A Work Project, presented as part of the requirements for the Award of a Masters Degree in Management from the NOVA – School of Business and Economics
This research aims to investigate the effects of food advergaming on children’s eating habits. A total of 231 elementary school-age children were randomly assigned to one of the following two conditions: (i) play the healthy advergame; (ii) play the less healthy advergame. A pos-treatment pictured questionnaire was used to assess their behavior in terms of immediate food choice, food liking, and nutritional knowledge. Results showed that children tend to choose a snack accordingly to what was being advertised in the game. In terms of food liking, children who played the less healthy version of the game reported a higher preference for some of the less healthy options. Regarding nutritional knowledge no differences were registered which leads us to conclude that they already have a solid understanding of what are “good” and “bad” foods for their health. These findings have important legal, educational, management and social marketing contributions.

Abstract:

A pre-school-based dietary survey, using seven-day records, focus group interviews and semi-structured interviews, was carried out in a suburban area of Stockholm. The overall objective was to investigate the individual food and nutrient intake of pre-school children at all meals during the day, as well as factors that might influence children’s intake.

The average energy and nutrient intake per day for the whole week was satisfactory for the 109 pre-school children, but the temporal distribution throughout the day was skewed. The energy and nutrient intakes of food at the pre-school were lower than recommended. This was, however, compensated for by meals eaten at home. The children had a more varied food intake during weekdays than weekend days. This study has not provided any evidence to support the selection of water versus milk as a preferable lunch beverage in terms of pre-school children's total milk consumption and general dietary quality. However, the dietary analyses showed that there could be a reason to limit pre-school children’s daily milk and fermented milk intake to half a litre, according to the existing guidelines.

The children associated food and eating with rules and norms. They did not categorise food as good or bad, as adults often do, but as "food" and "non-food"; for example, sweets were not food. The method used in this study, the focus group interview, was judged to be a useful tool for exploring how children think about and jointly reflect upon food. The role of the teacher had changed over the past years and they had not yet found a solid ground for integrating food and meals into their everyday work.

Abstract:
A pilot research study was conducted to determine if cooking camps could increase knowledge and improve habits of Native American children related to food safety, nutrition, and reported food and exercise habits. Forty Native American youth were recruited for participation in one of four kids’ cooking camps. Each child took a pre-assessment upon their arrival at camp and a post-assessment on the last day of camp, as well as a pre- and post-test for each lesson. The children participated in lessons and food preparation activities during the six hours per day, four day camp. The thirty subjects taking both the pre- and post-assessment had significant increases in physical activity and food safety knowledge. Parents/guardians provided their input through focus groups and phone interviews. Parents reported their children increased consumption of fruits and vegetables after camp.

Ridurre l’obesità infantile è una priorità della sanità pubblica Europea. Una delle azioni chiave per frenare tale epidemia è seguire sane abitudini alimentari fin dall’infanzia. L’obbiettivo di questa tesi è perciò esplorare cosa facilita e ostacola l’adozione di sane pratiche alimentari tra i bambini – da una prospettiva comportamentale e politica. La letteratura scientifica suggerisce la famiglia come uno degli ambienti più suscettibili ad influenzare i comportamenti alimentari dei bambini. Per questo motivo il primo capitolo esplora il ruolo degli adulti come modelli all’interno della famiglia. Oltre alla famiglia, anche la scuola è un ambiente chiave per promuovere sani comportamenti alimentari tra i bambini. La principale iniziativa Europea per migliorare tali comportamenti avviene infatti proprio dentro le scuole. L’effetto positivo di questo programma, dove è attuato, è ampiamente riconosciuto. Tuttavia, non tutte le scuole riescono a parteciparci. L’obbiettivo del secondo capitolo è perciò cercare l’esistenza di potenziali driver di non partecipazione da parte delle scuole. L’efficacia del programma Europeo Frutta e Verdura nelle Scuole è valutata a livello nazionale: “gli Stati Membri devono valutare lo svolgimento del programma al fine di verificarne la sua efficacia rispetto ai propri obbiettivi”. Tuttavia, questi obbiettivi seguono solo in parte ciò che viene suggerito in letteratura scientifica per valutare tali tipi di intervento. Guardando al caso dell’Italia e dell’Irlanda, il terzo capitolo confronta i report di valutazione dei due paesi con quello che viene suggerito nella letteratura scientifica e con quello che è richiesto dalla Commissione Europea.
Halting childhood obesity is a major priority of the European public health agenda. One of the key actions to tackle the obesity epidemic is following healthy eating habits since childhood. The objective of this dissertation is therefore to explore drivers and barriers affecting the adoption of healthy dietary patterns among children – from a behavioural and policy perspective. The scientific literature indicates family as one of the environments most prone to influence the children’s eating habits. For this reason, the first chapter explores the modelling role played by the adults within the household. Besides family, also school is a crucial setting to promote healthy eating behaviours among children. Indeed, the main European initiative to improve dietary habits takes place within schools. The positive effect of the scheme is widely recognised in the schools where implemented. However, not all schools succeed to take part in it. The objective of the second chapter is therefore to investigate the presence of potential drivers of school non-participation. The effectiveness of the implementation of the EU School Scheme is assessed at country level: “Member States shall evaluate the implementation of the scheme to assess its effectiveness against its objectives”. However, these objectives follow only in part what is suggested in the scientific literature for evaluating such kind of programs. Focusing on the Irish and Italian case study, the third chapter compares the evaluation reports carried out in the two countries with what is suggested in the scientific literature and what is demanded by the European Commission.

Abstract:
Street food is a common source of food eaten outside the home in developing countries. The contribution of street foods to the daily nutrient intake has not been adequately addressed in dietary assessment research, in spite of its universality. To establish a base of knowledge regarding street foods from a nutritional standpoint, a three month pilot study was conducted in Port-au-Prince, Haiti, during the fall of 1983. One hundred forty-six street food items were identified and classified. Market unit size, cost and caloric and protein values per market unit were determined. A food frequency questionnaire was developed and administered to Haitian secondary school children from varied school tuition categories to assess their street food consumption. Results revealed a wide range of consumption frequencies. The average consumption of calories and protein for the 174 person sample were found to be 401 kcalories and 5.8g of protein. Significant differences in consumption values were found between socioeconomic levels. Little variation was found between age groups. Street food consumption was found to contribute 18% of the recommended dietary allowance for the Caribbean for calories and 15% for protein. Based on a daily nutrient intake of 1580 kcalories and 37g of protein for urban school children, 25% of the calories and 16% of the protein in the overall diet were found to be provided by street foods.

This cross-sectional study described the dietary and lifestyle habits of Québec children who are at high risk of overweight. Dietary intake was assessed by 24-hour recall; physical activity was evaluated using a 7-day physical activity recall. Dietary measures included energy and nutrient intake, junk food, fast food, fruit and vegetable, soft drink and high sugar drink consumption. The family environment correlates included: breakfast skipping, family supper, restaurant foods, television viewing during supper, children's weight, parents' weight, physical activity level and sedentary behaviour. Children who skipped breakfast had lower calcium and fiber intakes, daughters of obese mothers consumed more soft drinks, boys who watched more television during supper had lower fiber intakes, boys who performed more activities consumed less junk food and more fruits and vegetables, while girls who exercised more had lower intakes of fat. This analysis provides insights into correlates of food intake in children.
Cette étude transversale a évalué l'alimentation et l'activité physique des enfants Québecois qui sont à risque d'embonpoint. Les donnés ont ete recueillies à l'aide de trois rappels de 24 heures et d'un questionnaire sur l'activité physique. Les mesures diétetiques incluent: l'énergie, les nutriements, junk food, fast food, légumes et fruits, boissons gazeuses, et boissons sucrées. Les facteurs de l'environnement familial qui influencent l'alimentation incluent: sauter le petit déjeuner, souper avec la famille, regarder la télé pendant le souper, le poids des enfants, le poids des parents, l'activité physique et les habitudes sédentaires. Les enfants qui sautent le petit déjeuner ont un apport plus faible en calcium et fibres, les filles de mères obèses consomment plus de boissons gazeuses, les garcons qui regardent la télé frequemment durant le souper ont un apport plus faible en fibres, les garcons plus sportifs ont un apport plus élevé en legumes et fruits et plus faible en junk food, les filles sportives consomment moins de matières grasses. Cette étude a éclairci les determinants de l'alimentation chez les enfants.

Toy premiums, as well as other marketing tools, can be used to promote healthy eating habits on children. As children grow, their appreciation for healthy meals and toys decreases, however their enjoyment for collections increases. Thus, we would expect toy premiums to be ineffective or effective but to a lower extent on promoting healthy eating behaviors as children grow old. The study consisted on presenting children with one of three conditions: see an image of healthy food; see an image of a toy premium (non-collectible, collectible or superfluous collectible); or see a picture of healthy food paired with a toy premium. Afterwards, we measured children’s attitudes towards healthy food and toy premiums and their purchase intention of the healthy meal. As a result, pairing healthy food with toy premiums was not effective on promoting healthy eating behaviors, being the main reason the initial high attitude towards healthy. Additionally, no relevant differences on attitudes between younger and older children were found.

Evening snacking among women with young children, especially consumption of high-calorie, high-carbohydrate snacks, may impact overall diet quality and glucose metabolism. Short sleep duration and poor sleep quality may be potential risk factors. We examined whether sleep duration and poor sleep quality were associated with diet quality and evening snacking among women with young children. Methods: Data were from the National Health and Nutrition Examination Survey (NHANES) 2005-2012, nationally representative cross-sectional surveys of noninstitutionalized U.S. population. Eligible participants were non-pregnant women aged 20-44 years within 5 years of childbirth who completed two 24-hour dietary recalls and completed questions on sleep duration and quality. Results: Among US women with young children, sleep duration was not associated with diet quality. However, overall sleep quality was associated with poorer diet quality. Short sleep duration was not associated with the consumption of neither evening snacks, nor energy intake from or nutrient consumption of evening snacks. Conclusion: The findings of this dissertation provide information useful for informing the direction of future research of dietary quality and eating behaviors of U.S. women with young children. Studies are needed to explore whether improvement in sleep quality may improve diet quality among women with young children, which has the potential to improve both maternal and children’s health. Research may be better focused on identifying other psychosocial and behavioral risk factors for unhealthy dietary behaviors among US women with young children.

Resumo: Na promoção de comportamentos alimentares saudáveis ao longo da vida. que deve iniciar-se o mais precocemente possível, a educação alimentar é um elemento chave. O jardim-de-infância é um espaço efectivo na implementação de projectos de educação alimentar, onde os educadores de infância são actores imprescindíveis. Este estudo teve como objectivo desenvolver uma metodologia apropriada para identificar as capacidades de estudantes de educação de infância e avaliar as suas aptidões no contexto da educação alimentar infantil. A população alvo do estudo foram estudantes do 4ºano da licenciatura em educação de infância de instituições públicas e privadas da área metropolitana de Lisboa (n=287). Construiu-se um videograma, integrador dos domínios da aprendizagem (cognitivo e afectivo) e dos factores associados aos comportamentos em saúde (predisponentes, capacitadores e de esforço). A construção dos questionários estruturou-se em: conhecimentos-atitudes-comportamentos.Pretendia-se que os estudantes transmitissem a sua opinião, de acordo com os questionários.Os estudantes manifestaram conhecimentos, no âmbito da alimentação infantil e da utilidade e aplicabilidade da educação alimentar.Nenhum estudante apresentou conhecimentos negativos, numa escala de zero a 18 valores, 86,9% obtiveram uma classificação entre 11 e 17 valores e 13,1% a classificação máxima.A atitude dos estudantes revelou-se consensual com o desejável, 98,5% apresentaram atitudes positivas face aos aspectos estruturadores das actividades de educação alimentar.No domínio do "saber fazer" 51,0% dos estudantes demonstraram fragilidades no seu desempenho/comportamento. Em conclusão, a utilização do questionário demonstrou ser apropriado para a medição dos conhecimentos, das atitudes e como forma de os estudantes, após visionarem o videograma, espelharem o seu desempenho/comportamento face à representação do educador de infância. A taxa de resposta nunca foi inferior a 98,9% (n=284). No domínio dos conhecimentos, os estudantes manifestaram concepções positivas no campo da alimentação infantil e da educação alimentar. As atitudes enfatizaram-se no domínio afectivo, nos aspectos relacionais e comunicacionais. No domínio dos comportamentos, 91,8% dos estudantes apresentaram dificuldades na identificação dos aspectos menos correctos do desempenho dos actores do video, o que pode sugerir lacunas no âmbito do "saber fazer". Abstract:Nutrition education is key element to promote lifelong healthy eating behaviours and it must begin since early stages of life. Nursery schools are an effective space in the implementation of nutrition education projects, where the nursery teachers are indispensable actors. The aim of this study was to develop an appropriate methodology to identify nursery education student´s skills and evaluate their attitudes in the childhood nutrition education's context. The study's population were students of the 4th degree in private and public nursery education universities in Lisbon metropolitan area (n=287). A video integrator of learning domains (cognitive and affective) and of factors associated with health behaviours (predisposing, enabling and reinforcing) was developed. Questionnaire´s construction was structured in: knowledge-attitudes-behaviours.According to the questionnaires students were asked to transmit their opinion. Students revealed knowledge, in the scope of the childhood nutrition and in utility and applicability of nutrition education. No students presented negative results in knowledge ina zero - 18 scale; 86,9% students obtained a classification between 11 and 17 and the maximum classification was obtained by 13.1% students. Student's attitude was according to win the desirable, 98,5% student´s revealed positive attitudes in the nutrition education's structure aspects of chilhood activities.In the domain of the "know to do" 51,0% of students showed fragilities in their performance/behaviour. In conclusion, the questionnaire´s utilization confirm to be appropriated in measurement knowledge and attitudes and also, after watching the video, as a way for students reflect their performance/behaviour face to the nursery teacher´s representation. Answer´s rate was never lower than 98.9% (n=284). In the knowledge's domain students demonstrated positive conceptions in the childhood nutrition and nutrition education's fields. Attitudes were emphasized in the effective domain in the communication and relational aspects. In behaviour's domain 91.8% students presented difficulties in identifying the less correct aspects of the video actor's performance what may suggest gaps in the "know to do" scope.

Tidigare forskning behandlar vad och hur mycket barn äter samt hur mycket och på vilket sätt barn är fysiskt aktiva. Syftet med studien var därför att beskriva förskolepersonals syn på små barns rörelse- och matvanor samt på hur de kan stötta föräldrar till att skapa hälsosamma vanor för sina barn. Sex semistrukturerade kvalitativa intervjuer genomfördes med personer som arbetat inom förskola i minst 15 år. Intervjuerna spelades in med hjälp av diktafon vartefter de transkriberades och analyserades. Resultatet kunde delas in i tre kategorier: Små barns rörelse- och matvanor på och utanför förskola, Faktorer som påverkar små barns rörelse- och matvanor samt Kommunikation som stöd till föräldrar. Informanterna ansåg att små barn främst rör på sig genom organiserade aktiviteter utanför förskola. Informanterna ansåg att små barn äter mer på förskola än utanför, vilket kan förklaras av bekanta rutiner i kombination med en positiv och social kontext. Informanterna ansåg att de kan stötta föräldrar till att skapa hälsosamma vanor för sina barn genom kommunikation, samtidigt som de försöker få föräldrar att känna sig självständiga i sin föräldraroll genom att inte påpeka vad de anser är rätt eller fel. Då det framkom att informanterna upplever att många föräldrar är osäkra i sin roll och att de anser att det påverkar små barns rörelse- och matvanor, så vore det intressant att intervjua föräldrar om deras uppfattning av hur de kan stärkas i sin föräldraroll.


Previous studies have focused on what and how much children eat and also how much and in what way children are physical active. Therefore the aim of this study was to describe preschool teachers’ view of young children’s physical activity and eating habits and of how they can support parents to create healthy habits for their children. Six semi structured interviews were conducted with persons that have been working within preschool for at least 15 years. The interviews were recorded with a dictating machine and then transcribed and analyzed. The results were divided into three categories: Young children’s physical activity and eating habits in and outside of preschool, Factors that affects young children’s physical activity and eating habits and Communication as support to parents. The informant’s believed that young children are mainly physical active through organized activities outside of preschool. The informant’s believed that young children eat more at preschool because of familiar routines and a positive and social context. The informant’s try to support parents to create healthy habits for their children by communicating with them, and at the same time they try to make parents feel independent in their role as parents by not pointing out right from wrong. Since the study showed that the informants believed that many parents are insecure in their role as parents and that it affects young children’s physical activity and eating habits, it would be interesting to interview parents about how they believe that they can be strengthened in their role as parents.

Despite the fact that eating disorders (EDs) and their subclinical variants are important health concerns, very little research has examined eating pathology and body image, including the factors that may contribute to their development, in New Zealand. Based on the Sociocultural Model of Eating Pathology, this thesis comprises four studies that aimed to identify the factors that may interact with different parts of this model to predict eating pathology. As part of each study, the cross-cultural validity of the assessment measures used was also examined. Across all four studies, the prevalence rates of eating pathology and associated pathology were comparable to overseas estimates. Participants for Study One were 243 adolescent girls recruited from secondary school in Christchurch, New Zealand. Participants completed questionnaires assessing eating pathology, body dissatisfaction, negative affect, perfectionism, self-esteem, teasing and perceived sociocultural pressure. Regression analyses demonstrated that body dissatisfaction, socially prescribed (SP) perfectionism and negative affect uniquely predicted eating pathology in the adolescent sample. Moderator analyses indicated that high levels of SP and self-oriented (SO) perfectionism, negative affect, perceived pressure from others and the media, and low levels of self-esteem all increased the effect of body dissatisfaction on eating pathology among adolescents. Study Two examined the same risk factors among 170 preadolescent girls from primary schools in Christchurch, New Zealand, and found that body dissatisfaction, SP perfectionism and teasing independently predicted eating pathology. High levels of SO and SP perfectionism, perceived media pressure and low levels of self-esteem strengthened the body dissatisfaction-eating pathology relation. The goal of Study Three was to test the factors that serve to amplify the risk of internalising societal standards of thinness among 202 university women recruited from the University of Canterbury, New Zealand. The participants completed questionnaires measuring perfectionism, sociocultural pressure to be thin, anorectic cognitions and anti-fat attitudes. Results indicated that social pressure and information about appearance standards independently predicted thin ideal internalization but no statistically significant moderators were found. Finally, taking another approach to studying women at high or low risk for eating problems, Study Four sought to examine and describe the characteristics of women with a high body mass index (BMI; kg/m2) who were not dissatisfied with their bodies and also women who were dissatisfied with their bodies but were not engaging in pathological eating behaviour. Participants were 166 university women recruited from the University of Canterbury who completed the Personality Assessment Inventory (1991) and questionnaires relating to body dissatisfaction and eating pathology. Both of the above-mentioned groups were characterised by lower overall distress, such as lower levels of anxiety, depression and borderline features. Overall, this research suggests that disordered eating and body image concerns occur among New Zealand women, adolescent and preadolescent girls at rates similar to Europe and North America. There was reasonable support for the validity of many of the assessment measures used. The research also highlights some factors that may influence the development of eating pathology among these populations and provides possible leads for future longitudinal research and, ultimately, prevention efforts.

A alimentação exerce um papel fundamental no desenvolvimento do ser humano, em todas as fases da vida, mas é principalmente na infância e na adolescência que a alimentação deve ser cuidada com mais atenção. Com a expansão dos meios de comunicação e o aumento da oferta de alimentos industrializados, vem ocorrendo uma mudança nos hábitos alimentares das crianças e dos adolescentes de todo o mundo. Já se sabe que hábitos alimentares saudáveis, quando adquiridos na infância e mantidos durante a vida adulta, podem contribuir para a prevenção de doenças crônicas. Se o grupo familiar consome uma dieta equilibrada e saudável, as chances de a criança aprender bons hábitos alimentares são grandes. Por se tratar de uma atividade diária e constante, a alimentação envolve uma rotina de aprendizado. Portanto, entender o comportamento alimentar tem-se tornado essencial para a compreensão do indivíduo e sua relação com a alimentação. Diante disso, o presente estudo teve como objetivo geral descrever o estado nutricional, o hábito e o comportamento alimentar de escolares do 5° ano do Ensino Fundamental, residentes em Juiz de Fora/MG. Para atingir aos objetivos traçados, optou-se, como metodologia, por um estudo descritivo e essencialmente qualitativo. Foram aplicados, um questionário socioeconômico, um protocolo para identificação do estado nutricional (IMC/Idade), um questionário de frequência alimentar validado para crianças e uma entrevista semiestruturada, que além das características tradicionais dessa técnica de coleta de dados incluiu a apresentação de uma mesa de alimentos. A amostra foi de 96 crianças de ambos os sexos, matriculadas no 5° ano do Ensino Fundamental em uma Instituição de Ensino Federal e em uma Instituição de Ensino Estadual.Para análise dos dados, utilizou-se análise de conteúdo temática que foi quantificada com frequência e porcentagem. Pode-se observar que as crianças estudadas têm o hábito de consumir frutas com freqüência, mas, ao mesmo tempo, elas apresentam comportamentos alimentares que merecem ser investigados, pois quando apresentados os resultados acerca de como são feitas as refeições em casa e na escola, os comportamentos de assistir TV e brincar enquanto comem merecem atenção. Recomenda-se a realização de mais estudos a respeito do problema de pesquisa desta dissertação, de modo a perceber quais são os fatores que influenciam o estado nutricional, os hábitos e os comportamentos alimentares das crianças escolares em estudo.
Eating habits play a fundamental role in human development in all stages of life, but particularly during childhood and adolescence, when food should be looked after more closely. With the expansion of the media and increased supply of processed food, there has been a change in eating habits of children and teenagers worldwide. It is already known that healthy eating habits, when acquired in childhood and maintained throughout adulthood, may contribute to the prevention of chronic diseases. If the household consumes a balanced and healthy diet, there are great chances of a child learning good eating habits. Because it is a daily and constant activity, eating involves a routine of learning. Therefore, understanding eating habits has become essential for the understanding of the individual and his/her relationship to food. Therefore, this study aims to describe the general nutritional status, food habits and the behavior of 5th grade students of elementary school living in the city of Juiz de Fora, MG, Brazil . In order to achieve the objectives, a descriptive qualitative study was the chosen method of investigation. A socioeconomic questionnaire, a protocol for identification of nutritional status (BMI/Age), a food frequency questionnaire validated for children and a semistructured interview were applied. In addition to the traditional characteristics of this technique for data collection the presentation of a food chart was included. The sample consisted of 96 children of both sexes enrolled in the 5th grade of elementary school in a federal and in a state institution of education. Regarding data analysis, thematic content analysis was used, and it was quantified for frequency and percentage. One can observe that the children studied have the habit of consuming fruits frequently, but at the same time, they present eating behaviors that deserve to be investigated, due to the fact that they have meals, both at home and at school, while watching TV and playing, which deserves attention. It is recommended that further studies regarding this issue are conducted in order to understand what the factors influencing nutritional status, eating habits and behaviors of schoolchildren are.

Este trabalho descreve uma análise de discurso de mães sociais, a respeito da alimentação e o ambiente das refeições oferecidas às crianças e adolescentes de abrigos. Foram feitas entrevistas com onze mães sociais e três diretoras de três abrigos na Grande São Paulo, e em seguida analisadas por meio da metodologia do Discurso do Sujeito Coletivo. O estudo resultou em 32 categorias de discurso, que abordaram as preferências alimentares, tipo e ambiente da alimentação, conversas e comportamentos durante as refeições, a importância de reunir a família nas refeições, o ensino de boas maneiras, o que se faz para as crianças comerem melhor e o abastecimento dos gêneros alimentícios. Dos discursos foi verificado que as mães sociais se preocupam com os rituais familiares durante as refeições, ocasiões em que se valoriza muito o comer junto, \"todos juntos ao redor da mesa\". Todavia, dá-se preferência ao comer em silêncio do que com conversas. A tarefa de servir os pratos praticamente é assumida pela mãe social, não dando muitas oportunidades para as crianças aprenderem. O capricho na alimentação e o omportamento das crianças \"lá fora\", são também preocupações das mães, que se esforçam para lhes ensinar boas maneiras para não terem problemas fora do abrigo. Foi feito também o levantamento do estado nutricional das 108 crianças e adolescentes por meio do IMC, resultadno em 7.45% de baixo peso e desnutrição e 21.3% de sobrepeso e obesidade. Uma análise qualitativa do cardápio semanal mostrou médias de frequência boas para carboidratos e proteínas, porém com frequências falhas em hortaliças e frutas em alguns dos lares infantis.
This paper describes a speech analysis of social mothers on food and meal environment offered to children and teenagers in foster shelter homes. Eleven social mothers and three managers were interviewed in three shelter homes in São Paulo City and surroundings. An analysis of the \"collective subject speech\" metodology was carried out. From this research 32 speech categories were identified in respect of food preferences, types of food, meal environment, conversation, behavior and the importance of family gathering by mealtime, the good manners upbringing, what can be done in order to improve children´s nourishment, as well as the food supplies. It could be observed from this speech that the mothers were concerned about the importance of eating together, \"all together around the table\". However, the mothers rather eat in silence than talking to with each other. The children´s plates are always served by the social mothers, what does not give them the opportunity of helping themselves and learn how to do that. Preparing a good meal and the children´s behavior outside the shelter home are part of the social mothers´concern. They try to teach them good manners so they will have no problems outside the shelter home. The nutritional status of the 108 children and teenagers from the shelter homes was also researched through the percentiles of the body mass index. The results showed 7.45% of under weight and under nutrition, as well as 21.3% of overweight and obesity. A qualitative analysis of a weekly menu showed a good frequency means for carbohydrates and proteins, however with lacking frequencies for vegetables and fruits in some of the shelter homes.

En su mayoría, las intervenciones para disminuir la prevalencia de la obesidad y promover la adopción de patrones de alimentación y hábitos saludables en población escolar, se han basado en incentivar cambios conductuales bajo el precepto de comer menos y moverse más. No obstante, esta aproximación asume que los niños y jóvenes se desenvuelven en entornos neutrales que no generan influencias en sus hábitos, dejando de lado la compresión de cómo dichos entornos pueden facilitar u obstaculizar la elección de alimentos saludables y oportunidades de movimiento¬. En este sentido, existe una necesidad de construir nuevos marcos analíticos y metodológicos que permitan el estudio e inclusión de los diferentes entornos en los análisis e intervenciones nutricionales en población en edad escolar. En este orden de ideas, el objetivo central de esta tesis fue desarrollar herramientas metodológicas para el estudio de las variables ambientales en población en edad escolar, con el fin de facilitar la compresión de la relación de los entornos con la adherencia a patrones de alimentación y estilo de vida saludables. En el primer capítulo, se parte de una aproximación descriptiva sobre los principales factores individuales y ambientales asociados a la adherencia a patrones de alimentación saludables en una población escolar, usando el estudio de la adherencia a la dieta mediterránea en la población escolar de la ciudad de Mataró, España. El análisis estadístico demostró que los factores positivamente asociados con una adherencia óptima a la dieta mediterránea fueron: (i) el nivel de educación de la madre; (ii) estar cursando la primaria; (iii) la ausencia de distracciones durante el desayuno; y por último, (iv) la actividad física regular vigorosa y ligera. Adicionalmente, sobresalió cómo la disponibilidad de dinero para comprar en la escuela/instituto presentó una asociación negativa con la probabilidad de adherencia óptima a la dieta mediterránea, lo cual se relaciona con una posible influencia de los ambientes comunitarios como factor a considerar para garantizar el éxito de las intervenciones en la población de edad escolar. En el segundo y tercer capítulo, se introdujo el Facility List Coder (FLC) una nueva herramienta basada en información geo-localizada secundaria para la evaluación automática de entornos de alimentación a nivel comunitario. El FLC es un aplicativo que realiza un inventario de establecimientos con diferentes ofertas de alimentos alrededor de un sitio de interés (escuelas, parques, entre otros), a través de una consulta espacial de las principales bases de datos espaciales accesibles (Google Maps y Open Street Maps). Dicha información es analizada y clasificada a través de una lista de categorías preestablecidas que permiten tener medidas cuantitativas sobre la calidad y tipologías de los entornos de alimentación. Después del proceso de validación se concluyó que el FLC es una herramienta de bajo costo, escalable, eficiente, fácil de usar, fiable y válida para la evaluación de entornos de alimentación comunitarios de manera automática a través de uso de información secundaria geo-referenciada. Finalmente, el capítulo 4 adapta y valida a la cultura española una nueva herramienta para evaluar el micro-entrono escolar llamada School Physical Activity and Nutrition Environment Tool (SPAN-ET), la cual permite una evaluación integral del entorno de actividad física y nutrición teniendo en cuenta aspectos físicos, situacionales y de política. Para esto, se aplicaron las directrices metodológicas para la adaptación transcultural de instrumentos de recolección de información y se aplicó un análisis de validez del contenido. La evaluación realizada por el comité de expertos concluyó que los elementos incluidos en la versión SPAN-ET en español eran relevantes para el contexto español, claros, sencillos y sin ambigüedades. Por tanto, se dispone de una nueva herramienta para la evaluación de entornos escolares en España. Como resultado de esta tesis se puede concluir que existe una necesidad global de crear marcos analíticos y metodológicos que permitan estudiar las dinámicas e interacciones de las variables ambientales (entorno de alimentación comunitario, entorno de consumo, entornos organizacionales y entorno informacional) sobre la adherencia a patrones de alimentación y estilos de vida saludables. En particular, en el entorno comunitario alrededor de las escuelas y en el micro-entorno escolar, ya que constituye la dimensión con menos investigación disponible y es el lugar donde las intervenciones podrían tener mayor impacto en la formación de hábitos saludables.

Introduktion: Barn i Sverige har generellt sett en god hälsa (Heinemans et al., 2013). Det är dock oroande att barn och ungdomar blir mindre fysiskt aktiva (Berg, 2008). Barn och ungdomar har i genomsnitt ett högre intag av energitäta och näringsfattiga livsmedel samt ett lägre intag av frukt och grönsaker (Warensjö Lemming et al., 2018). Syfte: Att kartlägga aktivitetsnivån och kostvanor hos barn och ungdomar i årskurs 6-9. Metod: Studiens design är tvärsnittsstudie som mäter aspekter av hälsa och kost genom en enkät. En skola i Västra Götalands län med årskurs 6 till 9 (n=492) utgjorde studiepopulationen och två klasser i varje årskurs valdes slumpmässigt ut (n=187). Resultat: Respondenternas aktivitetsmönster visar att 83,3 procent deltog i skolidrotten varje gång och att vara fysiskt aktiv på rasten minskar med åldern. Att äta frukost varje dag gjorde 58,7 procent av respondenterna, 78,7 procent åt lunch och 69,3 procent åt middag/kvällsmat varje dag. Slutsats: Den här studien har identifierat flera områden där hälsoförbättringar kan göras, vilka beskrivs i den här rapporten.
Introduction: Children in Sweden have, in general, good health (Heinemans et al., 2013). There is a concern, however, that children and adolescents are becoming less physically active (Berg, 2008). On average, children and adolescents have higher intakes of energy-rich, less nutritional food and lower intakes of fruits and vegetables than is recommended (Warensjö Lemming et al., 2018). Aim: To chart the activity level and dietary habits of children and adolescents in grades 6-9. Method: The study design is a Cross-sectional study, measuring aspect of health and nutrition through a survey. A school in Västra Götaland County with grades 6 to 9 (n = 492) was the study setting, and two classes in each year were chosen to participate in the survey (n = 187). Results: Respondents' activity patterns show that 83.3 percent participated regularly in physical activity classes and were physically active during recesses. Eating breakfast every day was a habit of 58.7 percent of respondents, while 78.7 percent reported eating lunch and 69.3 percent reported eating for dinner / supper each day. Conclusion: This study has identified multiple areas where health improvements can be made, which are described in this report.

INTRODUCCIÓN: La obesidad en uno de los mayores factores de riesgo para desordenes metabólicos y cardiovasculares. El exceso de peso ganado durante la infancia aumenta el riesgo de enfermedad en el adulto, sin embargo revirtiendo esta condición tempranamente se reduce el riesgo futuro mejorando la calidad de vida de los individuos. OBJETIVOS: Una intervención en el estilo de vida de individuos prepuberales con obesidad podría provocar cambios en signaturas metabólicas en paralelo con mejoras del IMC. Nuestro objetivo principal fue determinar los efectos de una intervención en el estilo de vida en el perfil metabolómico tanto del plasma como de la orina en individuos prepuberales con obesidad. MÉTODOS: Estudio longitudinal prospectivo en 40 individuos prepuberales con obesidad (IMC > 2 D.E.) entre las edades de 7 a 10 años. La intervención fue principalmente educacional, focalizada a los individuos y sus familias durante 6 meses. Se analizaron parámetros nutricionales, antropométricos y bioquímicos antes y después de la intervención. También se realizó metabolómica no dirigida para muestras de plasma mediante LC-MS y dirigida para muestras de orina mediante RMN, obteniendo así un perfil metabólico completo antes y después de la intervención. RESULTADOS: La intervención disminuyó el IMC de 3,55 D.E. (3,30 - 3,79) a 3,09 D.E. (2,86 - 3,32), la circunferencia de cintura de 83 cm (79,6 - 85,8) a 81 cm (77,8- 84,5) y los niveles de HbA1c de 5,4% (5,3 - 5,4) a 5,2% (5,2 - 5,3), las variables se analizaron mediante Test t-Student pareado. Se disminuyó la ingesta de calorías, carbohidratos, azúcares libres y grasas. No se logró modificar las horas de actividad física. En el perfil metabólico del plasma se identificaron 2581 picos y se aplicó el Análisis de Componentes Principales para consolidarlos en 8 componentes (PC). El PC1 fue el único factor que tuvo diferencia después de la intervención (p= 0,008) incluso ajustando por comparaciones múltiples. El PC1 está compuesto por metabolitos relacionados con el metabolismo de esfingolípidos observando una disminución de los niveles circulantes de las especies identificadas. En relación al perfil metabólico de las muestras de orina, se identificaron 32 metabolitos. Los niveles de TMAO fueron significativamente menores después de la intervención (FDR q < 0,05). El cambio en los niveles de TMAO se relacionaron inversamente con el cambio en la ingesta de fibra. CONCLUSIONES: Una intervención en el estilo de vida reduce el IMC D.E. y modifica el metaboloma del plasma y de la orina. En particular, la intervención disminuyó los niveles de ceramidas, asociadas estrechamente con enfermedades metabólicas. Además, se redujeron los niveles de TMAO, biomarcador de riesgo cardiovascular. Por lo tanto podemos sugerir que una intervención en el estilo de vida de individuos prepuberales con obesidad puede ser un importante mecanismo para reducir el riesgo de enfermedades metabólicas y cardiovasculares.
BACKGROUND: Obesity is one of the major risk factor for metabolic disorders, and its global prevalence has increased exponentially in the last decades. Excessive weight gained during early childhood increases long-term risk; however, reversing this condition during early-life reduces risk, improving children’s quality of life. OBJECTIVE: We hypothesized that a lifestyle intervention in obese prepubertal children would result in differential metabolic signatures, in parallel to improvements in BMI. Our aim was to determine the changes in the plasma and urine metabolomics profiles induced by the intervention. METHOD: Longitudinal prospective study of 40 obese (BMI >2 SDS) prepubertal children ages 7 to 10. The lifestyle intervention was primarily educational, focused on children and family for 6 months. We analyzed nutritional, anthropometrics and biochemical parameters before and after intervention program. Untargeted metabolomics was applied to analyze plasma samples by LC-MS and targeted metabolomics to urine samples by nuclear magnetic resonance and to obtain a comprehensive metabolic profile at baseline and after intervention. RESULTS: The intervention decreased BMI 3.55 SDS (3.30-3.79) vs 3.09 SDS (2.86-3.32), waist- circumference 83 cm (79.6-85.8) vs 81 cm (77.8-84.5), and HbA1c levels 5.4% (5.3-5.4) vs 5.2% (5.2-5.3) using 2-tails paired student t-test. After 6 month decreased calories, carbohydrates, sugars and fat intakes. Was not achieved modify the physical activity hours. In relation with plasma metabolic profile, identified 2581 features and principal component analysis was applied to consolidate them into 8 principal factors (PC). PC1 differed between pre- and post- intervention (p=0.008), and significance was maintained after adjusting for multiple comparisons; PC1 was characterized by metabolites related with sphingolipid metabolism decreasing its levels after intervention. Urine metabolomics identified 32 metabolites. Trimethylamineoxide (TMAO) levels were significantly lower after intervention (FDR q< 0.05). The change in TMAO was inversely relationated with changes in fiber intake CONCLUSION: A 6-month lifestyle intervention able to reduce BMI-SDS and change the plasma and urine metabolome. In particular, the intervention reduced ceramides levels related to metabolic diseases and TMAO levels, a major cardiovascular risk factor. Therefore, these data suggest that the lifestyle intervention improves the metabolic and cardiovascular risk profiles in prepubertal obese children.

This study aimed to explore the early childhood programs by using "Health Kingdom" as the main subject. Guided inquiry teaching model was used to explore the healthy food as well as food colors related scientific activities, and effectiveness of the children's awareness of food colors and eating habit changes were also explored afterwords. The subjects were 25 children taught by the researcher in kindergarten. Both qualitative and quantitative data were collected in this study. The main findings are as follows: 1. Science activities have a significant impact on the cognitive concept of "food color”for children. 2. From the process of science activities we found that: (1) After providing children cooking experience through scientific activities, the children’s willingness in the consumption of vegetables, fruits, and grains are greatly improved. (2) Through fruit juices making and dyeing experiment, children’s awareness of color candy, the natural colour and pigments in both natural juice and canned juice were promoted. (3) Children’s observing, comparing and operating ability were improved through scientific activities. (4) There are no significant differences in age and gender of children’s performance in six scientific activities. 3. After all scientific activities, according to the survey and observation of children’s snack eating and drinking habits, the amount of the snacks and drinks children consumed were reduced when compared with the amount they consumed before all scientific activities.

Abstract:
The USDA’s “My Plate” recommends that preschool-aged children consume specific amounts of fruits, vegetables, and whole grains. These foods contain essential nutrients that children and adults alike require to maintain good health. Researchers have shown, however, that a significant number of children do not consume the recommended amounts of these foods, specifically vegetables and whole grains. Investigators have become increasingly interested in food deserts and whether living in these areas results in lower consumption of healthy foods. Food deserts by definition are areas where inhabitants have limited access to nutritious food. This study investigated the fruit, vegetable and whole grain consumption levels for preschool age children living in food desert or non-food desert areas. The NATFAN (National Food and Nutrition Questionnaire) survey of WIC participants was compared to the USDA’s food desert location data in order to learn the impact of living in a food desert. Using IBM SPSS to test the hypothesis, separate two-sample t-tests were conducted to determine if the mean difference between frequencies of fruit, vegetable, and whole grain consumption equaled zero. The data showed no difference in consumption of fruits and vegetables between food desert residing children and their non-food desert counterparts. There was, however, a difference in means for the consumption of whole grains. Specifically, food desert residing participants were consuming less brown rice. Using consumption amounts estimated from frequency data, it was discovered that, overall, WIC participants were under consuming fruits, vegetables, and whole grains.

Field Lab: Children consumer behaviour
This experiment has the purpose of testing and measure the influence of packaging on children consumer behavior. More specifically, we seek to evaluate the impact that packaging can have on shifting children´s snack preferences from unhealthy food towards healthier options. The study was conducted through individual questionnaires done by 106 children aged from 7 to 9 years-old. There were two distinct groups in the sample (a control group and an experimental group) that were presented with two different visual options of a food snack each – a healthy option and a non-healthy one. The difference between the two groups was the packaging form of the healthy snack that they were presented with. Both groups were presented with the same packaging form for the unhealthy option. Results show that a healthy snack is more likely to have a positive impact on packaging overall evaluation, fun perception and preference over a non-healthy snack, if it is presented in a fun packaging, in contrast to a regular one, although it does not influence the taste perception of the product. Such findings suggest that packaging can be a powerful tool that can be used as a marketing strategy to promote healthy food as well as gain market share to non-healthy products.

Abstract:
The purpose of this study was to determine whether parents of children who attend childcare centers have different attitudes and behaviors toward shaping their child's eating habits than parents of children who stay at home, and whether these attitudes and behaviors affect their child's dietary intake and weight. Fifty parents of 3- to 5-year-old children who attended childcare centers and fifty parents of 3- to 5-year-old children who stayed at home in Central Texas participated in the study. Parents completed questionnaires designed to measure the factors they considered when choosing food for their child, and their perceived influence on, satisfaction with, responsibility for, and control over their child's eating habits. After receiving training and measuring utensils, parents completed 3-day dietary records for their child. A researcher recorded the children's food intake when they were at the childcare center. Children's height and weight were measured, and body mass index was plotted on the CDC BMIfor- age growth charts (2000). Twelve percent of childcare children were obese compared to 2 percent of stay-at-home children (p<0.05). Children in childcare consumed more energy, vegetables, fat, saturated fat, and sweetened beverages than stay-at-home children (p<0.05), mostly due to consumption at the center. Both groups met requirements for all food groups and nutrients except grains, vegetables, and vitamin E. Their diets were too high in fat, contributing 32 percent of total energy. There was no evidence that parents of children in childcare felt less responsible for, less influential on, more satisfied with, or exerted less control over their child's diet than stay-at-home parents. Parents of childcare children believed that they and the childcare center shared responsibility for their child's nutrition. They felt that time was a more important factor in choosing food for their child than did stay-at-home parents. Parents who perceived lack of time to be an obstacle had children who consumed less energy, iron, and fat during the evening hours. Parents of overweight children felt more influential on and were more satisfied with their child's diets than parents of normal weight children. No other parental attitudes were predictive of children's food intake or weight status.
