to allow the incorporation of iron, and thermal post-treatment was applied to synthesize model catalysts (Fig. 1a). The precursor ratio and final pyrolysis temperature were adjusted and optimized to produce either iron-based single atoms (SA) (here referred to as FeSA-NC) or atomic clusters (AC) associated with single atoms (here referred to as FeSA+AC-NC). The results show that the iron-based catalysts exhibit outstanding catalytic activity (Fig. 1b) and durability (Fig. 1c) in alkaline medium for the ORR, even better than commercial Pt (20 wt.%)/C in the case of FeSA+AC-NC. The analysis provided insight into the development of highly efficient multifunctional electrocatalysts, where the presence of iron nanoclusters was found to be a crucial determinant of the catalytic activity for the ORR. Face à un changement dans leur environnement, les organismes peuvent être amenés à fuir ou à s’acclimater. L’acclimatation repose sur la capacité des organismes à pouvoir modifier leur phénotype, c’est à dire certains de leur traits biologiques (métabolisme,comportement, physiologie) afin de pouvoir survivre dans un environnement donné. On parle alors de plasticité phénotypique. Cependant,les autres individus d’une même espèce peuvent présenter des différences au sein de leur génotype et phénotypes. On parle alors de variabilité inter-individuelle ou intraspécifique. Cette variabilité peut se retrouver dans la plasticité que possèdent les organismes à répondre à des changements rapides ou à long terme de leur environnement. Le bar ou loup Européen Dicentrarchus labrax est un poisson marin dont l’aire de répartition s’étend des côtes nord européennes jusqu’aux côtés africaines en passant par la Méditerranée. Il entreprend des migrations saisonnières dès le stade juvénile dans les lagunes et les estuaires voire parfois même en rivière. C’est donc une espèce plastique en termes de physiologie osmorégulatrice, capable de supporter une grande gamme de salinité : de 0 à 90 ppt. En revanche, en laboratoire une forte variabilité dans la réponse osmorégulatrice en eau douce a pu être mise en évidence. Les objectifs de cette thèse étaient de caractériser la plasticité phénotypique et la variabilité intraspécifique du loup méditerranéen en lien avec la dessalure.Pour cela, des loups ont été transférés en eau douce et étudiés par différentes approches. La première m’a permis d’appréhender les effets de la dessalure sur le métabolisme respiratoire et la tolérance à l’hypoxie. En eau douce, les capacités respiratoires des loups diffèrent de celles en eau de mer avec un taux métabolique plus haut, ainsi qu’une tolérance à l’hypoxie plus accrue. De plus, l’étude des transcrits révèle des réponses différentes après deux semaines et après deux mois passés en eau douce. Les individus incapables de tolérer l’eau douce ont été caractérisés par des traits comportementaux (vitesse, déplacement) et biochimiques (pression osmotique,chlorure et sodium sanguins) plus faibles que ceux des tolérants à la dessalure. L’étude des transcrits (transporteurs ioniques et récepteurs aux hormones) a révélé que l’intolérance à l’eau douce serait due en partie à une incapacité au niveau rénale à réabsorber les ions et donc à maintenir leur balance hydrominérale. L’étude de la variabilité phénotypique des loups méditerranéens en eau douce a été répétée à des âges différents. Elle démontre que la tolérance/l’intolérance à l’eau douce est un phénomène stable en termes de proportions (30% d’intolérants),mais labile avec le temps (ce ne sont pas forcément les mêmes individus qui sont tolérants ou intolérants à la dessalure suite à des transferts successifs). Cela suggère des mécanismes de régulation aléatoire, génétiques et/ou épigénétiques. Une étude préliminaire de la méthylation des cystéines de l’ADN a permis de déduire que le transfert en eau douce influe sur la méthylation globale de l’ADN. Le lien entre variabilitéintra spécifique liée à la tolérance à l’eau douce et méthylation de l’ADN reste à étudier.La dernière approche menée a consisté à étudier la dynamique des télomères (longueur et expression du gène de la télomérase)comme potentiels marqueurs de stress hypo-osmotiques chez le loup. La méthode, désormais au point n’indique aucun effet du stress hypoosmotique sur la dynamique des télomères. Néanmoins, la réponse des loups intolérants à l’eau douce reste à confirmer en augmentant le nombre d’individus. Ces résultats préliminaires suggèrent que les transitions vers les environnements hypo-osmotiques ne provoquent pas plus de dommages oxydatifs au niveau branchial. Il serait intéressant d’aborder l’approche de la dynamique des télomères dans le cadre d’autres stress environnementaux et de creuser l’approche sur d’autres organes<br>Facing environmental change, organisms may have to flee or to acclimate. Acclimation is based on the ability of organisms tomodify their phenotype, i.e. some of their biological traits (metabolism, behaviour, physiology) in order to survive in a given environment.This is called phenotypic plasticity. However, individuals of the same species may differ within their genotype and phenotypes. This isreferred as inter-individual or intra-individual variability. This variability can be found in the plasticity of organisms to respond to rapid orlong-term changes in their environment. The European sea bass Dicentrarchus labrax is a marine fish whose range extends from the northernEuropean coasts to the African sides and the Mediterranean sea. It undertakes seasonal migrations from the juvenile stage in lagoons andestuaries and sometimes even in rivers. It is therefore a plastic species in terms of osmoregulatory physiology, capable of withstanding a widerange of salinity: from 0 to 90 ppt. On the other hand, in the laboratory, a high variability in the osmoregulatory response in fresh water wasfound. The objectives of this thesis were to characterise the phenotypic plasticity and intraspecific variability of the Mediterranean sea bass inrelation to desalination.To do this, fish were transferred to fresh water and studied by different approaches. The first one allowed me to understand theeffects of desalination on respiratory metabolism and hypoxia tolerance. In fresh water, the respiratory capacities of sea bass differ fromthose of seawater with a higher metabolic rate, as well as a higher tolerance to hypoxia. In addition, the study of the transcripts revealsdifferent responses after two weeks and two months in fresh water. Individuals unable to tolerate fresh water were characterised by lowerbehavioural traits (velocity, displacement) and biochemical traits (osmotic pressure, blood chloride and sodium) than those of freshwatertolerant. The study of transcripts (ionic transporters and hormone receptors) revealed that intolerance to fresh water is partly due to aninability at the renal level to reabsorb ions and thus maintain the hydromineral balance. The study of the phenotypic variability ofMediterranean sea bass in fresh water has been repeated at different ages. It shows that tolerance/intolerance to fresh water is a stablephenomenon in terms of proportions (30% intolerant), but labile over time (it is not necessarily the same individuals who are tolerant orintolerant to fresh water following successive transfers). This suggests random, genetic and/or epigenetic regulatory mechanisms. Apreliminary study of DNA cysteine methylation concluded that freshwater transfer influences overall DNA methylation. The link betweenintraspecific variability related to freshwater tolerance and DNA methylation remains to be investigated.The last approach used was to study telomere dynamics (length and expression of the telomerase gene) as potential markers ofhypo-osmotic stress in sea bass. The method, now in development, does not indicate any effect of hypo-osmotic stress on telomere dynamics.Nevertheless, the response of intolerant sea bass to fresh water has yet to be confirmed by increasing the number of individuals. Thesepreliminary results suggest that transitions to hypo-osmotic environments do not cause more oxidative damage at the branchial level. Itwould be interesting to use this approach in the context of other environmental stressors and to explore other organs telomere dynamics

Ma thèse porte sur l’« Étude des dessalures à la surface d’un océan stratifié à partir d’observations satellitaires et de mesures in-situ », dans deux régions majeures vis-à-vis du cycle de l’eau et illustrant la forte variabilité de la salinité à la surface de l’océan (SSS) : les régions de fortes précipitations et l’océan Arctique. Mes travaux se sont tout d’abord concentrés sur la relation entre dessalures et fortes précipitations. Cette étude a permis de déterminer la relation entre l’anomalie de SSS et le taux de pluie instantané (RR). J’ai montré, via des composites de spectres d’autocorrélation, que l’historique de la pluie jouait un rôle négligeable dans la plupart des conditions de vent, en comparaison au taux de pluie instantané. Ces résultats ont démontré un comportement inattendu par rapport aux observations in-situ et mis en avant l’aspect déterminant des échelles spatiales considérées. Ils ont motivé une étude approfondie de l’effet de l’hétérogénéité de la salinité au sein d’un pixel, sur la mesure satellitaire et à partir de mesures in-situ. Après avoir étudié les signaux de faible salinité associés aux pluies tropicales, je me suis concentré sur les signaux de faible salinité observés à la surface de l’océan Arctique, dont une grande partie provient des panaches de fleuves. J’ai pu dériver des champs de salinité en Arctique présentant des performances supérieures à une réanalyse, dans les zones de forte variabilité et dans les zones proches de la glace. Ils ouvrent donc le champ à de nouvelles études, tant aux échelles saisonnières qu'interannuelles<br>My thesis relates to the “Study of freshening over the surface of a stratified ocean from satellite observations and in-situ measurements”, in two major regions considering the water cycle and illustrating the high variability of the sea surface salinity (SSS): regions of high precipitations and the Arctic Ocean. My work first focused on the relationship between freshening and heavy precipitation. This study determined the relationship between the SSS anomaly and the instantaneous rainfall rate (RR). I then showed, via autocorrelation spectra composites, that rainfall history played a negligible role in most wind conditions, compared to instantaneous rainfall rate. These results demonstrated an unexpected behavior compared to in-situ observations and highlighted the determining aspect of the spatial scales considered. They motivated an in-depth study of the salinity heterogeneity effect within a pixel, on satellite measurement and from in-situ measurements. After studying the low salinity signals associated with tropical rains, I focused on the low salinity signals observed at the surface of the Arctic Ocean, much of which comes from river plumes. I was able to derive arctic salinity fields that performed better than reanalysis, in areas of high variability and in areas close to sea ice. These new SSS product open the field to new studies, both at seasonal and inter-annual scales

Des couches fonctionnelles hybrides organiques/inorganiques ont été générées à une interface solide/liquide à l'aide d'une nouvelle technique de fabrication ascendante (bottomup) dénommée Croissance de Couche à partir d'une Surface (Surface Grown Layers - SgL)grâce à une modulation très fine de l'interaction électrostatique entre nano-objets decharges opposés en fonction de la force ionique de la dispersion aqueuse. Différents nanoparticules/tubes à la fois cationiques et anioniques et très stables vis-à-vis d'un environnement fortement salin ont été développés. La complexation électrostatique entre ces nanomatériaux a été étudiée en solution et près d'une interface au travers du concept de "transition de dessalage". Dans un deuxième temps la croissance de couches hybrides à partird'un substrat a été étudiée en comparant l'approche SgL et la méthode classique d'adsorption séquentielle couche par couche (Layer by layer - LbL). Des expériences préliminaires ont montré le potentiel de cette approche dans le développement de substrats fonctionnels.

Cationic and anionicnanomaterials based on different hybrid nanoparticles/nanotubes that are very stable towardshigh saline environment have been formulated. The electrostatic complexation between theseoppositely charged nanomaterials has been studied in bulk and at an interface through theconcept of “desalting transition” pathway. In a second step, the growth of functional hybridlayers directly from a substrate via the novel SgL approach was then compared with theconventional Layer-by-Layer approach (LbL).
