Brucella are Gram-negative intracellular bacteria capable of infecting a range of species including man. Currently divided into six species based mainly on differences in pathogenicity and host preference, the infections produced are characteristically localised in the reproductive organs and may cause abortions in some species. Exposure occurs through contact with infected animals and animal products such as unpasteurised dairy products and meat. The disease is endemic throughout many areas of the world.

Abstract:
Australia produces agricultural products, including meat, as major items for export as well as being consumed locally. It is no accident that Australia is one of the major exporters of meat to distant markets and the success is predicated on adapting animal production practices and processing to produce a highly desirable product that is safe to eat. Research plays a large part in this strategy, but one would have to say that for some time the view that ‘a prophet hath no honour in his own country’ has predominated. The Cattle and Beef CRC is designed to improve the profitability of the Australian beef industry by bringing in partners, some of whom were prominent in previous research endeavours to coordinate a research effort in order to benefit the whole industry — it is a unique and effective approach. It has taken some time to demonstrate that a ‘nice’ looking animal is not a predictor of meat quality — rather it needs to be processed correctly in order for it to meet the most critical consumer requirements. The researchers in Australia have in fact been the world leaders in advocating procedures such as electrical stimulation that have been taken up by the industry. There are still areas where the research results from Australia differ from that in other countries. CRC-based research in Australia in controlled studies using large numbers of animals with a wide genetic base, has shown that both cattle with a significant component from tropical genotypes and non-tropical genotypes, processed correctly, produce highly acceptable meat. To get further improvements, we merely need to identify the causes of outliers and this should not be difficult. This concept is of course important in the context of the relatively dry Australian climate that results in different problems from other countries. One important outcome of the CRC has been to show that sectors of the industry need to work together to use research and, if necessary, challenge current thinking imposed from outside. In other words, Australians should believe in themselves.

Abstract:
Non-typhoidal Salmonella is a major zoonotic pathogen that plays a significant role in foodborne human salmonellosis worldwide through the consumption of contaminated foods, particularly those of animal origin. Despite a considerable reduction in human salmonellosis outbreaks in developed countries, Australia is experiencing a continuous rise of such outbreaks in humans. This review of the literature highlights the reported non-typhoidal Salmonella outbreaks in humans as well as the occurrence of the pathogen in foods from animal sources throughout Australia. Non-typhoidal Salmonella infections from food animals are more often associated with at-risk people, such as immunocompromised and aged people or children. Although several animal-sourced foods were recognised as the catalysts for salmonellosis outbreaks in Australia, egg and egg-based products remained the most implicated foods in the reported outbreaks. This review further highlights the antimicrobial resistance trends of non-typhoidal Salmonella isolates at the human–food interface, with a focus on clinically important antimicrobials in humans, by collating evidence from previous investigations in Australia. The rise in antimicrobial-resistant Salmonella, especially to antimicrobials commonly prescribed to treat human salmonellosis, has become a significant global public health concern. However, the overall prevalence of antimicrobial resistance in Australia is considerably lower than in other parts of the world, particularly in terms of critically important antimicrobials for the treatment of human salmonellosis. The present review adds to our understanding of the global epidemiology of non-typhoidal Salmonella with emphasis on the past few decades in Australia.

There are large differences between the prices of animal products in regions with comparative advantage in livestock production and regions where production costs are higher. In particular, prices for many animal products are much higher in The European Union (EU) and The United States of America (USA) than in regions with extensive grazing areas or low-priced animal feed grains, e.g. Australia, South America and Southern Africa. These price differentials provide strong financial incentives for trade in animal products between these regions. However, trade is constrained by three main factors: 1.The perishability of many animal products, resulting in additional processing costs (e.g. freezing) which may also reduce the value of the product and higher transport costs.2.The fact that in many markets, high prices have been used as an element of agricultural support policy. These are partly maintained by levies on imported products.3.Zoosanitary restrictions to control the risk of introducing livestock and human disease agents in animal products.

Ochratoxin A (OA) was first isolated from Aspergillus ochraceus in 1965 in a laboratory study searching for new toxic metabolites from moulds. At the time, there was no connection with any animal or human disease. OA was found as a natural contaminant of maize in 1969 in the USA and, about the same time, studies were being conducted in Scandinavia on a kidney disease in pigs which appeared to be related to mouldy feed. These studies showed that OA was the cause of the disease now known as porcine nephropathy.

Abstract:
Clostridium difficile causes infectious diarrhoea in humans and animals. It has been found in pigs, horses, and cattle, suggesting a potential reservoir for human infection, and in 20-40% of meat products in Canada and the USA, suggesting the possibility of food-borne transmission. It is likely that excessive antimicrobial exposure is driving the establishment of C. difficile in animals, in a manner analogous to human infection, rather than the organism just being normal flora of the animal gastrointestinal tract. Outside Australia, PCR ribotype 078 is the most common ribotype of C. difficile found in pigs (83% in one study in the USA) and cattle (up to 100%) and this ribotype is now the third most common ribotype of C. difficile found in humans in Europe. Human and pig strains of C. difficile are genetically identical in Europe confirming that a zoonosis exists. Rates of community-acquired C. difficile infection (CDI) are increasing world-wide, and a new community strain of unidentified origin has recently emerged in Australia. Environmental contamination may also play a role. C. difficile spores survive in treated piggery effluent, the by-products of which are used to irrigate crops and pasture and manufacture compost. There is abundant evidence that food products intended for human consumption contain toxigenic strains of C. difficile but food-borne transmission remains unproven. Thus there are four problems that require resolution: a human health issue, an animal health issue and the factors common to both these problems, environmental contamination and antimicrobial misuse.

Meat production has come under increasing scrutiny from consumers and citizens who feel that certain practices are unethical and negatively affect farm-animal welfare. Animal welfare can be viewed as both a scientific and social concept, and purchasing products with animal welfare claims can be considered an act of ‘ethical consumption’. The present paper reviews research that examines consumer attitudes to animal welfare and highlights tensions between consumer and citizen attitudes and behaviours, and assumptions that are made within these studies. We present our own research into motivations to purchase free-range eggs as an example of research that attempts to unpack these assumptions, in particular, that such purchases are made out of concern for animal welfare. We present a further example of our own research that attempts to identify how attitudes to meat production are socially constructed. We conclude with recommended strategies to engage the broader community in discussions about animal production, so as to improve industry–community communication about farm-animal welfare in meat-production industries.

SUMMARYSamples of DNA from a panel ofGiardiaisolated from humans and animals in Europe and shown previously to consist of 2 major genotypes–‘Polish’ and ‘Belgian’–have been compared with human-derived Australian isolates chosen to represent distinct genotypes (genetic groups I–IV) defined previously by allozymic analysis. Homologous 0·52 kilobase (kb) segments of 2 trophozoite surface protein genes (tsa417 and tsp11, both present in isolates belonging to genetic groups I and II) and a 1·2 kb segment of the glutamate dehydrogenase (gdh) gene were amplified by the polymerase chain reaction (PCR) and examined for restriction fragment length polymorphisms (RFLPs). Of 21 ‘Polish’ isolates that were tested, all yieldedtsa417-like andtsp11-like PCR products that are characteristic of genetic groups I or II (15 and 6 isolates respectively) in a distinct assemblage ofG. intestinalisfrom Australia (Assemblage A). Conversely, most of the 19 ‘Belgian’ isolates resembled a second assemblage of genotypes defined in Australia (Assemblage B) which contains genetic groups III and IV. RFLP analysis ofgdhamplification products showed also that ‘Polish’ isolates-were equivalent to Australian Assemblage A isolates (this analysis does not distinguish between genetic groups I and II) and that ‘Belgian’ isolates were equivalent to Australian AssemblageB isolates. Comparison of nucleotide sequences determined for a 690 base-pair portion of thegdhPCR products revealed ≥ 99·0% identity between group I and group II (Assemblage A/‘Polish’) genotypes, 88·3–89·7% identity between Assemblage A and Assemblage B genotypes, and ≥ 98·4% identity between various Assemblage B/‘Belgian’ genotypes. The results confirm that theG. duodenalisisolates examined in this study (inclusive ofG. intestinalisfrom humans) can be divided into 2 major genetic clusters: Assemblage A (= ‘Polish’ genotype) containing allozymically defined groups I and II, and Assemblage B (= ‘Belgian’ genotype) containing allozymically defined groups III and IV and other related genotypes.

Climate change presents a range of challenges for animal agriculture in Australia. Livestock production will be affected by changes in temperature and water availability through impacts on pasture and forage crop quantity and quality, feed-grain production and price, and disease and pest distributions. This paper provides an overview of these impacts and the broader effects on landscape functionality, with a focus on recent research on effects of increasing temperature, changing rainfall patterns, and increased climate variability on animal health, growth, and reproduction, including through heat stress, and potential adaptation strategies. The rate of adoption of adaptation strategies by livestock producers will depend on perceptions of the uncertainty in projected climate and regional-scale impacts and associated risk. However, management changes adopted by farmers in parts of Australia during recent extended drought and associated heatwaves, trends consistent with long-term predicted climate patterns, provide some insights into the capacity for practical adaptation strategies. Animal production systems will also be significantly affected by climate change policy and national targets to address greenhouse gas emissions, since livestock are estimated to contribute ~10% of Australia’s total emissions and 8–11% of global emissions, with additional farm emissions associated with activities such as feed production. More than two-thirds of emissions are attributed to ruminant animals. This paper discusses the challenges and opportunities facing livestock industries in Australia in adapting to and mitigating climate change. It examines the research needed to better define practical options to reduce the emissions intensity of livestock products, enhance adaptation opportunities, and support the continued contribution of animal agriculture to Australia’s economy, environment, and regional communities.

Food borne transmission of hemolytic uremic syndrome (HUS) was first reported in Australia in 1995 when an outbreak of HUS due to Escherichia coli O111 occurred following the consumption of locally produced mettwurst. Federal and state health and food authorities responded rapidly to bring the outbreak under control. Longer-term responses include the introduction by regulatory authorities of a code of practice for uncooked fermented comminuted meat products, the provision of government and industry funds to support the implementation of this code, and research into the ecology and epidemiology of enterohemorrhagic Escherichia coli and the safe production of meat. In addition, general awareness has increased, and activities in food safety control among all sectors has been stimulated. The pattern of EHEC serotypes in the Australian human and animal populations appears different from that in countries in the Northern Hemisphere. Serotype O157:H7 is not the predominant serotype isolated. Other serotypes, including O111, are more common and possess a variety of virulence-associated determinants. Research into food safety and EHEC is therefore aimed at the development of detection methods more appropriate for the Australian situation. Additional research objectives include determining both the prevalence of EHEC in meat and the meat animal population and farming and handling practices that influence EHEC carriage and transmission. These activities will contribute to an assessment of the hazards presented by EHEC in Australia and recommendations for their control.

This case focuses on marketing public policy and legislation issues in the business environment. The Commonwealth Government of Australia wants to impose mandatory warning labels for fast-food served by quick-service chainrestaurants like McDonald’s. These warnings are to appear on fast-food packaging to warn diners of the possible harms arising from consuming fast-food. This is similar to the warnings that are used in Australia on tobacco product packages. This highlights a turning point where legislators appear to be heeding calls of vocal pressure groups to curb and legislate the industry’s activities. The loudest calls have appeared in well-publicized legal cases and film documentaries like Super-Size Me. McDonald’s has been well-aware of these challenges. The company continues to respond and fight legal challenges on these points. As a result, the company has improved its supply chain, employees’ work-conditions, their treatment of animals, their stores, food and customer service to offer leaner, healthier and more upmarket products. The few vocal critics who have secured media coverage seem to rely on sensationalizing the issue — e.g., eating McDonald’s for 30 days makes you fat. They seem to ignore the results from other experiments where people who ate suitable portions of McDonald’s food for the same 30 day period actually lost weight. Other challenges that have been found to be lies in courts of law include allegations of animal cruelty, unsafe food and food that makes people obese. Yet the public continue to believe these allegations. Can the industry do more, or do something different, to change people’s minds?

Animal breeding is a strategic branch of agri-business in the Republic of Belarus, focused on solving social and economic issues and ensuring national food security. Currently, its development is innovations based, forming a high level of the country’s production and export potential. In the world ranking by the end of 2020, the Republic of Belarus took the 5th place in terms of milk exports (4.8 million tons). As world experience shows, the key direction is implementation of electronic identification of animals as an accounting system in agriculture, including assigning identification number to an animal by tagging, registering information about it in a database and issuing an appropriate passport. The paper summarizes and systematizes legal, organizational and financial conditions for creation and functioning of national information systems in Australia, Argentina, Brazil, Great Britain, the European Union, Canada, the Netherlands, the USA, Switzerland, and Japan. It has been determined that absence of a system for identifying the registration of farm animals leads to distortion of data on the number of livestock, and also creates obstacles for selection work and livestock breeding, decreases efficiency of antiepizootic measures, and inhibits international trade in animals and animal products. In development of this, the necessity of this process in the Republic of Belarus, feasibility of creating the state information system “AITS” (SIS AITS) and corresponding management structure – SI “Center for information systems in animal husbandry” are substantiated. With Gomel region as an example, peculiarities of planning and implementation of process of identification and registration of farm animals are disclosed, the main indicators of the efficiency of SIS AITS for 2013–2020 are analyzed. The advantages of commodity producers of the Republic of Belarus in the context of strengthening production and marketing and export potential and reducing risks in the domestic and foreign markets are substantiated. The issues presented in the article are of interest in determining measures for implementation of the State Program “Agrarian Business” for 2021-2025 and a strategy for the export of agricultural products and food products for the period up to 2025.

One of the main objectives of the governments’ export policy is to maximise agricultural exports in order to earn foreign exchange. It also seeks to provide remunerative prices to the farmers while ensuring adequate availability of essential commodities to the domestic consumers at reasonable prices. This paper analyses the India’s exports of livestock and allied products to principal groups of countries in the light of world trade. The direction of trade has been analysed to explore the areas where exports can be given a further boost. Four groups of commodities -1) Live animals, 2) meat and meat preparations, 3) milk and milk products and 4) eggs, honey and other products of animal origin- have been selected for the analysis. Harmonised system of nomenclature classifies the commodities on the basis of origin, use, functions and trade. Exports of select groups of commodities over 10 years have been analysed from the period 1993-1994 to 2002-2003 (in short 1993 to 2002). Importers of Indian products have been arranged in 5 groups- SAARC includes Bangladesh, Bhutan, Maldives, Nepal, Pakistan, and Sri Lanka. Middle East Group includes UAE, Saudi Arabia, Kuwait, Yemen, Bahrain, Turkey, Qatar, Lebanon, Iran, Iraq, and Israel. High Income Asian Countries (HIAC) includes Japan, Singapore, South Korea, Taiwan, China, Hong Kong, Thailand, Indonesia, Malaysia and Philippines. High Income Other Countries (HIOC) include Australia, Austria, Belgium, Canada, Denmark, Germany, Iceland, Ireland, Israel, Netherlands, Portugal, Spain, Switzerland, UK and USA, Rest of World is the fifth group. No country has been repeated in any group.

Pork is the most consumed meat globally, but its consumption varies widely across the major pork-consuming nations. Consumers consider a wide variety of intrinsic and extrinsic cues, and credence attributes, when making purchasing and consumption decisions for food products. Brand recognition has been an important extrinsic cue for consumers, especially in the case of pork-product quality. However, the branding of fresh pork products in Australia has not been very prominent, due to the dominance of retailer ‘home-brand’ labels. However, increasingly these retailer labels are using information and branding relating to adjectives (credence attributes), for example, animal welfare, production systems, environment. The role of these credence attributes in Australia are now very much regarded by consumers as surrogate indicators of pork quality. The present paper will look at consumer preferences and attitudes to pork and the role credence attributes play when consumers purchase pork. In addition, the paper looks at the role of retailers in delivering pork with adjectives.

OJD is no longer the serious animal health issue that it was for many Australian rural communities a decade and a half ago. Despite declining OJD prevalence as determined by abattoir surveillance, the disease continues to spread, with OJD extension programs required to continually address the misinformation promulgated by some disaffected producers as new areas have become affected. Improved regional and on-farm biosecurity, including the introduction of a risk-based trading system, may have contributed to improved attitudes to OJD control, although attitudinal differences between OJD endemic areas and where the disease is not well established remain. Declines in on-farm OJD prevalence are almost certainly attributable to the widespread uptake of vaccination programs, although encouraging the ongoing use of vaccination to prevent recrudescence and improved biosecurity when mortalities disappear, remains challenging. Vaccination has provided a robust strategy for managing OJD and contributed significantly to the health of Australian sheep and the lives of producers with affected properties. Allozyme electrophoresis was used to assess the taxonomic significance of colour pattern variation within and between populations of the Egernia whitii species group from 41 locations in south-eastern Australia. Analysis of the products of 39 presumed loci revealed that a minimum of three species are present in southern New South Wales among populations previously referred to Egernia whitii. Fixed allelic differences were maintained where pairs of species were sympatric. One of these three species is wide-ranging and is the one to which the name E. whitii is properly applied. The other two are more restricted ecologically and geographically and are described here as new. The three species are genetically and morphologically distinct from the other three eastern Australian members of the species group, E.�margaretae, E. modesta, and E. multiscutata. Genetic data and a review of the morphological evidence provide no support for the recognition of subspecies within either E. whitii (sensu stricto) or E. multiscutata.

SUMMARYAustralian abattoir workers, farmers, veterinarians and people handling animal birthing products or slaughtering animals continue to be at high risk of Q fever despite an effective vaccine being available. National Notifiable Diseases Surveillance System data were analysed for the period 1991–2014, along with enhanced risk factor data from notified cases in the states of New South Wales and Queensland, to examine changes in the epidemiology of Q fever in Australia. The national Q fever notification rate reduced by 20% [incident rate ratio (IRR) 0·82] following the end of the National Q fever Management Program in 2006, and has increased since 2009 (IRR 1·01–1·34). Highest rates were in males aged 40–59 years (5·9/100 000) and 87% of Q fever cases occurred in New South Wales and Queensland. The age of Q fever cases and proportion of females increased over the study period. Based on the enhanced risk factor data, the most frequently listed occupation for Q fever cases involved contact with livestock, followed by ‘no known risk’ occupations. More complete and comparable enhanced risk factor data, at the State/Territory and national levels, would aid in further understanding of the epidemiology of Q fever.

The increasing demands on natural resources to provide food and feed has led to increased global initiatives to improve production sustainability and efficiency. The use of insects as an alternate source of protein for human food and production-animal feed is one such avenue gaining attention. With there being a large variety of insect species endemic to each region, there is likely to be an ideal candidate for each specific production system and region. Insects require less land and water than do terrestrial animals, have high feed-conversion efficiency (FCE) and emit low levels of greenhouse gases (GHG). Insect species currently investigated for mass production include black soldier fly larvae (BSFL), mealworms and crickets. In western societies, it is less likely that wide-scale adoption of insects as a food source will occur, although speciality products with ‘hidden’ insects, such as cricket flour, are commercially available. It is likely to be more achievable for insects to be included into the diets of production and companion animals. While there has been significant investment in research and development of large-scale insect-production systems, such facilities are yet to start producing at a significant scale. The safety and efficacy of insects as a food or feed must be established in conjunction with the development of mass rearing facilities and the optimisation of insect-rearing substrates. Insects also have nutraceutical properties that may have beneficial impacts on animal health and growth, with scope for these properties to be exploited as feed or food additives. The present review will explore the following question: ‘are insects a future livestock industry for Australia?’.

The spread of infectious diseases by the international and national movement of people, animals, insects and products has a documented history dating back several centuries1. The role of human movements has been fundamental to this, and has increased as global travel has risen in amount and speed. This has been exemplified by international epidemics of influenza, antimicrobial resistant bacteria, SARS coronavirus, dengue, chikungunya virus, Zika viruses and many others. Foodborne pathogens have also regularly come to our attention for their ability to move internationally, and outbreaks of salmonellosis due to importation of contaminated foods are well described2,3. An extensive collection of non-typhoidal Salmonella and related species isolated from human, food, animal and environmental sources has been accumulated within Western Australia (WA) since the mid-20th century, and has proven an important historical source of information about the role of humans in the dissemination of microorganisms across and within diverse ecosystems4–6. It is clear that the movement of microorganisms into and out of Australia is by no means a new phenomenon, and that humans have been important contributors to that spread. These are important markers of our impact on established and pristine ecosystems.

Phosphorus (P) fertilisers are an essential input for the economic production of legume-based pastures in New Zealand (NZ) and Australia, but they often contain some unwanted elements that can contaminate the soil, thereby creating potential risks to the health of grazing animal, food quality, and soil quality. Fluorine (F) and cadmium (Cd) are considered to be the elements of most concern. Incidences of F toxicity (from direct ingestion of fertiliser), and accumulation of Cd in offal products above the maximum permissible concentration (MPC) set by the food authorities, have been reported in NZ. Similarly, Cd concentrations in some food grains may exceed the newly proposed MPCs by the Australian and New Zealand Food Authority. Cadmium and F continue to accumulate in the topsoils of NZ and Australian pastures as a result of P fertiliser use. The mobility of both these elements in soils is low and is similar to that of P. Risk of ground water contamination from F and Cd applied to most NZ pastures is low. The plant uptake of these elements, especially F, is also low in most pastoral soils. Cadmium accumulates mainly in liver and kidney of grazing animals mostly through herbage ingestion, whereas F accumulates mainly in the bones of these animals, mostly through soil ingestion. Soil ingestion is highest during the wetter winter months and at high stocking rates. Models have been developed to assess the impact of fertiliser use on the potential risks associated with F and Cd accumulation in soils. Measures to control F and Cd accumulation in soils, plants, and grazing animals are presented and future research needs are identified.

Field evidence indicates that livestock producers are motivated by access to products that readily deliver pain management during husbandry interventions and, more recently, viral epidermal infectious diseases, including FMD. There has been impressive adoption in Australia of a farmer-applied spray-on topical anaesthetic wound formulation (TAF; Tri-Solfen®, Medical Ethics, Australia), initially for managing pain of the breech modification ‘mulesing’ procedure that reduces susceptibility of sheep to flystrike. Over 120 million lambs have now received pain relief and cattle producers have commenced using the TAF for a range of husbandry procedures. This product has demonstrated efficacy for surgical castration and tail docking of lambs, surgical castration and dehorning of calves, surgical castration of piglets, debridement of lesions of the hoof for lame cattle and, importantly, treatment of clinical FMD lesions, including decubitus ulcerations occurring from prolonged recumbency. Multimodal use of an NSAID for improved pain management is advocated, particularly meloxicam, available by prescription from veterinarians for injection and as an oral formulation (Ilium Buccalgesic®, Troy Laboratories, Australia), with current work assessing the potential for prolonged delivery in molasses blocks. Increased use of TAF with NSAIDs significantly reduces pain and suffering in livestock, with enhanced healing of FMD lesions, reduced viral loads from Orf infections in lambs and diminished necessity of ‘antibiotic cover’, assisting antimicrobial-resistance (AMR) stewardship.

The Australian chicken meat indutstry is rapidly expanding due to the increasing consumption of chicken meat. As a result, the industry has growing issues of sourcing new bedding materials and disposing of spent litter, which can be attributed, in part, to a lack of widespread litter re-use for rearing chickens. According to insights and perspectives recently gathered from industry stakeholders, it is believed that re-using litter will become more common in the future, so as to reduce production costs and ease pressures on both the supply of new bedding materials and disposal of spent litter. However, there are potential risks that need to be addressed if litter re-use increases, particularly with regard to the production and mitigation of ammonia, which can negatively affect chicken health if not managed correctly. The present review discusses the potential benefits reported for different types of litter amendments, which have the primary goal of reducing ammonia volatilisation, but may also contribute to improvements in bird performance, welfare, pathogen loads, fertiliser value of spent litter, and reduced costs associated with purchasing new bedding materials. Acidifiers have been shown to be the most effective of all amendment types, with sodium bisulfate or alum being among the most commonly tested products mentioned in research literature. Litter amendments are currently rarely used in Australia, but it is hoped that the information provided in the present review, based mostly on overseas usage and research, will help inform future decision-making on the use of these products in Australian poultry production systems.

ABSTRACT Escherichia coli O157 and six non-O157 Shiga toxin–producing E. coli (STEC) serotypes (O26, O45, O103, O111, O121, and O145, colloquially referred to as the “big 6”) have been classified as adulterants of raw nonintact beef products in the United States. While beef cattle are a known reservoir for the prototype STEC serotype, E. coli O157, less is known about the dissemination of non-O157 STEC serotypes in Australian cattle. In the present study, 1,500 fecal samples were collected at slaughter from adult (n =628) and young (n =286) beef cattle, adult (n =128) and young (n =143) dairy cattle, and veal calves (n = 315) across 31 Australian export-registered processing establishments. Fecal samples were enriched and tested for E. coli O157 and the big 6 STEC serotypes using BAX System PCR and immunomagnetic separation methods. Pathogenic STEC (pSTEC; isolates that possess stx, eae, and an O antigen marker for O157 or a big 6 serotype) were isolated from 115 samples (7.7%), of which 100 (6.7%) contained E. coli O157 and 19 (1.3%) contained a big 6 serotype. Four of the 115 samples contained multiple pSTEC serotypes. Among samples confirmed for big 6 pSTEC, 15 (1%) contained E. coli O26 and 4 (0.3%) contained E. coli O111. pSTEC of serotypes O45, O103, O121, and O145 were not isolated from any sample, even though genes indicative of E. coli belonging to these serotypes were detected by PCR. Analysis of animal classes revealed a higher pSTEC prevalence in younger animals, including veal (12.7%), young beef (9.8%), and young dairy (7.0%), than in adult animals, including adult beef (5.1%) and adult dairy (3.9%). This study is the largest of its kind undertaken in Australia. In contrast to E. coli O157 and consistent with previous findings, this study reports a relatively low prevalence of big 6 pSTEC serotypes in Australian cattle populations.

The cuscus is an Australian animal (marsupial) which belongs to the Phalangeridae family and its distribution is limited in eastern Indonesia, Australia and Papua New Guinea. Through IUCN data, cuscus is categorized as endangered species, in CITES it is classified as Appendix II. The population of cuscus is decreasing due to the threat of deforestation, many are hunted for consumption, and are traded illegally. To overcome the above problems, it is necessary to conduct a comprehensive study of the study of cuscus genotypes in the hope that they can assist in future wildlife conservation efforts. The purpose of this study was to molecularly examine the types of living cuscus in captivity in Lumoli Village, West Seram Regency, Maluku. This research begins with the stages of DNA isolation through cuscus tissue. DNA isolation products were amplified in the ATP 8 gene region by the PCR method, sequenced. Data was analyzed using MEGA program version 5.1. The PCR reaction produces 681 bp of product. The results of the analysis obtained 85 different nucleotide sites. The nucleotide sequence of the ATP 8 gene was analyzed using kimura 2 parameters. The construction of the filogram using the neighbor joining method with a bootstrap value 1000 times based on the ATP 8 gene sequence shows the kinship between the four types of cuscus, which produces two branches of Phalanger and Spilocuscus, namely brown cuscus related to white cuscus and related cuscus with spotted cuskus.

Sheep and goat breeding both in Turkey and in the world, organic animal meat and milk production in the consumer's needs to meet the demands is playing an important role. Worldwide, in 2012, the number of certified organic cattle, sheep and pigs are approximately 4.6, 5.6 and 1.0 million head, respectively. 2015 years, the number of organic certified cattle, pigs, sheep, goats and poultry are approximately 3.7, 0.978, 4.5, 0.718 and 31.6 million head, respectively in the European Union (EU) 28 countries. The most significant increase in organic livestock production in Turkey occurred in goat breeding (652.1%), followed by poultry (187.7%) and sheep (22.3%) breeding. Organic milk and red meat production of Turkey has occurred 2.6% and 38.2% of sheep and 6.3% and 1.6% of goats in 2015 year.

The Australian and global chicken meat industries have benefited from rapid improvements in the efficiency of chicken meat production that have been predominantly achieved through genetic selection, optimisation of bird nutrition and improved bird health. However, this has also resulted in morphological changes in the bird with an increase in the prevalence of leg health disorders. Compromised leg health can cause pain and lameness and bodes poorly for bird wellbeing, bird mortality, and economic returns. There are also implications for the consumer who is increasingly mindful of animal welfare and is demanding more welfare friendly products. Accurate on-farm assessment of bird leg health has challenges due to the diversity of leg disorders and the variety of techniques used to assess their severity and impact. Overall prevalence of leg disorders shows great variability between properties (farms) and flocks. Opportunities to improve bird leg health have been the focus of considerable research which has frequently included an evaluation of environmental enrichment as a means to reduce lameness and improve bird mobility. To this end, currently in Australia, 78% of chicken meat is produced under the conditions of the Australian RSPCA Approved Farming Scheme, which requires perches in the birds’ environment. However, the value of perches in providing enrichment and improving bird welfare is unclear. Therefore, this review explores animal welfare and consumer attitudes towards meat chicken welfare, describes leg disorders, outlines techniques for assessing leg health and discusses opportunities to enrich the birds’ environment to improve bird mobility and leg health.

Mould growth in field crops or stored grain reduces starch and lipid content, with consequent increases in fibre, and an overall reduction in digestible energy; palatability is often adversely affected. If these factors are allowed for, and mycotoxin concentrations are low, there are sound economic reasons for using this cheaper grain. Mycotoxins are common in stock feed but their effects on animal productivity are usually slight because either the concentration is too low or the animal is tolerant to the toxin. In Australia, aflatoxins occur in peanut by-products and in maize and sorghum if the grain is moist when stored. Zearalenone is found in maize and in sorghum and wheat in wetter regions. Nivalenol and deoxynivalenol are found in maize and wheat but at concentrations that rarely affect pigs, with chickens and cattle being even more tolerant. Other mycotoxins including cyclopiazonic acid, T-2 toxin, cytochalasins and tenuazonic acid are produced by Australian fungi in culture but are not found to be significant grain contaminants. Extremely mouldy sorghum containing Alternaria and Fusarium mycotoxins decreased feed conversion in pigs and chickens by up to 14%. However, E moniliforme- and Diplodia maydis-infected maize produced only slight reductions in feed intake by pigs and Ustilago-infected barley produced no ill effects. Use of these grains would substantially increase profits if the grain can be purchased cheaply.

The rate and mechanisms of acidification were determined on a deep yellow sand under a cereal-annual pasture rotation in Western Australia. The rate of acidification was determined from a linear regression analysis between soil pH and years since clearing, using 39 sites that had been cleared for 12-74 years. Uncleared sites were sampled. Soil was sampled to a depth of 80 cm in 10-cm increments. The rate of acidification (kmol H+/ha . year) was calculated from the rate of pH decline, the pH buffer capacity, and bulk density. The rate of acidification 12-74 years since clearing was estimated as 0.19-0.23 kmol H+/ha. year, requiring 10-11 kg CaCO3/ha.year to neutralise. The greatest acidification occurred in the 10-20 and 20-30 cm layers, with acidification occurring to a depth of 80 cm. The rate of pH decline for each depth below 10 cm was 0.007 units/year. The surface soil (0-10 cm) did not acidify. The contribution of potential acidifying processes was estimated using soil measurements and paddock histories. The main cause of acidification appears to be the carbon cycle (grain removal and removal of animal products and waste products to sheep camps), with negligible acidification from the nitrogen cycle. Possible errors in the methodology are discussed.

Sustainable use of wildlife has become equated with exploitation of animal products (meat, skin or feathers) and/or removal of wild progenitors into the pet trade. This consumption of the wildlife is therefore largely ex situ and so removes nutrients and energy from the rangelands. Demand for lethal or a removal action is often driven by the severity of the perceived conflict between the wildlife and other enterprises, especially agriculture, rather than for the resulting products. Such uses also raise community concerns about humane treatment of animals and a valuing of the natural heritage. Wildlife-based tourism, as part of the valuable and growing nature-based or ecotourism industry in Australia, is an in situ use that may be a more ecologically sustainable and economically twble option for use of rangeland wildlife. This paper examines these possibilities and their problems with a focus on the commercial kangaroo industry and the use of arid-zone mammals, birds and reptiles for pets. It provides new evidence that wildlife-tourism based on free-living kangaroos in the rangelands is both feasible and in demand. The objective of the present study was to evaluate the effect of including a pellet containing feed components targeted at methane-producing microbes and methane-producing biochemical pathways, into the ration of beef cattle in southern Australia. The so-called ‘methane-reducing supplement’ (MRS) components were chosen from readily available and inexpensive sources to ensure high adoption of the practice if successful. The effect of the pellet on animal performance, diet DM digestibility and gas emissions (measured using an open-circuit gas quantification system) of beef cattle in comparison with animals fed a control diet or high-quality supplement (HQS) was evaluated. In the first trial, there were no differences in DM and digestible energy (DE) intake, but the methane emission in g/day, g/MJ of DE intake (P < 0.01), and in g/kg of DM intake (P = 0.01) were lower for steers fed MRS. There was also a trend to lower carbon dioxide emission (g/MJ of DE intake) in steers fed MRS (P = 0.07). In the second trial, heifers fed the MRS produced 18.7% less carbon dioxide (P < 0.01) and 15.5% less methane (P = 0.01) than heifers on the HQS supplement, when expressed in g per unit supplement intake on a bodyweight basis. There was no difference in growth rate of heifers on the HQS and MRS supplements. Combining methane-inhibiting feedstuffs derived from agro-industrial by-products into supplements for cattle in southern Australia appears to be an effective means of reducing methane output and methane intensity from grazing beef cattle.

This study was carried out to determine the diversity of lactic acid-producing and lactic acid-utilising bacteria in the foregut of the feral camel (Camelus dromedarius) in Australia. Putative lactic acid bacteria were isolated from the foregut contents of camels by culturing on De Man, Rogosa, Sharpe and lactic acid media. Identification of representative isolates was based on the analysis of 16S rRNA gene sequences. Fermentation end products of glucose (i.e. volatile fatty acids and lactate) were also measured in vitro. The key predominant bacteria identified in this study were closely related to Streptococcus bovis, Selenomonas ruminantium, Butyrivibrio fibrisolvens, Lachnospira pectinoschiza and Prevotella ruminicola. The main L-lactate producers were those isolates closely related to S. bovis, S. ruminantium and Lactococcus garvieae, while the efficient lactate utilisers were S. ruminantium-related isolates. D-lactate was produced by isolates closely related to either L. pectinoschiza or S. ruminantium. The predominant bacteria isolated and characterised in this study are identical and/or closely related to those typically found in true ruminants (e.g. S. ruminantium, B. fibrisolvens, S. bovis). In addition, some of the bacteria isolated represent novel species of Lachnospira and Clostridium in the context of lactic acid bacteria from a large herbivorous host. The results from this study have contributed to our understanding and provide opportunities to reduce foregut acidosis in the camel.

The Australian red meat industry has set a goal to be carbon neutral by 2030. Reaching this goal will be a challenge and will involve targeting ways to increase carbon in the landscape, improve efficiency of production and reduce methane emissions from ruminants. There are a number of different options the industry can pursue to try and achieve its goal, including changing grazing management practices and land-use to changing the animal, what it eats and the microbial ecology in their rumen. No single one of these options will enable the red meat industry to become carbon neutral by 2030, it will take a combination of all of them to help meet the challenge. We have been using an in vitro batch fermentation system and a Rusitec system as a quick, relatively inexpensive, way to screen; plants that already exist in our grazing systems, novel plants, plant extracts and organic waste products from the horticultural industry, for their potential to improve the efficiency of fermentation and reduce methane production in the rumen. We have also used these systems to provide an initial clue about the mechanism of action at the level of the ruminal microorganisms. We have identified variation in these traits amongst the plants, plant extracts and horticultural waste products we have tested that could help develop systems that reduce the environmental footprint of ruminants in tropical production systems in Australia and in other parts of the world.

Considerable investment has been made by the Australian pork industry over several decades, to address key factors that affect pork quality, so as to improve consumer acceptability of pork and pork products. These outcomes have been utilised to inform on-farm quality assurance programs, develop effective solutions to negate boar taint issues associated with the production of entire males, drive continuous improvement in animal management and encourage new technologies to be implemented in both the production and processing sectors of the Australian pork supply chain. Australian Pork Limited’s Strategic Plan 2015–20 is focused on maintaining profitable and sustainable growth in existing markets and developing strong foundations to support new opportunities, both in Australia and internationally. Guaranteeing that pork available for purchase is always consistently high in eating quality will support ongoing consumer demand for pork through increased consumption frequency. However, achieving this on an everyday basis presents industry with significant challenges due to the many complex interactions among the production, processing and post-slaughter factors experienced by pigs, carcasses and pork that can influence final product quality, either singularly or in combination. The present paper describes recent quantitative studies to determine the size and effect of pathway parameters on eating quality attributes of fresh pork and knowledge gaps identified. Outcomes of consumer sensory studies to inform the development of a non-prescriptive cuts-based eating quality system for pork and commercially validate particular pathway interventions are detailed. Through the implementation of validated pathway interventions to optimise pork eating quality, the overall industry objective is to reduce eating quality fail rates of different pork cuts to less than 10%.

Climate change is predicted to reduce the productivity of the broadacre livestock industries across southern Australia; to date there has been no formal evaluation of the potential of genetic improvement in cattle or sheep to ameliorate the impacts of changing climates. We used the GRAZPLAN simulation models to assess selection of five traits of sheep and cattle as adaptation options under the SRES A2 global change scenario. Analysis of the breeding strategies was carried out for 25 representative locations, five livestock enterprises and three future years (2030, 2050, 2070). Uncertainty in future climates was taken into account by considering projected climates from four global circulation models. For three sheep enterprises, breeding for greater fleece growth (at constant body size) was predicted to produce the greatest improvements in forage conversion efficiency, and so it was the most effective genetic adaptation option. For beef cow and steer enterprises, breeding for larger body size was most effective; for beef cows, however, this conclusion relied on per-animal costs (including provision of bulls) remaining stable as body size increases. Increased conception rates proved to be less effective but potentially viable as an adaptation in beef cow and crossbred ewe enterprises. In the southern Australian environments that were analysed, our modelling suggests that breeding for tolerance to heat stress is unlikely to improve the performance of livestock production systems even at 2070. Genetic improvement of livestock was able to recover much less of the impact of climate change on profitability at drier locations where the need for adaptation is likely to be greatest. Combinations of feedbase and livestock genetic adaptations are likely to complement one another as the former alter the amount of forage that can be consumed, while the latter affect the efficiency with which consumed forage is converted to animal products. Climate change impacts on pasture production across southern Australia are likely to have only small effects on methane emissions intensity, as are a range of candidate genetic and feedbase adaptations to climate change; methane emissions per hectare in future climates will therefore be driven mainly by changes in livestock numbers due to alterations in pasture productivity.

FlyBoss provides information on breeding and management to reduce flystrike susceptibility, effective methods of treating existing flystrike and flystrike prevention programs. The FlyBoss decision aids, which are based on simulation models and incorporate local weather data and sheep susceptibility factors, can assist sheep farmers who wish to optimise sheep management, chemical treatment and non-chemical options to minimise the risk of flystrike. FlyBoss also contains comprehensive information on fly biology, sheep and environmental factors associated with flystrike and information on appropriate chemicals for various situations. FlyBoss draws on expertise from organisations throughout Australia to provide the sheep industry with easily accessible, current and locally targeted information on flystrike management. The present report briefly describes the development of FlyBoss and associated workshops and provides an overview of current recommendations for the control and prevention of flystrike.

Dietary change has been suggested as a key strategy to maintain food security, improve health and reduce environmental impacts in the face of rising populations, resource scarcity and climate change impacts, particularly in developed countries. This paper presents findings from a quantitative modelling analysis of food availability and environmental implications of shifting the current average Australian dietary pattern to one of two alternative, healthy dietary patterns, the ‘healthy mixed diet’, with a mixture of animal and plant foods, and the ‘healthy plant-based diet’, with only plant foods. Both were constructed in accordance with the Australian Dietary Guideline recommendations, and four sustainability principles: Avoiding over-consumption, reducing intake of discretionary foods, reducing animal products, and reducing food waste. It was assumed that all food was provided domestically where possible, and export of foods only occurred when there was a surplus to domestic requirements. The authors compared the impacts of each dietary pattern on direct food availability, water use, land use, greenhouse gas emissions, fuel and energy use and fertiliser use. The plant-based diet had the best overall environmental and direct food availability outcomes, however had key vulnerabilities in terms of fertiliser and cropping land availability. For the agricultural sector overall, changes in diet had little effect on environmental impact due to the amount and nature of Australian exports, indicating that changes to production methods are also necessary. Likewise, changing diets had little effect on the existing environmentally intensive Australian economy, indicating that changes to other sectors are also necessary.

About 0.3 million t/year of composted garden organics (CGO) including mulches and soil conditioners are produced annually in New South Wales, Australia, although only a small proportion of this material (<4%) is used in agriculture. A lack of information on product characteristics and agronomic performance has limited the development of agricultural markets for CGO products. These CGO products are the coarse and fine fractions separated by screening after composting. This paper presents the results of a survey of CGO mulches and soil conditioners (unblended or blended with a mixture of other organic materials including biosolids, animal manures and paper), which are commercially produced in the metropolitan areas of New South Wales and assesses their agronomic and soil amendment values in terms of chemical and biological properties. It also evaluates the short-term effects of applying increasing rates (0, 25, 50 and 100 t/ha) of selected composted soil conditioners on radish growth in a pot experiment. The mulch products had low nutrient concentrations but had high carbon (C) contents (mean C = 45%) and C/Nitrogen (N) ratios (mean C/N = 72) and are most suitable for use as surface mulch. The unblended soil conditioners were low in nutrients, particularly N (average total N = 1.0%, range 0.9–12%), and had lower and variable C contents. The pot trial results indicated lack of growth response of radish at application rates up to 100 t/ha of unblended soil conditioners from garden organics. The blended soil conditioners were more variable in quality and as confirmed by pot trial results produced highly variable plant responses. The high variability in product quality and performance of the soil conditioners, particularly the blended products might be related to the source and type of blending material as well as the composting conditions used in the manufacturing process. These results highlight the need to improve compost quality and consistency and the need for further research to advance understanding of the benefits using CGO in terms of improving soil quality, crop productivity and net economic returns to growers.

Phomopsis leptostromiformis, and its teleomorph Diaporthe toxica, is a lupin pathogen that causes stem blight in young lupins and, as a saprophyte, has been detected on dead lupine material. Under favourable conditions, the fungus produces phomopsins (PHOs), a family of macrocyclic hexapeptide mycotoxins capable of binding tubulin through the tripeptide side chain. The toxic effects appear largely confined to the liver. In particular, the ingestion of PHO contaminated lupin stubble has been linked to lupinosis, a debilitating disease of sheep (the most sensitive animal) characterised by disorientation, blindness, lethargy, and eventually death. The chemical structures of PHO A, B and D have been identified. Analytical methods to determine PHOs are mainly enzyme-linked immunosorbent assays or chromatographic separations, in combination with ultraviolet and mass spectrometric detection. The data about the PHOs occurrence are limited to Australia, restricted to lupin seed. Only one survey has been carried out on lupin seeds and flours from the Swiss market. Not many strategies have been developed to limit lupin seed contamination. Efforts devoted to control lupinosis in Australia focused on the development of cultivars resistant to Phomopsis infection. There are few examples in literature of decontamination or detoxification of PHOs; moreover, they have been shown to be resistant to extensive processing, including cooking. Australia and New Zealand are the only countries that included PHOs in their mycotoxin regulations, with a limit of 5 µg/kg in lupin seeds and derived products. Phomopsins are poorly studied mycotoxins and risk assessment on PHOs has not been done at the European level. The collection of all available scientific data was requested by EFSA in a specific project and partners involved considered it of general interest preparing this review to highlight the limited available information, which indicate that the assessment of potential risk related to PHOs is currently not feasible.

We obtained 14,140 interception records of ants arriving in Australia between 1986 and 2010 to examine taxonomic and biogeographic patterns of invasion. We also evaluated how trade and transport data influenced interception rates, the identity of species being transported, the commerce most associated with the transport of ants, and which countries are the primary sources for ants arriving in Australia. The majority of ant interceptions, accounting for 48% of interceptions, were from Asia and Oceania. The top commodities associated with ant interceptions were: (1) Live trees, plants, cut flowers; (2) Wood and wood products; (3) Edible vegetables; and (4) Edible fruit and nuts. The best fitting model for predicting ant interceptions included volumes for these four commodities, as well as total trade value, transport volume, and geographic distance (with increased distance decreasing predicted ant interceptions). Intercepted ants identified to species consisted of a combination of species native to Australia, introduced species already established in Australia, and species not yet known to be established. 82% of interceptions identified to species level were of species already known to be established in Australia with Paratrechina longicornis having the most records. These data provide key biogeographic insight into the overlooked transport stage of the invasion process. Given the difficult nature of eradication, once an ant species is firmly established, focusing on early detection and quarantine is key for reducing the establishment of new invasions.

Two high-copy-number insertion sequences, IS2404 and IS2606, were recently identified in Mycobacterium ulcerans and were shown by Southern hybridization to possess restriction fragment length polymorphism between strains from different geographic origins. We have designed a simple genotyping method that captures these differences by PCR amplification of the region between adjacent copies of IS2404 and IS2606. We have called this system 2426 PCR. The method is rapid, reproducible, sensitive, and specific for M. ulcerans, and it has confirmed previous studies suggesting a clonal population structure ofM. ulcerans within a geographic region. M. ulcerans isolates from Australia, Papua New Guinea, Malaysia, Surinam, Mexico, Japan, China, and several countries in Africa were easily differentiated based on an array of 4 to 14 PCR products ranging in size from 200 to 900 bp. Numerical analysis of the banding patterns suggested a close evolutionary link between M. ulceransisolates from Africa and southeast Asia. The application of 2426 PCR to total DNA, extracted directly from M. ulcerans-infected tissue specimens without culture, demonstrated the sensitivity and specificity of this method and confirmed for the first time that both animal and human isolates from areas of endemicity in southeast Australia have the same genotype.

Demand for plant-based meat substitutes is growing globally for nutritional and environmental reasons, with Australia the third-fastest growing vegan market worldwide. This study aimed to profile and compare plant-based meat substitutes (mimicking meat) with equivalent meat products, and 2015 data. An audit undertaken in May (updated in September 2019) from four metropolitan Sydney supermarkets (Coles, Woolworths, Aldi, IGA), collected nutrition information and Health Star Rating (HSR) from 137 products (50 burgers, 10 mince, 29 sausages, 24 chicken, 9 seafood, 15 other). Mean (± standard deviation (SD)) and median (range) was calculated for nutrients and HSR. Plant-based options were generally lower in kilojoules, total and saturated fat, higher in carbohydrate, sugars, and dietary fibre compared with meat. Only 4% of products were low in sodium (58–1200 mg/100 g). Less than a quarter of products (24%) were fortified with vitamin B12, 20% with iron, and 18% with zinc. HSR featured on 46% (3.6–4.4 stars). On-pack claims were vegetarian/vegan/plant-based (80%), protein (63%), non-genetically modified/organic (34%), gluten free (28%). Product numbers increased five-fold (↑429%) in four years. The plant protein trend has prompted innovation in meat substitutes, however wide nutrient ranges and higher sodium levels highlights the importance of nutrition guidelines in their development to ensure equivalence with animal-based proteins.

This article argues that choices available to consumers are constructed and constrained by actors in the chains of production, distribution, and exchange who bring products to retail. It traces how “free-range” eggs come to market in Australia, finding that the “industrial free-range” label dominating the market is not substantially different from caged-egg production in the way that it addresses animal welfare, public health, and agro-ecological values. I show how the product choices available to consumers have been constructed not just by the regulation (or nonregulation) of marketing and labeling, but also by the regulatory paths taken and not taken all along the food chain.

The intent, in this manuscript, is to characterise the United States Department of Agriculture (USDA) and Meat Standards Australia (MSA) systems for assessing beef quality and to describe the research evidence that supports the principles involved in grade application. USDA beef quality grading standards rely on carcass-trait-only assessments of approximate age of the animal at harvest and amount of intramuscular fat (as marbling) inside the muscles. USDA beef quality grading started 82 years ago. Then, as now, because no traceability system was in place, each animal’s history (exact age, feeding regimen, management practices, etc.) was incomplete; those who assigned quality grades used indicators of age (physiological maturity) and plane of nutrition (amount of marbling), and they do so still. Since 1926, research studies have identified a multitude of palatability-determining live-animal factors (e.g. genetics, use of hormonal growth promotants, high-energy diet finishing) and carcass-treatment factors (e.g. electrical stimulation, tenderstretch carcass suspension, postmortem aging) that cannot be incorporated into a carcass-trait-only quality assessment system. The USA beef industry has depended on development of more than 100 beef brands – some using palatability assurance critical control point plans, total quality management (TQM) philosophies, USDA certification and process verification programs, or combinations of live-animal factors, carcass-treatment factors and carcass-trait constraints – to further differentiate fresh beef products. The MSA grading system is a TQM grading approach that incorporates animal-specific traits (e.g. genetics, sex, age), control of certain pre-harvest and post-harvest processes in the beef chain, cut-specific quality differences and consumer preferences, into a beef pricing system. A unique aspect of the MSA grading system is that the grades are assigned to cuts or muscles, not carcasses; cuts or muscles from the same carcass are assigned individual (and in many cases, different) grades that reflect differences in expected eating quality performance among the various cuts of beef further adjusted to reflect the influence of cut or muscle aging and alternative cooking methods. The MSA grading system is still being modified and refined (using results of an extensive, ongoing consumer testing program), but it represents the best existing example of a TQM grading approach for improving beef quality and palatability. Research studies have shown that the accuracy of palatability-level prediction by use of the two systems – USDA quality grades for US customers and consumers and MSA grades for Australian customers and consumers – is sufficient to justify their continued use for beef quality assessment.

The state and level of development of livestock industries depend on internal (availability of basic production funds, material and labor resources, the level of technological and technical support, etc.) and external factors (the state of the country's economy, fluctuations in market conditions, the solvency of the population, natural resources, economic and political stability, etc.). The effectiveness of livestock industries and the level of their development are determined by a favorable combination of internal and external factors, with their rational use. The research aims to study and analyze the state and level of development of animal husbandry industries in the Russian Federation and abroad, with further identification of areas for improving efficiency and developing recommendations for their further development. As of 2019, compared to the pre-reform period (1990), the number of livestock of agricultural animals in the Russian Federation has sharply decreased: cattle (cattle) - by 3 times, including cows-by 2.6 times, pigs-by 1.5 times, sheep and goats-by 2.6 times. This led to a decrease in the density of livestock per 100 hectares of agricultural land, which reduces the efficiency of land use, including hayfields and pastures. On the territories of the Russian Federation, there are quite a lot of natural forage lands, which, with reasonable specialization and territorial placement of livestock industries, can increase the efficiency of their use. The lack of a unified policy to improve the sustainability of agroecological systems and their effective use in the country does not allow us to reach the pre-reform level of livestock production. For the period from 2010 to 2019, beef production decreased by 6.7%, and milk production by 0.5 %. For meat and meat products, the actual production volumes are above the established threshold of food security, and for milk and dairy products, this level has not yet been reached. So, by 2019, taking into account reserves, the share of domestic production was 83.1 % (with a threshold value of 90 %), and the share of imports was 16.9 %. All this dictates the need to study internal and external factors affecting the development of livestock industries, identify internal reserves and, on this basis, increase production volumes, and ensure competitiveness in the foreign market. In the world market of livestock production, the leading positions are occupied by such industrialized countries as the United States, Canada, Northern Europe, Australia, New Zealand. The analysis of the state of development of animal husbandry in these countries allows us to conclude that the growth of livestock production and livestock productivity was promoted by taking into account and combining internal and external factors - the use of industrial industrial technologies (dairy cattle breeding), taking into account natural factors (meat cattle breeding). The use of cheap sources of natural forage land and climatic conditions that allow for the production of livestock products in some of these countries (Australia, New Zealand, some US states) without the construction of capital livestock buildings makes it possible to obtain cheap, high-quality and competitive products. Taking into account the experience of foreign countries, taking into account the possibilities of agroecological systems, it is necessary to choose the right specialization of livestock industries and on this basis to increase the production volumes and efficiency of livestock products

Abstract:
Grape marc consists of the skins, seeds and stems remaining after grapes have been pressed to make wine. Interest in grape marc for use as a dietary feed additive for ruminants has grown after recent research showed that inclusion of grape marc in the diet of dairy cows reduced their enteric methane (CH4) emissions. In the present research, in vitro fermentations were conducted on 20 diverse grape marcs to evaluate their potential as ruminant feed supplements and, in particular, mitigants of enteric CH4 emissions. The grape marcs, which were sourced from vineyards in south-eastern Australia, contained a range of red and white grape varieties with different proportions of skins, seeds and stalks, and had diverse chemical compositions. For each grape marc, four replicate samples, each of 1 g DM, were incubated in vitro with ruminal fluid. The volumes of total gas and CH4 produced after 48 h of incubation were determined. Total gas production ranged from 21.8 to 146.9 mL and CH4 production from 6.8 to 30.3 mL. White grape marcs produced more (P < 0.05) total gas (81.8 mL) than did red grape marcs (61.0 mL), but had a lower (P < 0.05) percentage of CH4 (25.3% and 30.3% of total gas). Grape marcs with a higher proportion of seeds produced less (P < 0.05) total gas than did the types composed of either skin or stalks; however, the seed types produced the greatest (P < 0.05) percentage of CH4 (49.8% of total gas). It is concluded that grape marcs differ greatly in their potential as mitigants of enteric CH4 emissions for ruminal production systems.

Abstract:
Current use of reproductive technology in the Australian livestock industries is limited, though it increased in line with higher prices for beef and wool through the 1980s. The required techniques, many of which were developed in Australia, are available and the level of expertise is comparable to the best in the world. However, the extensive pastoral industries do not readily lend themselves to these procedures. Only in the dairy industry is artificial insemination used to a significant degree. On the other hand, application of the technology in the pastoral industries is confined largely to studs and breeding cooperatives which provide breeding animals for producer flocks and herds. Hence the impact of applied technology may be more widespread than first appears. Until recently, little regard was paid to application of the technology along sound breeding principles. Artificial insemination and multiple ovulation and embryo transfer (MOET) have not been used so much in planned breeding programmes aimed at local improvement of stock, but more to proliferate genes of reputedly superior stock, imported either from overseas or elsewhere in Australia. This is particularly true of MOET, where the incentive to use it is commonly a short term cash gain made from proliferating breeding stock of a particularly valuable and usually novel strain or breed. Recent technological improvements which render the use of reproductive technology cheaper and more effective will lead to its more widespread use in commercial practice. Techniques for embryo freezing and splitting have been greatly simplified and quickly put into practice. The novel livestock technologies of in vitro oocyte maturation and fertilization have already found commercial application overseas. Fecundity-enhancing products have also been adopted by the livestock industries. There is potential value for greater use of reproductive technology in the livestock industries provided it is implemented according to sound breeding principles and provided associated management practices are applied simultaneously.
