Abstract:
Après m’avoir accordé un long entretien, un vigneron-encaveur valaisan me raccompagne puis prend congé sur ces mots : « Il y en a qui sont là pour faire du vin, d’autres pour faire de l’argent ». Bien que lapidaire, cette formule résume bien les conflits de valeurs propres au monde du vin, des rivalités qui se traduisent inévitablement par des jeux de pouvoir. Au-delà des terroirs et des cépages, le goût du vin doit beaucoup aux choix politiques locaux, bien plus que ce que notre seul palais pourrait nous laisser penser. Les appellations de vin sont des ressources communes susceptibles de générer de nombreuses formes de valeurs, économiques bien sûr, mais également culturelles, symboliques et sensorielles. Dans cet ouvrage, l’auteur remonte le fil des jeux d’acteurs, des rapports de force et des mécanismes institutionnels à l’oeuvre dans les deux principaux cantons viticoles de Suisse (Vaud et Valais) ainsi que dans deux régions de Nouvelle-Zélande. Il propose des outils conceptuels novateurs qui ont la particularité d’accorder autant de place au goût et aux aspects symboliques du vin qu’à ses enjeux économiques. L’étude des cas de Féchy, du Lavaux, de Fully et de Chamoson en Suisse ainsi que celles des cas néo-zélandais (Marlborough et Central Otago) mettent en évidence les stratégies qu’adoptent les acteurs locaux pour différencier leur appellation et pour en obtenir les formes de valeurs qu’ils convoitent. L’analyse comparée permet en conclusion d’identifier les éléments généraux favorables au succès de l’action collective qui façonne les appellations de vin, ce qui amène l’auteur à proposer des pistes de recommandations à l’intention des acteurs suisses.
