Abstract:
Loyalty programs for convenience stores generate consumer shopping histories that are both large in size and sparse in content. Analyzing such data with traditional basket models is computationally difficult since most models are not scalable to a large set of categories. However, analyzing large data with traditional models has important advantages: the models capture consumer (shopping) behaviors that assist managers in making strategic decisions. In this thesis, we develop two studies to analyze this large and sparse convenience store shopping data. In the first study, we bridge the gap between traditional basket model analysis and the challenges of large shopping data by developing a retail market basket modeling system that captures essential elements of consumer shopping behavior in a computationally attractive manner. An application of the model to convenience store basket data yields excellent results. The main outputs of the model (segmentation structure, cross-category dependence, price elasticities) align well with managerial intuition. Moreover, the model provides excellent forecasts to a holdout sample of consumers. Using the model, we examine the revenue impact of a change in promotion policy. In the second study, we add spatial extensions to the previous model to solve a more complex problem: retail location analysis. We develop a spatial basket model to analyze the spatial pattern of consumer heterogeneity across stores, and show how to use this model to predict the demand of a new store (without any data of consumer purchase history). The main outputs of the extended model also align well with managerial intuition. Additionally, the model provides excellent forecasts to the demand of the hold-out store.

Abstract:
The public health landscape in South Africa today is characterised by a double-burden of nutritional challenges. Under-nutrition is prevalent, as is evident from the high levels of childhood stunting that are reported. Deficiencies of micro-nutrients such as vitamin A and iron continue to be prevalent in children, females and vulnerable groups. Simultaneously overweight and obesity among adults and children together with an associated increase in the occurrence of non-communicable diseases (NCDs) such as diabetes and cardiovascular disease are increasing steadily to epidemic levels. With approximately 40% of the population living under the International Poverty Line and approximately a quarter of the population not able to obtain enough food to fulfil their daily energy needs, poverty and food insecurity are harsh realities in many South African households. The ability of a household to make healthy food choices is, among other factors, affected by food affordability. Food affordability is determined by household income relative to the cost of purchased food items. In recent years, food affordability in South Africa has been under increased pressure due to the following factors: household income-growth barely keeping track with inflation, rising unemployment, as well as high and ever increasing food prices. The pressure on lower income households is particularly profound, forcing such households to use about a third of total expenditure for food purchases. In this study, a multi-disciplinary approach was used (including principles of nutrition, economics and consumer behaviour sciences) to develop models to measure the cost and affordability of healthy eating in South Africa at a national level and on a socio-economically disaggregated basis. The healthy food basket model was primarily based on the South African Food-based Dietary Guidelines, typical food consumption patterns, household demographics and official urban retail food prices monitored by Statistics South Africa. Food affordability is a major challenge, with 60% of the population unable to afford the Moderate-cost Food Basket which provides greater nutritional diversity. The more economical Thrifty Healthy Food Basket (approximately 30% less expensive) is only affordable to approximately half of the South African population. A four member household earning two minimum wages has to spend a third of total expenditure on food to be able to afford this basket, while the typical food expenditure share of such households is usually lower (approximately 24%), thus confirming the pressure on households to afford healthy eating. In future the models of healthy eating also present possibilities for further expansion (e.g. these models can be refined to study different geographical areas or different household structure typologies). Compared to national nutritional recommendations, the study found that the intakes of whole-grain starch-rich foods, lean meat, fish, eggs, dairy, fruit, vegetables and legumes were low. Inadequate intake was generally more severe among lower income households. Less-affluent households spend a large proportion of their food budget on starch-rich staples, fats / oils and sugar-rich foods, but allocate insufficient resources to animal-source foods, legumes, fruit and vegetables. This study also identified that excessive intakes of refined and processed starch-rich food options, sugar-rich foods and fats / oils were common across all income groups and increased with socio-economic status. These findings confirm the reality of the nutrition transition in South Africa. The contribution of this research to estimate the socio-economically disaggregated consumption of animal-source foods (meat, fish and eggs) and starch-rich foods (maize meal, bread, rice and potatoes), provides valuable insights into differences in food intake across the socio-economic spectrum of South Africa. A complex combination of interventions is required to promote healthy eating patterns in South Africa. In addition to legislative measures (e.g. salt and sugar reduction legislation), consumer education (across the socio-economic spectrum) should focus on science-based practical solutions and provide advice on making healthy and budget-conscious food choices. In addition, it is also important to design and implement policy actions to improve the affordability and availability of healthy food options for the various socio-economic groups, in diverse geographic locations in South Africa. The improvement of food affordability is a key component in moving closer to achieve the Sustainable Development Goal of the United Nations “to end hunger, achieve food security, improve nutrition and promote sustainable agriculture”. Furthermore, improving household food and nutrition security (including addressing issues pertaining to healthy food consumption and affordability), through public and private sector actions, is one of the enabling milestones in the National Development Plan 2030. The monthly costing of the food basket models which were developed in this study and analyses thereof should be used as policy analysis tools to act as a practical, scientific basis for the food security debate in South Africa. These tools are, in fact, already published on a quarterly basis in the public domain. In future the models of healthy eating also present possibilities for further expansion (e.g. these models can be refined to study different geographical areas or different household structure typologies).

Master´s thesis deals with problems of consumer behaviour in the Czech republic. Theoretical part of thesis defines basic concepts and data, which relate to consumer demand and information necessary to understand the analysis part. The following part deals with critical analysis of consumer basket and spending costs of households in different commodities. Analytic part is also aimed at economic development and according to it we can deduce reactions of households and related consumer behaviour. At the end the thesis is completed by suggestions to reduce excess spending expenditures, which are recommendation for citizens of the Czech republic.

Dans ma thèse, j’étudie les représentations mentales et les processus cognitifs qui sous-tendent le calcul mental sur le marché. Cette thèse contribue à la recherche de prix psychologique en décrivant de nouveaux facteurs qui influencent les jugements de prix des consommateurs. En particulier, je découvre facteurs qui rendent les consommateurs plus ou moins susceptibles d’arrondir les prix vers le bas (Essai 1) et les facteurs qui déterminent leur tendance à se fixer sur les différences de pourcentage (Essai 3). En outre, cette recherche fournit de nouvelles perspectives à la littérature de budgétisation mentale en identifiant des stratégies de calcul mental qui conduisent à des estimations panier de prix plus précis (Essay 2). Dans l'ensemble, ma recherche va contribuer à notre compréhension des jugements de prix des consommateurs et proposer des contextes et des stratégies conduisant à des évaluations de prix plus précis
In my dissertation I look at mental representations and cognitive processes that underlie mental arithmetic in the marketplace. This research contributes to behavioral pricing literature by outlining novel factors that influence consumers’ price difference judgments. Particularly, I uncover factors that make consumers more or less likely to fall prey to the left-digit anchoring bias (Essay 1) and factors that determine their tendency to rely on relative thinking in price difference evaluations (Essay 3). Further, this research provides new insights to the mental budgeting literature by identifying mental computation strategies that lead to more accurate basket price estimates (Essay 2). Overall, I expect my research to contribute to our understanding of consumers’ price judgments and suggest contexts and strategies leading to more accurate price evaluations

Measurement of price level with consumer price indices forms some gap between measured inflation and perceived inflation. The graduation theses is concerned with quantification of gap in particular group of individuals and shows on measuring data, how this gap influents individuals, if growth of cost of living according to consumer price index copies price perception. It illustrates influence the incorrect construction of indices as important orientation point in economy, which redistribution of recourses, in context with usage of indices for income indexation and suggests more appropriate approach for constructing aggregate price index. It investigates what factors influence price perception and comes into gain and loses calculation which people are confronted. Price perception is influenced both socio-economic and political environment. The end of theses overlaps into political vote and investigates if there is causal of relationship between price perception and political vote.

Senior policy of the state is largely focused on the active life of seniors (eg national strategy to support positive aging for the period 2013-2017 ). From this pont of view is generally expected to stay seniors longer in their natural environment and any subsequent use of social and health services, residential care homes for the elderly. Another phenomenon is the senior policy burden on the state budget in raising funds for the payment of pensions. One means of this policy mainly at regional level is to support seniors through discounts and other advantages Senior Pas project. The author draws a comparison of the consumer basket of the general population in the age structure from 55 years and above users Pas Senior Discount Network , which is primarily intended to support active living. The theoretical part focuses on the description and benefits, deficiencies discount networks in general and the discount network designed primarily for seniors. Thesis will also undertake an excursion to the neighboring countries, especially Austria and Germany, this excursion could give a number of inspiring suggestions in monitoring the functioning of these networks. In the practical part, thesis will devote particular network Senior Discount waist and through a questionnaire survey of members of the network. Thesis will be noticing all the available factors affecting the selection and use of discount networks in relation to age, place of residence, gender and other attributes/parameters. Thesis will help to answer the question whether discount network tends to increase the active life of seniors primarily or secondarily through capital cost savings for common services and goods. Author of acquired knowledge and experience will provide recommendations for fulfilling the mission and good functionality of discount network Senior Pas.

Abstract:
The aim of this diploma thesis is to analyze the impact of the reduction of VAT on selected groceries in Slovakia in 2016. I am comparing the composition of the consumer basket and shopping lists of end-consumers before this legislative amendment and thereafter and consumer preferences, on which products they would like to have reduced VAT rate. Then I am also analysing the impact on the consumer prices of groceries with recured tax rate and on the groceries, which composition is similar, but they are encumbered with standard tax rate. The comparative analysis has shown that the tax reduction is reflected in the final price of approximately 96 %. The theoretical part deals with the characteristics and the system of value added tax, historical development in Slovak law and impacts of the tax rate cut abroad. Conclusion interprets the results of comparative analysis and questionnaire.

These factors include also eating in school canteens. By this we understand nutrition services for children, pupils, students and other people whom this food is offered within material sustaining, full direct social security or within preventive care by whole day services or boarding services. In the interest of following nutrition doses, there has been set up so called consumer basket of foodstuffs.The theoretical part focuses on explaining of the term of school nourishment and form.The main aim of my diploma work was to appraise variety of school lunches in chosen school canteens according to months menus from the nutritious point of view.Partial targets were focused on assessing the quality of lunches according to the consumer baskets of foodstuffs and appraising the method of school canteens of drawing up their menus. In the practical part there has been presented own research and its results. The research for this diploma work started in November 2012 and finished in February 2013. Practical part of this research was worked out on the base of quality research. The choice of searched subjects happened with the aid of pure intentional research. The data file was constituted by menus from December 2012, January 2013 and February 2013 and by the consumer baskets of foodstuff for the same season. The analyses of variety of foodstuffs and was supplemented by half-structured interview.I prepared five researching questions before assessment of the research that were answered during the research. These questions were: ?Do the coefficients of variety of foodstuffs agree with the criteria of canteens? ? ?Do the school canteens fulfil the set up norms for recommended fulfilling of the months consumer basket of foodstuffs? ? Does the management of the school canteens follow the recommended principles of a healthy diet while preparing their menus? ?Do school canteens provide various structures of recipes, dishes and technologies? ? ?Can the offer of dishes in school canteens be improved? In the first part I firstly concentrated on appraisal of variety of soups in school canteens. The variety was appraised on a month bases for each canteen. Next I focused on appraisal of variety of main dishes, side dishes and food supplements. The results were registered in well arranged charts. The next part of diploma work focuses on appraisal of consumer foodstuffs baskets.The last part contains interview with the management of school canteens.I have also managed to get answers to asked research questions so I could set down hypothesis. According to the answers I set three hypotheses. The first one is: ?The chosen school canteens from South district provide their diners with various foods and follow the principles of a healthy diet. ? I came up to this hypothesis while looking for answers to researching questions focused on variety and composition menus. The answers to the research questions helped me in formulation the second and third hypothesis: ?School canteens fulfil set up norms for recommended month consumer foodstuffs basket for commodity meat, milk, dairy products, free fat, free sugar, vegetables and potatoes.Third hypothesis was formulated as follows: ?School canteens don´t fulfil set up norms for recommended month consumer foodstuffs basket for commodity fruit and legume. The management of these canteens get further education in the area according to the interviews. I think that this diploma work can be used as an information material for educating workers in the area of nourishment. The results can be useful as a source of information for workers in school canteens.

In the last decades, there has been a change in consumer patterns, with consumers increasingly concerned with environmental and health issues. Consumer’s concerns motivate the demand for healthy and environmentally-friendly food. In the context of a globalized food market, a vast stream of information related to lifestyles, diets, food and nutrition circulates constantly in the conventional and social media. The Mediterranean diet has emerged as a standard of healthy diet that contributes simultaneously for the preservation of the Mediterranean landscape and agroecosystems. There is an interest in the valorisation of the territory and the promotion of the region's products and to understand if other sustainability concerns, such an ecological production mode and the contribution to the preservation of local landscape are as well acknowledged and valued by consumers as attributes of healthy foodstuffs. Thus, the research to develop in this thesis aims at understanding the consumer perspectives for food claims and to know if they add a value, i.e., are willing to pay a price-premium for healthy foodstuffs when they are produced with environmentally-sustainable modes, using the Mediterranean Diet as a healthy food standard. Given the pertinence of this theme, the motivation of this thesis is to add to the existing literature empirical evidence on the relationships between food, health and environment and which are the explanatory variables for that to happen. The thesis proposes to develop an innovative model that help to make an informed decision on the attributes that the consumer values most, helping local producers to develop innovative but at the same time sustainable ideas. Likewise, this work will present a contribution that will help rural development and the design and implementation of programs to connect producers and consumers. It will also help to improve the long-term productivity and diversity of rural production. This thesis will be structured in four empirical papers. The objectives and methodological approach detail the methods of data collection and analysis to be adopted. The first paper addresses the gaps on the debate on consumer issues with the sustainability of farming systems by delivering an interdisciplinary synthesis of literature relating food and diet with health and environment, and by discussing how demand for healthy diets might enhance sustainability of Mediterranean rural landscapes. The second paper through a meta-regression intent synthetizing data from multiple and diverse studies presenting estimates on the consumers’ willingness to pay a premium for various food claims and its combinations. The third paper will apply PLS – SEM model to investigate the influence of attitudes and behaviours on intentions to use organic olive oil. From a practical perspective, discuss how positive emotions, beliefs, and subjective norms may heighten the volitions regarding the use of this product, one of the emblematic products of the Mediterranean Diet. The fourth and last paper develops an extended Model Goal Directed Behaviour (EMGB) to predict the intention to use organic extra-virgin olive oil (EVOO) as the main edible oil. Aims at understanding how healthy food and safe food are additionally influenced by how consumers use and trust food claims. Structural Equation Model (SEM) will be applied to data generated through a large-scale survey administrated by on-line interview to webpanels. The thesis contributes for the identification of the attributes that are more valued by the consumers and by offering a deep understanding of the consumer’s representations respecting healthy food and how it influence behaviour intention respecting its use, with a focus on the Mediterranean diet. It delivers novel empirical evidence on the moderating and mediating effects that influence the relationships between latent and observable variables that have not yet been empirically confirmed through the SEM, and which type of information appears to be more effective in communicating sustainability-related attributes associated with healthy foodstuffs related to the Mediterranean diet.

The aim of the diploma thesis was processing and practical verification of a nutrition program aimed at an increasing the consumption of vegetables, fruits and legumes (hereinafter the "VFL"), in the T.G. Masaryk?s kindergarten school canteen in Český Krumlov. In the theoretical part, except the information about the nutritional requirements for schoolchildren?s feeding, it describes the current system of official eating-controls, based on the so-called consumer basket, which is based on weight-set norms of individual foods for the respective age of children. It was carried out methodically, so that the data obtained from the program of the consumer basket from January to April 2015 were compared with data from the same period of 2016 when it was applied nutrition program VFL. The research group was consisted of children from T.G. Masaryk?s kindergarten in Český Krumlov. Forty three (21 girls and 22 boys) preschoolers children in the age range 4-7 years were involved in total. The data were graphically processed with using of basic statistical values.By the data?s comparing from the consumer basket before the application of the nutritional program, was found that the consumption of three monitored commodities during adhering the nutrition program, increased by about 10% of vegetables, 10% of fruits and 5% of legumes. The results point to a properly selected nutritional program and its contribution to the practice in school canteens.

Abstract:
The aim of the diploma thesis was to increase the consumption of vegetables in the nursery schools in Volary and to propose subsequently modifications and recommendations. Information about the principles of appropriate children nutrition, nutritional requirements and standards applied in school feeding with respect to relevant age of children are presented in the theoretical part. An analysis of the consumer's basket content for MŠ Volary in year 2017 was performed in the methodology part. Found data were compared with the data covering the same period from other schools. Comparison shows that consumption of vegetables can be increased, although MŠ Volary complies with the consumer's basket regulation according to a valid ordinance (Ordinance 107/2005 Sb.). Precautions leading to the increase of vegetables consumption took action for menus in MŠ Volary. Changes related mostly to the implementation of new meals containing vegetables, the increase of vegetables portion in traditional meals, and the improvement of vegetables food look. The modified menus were tested on a sample group of consumers for three months. The sample group of MŠ Volary II Sídliště was chosen for changes observation. The sample group consisted of 45 children (23 girls, 22 boys) of pre-school age that means 3 6 years old. The children body height and weight complied with recommended parameters of relevant age and gender. Consumers' reactions to changes were observed. Experimental data were evaluated graphically. Further, the comparison of consumer's baskets of MŠ Volary in periods year 2017 and January March 2018 was performed. The former covers the period before and the latter the period after the implementation of changes, respectively. The diploma thesis "Kindergartens catering with focus on preschool age children" is focused on the catering services of the facility. The thesis is divided into a theoretical part which included the development of the child, the dietary requirements of the organism at certain periods of life and, last but not least, the institution for upbringing and education of preschool age children-kindergartens. The practical part of the thesis is devoted to the research in selected kindergartens. Institutions are selected to transcribe catering in the capital city, town and village. In the comparison of kindergartens, one kindergarten is selected in the particular location, where a survey was carried out. The result of the survey is the filling of the consumer basket in selected kindergartens, which corresponds to decree no. 107/2005.

Abstract:
The graduation thesis compares school meals at selected schools in the South Moravian Region and in the Vysocina Region. The South Moravian region represents schools in the district of Znojmo, especially The Primary School Jevisovice, The Primary School Kravsko and The Primary School Prague in Znojmo. The Vysocina Region is represented by schools from the district of Trebic, especially The Primary School Budkov and The Primary School Jemnice. The theoretical part is devoted to the individual nutrition, nutritional recommendations, children's eating habits and proper nutrition at schools. Moreover, the thesis deals with general knowledge of HACCP and the consumer basket. In the practical part I evaluate five selected canteens and compare them with each other. In the chapter Results I describe the individual parts of the kitchen facilities, such as storage rooms, dining rooms and the kitchen itself. From each of the school canteen I was given internal documents with photographic documentation. Due to these facts and dialogue with the leadership of both equipments and canteens, I received information about the internal rules of the kitchen. Principally, I focused on observance of critical points with HACCP and control of production diagram in all establishments. I requested the protocols of critical control points for the month of September or October 2014 from each of the school canteen. The school canteen managers have given me the fulfillment of the consumer basket in two months, particularly in September and October 2014. The performance of the consumer basket is closely related to monthly menus. I had the opportunity to read out from the menu which ingredients cooks use and also whether the meals are changed regularly or are still the same. There are two questionnaires in this chapter. The first questionnaire was distributed to the head of school canteens. The manager of each school canteens fill in the questionnaire according to real information. The questionnaire concerns an operation of the school canteen. The second questionnaire was distributed to pupils and teachers. They evaluate served meals and surroundings of the school canteen. The results point out to the quality of school meals in the school canteens. In conclusion of this work I can say that it can not clearly identify which the school canteen cooks healthily and is the best one. Each school canteen is unique in something, but all school canteens cook meals which are suitable for children. The school canteen of Primary School Budkov takes care of their diners great. They create different catering programs for pupils during the year. They organize the days of foreign cuisine. The pupils can make up their own menu and cooks prepare the meals on request. The Primary School Jemnice has appropriately designed storage areas and modern kitchen facilities. The school canteen of Primary School Jevisovice indulges the food supplement for their pupils every day (fruit, vegetable, candy bar, pudding, salad and others). The school canteen of Primary School Kravsko offers a variety of salads and fresh fruit for their pupils. The drink is provided as herbal tea or fruit tea with lemon or juice. The school canteen of Primary School Prague in Znojmo has a modern kitchen equipment and a dining room. The dining room is painted beautifully above the dispensing window. They prepare tasty snacks for their pupils in the morning. The selected school canteens regularly change meals or they modify meals completely. The food supplements are served with main meals at least three times per week in all school canteens. All school canteens cook varied and nutritionally balanced meals with the different food supplements. They often add a cereal product and a healthy side dish. If it continues, these school canteens will be healthy canteens. Nevertheless, the parents of these pupils should know that their school canteen is really the best one.

This thesis is concerned on the theme Milk and dairy products in nutrition of pupils aged 11 to 15 years. The theoretical part is based on the chemical composition of milk of general aspect and there are characterized some chosen kinds of dairy products and their effects on human health. The practical part is concerned on the research of being some statistically significant differences in consumption of milk and dairy products of the point of view of gender, age and access to milk and diary products in the families. The research is further based on the finding of the levels of probands'knowledge about the composition and the influence of milk to the human organism. The research sample is formed by 240 pupils of Secondary school in Domažlice, Komenského 17. The results show neither the gender, age or access to milk and diary products in the families do not affect the consumption of milk and dairy products of individual probands. The education unit whose aim is to increase the knowledge about milk of second graders in elementary schools is proposed on basis of identified facts.

Abstract:
This dissertation deals with a current troubles in the sphere of a school eating in a whole czech republic. Using a questinare survey were charted troubles of the school eating and defined the most important ones that can become a risk for this world unique specialization. A vast describe of a situation in the sphere of school eating in czech republic revealed many problems that workers are dealing with. They are finding optimal solutions as well. The questionaire survey revealed which problems can be solved in practice and those who can not be solved itself. Those wo can not be solved needs chane of sysem controlled by state authorities. A a biggest problem that questinare survey and additional ivestgation prooved high age of workers in school eatin and absence of young workers who would gain experiences and replace the outgoing workers. Results of the research showed the cause of the problem is inadequate finacial evaluation and low social prestige of this profesion. In this area of work is missing a positive motivation for gaining new workers. This is the reason why this area of work is dealin with a lack of quallified workers that are needed to ensure a service in the scool eating system service.

The topic of this thesis is ``Feeding children and adolescents in children´s diagnostic institutions, children´s homes, children´s homes with school, educational institutions and the Center of Educational Care in the Hradec Králové region. Childhood and adolescence are specific periods in which each individual undergoes significant physical, mental and social development. For healthy development and health in adulthood it is important a properly chosen alimentation. It is necessary to be aware of the fact that lifestyle and the environment affect the health status of the population by up to 60 %, 40 % of which fall on the diet. Therefore, the research part of my thesis is focused on the survey of the quality of food served to children and adolescents who are almost entirely dependent on meals prepared in canteens of children´s diagnostic institutions and institutional care and preventive educational care facilities. The aim of this thesis was to find out whether the variety of dishes served in the selected facilities corresponds to current nutrition recommendations and if the consumer basket meets requirements of the Decree No 107/2005 Coll., as amended by Decree No. 107/2008 Coll. The research was conducted by the qualitative method. To collect data on the investigated facilities the technique of data file analysis was used. The research set was composed of children´s diagnostic institutions, children´s homes, children´s homes with school, educational institutions and the Center of Educational Care in the Hradec Králové region. At random six facilities were selected. They provided me with data such as menues, issue slips and consumer baskets in the months of March, April, October and November in 2008 The obtained data were summarized in tables and graphs which provide information on the composition of meals served, on the consumer baskets composition, on ways to cover the total consumption of fruits and vegetables, the ratio in which plant and animal fats are served, the amount of sausages, smoked products and haslet in the group of meat. The management of selected food facilities will be informed about the outcomes and possible shortcomings. In the case of any identified shortcomings, changes in the diet composition or food consumption may be recommended by the Regional Hygiene station in Hradec Králové.

Abstracts This thesis will address current problems in terms of school feeding in the Czech Republic. Its purpose is to summarize the situation from the point of view of the heads of school cafeterias and to determine the greatest difficulties for further functioning of the system. School feeding system is a part of educational and learning process and its effects relate to proper fulfilling of schools' educational programmes. At the same time, it is an environment for application of informal learning in terms of correct eating habits and social interactions during meals. By participating in the process, the pupils gain socio-psychological competences for entire life. Not only they gain practical knowledge in terms of nutrition, they learn as well how to interact during meals in an unforced way. Using the questionnaire method, some of the problems of school feeding system were identified. Some of the most severe problems might become a risk to this whole unique system. The outcome of the research are findings which point out the problems, such as old age of the personnel in the school feeding system, as well as the absence of new young people, who would continuously take on the experiences and replace the retiring workers.
