Resumo: Adolescência é um estágio da vida do indivíduo marcado por intensas mudanças fisiológicas, cognitivas e sócio-culturais, que afetam seu comportamento alimentar e saúde. Práticas alimentares inadequadas representam riscos imediatos para a saúde do adolescente e trazem implicações negativas para a sua saúde na idade adulta. Consequentemente, estudos que avaliam o estado nutricional e a adequação do consumo dietético de adolescentes são importantes e têm sido realizados no Brasil. Entretanto, em pesquisas nacionais de avaliação do consumo dietético da população, a utilização das novas recomendações nutricionais, as Dietary References Intakes- DRIs, como valores de referência, são ainda raras. Por sua vez, a prática regular de atividades físicas apresenta uma relação inversa com os riscos de doenças crônicas não transmissíveis e tem um efeito positivo na qualidade de vida do indivíduo. Assim, é importante avaliá-la concomitantemente à avaliação do estado nutricional, do consumo dietético e das predisposições e tendências no consumo dos alimentos pelos indivíduos. Pelo exposto, o presente estudo teve como objetivos avaliar: i) o estado nutricional dos adolescentes do Colégio Técnico da UNICAMP, identificando riscos nutricionais, ii) o consumo alimentar dos mesmos e a adequação da ingestão dietética de macronutrientes e micro-nutrientes em relação às recomendações nutricionais preconizadas pelas Dietary References Intakes ¿DRIs. iii) o perfil de atividades físicas desempenhadas pelos adolescentes e, finalmente, iv) desenvolver uma escala para avaliar as crenças e atitudes de adolescentes em relação aos alimentos, segmentando o grupo estudado de acordo com seus critérios e estratégias na seleção dos alimentos consumidos. Participaram do estudo 160 adolescentes com idade entre 13 e 19 anos amostrados de uma população de 759 alunos. Tratou-se de um estudo transversal com tomada de medidas antropométricas de peso e estatura e realização de registro alimentar de 3 dias não consecutivos, sendo um deles de final de semana. Para a classificação do Índice de massa corporal (IMC), utilizou-se os pontos de corte por idade preconizados pela Organização Mundial de Saúde (OMS, 1995). Os dados de consumo alimentar foram processados através do Programa Virtual Nutri. A prevalência de inadequação de nutrientes foi estimada utilizando-se o método ¿EAR como ponto de corte¿ preconizado pelo Food and Nutrition Board/Institute of Medicine (IOM) utilizando-se programas computacionais em linguagem SAS (versão 8.2). A normalidade dos dados foi testada pelo método Kolmogorov- Smirnov, realizando-se uma ANOVA para os cálculos da variância intrapessoal. A média de consumo de cada nutriente foi ajustada para remoção da variância intrapessoal elaborando-se a distribuição ajustada de cada nutriente para a estimativa da prevalência de inadequação. Dados de atividade física foram coletados através de questionário específico. Para a medida de crenças e atitudes desenvolveu-se uma escala de atitudes em relação à seleção dos alimentos consumidos, partindo-se de um levantamento qualitativo de itens sobre o tema entre os adolescentes, à partir do qual foram formulados os itens que compuseram a Escala Likert de atitudes do estudo. Nesta etapa participaram 182 adolescentes, os quais expressaram seu grau de concordância ou discordância de cada item da escala de atitudes elaborada utilizando uma escala mista de sete pontos (1= discordo muito, 7 = concordo muito). Os dados obtidos foram analisados utilizando-se médias, distribuições de freqüência, coeficiente de Pearson, Coeficiente alfa Cronbach , ANOVA, Teste de Tukey e Análise de Componentes Principais, utilizando o software SAS. Os resultados identificaram que 9,7% dos adolescentes do sexo feminino e 19,4% do sexo masculino apresentaram sobrepeso. Cerca de 29% das adolescentes apresentaram excesso no consumo de lipídeos enquanto 12% apresentaram deficiência no consumo de carboidratos. Entre os adolescentes de sexo masculino, verificou-se alta porcentagem (40,3%) com excesso de consumo de lipídeos e 16,4% com deficiência no consumo de carboidratos. O percentual médio de adequação da energia ingerida foi de 87,6% para o sexo feminino e de 75% para o sexo masculino. Para o sexo feminino foram verificadas inadequações no consumo de ácido fólico e magnésio em 100% da amostra de adolescentes, fósforo em 96,2%, Vit. E em 48,8%, zinco em 42,5% e Vit. C em 21,5%. Para o sexo masculino observaram-se percentuais de inadequações de 99,4% para ácido fólico e magnésio, de 40,5% para o fósforo, de 20,3% para a Vit. C e 15,9% para a Vit. E. O consumo médio de cálcio foi de 642,0 mg para o sexo feminino e de 851,6 mg para o sexo masculino, valores muito inferiores à Adequate Intake - AI (1300 mg) estabelecida para cálcio, sugerindo também alta deficiência no consumo deste nutriente. Entre os adolescentes, 20% dos indivíduos do sexo feminino e 30% do sexo masculino declararam omitir o desjejum, enquanto cerca de 50% dos adolescentes omitiam os lanches da manhã e tarde. Entre os adolescentes do sexo masculino predominaram atividades físicas intensas (73,1%) inclusive para aqueles com sobrepeso. Entre as adolescentes do sexo feminino predominaram atividades físicas moderadas (41,9%). A escala de atitudes sobre critérios utilizados pelos adolescentes para seleção dos alimentos consumidos foi composta por 34 itens abordando aspectos nutricionais e de saúde dos alimentos consumidos, aspectos sensoriais, facilidade de preparo, marca, influências de pais e amigos, entre outros. A escala apresentou um alfa Cronbach de 0,70. Análise de Componentes Principais associada a ANOVA e Teste de Tukey identificaram dois segmentos de adolescentes: o primeiro, correspondente a 49% dos indivíduos da amostra, que privilegiava os aspectos nutricionais e de saúde dos alimentos na seleção de suas dietas e outro, correspondente a 51% dos indivíduos que valorizava mais que o primeiro grupo, os aspectos sensoriais dos alimentos a serem consumidos, principalmente o sabor. Os resultados sugerem a necessidade de implementação de programas de educação nutricional junto aos adolescentes da Instituição visando habilitá-los a uma melhor seleção dos alimentos consumidos que permitam corrigir as inadequações nutricionais identificadas
Abstract: Adolescence is a period of an individual¿s life which is characterized by intense physiological, cognitive and social-cultural changes that can affect both alimentary behavior and health. Inadequate alimentary practices represent an immediate risk for an adolescent¿s health and produce negative health related implications during adult age. As a result, studies that evaluate the nutritional state and the adequacy of adolescent dietary consumptions are important. Although these studies have been conducted in Brazil, they rarely use the new nutritional recommendations (Dietary References Intakes or DRIs) as reference values. On the other hand, the regular practice of physical activities presents an inverse relation with non contagious chronic illnesses risks, and has a positive effect in the quality of an individual¿s life. For this reason, it is important to evaluate one¿s physical activity level, as well as, their nutritional state, dietary consumption and preferences and trends in food consumption. Accordingly, the present study had as it¿s main objectives to evaluate: i) the nutritional state of adolescents from Unicamp¿s technical secondary school, identifying nutritional risks; ii) the teenagers food consumption and their adequacy of macro and micronutrients ingestion in relation to the DRIs (Dietary References Intakes); iii) the adolescents physical activity profiles and, finally; iv) to develop a scale for evaluating the adolescents beliefs and attitudes in relation to foods. For item ¿iv¿ we aimed to segment the group under study in accordance to their criteria and strategies adopted for food selection. Thus, 160 adolescents, with age between 13 and 19 years, were chosen to participate in this study, from a population of 759 pupils. This was a transversal study in which anthropometric weight and height measurements were taken. Additionally, an alimentary registration questionnaire was applied in 3 not consecutive days, where one of such days was on a weekend. For the classification of the IMC, the OMS cutting age points (1995) were used. Moreover, the alimentary consumption data was processed through the Nutri Virtual program. The prevalence of nutrients inadequacy was estimated using the "EAR cut-point method¿ followed by the methodology specified by Food and Nutrition Board/ Institute of Medicine (IOM) and the statistical program SAS (version 8.2). The data¿s normal distribution was tested by the Kolmogorov-Smirnov method; ANOVA test was performed to estimate the intrapersonal variance. The average consumption of each nutrient was adjusted to remove the intrapersonal variance. This was done through the elaboration of an adjusted distribution of each nutrient with the purpose of estimating the prevalence of inadequacy. At the same time, data relating to physical activity habits was collected through a specific questionnaire. Finally, a scale of attitudes in relation to food selection was developed. The scale¿s items were based in a qualitative survey performed with the target adolescents. 182 adolescents participated in this study phase expressing their degree of agreement or disagreement with relation to each item from the aforementioned scale, using a category scale of seven points (1 = I disagree totally, 7 = I agree totally). The data collected was analyzed based on averages, distributions of frequency, Pearson coefficients, alpha Cronbach coefficients, ANOVA, Tukey tests and Principal Components Analysis through the use of the SAS software. The results identified that 9.7% of the female adolescents and 19.4% of the males were overweight. About 29% of the adolescents presented excess in lipids consumption while 12% presented deficiency in carbohydrate consumption. Of the male subjects, a high percentage (40.3%), was verified as being in the lipids consumption excess group and 16.4% presented carbohydrates consumption deficiency. The average percentage of ingested energy adequacy was 87.6% for the female subjects and 75.0% for the males. Additionally, female subjects¿ inadequacies were seen for folic acid and magnesium consumption (100% of the individuals), as well as for phosphorus (96.2%), for vit E (48.8%), for zinc (42.5%) and for vit C (21.5%). In its turn, males¿ inadequacies were detected for folic acid and magnesium consumption (99,4%) ,as well as for phosphorus (40.5%), for vit. C (20.3% ) and for vit. E (15.9%). Likewise, the average calcium consumption was 642.0 mg for the females and 851.6 mg for the males. These intakes are very low when compared to the Adequate Intake ¿ AI recommendations (1300 mg) established for calcium, suggesting high deficiency in this nutrient consumption. Among the adolescents, 20% of the females and 30% of the males declared to skip breakfast, while 50% of the individuals skipped morning and afternoon snacks. Among male adolescents, intense physical activities have predominated (73.1%), including the over-weighted individuals. In the other hand, moderate physical activities were predominant (41.9%) among female subjects. The scale of attitudes developed in this study contained 34 items related with nutritional and health aspects of foods, as well as their sensory aspects, easy-ofpreparation, food label, among others. The scale presented an alpha Cronbach of 0.70 and the Principal Components Analysis, the ANOVA and Tukey test of its data identified two segments of adolescents: the first segment, corresponded to 49% of the individuals, favored the nutritional and health aspects of the food when selecting them; the second segment, corresponded to 51% of the individuals, who valued the sensory aspects of the food, notably the flavor. These results point to the necessity of implementing a nutritional education program in this institution, in order to guide adolescents in making better food choices, and thus, to prevent nutritional inadequacies

Full textThe purpose of the research was to perceive the considerations of restaurants that venture into organic food, taking into account the benefits it offers to the restaurant and the preferences of the consumer. For the development of this study, a descriptive bibliographic review was applied as a research methodology based on the exploration of academic articles, theses, papers and electronic books. This research was based on studies carried out in restaurants that analyze the benefits of the consumption and sale of this type of food based on the profile and perception of the consumer. It was observed that, in continents such as North America and Europe, they presented an extensive bibliography which addresses the reasons why consumers are increasing their interest in organic food. Different factors related to the consumption of organic food were analyzed, such as interest in health, caring for the environment and the purchasing power of consumers. This research allowed us to identify the consumer's motivations for attending restaurants and the main reasons why restaurants offer this type of product. The consumption of healthy food is becoming increasingly important in the minds of consumers, this is due to the latest trends that have manifested in recent years also having an effect on the operation of food services, generating a competitive advantage and of differentiation in restaurants. In conclusion, it is important to know the preferences of consumers when attending restaurants and in turn understand the benefits for those who consume organic food, so that in this way they can contribute to restaurants that wish to enter this sector.

Full textLas pruebas de preferencia permiten estudiar la conducta alimentaria de perros domésticos; sin embargo, ciertas variables intrínsecas podrían afectar los resultados obtenidos. La presente memoria evaluó el efecto del sexo, raza, edad y peso sobre el consumo total, consumo por peso metabólico y preferencia de dietas preferidas en perros domésticos, y la posible relación de los componentes nutricionales de esas dietas con las preferencias observadas. El sexo, edad y peso de los perros mostraron tener un efecto sobre el consumo y consumo corregido por peso metabólico frente a dietas preferidas (P < 0,04). En relación a las preferencias, el sexo no mostró tener efecto (Beagle P = 0,370; Labrador P = 0,815), mientras que el peso influyó en las preferencias de todas las razas (P < 0,041) mostrando una correlación positiva en Beagle (r = 0,010; P = 0,050) y Bóxer (r = 0,183; P = 0,183) pero negativa en Labrador (r = -0,152; P = 0,011). Por otra parte, la edad solo tuvo efecto en las preferencias de perros Beagle (P = 0,005) mostrando una correlación positiva (r = 0,085; P = 0,003). La materia seca y el extracto no nitrogenado mostraron correlaciones negativas con las preferencias (r = -0,239; P = 0,008 y r = -0,188; P = 0,039) respectivamente. Al igual que algunos componentes de la dieta, el peso, la edad y la raza podrían afectar las preferencias alimentarias de perros domésticos siendo necesario considerar estas variables al momento del diseño y análisis de las pruebas.
Preference tests allow studying the feeding behavior of domestic dogs. However, dogs’ intrinsic variables may affect these preferences. In this study, it was analyzed the effects of sex, breed, age and weight of animals over their food intake, food intake corrected by metabolic weight and their preferences for preferred diets. Additionally, the possible relationship between the nutritional components of dog’s diets and their observed preferences were studied. The sex, age and weight of dogs presented an effect over animals food intake, and corrected food intake, of preferred diets (P < 0,040). Dogs sex did not affect their preferences (Beagle P = 0,370, Labrador P = 0,815), while animals weight influenced preferences in all breeds (P < 0,041), showing a positive correlation in Beagle (r = 0,010; P = 0,050) and Boxer (r = 0,183; P = 0,183) but not in Labrador (r = -0,152, P = 0,011). Moreover, animals age affected only food preferences of Beagle dogs (P = 0,005), showing a positive correlation (r = 0,085; P = 0,003). Dry matter and nitrogen-free extract showed negative correlations with preferences (r = -0,239; P = 0.008 and r = -0,188; P = 0,039) respectively. In the same way than some diet components, animal’s weight, age and breed could affect food preferences of domestic dogs requiring considering these variables when preference tests are designed and analyzed.

Para caracterizar a los agentes comerciales se realizó una entrevista a informantes calificados de distintos canales de distribución, en la cual evaluaron el producto de origen chileno en relación al damasco de origen turco. Donde se concluyó que el damasco deshidratado de tipo turco es un producto que le falta desarrollo e inclusión en el mercado, sin embargo posee un gran potencial debido a sus características saludables.

Full textEl objetivo de este estudio fue analizar los efectos de los componentes nutricionales de las dietas y variables intrínsecas de sobre las preferencias alimentarias de gatos domésticos. Datos obtenidos en pruebas de preferencia alimentaria (2005-2015) fueron analizados por sexo, edad, peso, estación y componentes nutricionales mediante el software estadístico SAS®. El componente mineral mostró tendencia a afectar (β=-1,420; P=0,065) sobre las preferencias de los gatos, mediante una correlación negativa (rho=-0,245; P=0,050); observándose correlaciones negativas entre el calcio (rho=-0,241; P=0,054), fibra cruda (rho=-0,338; P=0,006) y cenizas (rho=-0,269; P=0,031) con las preferencias. El peso (β=-6,770; P<0,001) y el sexo (β=-7,018; P=0,005) de los gatos influenciaron el consumo, sin embargo, solo el peso afectó sus preferencias (β=1,081; P=0.035). Se observó un mayor consumo en la estación fría (β=-2,117; P=0,032), explicado básicamente en el aumento de la ingesta en hembras (β=-3,537; P= 0,002), y una tendencia al aumento de la preferencia en estación calurosa (β=1,067; P=0.083). La relación sexo*estación mostró un efecto sobre las preferencias (β=1,072; P=0.023), explicado principalmente por el aumento de preferencia por los machos en la temporada calurosa (β=1,229; P=0,094), sin afectar al consumo (β=-2,841; P=0,149). Un alto contenido mineral y de fibra cruda en las dietas podría disminuir las preferencias; siendo el peso y sexo de los animales y la estación factores que afectarían el consumo y las preferencias, debido a posibles cambios en los requerimientos fisiológicos, y la detección y metabolización de los nutrientes de las dietas comerciales.
The objective of this study was analyze the effects of nutritional components of cat’s diets, and sex, age and weight of animals over their preferences. A database of preference test from eleven years (2005-2015) was analyzed by cat’s sex, age, body weight, season and nutrient composition on the statical software SAS. The mineral component presented a tendency to affect (β=-1.420; P=0.065) over the preferences showing a negative correlation (rho=-0.245; P=0.050); and negative correlations between calcium (rho=-0.241; P=0.054), crude fiber (rho=-0.338; P=0.006) and ashes (rho=-0.269; P=0.031) with preferences. Cat’s weight (β=-6.770; P<0.001) and sex (β=-7.018; P=0.005) influenced intake, however, only cat’s weight (β=1.081; P=0.035) affected food preferences. The effect of season in cats showed that cold season increase the intake relative to the hot (β=-2.117; P=0.032), explained by the increase observed over the consumption in female cats during the cold season (β=-3.537; P=0.002); and hot season tend to increase the preferences relative to the cold (β=1.067; P=0.083). Moreover, the relation sex*season showed an effect on preferences (β=1.072; P=0.023), explained by the effect of the season over cat males (β=1.229; P=0.094); without affecting consumption (β=-2.841; P=0.149). These results suggest that the content of calcium, crude fiber and ashes may affect food preferences; and season with cat’s weight and sex could affect consumption and preferences, probably explained by adaptative changes in animal’s physiological requirements, and detection and metabolization of nutrients on commercial foods.

Full textEl consumo de frutas y verduras de manera frecuente es considerado como una potente herramienta para disminuir estas enfermedades, pero el problema actual recae en que el hábito de consumirlas no es promovido en el hogar desde edades tempranas, imprimiéndole la responsabilidad a los colegios de promover el consumo de este tipo de productos. El presente estudio tiene por objetivo: caracterizar preferencias de consumo de hortalizas en el segmento de escolares de segundo nivel básico de la comuna de San Fernando, Región de O´Higgins, Chile, además de segmentar a los escolares en función de la actitud que poseen frente al consumo de vegetales. Para lo anterior, se elaboró una encuesta, la cual fue aplicada a estudiantes de la mencionada comuna dentro del horario de clases, acudiendo en forma presencial a establecimientos que facilitaron el ingreso para la obtención de resultados.

Para el desarrollo del objetivo señalado se realizó una encuesta de mercado, la cual fue aplicada bajo un esquema de conveniencia a 210 individuos. La información fue procesada con análisis estadísticos tanto de carácter univariable (frecuencias, tablas de contingencia) como multivariables (análisis factorial y análisis conjunto).

Full textEl objetivo de la presente investigación fue estudiar las preferencias de consumidores hacia el jugo de tomate en dos comunas de estrato socioeconómico alto de la Región Metropolitana, Chile. En una primera etapa se realizó un levantamiento de la oferta de jugos y néctares disponibles en las principales cadenas de supermercados de la Región Metropolitana (Chile) entre los meses de marzo y abril del año 2011. En una segunda etapa se realizó una encuesta, la cual constituyó la fuente principal de información, que contempló un 100% de preguntas cerradas, las cuales fueron de dos tipos: escalas de medición y selección de opciones, la que se aplicó a una muestra no probabilística de 73 potenciales consumidores de jugo de tomate. A partir de ésta, se evaluó: características sociodemográficas, hábitos de compra y consumo, actitudes, segmentos de consumidores y estructuras de preferencias hacia el jugo de tomate. Junto a esto, a través de un panel de degustación se evaluaron atributos intrínsecos y extrínsecos, tanto del jugo de tomate de origen nacional como importado, este último abarcó las preferencias de los encuestados. En el análisis se utilizó técnicas de análisis univariado y multivariado. Por medio del análisis factorial de componentes principales se consiguió reducir once actitudes hacia el jugo de tomate en tres factores: “Conducta y Conocimiento” (29,20%), “Salud y atributos funcionales” (18,38%) e “Información en la etiqueta y formatos de venta” (9,89%), capaces de explicar el 57,47% de la varianza. A través del análisis cluster se logró diferenciar dos segmentos de consumidores: “Reticentes” (56,2%) y “Flexibles” (43,8%), respectivamente. Mediante la utilización del análisis conjunto, se determinó estructuras de preferencias para distintas combinaciones de niveles, obtenidas a través de diseño ortogonal, de atributos como: “Pecio”, “Antioxidantes” y “Cierre del envase”. Tanto los segmentos de consumidores de jugo de tomate de origen nacional como los de importado, priorizaron el atributo “Antioxidantes”. Para todos los segmentos el producto ideal fue: una unidad de 340 mL de jugo tomate que contenga 40 mg de “Antioxidantes”, que el “Cierre del envase” tenga abre fácil y con el menor precio posible, de acuerdo a las opciones presentadas.
The aim of this study was to studied the preferences of consumers towards tomato juice in two districts of high medium socioeconomic stratum in Metropolitan Region, Chile. In a first stage, a rising supply of juices and nectars available in major supermarkets in the Metropolitan Region (Chile) between March and April 2011. In a second step a questionnaire was the main source of information, which looked at 100% of closed questions, which were of two types: measurement scales and selection of options, which was applied to a nonrandom sample of 73 potential consumers of tomato juice. From this, we assessed: sociodemographic characteristics, buying habits and consumers attitudes, consumers segments and preference structures into tomato juice. Alongside this, through a tasting panel evaluated intrinsic and extrinsic attributes as national tomato juice as imported origin, the last one was prefered by consumers. The analysis technical used were univariate and multivariate analysis. Through principal components analysis showed decreases of eleven attitudes toward tomato juice on three factors: "Behavior and Knowledge" (29.20%), "Health and functional attributes" (18.38%) and "Information on label and sale formats" (9.89%) avaible to explaining 57.47% of the variance. Through cluster analysis was achieved differentiating two consumers segments: "Reluctant" (56.2%) and "Flexible" (43.8%) respectively. By using the conjoint analysis, it is were determined structures of preferences for various combinations of levels, obtained using orthogonal design, attributes such as “Price”, "Antioxidants" and "Close the package”. Both consumers segments for the national and imported tomato juice origin, prioritized the attribute "antioxidants". For both segments, the ideal product was: a unit with 340 mL of tomato juice with 40 mg of "antioxidants" containing and that "Closing the package" has an easy open and at the lowest possible price according to the options presented.
