Full textIn the 1920s, a new kind of food flourished in American cities before taking hold of the highways and the suburbs, and settling as a lasting symbol of American culture and soft power: fast food. Fast food franchises rapidly conquered the nation, with McDonald’s as their undisputed leader. Many studies have considered the United States through its unique relationship to fast food, but few have explored the way in which this industry is intertwined with carnism, the ideology according to which it is normal, natural and necessary for human beings to eat other animals as well as products obtained through their exploitation (eggs, dairy). This thesis studies American culture through the prism of fast food and carnism. Following into the footsteps of critical animal studies, it endeavors to restore the visibility of the victims exploited and slaughtered for food on a massive scale. It deals with the impact that fast foods have had on American culture and American politics, and seeks to determine whether the ultra-carnism of these restaurants has spawned a specific, supersized American carnism, which, through globalization, has spread to many “McDonaldized” nations. As carnism is a diet which relies on massive animal slaughter, this work understands it as a violent phenomenon, although this violence is often unnoticeable, as it is associated with the systematic invisibilization of its victims

Full textO planeamento da cidade requer uma abordagem consciente no que diz respeito aos conflitos territoriais associados a diferentes níveis económicos, sociais, tecnológicos e urbanos. A cidade contemporânea que se expande de forma dispersa, contribui para a insustentabilidade do território, contrapondo-se ao idealismo de uma cidade mais equilibrada nas relações entre o homem e a natureza. Face a tal problemática, este Projeto Final de Mestrado propõe uma estratégia urbana com base no estudo da Resiliência Urbana, utilizando como caso de estudo Carnide. Neste território, caracterizado pelos contrastes entre as estruturas rurais e as novas urbanizações na periferia da capital, deve ser considerado a preservação da memória e da sua identidade. Contudo é uma área fortemente infraestruturada que gera altos níveis de fragmentação quando analisados a uma escala de maior proximidade. A Resiliência Urbana surge como tema gerador para a fundamentação e implementação de outros conceitos que contribuam para o equilíbrio entre a componente natural e a artificialização do território. Valorizando não só o planeamento consciente em relação aos sistemas naturais, assim como a ética e os valores do indivíduo correspondente ao sentido de responsabilidade pessoal para a vitalidade do planeta. Pretende-se com este projeto complementar o conhecimento tradicional com novos dados e novas tecnologias, possibilitando a sua incorporação em novos modelos urbanos que utilizem melhor os recursos naturais, sem comprometer a sua durabilidade, minimizando o risco de futuros desastres, aumentando assim a resiliência do território.
ABSTRACT: City planning requires a conscious approach regarding territorial conflicts associated with different economical, social, technological and urban levels. Contemporaneous city expands in a disperse form, contributing to territorial unsustainability, opposing the idealism of a more balanced city in the relationships between man and nature. Before such a problematic, this Master’s Degree Final Project proposes a urban strategy based on the study of Urban Resilience, utilizing Carnide as case study. In this territory, characterized by the contrasts between the rural structures and new urbanizations at the capital’s outskirts, should be considered the preservation of memory and its identity. Although it is an area strongly infra-structured which generates high levels of fragmentation when analysed at a more proximate scale. Urban Resilience appears as a generating theme for the substantiation and implementation of other concepts which contribute to the balance between the natural component and artificialization of territory. Valuing not only the conscious planning in relationship to the natural systems, just as the ethics and values of the individual corresponding to the sense of personal responsibility to the vitality of the planet. It is pretended with this project to complement the traditional knowledge with new data and new technologies, enabling its incorporation in new urban models that better utilize natural resources, without committing its durability, minimizing risk of future disasters, augmenting in this way the resilience of the territory.

Based on ethnographic experience of the encounter from natural and modern kitchens, a therapeutic healing house rises as a representation of a socio-ecological conflict that operates in the formation of different types of cookery expertise. Among 'modern chefs that naturalizes human taste', ‗barefoot female cooks' take us for a walk through the production fields, of commensality of natural foods in search of detailing the historical exclusion of female soul from the art of cookery (DORIA, 2013). Sensitized by a mind-and-body practice based on integrality, openness and attention, this barefoot women seek to grant legitimacy to female devir, in exercising alternative cure methods while facing a quarrelsome modern culinaric habitus responsible for reifying hodiern social gastro-anomie (FISCHLER, 1979). Different theoretical horizons, the dwell perspective (INGOLD, 2011) and acctancy (LATOUR, 1994), were gathered comparatively in order to compose a comprehensive analysis of a ‗eco-vegetarian‘ background, complemented by a parallel ethnographic immersion among producers of organic food in Brazil (ENCA) and Spain (WWOOF) in order to discuss emerging responsibilities in contemporary ecological devir, analysis the anti-ecology immanent in modern dietetic sciences.
Dedicada à investigação da emergência social do cozinheiro enquanto sujeito comedor, apresentamos uma etnografia sobre a estruturação da Cozinha Natural, e das ressignificação sócio-dietética decorrente de uma inversão da cosmo-ecologia gastronômica modernamente instituída. A casa de cura alternativa que nasce como representação de um conflito sociológico heteróclito, entre humanos e não-humanos, contextualiza a formação de uma expertise culinárica contemporânea - cozida no campo da construção da alteridade. O encontro fronteiriço entre as cozinhas natural e moderna ocorre em meio a um processo de legitimação social, de ‗cozinheiras de pés descalços‘ mediadas por uma experiência de desnaturalização do paladar e libertação da corpo feminino. A moderna exclusão do espírito feminino do recinto culinárico (DORIA, 2013) em favor dos chefs, figura como naturalização de nossa animalidade, na instituição de um habitus dietético carnista indesejado, reificador do atual estado de gastroanomia sociológico (FISCHLER, 1979). Uma análise compreensiva da prática dietética vegetariana e da intersubjetividade dos modos de vida consecutivos, é complementada por um empreendimento etnográfico entre produtores de alimentos orgânicos na Espanha.

Full textDesde a sua criação, atribuída ao escultor António Ferreira nos finais de século XVII inícios do século XVIII, o Presépio de Santa Teresa de Carnide, de barro cozido policromado, teve uma história atribulada. Foi desmembrado no início do século XIX, com a extinção das últimas congregações religiosas, colocado em depósito e integrado finalmente em 1913 no acervo do MNAA. A sua aparência revela o estado díspar em que foi conservado até hoje. O projecto de exposição deste conjunto Natalício, criou a oportunidade de efectuar um estudo aprofundado deste tipo de objecto artístico e estabelecer de critérios de intervenção O trabalho de investigação foi auxiliado por análises laboratoriais que conduziram a um melhor conhecimento da obra e à definição dos tratamentos a efectuar.

Full textThe essay examines the recent media coverage of meat consumption from an animal ethical perspective. The study is based on the theory of carnism and critical discourse analysis. For the article search Mediearkivet Retriever was used and the search was limited to four main newspapers in Sweden, Aftonbladet, Dagens Nyheter, Expressen and Svenska Dagbladet. The time span was from the beginning of 2014 until today. The essays material consisted of 25 articles and from them five discourses were identified: The meat norm discourse, the animal rights discourse, the health discourse, the market economy discourse and the environmental discourse. The discourses often related to one another and often included more than one perspective. The study showed that the hegemonic discourse is the meat norm discourse. Although many of the articles were in favor of a drastic cut down of meat consumption, and suggested consumption of only Swedish and organic meat, the norm was still to consume meat. Although statistics show very high meat consumption, there seem to be a surprising consensus in the articles that meat consumption must decrease drastically, for health reasons, the environment and for the wellbeing of animals.
