Full textThe presented thesis describes the results of the pesticide monitoring programme in Lombardy Region from 1996 to 2008 and analyses the data gathered to calculate consumer exposure assessment with different approaches. A total of 9387 samples were analysed and the number of irregular samples was equal to 1%. The number of samples without residues was 69% and the number of samples with residues within the MRL was 30%. A further step to understand the exposure of consumers to residue of pesticides was obtained with the use of a deterministic approach developed by EFSA (PRIMo Model). It was found that among the detected irregular samples, only 31 might cause harm to the health of the consumer. An additional step was constituted by the use of one probabilistic method (Creme Software) to calculate the cumulative exposure of pesticides for the consumers. As a first step, residues of Chlorprofam were plotted in the software on samples of potato. In addition, samples containing residues of Organophosphates were also plotted along with the Italian consumption data. In both the case studies, the probabilistic acute cumulative assessment indicated that the intake, for adults and toddlers was below the set toxicological endpoint.

Full textIn the modern markets the circulating goods are recognizable only by their gender; the provenance from a certain producer or the origin from a certain place, elements that have been for centuries the fundamentals information for each consumer choice, are nowadays excluded or marginalized. Information became a central element of the consumer protection, and takes a special position in the food market, that takes its peculiarity from the goods – food products – that circulate in it. We will focus on the information to the consumer (functional to its protection) and on the information for the entrepreneur (functional to the commercial competition). We will analyze what “have to” and what “can be” the object of the information, and the ways of transmission of these information, taking into account the ratio of the entire legislation. A special attention will be reserved to the nutritional claims and health claims, that sometimes involve antagonistic interests. These indications represent the last frontier of competition between food operators and, at the same time, the latest trap for consumers’ interest.

Full textThe estimated increase in the adverse reactions from food, along with consumers’ desires to pursue healthier diets, are raising questions for people about the role of gluten and lactose in their food habits. Consequences of this food regimen on a healthy population are under discussion, both from nutritional perspective and broader quality of life. In the Italian context, the sudden change in consumer diets is bringing about critical changes economically and culturally. The motivations behind these dietary changes in tolerant consumers appear unclear, thus suggesting the need for a psychological approach. This dissertation propose a mixed-methods research aimed at exploring to explore the psychological determinants of gluten and lactose-free diets among Italian consumers, with a main focus on tolerant consumers. Results show that these consumers appear involved in a deep psychological change and “free from” diets represent for them a “gate” to start rebuilding a perceived balance through new food (and lifestyle) plans. This is a first attempt that, reflecting on the critical case of lactose- and gluten-free diets, would underline potentialities for psychology to intervene in this field and to promote consumer health and wellbeing through food consumptions.

Full textAny food product found on the market contains several labels that help consumers in their decision making when shopping. This help can be guaranteed only if the consumers understand the significance of those labels, the differences between them and the information that they certify. The thesis explored labels’ role in the food marketing sector and studies were carried out according to consumer approach. Using different methods (statistics and econometrics), we analyzed consumers perceptions, awareness, knowledge towards some food labels and their preferences and behavior toward food products bearing these labels (Front of Packaging Nutritional Labels and Quality labels). Quality certified food products were chosen because are dramatically relevant for the European agri-food sector, even more of the Italian one where it forms the DOP Economy, due to its density. Assessments of several food labels from a consumer behavior perspective was carried out. Based on the findings we formulated some policy, marketing recommendations and communication suggestions that could be used by the consortia to enhance consumers’ engagement for products with quality certifications (PDO/PG/TSG or organic). The recommendations were also addressed to policy makers and producers of the PDO/PGI/TSG/Organic products but also to the policy makers of the Nutritional Labelling.

In a progression of the European legislator's sensitivity to guarantee the market as well as the food consumers and their safety, the EU legislation on novel foods has tried to balance food innovation and the multiple needs of operators and consumers who require products with increasingly more defined characteristics and suitable to satisfy a wide range of preferences. If "the capacity of the technique is the effective power to achieve goals and to satisfy needs indefinitely" is easy to understand how the novel food turns out to be a paradigmatic case of an encounter between science, market needs and juridical rules. Furthermore, the increasing interest in the food sector raises the question of which methods of regulation of scientific innovations apply.

Full textThis study aims to explore existing paradoxes in the offer of food sustainable products and consequently consumers’ behaviours (coping strategies) (Lazarus and Folkman, 1984) at the time of this perception. For this purpose, the theoretical model of Mick and Fournier (1998), built initially for studying the paradoxes of modern technologies, were adapted to sustainable food consumption. At methodological level, a qualitative survey was conducted among 84 “ordinary” consumers in France and Italy. Later other 18 subjects, usually involved into sustainable purchases (participants of AMAP, GAS), were interviewed. The semi-structured interviews shed light on some differences between “ordinary” consumers of the two countries when they adopted coping strategies to go beyond perceived paradoxes. Thus we proposed three ordinary consumers’ profiles. On the contrary engaged individuals are like a more homogeny group going over national boundaries. They agree with paradoxes and sustainable practices. In addition, the research pointed out some divergent aspects connected with specific context, for instance market of sustainable food products, communication over this offer and social cultural characteristics. Finally, this work had three objectives: theoretical to verify the paradoxes listed and evocated consumers’ strategies by French and Italian consumers; methodological regarding the adaptation of the conceptual model “gears” of Mick et Fournier (1998) to the context of sustainable consumption; and then practical ones such as identification of barriers for developing sustainable consumption and specific possible ways of growth: more attention to environmental aspects in France (“filière nord/nord” of organic, fairly, local French peasants) and ethics products in Italy (products issued from social economies).

Full textFood safety and food security are crucial aspects in the growing and constantly changing food market. The first definition refers to hygiene and foodborne diseases prevention, the second refers to the security for a consumer to by a specific product and not a counterfeit. An improved traceability, based on blockchain systems, may help to prevent food safety and food security issues. Blockchain belongs to the distributed ledgers, a type of database in which each participant owns a copy of the same data and every change in a copy is automatically reflected on the other copies. It is designed to guarantee decentralization, transparency, immutability and traceability. As shown by a relevant number of projects that has been developed and applied, it suits to the food supply chain traceability. An improved traceability based on blockchain can also be useful at the market level. For instance, Italian sounding is the practice to use Italian words, colours (such as the Italian flag colours) and names to give an Italian appearance to a product, irrespective of its country of origin and its production method, to promote it. It affects different sectors, but the food sector is the most damaged. The present research is focused on the application of the blockchain to the traceability of the food supply chain, its impacts and its perception. Indeed, the application of these systems may have several advantages, but also negative impacts: the producers must accept to show transparency to the consumers, it may lead to a price increase (as the design and maintenance of a digital traceability systems have a considerable cost) and consumer profiling is an aspect that must be properly discussed. To assess if the Italian consumers may be interested in the use of blockchain traceability for food, a survey has been performed on 500 users. The asked questions concern their interest and knowledge towards traceability, blockchain technology, shopping preferences, the suggestion of food categories (e.g. meat, fish and others) currently requiring an improved traceability. Lastly, the willingness to spend more to buy food provided with digital traceability was evaluated. The results revealed that respondents are generally interested in food traceability, they usually know what blockchain and digital traceability are, they buy food mainly at supermarkets, they are interested in knowing the origin of the food mainly for meat, fish and dairy, they would rather buy a product provided with digital traceability system instead of an unprovided competitor and they consider acceptable a 10-15% cost increase for a digitally traced product. To complete the research, a concrete project/case study has been completely developed in collaboration with the innovative startup Franceschi srl, composed by Saporare and S|Trace. Saporare is an online shop of traditional Italian food and beverages (e.g. balsamic vinegar, honey, olive oil, wine) of small and medium sized producers and each product has a declaration of origin. The products will be traced with S|Trace, a blockchain-based traceability system provided with a web app for data upload, designed to ease the operation for the producers. Saporare acts as the third part in the supply chain, certifying the origin and the security of the products, but without substituting production disciplinaries or food control agencies: this makes the perfect use-case to study the application of the blockchain to the food supply chain. Lastly, considering both costs and complexity of the blockchain, a pipeline facilitating the choice of the right technology has been developed. In particular, the developed pipeline may help to define which type of blockchain could be useful for each food supply chain and when a blockchain could be really effective.
