Asimismo, están haciéndose sentir las consecuencias directas e indirectas de los cambios climáticos, la extendida recesión económica y los recientes trastornos políticos. También empiezan a reconocerse las estrechas y múltiples relaciones entre salud animal, salud humana y salud del medio ambiente. Es con este trasfondo que los autores hacen un llamado a la urgente necesidad de confrontar problemas que emergen desde la interfaz humano-animal-medio ambiente en una forma holística y multidisciplinaria para identificar riesgos y encontrar soluciones coherentes, efectivas, sensibles y sostenibles.

This chapter examines key debates about consumption and food system reform. It begins with a brief overview of the history and characteristics of consumer food politics. It then introduces a typology of consumer food politics in order to examine the different meanings consumers attach to food politics. It considers the “eco-shopping” perspective, which views political food shopping as an opportunity to replace conventional commodities with options that seem less harmful for people, animals, and the environment. This is followed by a discussion of the limits of eco-shopping.

Taken collectively, consumer food choices have a major impact on animal lives, human lives, and the environment. But it is far from clear how to move from facts about the power of collective consumer demand to conclusions about what one ought to do as an individual consumer. In particular, even if a large-scale shift in demand away from a certain product (e.g., factory-farmed meat) would prevent grave harms or injustices, it typically does not seem that it will make a difference whether one refrains from purchasing that product oneself. Most present-day food companies operate at too large a scale for a single purchase to make a difference to production decisions. If that is true, then it is not clear what point there is in refraining. This is “the problem of collective impact.” This chapter explores a range of proposals for how to solve this problem.

This book is the first to analyze the democratic effects of consumer activism, defined as boycotting, socially responsible investing, social media campaigns, and direct consumer actions. America has had a long and unique history of consumer activism, starting with the Boston Tea Party. Since the founding, activism in the marketplace has been used as a political tool for those who are politically disenfranchised, including the colonists who lacked formal representation in the British parliament, women before suffrage rights, and Black Americans during Jim Crow. More recently, consumer activism has become a countervailing force against overbearing corporate power in politics. This book blends democratic theory with data, historical analysis, and an examination of consumer campaigns for civil rights, environmental conservation, animal rights, gender justice, LGBT rights, and conservative causes. Consumer activism is a democratizing force that improves political participation, self-governance, government accountability, and corporate political accountability.

Abstract:
Es sabido que el consumo de insectos es una práctica tradicional en muchos países. Se calcula que más de 2000 millones de personas en 113 países consumen insectos. La entomofagia, que es como se conoce esta práctica, genera gran interés por sus posibilidades para garantizar la seguridad alimentaria a nivel mundial, debido a que muchos estudios certifican que diversas especies de insectos tienen no solamente elevadas propiedades nutricionales, sino que posiblemente contengan compuestos bioactivos útiles para la salud humana. Desde los comienzos del siglo XIX, la visibilidad de los movimientos que propenden por el bienestar animal y promueven la reflexión ética sobre el consumo de alimentos ha traído consigo también un interés aumentado por el consumo de insectos de forma más masiva. A pesar de las barreras culturales y sensoriales, esta curiosidad ha hecho posible la puesta en marcha de criaderos pequeños de insectos comestibles. Estos tendrían la ventaja de contribuir a mitigar la escasez de alimentos en muchas partes del mundo – agravada por el cambio climático – y serían accesibles a personas de bajos recursos que no pertenecen al sector de las grandes industrias, pues producirlos no requiere grandes lotes y costosos insumos en comparación con otro tipo de cultivos.
