Full textThe moral sense of the working relation between men and animals is an essential stake in the contemporary redefinition of the activities of breeding, more particularly industrial systems of animal production. Breeders and workers are facing new social expectations, such as sparing animals sufferings, and moral interrogations on the legitimacy of the humans to kill animals in order to feed themselves. In industrial systems, the destruction of economically unprofitable animals (referred to as "euthanasia") represents a large part of the workers’ activity, and raise the question of their autonomous moral judgment. But the ethical theories of animal protection that became highly influential do not take a look at the subjective moral experience of men and women facing the killing of their animals, whether for euthanasia or food production. This dissertation leans on the theoretical frames of moral sociology and the French psychodynamics of work, as well as on empirical studies on French breeders and Quebec workers in pig production. It demonstrates that the sense given by these actors to their working relation with animals has a moral dimension, which is precisely deteriorated under the influence of industrial forms of work organization. The practice of the euthanasia requires a virtuous moral disposition: courage. In industrial systems this virtue degrades in the adoption of virile behaviours. Raising animals is showing them gratitude, by giving them “the good life” which recognizes them as beings who give life to human people. Full textAccording to European food legislation, meat inspection should be based on risk analysis, covering the entire food chain. Predictive modelling of post mortem abnormalities at slaughter, using primary production information, could help to make risk-based decisions on appropriate meat inspection procedures. A field study was conducted to investigate the broiler chickens condemnation process, determining condemnation prevalence and reasons, existence of risk markers, and feasibility of screening flocks upon these markers to anticipate the risk of condemnation at meat inspection. This study has revealed the large variability of the condemnation rate, which could not be accurately predicted. It has pinpointed the multifactorial nature of condemnation process, which depends on previous stages of the chicken production. The influential stages and factors identified could help to develop decision-support tools for Veterinary services. Notably, reading and interpretation rules of food chain information were proposed, to formalize its use for meat inspection purposes

Full textThe fact that meat consumption is allegedly on the rise in India, a country often depicted as primarily vegetarian, feeds speculation. By paying special attention to the spatial dimensions of this foodstuff, this thesis aims at investigating the recasting of the meanings of meat in this country, particularly in the State of Tamil Nadu. In India, meat consumption is still marginal. Its consumption is religiously, morally, medically and economically regulated. Ecological, technical, social and symbolic constraints shape its networks of provision. The uses and significations of the different meats are contested in slaughterhouses. In the public space, the visibility of butcheries is under strict control. Thus, the issue of meat, and especially of beef, is highly negotiated within the political arena, being leveraged by identity claims. But dynamics of urbanization, industrialization and globalization appear to be gradually reconfiguring the relation that Indians maintain with meat. Undeniably, meat is becoming commoditized, mass-produced. Buffalo meat exports are soaring. At the restaurant, the consumption of meat, especially of intensively reared chickens, becomes a marker of social status for the middle classes of Chennai. Yet, the assumed food transition turns out to be a flawed assumption. The secularization and growing acceptance of meat is restricted to peculiar places. Practices are highly differentiated by types of meat, by individuals and by contexts. In India, the way people interact with meat, an actual “biomoral substance”, contributes to drawing material and immaterial geographies, to shaping territories and circuits, to fixing real and symbolic distances between people and animals and between social groups
